What you see behind me in the photo is the greatest pizza place that has ever existed on the planet, Jim's Pizza. Jim's Pizza is located in Kendallville, Indiana. This small family-run pizza shop has been around for three generations. No credit cards. No lunch hours. No delivery. No dine-in. No beer. No liquor. No servers. No managers. No breadsticks. No salads. No wings. No silverware. No parking (4 spots). No restrooms. No pizza boxes. No voicemail. No online ordering. NO WINTER HOURS (November -February/CLOSED COMPLETELY). I mean really, what's left?
Here's what is left: One owner prepping dough as fast as his hands will let him. One owner answering the phone from 1989 (that only has 2 lines-(not cordless)) as she writes down orders on an old school order pad without carbon copies; all the while ringing up customers in front of her and delivering pizza orders with a smile, like a flawless machine. There are also 4 local high schoolers that apply the dedication they have for their studies to the assembly line craftsmanship of the edible constitution that my home town relies upon. THE PIZZA COMES IN A BAG! There is a 2 1/2 hour wait for carryout EVERYDAY. It requires dialing their number 20-40 times in a row just to get through, and that is before the 2.5 hour wait. It's worth it all.
Although Jim's Pizza isn't in Denver, we have so many amazing restaurants to make your mouth water every day. I hope you enjoy the gems that we have featured this month. As always, thank you for allowing us to come into your home each month. We cherish and appreciate each and every one of you.

In 2014 the Denver Food Truck Scene was hit with a brand new combination….tacos and sushi! Gibran Villareal grew up in Mexico in a restaurant family. Food has been his life as long as he can remember. His first restaurant in Mexico, Rock and Roll Sushi, put his name on the map and drew the attention of restaurateurs in America. His journey to Colorado began in California. This self proclaimed “Cali-guy” saw the potential in the Denver food scene and moved here to start his first food truck.

has struggled to understand my own place as an artist, I now see that my work is deeply connected to the very essence of human experience—much like the food we savor each day.
My name is Michel Velázquez, a Latino artist from Jalisco, Mexico, now living in Denver. My art is displayed in various restaurants across this vibrant city, where it serves as more than just decoration.
When diners sit down to enjoy a meal, they are immersed in an environment where the flavors of the dish are complemented by the colors and emotions captured on the walls. Just as a carefully crafted dish can evoke memories and stir emotions, so too can a painting transport viewers to another place, another time. It’s this intersection of art and food that fascinates me—both are forms of expression that tell a story, that bring people together, that heal and inspire.
Over the years, I’ve learned to embrace the gift of being different, of seeing the world through a unique lens. It’s this perspective that allows me to create art that resonates with others, especially in spaces where people gather to share a meal. My hope is that my work not only enhances the dining experience but also sparks a deeper appreciation for the cultural and emotional connections we all share.
As we celebrate the theme of food this month, I encourage you to explore the restaurants that showcase my work, including Sol Cocina, Wild Taco, Carlos Miguel Restaurant, La Catrina Aurora, and El Pelícano. Last week, I was presented with an incredible opportunity. My friend Larry Herz from OCN Eats invited me to join him for a restaurant experience. The spot? Brooklyn’s Finest Pizza, owned by my friend Carlo Conti, which had just opened a new location at 176 S. Broadway. Given Larry's reputation as a top food expert in Denver, I couldn’t resist.
Brooklyn’s Finest Pizza has long been a local favorite, and this new Denver location is their third. The food is exceptional, and Carlo ensures every detail is perfect. To add to the
excitement, we were joined by Megan De La Rosa, the publisher of Centennial City Lifestyle Magazine. It was a rare treat to share lunch with friends and a fellow publisher while experiencing a new restaurant.

• 1 chuck roast, cut in bite-sized pieces, fat discarded
• 2 Tbls olive oil
• 4 cups beef broth
• 4 cups beef stock
• 1 can stewed Italian style tomatoes
• 1 can diced tomatoes with basil and garlic
• I can Progresso Tomato Basil soup
• 1 can crushed tomatoes with Italian Herbs
• 1 onion, chopped
• 4 or 5 fresh carrots or ½ bag of baby carrots, chopped
• 2 potatoes, chopped
• 1 zucchini, chopped
• 6 ribs of celery, chopped
• 1 bag frozen green beans
• 1 bag frozen corn
• 1 bag frozen peas
• 1 tsp Lawry’s seasoned salt
• 2 bay leaves
• 1 Tbls Herbes de Provence
• 1 tsp oregano
• 1 tsp parsley
• Freshly ground black pepper
• (also add a little beef better than bouillion and some Italian seasoning, but not required)

Brown the chopped chuck roast in olive oil in a soup pot. Add canned tomatoes, soup, broth and stock. Add all seasonings. Bring to boil and simmer while preparing the fresh vegetables. Slice and cut celery, carrots, potatoes, onion and zucchini and add to meat. Stir in all frozen vegetables and simmer for 3-4 hours. Discard bay leaves and serve. Freezes very well.
Ingredients:
• 9-inch baked pie shell (make your own or buy one)
• 1 cup sugar
• 5 Tbls cornstarch
• 2 squares unsweetened chocolate (1 oz each, cut up)
• ½ tsp salt
• 2 ½ cups whole milk
• 3 egg yolks, slightly beaten
Directions:
• 3/4 tsp vanilla extract
• ¼ tsp almond extract (I sometimes just use 1 tsp vanilla and no almond)
• 1-2 cups heavy whipping cream (depending on how much you like on your pie)
• 4 Tbls sugar per cup of whipping cream
Prepare and bake pie shell. In medium saucepan, combine sugar, cornstarch, cut up chocolate, and salt. Mix well.
Gradually stir in milk, mixing until smooth.
Over medium heat, bring to boiling, stirring constantly; boil 1 minute. Remove from heat and stir about half of the mixture into the egg yolks. Then add that back to the saucepan and mix with well. Bring back to boiling, stirring constantly. Boil for 1 minute longer. It should be thick and “gloppy”. Stir in extracts and pour

• 1 egg
• ½ tsp garlic salt or powder
• 12 saltines (or other cracker like Ritz), crushed
• Splash of milk
• 1 Onion, chopped fine Salt and pepper
Directions:

immediately into pie shell. After cooling, put in the refrigerator. It must be cold before adding topping. You can put a piece of wax paper or plastic wrap on top of filling while it is cooling.
Meanwhile make whipped topping. Whip cream with the sugar and spread over filling when it is cool.
Refrigerate until ready to serve. If you are making this a day ahead, I would recommend making stabilized whipped cream. There are a few ways to do this, so you can check out the internet. I use instant clear gel.
Sauce:
• 1 cup ketchup
• 2 Tbls vinegar
• 1 tsp chili powder
• ½ c water
• ¼ cup sugar

Preheat oven to 350 degrees. Mix meatball ingredients well and form into balls (not too big, about 1-1 ½ inches in diameter). Put in 8x13 baking dish. Cook 25 minutes uncovered. Mix the sauce during this time. (I always make extra sauce because it is so good.) Remove meatballs from oven and drain off
excess fat, if any. Add the sauce and bake 20 more minutes (uncovered).
This is even better made the day before, refrigerated, and reheated the next day. It also freezes well.
After thawing you can reheat in crockpot on low.

“Agro Dolce” in Italian translates to Sour and Sweet. With Fall upon us, this vegetarian side dish is a real crowd pleaser, and celebrates the best of the season.
Makes 4-6 servings
• ½ small purple cabbage, sliced thinly
• ½ red oinion, sliced thinly
• ¼ cup toasted pinenuts
• ½ cup granulated sugar
• 1 cup sherry vinegar
• Extra virgin olive oil
• Salt and freshly ground black pepper
Procedure:
Step 1. Preheat oven to 425F. Toss squash in extra virgin olive oil, salt and pepper. Arrange on a baking sheet and roast in oven for 8-10 minutes, or until slightly tender to the touch. Set aside.
Step 2. In saucepan, over medium high heart, bring sherry vinegar and sugar to a boil, and reduce to a syrup consistency. Approximately 4-6 minutes.
Step 3. In bowl, combine sliced purple cabbage and red onion. Pour agrodolce liquid over veggies and toss to combine.
Step 1. Place roasted squash on serving platter. Top with cabbage and onion agrodolce. Sprinkletoasted pinenuts on top. Drizzle with a little extra olive oil, salt and freshly ground black pepper. Enjoy!
