Holiday & Events

Specialists

Host your next unforgettable event in the heart of Downtown at a premier Weddings & Events Center featuring 5 stunning venues, 3 elegant bars, and a full-service restaurant—all designed to impress. With a 378-person capacity, this luxury space is where unforgettable moments begin.

LMS offers an authentic Montessori program from early childhood through high school, adhering to principles and scientific methods for your child’s development.

The elementary learning environment (grades 1-6) fosters independence and focus through individual or small group work, natural lighting, soft colors, and organized, accessible materials. New students quickly adapt to Montessori’s hands-on, interest-driven teaching. The classroom is a vibrant, happy community where students explore, create, and reflect, with teachers offering support and introducing new material as needed. Clear expectations are balanced with openended opportunities, promoting both comfort and inspiration for learning.

Our Secondary Montessori program serves 7th - 10th grade with expansion of grade levels each year.

We integrate rigorous academics with purposeful work, preparing students to become selfconfident, contributing adults. Our approach addresses adolescents’ physical, emotional, social, and cognitive growth, fostering creativity, critical thinking, and independence. Beyond challenging their intellect, compassion, diplomacy and collaboration are developed through personally experiencing human and nature interdependence. Students also learn business and entrepreneurship skills through hands-on participation in real economic activity provided by Laniakea’s micro-economy program.

We are accepting 3 new students to join our Secondary program. Students must have a strong work ethic with a positive behavior record.

Thankful, Grateful, Blessed!

In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives and all that we are thankful and grateful for, as the true spirit of Thanksgiving encourages gratitude and giving back.

Thanksgiving also encourages us to slow down, embrace the present, and appreciate the people and moments that bring us joy.  I am so very fortunate to have so many blessings in my life and many, many things to be thankful for – all of my family, my husband, my friends, my health, this magazine and our wonderful team, and of course this beautiful community that I am so grateful to be a part of.

This month, I’m feeling especially grateful for even the small, every day, simple moments that make life beautiful - like enjoying the sunsets over Payne’s Prairie, peaceful times hiking with my dogs, watching my chickens roaming around, and enjoying the healthy food from our garden – all of which I’m so grateful for!

Our November issue is dedicated to stories of gratefulness and giving back to our community. We are so thankful for the residents and the many businesses here who support so many wonderful organizations and help make our city the vibrant community that it is, many of which are featured in this issue. We are especially thankful for our advertising partners who help bring this magazine to your doorsteps each month. They are part of our vision and purpose of bringing inspiring stories and the good news of the community directly to you.  And a heartfelt thank you to all of our contributors, and to the many residents and readers who continue to support us.

This holiday season as we prepare to gather with our loved ones, and in the true spirit of thanksgiving, let’s set time aside to consider what truly makes life meaningful and stop to reflect on those blessings.  I hope we may all find contentment in the connections we nurture and the good we do for others.

Wishing you all a very blessed and joyous Thanksgiving, and see you around town!

WE ARE

Stop Children's Cancer (STOP) was founded in Gainesville in 1981 by 10-year-old Bonnie Freeman, who was diagnosed with cancer. Motivated by her desire to help other families facing similar challenges, and her desire to make a difference, Bonnie spent her years of cancer treatment raising funds through plant sales, mailing letters, and organizing fundraisers. Despite a grim prognosis, she aimed to ease the hardships faced by future children with cancer.

Over 44 years, STOP has helped secure $25 million for research at UF Health, striving to find cures for childhood cancers. The organization's mission focuses on preventing, controlling, and curing childhood cancers. Its primary goal is to fund research that leads to effective treatments and potential cures. Stop's funds often serve as seed money to provide critical initial data, helping researchers acquire larger grants and donations to advance their work.

Enhance Your Beauty With BOTOX®

Getting older is a natural part of life, but the effects of aging can result in the presence of wrinkles, crow ’ s feet, and smile lines. Cellular changes in the body, sun damage, reduced collagen production, and deep muscle contractions in the face all contribute to the look of deep-set wrinkles and facial lines

At Gainesville Dermatology Aesthetic Center, we strive to provide the most professional and quality care possible to our clients. Give us a call today to schedule your BOTOX® consultation with one of our highly trained and experienced injectors.

One Year of Growing Together

Celebrating teachers, students, families, and community as we build brighter futures through personalized learning.

Last year, we—two sisters, lifelong educators, and now entrepreneurs—began an exciting new chapter as co-owners of Sylvan Learning of Gainesville. With decades of combined classroom experience, we knew one thing for certain: Learning should be personal. At Sylvan, we’ve created a space where every student’s needs, strengths, and goals are at the center of their learning journey.

As we recently celebrated our one-year anniversary, our hearts are overflowing with gratitude.

We’re thankful for our teachers—the heart and soul of our center. Their dedication, creativity, and commitment prove every day that great teachers inspire. They bring learning to life, nurture confidence, and show students they are capable of more than they ever imagined.

We’re thankful for our students and families who trust us to be part of their story. Whether it’s catching up, keeping up, or getting ahead, we’re proud of the results they achieve. Beyond test scores and grades, we see growth in resilience, self-belief, and joy. That’s because at Sylvan, results matter. We measure them in every “aha” moment, every breakthrough, and every proud smile.

We’re thankful for technology that helps us personalize learning and track progress in real time. Technology accelerates learning. And when combined with caring teachers, the impact is powerful.

Most of all, we’re thankful for our Gainesville community. The encouragement, partnership, and support we’ve received have made all the difference. From fellow business owners to local schools and families, your belief in us fuels our passion.

Looking ahead, we remain rooted in our vision: to build a community where every student is empowered to unlock their full potential. Together with families and educators, we are cultivating confident learners equipped to thrive in life. Because at Sylvan, education is everything.

Thank you for being part of our first year. Here’s to many more.

Justice, Community, Clients, Every Day

FOR OVER FIVE DECADES, MELDON LAW HAS BEEN GAINESVILLE’S TRUSTED INJURY FIRM—WHERE ATTORNEYS CARE, CLIENTS MATTER, AND COMMUNITY COMES FIRST.

Step into Meldon Law’s Gainesville office on any weekday morning, and you’ll find something rare: the firm’s namesakes, Jeffrey and Carey Meldon, personally at work. In an age when many firms grow distant from their clients, Meldon Law doubles down on presence, compassion, and hands-on advocacy.

For 54 years, the firm has been dedicated exclusively to personal injury law, helping accident victims rebuild their lives after the unexpected. From car crashes to slip-and-fall injuries, the attorneys and staff treat each case not as a file, but as a family story in need of protection.

Beyond the courtroom, Meldon Law is part of Gainesville’s DNA. Whether sponsoring the Ronald McDonald House, supporting the Latina Women’s League Film Festival, or partnering with the Florida Gators, the firm shows up where it matters most—right here at home.

With roots deeply planted and eyes toward future expansion across Florida, Meldon Law remains guided by one principle: you matter most.

“At Meldon Law, our clients aren’t case numbers—they’re neighbors. We come to the office every day to fight for them, because they matter most.”

Rynni turned a magazine into community.

City Lifestyle isn’t just a publication — it’s a pulse. A rhythm of voices, neighbors, and stories woven together by someone who believes in the power of connection. As we expand, we’re looking for people ready to turn care into community. Are you ready to be that spark?

A New Chapter of Compassionate Leadership

TRANSFORMING RONALD MCDONALD HOUSE THROUGH GROWTH, FUNDRAISING, AND COMPASSION

Ronald McDonald House Charities of North Central Florida entered a new chapter of leadership this spring with the appointment of  Stevie Doyle as Chief Executive Officer Since stepping into the role in March 2025, she has already made a dynamic impact, bringing fresh energy, clear vision, and a deep commitment to keeping families with critically ill children together and close to the care they need.

A proud University of Florida graduate and longtime Gainesville resident, Stevie has built her career in nonprofit leadership. She has strengthened organizations through fundraising, strategic growth, and mission-driven service while cultivating lasting community connections. Her dedication to both the region and families in crisis makes her an ideal leader to carry forward the House’s legacy of compassion.

That leadership was on full display this August during her first signature fundraising event for Ronald McDonald House,  The Red Shoe Affair. The evening raised more than $470,000 and created new avenues for engagement. Most notably, the  Adopt-A-Room program debuted during the live auction. In a single night, 23 guest suites were adopted, each one covering the cost of providing families with a safe, stable place to stay for an entire year while their child undergoes treatment.

Reflecting on her role, Stevie shared,  “I am honored to lead an incredible organization that truly impacts the lives of so many going through such difficult times.” With her leadership, Ronald McDonald House Charities of North Central Florida is poised for a future of continued growth and impact.

Create, Connect, and Be Thankful

Experience gratitude through creativity, community, and shared moments at Pinspiration Gainesville, a local arts hub.

In the rush of daily life, it’s easy to get caught up in to-do lists and the next big thing. But what if we paused to be thankful for the simple joys—the chance to slow down, connect with others, and create something beautiful with our own hands?

Right here in Gainesville, Pinspiration embodies that spirit of gratitude.

More than a craft studio, Pinspiration is a community hub where thankfulness takes shape through creativity and connection. It’s a place to show gratitude to friends and family by sharing quality time, building memories, and crafting personalized keepsakes. Whether it’s a unique date night, a special birthday, or a relaxing afternoon, Pinspiration offers the perfect setting for togetherness and joyful experiences.

The moment you walk in, you’re reminded to be thankful for possibility. The “project wall” showcases everything from chic painted wine glasses and intricate string art to vibrant acrylic pours and custom wooden signs. Everyone chooses

their own project, leaving with something to be grateful for—a creation that reflects personal style, effort, and imagination.

Pinspiration also makes gratitude effortless. The friendly staff handles supplies, instructions, and clean-up, allowing you to focus entirely on the joy of creating. With a full-service wine, beer, and snack bar, it’s easy to relax, unwind, and savor the moment fully.

Nothing captures thankful fun quite like the Splatter Room. Step into a private space, slip on a poncho, and let loose with paint. This carefree, therapeutic experience sparks laughter, releases stress, and leaves you with an abstract piece that celebrates joy, creativity, and freedom.

At its heart, Pinspiration is about community and gratitude. Owner Katherine Osman has built a welcoming space for both seasoned artists and beginners alike. It’s an invitation to pause, create, and carry home a tangible reminder of thankfulness. Gather friends, choose a project, and be inspired by every moment spent at this one-of-a-kind local gem.

We acquired Sunshine Services to serve people first, when neighbors need us, we show up with skill, heart, and gratitude.

Sunshine Services, Grateful for Gainesville

Sunshine Services shows up for families when home comfort matters most in our community.

Gainesville is at its best when neighbors show up for neighbors. Sunshine Services is a local business—we keep homes comfortable. The real giving-back happens at places like Ronald McDonald House Gainesville, and we’re glad to shine a light on their work. We’re grateful for the chance to serve this city as owners and neighbors, and we take that responsibility seriously. We love calling Gainesville home.

We acquired the company in 2024 and rebranded Sunshine Plumbing & Gas to Sunshine Services. Since then, we’ve expanded thoughtfully—adding HVAC and electrical alongside plumbing—and investing in training, safety, and practical technology so every visit is clean, clearly communicated, and done right the first time. Our focus is Gainesville: serving families and small businesses with steady, accountable work and owners you can actually reach.

Home is where life happens. When a system fails, comfort isn’t a nice-to-have—it’s essential. That’s why we sweat the details you can feel but rarely see: right sized solutions, code compliant installs, honest

diagnostics, tidy job sites, and technicians who respect your home.

Our general manager, Rob Wixom, remembers the support his family received from Ronald McDonald House Charities in Indianapolis during a medical emergency. “They kept us together when everything felt upside down,” Rob says. “I’m forever grateful—and I try to bring that steadiness into how we serve families here in Gainesville.” That perspective is one reason we’re proud to spotlight the Gainesville Ronald McDonald House in this “Thankful, Grateful & Giving Back” issue—and to spend Monday evening there serving dinner to families.

We hire for character and train for excellence. We set clear standards and invest in practical training—ride-alongs, checklists, code compliance—and a safety-first mindset. The result we aim for is simple: a service experience that’s easy during the call and solid long after we leave.

Thank you for trusting Sunshine Services in your homes. We’ll keep earning that trust—neighbor to neighbor—by showing up on time, communicating clearly, and doing the work the right way.

THE GAINESVILLE FISHER HOUSE

Fisher House: Serving Veterans’ Families

Providing comfort, lodging, and hope for military families

The Gainesville Fisher House stands as a beacon of gratitude and comfort for military families. Located on the campus of the Malcom Randall VA Medical Center, this 20-suite residence provides no-cost lodging to families of veterans and active-duty service members receiving medical care. Rather than worrying about hotel bills or long commutes, families are welcomed into a supportive, homelike environment where they can remain together during times of healing.

Each suite includes a private bedroom and bath, while common areas—such as a full kitchen, dining room, laundry facilities, and living spaces—offer both comfort and connection. This design fosters community among families who share the unique bond of service and sacrifice. Since its opening, the Gainesville Fisher House has served thousands, saving families millions in lodging and travel expenses. More importantly, it has given them the priceless gift of presence—being close when it matters most.

As one of more than 90 Fisher Houses worldwide, the Gainesville location serves as a local testament to gratitude and care. In this season of thankfulness, it reminds us that supporting our veterans also means caring for the families who stand faithfully beside them.

THANKFUL FOR free rental home improvements

Alachua County renter thankful for help staying cool

AND PHOTOGRAPHY

In collaboration with Alachua County and Rebuilding Together North Central Florida (RTNCF), the Alachua County Energy Efficiency Program (ACEEP) helps reduce utility costs for low-income tenants by funding energy-efficient improvements for affordable rental units.  https:// communityweatherization.org/ rental-program-aceep/

In Florida, having an air conditioning system is something to be thankful for, especially an energy-efficient one! Yet for many Alachua County renters –especially low-income households – reliable and affordable cooling can be hard to attain. Alachua County renter of 23 years, Ms. Betty Ford, had an outdated central AC, little attic insulation and leaky aluminum windows; without the means to upgrade her home to more efficient standards, she faced high utility bills.

The Alachua County Energy Efficiency Program (ACEEP) helps lower utility bills for Alachua County renters by funding improvements for affordable rental units. Participants can receive home upgrades ranging from attic insulation and new windows to energy-efficient electrical appliances such as water heaters, stoves, and air conditioners.

Residents in Alachua County face an energy burden – the percentage of a household’s gross income that is spent on utilities – that can reach over 22%. This percentage is especially higher for our low-income neighbors.

Outdated appliances, leaky homes, and the high cost of repairs add to this burden, and families can become stuck in a cycle of unaffordable energy bills. ACEEP helped Ford break out of that cycle by receiving a new AC, double-pane windows, a water-efficient toilet, and attic insulation!  Participants, like Betty and her landlord, can receive up to $15,000 worth of upgrades per rental up to eight units. Property owners are asked to commit to maintaining the affordability of their rental rate for a period of time that corresponds to the value of the upgrades.

“It was just so good,” said Ford about the program. “I couldn’t do it on my own. And these wonderful ladies came to my rescue because my AC was on the blink! Now that I’ve had their help, everything is done. And I would like to thank God and these ladies and their company.”

Without the worries of high bills and upgrading appliances hanging over her head, Ford can focus on things like what shade of purple she will paint her home next – lilac or magenta?

TOGETHER We Grow

BUILDING A PRACTICE WITH A TEAM IS MORE REWARDING THAN BUILDING ALONE

In the beginning, Momentum Rehab and Chiropractic was a two-person show, but helping our community get moving and stay moving on the scale I had envisioned needed a team. Not just any team, one dedicated to hands-on, personalized care, breaking the mold of the chiropractic experience.

In a world where 10-minute medical visits and telehealth is becoming the norm, and mill-style systems lump everyone into the same box, we work to raise the standard of both the patient experience and outcome.

I love when patients say they enjoy the fun, friendly atmosphere of our office while they exercise. Healing

works best when you can let go of life’s stressors, smile, and have your concerns seen and heard.

I’m grateful I get to continue our growth alongside caring individuals that share that goal with Front Desk Coordinator Carly Marzak, Rehab Coordinators Trey Battle and Johnathan Hall, Associate Chiropractor Dr. Andrea Lopez. Office Manager Dianna Ullery and Puplick Relations Officer, Allie.

If you’re looking for a different approach, contact us for a complimentary Discovery Session to uncover the Root Cause of your problem.

Our “Ten Homes in Ten Years” initiative, in partnership with Alachua Habitat for Humanity, is making that vision a reality—one build at a time. This year, we’re honored to spotlight the Tensley family. Octivia Tensley, a devoted VA nurse and grandmother, will soon receive the keys to her forever home. After years of caring for others, she and her two grandchildren are receiving a life-changing gift: a place filled with joy, peace, and love.

To support this mission, we’re hosting the 2025 Charity Golf Scramble at the  EXCLUSIVE  Golden Ocala Golf & Equestrian Club on Monday, December 8. This five-star golf scramble isn’t just a day on the green—it’s an opportunity to network, team-build, and make a tangible impact.

Jonesville Custom Home Build

Thankful to be able to build high quality custom homes for my clients!

In June, we completed a stunning custom home in the Lakota subdivision of Jonesville, just outside Gainesville, FL. As a Gainesville custom home builder, we take pride in creating spaces that reflect our clients’ vision while blending seamlessly into the community. This 2,767 sq. ft. heated and cooled residence (4,023 sq. ft. total) offers three bedrooms, two and a half baths, plus a dedicated office—perfect for both family life and modern work-from-home living.

From the moment you pull up, the home makes an impression. The exterior features Hardie board siding, Owens Corning shingles, and standing seam painted metal accents from Tri County Metals on the porch and awnings. While many new homes in 2025 lean toward crisp white exteriors, our clients opted for a timeless alternative: Dorian Gray paint, a gray roof, and striking black windows. This palette of neutral, earthy tones sets the house apart while still feeling grounded in its natural surroundings.

Step inside, and the natural tones continue. Stained maple cabinetry pairs beautifully with engineered wood flooring, while the warmth of stained tongue-and-groove cypress ceilings elevates the foyer, living room, and master suite. Medium wood tones balance the lighter walls and countertops, creating a warm yet airy interior that feels both stylish and welcoming.

This home exemplifies the modern farmhouse aesthetic Gainesville homeowners love— an open floor plan, clean lines, and inviting finishes—all tailored to our clients’ preferences. Nestled in the heart of Jonesville, the home not only reflects their lifestyle but also adds to the charm and character of the Lakota community.

For us, every project is more than construction—it’s about building homes that tell a story, and this one is a perfect chapter in Gainesville’s growing tradition of custom living.

Nestled in the heart of Jonesville, the home not only reflects their lifestyle but also adds to the charm and character of the Lakota community.

Begins with YOU A SEASON TO SEE THE UNSEEN

The holidays have a way of calling us back to what matters most—faith, family, compassion, and the quiet but powerful act of giving. As lights go up and calendars fill, there are still many who sit in silence, carrying burdens too heavy to bear alone. But what if this season, you could be the spark that changes everything for someone else?

The founders of City Lifestyle, through their private foundation, are once again launching its annual Christmas Giving Campaign—a heartfelt effort to seek out and support individuals and families who have quietly fallen through the cracks. The mission is simple: to bring light, dignity, and hope to those who need it most.

Since its beginning just four years ago, this initiative has grown from a humble idea into a life-changing movement. Last Christmas alone, more than 200 families across the country received unexpected support—financial relief, but also something even more powerful.

“We don’t just send checks,” says Steven Schowengerdt, CEO and founder of City Lifestyle. “We send a message: You are seen. You are loved. And you are not forgotten.”

Together with City Lifestyle President Matthew Perry, Steven has helped shape this into a tradition that goes far beyond charity. “This is about community,” Matthew adds. “We believe we’ve been blessed, so now we get to be a blessing.”

Every story begins with a nomination. Often, it’s a neighbor, coworker, friend, or teacher—someone who’s been quietly carrying too much for too long. One past recipient, after receiving unexpected support during a time of deep personal struggle, wrote:

SCAN TO NOMINATE

“We send a message: You are seen. You are loved. And you are not forgotten.”

“Beyond the very practical solution of receiving funds to fix my car, this thing you guys worked together to do is bigger than that. I carry the Christmas card you sent in my purse. When things get really hard, I pull it out and remember what it felt like to be seen. That card represents hope— that change for the better is possible. I’m not sure how many people get to carry hope around in their purse. But I do.”

Another wrote in after her husband was diagnosed with aggressive brain cancer and unable to work:

“This support has blessed our family not only financially, but emotionally and spiritually as we trust God to meet our needs throughout this difficult time. Thank you to our anonymous friend and to your foundation. What a joy and gift to be part of God’s family!”

Each year brings countless stories like these—real lives touched by simple acts of kindness. Some use the funds to pay overdue bills, others to afford groceries, medication, or repairs. But no matter the circumstance, the impact is the same: hope is restored.

This season, you have the opportunity to be part of that. The campaign is now open to nominations—completely confidential and prayerfully considered. Whether it’s someone battling illness, facing unemployment, or just in need of a helping hand, you can bring them a moment of grace that will ripple far beyond Christmas morning.

“Knowing my mom was chosen filled my heart with indescribable joy,” said another past recipient. “Your generosity doesn’t just brighten her life; it inspires hope and faith in all of us. It enables her to stay in her home and get back on her feet.”

Nominations are open from November 1st to December 5th, 2025. To submit someone you know, simply scan the QR code or visit @CityLifestyle on Instagram, where you’ll find the nomination form in the bio.

This holiday season, let’s give more than gifts. Let’s give each other the gift of being seen. Because sometimes, the smallest gesture becomes someone’s greatest miracle.

HONEY

ROASTED CARROTS WITH LABNEH AND FRESH DILL

Hosting Tip: “Ask for help from the right people. Some people aren’t going to be comfortable making bread rolls or a dessert, but maybe they’re great at making salad. Others can be asked to bring drinks or clean afterward. Nobody is a mind-reader—don’t be afraid to set up a spreadsheet where they can sign up!”

Ingredients

• 10 carrots

• ½ cup fresh dill

• 3 sprigs of thyme

Directions

• 1 cup labneh

• 2 tablespoons honey

• 2-3 tablespoons olive oil

1. Preheat oven to 400° F

2. Wash, peel, and prep your carrots. If carrots are skinny, you can peel them and place them onto a cookie sheet. If the carrots are thicker in diameter you can cut them lengthwise into halves.

3. Drizzle honey and olive oil over carrots on baking sheet. Use your hands to make sure the carrots are properly coated on all sides.

4. Add salt and pepper

5. Bake in the oven at 400° F for about 25-30 minutes

6. Take them out of the oven and set aside

7. On a large serving plate add about a cup (or more) of labneh. My favorite is called Luretik (you can but it locally at Macher in Goleta).

8. Add your carrots then freshly chopped dill and thyme to the top

9. Drizzle a good olive oil over the whole thing

FLAVORS

HONEYNUT SQUASH

Ingredients

• 3 honeynut squash

• olive oil

• salt

• pepper

• smoked paprika

• pomegranates

Directions

1. Preheat oven to 400° F

2. Slice the squashes in half, remove all the seeds

3. Add olive oil, salt, and pepper and roast for 30 minutes

4. Add smoked paprika and pomegranates to serve

Hosting tip: “It’s all in the way you present it to kids…when you ask your kids to join, try not to make it sound like a punishment. Emphasize that they have a responsibility prepping really yummy food. Include a special drink for the kids while they’re helping, like spiced apple cider. Adjust your expectations to allow for extra mess, extra time, and know it won’t turn out exactly as if you had done it yourself. But the tradeoff of creating happy memories is 100% worth it.”

CRISPY POTATOES

Ingredients

• 10 small yellow gold potatoes

• 1/2 tablespoon baking soda

• olive oil

• salt

• rosemary, garlic, chives (optional)

Directions

1. Preheat oven to 400° F

2. In a large Dutch oven, bring water, baking soda, and salt to a boil. Place unpeeled potatoes into the water and reduce the heat to medium-low. Once the potatoes are soft to touch (20-25 min), drain and let sit for 10 minutes.

3. On a cutting board, grab a potato and use any large object (wine bottle, glass jar) and smash down the potato. Do this gently and have a spatula close by to transfer to a baking dish.

4. Once you have smashed all the potatoes, add salt and olive oil.

5. Place in oven and roast for 20 minutes or until crispy

6. Top with the garlic, rosemary, and fresh chives

Cooking tip: “I don’t peel my potatoes because who really has time for that? The secret to this recipe: baking soda. The baking soda makes the water alkaline which helps break down the surface of the potatoes, making them very crispy and very delicious.”

Hosting tip: “It’s all in the way you present it to kids…when you ask your kids to join, try not to make it sound like a punishment. Emphasize that they have a responsibility prepping really yummy food. Include a special drink for the kids while they’re helping, like spiced apple cider. CARAMEL CHEESECAKE

Ingredients

Crust

• 12 graham crackers

• 6 tablespoons unsalted butter

• 1⁄4 cup brown sugar

Filling

• 4 sticks of cream cheese (room temp)

• 1-1⁄2 cup sugar

• 5 large eggs (room temp)

Directions

Preheat oven to 350° F

Crust

• 2-1⁄2 teaspoon vanilla

• 2 teaspoons fresh lemon juice

• zest of whole lemon

Caramel

• 1-1⁄4 cup sugar

• 1-1⁄3 cup water

• 1 cup heavy whipping cream

• 1 cup unsalted or salted butter

• 1 teaspoon vanilla extract

1. In a food processor, add the graham crackers, butter, and brown sugar. Blend until sand-like texture.

2. In a springform pan, add parchment paper and butter the sides

3. Place crust into the pan and pat down to form a smooth base

4. Set in the fridge and chill for 15 minutes

Filling

1. Add the cream cheese to a standing mixer. Make sure it’s room temperature—this is an important step!

2. With your whisk attachment on medium speed, mix the cream cheese. Once it becomes fluffy, add the sugar and one egg at a time. Scrape down sides as needed.

3. Remove the pan with the crust from the fridge, add the batter to the pan, and place into your preheated oven for 1 hour and 15 minutes.

4. Remove from the oven and let sit. Once cool, cover and place in the fridge.

Caramel

1. In a saucepan, add the sugar and water. Whisk until the sugar is dissolved. Keep heat on medium. Watch the sugar water—it will slowly go from a light brown to a rich amber color.

2 . Once it turns amber in color, add the heavy whipping cream and butter and whisk

3. Turn the heat off and let sit for 5 minutes

4. Remove cheesecake from the fridge and add the caramel to the top

Tips on meal prepping for less stress

Let’s face it: hosting Thanksgiving dinner can be stressful.

Between grocery shopping, house cleaning, cooking and baking, it’s no wonder the day devoted to giving thanks can feel a tad daunting.

Here’s some very welcome good news: whether this is your first holiday hosting rodeo or you’ve stuffed many a turkey over the years, you can knock out most of the Thanksgiving meal prep work in advance – some of it two weeks before the big day.

To make this year’s Thanksgiving meal easier and more enjoyable, consider the following timeline of tips.

2 WEEKS BEFORE

Create Your Thanksgiving Menu

• Print out the recipes you plan to use – this will be much easier than constantly tapping your phone to prevent the screen from going dark or scrolling when your hands are covered with flour or onions.

• Using your menu and printed out recipes as a guide, compose a complete shopping list.

• Double check your supply of herbs and spices to see what you have on hand – even the ones you are pretty sure you have enough of, like salt and pepper (this tip comes from personal experience!).

• Shop for all non-perishable and frozen food items. Basically, if it doesn’t need to be stored in the fridge, or if it doesn’t have a short shelf life, it’s going in the cart.

• Plan three easy and tasty dinners for the days leading up to Thanksgiving and purchase those ingredients during your shopping trip. Or plan at least one night of takeout.

4-5 DAYS BEFORE

Clean & Organize, Buy Fresh Groceries

• Clean your home completely, enlisting family members to help. Then, as the big day approaches, you can touch up as needed.

• Finish your grocery shopping for fresh vegetables like potatoes, onions and carrots and other items not purchased earlier.

• Go through your fridge and toss any old, expired condiments, leftovers and mysterious food items that no one is eating. This will free up valuable real estate for your various dishes.

2-3 DAYS BEFORE

Prep Meals & Set the Table

• Wash and chop all veggies and place the prepped produce into plastic baggies or airtight food storage containers. If some recipes call for “minced onion” and others require “chopped onion,” label the bags accordingly.

• Set the table, and include the empty serving dishes. This will help you figure out ahead of time where the larger dishes can go (and if they will all fit!) Add Post-It notes to the empty dishes to remind you what will go in what. Use a clean sheet to cover everything and keep it all dust-free until Thursday. You can also do this for a buffet.

• Gather all needed serving spoons and other serving pieces.

• Pre-measure herbs and spices for your recipes and store them in labeled small plastic bags with the name of the dish they are for and what’s in the baggies. You can also do the same for any flour, sugar or other non-perishable ingredients you’ll use in your dishes.

1 DAY BEFORE

Tidy, Prepare Dishes & Drinks

• Do a quick clean and tidy around the home; for instance, run the vacuum and shine up the bathrooms.

• If you haven’t already done so, bake your pies, or, at the very least, prepare your pie dough. Wrap the dough in plastic and keep it in the fridge until you’re ready to assemble and bake the pies.

• Make the mashed potatoes. Bonus tip: on Thanksgiving, put the potatoes into a slow cooker and heat them up using the “warm” setting.

• Prepare the gravy. If you have a second slow cooker, it too can be warmed up this way on Thanksgiving. This will also help free up pots, pans and burners on the stove!

• Set up a separate drink station where guests can help themselves or someone can serve them away from the kitchen. Stock it with glasses of different sizes, napkins, bottle and can openers and straws.

THANKFULNESS AND HAPPINESS

GO HAND IN HAND

Teaching children to be thankful can be most effective if done in subtle ways. Some subtle ways parents can use to teach this are modeling gratitude, encouraging acts of kindness, and practice writing thank you cards as these practices then become routines and can foster a natural sense of appreciation.

Children learn by firsthand experiences. It is not only a good practice to model thankful moments with others, it is more profound when children experience firsthand when they are being sincerely thanked. Ask them questions helping them recognize the positive things in their life. Children will often focus on things that are upsetting and dismiss the many sweet moments of their day. Prompting them to recall what made them laugh or what was said that made them feel appreciated helps them shift to a thankful state of mind. Share with them things that made you, as an adult feel happy that day too.

Subtle ways parents can teach their children to be thankful involve modeling gratitude in daily life, focusing on experiences rather than possessions, and encouraging acts of kindness. By weaving these practices into routines, parents can foster a deep sense of appreciation in their children.

It is part of the Montessori curriculum to teach where things come from. There are many books that parents can read to their children that show how things are manufactured or made by hand. This is fascinating to children and helps foster a sense of appreciating effort.  Children are usually on the receiving end of what they experience. They can easily feel entitled and disconnected with cause and effect. This can lead to being unaware of when they need to appreciate something or someone. Being thankful is being happy and creates interconnectedness. It is a good way to begin each day.
