I hope this finds you savoring the best parts of the fall season—cozy evenings, great company, and maybe a little too much pumpkin spice.
In my big Greek family, fall always meant more time around the dining table. It wasn’t just a piece of furniture—it was the heartbeat of the home. It’s where both the exciting news and the not-so-great news—were shared, where laughter and voices got loud (intentionally or not), and where every story somehow came with a side of homemade something. Hungry or not, you were eating!

Here in the valley, we’re spoiled in the best way. One night it’s Thai noodles, the next it’s Egyptian spices. We live in a true melting pot, and we’re lucky enough to be just a short drive from restaurants led by world-renowned chefs.
This month’s issue is all about bringing you into the kitchen—literally. You’ll meet Alissa and Gene Dávila, high school sweethearts whose shared love for cooking has blossomed into Sabor Chefs, a personal catering and meal-prep business that feels like an invitation to their own family table. We’ll also introduce you to a Henderson entrepreneur who’s rewriting the rules on what goes inside vending machines—proving, yes, healthier snacks can be delicious. And for those who love a good meal and pour, we’ll share a recipe and wine-pairing straight from the culinary team at Ventano’s Italian Ristorante, a beloved local favorite.

Ventano Chicken Saltimbocca for Two
Paired with Torresella Pinot Grigio or Ferrari-Carano Siena Cabernet Sangiovese Red Blend
INGREDIENTS
• 2 tbsp. olive oil
• 2 cloves fresh chopped garlic
• 2 free-range chicken breasts, sliced into thin scallops
• 2 tsp. sage leaves
FOR POTATOES:
Sauté potatoes in 4 oz. salted butter, cut into thin slices or cubes
FOR SAUCE:
• 3 oz. salted butter
• 2 tbsp. lemon juice
• Zest of one lemon
• 1 cup chicken stock
• 1/4 cup dry white wine
• 8 oz. fresh spinach cleaned and excess water removed
• 4 oz. prosciutto
• 8 oz Yukon gold potatoes, diced or whole
• 1/4 cup chopped flat parsley for garnish for potatoes
• Salt and pepper

Prepare Chicken and Sauce:
DIRECTIONS
1. Sauté chicken breast in olive oil and set aside
2. In the same pan, pour in white wine over medium heat to burn off the alcohol
3. Add chicken stock to pan and let it simmer for one minute
4. Add lemon juice and lemon zest to stock
5. Turn off heat and slowly stir in flour-coated butter pieces until the stock is a creamy consistency
6. Season creamy stock with salt and pepper to your liking, then add sage
7. Add prepared chicken to the creamy stock and warm slowly over medium heat, avoid boiling
Prepare Spinach:
DIRECTIONS
1. Heat 2 tbsp. olive oil in a separate pan over medium heat
2. Add minced garlic and stir to avoid burning the garlic
3. Stir in fresh spinach
4. Add salt and pepper to your liking
5. Allow to cook for one minute occasionally stirring
6. Set aside


Prepare Potatoes:
DIRECTIONS
1. Dice potatoes in cubes
2. Boil or deep fry potatoes according to your preference
3. Heat 3 oz. of butter in a sauté pan over medium heat
4. Add cooked potatoes, two spoons of chopped garlic, salt, pepper, and continue to sauté
5. Turn off heat and add chopped parsley at the end
Plating:
Arrange cooked chicken on a platter or individual plates, add additional sauce from pan if you wish, top with sliced prosciutto, add cooked spinach and potatoes. Enjoy!

Some moments deserve to be savored— whether it’s a relaxed Tuesday evening with a week’s worth of delicious meals already prepped, a milestone birthday with friends gathered around a beautifully set table, or a cozy date night that feels straight out of a romantic film. Whatever the occasion, food has the power to elevate it—and the right chef can make it completely stress-free.
That’s exactly what locally owned and operated Sabor Chefs delivers with flavor, creativity, and hospitality right to your doorstep.
The owners, Gene and Alissa Dávila, said the idea evolved after the COVID-19 pandemic. While the culinary world was shutting down, Gene, a professional chef, decided, “If I’m going to work so hard, I should work for myself.” Together with Alissa’s expertise in C-Suite experiences, the two of them made a perfect business partnership, and Sabor Chefs came to life.
Sabor Chefs bring a deep passion for their craft. Gene, who has roots in the islands of Puerto Rico, says, “Our niche is Latin Caribbean—Cuba, Puerto Rico, Dominican Republic—but we’re not limited. We always add a little soulful flair.”
The name Sabor, meaning “flavor” in Spanish, reflects how Gene and Alissa infuse every dish with flavor, creating a more personal and special culinary experience. Along with learning about their clients’ lives and passions, they also enjoy sharing their own unique love story.
The couple’s love story began in Williamsburg, New York, where they first became friends in middle school before growing into high school sweethearts. They disconnected after college, and both went their separate ways to pursue their dreams. “Life has twists and turns, but we found each other again,” Gene said, after they reconnected on Facebook in 2007 and started dating several years later.

For events, Sabor Chefs aims to be an intimate and integral part, collaborating with you to create seamless and memorable experiences. Their business model expands beyond just food, it creates a new, stress-free way of hosting.
They offer a wide variety of dining experiences in the comfort of your own home. Their personal favorite and most popular option is the Chef’s Table. “The Chef’s Table is like the Bellagio, or the Wynn, brought right into your own home,” Gene said.
They also offer buffet-style, family-style, and Sabor Bites—a menu made entirely of appetizers. “Sabor Bites gives people the opportunity to taste a lot of different things,” Alissa explained.
Signature dishes include Chicken Mofongo with Beurre Blanc, Sautéed Shrimp over Creamy Sofrito Polenta, and Roasted Salmon with Saffron Sauce and Asparagus Bundle, which highlights their core Latin Caribbean flavors and culinary creativity. That being said, they’re not opposed to curating a variety of different styles of dishes upon request.
In addition to their event catering services, Sabor Chefs offers personalized meal preparation, allowing you to customize home-cooked meals to fit your busy schedule, lifestyle, and budget. “I once showed someone how one chicken could become six different meals,” Gene said. From baked chicken empanadas to hearty chicken noodle soup, they show off their variety with simple and affordable ingredients. Good food doesn’t have to be expensive.
Recently, Sabor Chefs has launched a new dining service called Sabor Amor—a more intimate dinner service for couples. Designed for celebrating an anniversary or Valentine’s Day, Sabor Amor becomes extra special with a bottle of sparkling champagne and additional desserts.
Sabor Chefs goes above and beyond, creating a tailor-made menu for each client—following custom themes, accommodating allergies, and addressing challenging schedules. “Simple things like favorite flowers or colors” can make a huge difference. “We like to incorporate them into the event,” Alissa said. One of Southern Nevada’s coolest places to kick back with a drink isn’t found on the Las Vegas Strip—it is found in an unassuming office building complex located in Henderson.
A true hidden gem, Las Vegas Distillery (lasvegasdistillery.com) opened to the public in June of 2024 after an extensive renovation. Founded in 2011, the distillery at 7330 Eastgate Road was sold in 2022 to its new owner, Rob Saucier. According to Las Vegas Distillery’s head of marketing, Alixandra Saucier, Rob “Set out to create something
exciting, elevated and truly special in the city he has called home for more than 25 years.”
“There are a few distilleries in the Las Vegas Valley, but none that do what we do,” adds Cody Fredrickson, Las Vegas Distillery’s tasting room and tour manager. “Las Vegas Distillery is the only raw material-to-glass operation in the area—everything is done under one roof. On top of that, we’ve built a full tasting room experience with craft cocktails, a thoughtful food menu and live music.”

Visitors can book a 45-minute guided tour of Las Vegas Distillery Wednesday through Sunday to see its intimate production facility up close and learn more about how its small-batch spirits, including its new dark rum and its new London Dry style gin, are made. The Pineapple Upsi-Daiquiri
A classic-style cocktail with a “unique but familiar comfort cocktail vibe,” Cody Fredrickson says Las Vegas Distillery’s seasonal Pineapple Upsi-Daiquiri was designed to replicate a pineapple upsidedown cake with its fruity sweetness, tart citrus and warm vanilla. Cocktail drinkers can enjoy the fall favorite at home thanks to this easy-to-follow recipe.
INGREDIENTS:
• 1 1/2 oz. Las Vegas Distillery Spiced Rum
• 1/2 oz. Smoked pineapple syrup
• 1/4 oz. Rich vanilla syrup
• 3/4 oz. Fresh lime juice
• 1 Dehydrated red pineapple slice
• 1 Brandied cherry
DIRECTIONS:
1. Pour liquids into a cocktail shaker
2. Shake for 15 seconds
3. Strain into a chilled coupe glass
4. Garnish with floating red pineapple slice with a picked brandied cherry in the middle

Delectable highlights include The Ann-Margret “Supreme” Sicilian-style pizza topped with Italian sausage, pepperoni, fire-roasted red peppers and red chili flakes, and The Cuban-esque sandwich made with house-braised Caribbean pork, applewood-smoked ham and Genoa salami. HOW TWO COUSINS ARE BRINGING LOCAL FLAVOR TO LAS VEGAS VENDING MACHINES

FROM BURNOUT TO BREAKTHROUGH
In a city where convenience is king, Nicole Lee is betting that vending machines can offer more than chips and soda. Her Henderson-based company, BRB Vending, uses sleek touchscreen
“When pandemic travel restrictions were lifted, they wanted me back on that schedule,” she said. “That’s when I realized, if I can do all of this for them, I can do it for myself.”

kiosks to deliver fresh high-quality favorites from trusted local brands. There’s boba tea from Brew Tea Bar, cakes from Freed’s Bakery, and other goods she’s working on from neighborhood vendors. It’s a local driven alternative to the generic fare found in most machines.
“Everything in here has a local story behind it,” said Nicole. “We are passionate about convenience without compromise.”
BRB Vending is the brainchild of Lee and her cousin, Brianna “Bre” Lee. Their company is rethinking what a vending machine can be in a city famous for its round-theclock appetite.
FROM CORPORATE BURNOUT TO STARTUP GAMBLE
Nicole spent 20 years in the food and beverage industry before landing a high-powered corporate dining role overseeing staffing for more than 200 East Coast locations. The six-figure salary came with constant travel and little time at home with her two children.
Bre brought 15 years in casino and resort operations to the table. The cousins pooled experience, personal savings, and support from family and angel investors to launch BRB Vending in 2024.
BREAKING INTO A CROWDED, REGULATED MARKET
What sounds like a simple idea, is anything but. Machines carrying fresh, perishable items require refrigeration, health department approval, a business license, liability insurance, and regular inspections.
Beyond regulation, the Las Vegas vending industry is dominated by national players focused on soda and snack foods. Securing prime locations meant pitching the concept to venue operators who weren’t used to seeing small, local brands in vending.
Nicole encountered skepticism early on. “I was told I’d never make it, that it’s too competitive,” she said. “That doubt drove me.”

Nicole credits Clark County’s support for small businesses. The County Clerk’s office helped her acquire the proper licenses which opened doors, including partnerships with the airport and Rio Hotel & Casino Las Vegas.
“If we were doing this in another city, it would’ve taken months just to get a meeting,” Nicole said. “In Clark County, people called us back.”
A 24/7 COMMITMENT
Nicole says the job’s demands rival any corporate position she’s ever held. When supplies run low, or a circuit is tripped, an alert pings her phone, sometimes at 2:00 a.m., requiring late-night dashes to the airport.
“It’s like running a food establishment,” Nicole said. “It’s non-stop, but at least now, I’m the one deciding where my time goes.”
LOOKING AHEAD
The certified minority-women-owned business started with two machines at Harry Reid International Airport in March. Today BRB Vending has eight units in multiple terminals and at the Rio, with negotiations underway for other spots. The start-up, which Nicole runs from her Henderson home, has already sold more than 10,000 products.
Nicole sees the model as a way to connect travelers and locals to homegrown businesses in spaces they might otherwise never reach.
“The goal,” says Nicole, “is locals helping locals, while reinventing the way people experience food on the go.”
