Welcome to our Food and Drink issue—a celebration of the unique culinary culture that makes our town not just a place to live, but a place to savor.

Food is more than just sustenance; it’s the foundation of our daily lives. Amid the whirlwind of practices and games, proper nutrition is crucial for my family. While the occasional drivethru stop is inevitable, we’ve witnessed firsthand the stark difference between a well-nourished child and one fueled by junk food. I’m thankful to live in a community where a local farmers market and fresh produce are always within reach. From birthdays to weekend victories, food is also a way to bond, as meals bring us together to savor life’s special moments. Even in the midst of hectic schedules, gathering around the dinner table allows us to slow down, share our stories, and enjoy each other’s company.

This sense of connection extends beyond the home and into the community spaces that make Dripping Springs unique. For example, when friends visited one weekend, we decided to take them to a local distillery. What’s normal for us sparked their curiosity: “A distillery?” they asked, surprised. “Well, yes,” I replied. “It's likely not what you’re envisioning—they have great food, open space for the kids to play, and live music.”

As we settled in for a relaxed evening al fresco, catching up while our kids played with others, they asked again, “So, places like this are common here?” It’s easy to forget that the plethora of outdoor venues we have here is not common. What’s ordinary to us is a rare luxury for others—one that we’re fortunate to have in abundance.

In this issue, we’re diving into what makes Dripping Springs a true culinary gem. From farm-fresh ingredients to the artisanal beverages crafted by our talented brewers and distillers, to a behind-the-scenes glance at a local favorite, every story is a testament to the passion and creativity that define our community.

Sharing a drink with a few good buddies is always a pleasure, but The Bloody Buddy is that one pal that will really spice up your next get-together.

Created by Buddy Jordan and Joey Kindred, The Bloody Buddy is a chili pepper-infused vodka and homemade bloody mary mix combined in one convenient bottle. Made with fresh, top-shelf ingredients at a distillery right here in Dripping Springs, this feisty beverage is Texas’ first and only ready-to-drink bloody mary.

The Bloody Buddy sets itself apart with its high-quality, all-natural ingredients. The peppers that give the vodka its Texas kick are ordered fresh and cut by hand. “Everything we do needs to be all natural,” says founder and creator Jordan. With no additives or preservatives and lower sodium, “it’s as healthy a drink as it can be,” he shares.

The Bloody Buddy was born when Jordan was a bartender at a downtown Austin steakhouse and, stirred by the growing trend of infusing distilled alcohol, began experimenting. His first version of The Bloody Buddy—a bloody mary-inspired cocktail, shaken with ice and strained into a chilled, salt-rimmed martini glass—became the number-one drink on the restaurant’s menu.

“That got our wheels turning,” says Jordan, who buddied up with Joey, his restaurant colleague, to create the first ready-to-drink bloody mary on the market. After years of researching and learning to make their own vodka, the two set up their distillery and completed their first run in 2016. Now, you can find The Bloody Buddy pre-mixed bloody mary in bottles or cans, as well as bottles of chili pepper-infused vodka to create your own zesty cocktail, in 2,700 stores throughout six states.

From concept to creation to expansion, the evolution of The Bloody Buddy was made possible with the help of Joey’s late father, Michael Kindred. A former banker, Michael was instrumental in guiding the partners through creating a business plan, raising capital, and understanding the spirits industry. “We couldn’t have done this without him,” shares Joey. To honor and acknowledge his “handiwork” that enabled Jordan and Joey to bring The Bloody Buddy to fruition, each bottle is marked with Michael’s thumbprint.

Michael’s influence also lives on in the company’s core values of integrity, honesty, love, leadership, and community involvement. With these principles in mind, Jordan and Joey endeavor to create a fresh, healthy product and build a family environment. “Having those core values is what drives us,” shares The Bloody Buddy owner and operator Joey. “Those are the things we try to live by and instill in those we work with.”

Aiming to support the Dripping Springs community, The Bloody Buddy has built relationships with charity organizations such as RED Arena, The Arc of Texas, and the Best Buddies program. “We’re nothing without Dripping Springs, so we give back as much as we can,” Joey says.

And now The Bloody Buddy is bringing new friends to the table, as Joey and Jordan are working on a line of beachy, summer-inspired cocktails. “We’ve got a lot on the horizon,” Joey says. “We’re going to work really hard and this new cocktail line is going to be a lot of fun.”

Ultimately, The Bloody Buddy’s mission is simple: “Our goal is seeing people smile, making people happy by drinking The Bloody Buddy,” says Jordan.

“When they’re having The Bloody Buddy, they’re enjoying their day,” Joey adds. “That’s refreshing.”

An Elevated Wine Experience

While Eric and Kris LaBrie first fell in love with wine and winemaking in their home state of Washington, their appreciation for good wine, good friends, and good community has followed them across the country. Now located in the Texas Hill Country, they just opened Gardien, a wine storage facility that focuses on more than just bottles and crates. It’s designed to bring people together.

“Gardien is much more than just a place to store your wine,” says Eric. “We want to be that catalyst that brings people together. We want our clients to meet each other, share personal interests, and hopefully make new friends and enjoy new experiences together.”

The LaBries know firsthand the camaraderie that is often experienced alongside a bottle of delicious wine. From harvesting and bottling wines with other volunteers, to hosting neighborhood wine walks and dinners with friends, they’ve made some of their best memories around a bottle of wine. And they hope to open up others to similar experiences and inspire them to create their own.

Bringing local communities of wine enthusiasts together is what they do best. Eric and Kris don’t want their facility to feel like an exclusive club for elitists in the wine market. Rather, they want to be a place where anyone can come and have fun learning about wine, share a bottle with a friend, or store their very first collection— no matter how big or small.

That’s one of the things that sets Gardien apart from most wine storage companies. It focuses on the people, on really serving the community. Instead of renting out large lockers (and potentially paying for space you don’t need), you simply pay to store what you have. Garden will inventory and photograph everything for you, so you never forget what’s in your collection.

And the LaBries will even give additional information about some of the wine you have. It’s all a part of Gardien's goal to give its customers an elevated experience and make them feel happy, included, and equipped in their knowledge of wine.

“The world of wine is huge,” Eric says. “And unless somebody shares some of their knowledge with you, you’ll never know.”

Members at Gardien also have access to hosting spaces on site. Whether you want to meet up with a client, share a bottle of wine with a few friends, or host a private dinner, it’s the perfect atmosphere for rich fellowship and pleasant conversation. “I think there are a lot of people in the Dripping Springs area that enjoy wine,” says Kris. “But there aren’t

many places that you can just go and actually open up a bottle of your own wine and share it with other people.” Gardien is striving to fill that gap.

With upcoming monthly events and opportunities for their clients and customers to learn and grow, the LaBries are providing an elevated experience to all wine lovers. “Every person who enjoys wine likely has a great story about people, places, and a particular bottle they enjoyed together. We wanted to share this concept with others and thought that wine storage could be the vehicle that allows us to bring it all together,” says Eric.

Founder and owner of Fitzhugh Brewing, Kerbey Smith longed to fill a gap she saw in the climate of breweries. In 2020, she opened Fitzhugh Brewing to be a “wildly inclusive place with amazing beer, delicious food, and a beautiful space for everyone.”

Smith felt that many breweries were made for guys and beer experts. She didn’t fit that category but still wanted a seat at the table to learn, participate, and drink good beer.

Head brewer Nathan Rice shares, “Whether this is your first rodeo or you’re a beer aficionado, we love it when anyone comes and asks questions. No one is left out and our whole staff is well versed in beer education.”

The menu at Fitzhugh Brewing features mouth-watering dishes, often made with locally sourced meat. “We’ve tried to stay true to Americana comfort food—very local, very fresh, easy-to-understand menu, and flavorful sauces,” Smith shares.

Smith intentionally designed the brewery with many elements to bring an airy, farmhousemeets-old-world-antique vibe with a classic black-and-white color scheme and a serene atmosphere. Parents and families love the location for the large playscape. Additionally, the team is excited to introduce on-site event spaces in the coming months.

Fitzhugh Brewing features a wide, ever-changing variety of beer and drink options:

• Craft Hard Seltzers: Seltzer flavors include blackberry sage lime, watermelon mint lime, coconut pineapple lime, pineapple ginger (Moscow mule), and cucumber mint lime. These are made with fresh cold-pressed juice, and Smith crafts each recipe.

• Historical beers from across the globe: The brewery features a beautiful world map with a pin for every country a beer is from, from Ethiopia to beers brewed with Japanese soybeans. “I want to bring back ‘forgotten beers’ from around the world but brew them with a Texas familiarity,” Rice shares. “Beers with origins in Australia, Africa, and Eastern Europe—these beers are of a time and place that they’re very seldom seen in the U.S., so we are excited to share them here, with our own Hill Country spirit.”

THE GARBO SISTERS TRIO AND THEIR LOBSTER ROLLS

“We’re crazy for lobster rolls,” shares Heidi Garbo, co-founder of Garbo’s, a seafood restaurant bringing New England cuisine with an Austin twist. Heidi, the eldest of the Garbo sisters trio, founded and co-owns Garbo’s restaurants together with her sisters, Samantha and Hannah.

The sisters brought Garbo’s to Central Texas in 2015 and now have three locations and food trucks, including a 150-seat, full-service restaurant in Dripping Springs featuring an expanded raw bar and two private dining rooms for special events. We sat down with the sisters to hear their story and find out why their lobster rolls are the best in the Lone Star State.

GARBO FAMILY ROOTS IN THE NORTHEAST

Originally from Connecticut, Heidi, Samantha, and Hannah were born into the lobster industry. Their father was a lobsterman and, for the last 45 years, their family has been catching lobsters and making lobster rolls together. Eventually, they moved to Key West where Heidi started a food truck, Garbo’s Grill, which became the number-one restaurant in Key West. Famous for her fish burrito, this recipe is still used for the sisters’ restaurants and food trucks in Texas.

Heidi moved to Austin in 2013 and started another food truck. The business exploded, and customers began begging for a restaurant—and that’s how Garbo’s was born.

Garbo’s sources its lobster fresh from the Northeast. In fact, the lobster comes from the same lobster facility in Maine that their father started many years ago.

“We save you a plane ticket,” Samantha says. With lobster sourced directly from Maine, you need only to visit this local restaurant to experience a taste of New England in an upscale yet casual environment.

“This is my last meal. I just keep bringing what I love to eat."

Heidi continues, “This is my last meal. I just keep bringing what I love to eat. Part of us is on every plate, and that is my ‘why.’”

TIGHT-KNIT COMMUNITY

Garbo’s has been there for its customers through every season of life, from after-pool eats in bathing suits to rehearsal dinners and wedding celebrations, followed by new babies affectionately called “Garbo babies.”

“We’re a tight-knit community, and we love keeping up with our customers—now family—through Facebook and text messages. We receive the sweetest cards and are here for every milestone,” Samantha shares. Garbo’s is eager to jump in and support the community by creating spaces for kids’ activities, hosting classes, and holding fundraisers for the local high school.

The largely female staff is like family, and the sisters credit their team for this shared, thriving culture. “Work ethic was instilled in us from a young age. We learned the importance of working hard and finding ways to get things done,” Heidi explains.

“We hustle, work hard, and have learned to consult each other for everything,” Heidi concludes. "This is best summarized on the wall in Garbo’s that displays, 'No grit, no pearl.’ Garbo’s exists to provide a quality, accessible luxury experience to seafood lovers everywhere."

1. Avoid seed oils like canola, vegetable, soybean, sunflower, safflower, grapeseed, cottonseed, corn, and rice bran, which are pro-inflammatory and cause oxidative stress. Instead, utilize

GHOST NOTE BREWING TAPS INTO GOOD VIBRATIONS

When Kenny and Thelma Coleman found themselves retired empty nesters, they felt the nudge to do something “new and different.” Lovers of music, beer, and Dripping Springs, in 2021 the Colemans responded by opening Ghost Note Brewing, a craft beer brewery whose casual atmosphere—with a touch of excitement—invites visitors to grab a seat and stay awhile.

What’s in a Name? Beyond good beer and good music, the soul of Ghost Note is best summoned by understanding its name. Wikipedia defines a ghost note as “a musical note with a rhythmic value, but no discernible pitch when played.” This could mean a note that is played very quietly between the main notes—so soft that it is almost silent. Although you might not hear them, these rests between notes add richness and momentum to the music.

Ghost Note Brewing taps into that depth with its welcoming and relaxed atmosphere, hearty craft beer, dynamic music, and open spirit of community.

“It resonates with us,” says Thelma. “We love the name, and we love the definition and how it extrapolates to beer, Texas, and life.”

The Place—In each of our journeys, those ghost note beats are with us. And when that journey moves through Texas, the notes can be as rich and diverse as the history and landscape itself.

With its rustic tables, fire pits, string lights, and wide-open spaces, Ghost Note offers a feeling of simplicity and a space where people can enjoy the moment and let time slow down. “We try to capture the Hill Country vibe around here with a mostly outdoor venue, leaning into the great live music scene and being a part of the growing beer scene,” Kenny shares.

The locale captures the backyard mood, featuring an open-air taproom and shaded beer garden with picnic-style seating. A spacious yard with a playscape for kids invites families to gather, dance, and play; at the same time, couples and small groups can find more secluded spots to visit under the oak trees.

The Beer—To the brewer, there are ghost notes amongst the water, the grains and the yeast, the wood and the steel, bringing their own story to each batch of beer. And in each sampling of the beer, these ghost notes speak faintly, imparting their own complexity and texture between the main notes.

Like the scenery, the beer at Ghost Note is both laidback and vibrant. The brewery specializes in “porch beer— nothing too heavy, very drinkable,” Thelma explains.

Ghost Note’s head brewer Tyrell Elliott shares, “Good beer is the most successful when it’s approachable, and that’s our main goal with the porch beer theme. Finding flavor and impact within the subtleties of an everyday drink that we can share with our neighbors is very rewarding.”

Ghost Note features four core beers, along with a rotating menu of seasonal brews and small batches that keep the options exciting. “People like to come out and see what’s new,” says Kenny.

In addition to the craft beer on tap, Ghost Note offers local wines, local ciders, and non-alcoholic choices.

“There’s something for all tastes,” says Thelma. And if all that drinking makes you hungry, Frida’s food truck is on site, serving a mix of steak, chicken, chorizo, and shrimp tacos and quesadillas.

The Music—Drummers know ghost notes as those that are played very softly between the main notes. Though seemingly unnoticed to the listener, they fill out the beat and add greater dimension and depth to the music.

To Thelma and Kenny, music isn’t just something you hear; it’s something you feel. “The music really speaks to us,” shares Thelma. Thus music is a cornerstone of the Ghost Note experience, which includes free live performances nearly every Friday, Saturday, and Sunday. “We have a family of musicians,” says Kenny. “There’s so much talent out here. A lot of people come out here just to hear the music.”

Wendell Rand, of the bands No Permit and Saul & Pepper, is one of those talented musicians who appreciates the vibe at Ghost Note. “It’s just a great spot,” he says. “I love playing in a space where you see all kinds of people…from toddlers to teenagers to elderly folks…and dogs!”

Along with the diverse audience, Ghost Note hosts a wide range of performers with a variety of music styles. In the spacious outdoor venue, “the sound is good and it’s more festive,” Rand shares.

The Community—But ghost notes aren’t only in the music…we all sense the ghost notes—those gentle, intangible beats tapped out from countless sources, past and present, that quietly add texture and depth to our lives. These echoes of the past are more felt than heard— unnoticed when they are there, but noticed when they are not—like a summer breeze, or an inspiration.

More than a brewery, Ghost Note is an inviting hub where both locals and visitors feel at home. “We welcome everybody and the vibe out here is always pretty chill,” says Thelma. “We try to make people feel comfortable.”

In addition to hosting happy hour every Thursday and live music each weekend, Ghost Note often organizes special affairs such as an annual Oktoberfest, vintage markets, and animal adoption events. Ghost Note also boasts an indoor event space to bring people together for larger celebrations.

One may think that owning and operating two thriving restaurants makes for a glamorous lifestyle filled with fine dining and the satisfaction of running successful businesses. But as Travis and Tamra Tindol, owners of Hays City Store and Taste on Main, will tell you, the reality is far more demanding—and far less predictable. It’s their love for the industry and commitment to their community that drive them each day.

DAILY PLANNING

The Tindols’ day begins the night before, when they compare calendars and review the upcoming meetings, events, and tasks. From manager and chef meetings to vendor appointments and wine tastings, the Tindols have far more meetings than one might expect. Communication is key for them, as they stay in constant contact with their management team, chefs, and food and beverage director. This ongoing dialogue allows them to address any issues and make adjustments as needed, keeping them flexible and ready to adapt at a moment’s notice.

After a quick coffee, the day truly begins with a flurry of emails and phone calls. Living near Hays City Store in Driftwood means the Tindols head there first.

Known for its scratch-made dishes, Hays City Store is a Hill Country gem that serves up fan favorites like locally sourced burgers, hand-battered chicken-fried steaks, and hand-cut onion rings. The outdoor beer garden, shaded by majestic oak trees, offers a relaxed atmosphere where guests can enjoy live music, fire pits, and games. The new addition of a one-of-a-kind kid bouncy tree net makes it a beloved spot for both locals and visitors.

MORNING ROUTINE FINE DINING

But their work doesn’t end there. Just a short drive away in downtown Buda, the Tindols’ second restaurant, Taste on Main, presents a different, yet equally inviting, dining experience.

Housed in a historic 100-year-old building, Taste on Main focuses on classic steakhouse fare and premium seafood dishes. The elegant setting is perfect for a special night out, where guests can indulge in seasonal creations and explore a well-curated selection of craft cocktails, wines, and bourbons. Despite their best efforts to plan the day ahead, the Tindols know that something unexpected often crops up. “We really don’t have, nor can we have, a set schedule or daily agenda,” they explain. Whether it’s a last-minute issue communicated to managerial staff or an urgent need for supplies, Travis and Tamra are always prepared to pivot. Their flexibility is what keeps the restaurants running smoothly, even when things don’t go according to plan.

A key to their success is the strong team of managers and chefs they’ve assembled at both Hays City Store and Taste on Main. These teams handle much of the daily operational tasks, from food and drink specials to staff scheduling, allowing Travis and Tamra to focus on the bigger picture. They actively support their teams by running a myriad of errands— becoming regulars at H-E-B, Costco, and Ace Mart Restaurant Supply—to ensure the restaurants have everything they need.

ENSURING EXCELLENCE

At least once a week, the Tindols conduct a “restaurant walk” with an available manager or chef. During this walk, they assess the status of the restaurant, checking that the environment is clean, uncluttered, and ready to provide guests with the best possible experience. This attention to detail and commitment to maintaining high standards are what set their restaurants apart.

WINDING DOWN

As the day winds down, Travis and Tamra might finally get a moment to catch their breath. But even then, they are thinking ahead, planning for the next day, and ensuring that both Hays City Store and Taste on Main continue to thrive. For the Tindols, this isn’t just a job—it’s a passion. And despite the long hours, the unexpected challenges, and the constant need to adapt, they wouldn’t want it any other way.

The Evolution and Impact of Texas Hill Country Wineries

In 1999, Texas wine was on the rise, especially in the Hill Country. With new tasting rooms popping up from Dripping Springs to Fredericksburg, eight visionary wineries gathered together to create the Texas Hill Country Wineries (THCW) association. From the outset, the association’s goal was to spotlight its wineries and encourage visitors to come out to the tasting rooms while championing the excellence of Texas wines.

One of THCW’s significant contributions to Texas wine tourism is the creation of its Wine Trail Events.

The original group of eight wineries planned its first event for April 1999 with the Wine & Wildflower Trail. From the first meeting in February to the launch of the event, the group of wineries had doubled to 16 and knew it had to keep growing. Over the years, four other events were added—Harvest Wine Trail, Texas Wine Month Trail, Christmas Wine Trail, and Wine Lovers Trail.

THCW continues these trails today, which have evolved into Passport Events and are now fully digital.

A virtual ticket allows wine lovers to visit more than 40 wineries during the event, where they can taste at up to four wineries per day and discover the diverse grape varieties and wine styles the region has to offer. In addition, THCW publishes an annual brochure and wine map, with information and events constantly updated on the website.

THCW has continued to grow its outreach to wine enthusiasts across Texas with collaborative winemaker dinners in the Hill Country as well as traveling road shows that bring Hill Country wines to Austin, Houston, Fort Worth, and San Antonio.

Today, THCW has 64 member wineries. With the rapid growth of the industry, THCW realized a need for industry support and education. In 2004, the Hill Country Wine Symposium was established to bring industry members together for two days of networking and education, with seminars and panels on topics related to the vineyard, tasting room, winemaking, and marketing.

Expanding on the symposium, THCW hosts other smaller industry events throughout the year, focused on tasting rooms, events, wine clubs, and more. In line with its commitment to education, THCW established the Hill Country Wine Scholarship Fund in 2015, supporting Texas students pursuing degrees or certifications in viticulture, enology, wine business, and hospitality. To date, THCW has awarded more than $90,000 to over 50 deserving students, contributing to the growth and development of the Texas wine community.

Reflecting on the association’s journey, THCW executive director January Wiese shares, “It’s been great to see the association grow and evolve since I became involved 15 years ago. I am excited for continued growth in our region and the organization in the years to come.”

As THCW celebrates 25 years of excellence, the organization looks forward to continuing its mission of promoting outstanding Texas wines and providing unforgettable experiences for wine enthusiasts. Rooted in the trailblazing spirit of Texas’ founding winemakers, the industry’s award-winning wines, unmatched hospitality, and modern innovations continue to bloom, solidifying the Texas Hill Country as one of the country's top wine tourism destinations. HOW SOIL IMPACTS YOUR PLATE

Have you ever considered how the very building block and foundation of life on earth affects the air we breathe, the food we eat, and how our bodies operate?

Finian Makepeace has made it his life mission to find answers to these questions about this essential substance: soil. A new Driftwood resident, Makepeace is founder of the nonprofit Kiss the Ground, a TEDx speaker, and producer of the award-winning film Kiss the Ground on Netflix.

Kiss the Ground has changed the way lawmakers, government officials, and millions of individuals understand how the ground we walk upon impacts our everyday life. “It’s the soil! The soil holds the solution for climate, water, and human health. So many people like me had no idea,” Makepeace shares. “But no one is too important or too smart to learn and contribute to the health of ourselves, our families, and our earth for generations. And the good news is, they can. We can all help this movement in our own way.”

BEGINNINGS

Makepeace grew up in upstate New York, backed up to five acres of woods and spending an exorbitant amount of time in nature. “I sat with it and watched it,” he shares. “More than most, I had way more priming of nature in observing how it operates, connects, composts, and regenerates.”

Activism runs through Makepeace’s veins, and his first career as a musician proved a vehicle for this passion. “I discovered music was a means of pointing toward things I’ve always wanted to share and bring attention to.”

His music career was disrupted by a phone call from New Zealand. His lifelong friend and co-founder of Kiss the Ground, Ryland Engelhart, shared from a conference of scientists how the soil can generate itself and convinced Makepeace to help him facilitate a presentation of this topic in Los Angeles. “It was a four-hour lecture and covered so much, but I had enough understanding of biology to understand and it hit me: There has never been a solution this significant.”

That same night, he and Engelhart made a pact: “If this is true, we have to dedicate our lives to this. We’re communicators; we live in LA—we can get this in the minds of others and thought leaders.”

WHAT IS REGENERATIVE AGRICULTURE?

Simply put, regenerative agriculture is agriculture that causes regeneration. Makepeace explains, “Regeneration: The word itself means to bring back to its highest functioning state. Our land is broken; it can’t hold water; it’s dead; it doesn’t function properly. We are helping it get back to its highest functioning state through agriculture that causes regeneration, restoring bare soil and dust that’s not working—back to Eden.”

Soil is similar to our gut. Our bodies host billions of good bacteria in our gut in a symbiotic relationship. Similarly, organisms in the soil are fed liquid carbon sugars that are pumped through the roots of plants and into the soil. The plants build the liquid carbon sugars from carbon dioxide that they pull out of the air. The carbon sugars feed the microbes, and the microbes make minerals available to the plant. Half of our micronutrients are in the soil, so if our soil is lacking, so are the micronutrients in our food.

STEPS YOU CAN TAKE

“Legacy farms are getting lost in a debt-inducing cycle due to degenerated earth,” Makepeace states. “They don’t want their children in this, and young people don’t want to carry this on.” Healing our land impacts the future of farming and reduces farmers’ costs.

1. Buy locally sourced regenerative or organic food. There are many options at farmers markets and H-E-B. Look for Force of Nature meats, Land to Market, Regenified, regenerative organic certified, and grass-fed.“Your meat choice is huge,” says Makepeace. “Spend the extra 2 dollars—it's a difference you’re making for the future of the world.” Buy your eggs locally or find Vital Farms or restorative eggs in your local grocery."

2. Grow your own food. When children watch things grow, the experience teaches them to respect farmers and not be wasteful with food. Makepeace adds, “When a child picks a cucumber, they see food differently; they connect with food, the sun, and dirt.”

When Marc and Cindy Pollack discovered Playa Bowls during a vacation in Florida, they were instantly drawn to its vibrant atmosphere, friendly service, and wholesome menu. Marc, an attorney since 1988, left his general law practice in 1994 to pursue his passion for representing professional athletes. In 1999, he co-founded Sports One Athlete Management, where he serves as president and general counsel.

For years, Marc dreamed of working alongside his sons, and opening Playa Bowls with his sons Jordyn and Jake by his side has made that a reality. Cindy, who has worked as a pediatric occupational therapist in the Dripping Springs school system for 13 years, now dedicates her time to the family’s Playa Bowls shops as well.

“Having the opportunity to teach our sons what we have learned over the past 30 years about business is a dream come true,” says Marc. “It is a two-way street, though, as we constantly learn from them about how to best serve customers today in our ever-changing social environment. We are all grateful to be working together every day.”
