I don’t know about you, but I love any opportunity to recognize the women in my life who make life richer and more beautiful. Our mothers, sisters, daughters and friends are some of the most influential women in our lives.
Of course, with Mother’s Day this month, all eyes are on moms. And it is not just the biological mothers that come to mind but also the mother figures in our lives who have made an indelible impact on us. It is the family members, teachers, friends and neighbors who are doing amazing things in our communities, pouring into our lives, and making themselves unforgettable and irreplaceable.
While it is always important to shop local and support our area businesses, this month is the perfect time to shop women-owned businesses in our community. That is truly one of my favorite parts of this role - connecting with and championing the best of the best when it comes to Greeley's women.
They are movers and shakers, builders and makers. They are both seen and unseen. Their silent service blesses those who are under their care. Their attention to detail shows us something about beauty that can’t be seen or understood any other way.
I hope you’ll take a few minutes to send a text, make a phone call or get your kids on a video call with the women in your life who deserve recognition. It only takes a minute to brighten someone’s day and remind them how much you love them.

For over a century, the Greeley Stampede has stood as a testament to community spirit and dedication. Since its inception, this iconic event has thrived in large part due to the tireless efforts of passionate volunteers. Among these dedicated individuals are remarkable women whose contributions have left a lasting mark on the Stampede’s legacy. Their unwavering commitment to the Stampede’s success embodies the spirit of community involvement and highlights the profound impact of volunteerism. As we celebrate their invaluable contributions, we recognize the enduring legacy they’ve helped shape.
THE WOMEN BEHIND THE GREELEY STAMPEDEI have worked with the Stampede for nine years. By far, the thing I love most about the Stampede is the people. It may sound cliché, but it truly is one of the most amazing parts of the job. This position has allowed me to meet people from all walks of life, many of whom I might not have had the chance to meet if I had not been offered this opportunity. It has truly been life-changing!
The most rewarding thing about the Stampede is seeing all the good it does for our community and the memories it creates for so many families and friends. When someone tells you that the Stampede had a positive effect on their business or that they have been coming to the Stampede since they were a kid and now, they bring their kids, you realize that you are part of something big. The Stampede is something that impacts so many in such positive ways.
I would tell anyone that is curious about volunteering to just try it! You will not regret it. I can honestly say that I have fun picking up trash in the arena after a concert BECAUSE of the amazing volunteers. Of course, there are lots of ways you can volunteer. Most folks try it and find out that it really is a fun experience!
The Greeley Stampede is grateful to everyone for the continued support of the event over the last 102 years. We know folks have many choices for entertainment, and we are so thankful for their patronage of the Stampede. Secondly, a huge thank you to all our sponsors, donors and local city and county governments that give to help us throw this big party every year. They are instrumental in our success. And of course, a GIGANTIC THANK YOU to all of the volunteers, past and present. They have been the backbone of the event for over 102 years, and we are so appreciative of each one of them.
The thing I love most about working with the Stampede is contributing to the largest summer community event in Northern Colorado. It is so rewarding to see thousands of people enjoying the events every year - especially the PRCA Rodeo performances.

I’ve grown up attending the Greeley Stampede every summer with my family, and I’m passionate about bringing this event to our community for years to come. It’s all about preserving the Western way of life and giving families the opportunity for affordable fun.
Watching friends, families and kids make memories together is one of my favorite parts. Seeing a child at their first concert, singing along with their parents, is something I’ll never get tired of.
I’ve been attending the Stampede for over 30 years and volunteering for the past five. I’ve had plenty of standout memories but what really stands out is the way the Committee and volunteers come together to support each other.
I’d tell anyone who is curious about volunteering that they would be working alongside some incredibly hard-working and selfless people. To boot, volunteers can choose the area they’d like to serve in, and they don’t have to work through the entire event, leaving ample time to enjoy the festivities with family and friends.
My husband and son volunteer with the Stampede, as well. Serving as Stampede volunteers together has been rewarding and deepened our family’s ties to our community.
The thing I love most about working with the Stampede is all the people that I get to work with! My interpreting partner, Renee Cyr, who drives up from Arvada to do all the shows with me, and the stage crew volunteers are an amazing, hard-working and fun group of people. I love seeing and working with them every year.
Being an interpreter on the stage is a lot of fun, but I don’t do it alone. My amazing partner Renee and I don’t just get up there and interpret. We spend months, from the time the concerts are announced until the concert, listening to the bands’ music, looking up signs we may not know, and practicing so that we can convey the music to the Deaf community to the best of our ability. Concert interpreting is a lot of fun, but it is also a lot of hard work.
The most rewarding experience I have had during the Stampede is getting to know all of the crew and becoming friends with them over the years. I always look forward to the two weeks that I get to spend out there.
My Best memory is interpreting for “For King and Country.” They are an amazing couple of guys, and the concert was by far my favorite one to interpret, so far.
I would tell anyone that is curious about volunteering just DO IT! Be ready to have a great time, but also be ready to work hard and don’t be afraid to “get your hands dirty.” The volunteers that I have worked with pour their heart and soul into the Stampede every year.

Hunger is a big issue in Weld County. This year, an estimated 88,0000 people in our community will face the harsh reality of not having enough food to eat. Weld Food Bank works to ensure anyone in need of help has access to quality, nutritious food through their 8 direct service programs and 72 nonprofit agency partners.

It is no secret that balancing work, family and community can be a challenge. We rounded up some of our favorite ladies that are authentic in how they show up every day for the people they love. They have struggles, joys, challenges and triumphs. We encourage moms in every season of life to support each other and find strength in each other’s journeys.

Being a working mom, especially to three wonderful boys, is a role I cherish deeply. What I enjoy most is the opportunity to be a role model for my children. I love showing them that women are strong, capable and can achieve just as much as anyone else when they put their mind to it.
I believe it’s important for them to see a successful working parent in action. It’s not just about the success but also about the journey - the hard work, the dedication, the time management and the responsibility it takes to reach our goals. I hope that by witnessing my journey, my kids will learn these valuable life skills and apply them in their own lives.
In essence, being a working mom allows me to teach my boys important life lessons while also fulfilling my own professional aspirations. It’s a challenging role but also incredibly rewarding.
Balancing work and life as a working mom can indeed be a tough task, but it’s certainly not impossible. I constantly remind myself to set achievable goals and understand that it’s perfectly fine to have days when things don’t go as planned. After all, we moms are human too! It’s crucial not to be overly critical of oneself.
Creating a clear distinction between work and home is another approach I exercise. This could involve switching off work-related notifications or designating certain periods as tech-free time, and it’s important to stick to these boundaries.
Lastly, embracing flexibility is key. Being aware that I have the ability to adapt to changing circumstances provides me with a sense of comfort. Remember, it’s all about finding what works best for you and your family.
From the time my oldest daughter was born to having two young girls now, I never shied away from bringing my kids to work related functions, as long as it was acceptable. I want my girls to see the environment their mom works in, the people I interact with and conversations that I have, and expand their world a little more each time. I did this by bringing my nursing baby to work conferences as a stay at home mom running an at-home business. I continue to do so by bringing them into the business-to-business office space. I recall the times my oldest would be right next to me as I conducted discovery meetings with prospects because she was sick, and I had to work from home. Or times when I brought her to a site installation because I didn’t have a sitter, and it was great!
My biggest advice is to honor your needs and desires on how you want life to go for you and your family. We as working moms are so susceptible to falling into others’ expectations, especially when it comes from those closest to us. I’ve found that a lot of times those expectations don’t match or work for mom and her kids. I believe leaning into personal growth and realizing what triggers us and makes us uncomfortable in our personal and parenting lives is where we can give ourselves the compassion, curiosity, courage and love to ultimately show our kids how to love themselves that way too.
I used to take on more work than I had hours available or tried working while my kids were home with me. It always resulted in more stress, and I was always putting my work first, family second and myself last. It has taken me a long time to realize what balance in my life feels like. So now that my kids are in school, I only work during their school hours. I also make it clear before signing any client contracts that I am only available for a set number of hours during the day. This provides balance in my life and helps me prioritize my day accordingly.
My advice for working moms is to communicate with your kids about their day and share about your own experiences. In the evenings or on a day off, engage in activities that they enjoy and allow for meaningful interactions together. Whether playing a game, going for a walk or simply having lunch together, make sure the time spent together is focused and undivided.
Lastly, always try to look for the good. There will be many ups and downs as a working mom. Some days will be incredibly stressful, and other days you will feel like you have it all together. The good news is that tomorrow is a new day and a chance for things to go differently.
Being a working mom is one of the most fulfilling and challenging things I’ve ever done. There are moments when I feel like I’m juggling a million things at once, but at the end of the day, I know I’m doing what’s best for my family and myself.
One of the things that I love most about being a working mom is the sense of accomplishment that comes with a successful career. Knowing that I’m contributing to my family’s financial stability and providing a positive role model for my children is incredibly rewarding. I’m able to show them the importance of hard work and dedication and the value of pursuing your passions.
What I appreciate about being a working mom is the opportunity to pursue my interests outside of my home life. Having a career allows me to engage in meaningful work, make valuable connections and learn new skills that I might not otherwise have had the chance to explore. It’s a chance to grow and develop as an individual while still being there for my family. Perhaps the most meaningful part of being a working mom, is the sense of community and support that comes with it.
Over the years, I’ve met so many remarkable, inspiring women who have become close friends and confidants. Together, we share stories, advice and encouragement and help each other navigate the ups and downs of both work and motherhood. But the satisfaction and fulfillment that come from pursuing my career and being a loving, engaged mom to my children is more than worth it.
Juggling work and motherhood, at times, requires parents to quickly step out of a work environment into the zoo of family life. A few years back I came out of a virtual meeting, only to find that, “Speedy” (the roly-poly) had been lost in the house, a stuffed animal was stuck on the ceiling fan, a juice pouch exploded in the kitchen, and one kiddo playing 5 musical instruments while the other was singing into a microphone. My biggest advice, hang in there and laugh often!
The Mom-guilt is real! One positive turn around for some of this guilt is having the opportunity to step back to evaluate options within my control and be intentional in those areas. In my family this looks like reading short devotionals during wait time in the car, family game and movie nights, making meals together a priority, and dates with my husband and kids. Mom or not, it’s all too easy to become my own worst critic. In parenting, I love that I get to fill my children’s minds and hearts with positive messages about the wonderful people they are. I strive to frame my children’s negative behaviors in a way that allows them to address growth areas but not be defined by them. We strive to do this work as parents, so shouldn’t we also be kind enough to do this for ourselves? CONTINUED >
I enjoy being a working mom for my sense of personal fulfillment. Being a mom is the most important job there is, as we’ve heard time and time again. It never does end, but the end goal is to have healthy, self-sufficient, independent children who thrive in their own lives.
When that time comes, I’d love to have an established life of my own to turn to, that remains as an example to my kids in their younger years of the importance of our own personal success!
When I can, and when it’s appropriate, I love to bring my son to the office, or to any appointment that might be lighthearted or simple (or some that I just may have no choice to bring him to haha!) I have fond memories of tagging along with my Dad to some work appointments, or running around my mom’s place of work, and I always felt like it was a special little invitation to getting to see what they did all day when they were away, and see them in their element. I love to share that with my kids and familiarize those environments for them if possible!
In only the last 7 years I have learned how important self-care is. This has helped me deliver a better version of “me,” not only for my children but for myself. Knowing the benefits of self-care has helped me make it one of my priorities.
My advice to all moms is to make the most of every small moment and find something that connects everyone. For example, we all love music, any genre, English or Spanish, so our car rides are some of the moments that keep our connection strong.
I am all too familiar with the stresses of being a working mom, so a few years ago, I decided to become a full-time student. This provided me the opportunity to be a full-time mom. Honestly, I love being a mom, and I enjoy the opportunities I am given to do mom things. Some days are easier than others but there is no place or role I would rather be or do than being their Mama.
Christina Salazar and her childrenMy situation as a working mom is a bit different than most. My youngest son had an illness when he was 2 that left him with brain damage. He is now 37, but still needs help in his day to day life. While he requires a lot of my time, he also brings a lot of joy to my life and is always ready to go anywhere with me.
Advice that I would give to other working moms with children of any age to maintain a healthy worklife balance is to try to keep them separate. If at all possible, don’t bring work home.
The biggest support system I have is my family. Cody can be somewhat independent while I am at work, but if the need arises, they are always there to help.
The things that I enjoy most about being a working mom are being out around other people and using the strengths that I have to provide a service to others. It feels good to know that I am capable of supporting both Cody and myself. It also helps that I really love my job and the people I work with.

BY DYENAMIC MEDIA CONCEPTSBeing a small business owner usually begins with a vision, followed by a leap of faith. It can be scary and nerve-wracking to begin. Thankfully, Greeley has a supportive community of small business owners who lift each other up and care about each other’s success. Whether it’s welcoming a new small business owner to “the club,” or collaborating to offer unique events and products, these business owners show us that supporting each other corresponds with growing together.
While vacationing in Costa Rica in 2016, Esmeralda Betancourt shared a memorable experience with friends that inspired her future business. Esmeralda and her friends were eating avocado toast at a café on the beach, and she told them, “I promise I will open an avocado toast café someday.”
Having graduated from the University of Northern Colorado (UNC) Business School, Esmeralda knew she would own a business someday. After spending some time traveling, living in Hawaii, and working in marketing and social media in Denver, Esmeralda decided 2023 was the year to begin planning for her own business.
“Writing a business plan in 2023 was on my bucket list,” says Esmeralda. She moved back to Greeley, and in May 2023, Esmeralda connected with the Small Business Development Center (SBDC) at UNC for counsel in writing a business plan.
In January 2024, Esmeralda turned her vision into a reality, opening Cocos Café + Shop in St. Michael’s Square. From the name to the décor, the hand-picked items for sale, and every small detail in between, you can feel Esmeralda’s care for her shop. To her, the little things matter – from the coasters, spoons and glass straws to the unique menu items like the ‘avo toastie’ and secret matcha.
Esmeralda says the name Cocos is endearing with a dreamy and romantic feel – a feeling that she hopes her customers have when they visit. With a love for travel, Esmeralda designed Cocos Café + Shop with inspiration and items gathered from her trips to Morocco, Spain, and Portugal.
However, what is most important to Esmeralda is connecting with others. Whether it’s her connecting with her customers or collaborating with other small business owners, she loves “noticing the little things.” Esmeralda believes that small businesses should support each other because “we only get better when we grow together.”
One of the businesses that Esmeralda has collaborated with is Vale Snacks, located in downtown Greeley. Andrea Lopez, owner of Vale Snacks, opened her store in 2023 offering salads, wraps, bagels, smoothie bowls, and cold pressed juice. With a personal practice and

love of juicing, Andrea wanted to share the health benefits with others. “You are what you eat,” says Andrea. “And you feel better and look better when you eat well.”
Andrea began collaborating with Esmeralda in January 2024 when Cocos Café + Shop first opened. “I have learned so much from Esmeralda’s openness and friendliness,” says Andrea. The two business owners also bonded over the care they take in providing quality ingredients to their customers.
Andrea appreciated the way the downtown Greeley shops welcomed her to the block when she opened Vale Snacks. “We have an amazing community in Greeley,” says Andrea. “Plus, my business neighbors have been really caring and supportive.”
Bethany Harrold, owner of Ellie’s Corner Shop, shares the same joy of connecting and collaborating with small business owners in Greeley, including Cocos Café + Shop. Just under two years ago, Bethany opened her home bakery and pop-up pie shop right after having her son. “I birthed a baby and a pie shop all at once,” says Bethany.
Bethany began selling her pies at the Greeley Farmers Market, and it really took off. “The community has been so welcoming,” says Bethany. “When we came into the scene, other small businesses supported us.”
Born and raised in Greeley, Bethany grew up baking pies with her mom, Vicki Brawner, so pies have always been a cornerstone in her family. Ellie’s Corner Shop is named after Bethany’s daughter, Ellie, and Bethany hopes that Ellie will absorb a love for baking, just like her mom and grandma Vicki.
The support Ellie’s Corner Shop has received from other small businesses has elevated Bethany’s love for Greeley. Through collaborating with other small businesses, Bethany has found success with her pop-up pie shops. Bethany did her first pop-up pie shop at Charley & CO. Market and The Coffee Bar. The pop-up pie shops allow the businesses to share their customers, and helps bring new customers in the door. Now you can find Ellie’s pop-up pie shops all over town, including at businesses such as Blush Boutique, Cocos Café + Shop, Wiley Roots Brewing, Palmer Flowers, as well as at events in downtown Greeley.
Collaborating with other businesses was a happy surprise for Bethany and is one of the things she loves about owning a small business in Greeley. “I’ve connected with so many small businesses, and it feels like collaboration, not competition,” says Bethany. Andrea also appreciates working with several small businesses in Greeley and finds it to be a perfect partnership. “It feels like a caring exchange,” says Andrea.
For Cocos Café + Shop, Vale Snacks and Ellie’s Corner Shop, connecting and supporting each other through a caring collaboration allows them to grow together in their businesses and as individuals. “As I meet other business owners, I can see their talent, and I want to encourage them in their journey. Sometimes we just need a little encouragement,” says Esmerelda. “We all want to be the best at what we do and make it exceptional.”

Making homemade bread is coming back, and while the convenience of buying a pre-made loaf is readily available, there is nothing like the taste of a warm, homemade loaf right out of the oven. These easy-to-follow recipes are exploding with flavor and are simple to make.
INGREDIENTS:
• 1 ½ cups flour
• ½ teaspoon salt
• 1 teaspoon baking powder
• 1 cup sugar
• 1 tablespoon lemon zest
• ¾ cup milk
• ½ cup vegetable oil
• 2 eggs
• 1 teaspoon lemon juice
• 1 teaspoon vanilla extract
• 1 teaspoon almond extract
LEMON GLAZE ICING:
• 1 cup powdered sugar
• 2 teaspoons lemon juice
• 1 teaspoon almond extract
• 2 tablespoons sliced almonds
INSTRUCTIONS:
Preheat the oven to 350° F. In a large bowl, combine flour, salt and baking powder. In a separate bowl, combine sugar and lemon zest and lightly mix. Stir in flour mixture and set aside. In a separate bowl, mix oil, eggs, lemon juice, vanilla and almond extract. Gradually add the wet mixture to the dry ingredients and stir. Pour batter into a greased loaf pan and bake for 1 hour. Cool for 15 minutes and then carefully remove from the pan. Next, make the lemon glaze by combining all of the icing ingredients and whisk until smooth. Drizzle glaze all over the loaf and sprinkle with almond slices. Enjoy!
For an added health benefit, try this probiotic-rich sourdough bread known for being easy to digest and a healthier gut-friendly option. To make sourdough bread, you will need a starter which can take anywhere from 7-14 days. To make your own, mix flour and water together in a jar and feed the starter each day until ready. There are many sourdough starter recipes online.
SOURDOUGH STARTER INGREDIENTS:
• 2 teaspoons sourdough starter
• 3 tablespoons all-purpose flour
• 5 teaspoons water
DOUGH INGREDIENTS:
• ¼ cup active sourdough starter
• 2 teaspoons salt
• 4 cups flour
INSTRUCTIONS:
Twelve hours before you plan to mix the dough, add the ingredients to make ¼ cup of active sourdough starter. Stir and cover and let the starter rise. The starter is ready when it has doubled in size and there are bubbles on the surface and sides.
To make the dough, add ¼ cup sourdough starter and 1 cup plus 2 tablespoons of water and stir. Next, add 4 cups plus 2 tablespoons of flour and 2 teaspoons of salt. Use a spatula to work the ingredients together until there are no more dry ingredients in the bowl. Wet your hand with a little water to prevent sticking, and pick up the dough on one side of the bowl and stretch it up and over itself. Turn the bowl a quarter turn and repeat this step until you have turned the bowl a full circle. Cover the bowl and let the dough sit for 30 minutes. Repeat the folding process one more time. Cover the bowl and let the dough rise on your counter for 8-10 hours.
Next, on a lightly floured surface, shape the dough into a ball by pulling the dough into the middle of itself. Turn the ball over so the seam is down. Use your hands to gently pull and cup the dough until it forms a tight skin. Place the dough on parchment paper and transfer the paper and dough to a medium sized bowl. Cover the bowl and let it rise for 2 hours.
Preheat the oven to 450°F. Score the top of dough with a sharp knife. Use the parchment paper to lift the dough up and transfer to a dutch oven. Place the lid on and bake for 20 minutes. Remove the lid and bake for an additional 30 minutes or until golden brown.
This recipe is quick and easy to make with just a few simple steps. It tastes great on its own, but dipping it in olive oil infused with fresh herbs adds an extra level of flavor.
INGREDIENTS:
• 1 ¾ cups warm water
• 2 ½ teaspoons sugar
• 1 package active dry yeast
• 4 cups flour
• 2 teaspoons salt
• 4 tablespoons olive oil
• Optional:
• Fresh rosemary
• Coarse sea salt
• Fresh pressed garlic
INSTRUCTIONS:
Use a stand mixer with a fitted dough hook, and stir together the water and sugar. Sprinkle the yeast on top and stir again. Set mixture aside for 5 minutes. Mixture should be foamy. Next, add the flour and salt and mix on low until a shaggy dough forms. Increase speed and mix for an additional 4-5 minutes. Brush a large bowl with olive oil. Transfer the dough to the bowl and cover the bowl with plastic wrap or a damp towel. Set aside for about 1 to 1 ½ hours until the dough has doubled in size.
Brush a 9x13-inch baking dish with 2 tablespoons of oil. Uncover the dough and rub hands with olive oil. Slide your hands under the dough and fold it onto itself. Continue to work your way around the edge of the bowl, folding the dough onto itself until there is a ball that you can lift from the bowl. Place the dough in the prepared pan and press the dough to the edges. Cover the pan with plastic wrap or a damp towel and set aside to rise for about 45 minutes until the dough has doubled in size.
Preheat the oven to 425°F. Drizzle the remaining 2 tablespoons of olive oil over the dough. Rub your hands with olive oil and use your fingers to make indentions on the surface of the dough. Sprinkle it with salt and rosemary and any desired toppings. Bake for 20-30 minutes or until golden brown.
