There is a fabulous new spot in town for the over-55 crowd.

A place for art. A place for exercise. A place for socializing. A place for lunch. A place to simply sit and enjoy a cup of coffee. Wander down to the newly opened Colorado Springs Senior Center and check it out.

“I’m so glad that this is finally open. … It’s beautiful,” says 86-year-old patron Josephine Charlotte. “It’s just totally beautiful.”

Charlotte has been doing yoga for 60 years. When the pandemic hit, she took a hiatus and thought she’d never do it again. But when the new senior center opened, she jumped right back in.

She recently participated in a weekend yoga retreat and has signed up for every yoga class on the schedule.

She encourages others to “Drop in. See the place. Pick up those flyers.”

Tom Lathrop, operations director at the center, agrees. He says being 55 or over is the sole qualification for accessing this space, which is open weekdays from 8 am to 5 pm and some weekend days. Just stop in, get a card, and enjoy. Some classes, clubs and activities charge a nominal fee; others–stopping in for a cup of coffee, working on a puzzle, morning walks, many tech classes—are free.

BIGGER, BRIGHTER, BETTER

The new center opened in August, replacing a 1950s-era grocery store/strip mall that had been repurposed in 1986 into the original senior center. Lathrop says the new, 23,000-square-foot facility could serve seniors for the next half century. Everything is ADA-compliant and there is plenty of parking for all.

Lathrop anticipates daily attendance of 500-600 as more people hear about how great the place is.

“It’s bigger,” he says. “It’s brighter. There is so much sunlight.”

Two women sit by a floor-to-ceiling window in the lobby area, visiting. A third (in her 90s) plops down in a comfortable chair across from them to tell them about the line dance class she just finished. (For the record, they did not do the Electric Slide, but did do the Macarena.)

Not into line dancing? Try other fitness classes like Zumba, juggling, pickleball or cardio drumming. Register for art workshops in painting, framing, cartooning or gemstone faceting. Or check out the lifelong learning classes—things like bridge, sewing, space and astronomy, technology, cooking, ukulele and estate planning.

There are dozens and dozens and dozens of classes, workshops, day trips, weekend retreats, groups, clubs and shows.

“I want everyone to know they are welcome here,” Lathrop says.

SIMPLY LOVELY

Explore the wide hallways to get a peek at more of the bustling activities. Classrooms A, B and C are outfitted with tables and hold various classes throughout the day. Classrooms D and E typically house art classes. Then, there are the big “group” rooms at the far end of the building – sprawling spaces separated by movable walls. One of the rooms is frequently used for sewing and weaving classes, but doubles as “backstage” for the stage in the adjacent room, where performances are held.

And on Thursdays, there are dances with live bands from 1-2:30 pm. No cover; tip if you like.

Hungry? The Silver Key Connections Café offers lunch for a small fee. The Colorado Springs Senior Center is a partnership between the city and the YMCA. The city provides the $15.3 million physical facility, while the YMCA runs the day-to-day programming and operations. Everyone’s goal is the same… to give our community’s seniors a beautiful place to stay young at heart.

THE FRENCH KITCHEN: COME FOR THE FOOD, STAY FOR THE COMMUNITY

At once bright and modern, contemporary and light, The French Kitchen brings an effervescence and duality to traditional French pastries and cuisine. You will find a low hum of joy and busyness with every visit, as locals pop by to pick up a half-dozen lemon curd or Nutella Queenets (a pastry of love), a Colorado take on the quiche (with green chiles, of course), or to grab a few freshly-baked baguettes.

“I always go for flavors,” says CEO and chef instructor Blandine Mazéran. “I really want to have things that are tasty, that people remember.”

Moving to Colorado Springs from France in 2008, Mazéran began baking many foods she missed so much from her French region. By 2012, her love of French baking had grown into a homebased cooking class business and eventually grew so large, she opened The French Kitchen in 2017.

COMMUNITY AND FLAVOR FOCUS

In tandem with an extraordinary, family-infused culinary team, Mazéran has built an incredible space to not only grow her business, but the community’s love for cooking and baking.

The French Kitchen now offers 120 different classes, the largest offering in Colorado with about 21-25 classes per week. From Bold Brunches, Sourdough Starters and Indian Cuisine to the well-loved (and Mazéran’s favorite), Croissants, there is a class for every palate and skillset.

As the winter holidays approach, The French Kitchen also features classes to wow out-of-town guests or to bond with family, including Holiday Cookie Tins, Champagne-Strawberry Yule Logs and from-scratch Gingerbread Houses (perfect to try with younger bakers). Not enough time in your schedule? TFK also offers an array of flash classes that settle in at just about an hour, like their Scones, Cupcakes or Madeleines classes.

At the helm of many of the classes is Chef Nathan Potter, teaching kitchen manager, instructor and pastry chef. His love of the communal nature of food translates into his everyday culinary approach.

“We make the classes approachable, translatable to the home kitchen,” he says. “Everybody has a story with food.”

One such innovation from Chef Nate: Mousse of the Month. Flavors like Crack Jack and Caramel Apple Pie create a decadent

“venue for nostalgia” for guests. His favorite class to teach: Indian cuisine, which leaves students with recipes for hand-rolled garlic naan, butter chicken and samosas, among other popular and flavor-fueled dishes.

Offering a dine-in cafe featuring an extensive coffee bar, market stocked with pre-made deliciousness for those chaotic nights when time is scarce, boutique French foods, carryout and delivery, The French Kitchen has an option for every table. Aspen Kitchens: Rooted in Thoughtful Design, Craftsmanship + Full-Service Renovation

Andrew Kranz had just left the Coast Guard and moved to Colorado Springs, where he decided he wanted to be involved in the kitchen industry. He had been a machinery tech in the Coast Guard and had construction experience before that. The kitchen is the heart of a home, combining the functional as well as the emotional. This is where memories are made alongside meals, stories unfold and lives are shared, blending utility with warmth, connection and comfort.

INTERIOR ARCHITECTURE + REAL WORLD EXPERIENCE

Kranz also knew that most kitchens are indoors, and since the part of construction he disliked the most was being out in the cold, he cleverly deduced that this version of construction would at least keep him (mostly) warm. He began taking classes in interior architecture while he worked at Home Depot in the cabinetry section. This real-world experience in tandem with his studies provided a valuable measure of perspective.

That earned perspective taught him that clients often must try to navigate each element of the renovation process on their own or with minimal input from an expert. From measurements and finishes to functional elements like cabinetry and surfaces and how everything flows together with adequate space planning. Plumbing and electrical with project management is generally an afterthought, all while trying to stay on time and within budget. Many times, all these elements can become overwhelming.

TAILORING SPACES TO REAL-LIFE NEEDS

In 2010, he brought his diverse experience and vision together to launch Aspen Kitchens, creating a company rooted in thoughtful design, craftsmanship and full-service renovation. Since then, the focus has been to serve each unique homeowner, transforming each space into a tailored reflection of their lifestyle, taste, and the real-life needs and comforts of their household.

Evolution is a strong business proposition, and relevance is paramount to keep the pulse and meet the ever-changing needs of the customer. With an unwavering commitment to customer satisfaction, the Aspen Kitchens team found there were continual

opportunities to not only build kitchen cabinets but then refer their clients to the best places to fill those cabinets. Kranz’s wife, Lisa, had experience with a company called The Koastal Kitchen and the decision was made to re-create that experience in land-locked Colorado Springs.

“Kitchens are so personal,” Lisa says. “We seek to source unique and quality products that evoke joy, happiness and nostalgia.”

CURATED SELECTIONS FOR ENTERTAINING

With Aspen Kitchens being a community staple for years, Lisa notes that clients sometimes walk into the showroom surprised, expecting kitchen layouts and instead finding curated selections for every stage of entertaining. She explains that there is certainly a place for online shopping, but sometimes it is nice to see, touch and feel what is being purchased.

“I have noticed that the value of online reviews has gone down significantly, with some companies even being able to purchase a review from a customer,” Andrew says.

Lisa and the team at Aspen Kitchens seek out unique local as well as hard-to-find items that help tell a story, adding personal touches that turn shopping into an experience, not just a task.

“We love hearing customers say, ‘this is my new favorite store’ or being told at checkout that they can’t wait to bring in so-and-so,” Lisa says. “Food is a universal language, and we want to be the store that gets the ‘if anyone was going to have it, you would’ calls.”

Fifteen years after its founding, Aspen Kitchens continues to grow—not just as a business, but as a place where design, community, and quality come together as a reflection of the belief that the kitchen truly is the heart of the home. As the owner of Lonnie Eli & Co., she was determined to create an event that would offer an affordable platform to support women-owned small businesses.  With a background in events, McNeal felt like she was the right fit to start something. After the death of her cousin, Fallon, McNeal founded HERplace in her honor. HERplace is a nonprofit

UNLOCKING CREATIVITY

McNeal’s own business, Lonnie & Eli Co., began when she started creating custom furniture out of necessity because of her family’s frequent moves with the military. During one of her husband’s deployments, she started building custom pieces from scratch. She loves being in her garage and working on her pieces.

“That is where the magic happens,” she says.

McNeal finds the work healing, and it helped her rebuild her own confidence by giving her purpose outside of being a mom and military spouse.

FUTURE GROWTH

McNeal wants to bring women together more frequently by eventually acquiring a permanent space for HERplace. An even bigger dream is to someday expand HERplace outside of Colorado Springs to military bases across the United States.

ACORN DONUT HOLES

As the vibrant colors of summer slowly yield to the warm and earthy hues of autumn, there’s a distinct charm in the air at the arrival of fall. It’s a season filled with the crisp rustling of leaves, cozy sweaters, and the promise of pumpkin-spiced everything. What better way to embrace the changing seasons than by indulging in a delightful treat that captures the essence of both summer’s sweetness and fall’s rich flavors?

My recipe for “Acorn Donut Holes” combines the light, airy sweetness of summer donuts with the warm, comforting tones of fall. Grab your ingredients and let’s get started!

Ingredients:

• Donut holes

• Melting chocolates

• Fall sprinkles

• Pretzels

Instructions:

1. Pour your fall sprinkles into a small bowl for dipping. Lay wax paper down.

2. In a small microwave-safe bowl, melt the melting chocolates in the microwave, about 15-20 seconds. Carefully watch to ensure they don’t burn.

3. Dip the top of each donut hole into the melted chocolate, covering about halfway down the donut.

4. After dipping, immediately dip the chocolate-covered portion of the donut hole into the bowl of sprinkles, coating it with the fall sprinkles.

5. Insert a pretzel into the top of the “acorn” to create the acorn stem.

6. Carefully place the decorated acorn donut holes on the wax paper to let them cool and allow the chocolate to set.

7. Once the chocolate has hardened, your acorn donut holes are ready to enjoy!

Allergy-Friendly Meals with a Twist

Three Farm Girls: Creating Inclusive, Delicious Bites for Every Table

At Three Farm Girls Local Artisan Shop and Eatery, food is more than nourishment–it’s a bridge between cultures, traditions and the growing demand for allergy friendly meals.

After years as a practicing chiropractor, Irene Colella began to reconsider her career. Her job was physically demanding, and she was ready for a change. She pivoted into a few other career roles, including educating others about improving their general wellness.

“I had decided to do a presentation on gut health and how it can impact our overall health,” Colella says. “While doing research for this topic, it led me to discover that I may have a gluten sensitivity. After some testing, it turned out that I actually had celiac disease. We then discovered that my youngest daughter also suffered from it.”

MODIFYING FAMILY RECIPES

Colella, who is Puerto Rican and Italian, along with her husband, who is Polish and Italian, enjoyed several family recipes that included gluten. These recipes are beloved by the family and Colella made it her mission to modify them in a way that honored their heritage without sacrificing flavor and texture.

“With my science background, I wasn’t intimidated by the science of cooking,” she says. “I knew that the various alternative flours each offered something different and beneficial

in the way of flavor and texture. I just had to experiment with different flours, measurements and blends to modify my recipes.”

Pierogies were a top priority for Colella and it wasn’t long before she mastered the perfect dough recipe.

TO THE MARKET

Knowing that many people struggle with gluten sensitivities, Colella was then inspired to share her creation with the local community. She created the brand Three Farm Girls after herself and her two daughters and began selling pierogies at various local markets. They were huge hit!

After a year of cooking out of a commercial kitchen, Colella was ready to find a permanent space that would allow her to expand her allergy-friendly offerings. She secured a spot in Palmer Lake in an historical building that lent even more character and charm to her brand.

THREE FARM GIRLS LOCAL ARTISAN SHOP & EATERY

In May 2025, Colella and her family opened Three Farm Girls Local Artisan Shop & Eatery to the public. Along with her husband, daughters (aged 9 and 14) and two employees, this small but mighty team manufactures and produces everything from scratch.

And the pierogies? All handmade–no machines.

“I wanted to offer a variety of allergy-friendly meals and desserts that were inclusive to all special diets,” Colella says. “In addition, while we were part of the farmers market circuit, my family met and made friends with many local artisans. I am proud to highlight their products in our shop and also provide my patrons an opportunity to shop for locally made goods while they wait.”

FLYING W WRANGLERS: SERENADING GUESTS OVER CHUCKWAGON DINNERS FOR DECADES

“WE WERE THE COWBOYS”

Music has always been a means of storytelling. Cowboy and Western music is no different; it is the tale of the West.

“ACROSS THE PRAIRIE WE DID RIDE, LASSO AND PISTOL BY OUR SIDE”

Before the proliferation of railroads, the only means of transporting cattle to eastern markets was the cattle drive. Ten to 15 cowboys would work to drive 2,000 to 4,000 cattle up to 1,000 miles over the course of three to five months. The hours were grueling, often being astride their horses from before sunrise to after sunset.

The work didn’t stop when the sun went down. After a full day’s work, cowboys would then take turns in shifts overnight to make sure the cattle were calm as stampedes were a constant threat. As cattle are prey animals, they have an acute sense of hearing and are often jumpy around sudden, loud or unfamiliar noises. A rustling bush or a snapping twig could be catastrophic for the cowboys and the herd.

To mask these noises, cowboys would sing, whistle or play music. Keeping in mind that a song is three to five minutes long, and there are 91.3 days in three months, with 1,440 minutes in a day, that equals roughly 131,472 minutes or about 32,868 songs, to provide background music for more than two million pounds of cattle. It likely also supported the cowboy’s mental health, offering entertainment and a sense of community during long months on the trail.

American history tells the story of immigrants seeking a better life for themselves and their descendants—often starting with jobs few wanted but still had to be done.

Early cowboys were a mix of ethnicities including Scottish and Irish immigrants. This led to a strong Celtic influence in the music. Essentially, it comprises a major chord structure, focused on modal melodies. The harmonic ambiguity allows performers to use slightly different chords while still sounding correct. It is cheerful, with a touch of melancholy or edge as experienced in introspective, soulful or bittersweet moments and is now used more recently in modern rock, blues or funk music. The narrative nature of the songs tells stories often attached to strong emotion. These songs are well-suited to a fiddle and guitar—instruments that thrive on simplicity and flexibility. With more than 30,000 songs to sing in one cattle drive, and multiple drives over the years, Cowboy and Western music have increasingly incorporated four- and five-part harmonies to ornament their songs.

Since 1957, the Flying W Wranglers have preserved the music of the western landscape and ranch life. Formed four years after the Flying W Ranch opened to tourists, the group has serenaded guests over chuckwagon dinners for decades. More than 60 performers have been part of the band’s legacy.

Today, the Wranglers are composed of five members: Michael Amidei, Bobby Edwards, Luke Tripp, Adam Gardino and Brian Chomka. Together they combine vocals, guitar, piano, drums, fiddle and bass to create their iconic sound.

With 150-180 shows a year, these guys get to “wake up and think about music,” Amidei explains. “This is a calling for us. We are not just going through the motions; we love keeping this music alive… and the challenge of connecting it with the current audience.”

The quality of music presented at these dinners might surprise guests. The current band consists of internationally recognized talent with backgrounds in orchestral arrangement as well as recognizable musical instinct and capability. Their chemistry is evident in their collaboration and in the natural humor that comes from a strong foundation and bond within a unified purpose.

“We are in a moment where tradition matters, but only we can choose to carry it forward,” says Amidei, reflecting on the joyful weight of 72 years of Flying W history and the generations of Western tradition the performers carry with them each time they step on stage.

During the season when tradition takes center stage, Flying W Ranch prepares for its Cowboy Christmas Jubilee. Under twinkling lights, the Chuckwagon Supper gets gussied up to host two daily shows featuring a 13-piece orchestra alongside the beloved Flying W Wranglers, celebrating heritage with festive music and clean humor.

The holiday season is a time to bring people together.

From 6 a.m. to 6 p.m., the Care and Share team and volunteers will be collecting frozen turkey donations at participating King Soopers locations in Colorado Springs, Pueblo, and Alamosa. We believe food is the foundation for creating memories around the table with loved ones, experiencing joy, and building hope.

Donations will be matched up to $25,000 thanks to the generosity of an anonymous match partner.

Tips on meal prepping for less stress

Let’s face it: hosting Thanksgiving dinner can be stressful.

Between grocery shopping, house cleaning, cooking and baking, it’s no wonder the day devoted to giving thanks can feel a tad daunting.

Here’s some very welcome good news: whether this is your first holiday hosting rodeo or you’ve stuffed many a turkey over the years, you can knock out most of the Thanksgiving meal prep work in advance – some of it two weeks before the big day.

To make this year’s Thanksgiving meal easier and more enjoyable, consider the following timeline of tips.

2 WEEKS BEFORE

Create Your Thanksgiving Menu

• Print out the recipes you plan to use – this will be much easier than constantly tapping your phone to prevent the screen from going dark or scrolling when your hands are covered with flour or onions.

• Using your menu and printed out recipes as a guide, compose a complete shopping list.

• Double check your supply of herbs and spices to see what you have on hand – even the ones you are pretty sure you have enough of, like salt and pepper (this tip comes from personal experience!).

• Shop for all non-perishable and frozen food items. Basically, if it doesn’t need to be stored in the fridge, or if it doesn’t have a short shelf life, it’s going in the cart.

• Plan three easy and tasty dinners for the days leading up to Thanksgiving and purchase those ingredients during your shopping trip. Or plan at least one night of takeout.

4-5 DAYS BEFORE

Clean & Organize, Buy Fresh Groceries

• Clean your home completely, enlisting family members to help. Then, as the big day approaches, you can touch up as needed.

• Finish your grocery shopping for fresh vegetables like potatoes, onions and carrots and other items not purchased earlier.

• Go through your fridge and toss any old, expired condiments, leftovers and mysterious food items that no one is eating. This will free up valuable real estate for your various dishes.

2-3 DAYS BEFORE

Prep Meals & Set the Table

• Wash and chop all veggies and place the prepped produce into plastic baggies or airtight food storage containers. If some recipes call for “minced onion” and others require “chopped onion,” label the bags accordingly.

• Set the table, and include the empty serving dishes. This will help you figure out ahead of time where the larger dishes can go (and if they will all fit!) Add Post-It notes to the empty dishes to remind you what will go in what. Use a clean sheet to cover everything and keep it all dust-free until Thursday. You can also do this for a buffet.

• Gather all needed serving spoons and other serving pieces.

• Pre-measure herbs and spices for your recipes and store them in labeled small plastic bags with the name of the dish they are for and what’s in the baggies. You can also do the same for any flour, sugar or other non-perishable ingredients you’ll use in your dishes.

1 DAY BEFORE

Tidy, Prepare Dishes & Drinks

• Do a quick clean and tidy around the home; for instance, run the vacuum and shine up the bathrooms.

• If you haven’t already done so, bake your pies, or, at the very least, prepare your pie dough. Wrap the dough in plastic and keep it in the fridge until you’re ready to assemble and bake the pies.

• Make the mashed potatoes. Bonus tip: on Thanksgiving, put the potatoes into a slow cooker and heat them up using the “warm” setting.

• Prepare the gravy. If you have a second slow cooker, it too can be warmed up this way on Thanksgiving. This will also help free up pots, pans and burners on the stove!

• Set up a separate drink station where guests can help themselves or someone can serve them away from the kitchen. Stock it with glasses of different sizes, napkins, bottle and can openers and straws.

Each year brings countless stories like these—real lives touched by simple acts of kindness. Some use the funds to pay overdue bills, others to afford groceries, medication, or repairs. But no matter the circumstance, the impact is the same: hope is restored.
