Barkley’s Bookshelf Summer Reading Program
Barkley’s Bookshelf supports children’s literacy with free book distribution through Title 1 schools and nonprofits for children. WATER SAFETY 101
TIPS TO KEEP YOUR FAMILY SAFE THIS SUMMER
Whether you’re at the pool, lake, or beach, it’s important to take water safety seriously. Follow these guidelines to help prevent accidents while you make a summer splash.
Use the buddy system. Have at least one other person nearby if you’re in or near water.
Supervise children closely. No lifeguard? Designate an adult “water watcher” to keep a distraction-free eye on swimmers. (No phones, books, or alcohol allowed!) Rotate this responsibility every 15 to 30 minutes if possible.
Don’t rely on floaties. Pool toys and ride-ons are not lifesaving devices and should never replace a life jacket. Always wear a U.S. Coast Guard-approved vest on the open water.
Learn CPR and first aid. Immediate action saves lives. CPR can make the difference between life and death while waiting for emergency help.
Stay safe in the sun. Wear SPF 30 or higher sunscreen and protective clothing, and stay hydrated.
Anytime you’re in or around water, there is potential for accident or injury.

I’m a product of Cypress. I grew up here, went to school here and then worked in Cy-Fair ISD for almost 25 years before retiring to pursue my dream and follow my passion of opening my own restaurant/catering service. In 2014 I opened Andy’s Mobile Kitchen (catering and food trucks), in 2018 I opened Andy’s Kitchen (Voted #1 Best Burger in Cypress) and in 2022 opened Andy’s Bar & Grill. I’ve lived here 99% of my life and love being part of this community with my wife, Kristi, our blended family of six, and our granddaughter.
WHO INSPIRES YOU MOST, AND WHY?
My father always inspired me. He expected me to do better than the day before in all phases of life; to push for better results, never settling for average results.
WHAT ARE YOU PASSIONATE ABOUT?
I’m passionate about always learning from our experiences. It’s important to make sure we are striving for excellence in every aspect of our lives.
ANY BIG PLANS OR GOALS FOR THE FUTURE EITHER PERSONALLY OR PROFESSIONALLY?
I plan on opening up another location in 2026 in the Cypress area! Personally, I’m always open to learning new things and helping others.

I enjoy spending time with my family and friends outdoors.

I’ve always enjoyed the opportunity to get out of my comfort zone. It pushes me to reach higher goals and to gain more confidence in myself. This gives me the ability to be able to help others in reaching better results, and their goals too.
WHAT WAYS DO YOU LIKE GIVING BACK TO THE COMMUNITY?
I enjoy being a part of the community in so many different ways but mostly just being able to give back to others in a time of need. Helping out with school events and helping others in the community as well. Cypress has always been good to me so it’s a natural thing to help out when I can.
WHAT IS YOUR FAVORITE THING ABOUT CYPRESS?
I enjoy the small town feeling yet it’s a huge town with lots of great things to do.

SHARE A BRIEF BIO ABOUT YOURSELF
After my dad became a volunteer firefighter post-9/11, I followed in his footsteps and discovered a deep passion for EMS. I spent a decade serving the community I grew up in, during which I became a dad and eventually landed the position of Assistant Chief of EMS at Cy-Fair in 2016 (my dream job).
These days, my favorite role is being a dad — you’ll usually find me with my kids, staying active or watching movies together. I love my life and my work; I’m driven to always work toward the next level. Recently, I earned my master’s degree in Healthcare Innovation from the University of Pennsylvania.
WHAT ARE YOU PASSIONATE ABOUT?
I’m most passionate about my faith. I was a non-believer for most of my life — honestly, Christians were the biggest barrier to me believing in Jesus. But during a mission trip to Haiti as an atheist, everything changed. God has a sense of humor, and it took something that dramatic to wake me up. Now, I focus on loving people like Jesus did. A lot of today’s so-called “Christian values” don’t line up with the Jesus I’ve come to know through Scripture, so I aim to live differently: connecting with people, sharing my story, and leading with grace.
I am also a champion of the EMS profession and put a lot of my energy into moving it forward. EMS has traditionally been seen by the rest of the medical community as more of a transportation service than a partner in patient care. I aim to change that perception and show how integrating EMS into broader community healthcare systems can change clinical (not to mention financial!) outcomes!
WHEN WAS THE LAST TIME YOU SANG OUT LOUD?
All the time—so probably not long before you’re reading this. Since I know I can’t carry a tune in a bucket and I dance just as badly (which I’m convinced are connected somehow), the only people who typically hear me belt it out are my kids and myself. My playlist is chaos: Phil Wickham, UGK, Frozen (Reindeer are better than people—change my mind!), Randall King, Incubus, Pantera… I’ll jam to all of it.
ANY BIG PLANS OR GOALS FOR THE FUTURE, EITHER PERSONALLY OR PROFESSIONALLY?
Personally, raising my kids to be good humans is a top priority. When they’re little, your job is to keep them alive despite their best efforts to self-destruct. As they get older, the challenge is shaping them into kind, contributing members of society.
I’m turning 40 soon, so maybe this is my midlife crisis talking, but I’ve decided I want to complete an Ironman. And speaking of goals, I’ve got my eye on earning a PhD. Professionally, I’ll continue to advocate for EMS. My goal is to make Cy-Fair a leader in collecting and sharing best practices. Innovation is my jam. I’m a big believer in choosing curiosity over judgment.

I’m a devoted husband, father of two, and proud dog owner to Xena. My faith has grown deeper in recent years, and I’m also a lifelong mortgage professional. I love helping people make smart home financing decisions while staying grounded in family and community.
WHO INSPIRES YOU MOST, AND WHY?
My dad. He’s had a long, successful career and continues to give back through his work with the Kiwanis Club. Even in retirement, he’s a pillar in every community he’s part of. One thing he always asked me growing up was, “What’s the good word for the day?” That mindset shaped my life—always find something positive, never quit, and if you can’t find the light, at least find something to laugh about. He used to say, “You’re standing in your own acre of diamonds,” and that’s stuck with me.
ANY BIG PLANS OR GOALS FOR THE FUTURE EITHER PERSONALLY OR PROFESSIONALLY?
Professionally, it’s to keep running a growth-minded mortgage branch that empowers loan officers—and really, anyone we come in contact with. I’m also focused on supporting small business growth through our JVPNG (Jersey Village Professional Networking Group). Personally, my biggest goal is helping my kids get through school and into college—setting them up for a successful future is everything to me.
WHEN WAS THE LAST TIME YOU SANG OUT LOUD?
I’m on the worship team and they don’t give me a mic so I sing out loud at home when I’m practicing for Sunday Service… LOL
WHAT IS YOUR FAVORITE THING TO DO WHEN YOU’RE NOT WORKING?
Spending time with my family, hands down. Whether it’s watching my daughter play volleyball, talking about workouts with my son, or just relaxing with my wife and our dog Xena—it’s the best part of my day. I also love playing guitar, especially blues and worship music. It’s a creative outlet that helps me stay grounded.
WHEN WAS THE LAST TIME YOU STEPPED OUT OF YOUR COMFORT ZONE?

I took on the Treasurer role at the Cy-Fair Chamber of Commerce even though I wasn’t sure I was ready for it. I stepped up, and I’ve grown because of it. Years ago, I left a corporate role and thought I was done leading. Now I’m running a branch, mentoring others, and leaning back into leadership in ways I never expected.
WHAT WAYS DO YOU LIKE GIVING BACK TO THE COMMUNITY?
Houston gave me the opportunity to build my business, so giving back has always felt right. Now that I’m in Cypress, I wanted to be a part of shaping something special—a community that grows but stays tight-knit. I’m involved with Habitat for Humanity, CFISD Leadership, Cy-Fair Houston Chamber and other boards because I want to make a difference right where I live.
WHAT IS YOUR FAVORITE THING ABOUT CYPRESS?
When we moved to Houston, I looked all over—from Conroe to Pearland—but Cypress just felt right. The community is solid, the people are down to earth, and the school district is top-notch. It’s a great place to raise a family and put down roots.

I am the proud owner of SolCore Wellness. I hold a bachelor’s degree in Kinesiology from Texas Tech University. My original dream was to attend Physical Therapy school and work closely with athletes across all sports and age groups. However, life presented me with a different path.
Following the post-pandemic rise in health and wellness awareness, I saw an opportunity to pursue my passion for helping athletes in a new way. As a former athlete myself, I deeply understand the importance of prioritizing recovery and overall body care.
My mission is simple yet powerful: to help people live happy, healthy, and pain-free lives, regardless of their background. Over the years, I’ve been fortunate to work with individuals ranging from professional athletes to casual weekend warriors. What drives me every day is my unwavering dedication to empowering others to feel and perform their best.
WHO INSPIRES YOU MOST, AND WHY?
My biggest inspirations are my brothers. They constantly push my limits and show me there is always room for improvement. They are the reason I fear no challenge because I know they will have my back if I fall.

I am planning on opening another location in 2026.

My favorite thing to do when I am not working is working out or socializing with my friends.

The last time I stepped out of my comfort zone was in planning SolCore Wellness. This is my first business I built from the ground up.
WHAT IS YOUR FAVORITE THING ABOUT CYPRESS?
My favorite thing about Cypress is it has that small town feeling to it but it’s so big at the same time. I believe it’s the people of this city that make it feel that way. Everyone is friendly and has so much love for their neighbors. It’s like everyone is family here.

I have a degree from Linfield College in Social and Behavioral Science and a passion for community service, with over 30 years in financial services I enjoy building professional and community relationships. I care about the community and enjoy getting involved with the Chamber of Commerce as well as serving as a founding board member for Lena’s Foundation, a non-profit helping those that are disadvantaged. In my free time I love playing live music, spending time with my beautiful wife Lisa, and floating in my pool with my dogs Libby and Cooper!
WHO INSPIRES YOU MOST, AND WHY?
There are several. My dad for being a WW2 hero (at least to me) and always instilling doing what was right. My son, for reminding me to be youthful and that you can accomplish great things. My wife, Lisa, for standing up to cancer and never missing a day of work during treatment. She’s tough! Dr. King, Senator John Lewis, Harry Chapin and so many others that stood up for equality and social justice.
ANY BIG PLANS OR GOALS FOR THE FUTURE EITHER PERSONALLY OR PROFESSIONALLY?
Travel as much as possible!
WHEN WAS THE LAST TIME YOU SANG OUT LOUD?
Anyone that truly knows me would say every single day! In the shower, car or behind my guitar, I’m always singing something!
WHEN WAS THE LAST TIME YOU STEPPED OUT OF YOUR COMFORT ZONE?
Although I’ve been in financial services for 30 plus years, I recently ventured into helping business owners with their commercial insurance coverages and I see that as a financial service. I’m still meeting with business owners and C-suite level executives like before, just offering a different financial solution. Making a professional change in your late 50’s can be daunting.
WHAT WAYS DO YOU LIKE GIVING BACK TO THE COMMUNITY?
I give back by being involved with the Chamber of Commerce to help business owners be successful. I also strive to help those that are less fortunate through service clubs that I’ve been involved with. On a more serious note, along with some close Cypress friends, we have built blessing bags for the homeless and have distributed those during the cold months of winter.
I truly believe that everyone in our community should be given the opportunity to be successful. And sometimes that means, a hand up.

For 30 years, Chef Anthony Russo has provided communities with homemade New York-style pizza and Italian dishes inspired by his childhood.
Before Russo’s Pizzeria & Italian Kitchen became the franchise it is today, Anthony grew up in New Jersey learning how to cook family recipes that came from his parents’ home in Naples and Sicily.
In 1978, at the age of 12, his family moved to Galveston where they opened Russo’s Italian Restaurant. Anthony said he’s been working in the kitchen ever since.
“I grew up in the kitchen, cooking. After school that was kind of my homework, to learn how to cook Italian,” he said. “That’s what I did for 20 plus years in my parents’ restaurant”
After Anthony’s parents retired from the restaurant business in the mid-1980s, it opened a door for him to follow his dreams. In the 1990s, Anthony opened the franchise Anothony’s Pizzeria, which slowly evolved into Russo’s New York Pizzeria.
“That was my passion – I said, ‘this is what I want to do,’” he said. “I started offering franchises and kind of developed the system myself and then started granting people the franchise opportunity throughout Texas.”
Although Anthony’s original family restaurant in Galveston has closed, Russo’s continues to follow the same traditions and concepts started by his parents nearly 50 years ago.

“I still use the same cheese, the same sauce products, the same olive oil,” Anthony said. “For 30 plus years, I’ve been using them in our system.”
Every Russo’s location not only follows the same Russo family recipes, but also uses fresh ingredients imported from Italy and local markets. This includes making their sauce, pizza dough, and salad dressings from scratch.
“We use high quality fresh ingredients to make our pizzas, and that’s what separates us from most of the pizza chains as we franchise our model,” Anthony said. “A lot of places don’t do it anymore, so we want to keep the same family tradition.”
While classic pepperoni pizza is always the most popular, Russo’s offers a variety of different options and toppings for their pizza. CONTINUED >

Anthony said the Mulberry Pizza is their second-best seller on the menu, which is made with a blend of meats such as pepperoni, Italian sausage, fresh ground beef, and Canadian bacon.
One of the more unique pizzas, and his personal favorite, is the Burrata & Prosciutto pizza made with olive oil from Sicily, Wisconsin mozzarella, burrata cheese, and Prosciutto de Parma. Although pizza is their specialty, the restaurant offers various kinds of pasta, salads, sandwiches, as well as vegan and gluten free options.
“We make our dough with olive oil. We don’t use saturated fats; we don’t use seed oils in our kitchen,” Anthony said. “It’s all Italian family recipes, and we’ve been doing it for 50-60 years when the recipes originated. It hasn’t changed.”
For Anthony, the franchise model provides an opportunity to expand the tradition of serving homemade meals in a warm and welcoming environment. “You find stuff like this back home in the New York and New Jersey area, it still exists – the mom-and-pop shops where they’re still making food from scratch,” he said.
Anthony said it also gives him the opportunity to train individuals who want to open a restaurant but don’t know where to start.

“We have the experience of 30 plus years,” he said. “We welcome them to the process, where they actually make food from scratch. It’s exciting because even if they don’t have cooking experience, we have them making a pizza in the next few days, which is pretty cool.”
Although Russo’s started in the Houston area, it has grown to include 56 locations in cities across Texas, California, Florida, and Arizona, and as well as international locations in Dubai and Doha.
Russo’s New York Pizzeria in Bridgeland operates as the restaurant’s corporate store, where Anthony said they enjoy giving back to the community and being involved in events at Cy-Ranch High School.
He said the franchise also works with the local non-profits and organizations, such as the Ronald McDonald House and MD Anderson.
“We like giving back to kids and working with the schools, and then just supporting the community with special events,” he said.
Looking to the future, Anthony said he hopes to continue expanding the franchise to other locations across Texas and the U.S. They recently opened a store in Magnolia and have three more opening in the Dallas area.
“We custom build our stores, we custom design our restaurants, and the size ranges from 1,200 square feet to the largest 3,500 square feet, so we have a business model that would work with several different budgets in mind,” Anthony said. nypizzeria.com

SUMMER GRILL RECIPES

THESE DELICIOUS RECIPES ARE LIGHT, BRIGHT AND FEEL LIKE SUMMER
The sun has returned, and grilling season is upon us. With the nice weather comes vegetable gardens and fresh produce, along with the overwhelming desire to be outside as much as possible. We’ve compiled some fresh and light dishes that you can shop for at your local farmers market and whether you’re looking for a quick mid-week meal or something to grill for a crowd on the weekend these dishes won’t disappoint. These pair well together or can stand on their own!

INGREDIENTS:
• 2lbs. Outside skirt steak*
• 2 Tablespoons lime*
• 2 Tablespoons finely, chopped cilantro
• ¼ Cup olive oil or avocado oil
• ¼ White onion, finely chopped
• 1 Tablespoon cumin
• Salt and pepper to taste
DIRECTIONS:
1. Place skirt steak into gallon freezer bag
2. Combine all other ingredients in bowl and mix. Pour over steak and marinate for 3-4 hours or overnight in the fridge.
3. Bring skirt steak to room temperature by letting it sit out for one hour.
4. Get your grill hot on one side and medium on the other.
SIMPLE SKIRT STEAK
5. Once the grill is ready, wipe excess marinade off steak. Starting on the hot side, place skirt steak on grill for 2 minutes per side, attaining a nice sear.
6. Transfer steak to the cooler side of grill and cook until the internal temp is 130°. Let rest for 10 minutes (temp will rise while resting).
7. Carve and serve. This dish pairs well with beans and rice or served as tacos. Following is a chimichurri sauce that compliments it nicely.
*Outside skirt steak is a more tender cut than inside skirt steak, for this recipe outside skirt is recommended. Do not use too much lime as the citrus can cook the meat before putting it on the grill, resulting in a tougher texture.
CHIMICHURRI
INGREDIENTS:
• ½ Cup parsley, finely chopped
• ½ Cup cilantro, finely chopped
• 2 Tablespoons red wine vinegar
• 3 Cloves garlic, minced
• 1 Red chili (whole or deseeded depending on desired level of heat)
• ½ Teaspoon dried oregano
• 1 Teaspoon salt
• 1 Tablespoon lime juice (optional)
DIRECTIONS:
Combine all ingredients in a bowl. You can make this in the late morning and let it sit for around 4-6 hours, or you can make it the day before and let the flavors meld overnight in the fridge. Just be sure to take it out and get it to room temp before you serve it, as olive oil hardens in the fridge. Serve over skirt steak or tacos.

ROASTED CORN SALSA

INGREDIENTS:
• 2 Ears sweet corn
• 10oz. Cherry tomatoes
• ¼ Cup lime juice
• 1 Finely chopped jalapeno or serrano (whole or deseeded depending on desired level of heat)
• ¼ Cup cilantro, finely chopped
• ½ Cup white onion, chopped
• 2 Cloves garlic, minced
• Salt to taste
DIRECTIONS:
1. Grill corn, you do not need to soak the corn beforehand.
2. Place corn on the grill (inside their husks) over medium heat turning every few minutes.
3. After 10 to 12 minutes shuck the corn and put the cobs back on the grill for 2-4 minutes rotating frequently to achieve that charred look and flavor.
4. Cut the corn from the cob, place in bowl and add all other ingredients. Let the mixture meld for about an hour and serve with tortilla chips or as a taco garnish.
