Living in a time that's so obsessed with efficiency, convenience and productivity, it’s easy to get sucked into the trap of thinking the only worthwhile things are the ones we can control. But in reality, no matter hard we try we can’t control everything! So let’s let go a little, and leave room for exploration; go to new places, try new foods, and meet new people.

In this issue, we are excited to share the ultimate exploration and adventure that awaits you in Edinburgh, Scotland. So much beauty and history! I grew up in Edinburgh, and the school I attended from late-elementary through high school turns 330 years old this year–you read that right! It was founded in the year 1694–that’s 82 years before America became a nation! Let that sink in!
Back in Texas, we also had the absolute honor to sit down with Brent and Daniela, the inspirational, funny and kind owners of Milk & Honey Ranch located just outside of Round Top, Texas. Milk & Honey Ranch is just a quick road trip from Cypress–I urge you to go visit!

Cy-Fair Women’s Club (CWC) celebrated an important milestone in their philanthropic journey by awarding 35 scholarships to graduating high school seniors. For the Love of Horses


For those who live in the confines of the city or suburbs, owning horses might seem like a far-fetched dream.
After opening West Stables in 2020, McKenzie and Erik Montague created a space where Cypress residents can own and train horses without needing to move out to the country. Only minutes from Towne Lake and situated on approximately 11 acres, it offers the convenience of proximity along with the space to go horseback riding or simply reconnect with nature.
“The way we look at West Stables is basically like your opportunity to come be in the country without having to go out to the country,” Erik said. “We tried to create a facility that gives all the experiences to people who either want to be horse owners or participate in horsemanship without the reality of driving out to a ranch or a farm, which is pretty difficult for a lot of people.”
West Stables offers two main services – boarding and lessons. The property includes covered barn stalls, a tack room, turnout pastures, two arenas, and a round pen.

On the boarding side, horse owners can choose between full or partial boarding services from on-site staff who provide daily care for the horses. The property’s boarding facilities include stalls in the main barn and container barn as well as a shaded pasture and turnout area.
Boarding services in the barn include daily watering, feed and hay given morning and afternoon, daily stall cleaning, trailer parking, and turnout and winter blanketing upon request. For those who prefer to give more hands-on care themselves, partial services ask owners to provide feed and hay as well as clean out their own stall.
In the pasture, boarding allows two to four horses per pasture, daily watering, feed and access to a round bale 24/7, and trailer parking as available.
“We have a number of people who keep their horses with us who live in a neighborhood where they have no room for a horse, but they have the benefit of having the horse close by so they can go see it every day,” Erik said.
For people who desire to learn about horses or become comfortable with riding a horse, West Stables offers beginner riding lessons all the way to advanced western techniques.
The facility’s trainers not only have a passion for horses but have been involved in professional riding and barrel racing for their entire lives, McKenzie explains.
“The two instructors who have been with horses since they can ever remember, they are the ones who run the barn, and they also care for the horses,” McKenzie said. “They’re the expertise that keeps all the horses healthy and safe –they’re the brains behind all of the care for the horses.”
Pricing is $39.99 for 30-minute lessons and $79.99 for a one-hour lesson. The facility offers lessons to ages three years old and up.
For people interested in boarding, the Montagues recommend visiting the facility to ensure it’s a good fit for them and their horse. For lessons, they advise booking a class online before moving into a regular program, especially for first-time riders.
The Montagues ask those interested in volunteer opportunities to visit the facility and meet with West Stables staff to ensure they are qualified to work around horses.
While largely focused on horses, the Montagues say a local goat and a few chickens also lounge around the property. Additionally, the facility hosts parties, events, and summer camps for kids and teens.
“Personally, I think animals make a lot of people happy, and horses especially,” McKenzie said. “Being around them and their nature just makes you feel calm.” WestStables.com

Escape the City to a Blissful Farm Stay Minutes From Round Top

In just a short one-hour drive from Cypress, one can find themselves at a retreat in the Texas countryside, complete with luxury accommodations, adorable farm animals, and a variety of activities.

Now, the ranch has transformed from a private farm to a sprawling resort that contains the charm of the country but has the amenities and accommodations of a luxurious resort.
When one arrives at Milk and Honey Ranch, it is difficult to believe the Phillips knew little to nothing about farming or agriculture when they first purchased the property.
In 2021, Brent and Daniela Phillips originally purchased the 54-acre property as a weekend home to escape suburbia. However, it quickly turned from a weekend getaway to a permanent residence where their family could pursue a slower paced lifestyle.
Brent, who has a background as a software engineer, had spent little time outdoors before purchasing the ranch and relied on YouTube videos for several months to learn the ins and outs of running a farm.
“This was really an experiment to introduce my family to a whole other side of life, and it has been absolutely transformative,” Brent said. “Why I think people should come visit is because we are always in a rush, we are always bracing for the next thing, and
to be able to take a moment with luxury and with animals everywhere is a very, very special stay.”
Rather than keeping the farm to themselves, the Phillips felt called to share their new home with others. Starting with an empty attic space and a cabin, they gradually turned homes meant for ranch staff into accommodations for guests.
Now, the ranch has transformed from a private farm to a sprawling resort that contains the charm of the country but has the amenities and accommodations of a luxurious resort. Situated just outside the town of Burnet, the ranch is not only a short drive from Cypress, but also 15 minutes from Round Top, a popular destination for shopping and antiques.
“It has all the beautiful qualities of a farm, based on storybooks, as well as the incredible luxuries of a 5-star resort, and that’s what makes it such a special place to visit,” Daniela said.

Milk and Honey Ranch offers 12 different lodging spaces, from a tree house and “glamping” domes to a one-bedroom cottage and two-bedroom casitas. Larger accommodations include the cabin, the lodge, and the hotel that fits up to eight people. Each unit is equipped with either a full indoor or outdoor kitchen.
Guests also receive a golf cart with their stay, which makes it easy to get around the property, said Monica Carvajal, who works at Milk and Honey Ranch.
When it comes to activities, the ranch offers a variety of outdoor and indoor options depending on one’s vacation style.
“We are very family friendly, there is so much to do here, from older people to babies,” Carvajal said.
Ranch amenities include a resort-style hot tub and pool, indoor gym, spa, game room, lounge room, tennis and pickleball courts, a hiking trail with e-bikes for rent, and more.
For those interested in aquatic activities, the property’s Beach Club is equipped with cabanas, jet skis, paddle boards, and kayaks.
One of the highlights of the ranch is, of course, the animals. The property houses over 400 classic farm animals, such as goats, sheep, horses, pigs, and chickens, along with a mini highland cow named Penny that guests can pay to cuddle and take pictures with.
The name Milk and Honey comes from the Promised Land in the Bible; referred to as the land of milk and honey. But of course it also applies to the fresh milk and local honey from the property. In every welcome basket, guests receive a welcome letter, fresh sourdough bread, and honey from the farm, Carvajal said.

With fully equipped kitchens at each stay, guests can cook meals for themselves or order from the ranch’s menu of farm-totable meals that includes breakfast, dinner, and charcuterie boards. Each meal is made with organic ingredients from Milk and Honey’s farm or from a trusted local producer, including hand-crafted lattes that do not use any artificial syrups or sweeteners, Carvajal adds.
“If you order a lavender coffee, it’s really made with lavender flowers,” she said.
Most recently, Carvajal said the ranch is in the process of building a café on the property that will serve as a coffee shop and restaurant.
With picturesque countryside and farmto-table cuisine, the property also offers an event space for family and corporate retreats, weddings, or other celebrations.
While Milk and Honey Ranch serves as a relaxing getaway, the Phillips hope it also helps others disconnect and “reimagine what life is all about.”
“I think it can inspire people to see that if people from the city that knew nothing can build this, then there should be nothing stopping them from trying to do a garden in their backyard or trying to grow some fruit or some vegetables that are in their home,” Carvajal said.

Wear comfortable shoes and be ready to walk! There is an abundance of clean, efficient public transportation from trams and trains, buses and taxis. Unless you’re looking to do a day trip outside of the city; perhaps to spot Nessie at Loch Ness, or to visit any of the nation’s 550 renowned golf courses, you don’t need a car to explore Edinburgh. In fact, cars don’t have access to the City Center of Edinburgh!
As you walk the city and see the sites, enjoy chatting with the locals. Edinburgh’s main industry is tourism and they welcome visitors from all over the world. Don’t feel pressure to plan your trip around the weather, because it’s never particularly great. Known colloquially to have four seasons in one day, wear layers so you can add or remove them as the day goes on and the season changes. And don’t bother with an umbrella, the wind will blow it inside out--guaranteed. Consider wearing a hat, hood, or raincoat along with an adventuresome spirit! And be ready to duck into a local pub or fun little shop as an excuse to escape the rain. Rain showers won’t last too long and they never spoil the fun. Best chances for optimal weather is late summer, during the world-renowned Edinburgh Fringe Festival – so fun! But don’t discount Christmastime in Edinburgh; when it’s always breathtaking and magical.
With a vast array of Castle tours, hightea at the Balmoral Hotel, a guided tour of Mary King’s Close (a night-tour of the underground tunnels with fun and spooky ghost-tours and tales of the historic Black Plague), and site-seeing atop a double-decker open-top tour bus, there’s no end to the exploration of Edinburgh.

Planning to load up the family truckster and head out on an adventure? This easyto-pack and satisfying snack is a great way to keep growling tummies quiet while you’re behind the wheel. Grab the kids, prepare it together, and try not to eat them all before you hit the road!
BREAKFAST COOKIES
INGREDIENTS:
• 2 cups quick oats
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1 cup peanut butter
• 1/4 cup honey
DIRECTIONS:
• 1/3 cup apple butter
• 1 large banana, mashed (1/2 cup)
• 1/2 cup dried cranberries
• 1/2 cup pepitas
• 1/2 cup raisins
1/ Preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
2/ Combine all the ingredients into a large bowl of a stand mixer (or hand mixer). Mix until all the ingredients are combined and the dough is thick and heavy.
3/ Portion 1/4 cup mounds of cookie dough onto prepared cookie sheets. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
4/ Bake for 16-18 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, then transfer to a wire rack to cool.
5/ Cover leftover cookies and store at room temperature for up to 5 days or 10 days in the fridge.
