Feeding Your Soul
Recently, I took a trip to see family down south, and apart from catching up with the people I love, I was really looking forward to the food and family meals.
Taking time to shop for the items at local markets, cooking together, discussing the family recipes that have been used for generations, and then sitting down to eat it all together was truly special. Not only were the tomatoes, okra, corn bread and green beans some of the best in the country… so was the precious time, conversation and laughter shared. A small moment in time to feel blessed and loved.

Regardless if you are with family or not, sharing meals solo, with friends or even strangers can be a special experience. Words around food are oftentimes not even needed. Like music, food can be a universal language that can be shared across cultures around the globe.
You might guess that October is our annual Food & Drink issue. Although we have heard rumblings of some favorite local staples closing, Edina has consistently had some wonderful restaurants, and we can rest assured that there will be up and coming opportunities to dine locally. And, isn’t there that saying, “Variety is the spice of life!”?
From a charitable standpoint, VEAP, or Volunteers Enlisted to Assist People, is an organization dedicated to distributing over four million pounds of high-quality, healthy, and fresh foods to more than 100,000 persons, families, children, and seniors experiencing hunger or food insecurity every single year. We met with them to learn more about their program and community support.
Red Cow, a neighborhood staple for over a decade, talks about their new brunch menu and expanded catering options to help relieve the stress of trying to do it all yourself. If you’re gearing up for entertaining this holiday season, Jester Concepts has beautiful spaces and ambiance to fit any special occasion with several metro locations. Red Cow, the family-owned local favorite that’s been redefining the modern tavern experience in the Twin Cities since 2013, is ushering in a new era with the launch of an all-new brunch menu and expanded catering. Both menus are now aligned with Red Cow’s recently refreshed main menu – bringing together bold flavor, thoughtful presentation, and community-focused hospitality under one cohesive vision.
“We’ve always defined Red Cow as a 21st-century tavern,” says Michael Giacomini, Vice President and longtime leader in the family-run business. “That’s been our mission since day one: to serve elevated comfort food in a welcoming environment – great burgers, great cocktails, great wine and beer, but not at $45 a plate.”
Now, more than a decade in, Red Cow is reimagining what that mission looks like in today’s food landscape – where customer expectations have evolved and health-conscious, flavor-forward dining has become the norm.
A BRUNCH MENU WITH BAJA CALIFORNIA SOUL
Red Cow’s brunch has been a part of the menu since 2015, but the new version is a full reimagining. Offered on Saturdays and Sundays, and inspired by the vibrant, airy flavors of Baja California, the menu has been enhanced to offer a lighter, fresher brunch experience, without losing the indulgent comforts that make brunch so beloved.
“Our inspiration was to create something that felt fresh and colorful, something that makes you feel good after you eat,” Giacomini explains. “It’s Baja California – not Southwest. Light ingredients, bright flavors, and dishes that deliver on value and taste.”
Fan-favorite dishes include the breakfast burrito served with fresh salsa verde and the huevos rancheros, both showcasing that Baja-style influence. More familiar offerings like steak and eggs and the Red Cow egg sandwich offer hearty options with a chef-driven twist.
But it’s the sweet section that Giacomini says really brings the “wow factor.” The crème brûlée French toast – a thick-cut slice topped with fresh berries – is an eye-catching, shareable showstopper. “It’s the real eye-opener,” says Giacomini. Also on offer: triple stack pancakes with caramel sauce and a strawberry-glazed waffle that’s as Instagram-worthy as it is delicious.
To complement the updated food, Red Cow has added espresso machines to all locations and now offers a full coffee program along with fresh-squeezed juices like grapefruit, green juice, blueberry-lemon, and, of course, classic OJ.
“It’s about aligning the whole experience,” says Giacomini. “People want options. Good coffee, refreshing juice, food that feels good – and maybe something sweet to share.”
BRUNCH IS FOR BEVERAGES
Speaking of drinks, at Red Cow, brunch isn’t just a meal – it’s an experience, especially when it comes to specialty bevys.
Red Cow’s brunch cocktails – playfully dubbed “Eye Openers” – bring both creativity and fun to the table. Standouts include the Breakfast Old Fashioned garnished with a waffle stick, a Cold Brew Gin & Tonic served over a giant rock that slowly infuses the drink, and the Bloody Derby, a whiskey-based take on the brunch classic.
And for those who can’t decide? There’s the Brunch Flight: a sampler of four mini drinks – Bloody Mary, mimosa, cold brew, and beer – served in custom fiveounce glasses. “Brunch is the meal of beverages,” Giacomini says with a smile. “You’ve got your water, your coffee, your juice, your cocktail – it’s part of what makes it fun.”
Not to be missed are Red Cow’s whimsical cereal milkshakes, available in Fruity Pebbles, Reese’s Puffs, and Cinnamon Toast Crunch varieties. “They’re just fun. They look cool, they taste great, and they guarantee a nostalgic experience for all.” he adds.

CATERING THAT REFLECTS RED COW’S EVOLUTION
In tandem with the brunch launch, Red Cow has expanded and refined its catering menu, bringing the same care and creativity found in its restaurants to offices, parties, and gatherings.
Originally rooted in slider-style versions of its signature burgers, the catering program now includes charcuterie boards, shareable salads, and chef-driven small bites like ahi tuna poke, tenderloin crostini, and Caprese skewers.
“We’ve really upped our game,” says Giacomini. “It’s not just sliders anymore. We thought, ‘How do we provide curated catering offerings, put the Red Cow spin on it, and ensure an elevated experience outside of our restaurant?’”
Available with just 24 hours’ notice, catering orders can be placed online directly at redcowmn.com/catering, or through Red Cow’s dedicated catering manager, Emily, who helps tailor orders to each group’s size and needs. No order minimum is required for delivery.

The catering menu is ideal for office lunches, social gatherings, and graduation parties, with special packages available for larger events. Many items – including the elegant small bites – are exclusive to catering and not available in-store.
A UNIFIED VISION, ROOTED IN COMMUNITY
Ultimately, the changes to Red Cow’s menus reflect a broader evolution of the brand: one that honors its original vision while continuing to grow alongside its guests.
“We’ve been open for a long time now, and people’s palates have evolved,” says Giacomini. “There’s more awareness around good food, more expectations. We’ve always been about offering great food at a great value –and now we’re just taking that to the next level.”

Operating the Twin Cities’ largest food pantry really does take a village. Without the community's ongoing support, VEAP: Volunteers Enlisted to Assist People, would not be able to distribute over four million pounds of high-quality, healthy, and fresh foods to more than 100,000 persons, families, children, and seniors experiencing hunger or food insecurity every single year.
The organization was founded by a group of churches, first in Richfield and then in Bloomington. Although no longer faithbased, it still partners with many churches and community members who are part of faith communities.
In 2024, the nonprofit celebrated its 50th anniversary, and over the years, it has greatly expanded its services thanks to the generosity of others. “Minnesota is wonderful in that both the donor community and the volunteer community are so strong compared to other states,” says Caley Long, its marketing and communications director. “We always top the list when you look at charitable donations and the giving of time and energy.”
There are a multitude of ways in which VEAP helps those in need. Its stationary food pantry in Bloomington books about 215 appointments per day. However, there are times when people come in without an appointment.
“If it's urgent, we'll get them what's called an express pack, which is a bag of non-perishable food that we then add any
extra produce that we might have on hand,” she says. “We don't turn anyone away, but then we try to make them an appointment for next time.”
Having an appointment allows people to choose the fruits, vegetables, meats, dairy, and non-perishable items that they and their family prefer. “We try to make it as diverse in options as we can,” says Caley. “We have a lot of gluten-free families, so we're always requesting donations that help meet people’s dietary needs, too.”
VEAP’s Mobile Food Pantry is another way it gets food where it’s most needed by travelling to various locations throughout each month. Everyone is welcome – no appointment is necessary.
“WE TRY TO MAKE IT AS DIVERSE IN OPTIONS AS WE CAN. WE HAVE A LOT OF GLUTEN-FREE FAMILIES, SO WE’RE ALWAYS REQUESTING DONATIONS THAT HELP MEET PEOPLE’S DIETARY NEEDS, TOO.”

For those who cannot travel outside their homes due to transportation, disability, or other issues, the organization can deliver food to residences by appointment.
In addition to food, VEAP connects those in need with social services and financial assistance. This could be for a new mother who can’t work for a few months and needs her rent covered, or for someone escaping an abusive situation and requiring a security deposit on an apartment.
“These are things we know would destabilize a family, so we're able to help temporarily,” says Caley.
Run almost exclusively by volunteers, VEAP is always in need of more assistance. The organization has been recognized as the Bronze Winner in the Minnesota’s Best Readers’ Choice Awards for Best Place to Volunteer.
While the stationary pantry is open Monday through Friday from 9:00 to 5:00, there are many other ways in which to volunteer. “We have both individual and group opportunities, so if people are part of a book club or they want to get their friends together to volunteer, we can host that,” she says. “People can hold what we call Food and Fun drives that could be very specific to a program we offer.”

This would include diapers and formula, as well as items for the special birthday party bags, such as cake mix, frosting, balloons, hats, and party favors. “Or, if someone has an initiative to say pack hygiene kits with their civic engagement group or their neighborhood on a weeknight, we can help accommodate that group,” says Caley. “If they need a speaker, we can send someone to talk about the work we're doing and help pick up and organize collections.”
Of course, financial donations make the most significant impact. “We can take


$1.00 and buy three meals' worth of food, which is how strong our purchasing power is,” she says. “While we always encourage food donations, we can get it so much cheaper than an average person going out and buying it.”
Right now, explains Caley, it's a tough time for many nonprofits and charities, and she believes it's going to get worse. “We've had a lot of federal support swept away, and we know that the demand is going to keep growing with the cuts to Medicaid and food support programs like SNAP [Supplemental Nutrition Assistance Program.] So, any way that people and the community can come together will help us keep that safety net strong.”

There’s something deeply satisfying about a well-made sandwich—especially when it comes together with minimal effort but delivers big on flavor. As the season changes and appetites grow heartier, fall is the perfect time to get creative with ingredients tucked between slices of crusty bread or buttery rolls. Whether you’re looking to upgrade your lunch routine, enjoy comforting flavors and bold textures, or impress guests with a no-fuss meal, these easy-to-make sandwiches strike the perfect balance between simple and sensational.

Savory Roast Beef with Horseradish Cream
INGREDIENTS
• 2 slices crusty bread (sourdough, ciabatta, French bread)
• 6 oz roast beef
• 2 slices provolone cheese
• 2 tbsp butter (for toasting)
• 2 ½ tbsp mayonnaise
• 1 tbsp horseradish sauce
• 1 tsp Dijon mustard
• Arugula
• Cherry tomato
• Caramelized onions
INSTRUCTIONS

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.
Sweet & Spicy Grilled Chicken Sandwich
INGREDIENTS
• 1 grilled chicken breast
• 2 slices pepper jack cheese
• 2 slices cooked bacon
• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)
• A handful of fresh arugula
• 3–4 cherry tomatoes (halved)
• 1 tbsp garlic aioli
• 1 brioche bun (toasted)
INSTRUCTIONS

Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

• 3 oz goat cheese
• Fresh arugula
• ¼ cup caramelized onions
• 1 pear, thinly sliced
• Honey, to taste
• Butter for toasting the bread
• Rotisserie chicken breast thinly sliced
• Sourdough bread, buttered (optional)
INSTRUCTIONS

Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.

Located right next to Edina City Hall, Starling is Jester’s only Edina location, which opened in 2024. The Solarium, a semi-private space, can host up to 30 guests seated or 40 standing.
“It’s bright, modern, and completely flexible,” Kelly says. “We see everything from corporate luncheons, casual family-style dinners, to bridal shower brunches in this space.”

How To Stay Festive And Healthy? Sure Thing

Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.

With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.
spooky CHARCUTERIE
These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.

Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.

The easiest bet for a quick and healthy Halloween treat? You can’t go wrong with a veggie tray shaped like a jack-o-lantern. Use baby carrots as the base, and cucumber or celery to shape the mouth and stem. The eyes? Two round bowls of veggie dip.
