October has a way of bringing people together. With fall festivities in full swing, football season heating up, and the first hints of the holidays ahead, it’s a month made for gathering. The weather may shift between summer’s last stretch and autumn’s crisp welcome, but either way, it’s the perfect time for food to take center stage, filling our tables with comfort and seasonal flavor.
This month, we’re sharing a little farm-to-table inspiration for your next gathering as we highlight beautiful table settings paired with a delicious chef-created menu. We’ve also compiled some favorite local restaurants for date nights, family outings, budget-friendly bites, and indulgent treats, so you can spend less time searching and more time savoring. We rounded out the food with some fun and delicious recipes to help you celebrate the season.
We also sat down with IV Lounge owner and author Carey Mencarini, who candidly shares her inspirational journey, the philosophy behind IV therapy, and how her clinic is redefining wellness in our community. Where food fills your tummy, vitamin therapy fills your cells.

RUSTIC FALL SUPPER
Gather friends and family for a farm-to-table feast filled with comforting flavors and rustic charm
There’s no better way to welcome fall than with a cozy gathering of friends and family around a beautifully decorated table filled with comfort food. From the first sip of a smoky Mezcal cocktail to the aroma of freshly roasted vegetables and herbs, this farm-to-table dinner is brimming with character and flavor. Earthy ceramics and rustic arrangements of locally foraged blooms set the perfect scene, while each dish invites everyone to slow down, savor, and enjoy the simple pleasures of a good meal.
This dinner starts with an Arugula Salad with Grilled Corn, Shaved Radishes with Zucchini and Goat Cheese and served with a Creamy Lemon Vinaigrette.
Buttermilk Brined Fried Chicken pairs nicely with Roasted Heirloom Carrots drizzled with Hot Honey. Peach Bread Pudding with Salted Caramel Cream rounds out the meal for the perfect sweet treat.
We’re sharing a couple of our favorite recipes from this feast so you can bring the flavors—and the feeling—of this gathering into your own home.
BUTTERMILK BRINED FRIED CHICKEN
Dried Spice Mix:
• 2 tablespoons white pepper
• 1 teaspoon ground mustard
• 5 teaspoons paprika
• 2 teaspoons fresh black pepper
• 2 tablespoons garlic powder
• 2 teaspoons dried oregano
• 2 teaspoons cayenne
• 1 teaspoon celery salt
• ½ teaspoon dried thyme
• 4 teaspoons onion powder
• Palm kosher salt
Buttermilk Brine:
• 4 cups buttermilk
• 1 bunch fresh sage
• ½ of spice mixture
Dredge:
• 2 cups flour
• ½ cup cornstarch
• 1 tablespoon baking powder
Other Ingredients:
• Whole cut up chicken or 2 bone-in breasts, 2 thighs and 2 drumsticks
• 4 cups shortening
Directions:
Place chicken in a large Ziploc bag and pour buttermilk brine over top. Add fresh sage and store in the fridge. Marinate chicken in brine for up to 24 hours.
Preheat the oven to 350 degrees. Prepare a baking rack within a sheet pan for raw chicken and a second one for cooked chicken.
Add remaining spice mixture to flour mixture. Whisk together well.
Pull chicken out of buttermilk mixture and let it drip. Coat firmly in flour mixture and set on raw chicken rack. Complete each piece of chicken.
Heat shortening to 350 degrees in a large pot. (Our preference is a cast iron Dutch oven.) Place 2 to 3 pieces of chicken in oil and cook for 3–5 minutes per side. Place on the cooked chicken rack. Put cooked chicken in the oven to complete cooking for 15 minutes.
Let chicken rest for 5–10 minutes before serving!
PEACH BREAD PUDDING
Ingredients:
• 1 loaf brioche
• 5 fresh peaches
• 2 tablespoons sugar
• 2 tablespoons butter
• 2 cups milk
• 1 cup heavy cream
• 5 eggs
• 2 teaspoons cinnamon
• 2 tablespoons brown sugar
• 2 teaspoons vanilla
Directions:
Preheat oven to 350 degrees. Cut bread into 1-inch cubes. Dice peaches. Place peaches, white sugar, and butter in a saucepan. Cook until sugar is dissolved and peaches are soft. Mix all other ingredients together. Spray a 9x13-inch baking pan and add peach mixture, brioche pieces, and milk/egg/ cream/spice mixture. Bake for 45 minutes. Let cool for 20 minutes, then cut and serve in ramekins.
SALTED CARAMEL
CREAM SAUCE
Ingredients:
• 1 cup granulated sugar
• 6 tablespoons salted butter, room temperature and cut into 6 pieces
• ½ cup heavy cream
• 1 teaspoon salt
Directions:
Heat sugar in a medium saucepan over medium heat, stirring constantly. Sugar will form clumps and eventually melt into a thick amber-colored liquid. Be careful not to burn. Once sugar is completely melted, immediately add the butter slowly as the caramel will bubble rapidly. Stir the butter into the caramel until it is completely melted. If you notice the butter separating, remove from heat and vigorously whisk to combine it again. Very slowly drizzle in heavy cream while stirring. Allow the mixture to boil for 1 minute. Remove from heat and stir in salt. Caramel thickens as it cools.

DRIPPING VITALITY
For most of us, the sense that healing can happen doesn’t happen as dramatically as it did for Carey Mencarini.
In a wheelchair, on oxygen, and diagnosed with several life-threatening disorders—including advanced Lyme disease and a form of ALS—Mencarini
illness or simply a boost in vitality. She also has recently published a book, The Vitality Solution, which details the benefits of IV vitamin therapy, fasting, and mindfulness practices.
We caught up with Mencarini to learn more.

had been told she was dying. Unable to swallow, she was grateful when she discovered IV nutrient therapy, which kept her going as she searched, undaunted, for better answers. Finally, a doctor reviewing a previous MRI discovered a significant culprit: a brain malformation that needed surgical repair. “When I woke up from brain surgery breathing on my own and able to walk unassisted,” she says, “I knew healing was possible.” Mencarini credits intravenous vitamin therapy with saving her life.
In addition to using it while she was deathly ill, following surgery in 2012, she continued taking IV nutrients while she underwent treatment for Lyme and regained her strength. She knew she wanted to spread the word, and the treatment, to others. Fast forward, and in 2021, Mencarini opened IV Lounge—a drip bar and wellness space—in Cameron Park, and recently moved it to EDH’s Town Center. She provides services to others who are on their own paths to wellness—whether that path involves healing from serious

Vitamins are the building blocks or the foundation; other healing alternatives build on that foundation, making us more resilient and, in some instances, more receptive to receiving nutrients.

A cancer patient came in and had several IV drips to build up her system prior to undergoing treatment. She was able to not only endure the harsh treatment but get through it with much more ease and fewer symptoms. Her doctor could not believe the results and how she handled it all. She is still a client today and comes in regularly so she can feel her best and keep her immune system functioning as well as possible.
WHAT IS THE MOST COMMON MISCONCEPTION ABOUT IV THERAPY?
Myth: IV vitamin therapy costs too much. Reality: Being sick costs far more money—and time. When we are not proactive with our health, we become reactive. The end result: missing work, school, important life events, not feeling like ourselves, pain and suffering.
WHICH WELLNESS PRACTICE IS MOST ESSENTIAL IN YOUR DAILY LIFE?
Bar none, vitamin therapy via IV or injections. It enables me to run multiple businesses and avoid being sick repeatedly from every little bug.
WHAT LED YOU TO WRITE THE VITALITY SOLUTION ?
After going through my own health journey, experiencing and learning about so many different healing modalities, it was painfully clear to me how little

WHAT ADVICE WOULD YOU GIVE TO SOMEONE JUST BEGINNING THEIR WELLNESS JOURNEY?
Be open to alternatives, explore various modalities, and find what works for your body and enables you to live life to its fullest. Never give up.

How To Stay Festive And Healthy? Sure Thing
Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.

With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.

These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.

Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.

INGREDIENTS
• 2 slices crusty bread (sourdough, ciabatta, French bread)
• 6 oz roast beef
• 2 slices provolone cheese
• 2 tbsp butter (for toasting)
INSTRUCTIONS
• 2 ½ tbsp mayonnaise

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.

Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

• 1 pear, thinly sliced

• Rotisserie chicken breast thinly sliced
• Sourdough bread, buttered (optional)
Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.

• 1 tsp thyme or rosemary
• Salt, pepper, chili flakes (optional)

• Optional: 4 slices prosciutto

Toss cherry tomatoes with olive oil, garlic, herbs, salt, and pepper. Roast at 375°F for 20–25 minutes until soft and caramelized. Brush bread with olive oil. Toast in the oven at 375°F for 5–7 minutes until crisp. Layer mozzarella slices on the toasted bread. Add fresh basil. Return to the oven for 3–5 minutes, just until melted. Optional: Top with roasted tomatoes, arugula, and prosciutto (if using). Drizzle with pesto and balsamic glaze.
