Remember Aesop’s The Ant and the Grasshopper? Ant spends all summer piling up grain; grasshopper spends same singing and dancing like a nincompoop; winter sends grasshopper groveling at ant’s feet, hat in hand; ant tells grasshopper to kick tiny rocks.

Outside of the Air Force, there are typically two types of people who learn to fly aircraft.
The first wants an occupation – something with a six-figure salary right out of the gate, and which is infinitely more interesting than gawking at an endless procession of pixels.
The second is no stranger to six-figure salaries. They have already mastered their surroundings, and now wish to take to the heavens like Apollo on his golden chariot.
AV8 Flight School turns both into pilots. It is the only Twin Cities flight school offering both airplane and helicopter training, and it is quite naturally located at Flying Cloud Airport.
“It didn’t always used to be that way,” said George Lichty, AV8 general manager and helicopter certified flight instructor. “We were founded as Hummingbird Ventures in 2002, and exclusively trained helicopter pilots at Faribault Municipal Airport until moving to Flying Cloud two years later.
“We welcomed Ryan Kotula as a student in 2016. I instructed him myself. But instead of leaving Hummingbird as a pilot, he stayed on as its new owner. He reinvigorated the school by purchasing it a fleet of six beautiful modern airplanes, as well as remodeling its office and hangar into brighter, fresher, and altogether more inviting spaces.”
Hummingbird grew in leaps and bounds over the years. Five employees became 39, with as many as 18 instructors at any given time. Fourteen hundred flight hours

a year grew to 9,400. And once the school became as highly regarded for fixed wing training as it had previously only been for rotary, a hovering bird no longer properly represented it. AV8 first took off in 2019.
“We owe a lot of our success to the nature of our product,” explained George. “There will always be high demand for pure, heart-racing, three-dimensional freedom Getting up there and out where no one else is around, and taking any path to anywhere you feel like going? It’s total liberation … like jazz, except if jazz were a roller coaster.
“It’s not for everyone. Some folks can only learn to tolerate flight. Others decide to take up sailing instead. But if you’re like me – and you can’t know if you are until you’ve actually tried flying – then you can never learn to live without it. You’re hooked the instant the altimeter breaks ground level.”
I have no business behind the yoke or cyclic stick of an aircraft. I’m such a lousy driver that I have to apologize to Progressive in advance every time I touch a steering wheel. Speaking as an obligate terrestrial creature, I appreciate AV8’s state-of-the-art Redbird flight simulator. “Our full-motion stationary sim provides an incredibly realistic experience,” said George. “It’s invaluable for multiple types of instruction and licensing, and also provides a great introduction to all we have to offer. “When we first started out, our average student was 55 years old. They were successful in their career, and wanted to celebrate by sticking the ultimate feather in their cap; or, alternatively, had worked as a commercial airline pilot, and now wanted to try out the other, more exciting (in my opinion) thing.
“AV8 still welcomes plenty of hobbyists, but I’m pleased to say our attempts to reach aspiring professionals have really paid off. By partnering with Purdue and Liberty University to make more financial aid available, we’re welcoming increasing numbers of students in their 20s.
“We’re helping these kids achieve freedom in more ways than one. Far be it from me to tell anyone not to go to college, but an exciting career where you’re highly respected, equally valued, and at liberty to work anywhere you want – and however often you want – is much more attainable than most people think. The world needs pilots!
“And it needs them in all shapes and sizes. At present, only around four to six percent of commercial airline pilots are women. We’re doing our part to help correct that discrepancy, and are proud to participate in Minnesota Aviation Career Education Camp, Stars of the North’s annual Girls in Aviation Day, and other programs which introduce young women to exciting careers in aviation. We now have a 25 percent female student body to show for our efforts.
“Flight is the great equalizer. It doesn’t matter if you’re a millionaire or you haven’t got two dimes to rub together. There’s a place in the sky for everyone. Getting them there is our passion!”

Meat. Booze. Two best things ever. Right? Rhetorical question. Of course they are.
But now let me ask you something for real: What if you combined mixology and the culinary arts at the molecular level? Would the resultant new thing be even more betterer than either best thing on its own?
It most certainly would. I know this because it already has a name.
“Butcher and Bartender,” said Chris Jack, proprietor. “What else could my wife Stephanie and I name our food truck, where we marry the finest cuts of meat with the highest-quality spirits?

“As a long-time food and beverage professional, with a career that has influenced over one dozen restaurants in five states including California and Hawaii, I’ve always been fascinated by the delicate interplay between the edible and the imbibable. I wanted to create dishes that really push the fusion of both major culinary elements – to go beyond Marsala sauce and rum cake, and attain a perfect balance of sweet, sour, salty, bitter, and umami.”
As a native Chicagoan, Chris grew up where he could be fined or imprisoned for making lackluster sausages. It only made sense to start there.
“I started naming my creations after the cocktails and spirits that influenced them,” said Chris. “My pork and fennel sausage is named ‘Negroni’ because it’s infused with the cocktail’s same gin, Campari and sweet vermouth. The liquors enhance the pork’s flavor profile instead of overpowering it, and give off a faint aromatic twang like you’ve never sensed before.”
Chris went on to perfect “Michelada” (traditional Midwest brat fortified with beer and Clamato), and then “Cocotini” (Lao-style pork sausage made with
lime and lemongrass, and anointed with vanilla vodka and coconut rum). But Chris isn’t merely a Chicagoan. As an American, there was yet another culinary call he had to answer.
Butcher and Bartender’s Manhattan butter burger isn’t just a burger. It is a transformative experience: a fresh six-ounce ground beef patty infused with bourbon, vermouth and bitters, nestled inside a lightly toasted bun with freshly cut toppings and housemade sauces, complete with a side of piping hot beef tallow fries. This is why God invented cows.
The Jack family’s ultimate goal is to turn Butcher and Bartender into brick and mortar. “We’ll serve beer, cocktails, and cocktail-infused foods, as well as sell our meats to take home,” Chris envisaged. “I’m especially looking forward to getting behind the bar again, and offering an elite beverage and mixology program to complement our food. As things stand now we don’t technically serve alcohol. All of it evaporates out of the food while it’s cooking, and you can probably imagine the Department of Public Safety’s position on the concept of ‘food truck liquor licenses.’”
For now, Chris is enjoying the tight confines and limitless boundaries of his new venture. “Our food truck has brought my wife Stephanie and I closer together than ever before – and we were already a match made in heaven,” added Chris, wisely. “She’s also a lifetime hospitality professional, who comes from a foodie family that owns one of the best and longest-running Chinese restaurants in Columbus, Ohio, and who can (and does) talk about food with me constantly. And my two little daughters, Kailani and Mya? They think having a food truck is the coolest thing ever.
“But the best part of owning a food truck? It lets us serve anywhere . Eden Prairie High School Teaches Aspiring Writers, Journalists and Documentarians
What’s the first thing that comes to mind when you think about Eden Prairie Lifestyle? That’s right: our hard-hitting journalism. We don’t care what we have to make up in pursuit of the truth. And we don’t just keep our sources a secret. We refuse to even have sources.
It’s little wonder why we were invited to participate in Eden Prairie High School’s latest media and communications capstone program. Mentoring promising youths alongside our peers was a superlative honor! But if the program winds up producing any actual journos, then the school’s talented educators will deserve considerably more credit for it than us.
“Capstones are the pinnacle of coursework available to our students,” explained Ethan Dado, pathways coordinator for Eden Prairie Schools. “Whether they choose entrepreneurship, engineering, media and communications, or any of our 10 other available capstones, a student is challenged to apply everything they’ve learned in a real-world setting, complete a project befitting of an entry-level professional, and present their work for evaluation by industry experts.”
“I’m a huge fan of learning for its own sake,” explained Alex Bauer, English and journalism teacher at Eden Prairie High School. “The reward for pursuing knowledge will never become less rewarding. But now that our students have constant and unlimited access to information, learning should become less about memorization and more about applying skill and passion toward a goal – ideally something that could count as hands-on experience during a job interview.
“This year’s semester-long media and communications capstone projects encompassed news articles, photography, video production and podcasting, plus contributions to Eagle News Network, Eyrie Magazine, and our school’s website. I’m always amazed by our students’ capstone projects, but was especially impressed by the talent, hard work and inspiration I saw this year.”

“My grandma, believe it or not, was the first-ever woman vice president at Blue Cross,” said Chef Rick Mueller, who runs kitchen for Tavern 4&5. “She inspired a lot of people around her. But to me, as her grandson? Nothing was so impressive as her skill in the kitchen.
“Her meatloaf. Her cabbage rolls. Her hearty soups and sandwiches. With all due respect to my wife and my mother, no one will ever make better comfort food than Grandma Dorothy, who always hosted every holiday, and who always cooked from scratch, and who never left any doubt in my mind as to what I wanted to do with my life.

Chef Rick cut his teeth on restaurant work as a teenage busboy at a steakhouse, though he was soon absorbed into its kitchen. “The ‘90s shouldn’t feel like they happened so long ago, but they really were a different era,” Chef Rick reminisced. “Conduct standards for kitchen staff were more relaxed back then, which meant I heard and saw a lot of … interesting things during my earliest days on the job.
“That was also back before the internet was much of a thing. Cooks didn’t have recipes for every dish on earth right at their fingertips. Instead they had to cultivate a solid, fundamental understanding of how food works, and develop recipes based on what their own experience had taught them.”
Chef Rick’s culinary crucible grew even hotter when he traded the steakhouse for a high-end downtown hotel. “It was a cutthroat environment, where recipes were never written down, and where I was surrounded by cooks three times my age,” Chef Rick continued. “One year in that place taught me more than I could have learned at any culinary school – and I spent five years there.”
Chef Rick cooked for various other restaurants around the metro during and after his hotel years. He had good bosses. He had bosses who must have had the potential to be good somewhere deep down inside of themselves, but had not yet discovered where. Out of all of them, he liked none better than Chef Scott Foster.
“Scott opened a couple of our area’s most influential restaurants over the years,” said Chef Rick. “I was fortunate to make his acquaintance early on in my career. He taught me the actual process of running a kitchen – not culinary skills per se, but about preparation, ordering, labor, and every other aspect of operating a kitchen that’s actually profitable.
“Above all else, Scott taught me that it’s all about your people. As important as the bottom line might be, you can’t make it the be-all and end-all. Otherwise, you’re going to wind up alienating those who care most about quality.
“I called Scott out of the blue around three years ago. At the time I was working at a major international franchise’s Twin Cities location. That restaurant did around $1.5 billion in sales annually, with world-class operations that truly honed my skills to a new level. But I’d gotten to a point where I no longer wanted a career. I wanted a home – a restaurant right here in my hometown of Eden Prairie, ideally, where I could slow down, focus on executing the highest-level of culinary skill, and become a sort of staple in my community. I wanted to cook for my neighbors.
“I’ll never thank Scott enough for bringing me on as a unit chef for Tavern 4&5 (which is managed by the Nova Restaurant Group he is partner to). It let me resume cooking with the same passion that drew me into Grandma Dororthy’s kitchen way back when. We’re having fun together. We’re serving amazing food. We’re creating great relationships with our guests. I suppose there are higher concepts for a restaurant, but to me, ‘cozy neighborhood hangout’ is the pinnacle of all of them.
“Now that I’ve been promoted to ‘food and beverage analyst’ for Nova, I have several other restaurants to help manage around the Twin Cities. Despite this, Tavern 4&5 will always be my home kitchen – the place I return to whenever I feel like cooking with love.”

“When this business first started, it was just ‘Coach John Richardson for hire,’” said Coach John Richardson. “I was fresh out of college, where I’d played soccer and studied childhood development. I was fortunate to receive an opportunity to teach preschool soccer for the Minneapolis Park and Recreation Board in 2001. My students’ parents liked what I was doing, and thanks to their spreading the word, I soon found myself coaching more than just soccer for the city year round.

“I spent several years honing a program centered around positivity and encouragement before deciding to scale it. It took some more time to figure out how to instill my high standards for early childhood sports education in other coaches. But like all hard work, it paid off. Revolutionary Sports’ several hundred coaches now teach more than two dozen different sports for schools, community centers, park and recreation boards, early childhood learning centers, and sports facilities in over 50 different communities throughout the metro area.
“Revolutionary Sports coaches children of all ages, though the vast majority of them are 8 and younger. Kids tend to focus on just one or two sports as they grow older, which is why we feel it’s important to introduce them to a variety of sports while they’re still very young. It’s no coincidence that Revolutionary Sports is perfectly geared toward children ages 2 through 8, who are still figuring out what they enjoy playing most, and whose attention spans aren’t famously long.
“Kids in that age range are just wonderful to work with. They’re so genuine. Honest. Enthusiastic! When you reward a young child for accepting new challenges, you put them on the right track to build confidence over the course of their entire life. That’s why I still spend most of my time coaching, despite owning the company. It’s the best way I know how to change the world for the better.
“We devote each session to teaching kids a new fundamental using our unique learn-practice-play approach. For example, suppose we’re teaching kids how to handle a soccer ball. We’ll begin by briefly demonstrating a technique or two. Then we’ll move on to practice – simple exercises, like ‘sharks and minnows’ and ‘ships across the ocean.’ We’ll finish up by breaking the kids off into very small groups. By playing two-on-two or three-on-three, each one gets to spend significantly more time interacting with the ball.


“We take great care to avoid two of coaching’s biggest pitfalls. First, we don’t haphazardly switch activities every couple of minutes. We want each session to foster a certain fundamental skill, and maintain that as our focus without letting the agenda grow stale. Second, we never tell kids when they’re doing something wrong. Instead, we praise them whenever they’re doing something right. Celebrating the positive helps kids build confidence, and healthily pushes them toward what we hope will become life-long love affairs with athletics.

EMERALD ASH BORER

It is believed to have entered the United States by stowing away inside cargo from China. It is estimated to have wreaked billions in damage since its arrival around 24 years ago. It is the emerald ash borer, which kills its namesake tree by devouring the cambium layers beneath its bark.
The pernicious jewel beetle has already destroyed millions of ash trees in Minnesota. “It’s currently one of our biggest focuses, and will stay that way for the foreseeable future,” said Aaron Athmann, owner of A + A Tree & Landscaping.
“Thinning of the leaves around the tree’s canopy. D-shaped holes through its bark. Squiggly paths appearing on wood just beneath the bark.
