Welcome fall!

With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of sitting down with Elicit Brewing, Tümü and Isabelle et Vincent and have included a few of their recipes for you to try at home — whether you’re cooking for just your family or for entertaining guests. So get your tastebuds ready,  you are in for a treat!

The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple,  pumpkin, chili and soups of any kind brings me right back to her table.

There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

One of Fairfield’s newest hangouts is Elicit Brewing Company. Redefining food and fun, Elicit Brewing Company blends the best of a night out on the town into an unforgettable experience all under one roof -- A brewery, a beer hall, a cocktail bar, a lounge, a game room, a restaurant, and much more.

Known for their full bar with tons of liquor options and guest taps from other breweries, Elicit’s identity revolves around house-brewed beer. They’ve taken two of their most popular beers and used them as ingredients in unique beer cocktails!  Each beer brings a complex flavor profile that is accentuated when used as a portion of a drink recipe rather than a standalone beverage.  These cocktails are perfectly paired with many of the robust menu’s offerings, especially with their All American Smash Burger. Smash burgers are taking off as a popular American dish because they are always juicy and super easy to make. A true crowd-pleaser filled with simple ingredients and tons of flavor!

ALL AMERICAN SMASH BURGER

Ingredients:

• 2 Slices American Cheese

• 8oz of Ground Beef (80/20)

• 4" Martin’s Potato Bun

• Sliced Plum Tomato

• Lettuce Leaf

• Pickle Chips

• Sliced Red Onion

• Elicit Burger Sauce (or your choice of topping!)

Directions:

1. Split the ground beef into two 4oz balls, wrap in plastic wrap, and put in refrigerator.

2. Heat a large cast iron skillet over high heat until SUPER HOT.  We use a flat top!

3. No need to add oil, there’s plenty of fat in the burger.

4. Remove your burgers from the fridge and sprinkle them with kosher salt and pepper.

5. Place the beef in the skillet, leaving room for them to be smashed down.

6. After 30 seconds of searing, smash them all the way down until they can’t be smashed anymore, with a large heavy skillet or metal spatula.

7. Let them cook for about 3 to 4 minutes, or when the edges start to turn brown.

8. Flip them over and immediately place a slice of cheese on top of each patty. When the cheese melts, they are ready, about 1 to 2 minutes longer.

9. Put the burgers one on top of the other onto the Martin’s Potato Bun base.

10. Add the sliced tomato, sliced red onion, lettuce leaf, and sauce of your choice!

11. If you don’t have Elicit’s House  Sauce, we recommend a chipotle aioli!  Add the bun top and enjoy!

BEER COCKTAILS

DEVIL’S SHANDY

Ingredients:

• 2oz Whistle Pig Rye whiskey

• 1oz Lemon Juice

• 1oz The Devil Wears Strada (Elicit beer)

• 1/4oz Apricot Fruitful

• 3x Dash Grapefruit Bitters

• 1 egg white or 4 Dash Fee Foam

Directions:

1. Dry Shake then shake with 1 large cube for: 30+

2. Strain over Large cube in rocks glass

ESPRESSO OVER CEREALIZED MARTINI

Ingredients:

• 1oz vanilla vodka

• 1oz Espresso

• 1oz Over Cerealized (Elicit Beer)

• 3/4oz Mr. Black

• 3/4oz Banana Liqueur

Directions:

1. Dry Shake then shake with 1 large cube for: 30+.

2. Strain into Chilled coupe glass

Cool, crisp air, vibrant colored leaves, and bright blue skies are what come to mind in October. We don our sweatshirts, embark on hikes and head to local festivals filled with autumn delights. This is the time of year that the earthy smell of fallen leaves and the soft, golden hue of the sunlight casts a warm glow and the transition from summer grilling and margaritas to root vegetables, soups, apples, complex wines and everything pumpkin fills our plates and glasses.

Autumn is a season rich in flavors and foods that bring warmth and comfort. The desire for deep, warming flavors extends across the board with beverages as the days get cooler and the fire pits arrive in the backyard.

Beers move from the light, crisp summery style to Oktoberfest or Marzen styles that are rich, malty and slightly sweet, as well as the Brown Ales that are nutty, the Pumpkin Ales that are brewed with pumpkin cinnamon, nutmeg and cloves, and the Porters that are dark and robust with flavors of chocolate, coffee and roasted malt.

Wine strays from rosé and crisp whites to richer, more robust flavors that complement the heartier dishes and cozy atmosphere of the season.  Skincontact (orange) wines are great for the fall as they have tannin structure which is perfect with nuts, cheese and root vegetables. Earthy reds such as Nebbiolo (Barolo), Tempranillo (Rioja), Syrah (northern Rhone) and Cabernet Franc (Loire Valley) are a few known for their flavors that evoke characteristics of forest floor, wet leaves, and mushrooms. These are ideal for pairing with rustic dishes, game meats, and dried herbs. White wines that are a great transition for Fall tend to be more complex, layered and richer in style. Try a Chenin Blanc, Old-World Chardonnay,

Alvarinho/Albarino and an earthy, herbal Gruner Veltliner from Austria.

Cocktails revolve around more of the brown spirits such as whiskey or brandy which are perfect for Hot Toddy’s and Maple Old Fashions. Apple Cider Mules with vodka, ginger beer and apple cider is a great fall twist on the classic Moscow Mule. Pumpkin Spice Martinis with vanilla vodka and Irish cream and pumpkin puree captures the essence of autumn.

These foods and drinks embrace the cozy, earthy, and slightly sweet flavors that are characteristic of autumn, making them perfect for the season.  Embrace the gradual transition of nature preparing for winter. Find that cozy warm sweater in your closet, gather some wood, make a fire, roast some meats and vegetables and pour a glass of your favorite beverage to warm your heart and soul. Savor the present moment, appreciate the richness of life, and reflect on this season of quiet beauty as you prepare for the stillness of winter.

My Favorite Fairfield Restaurants Destination Delicious

I am a storyteller with nearly fifteen years of experience writing about restaurants. In doing so, you have to love food, dining and people. I grew up in the hospitality industry, so to me, restaurants are much more than places to eat and drink. They represent home. A destination to come together, share a meal and a conversation. Restaurants house snapshots of our lives. Hubs to congregate, connect and make memories. The dining scene in Fairfield is plentiful. Being a Fairfield resident, I’m honored to share some of my favorite places. Some are relatively new, while others are established institutions within the community. Think of my recommendations as a guide for your next foodie adventure—a road map to inspire you to explore your culinary journey in our beautiful town. Ever find a restaurant so charming and unique that you almost don’t want to share it out of fear it might get too crowded? Joanne’s Table is that restaurant. Joanne Monroe was a server at Liana’s Trattoria for fourteen years. When Liana retired it was serendipity that gave her the opportunity to open her own business. Now, family owned, Joanne’s Table run by Joanne, her daughters, Asher and Cassidy and Executive Chef, James Agoglia are a winning team. The restaurant just celebrated its one-year anniversary in May. In a short period of time, the community has grown to know and love this hidden gem. Serving Italian cuisine in a bistro setting with a revolving seasonal menu and daily specials, Joanne’s Table is a must add to your dining list. The staff have created an intimate dining experience with only twelve tables focusing on the true meaning of hospitality. You walk in the door, everyone says, ‘Hello’ and within minutes, you feel like family. On my visit guests were greeted by name. One couple who have been married for fifty-five years visit for dinner four or five times a week. The welcoming atmosphere is only highlighted by their impressive menu. You can’t go wrong with anything that you order whether it be the Sea Scallops over wild mushroom risotto, Chicken parmesan or Brussels sprouts. Each dish is

just as exceptional as the next. I consider myself an octopus lover so whenever it’s on the menu I always order it. Let me tell you, all octopus dishes are not created equally. The Pulpo Picante appetizer is by far one the best. The perfectly charred pan roasted octopus served with broccoli rabe, cherry peppers, crispy potatoes and lemon aioli is incredible. Chef Agoglia has an almost intuitive ability to pair ingredients and textures. I savored every bite.

The next stop on our epicurean adventure is Molto. The word “molto” means “many” and Pizzeria Molto Mozzarella & Wine Bar lives up to its name with generous Italian fare options. The menu comprises traditional pasta favorites, classic entrees, Italian tapas, mozzarella, brick oven pizzas, salads, paninis and desserts. Located in the Brick Walk Promenade, the atmosphere couples a trendy NYC restaurant with a retro 1950s Roman trattoria. Dim lighting, upbeat music, contemporary furniture designs and photographs portraying Mediterranean landscapes combine to create a fun, yet elegant environment. Black and white films like Roman Holiday and La Dolce Vita project on the wall, giving guests a window into an iconic era of Italian culture that stirs romance and nostalgia. It’s safe to say that I’ve tasted every single Italian tapa on their menu. And honestly, with such an extensive menu there is something for everyone. The Potato Gnocchi in a butternut squash cream sauce is a standout. Also, the Scallop tapa with spaghetti squash, lemon butter, capers and red grapes is another one of my go-tos. As far as pizzas are concerned, my all-time favorite picks are the Bianca and Arugula di Parma. There are five types of mozzarella on the menu. Why commit to one when you can taste a little bit of everything? I recommend opting for The Sampler, which allows you to try the rich Bufala, Local Farm, sweet Burrata, smoked Affumicata and the creamy Stracciatella accompanied by olives, roasted peppers, prosciutto and crostini. Who doesn’t like a good special? Don’t miss half-off bottles of wine every Monday.

To satisfy all my Taco Tuesday dreams, I chose Geronimo Tequila Bar and Southwest Grill . Not only do they have a beautiful space, but the food and drinks are consistently on point and the staff is well-versed. They have a generous-sized deck remodeled to include an outside bar. This Southwestern cuisine restaurant is the brainchild of Executive Chef/Owner Arturo FrancoCamacho. The menu isn’t just tacos. Geronimo offers an eclectic selection of New Mexico inspired dishes like Frito Pie, Baby Back Pork Ribs, Mac & Cheese and Navajo frybread. Hands down, my favorite cocktail is the cucumber margarita. This light, refreshing cocktail is made with all-natural juice, infused cucumber and organic blue agave tequila. Give yourself permission to drink all the margs and eat all the tacos. You owe it to yourself to try the Birria Tacos, which is at the top of my personal taco hall of fame. The Birria Tacos made with slow-cooked beef, melted Oaxaca and Chihuahua cheese and Salsa Verde within a pressed tortilla served with Consommés or the “soup” left over from cooking the beef used for dipping is sensational. These savory, rich tacos have earned their place as my favorite menu item.

Onward, to Blackstones , one of my favorite local steakhouses, so much so that I’m there a few times a month. The restaurant is perfect for special occasions, date nights, or a dinner with friends. The vibe is classy, yet comfortable with a red and black color scheme, artsy décor like Jack Nicolson smoking a cigar and a bull that I’m tempted to ride but have controlled my urge for fear of being escorted out. They have an incredible happy hour

with great specials and half off drink prices. The steak quesadilla is hands down one of the best items on the happy hour menu for the taste and value. This high-end steakhouse promises a truly exceptional dining experience. I always order the Seafood Tower because it’s a showstopper. The presentation is impressive and satisfies my shellfish cravings with sweet Maine lobster, Maryland lump crab meat, fresh, briny Blue Point oysters, little neck clams and Jumbo, succulent shrimp. By far the menu item that keeps me coming back is the Tomahawk Steak for two. The bone-in 48oz steak is presented on sizzling plate sliced and served with the meat drippings. The meat melts in your mouth like butter making the Tomahawk inarguably the best steak you will ever order.

Next stop, Little Goose . A cozy, neighborhood spot with a big heart. I was immediately intrigued when a friend asked me to meet her there for brunch. The place was packed and for good reason. Brunch is every Sunday from 11 AM-3 PM with live music. This American Gastropub is a hub where friends and family gather for a casual lunch or dinner. Little Goose will celebrate their tenth anniversary this fall. The owner, Karen Conroy, attributes the restaurant’s longevity to the regular clients who have become family. The unassuming menu is a nice balance between comfort food and lighter options. Think: patty melt meets sesame-crusted tuna. They have staple selections and rotate seasonal offerings periodically.  All of the desserts are homemade. I tried the apple cake served with ice cream and was immediately taken back to my grandmother’s kitchen. From Arthur Avenue Spring Rolls

to Vegetable Panini, there is a generous assortment of menu items to choose from that will satisfy any palate. My favorite dish is the Grilled Salmon with miso-mango glaze topped with a papaya mango cucumber pico served with coconut sticky rice and bok choy. The colors are beautiful, and the flavors complement one another perfectly. It’s a light and healthy dish that can be enjoyed year-round. Add this charming café to your list of must-visits.

Lastly, let’s take a trip to Spain without having to leave the country. Tablao Wine Bar & Restaurant is a welcome addition to Fairfield. I’ve loved Tablao in South Norwalk for years, so when they recently opened their third location in the center of Fairfield, I knew that I would be a frequent visitor. From Spanish Tapas to Paella, every dish is consistently satisfying. Some of my favorite Tapas are the Tortilla Espanol and the Short Rib over Polenta. A short walk from the Fairfield train stop, Tablao is conveniently located within walking distance of the green and downtown shops. They have a generous dining area and an extensive bar. The perfect place to grab a craft cocktail, glass of wine or an intimate dinner. Check out Paella Night every Thursday for a special menu that includes one tapa, paella and dessert. Apart from their amazing Paella, I always get the Mussels. Sautéed Diablo style, the mussels are prepared with garlic, hot peppers, olive oil, parsley, marinara sauce and white wine served with toast points. The flavors are spectacular. The seafood is fresh. Save the toast points to dip in the sauce and if you get bold like me, you might even pick the bowl up and drink it like a soup.

During the pandemic, Adam Goldberg took what was once a crumb of an idea and baked it into a small empirePopUp Bagels. Even though their tagline is, Not Famous but Known - PopUp Bagels put Connecticut bagels on the map and is certainly known throughout the Tri-State area and beyond. They’re kinda famous now. We recently got a chance to hear more about the story of PopUp’s rise to fame.

FLM: BEING A VETERAN OLD SCHOOL NY BAGEL SHOP CUSTOMER MYSELF - THERE’S THE UBIQUITOUS ‘SCOOPED OUT’ , THE AGE OLD ‘TOASTED OR NOT TOASTED’ AND THE CLASSIC ‘WITH A SCHMEAR’ SO, WHY THE GRIP, RIP & DIP? ( LOVE IT!) WHAT WAS THAT INSPIRATION?

Adam: The grip, rip, and dip method began when we noticed that our loyal fans couldn’t wait to get home with their bagels and would place their cream cheese in the cup holder of their car. This inspired us to embrace the simplicity of enjoying bagels on the spot, encouraging everyone to grip, rip, and dip wherever they please.

FLM: THE INNOVATIVENESS OF THE SPREADS ARE INCREDIBLE, THOUGHTFUL COLLABS AND COMBINATIONS. WHERE DO THOSE FLAVOR IDEAS COME FROM?

Adam: We get our flavor ideas from a mix of fun experimentation and listening to our community. We love playing around in the test kitchen, working with cool brands and chefs, and drawing inspiration from travel and new experiences. The crowd-sourced ideas and collaborations are where the magic happens.

FLM: WHAT HAS BEEN THE BIGGEST SURPRISE WITH THE BUSINESS? THE BIGGEST LEARNING?

Adam: The biggest surprise has been that no matter how many people you think know about your product, there are always so many more who want to try it and learn about it. Just when we think we’ve captured everyone’s hearts, we discover there are always new faces eager to try us out.

FLM: CAN YOU SHARE ANYTHING NOTEWORTHY HAPPENING FOR OCTOBER, ANY NEW SPREADS OR COLLABS TO ANTICIPATE OR ANYTHING NEW TO EXPECT AS WE START TO THINK ABOUT THE HOLIDAY SEASON?

Adam: Later this month, our team will be traveling to Italy to hunt for truffles for an upcoming schmear.

FLM: SINCE THIS IS OUR FOOD + DRINK ISSUE CAN YOU SHARE YOUR FAVORITE LOCAL DISH (OR BEVERAGE) WHEN YOU’RE NOT EATING BAGELS, OF COURSE.

Adam: I always love a cold drink at the Gray Goose or a pizza at the Colony Grille.

FLM: WHAT HAS BEEN THE BIGGEST REWARD STARTING POPUP BAGELS AND SIGNIFICANTLY STAKING CONNECTICUT’S SPOT ON THE NATIONAL BAGEL MAP?

Adam: The greatest reward has been the years of meeting amazing people, having incredible experiences, and making thousands of people smile through our bagels.

TÜMÜ’S GARLIC SHRIMP DELIGHT

Tümü is a local treasure for authentic Mexican fare. Whether grabbing a quick breakfast or stopping in to pick up ready-to-go-meals for an easy dinner optionTümü’s extensive menu and home goods will delight. Looking for a fun unique night out? Tümü’s owner Karla Krassin, also offers creative and innovative cooking classes and events.

For our October issue, Karla shares one of her favorites:

Camarones Al Ajillo is a classic Mexican garlic shrimp recipe made with shrimp (fresh or frozen) and a simple garlic sauce that consists of simple ingredients: butter,

olive oil, lots of fresh garlic, salt and pepper, and we are adding Tümüs salsa macha for a kick and more flavor (this is one of my favorite meals and this salsa pairs well with everything!) I love easy and healthy meals. This is one of my go-tos when I’m in a rush but I still want to enjoy a nice lunch or dinner! I love to serve this meal with grilled veggies, rice and tortillas or even over a salad. Hope you enjoy it as much as I do!

Ingredients:

• 1 lb Shrimp ( peeled and deveined)

• 6 Garlic cloves

• 1 stick of Butter

• 1/3 cup olive oil

• Salt and pepper

• Tümü salsa macha

Directions:

1. Wash the shrimp. Peel and devein.

2. Season shrimp with salt and pepper. Set aside.

3. In a deep skillet add the butter and olive oil over medium heat. Add sliced garlic and cook for 1 minute. Careful not to burn the garlic!

4. Reduce to low heat. Add shrimp and cook for about 2 minute on each side

5. The shrimp should be pink and curled. That’s how you know it is cooked! Add a few spoons of Salsa Macha to add more flavor.

6. Serve immediately. Enjoy!

As you open the grand doors of Isabelle et Vincent, you know you are about to be transported to another place. Lucky are we to have this special place in town where, for a moment, you can be transported to a cafe in Paris. Known for their variety of macarons, tarts, quiches, breads and delicious desserts, this small family-owned French bakery is big on taste.

Brioche

ingredients:

• Flour 1.000 grams

• Sugar 180 grams

• Salt 22 grams

• Butter 125 grams

• Eggs 250 grams

• Milk 450 grams

directions:

Step 1. Combine milk and eggs and mix together

Step 2. Add to flour, then add salt and sugar

Step 3. Start mixing

Step 4. Cut butter into small chunks, adding slowly to the dough

Step 5. Mix until soft and smooth

Step 6. Proof in a warm and humid place until it rises and bounces back when pushed in

Step 7. Brush egg wash on top

Step 8. Bake at 160C until golden brown.

Voila!
