Hello Gilbert! I am so thrilled to get a chance to chat with you again.
My hope is that this last year was as full of exciting and challenging things as it was for us. As you may have noticed, this year saw me taking a step back to make room for other voices on the team and to get back into some of my other passion projects.
I hope you will agree with me that both Kristy and Kylie have been amazing. They have worked tirelessly to bring us fun and interesting content from around town. Fun indoors and outdoors, keeping us warm, keeping us fit, organizing our spaces and our minds. What a team!
If you have been paying attention, however, there is one thing that appeared less frequently in our pages this past year. Where have all the men gone? Not to complain or anything, but it does look like the balance has shifted slightly in the last 12 months. So, this month, we celebrate Gilbert men and what they do.
From fast cars to culinary heights, the men of Gilbert are making, building, cooking, sharing their skills, giving their time, and keeping us safe. They are kind and hardworking. They enjoy the outdoors and spending time with friends and family. They are men of faith and of passion.
Publishing a magazine involves meeting many of you, regularly attending events, keeping in touch with what is happening and generally trying to keep up with how we’re doing as a town. Be proud Gilbert, and let your men know that they are appreciated this month.

Some people may remember Mark McMillian as the eight-year NFL veteran who played for the Philadelphia Eagles, New Orleans Saints, Kansas City Chiefs and Washington Commanders, earning the nickname “Mighty Mouse” along the way. Other people may know McMillian from his job as commentator for NFL’s Las Vegas Raiders and his recent stint on “Next Level Chef.” But it’s a whole new community of kids and adults who think

McMillian and his wife, Adreanne McMillian are part-time residents of Gilbert, and have always had a fond interest in children’s charities. In focusing on Valley children-centric nonprofits to assist, the couple quickly fell in love with Ryan House, its mission and programs. Ryan House is Arizona’s only children’s hospice and respite care home for kids with life-limiting conditions.
In mid-April McMillian and executive chef at Hotel Valley Ho, Russell LaCasce, went to Ryan House and grilled lunch for the kids and staff. Brenna Bennick,
development director for Ryan House says, “It means so much to our house to have them here. McMillian and LaCasce became instant friends over their love of grilling, cooking and fundraising. “We just hit the ground running,” says McMillian. “It’s like we’ve known each other forever. Having Chef Russell on board 100% at Hotel Valley Ho is great.”
Over Memorial Day weekend McMillian held a fundraiser at Hotel Valley Ho with NFL and MLB friends, fans and the general public, with proceeds benefiting Ryan House. During the fundraiser, McMillian and LaCasce grilled up tasty barbecue, out at the main pool that included McMillian’s
signature spicy and sweet barbecue sauce and meat rubs.
Hungry guests feasted on tri tip, brisket, wings, pulled pork and much more. McMillian’s Sweet Heat barbecue sauce also received the spotlight during the event. Specialty cocktails were plentiful, including a whiskey-based “Mighty Mouse” cocktail that was created specifically for McMillian’s involvement in doing the fundraiser for Ryan House at Hotel Valley Ho.

to the incredibly valuable and comforting services that Ryan House offers. “It’s just my way of paying back and using my platform to be able to bring some notoriety and raise funds for them,” McMillian says.
“You can tell the people who are doing it for the right reasons,” says LaCasce about McMillian’s passion for Ryan House and fundraising. “It was easy to connect with him like that, and I have similar ideas about helping kids. This is about giving and hospitality and this is why I got into cooking.”
Earlier in May, McMillian partnered with Humble Bistro in Gilbert to do a fundraiser with proceeds benefiting Ryan House and McMillian’s foundation he co-founded, The Lift Program. It provides support to young men and women through a series of activities such as training camps, community service opportunities and team-building events. These are all designed to build confidence, character and strengthen determination.

Amidst the blazing heat in the heart of the city, lies a bustling firehouse where everyday heroes thrive. Gilbert City Lifestyle had the honor to spend the afternoon with the Gilbert Fire Department's Ladder 251 at Station 1. We met several incredible humans. Among them are Scott Steil, a firefighter whose journey from the corporate world to firefighting was sparked by a childhood dream and fueled by the desire to be a hands-on dad. Scott's transition from a high-paced corporate job to the unpredictable yet fulfilling life of a firefighter was a leap of faith that paid off in more ways than one. "Every day feels

like living a dream," Scott muses as he reflects on the past 18 years of firefighting bliss.
When Scott's not battling blazes or saving lives, he's often found on the greens, swinging his golf clubs with precision and passion.
"There's something therapeutic about golfing after a long day at the firehouse," he shares, a twinkle of enthusiasm in his eyes. His love for the outdoors and zest for life are infectious, making him a beacon of positivity in the firehouse and beyond.
Next up is Dan Martinez, the firehouse captain whose leadership skills are matched only by his love for family and good food. Dan's journey into firefighting was a natural progression, fueled by a desire to serve his community and make a tangible difference. As a devoted husband and father of two boys, Dan juggles the demands of his job with finesse, often moonlighting as a part-time chauffeur for his kids' activities.
Away from the station, Dan's culinary skills take center stage as he whips up gourmet delights for his family and fellow firefighters.
"Cooking is my way of expressing love," he admits with a grin, recounting fond memories of family gatherings and impromptu feasts at the firehouse. Camping trips with his boys, movie nights with his wife, and regular date nights are cherished moments that recharge Dan's spirit and fuel his passion for life.
Completing this trio is Shane Mcmain, a firefighter whose roots in service run deep, thanks to his firefighting father. Shane's military background instilled in him a sense of duty and camaraderie, traits that define his role as a firefighter and a family man.
"Being a firefighter is more than a job; it's a
calling," Shane reflects, his voice resonating with pride.
When Shane's not responding to emergency calls or running his contracting business on the side, he cherishes every moment with his two daughters. "Watching them grow is my greatest joy," he shares, his eyes lighting up with paternal pride. Whether it's family hikes, outdoor adventures, or quality time at home, Shane's commitment to his loved ones is unwavering, mirroring the dedication he brings to his firefighting duties.
What sets Scott, Dan, and Shane apart is not just their bravery in the face of danger but also their deep-rooted bond—the kind that transcends mere colleagues and transforms them into a tight-knit family. From sharing meals and laughter to supporting each other through life's ups and downs, Gilbert's Fire Department is more than just a workplace; it's a second home filled with love, friendship, and a shared passion for serving the community.
As we share some of the lives of these firefighting heroes, please remember the countless sacrifices they make, the challenges they overcome, and the unwavering spirit that defines them. It's important to acknowledge the immense stresses that come with firefighting. The adrenaline-fueled rush of responding to emergencies, the emotional toll of witnessing human tragedy, and the physical demands of the job all take their toll. Yet, it's precisely during these challenges that the bonds of friendship and camaraderie shine brightest.
In Ladder 251, the shared experiences of triumphs and trials forge unbreakable bonds among the firefighters. They lean on each
other for support. Whether it's a reassuring pat on the back or a heartfelt conversation over a cup of coffee, these moments of connection strengthen their resolve and remind them that they're not alone in facing the rigors of firefighting.
The laughter shared during downtime, the inside jokes that only they understand, and the mutual respect that runs deep—all contribute to a sense of belonging and unity within this group. It's this sense of friendship and companionship that fuels their passion for the job, knowing that they have a dedicated team by their side, ready to tackle any challenge that comes their way.
Through the highs and lows of firefighting, Scott, Dan, Shane, and their fellow firefighters exemplify the resilience, courage, and unwavering spirit that define their profession. They are not just colleagues; they are brothers bonded by fire, united in their mission to protect and serve our community.
The next time you see a Gilbert firefighter, take a moment to appreciate the stories behind the uniform—the laughter, the tears, and the unbreakable bonds forged in the heat of duty. Every day is an adventure at the Gilbert Fire Department, and Scott, Dan, and Shane and the entire team known as Ladder One are living proof that heroes come in all shapes, sizes, and fiery spirits.
Gilbert restaurant owner Chef Claudio Urciuoli is celebrating a special honor after being recently named as a semifinalist for the James Beard Award for Best Chef – Southwest. Chef Urciuoli is the owner of Source, a Mediterranean inspired restaurant that serves guests delicious food that is ingredient driven and community centered. Located at Epicenter at Agritopia in Gilbert, this neighborhood spot serves several options including pizza, salads, and sandwiches on freshly made bread.
For Chef Urciuoli, being in the restaurant and food business runs in the family. “My grandmother owned a grocery store, and my dad was in the bread business. He was a salesman for a flour company and his uncle owned a bakery, so I was always in and around the kitchen.”
In fact, Chef Urciuoli shares that even when it came time to do his homework after school, rather than going into his bedroom to work on his studies, he would sit at the kitchen table so he could still be around what was happening in his house. “We went to school from 8 to 1 during the day but then after school, I would go to the store to get food for meals so I could help my family. I got to clean potatoes and lettuce when I was younger and then clean fish as I got older, it was always a family affair when it came to cooking,” shares Urciuoli.
The family aspect of cooking and sharing food with others is something that has always stuck with Chef Urciuoli, especially now that he has a family of his own.
“I am the designated cook at our house. I make three different meals sometimes but that is okay with me because it exposes my kids to different things. We have a wood fired oven outside and a wood fired grill. My son likes to cook too, so he helps out.”
Now 54, Chef Urciuoli has been living in the United States since he was 19 years old, and he has had the opportunity to find success from the ground up. His friends encouraged him to move to the U.S. where he was likely to find a lot of work available for his craft of choice. “In the U.S. people eat out a lot,” says Chef Urciuoli. “So, I moved to Los Angeles and saw so many restaurants and opportunities to succeed. I met people from all over the world, experienced a multicultural environment at so many spots, it was great.” Chef Urciuoli worked his way up from line cook to sous chef and eventually to chef of his own operations, certainly putting in the work to get to where he is today.
As a semi-finalist for the James Beard Awards’ Best Chef Southwest, Chef Urciuoli was very surprised by the honor, and not something he was expecting. “I got an email to answer some questions about how I see the business, about sustainability, my philosophy when it comes to food and restaurants,” shares Chef Urciuoli. The judges even come to each restaurant individually to check out the quality of food, but Chef Urciuoli never knew who or when they would be coming. “They come to the business, but they are anonymous, so you just don’t know when they will be there.” The judges choose a set amount of folks from each region and then select their group, narrowing it down from there. One of the things that Chef Urciuoli feels he has against him is his lacking use of social media. “I’m not really good on Instagram or those things, so I wasn’t sure I’d have what they were looking for there.” Admittedly when he started back in 2006, social media wasn’t around but now, he has had to adapt to using it because he sees the value of mixing it into daily activities. “I think it is an extremely important part of a restaurant or any business to be on social media.” For Chef, he believes that those looking at the award nominees, they saw his food, history, and reviews of the restaurant that really helped solidify the honor.
Chef Urciuoli shares that for him, it is really about the ingredients used to make his dishes. If he feels good about what goes into the food, then those eating it will feel good too. When it comes to accolades and honors such as the James Beard Award, Chef Urciuoli is humbled. “I feel like it’s an honor to be in a circle with these other great chefs, I look at the others and they are doing a great job.”

HOW YOU CAN MAKE BEAUTIFUL BOARDS FOR ANY OF YOUR UPCOMING EVENTS
Crafting a stunning charcuterie board is an art form that blends flavors, textures, and visual appeal into a culinary masterpiece. Local board artist Del Salisbury of DelChuterie shares some must-know tips. When making your charcuterie board, the 3-3-3 rule helps you along: select 3 meats, 3 cheeses, and 3 accompaniments. Depending on the size of your board, you can do less or more, allowing for adjustments to include fewer or more elements as needed. Whether you’re hosting a casual gathering or an elegant soirée, a well-crafted charcuterie board is a delightful centerpiece that invites guests to indulge in a symphony of savory delights.
MEATS:
Choose a variety of meats that are easy to eat with your fingers. examples include Salami, Peperoni, Prosciutto, Soppressata, Mortadella.
CHEESE:
Buy a variety of cheeses that range from mellow to sharp in flavor. Don’t get scared to experiment. Slice them into different shapes; Rustic chunks,
cubes, triangles, wedges or use a cookie cutter to make fun shapes or letters. Include a variety of hard / semi-hard cheeses like Manchego, Aged Cheddar, Gouda and soft / semi soft cheeses like brie, goat cheese, havarti or blue cheese.
At least 1 cracker per slice of meat Crostini, water crackers, grain crackers, or thin slices of toasted baguettes are perfect for spreading and scooping!
Fresh fruit like grapes, strawberries, raspberries, blueberries, blackberries, or even pear or apple slices add color and freshness. Dried apricots or dried mandarins are sweet and add a different texture. Nuts should be shelled and salted.
SWEETS:
Add something sweet, such as pepper jelly, fig jam (you can use any jam that you prefer), or a little bit of honey (spicy honey).
Add a few chocolate-covered nuts, chocolate truffles to satisfy a sweet tooth!
Small bowls of black, green, and kalamata olives, cornichons (baby dill pickles), banana peppers, or other pickled vegetables and cranberry relish, some whole grain mustard, tapenade, pepper/eggplant spread, hummus, artichoke dip, cream cheese dip.
There is no wrong way, have fun and get creative and don’t be scared to arrange the ingredients in any interesting way that inspires you.
Some things to remember: Cut fruit will deteriorate more quickly; Nuts can get rancid in the fridge; Best to enjoy your board within 1-2 days of making it.

Local Car Shop Owner Turns Passion for Cars into Drag Racing Dream
ARTICLE BY GRETCHEN PAHIA | PHOTOGRAPHYEast Valley resident Wes Hawkins, owner of Highline Car Care, turned his passion for automotives not only into a successful career, he is also fueling his need for speed. Building a thriving repair business isn’t all that Hawkins is doing when it comes to cars, he has turned his enthusiasm for cars into a passion for racing. “I have
found drag racing to be the perfect outlet for me to get my thrills and remain mentally and physically sharp.”
Over the past several years Hawkins developed a Nissan GTR into a full-on race car that he has taken on the journey of a lifetime. “I’ve learned so much about building, tuning, and drag racing that I never would have without this car. I’ve met some amazing people and forged solid relationships with like-minded individuals all around world.” For some race fans, they may wonder why Hawkins chose this car, but for him, the choice was simple.
“Nissan GTR is an exceptional platform that will handle loads of power and keep asking for more! It will out accelerate, out corner, and out-brake many supercars, all while leaving a giant grin on your face.”
Despite his passion and love for the sport, it can take its toll on Hawkins time and energy.
“I’ve told myself probably a handful of times that I’m going to stop upgrading the car after this race.” However, despite that feeling and thought process, Hawkins finds himself continuing down the road of drag racing. “After each of those races I’ve felt alive, invigorated, and motivated to keep pushing the platform further. It’s been a mental, physical, and emotional journey that has brought much needed passion to my life.”

USING THESE TIPS YOU CAN MAKE A DELICIOUS HOMEMADE BARBECUE SAUCE.
A good barbecue sauce is comprised of a variety of the same six components. The key is to discover what style you enjoy most, and don’t be afraid to experiment. Oh, and taste often during the preparation process to adjust if so desired.
SOMETHING SWEET
This can be honey, cola, molasses, preserves, brown sugar, or syrup. This caramelizes as you cook, bringing those smoky, sugary flavors.
SOMETHING TANGY
Think vinegar, mustard, or citrus. This is what brings the zing to your sauce.
SOMETHING SPICY
This provides your heat: a hot sauce is a great choice. A good rule of thumb is to use about 1/2 teaspoon for every cup of sauce you’re making.
SOMETHING LIQUID
It can be beer, water, chicken stock, soda, or wine. Start with about 1/2 a cup and see what happens.
SOMETHING TOMATO
You’ll most likely use ketchup, but you can also use tomato paste.
THE SPICE COMBINATION
This can depend on your liking and taste and can include anything from onion powder to garlic powder to chili powder to allspice to cayenne pepper to mustard powder to liquid smoke to cumin to Worcestershire sauce and more. Start with a teaspoon of salt, and keep tasting as you experiment with your desired spices.
• 2 cups ketchup
• 1 cup water
• 1/2 cup apple cider vinegar
• 5 tablespoons brown sugar
• 5 tablespoons sugar
• 1/2 tablespoon black pepper
• 1/2 tablespoon onion powder
• 1/2 tablespoon ground mustard
• 1 tablespoon lemon juice
• 1 tablespoon Worcestershire sauce
In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
