We made it! I’m talking to you, my pumpkin-spicedrinking-boot-wearing-fall-obsessed friends out there. As fun as summertime is, there’s nothing quite like Maryland in the fall. The changing colors of the leaves, crispness of the air, memories to make around town… it’s a magical time.
Our Foodie Edition has always been a popular one. I may be slightly biased since my love language is food but I’m learning I share this trait with a lot of locals. Frederick’s food and drink scene is thriving. Hats off to the restaurateurs, servers, chefs, dishwashers and more that make it all possible!

We are fortunate to have many artisans, makers and bakers creating delicious eats of all different shapes and styles. The foodie scene is not just great tasting food, it’s the experience around it and the unique ways it brings us together. We’ve curated a taste of what Frederick has to offer… prepare for mouth-watering encounters in the pages ahead!
But before that, dear readers, I’d love to take this important moment to recognize, honor and say the biggest THANK YOU possible to Kristen Wojdan and all that she has contributed to the growth, success and impact of Frederick Lifestyle. Kristen launched this beautiful publication in July of 2019 before passing the baton to me and rejoined as Editor at the end of 2021. We would not be where we are today without her!
Kristen is a champion for small businesses and nonprofits and her passion for this community is evident in everything she does. The love that she has poured into Frederick all these years is greatly felt by those around her and especially those within the Frederick Lifestyle family. We are forever grateful for the heart, creativity, vision and valuable time she invested with us. We look forward to the ways her life and legacy will continue to impact our county.
New beginnings are all around us. As families find their school year rhythms and sports teams learn to play as one, let’s grab ahold of the opportunities right in front of us—chances to grow, listen, be present and try new things. Truth and Beauty, Vaira says, is built around the understanding that even stopping in for a burger is an experience, and it’s about the sum of the component parts.
“I want everything about the restaurant to make people feel taken care of, from the warmth of our servers to the passion people can sense in the food,” Vaira says. He himself grew up in a “food family,” where his mother was an excellent cook, and he quickly developed the understanding of meals creating experiences for people.
“It’s about creating the environment to make positive memories,” he says.
Truth and Beauty is airy and open, the art spare and referencing touchstones of Americana, the table wood light and seating simple and modern. The vibe is very relaxed, without much to distract guests from the joy of connecting with one another. And the joy of the delicious menu.
Vaira’s sweet spot in menu development, honed at two previous restaurants, is “riffing” on American food. He’s dedicated to the farm-to-table mission so that ingredients are as fresh and local as possible. At Truth and Beauty, fusion elements such as Korean grilled pork loin exist side by side with bacon pickled deviled eggs. There’s something for everyone.
His craft cocktails are no different. All Truth and Beauty drinks use fresh juices and agave to sweeten rather than simple syrup. Unique ingredients bring a lift and a twist to familiar favorites.
Strawberry Rhubarb Gin Fizz
At last, a gin fizz that makes you think of an afternoon on a Southern porch. Weren’t looking for one? Well, this popular cocktail is that rush of rocking-chair relaxation you didn’t know you needed. The sweetness of the strawberry rhubarb syrup brings a homey touch to an otherwise undistinguished classic. This pairs well with Truth and Beauty’s grilled salmon or Korean grilled pork loin entrees, picking up the notes of the sweet Thai chile brussels sprouts side.
STRAWBERRY RHUBARB GIN FIZZ
• 2 oz gin
• ¾ oz strawberry rhubarb syrup
• 1 oz lemon juice
• Fresh mint
• Club soda to top
Shake gin, lemon juice and strawberry rhubarb syrup in a cocktail shaker filled with ice. Strain into a Collins glass and top with club soda. Garnish with fresh mint.


Blackberry Mocktail
This simple mocktail relies on fresh ingredients to deliver a lift without the spirits. Juicy blackberries offer natural sweetness and flavor with no need for agave or additional sweeteners – try to get them as large and ripe as possible. The lovely purple flush of this drink adds beauty and delight to the experience. A truly refreshing combination that brings satisfaction and a sense of health any time of year.
Try this drink with one of Truth and Beauty’s salads, such as the baby bok choy or the seasonal greens. The notes of blackberry and mint pair well with the sesame-soy or ponzu vinaigrette.
BLACKBERRY MOCKTAIL
• A few fresh blackberries
• ½ oz lime juice
• Fresh mint
• Club soda
Muddle blackberries at the bottom of a rocks glass; add lime juice and ice. Top with club soda; garnish with fresh mint.

Spicy Paloma Rita
Fall isn’t just about cinnamon, cloves, and apple cider. A fresh take on the fall cocktail is this jazzed-up paloma, set off by the smokiness of charred jalapenos in an infused tequila. Those of us who secretly wish we could keep the summer going will appreciate this drink, with its citrus flavors complementing a spicy nod to the fireside. And we all like a little spice – but some of us would rather forego the pumpkin variety. Cheers!
This drink pairs well with Truth and Beauty’s Southwestern-inspired tater-tot nachos appetizer (“totchos”) and the cheddar-tomato flavors of the blackened catfish entrée.
SPICY PALOMA RITA
• 1 ½ oz charred jalapeno-infused tequila
• ½ oz lime juice
• ½ oz grapefruit juice
• ¼ oz agave nectar
• Club soda
• Tajin seasoning
Create a Tajin rim for a rocks glass by swiping rim with lime and dipping on a plate of the seasoning. Shake tequila, lime juice, grapefruit juice and agave nectar in a cocktail shaker filled with ice. Pour into the ice-filled rocks glass and top with club soda; garnish with lime or grapefruit wedge if desired.

SET THE TABLE’S ERICA WILDBERGER COMBINES
CULINARY PASSION AND HEALTH

It takes some of us a long time to find and develop our purpose, but not Erica Wildberger of Frederick’s Set the Table.
“I always wanted to be a chef,” she says.
She loved to cook and provide meals for friends and neighbors as early as middle school, and after high school, she went straight to the Culinary Institute of America in New York to earn her culinary degree. With an additional interest in nutritious food and eating for health, she continued her education at the University of Maryland to become a registered dietician. She says that cooking, food, and menus are always on her mind, and with this innate sense of passion, there was never any question about where she would be dedicating her life.
Even so, her chef ambitions have always been a little different than many in her field, because she never wanted to get into restaurant work. Just as she used to cook in the homes of her neighbors, she says she’s “always loved the personal aspect of making a meal for someone,” and her personal chef business suits that perfectly. After several years spent in the catering industry, she started looking for a kitchen space in 2021. Set the Table, LLC was officially born in 2022.
The business, which now has commercial kitchen space and three part-time employees, offers weekly meal prep, private in-home personal chef services, and catering. Wildberger takes pride in building her menus from fresh ingredients with as many locally-sourced as possible. She elevates familiar and well-loved foods with high-quality ingredients and gourmet twists –on her weekly menus you may find entrees as diverse as Cajun pepper shrimp, Italian steak salad, quinoa tabouleh, and BBQ pulled pork with mac and cheese. Her rotating weekly menu selections can be ordered for delivery via her website, and she develops custom menus for her in-home personal chef clients.

A PASSION FOR FOOD
One of Wildberger’s favorite things about what she does is the fact that it allows so much variety.
“I don’t cook the same thing over and over, and every catering opportunity is a new and different challenge,” she says.
She especially enjoys cooking seasonally, scoping out the best products, and highlighting key ingredients in her meals. Her favorite things to cook include seafood dishes, sauces, soups for winter, and fresh pasta.
“Really, though, I’m just trying to do a bit of everything, so that I’m always offering something people like,” she says.
Her most memorable catering experiences have happened when she’s sparked a real connection with a client and shared joy in the process of planning an event. Last fall, she says, she catered a baby shower for 50 guests where the theme was centered around the “cornucopia” look and a feeling of abundance. Wildberger loved the lush look of the table settings and enjoyed planning the brunch menu, which included chicken and waffles, quiche, and potato cakes, among other dishes. The client was equally excited. “I’m catering the baby’s first birthday party coming up,” Wildberger says.


“I just want to help more people eat better food.”

THE ”NO-DIET DIETICIAN”
As you might expect, Wildberger also brings her dietary training into her personal chef work, but her focus isn’t on restriction or approaching food in the way “diets” traditionally have.
“I consider myself the ‘no-diet dietician.’ The focus is on well-balanced meals with high-quality ingredients and a lot of nutritional content,” she says. However, her training also allows her to work with clients who have special dietary needs, such as celiac disease or other conditions where a more restrictive diet is required. Wildberger helps these clients create delicious meal options that still adhere to their medical diet. She recognizes that without a certain level of cooking expertise, this can be very hard to achieve.

“BUYING BACK THEIR OWN TIME”
In terms of client service, Wildberger feels one of the largest benefits Set the Table provides is the ability for clients to “buy back their own time.”
“Getting fresh meals on the table takes an enormous amount of time,” Wildberger says. “You have to plan the meals, shop, prepare them, and deal with cleanup.”
Many of her clients are those who simply don’t have the time, desire, or ability to build this into their schedules, and so they rely on Set the Table to avoid sacrificing nutrition and taste. This can free up families to really enjoy dinnertime together, and serve clients who would otherwise turn to pick-up meals and unhealthy frozen or fast food.
Wildberger also provides value in the personal connection she builds with in-home chef and catering clients, and the customization she’s able to provide for their menus and events.

Peel the cutie mandarin oranges and cut celery sticks into 1-inch long sticks.
Cut each slice of celery into thirds or fourths and insert celery sticks into the center of the peeled oranges.

Break pretzel rods in half and stuff them into the Oreo cookies to form the spider legs. Melt the chocolate chips until smooth.

This spooky spin on the classic charcuterie board will excite the kids and provide a few nutritious nibbles before they fill up on too much candy. Whether you bring this to the school party or set it up while everyone gets in their costumes, fun MUMMY-ries will be made.
Nutter Butter Ghosts
• Nutter Butter Cookies
• White Melting Chocolate
• Mini Chocolate Chips

Instructions:
1. Gather together the items.
2 .Arrange and style according to your party aesthetic.
3. Add extra items, such as crackers, chips and cheeses.
Melt the white chocolate in the microwave in 15-second increments. Stir between increments until the chocolate is fully melted.
Dip the top of each cookie into the melted chocolate and place the coated cookie on wax paper to dry.
Press the mini chocolate chip to make the eyes and mouth before the chocolate dries.

CHICKEN NOODLE SOUP
This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.
INGREDIENTS:
• 8 cups chicken broth (add more if desired)
• Whole fryer chicken, cut in chunks or shredded
• 5 celery stalks, sliced
• 8 carrots, sliced
• ½ onion diced
• 4 tablespoons butter
• 1 teaspoon italian seasoning
• ¼ cup half and half (optional)
• 1 package egg noodles
• Salt and pepper to taste
• DIRECTIONS:
In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.
