Thanksgiving Is My Favorite Holiday

hose who know me well might think that the fact I like to eat and cook and enjoy a traditional roast turkey dinner (I’ll prepare it several times a year) is why I like Thanksgiving the best of all holidays. While this culinary preference might play a small role in my choice, the fact is I think it is very important to do a complete job of counting our blessings. When I went through a divorce and some choices about who would be with whom on certain holidays, I asked for Thanksgiving. My three children were and still are an incredible blessing. Regardless of what inevitable conflicts and troubles occur during the year, a formal coming together was important. If we handle our lives as well as we possibly can, there is always something special to be thankful for. My children are now grown, have families of their own and are spread all over the country and the world, making a ceremonial Thanksgiving dinner rarely possible. We still do our best, even if it’s only by Skype or Facetime. This year, our mutual communities and our country are in serious conflict. More so than at any time since the growing pains of the Civil Rights Movement and the pain of the Vietnam War tore at our society, many of us are focused on what’s wrong. Unfortunately, there is a lot that is wrong. Particularly the resurfacing of latent hatred and racism. There is also a refusal on the part of many of our nation’s “leaders” to do anything about it. Case in point is treating the suffering of our fellow Americans in Puerto Rico as an annoying inconvenience rather than a life and death responsibility. To help me enjoy this Thanksgiving season, I am going to focus on a good thing. A happy place. An example of what is exceptionally good about the communities in which I work and live. The Conejo Valley, Malibu and Pacific Palisades are unquestionably affluent. However, that affluence does not equate to self-centered and selfish. The opposite is true. The level of support for nonprofits as diverse as the American Cancer Society, Boys and Girls Clubs, PathPoint, the Westminster Free Clinic, the Conejo Compassion Coalition and Big Brothers Big Sisters, to name just a few, never ceases to amaze me. Recently, in one evening, about $150,000 was raised for Big Brothers Big Sisters of Ventura County. WOW!! Time to say, “Thank You!”

To date, A Walk On Water has provided surf therapy to more than 2,500 children and adults with special needs or disability, with a stated goal of growing their services by 25% year over year, ultimately reaching every individual in need across the globe. Agatha Wallen, whose two sons are autistic, was introduced to A Walk On Water when her oldest son, Mason, was 7. At the time, he struggled with any sensation that was new to him. “I knew it would be nearly impossible to get a wetsuit on him,” Agatha recalls. “He was kicking, hitting and screaming the whole time. But with help from the very patient wetsuit staff; it took five of them…we got it on him.” When Mason was placed on a surfboard, he was put in the care of Pat Notaro, who Wallen refers to as an “expert surfer/autism child whisperer.” “As my tantrum child was being paddled off out to sea, in a hail of cheer and applause from everyone around, I could see him transform,” Wallen remembers. “My son became calmer as they moved with the water. I saw his body relax as he stretched out on the long surfboard. My child regained his composure and started to participate.” When Agatha saw her son coming closer to shore, he was standing up tall with only one hand holding onto Pat's wetsuit. “There was a big ear to ear smile on his face,” she says. “As he walked onto the sand he did his signature stiffening of both hand and body in excitement and said, ‘I want to go again mommy’. ” The community can help A Walk On Water by raising funds so more therapy days can be held, Power says. “Our goal is to continue to give transformative experiences to children with special needs. PETT Y RANCH Petty Ranch is home to SEEAG’s Farm Lab where last year over 2,600 third graders received a hands-on lesson about the origins of their food. Located in Saticoy, the farm has been in the family since the 1880's. Chris Sayer is the fifth generation to manage it. Primary crops are lemons and avocados for the mainstream markets. A few acres are dedicated to experiments with other fruit, such as figs, persimmons and apples. Visitors will learn about the Farm Lab program as well as the practices that the farm employs, such as soil health and improvement measures, irrigation efficiency and the use of beneficial insects. “I think many will be surprised at the level of sophistication required to farm successfully in the 21st Century,” says Sayer. Of the 3,000+ counties in the U.S., Ventura consistently ranks around No. 10 nationally in economic agriculture value. “We are an extremely productive and important part of the national farm economy, yet most of our 800,000 Ventura County neighbors are unfamiliar with what we do,” says Sayer. “Farm Day is the day farmers and the public get to know one another better.”

REITER AFFILIATED COMPANIES AT SANTA ROSA RANCH Farm Day visitors can tour the Reiter Affiliated Companies’ operation at Santa Rosa Ranch in Camarillo to see raspberries in full production as well as acres of blueberry plants. They’ll learn about the genetics and research behind the berries and get to taste some freshly picked fruit. The “hoops houses” that visitors will see during the tour help protect the plants from the elements and provide sunburn protection for the fruit. Luis Calderon, who works at Reiter Affiliated Companies, has dedicated the past five years to growing berries in Ventura County. “Farming is a lifestyle for those who are truly passionate about agriculture,” says Calderon, whose day-to-day activities include tracking growth progress, providing production estimates and ensuring he has enough harvesters to help pick the berries. “We recognize the value of resources like land, water and our harvesters and strive to work more efficiently to create increased sustainability within agriculture. I’m excited to have the public come by Santa Rosa Ranch to meet our team.” Reiter Affiliated Companies is the largest fresh multi-berry producer in the world, growing Driscoll’s proprietary varieties of strawberries, raspberries, blueberries and blackberries. Visitors will hear from Mike Williams about the beef life cycle and get the opportunity to ask questions about ranching, how cattle are raised and beef production. “Farm Day is an excellent opportunity for the community to learn about food production,” says Williams. “With less than 2% of the population engaged in agriculture, Farm Day gives consumers the chance to learn about food production directly from the people who produce it. Rita Hills AVA are so distinctive, you know where they come from the moment you taste them. During a mid-week vacation (hotel rates are 25-50% lower than on weekends), we stayed at the classy Santa Ynez Inn. Enjoying the world’s greatest Prime Rib served at Brothers Restaurant at the Red Barn also topped our to-do list, but the main purpose of our trip was to visit some very special wineries in our “backyard wine country.” We met some of the pioneers and founders of Santa Barbara wines, as well as a relative newcomer with roots in Pacific Palisades: Richard Sanford, Rick Longoria, Chad Melville, Steve Beckmen and Aaron Walker. Passionate about their chosen path in the wine indus-

try, they all strive—and succeed—to produce the best wine possible. They are also organic and even biodynamic farmers. All but one winery is located in the Sta. Rita Hills AVA, a small appellation on the Western portion of the Santa Ynez Valley closest to the ocean and its cooling influence. Cool-weather varieties dominate: 78% of Sta. Rita Hills vineyards are planted in Pinot Noir and 20% in Chardonnay. My preference is on the red wine varietals… Pinot Noir and Syrah. White wine goes with finger food or the rare occasion of being served real Dover Sole.

our culinary staff that cooks for 500 residents every day, serving more than 2,500 meals a week at the continuing care retirement community. How do we do it? Here are some of my tried-and-true tips for keeping food exciting, tasty and healthy for the seniors in your life.

CHEF NICK’S TOP TIPS FOR COOKING FOR SENIORS 1. VARIETY IS THE KEY.

At University Village, we constantly change the menu to add a few choices that are new. Imagine how drab meals would be if you ate at the same restaurant every day! We are always coming up with new ideas. On any given day, we have approximately 45 choices on the menu. 2. EVERY SENIOR HAS A DIFFERENT DIET.

Some seniors prefer more salt, and some can have no salt at all for dietary reasons. We make sure we have as many options available as we can. One way to present a tasty, low-sodium meal is to use low-sodium spice blends that achieve the robust flavors seniors crave but are frequently off limits for health reasons. Our culinary team visits local ethnic eateries for new ideas about how to spice things up in the kitchen. 3. FOLLOW THE “FARM TO PLATE” PHILOSOPHY WHENEVER POSSIBLE.

Taking time every day just to listen to the residents is probably the most important thing I do.

BAKED ORANGE HONEY CHICKEN

Ingredients • 1/3 cup Dijon mustard • 1/3 cup honey • 2 tablespoons chopped fresh dill or 1 tablespoon dried dill • 2 teaspoon freshly grated orange peel • 1 (2 ½ pounds) chicken quarters Directions 1. Preheat oven to 400 degrees 2. Combine mustard and honey in a small bowl 3. Stir in dill and orange peel 4. Coat chicken with sauce and place chicken in baking pan 5. Bake for about 30 minutes Makes 4 servings

ASIAN CHICKEN BURGER

Ingredients • 1 1/4 pounds ground chicken • 1 egg lightly beaten • 2/3 cup panko (Japanese bread crumbs) • 1 clove garlic, minced • 2 green onions, thinly sliced • 1 tsp salt • 3 tbsp chopped cilantro • 1 tsp Siracha sauce • 1 tbsp vegetable oil • 1 tsp honey • 1/2 cup bottled teriyaki glaze • 4 sesame buns, split and toasted • 4 leaves red lettuce • 1 cucumber, peeled, seeded, halved and thinly sliced length-wise • Ginger mayonnaise, recipe follows Directions 1. In a large bowl, mix together chicken, panko, egg, onions, cilantro, garlic, Siracha sauce and salt 2. With oiled hands, form into four patties 3. In a small bowl, mix together teriyaki glaze and honey 4. In large nonstick frying pan over medium-high heat, place oil 5. Add chicken and cook, turning and brushing teriyaki glaze, about 10 minutes or until done 6. Place burgers on toasted buns and top with lettuce, cucumber and ginger mayonnaise 7. Garnish with additional cilantro and cucumber slices
