A recent cake drew inspiration from Claude Monet’s water lilies. Swaying sugar flowers perch along the edges and ledges much in the way single orchids grow from tropical lava rocks. “I love creating things,” he said. After serving six years in the Air Force, Bean decided to immerse himself in something creative – studying pastry arts. “It was beautiful,” he said. “It was just really inspiring to me.” He launched Trouvaille Bakery in Maryland six years ago, initially focusing on small breads, petit fours and pastries. Later, he worked with a master cake designer and fell in love with the larger canvas. In 2019, he moved to Colorado Springs and plans to stay, transforming sugar and flour into clients’ dreams. His cakes start at $2,000. People ask why they should spend that much on a cake. Bean said the answer is simple: A Trouvaille cake will serve 65 of your loved ones. It is a statement. An investment. A memory.

He long has hosted extravagant dinner parties at his own home. But an unpaid internship (called a stage) at DC-area Pineapple and Pearls restaurant a few years ago created a spark. “There’s this pulse that happens with really great dining,” he said. He began thinking about the possibility of serving farm-to-table food in people’s homes. In 2020, he made it a reality. Clients work with Bean personally to create a three-course menu that he finishes in their kitchens and serves to their guests. Dinners start at $150 per person. He gives a deep discount on cakes for private dining clients, with single tiers starting at $400. During 2020’s ride, the COS chapter surpassed funds raised by larger neighboring cities for men’s mental health and they’re hoping to do that again this year.

Inclusive of women and men, young and old folk, hooligans, and upstanding citizens of COS, all enthusiasts, all happy to share what they’ve experienced and ready to help one another,” Adam warmly shared. In February of 2020, Adam Morley’s vintage motorcycle garage, Boulder Street Moto, was composed of just 23 members. Throughout the hardships of 2020, some have leaned into activities that productively fill time and feel healthy. That practice has encouraged 30 new members to join BSM over the past 11 months. The expansion has helped Adam realize that the club’s biggest asset isn’t the attractive atmosphere of the space, the inclusions of individual lifts for members’ bikes, the endless tools for wrenching, or the delicious drinks, thanks to partners like Switchback Roasters and Lee Spirits Company. It’s the community. “The best part of BSM is the variety of people that gather here. Inclusive of women and men, young and old folk, hooligans, and upstanding citizens of COS, all enthusiasts, all happy to share what they’ve experienced and ready to help one another,” Adam shared. And it’s not just about the bikes. They also help a great cause. BSM’s annual Distinguished Gentlemen’s Ride is a highlight of every year. Adam expects about 100 riders for 2021’s four-hour experience. The COS chapter raised more funds for men’s health in 2020 than larger neighboring cities. They’re hoping to repeat that this year. SPICED GRANOLA RECIPE WARM SPICED GRANOLA Paired with icy cold yogurt, fruit and honey during the summer or over baked apples drizzled with maple syrup in the cold months, or even straight out of the jar as a healthy snack, it’s a must have.

INGREDIENTS + 4 C. of Rolled Oats

+ 1 C. Sour Cherries

+ 1 C. of unsweetened

+ 1/2 C. Avocado Oil

Toasted Coconut Strips

+ 1/2 C. Maple Syrup

+ 1/2 C. Honey Roasted

+ 2 Tsp. Ground Cinnamon

Sliced Almonds (optional)

+ 2 Tsp. Pumpkin Spice

+ 1/2 C. Pumpkin Seeds

+ 1/2 Tsp. Salt

DIRECTIONS 01 Preheat oven to 250 degrees 02 Crumble coconut strips with a tight squeeze before adding. 03 Gently stir all ingredients together in a large bowl thoroughly. 04 Line a large baking sheet with parchment or slip pad. 05 Evenly spread granola across pan 06 Bake for 30-45 minutes, keeping an eye on when the granola looks lightly browned. 07 Remove from oven and let cool. 08 Store in a large glass jar TIP The trick to having large chunks of granola is to let it fully cool after removing it from the oven and then gently scraping a large wooden spoon through it. This will allow for big pieces to be kept as well as smaller crumbles along the way.
