I am Artina Williams and I am a senior middle blocker on the Varsity volleyball team at MHS. My parents are Eric Williams, Anitra Gilmore-Holmes & Kermit Holmes. I enjoy shopping, self-care/spa days with family and friends.
How do you maintain balance?
Taking it one day at a time and to always try your best to adapt to change. Continue to move forward and be positive. I relax by reading, yoga, sculpting and painting.
Plans for the future?
I am interested in majoring in Psychology with a minor Criminology. I recently have applied and have been accepted to the University of Kansas.

A way I balance school, sports, and life is by finding the right ways to devote your time to the right things. I am successful when I devote my time to doing my school work or practicing football before I get on my phone or watch TV for too long.

I am committed to play football at the University of Oklahoma and I am undecided on my major. A career I want to pursue is being a kicker in the NFL.

Kiley’s Brown Butter Pumpkin Spice Crispy Creatures
Kiley Valentas is a local teacher turned stay-athome mom with three children. She loves baking, home-making, crafting and creating. When she stopped teaching and her first daughter was a baby, she began baking for friends and family, beginning with simply designed buttercream sugar cookies.
Since then, she says the ideas have grown “into pies, breads, cookies and other sweet treats!”

She adds, “My love language is sharing delicious food with those I love, so cooking and baking for them is such a joy to me.”
For those too busy to cook (and those just not really that into baking! LOL), each month Kiley offers select goodies for sale online to be picked up from her home bakery in Norman. For October, she loves to bake pumpkin bread, as well as decorate cookies for Halloween parties. November includes pumpkin pie and caramel apple pie, frozen traditional cinnamon rolls and pumpkin pecan cinnamon rolls, and homemade marshmallows and hot cocoa.

Kiley’s Brown Butter Pumpkin Spice Crispy Creatures
Ingredients:
• 2 sticks unsalted butter
• 1 tsp. vanilla extract
• 2 10-ounce bags of mini marshmallows
• 1/2 tsp. salt
• 1 tsp. pumpkin pie spice
• 10 cups crispy rice cereal
• Candy melts (green, purple, orange, white, blue… whatever color you want!)
• Eyeball sprinkles (small and large)
• Any other sprinkles wanted
Directions:
Step 1: Spray a 9x13” baking dish with nonstick cooking spray, or grease with a stick of butter.
Step 2: Melt butter in a large stainless steel pan over medium-low heat. Brown the butter by swirling in the pan occasionally. The butter will become foamy, and once that happens, watch closely for small “volcanoes” of light brown to come through the foam. There should be a nutty aroma and small brown bits in the bottom of the pan.
Step 3: Once you’ve made the brown butter, add the vanilla, marshmallows, salt and pumpkin pie spice to the pan. Remove from heat, and stir constantly until the marshmallows are completely melted.
Step 4: Add the rice cereal and stir until the cereal is evenly coated. Transfer the mixture into the prepared baking pan, pressing the mixture gently with your utensils, or use the paper the butter was wrapped in to press into an even layer in the pan. Don’t be too aggressive pressing the mixture into the pan. You want to be firm enough to bind the mixture together, but not so firm that you compress it super solidly so you have soft chewy treats and not dense and hard ones.
Step 5: Allow to cool to room temperature, about 1 hour. Cut into squares, rectangle, or triangles to create your creatures.
Step 6: Warm candy melts in a small bowl in the microwave according to package directions, or about 30 seconds at a time. Lay out a piece of parchment paper to set the finished crispy creatures on.
Step 7: Dip your crispy creatures into the melted candy, and the add eyeball sprinkles or any other sprinkles to make your creature. Make it fun and get creative!
Step 8: Let crispy creatures set up for about 30 minutes, and then enjoy with family and friends!

With rising energy costs, there’s no doubt that consumers are looking for options. What does the cost of power look like for the future?
The unknown leaves many people feeling uneasy. While some consumers may feel like the steadily increasing electric bill is out of their control, fortunately, it is not. With technological advancements, consumers can, in fact, take control of their homes and utility costs.
Co-owners and cousins Ben Williams and Russell Simmonds of Anova Solar are on a mission. They would like to help people take back control of their lives by becoming self-sustaining.
How? Solar energy.
Ben explains, “There is an alternative way for [consumers] to significantly save on power while helping the environment, and most importantly, take control of their own
power… living sustainably on your own instead of being dependent on the city or utility.”
“It gives the power back to the people,” Russell adds. “Month by month, homeowners’ incomes are dwindling because they’re paying more and more for energy. When you go solar, you’re locking in your rate. It’s inflation proof.”
In a recent interview, the two men answered some common questions for consumers interested in transitioning to the solar energy lifestyle:
HOW DO SOLAR PANELS WORK?
The panels absorb the sun’s ultraviolet rays. The consumer sells the energy back to the power company, and a credit is built throughout the day. At night, the credit is used, and during the day credit is built. The goal is to offset power usage 100%. Most consumers will overproduce.

WHAT WILL MY MONTHLY ENERGY BILL LOOK LIKE?
With solar, a consumer is locking in a rate. It is clear what the payment will be every month. It’s never going to increase, and it will actually go away at the term. It’s a predictable, steady payment. Having solar, in a sense, is “owning” your own energy.
HOW CAN YOU GUARANTEE THAT A HOME IS RUNNING MOST EFFICIENTLY?
Efficiency can be closely monitored with an app. Anova closely monitors this efficiency. Anova is Pearl Certified, and this is a difficult certification to achieve. The Pearl Certification will certify that the home is considered a “green” home. A Pearl Certificate is provided that shows the increased value of the home after purchasing solar. In order to get the certificate, the homeowner must have a Pearl Certified company install the product. In Oklahoma, Anova is the only company to offer the Pearl Certification.
WHAT IF THE HOME’S ROOF DOESN’T ALLOW FOR ENOUGH SOLAR PANELS TO MATCH THE ENERGY USAGE? OR WHAT IF TREES SHADE A HOME?
Every home is customized. There are options. Carports can be built, and Anova works with the consumer to maximize efficiency.
ARE THERE INCENTIVES TO GO SOLAR?
Currently, the federal government solar tax credit covers 30% of solar installation costs.
HOW LONG DOES THE INSTALLATION PROCESS TAKE?
Once the decision is made, a permit is obtained, and the installation process begins. Anova has an engineering firm that develops each proposal. The process typically takes 14-20 days.

This phrase resides near a stack of Kat’s colorful paintings. That graffiti, mixed in with Kat’s sophisticated artwork, is a revealing picture of the artist’s current life and her fight to balance the complications of motherhood and her art.
Kathron “Kat” Hadlock has lived in Norman for the past 13 years, working out of her transformed garage as art studio. She has resided in Oklahoma her entire life.
As a child, she always drew, but while attending Newcastle High School, a collage competition held at the state Capitol got her attention. She credits her art teacher for alerting her to the challenge and remembers working hard for weeks on her entry. Kat won first place.
This young mother of five children, by either birth or marriage, works to bring art into her children’s lives as well. The entryway and living room of the home she shares with her husband is filled with toys and art. She mentions that one of her children,
her daughter Layla, is very entranced with art as well.
At 35, she now recalls a time that she lost herself and her art after newly having children. After creating art since high school and relying on that as a source of deep knowing and release, Kat stopped creating. She found herself so deep in the care of her children that she left art behind.
“So many women go through a similar time with young children, and they are made to feel ashamed of that time. Many women go through it—losing themselves during the time when they are home with young kids.”
Her husband noticed what had been happening with Kat. For her 35th birthday, he gave her a paint set, and that gift rekindled the creative fire within her. She found herself staying up at night again, painting canvas after canvas, almost without a break.
Kat now combines abstract art with figure drawing. Her mixed media includes acrylics, newspaper, torn magazines, colored pencils, paint pens, pens and markers. The artist often draws an outline of a women and fills that in with colors and words, which become shape and design.

When asked what inspires her, she says, “Women. There is something freeing about a woman being nude on her own terms.” The artist shares that she is a survivor of abuse when she was young, but she has always felt safe with women.
“If people view my art, interact with my art and walk away with a heightened appreciation of women, then I have done my job as an artist. Women so are strong. We nurture with such beauty and quiet strength.”
She is also obsessed with hands.
“Hands tell a lot about a person,” she says.
Kat’s paintings of hands are also filled and inscribed with words—swirled and caught with magazine clippings and newspaper lines. The colors swirling around them have as much to say about the strength and tenderness of these hands as the words tattooed upon them. Some of the hands she has painted reach upward for justice. Some of the hands rest, relieved to be free of shackles. The most haunting hands in her paintings reach out for you, the passive viewer. The image stays with you, reaching, long after you have left the painting.

Cancer remains the second-leading cause of death for Oklahomans. The Norman Regional Health Foundation prioritizes the fight to keep improving cancer care outcomes for patients through its $4 million Equipped for Tomorrow capital campaign.
One way the foundation is fighting is by equipping physicians with state-of-the-art tools and technology. Denise Rable, M.D., FACS, is the medical director of The Oklahoma Breast Center. It’s an exciting time for breast cancer care in central Oklahoma with Dr. Rable’s shared vision of a comprehensive breast program, with surgery clinic locations in both Oklahoma City and Norman.
The Oklahoma Breast Center is located on the HealthPlex campus in Norman and includes state-ofthe-art breast-imaging services as well as comprehensive surgical services. With the creation of this new center, additional surgical options will be available to patients. Also, new technology has been added, including a critical piece of equipment that has been gifted to the Norman system by the Norman Regional Health Foundation.
Dr. Rable gave her thanks to the Norman Regional Health Foundation’s Board for championing The Oklahoma Breast Care Center by equipping them with cutting-edge equipment such as the Clarix Imaging System that will allow for surgical margins to be interpreted more accurately.
“The standard of care for breast cancer surgery is lumpectomy. This requires removing the tumor from the breast while achieving clear margins. With microscopically clear margins, local cancer recurrence rates are very low. If margins are not clear, additional surgery is required to resect more tissue to achieve these low recurrence rates. This additional surgery obviously causes increased stress, healing time and expense for the patient,” Dr. Rable said.
“Since it is impossible during surgery to see or feel the microscopic extent of disease, in the operating room we rely on X-ray images of the specimen to determine if our margins are adequate,” she added.
“The Clarix Imaging System provides the highest-quality specimen images of all currently available technology. The Clarix unit provides 3D full-volume, real-time images. With this technology, we can make more accurate decisions during surgery on whether additional tissue needs to be removed to ensure clear margins are achieved.”

The Norman Regional Health Foundation’s commitment to equipping the health system with the latest tools to fight against cancer is not limited to our breast cancer patients.
Funds from the Equipped for Tomorrow campaign will be used to purchase an endoscopic ultrasound. Gastroenterologists use EUS to evaluate cancer of the colon, along with cancers of the esophagus, lungs, pancreas and stomach, by obtaining highly accurate images of the digestive tract and surrounding tissues and organs.

“When I woke up from that colonoscopy, they told me that I had stage three colorectal cancer,” said Michelle.

As well as working and being able to have that normalcy of life that I so desired, because I didn’t want to feel like I was a cancer patient,” said Michelle.
Michelle’s journey back to health included colon resection surgery, radiation and conjunctive chemotherapy. So, her experience introduced her to many
providers and healers all across Norman Regional’s campuses.
“I would just tell anybody who has been diagnosed with cancer, if you come to Norman Regional, you’re in good hands,” Michelle said.

What do you think of when you hear the phrase “national parks”? Sweeping scenery like the Grand Canyon, majestic mountains like the Grand Tetons, vast desert-like swaths of the Great Sand Dunes? Expect a long drive to visit any of these.
For those of us living in Oklahoma, the closest national park (excluding historic sites and trails, a wildlife refuge and recreation area) is in Arkansas: Hot Springs National Park ( NPS.gov/hosp/index.htm). And it’s the only national park that incorporates a city. The park’s eight-and-a-half square miles may be tiny in comparison to many other parks, but it encompasses a lot of history— and a lot of things to do.
Long known for its hot spring waters, this area was familiar first to Native Americans and, later, in the 1600s, to French hunters and traders. Following the Louisiana Purchase, an expedition launched by President Jefferson brought back reports of the Ouachita waters.
As publicity spread, more and more people made the arduous journey to bathe in what were purported to be healing waters. In 1832, the federal government, for the first time, set aside land to protect a natural resource.
Unfortunately, the boundaries were undefined, and springs-seekers claimed spots, some throwing up tents or building wooden structures. The government eventually stepped in, cleared the area out, and in 1921, Congress made Hot Springs the 18th national park.
Building was regulated and magnificent bathhouses popped up on what became known as Bathhouse Row. Many of these buildings remain today.
The first stop any history buff should make is to the Fordyce Bathhouse , now the park visitor center and museum.
SPA-ING THEN AND NOW
The Buckstaff Bathhouse is the only original bathhouse featuring historic treatments. Don’t expect soft music and dim lighting. This is clinical—1920-style. The traditional bathing package (which I highly recommend) includes a whirlpool bath with a loofah scrub, sitz bath and hot packs followed by a needle shower.
My favorite part was the 20-minute Swedish massage at the end. You’ll feel like a limp noodle afterwards, but oh-so-good.
The Quapaw, another of the elegant originals, provides a more contemporary experience. The most impressive area features four large thermal mineral pools. For more personalized experiences, including aromatherapy, private tubs are available. The Quapaw also offers a wide range of massages and other spa services.
For the ultimate in contemporary spa treatments, the Astral Spa at Oaklawn Racing Casino Resort is one of the newest facilities in town.

Choose a clear day to visit Hot Springs Mountain Tower, a 216-foot observation tower atop Hot Springs Mountain. In addition to a 140-mile, bird’s eye view, the tower has a museum with Hot Springs history, including celebrity gossip, baseball banter and Mafia myths.
My must-see when I’m in the area is Garvan Woodland Gardens , a 210-acre Eden along the shores of Lake Hamilton. In fall, the gardens glow with chrysanthemums, roses, camellias and fall foliage. Plantings run the gamut from formal beds to fields of wildflowers. The Children’s Garden is a wonder of nature accented by several architectural highlights, including the multi-level Evans Tree House dedicated to dendrology (the scientific study of trees).
Also in the gardens, the Anthony Chapel, inspired by E. Fay Jones’ Thorncrown Chapel in Eureka Springs, draws wedding couples with its glass and wood construction, which brings the outside in.
For those more athletically inclined than botanically curious, it’s possible to log up to five miles on garden paths. Closer to the historic district, the national park offers 26 miles of hiking trails. There are also a number of biking trails in the area.
Other attractions include Magic Mountain Theme and Water Park , the Mid-America Science Museum and the Gangster Museum . The proximity of Lake Hamilton opens up a myriad of opportunities, both wet and dry. Fisherfolk go after bass and channel catfish and a species I’m not familiar with, the pumpkinseed sunfish, said to be delicious.
DRINK, EAT, SLEEP
Another unique feature of Hot Springs National Park is that it is the only national park with a brewery. Housed in a 1916 bathhouse building, Superior Bathhouse Brewery and Distillery was the first of the breweries in Hot Springs, and the first in the world to feature thermal spring water as the main ingredient.
Crystal Ridge Distillery was the first legal distillery in Hot Springs. Their flagship product is 120 proof Mule Kick. In addition, they have a number of flavored varieties, from maple bacon and peanut butter to peach and strawberry.
Asher Bradley, distillery general manager, said, “We’re tying moonshine into local history. Al Capone had ‘shine stills north of town, smuggling his product out in Mountain Valley Springs bottles.’”
For the perfect chaser, consider a visit to Mountain Valley Water Visitor Center. The elegant, 1900 building contains museum exhibits and lots of history.
From fancy to fast food, you won’t go hungry in Hot Springs. I love breakfast, and Hot Springs has several spots that hit my spot. The Pancake Shop has hit lots of spots in its 83-year history. The menu hasn’t changed much—a few new additions—but the quality is still tops. Check the sidebar for more of my faves.

This visit, I stayed right next to Oaklawn Race Track in the Oaklawn Racing Casino Resort . Homage to the track, a large color photo of racing horses graces one wall of my spacious and comfortable room, furnished with luxury linens, Matouk towels and fluffy bathrobes. If you enjoy casinos or are a racing fan (the season is December to May), this is the place you want to be.
Hot Springs has the usual assortment of chain accommodations. More unusual stays are listed in the sidebar.
I can’t think of another national park with so many great-getaway opportunities—city amenities, plus super scenery and outdoor activities. And, best of all, at under 400 miles from Oklahoma City, it’s a sweet day’s drive.

Fernandes said that what he likes most about his specialty is the opportunity to transform patients’ lives by freeing them from pain and returning functionality.
“I learned in medical school that a lot of medicine is just managing a disease or problem on an ongoing basis, without a definite solution,” he said.
“As an orthopedic hand surgeon, I am able to see patients with specific problems or injuries that are painful and severely impacting their quality of life, and I am able through surgery and other means to actually fix the issue. That is very meaningful to me.”

With a mother who was a family physician, Dr. Carlton Fernandes grew up hearing stories around the dinner table and quickly realized how fulfilling her career was on a personal and professional level. So it was no surprise when he decided to follow in her footsteps and enter the medical profession himself.
Originally from Edmond, today Dr. Fernandes is an orthopedic surgeon who specializes in treatment of the hand and upper extremities.
His expertise led to his new position as the lead physician for Ortho Clinic’s new Hand Center, which opened its doors on Sept. 5 of this year. The center is the latest expansion to the umbrella Ortho Central Clinic, which provides state-ofthe-art care in a variety of specialties and is affiliated with Norman Regional Health System.
At the new clinic, Fernandes treats patients with issues like Carpal Tunnel Syndrome, Cubital Tunnel Syndrome, osteoarthritis, ligament and tendon injuries, ganglion cysts, broken bones in the hand, wrist and elbow and trigger finger, as well as other medical and injury-related conditions.
One of the greatest developments in his field is that many hand surgeries can now be performed in the doctor’s office on an out-patient basis, with the patient awake and only under a local anesthetic. This makes the procedures less intrusive and significantly speeds up recovery, with much less pain and down time for the patients, Fernandes said. In fact, he is one of the first specialist to bring these new “awake” hand surgeries to Norman.
“There are a lot of things we have solutions for that we didn’t have a few years ago, and we also have a lot of new treatment procedures that are now available,” he said.
“My approach to patient care is to personalize the experience. I think it’s important to listen to the patients carefully, and then I can figure out exactly what their needs, goals and expectations are, and how I can best bring about those results.”
Fernandes earned his bachelor’s degree from Notre Dame University, then returned to Oklahoma to complete his medical degree and residency at the University of Oklahoma College of Medicine. From there he completed a

fellowship in hand and upper extremity surgery at Loyola University Medical Center in Chicago.
He has earned multiple honors throughout his academic tenure, including a Harold Sofield Traveling Fellowship from Loyola, which allowed him to travel to Ho Chi Minh City in Vietnam to treat patients and work with other medical professionals.
Among his academic achievements, Fernandes earned awards for scholastic and research excellence. He’s also been named to both the Alpha Omega Alpha Honor Society and the Gold Humanism Honor Society. (The latter recognizes senior medical students, residents and physician-teachers who exhibit outstanding excellence in clinical care, leadership, compassion and dedication to service.)
When he’s not in the office, Fernandes can usually be found hiking, working out and enjoying the great outdoors, accompanied by Leo, his beloved Alaskan malamute. He also enjoys cooking and traveling, most recently visiting Australia and Italy.
“I always knew I would return to Oklahoma to practice, and I’m thrilled to help establish the Ortho Central Hand Surgery, especially since central Oklahoma is underserved when it comes to hand surgeons,” he said.
“I really like the Norman community and our program, and it is always wonderful when I can empower patients to get back to what they love doing.”

Growing up in the small town of Cromwell, Oklahoma, Tim Shannon planned to become an engineer, like his best friend’s father. Instead, however, he would find himself in a different type of professional career—one where he literally leaves people smiling.
On Oct. 1 of this year, Dr. Shannon celebrated his 25th year in practice with Orthodontics Exclusively of Norman, one of the largest specialty practices in Oklahoma.
Together with partner Drs. Mark Revels and Gaby Restuccia, they provide an extensive range of orthodontic services to patients of all ages.
They’re also highly visible in the community, giving to a very broad spectrum of charitable organizations, schools and civic groups.
Shannon and his wife, Tish (a dental hygienist), met in dental school at the University of Oklahoma, and this year celebrated their 20th anniversary. The couple knew from early on that they wanted to live in Norman, and in 1998 Shannon had the opportunity to join Dr. Dow Miller, who had established the first orthodontic practice in Norman 40 years prior. A year later Miller retired, and shortly after Shannon invited Revels and then later Restuccia to join the practice.
Orthodontics Exclusively has grown exponentially since that time and has created more than 20,000 beautiful smiles.
To celebrate his 25th anniversary professional milestone, Dr. Shannon and his team are going to donate free orthodontic care to 12 patients
over the next year as a “thank you” to the surrounding community.
Shannon also celebrated with a special dinner at Benvenuti’s Ristorante, which is one of his family’s favorites. (See accompanying Chilean sea bass recipe and cover photo.)
Shannon’s service to others began with service to his country. He joined the U.S. Navy Reserve program as a junior in high school and left for boot camp only four days after graduating. (He served as class valedictorian.) While he remained active in the Reserves, he would end up switching career paths and graduating with distinction from the University of Oklahoma College of Dentistry.
“I had anticipated a different path, but when I found orthodontics, I knew it’s what I was born to do,” he said. “We see patients of all ages, but it’s really great to catch a kid at their awkward stage of life and be able to see their confidence grow as the treatment progresses.”
Along with his dental degree and a master’s degree in business, Shannon also is board certified by the American Board of Orthodontics—a distinction achieved by only one in three orthodontists in Oklahoma. He’s been inducted into the Pierre Fauchard Honorary Dental Academy and serves as a part-time orthodontic instructor for the OU College of Dentistry’s graduate orthodontic program.
Shannon, Revels (also a Navy veteran) and Restuccia are extremely dedicated to giving back to their community, and they have a lengthy list of school, youth, community and veterans’ organizations they’ve helped over the years.

Among their many outreach programs, they’ve purchased scoreboards, playground equipment and uniforms for more than a dozen area elementary and high schools, fulfilled Make-a-Wish Foundation and Wounded Warrior requests, donated raffle items to Norman’s Junior League, helped the YMCA fund building modifications, and purchased Girl Scout cookies to send to active-duty military members overseas.
They’ve also provided free and discounted services for participants in Norman’s Big Brothers/Big Sisters and Bridges programs, as well as individual area veterans in need. The list goes on and on.
As if all that weren’t enough, Shannon works extensively with the OU sports teams. He’s even treated Heisman trophy winners Baker Mayfield and Kyler Murray, along with most of the OU coaches and their families.
Outside the office, Shannon spends time traveling with his family, which in addition to wife Tish includes their four children, Berkley, 19; Paisley, 17; Landry, 15; and Emery, 14. They’re all highly involved in sports, and as one would expect, are die-hard OU fans.
“I just want people to know how much we appreciate the community and their support,” Shannon said. “It has been a really blessed life.”
BENVENUTI’S FRESH CHILEAN SEA BASS *
Ingredients
• 2 Tbsp. olive oil
• White wine
• 1/4-cup heavy cream
• 1 Tbsp. capers (rinsed)
• 1 tsp. Dijon mustard
• Sea salt & white pepper to taste
Directions
Pan sear the fish until golden crust forms; flip and cook on the other side, turning down the heat to cook the fish through. Remove the fish when finished and discard the oil. Deglaze the pan with white wine, add the heavy cream, rinsed capers and Dijon mustard. Reduce until the sauce thickens.
Plate fish with your favorite sides, salt and pepper as desired, and drizzle the sauce on top.

No Jet Required: Oliveto Italian Bistro’s Yovani Boailla Cooks Up Authentic Dishes in the Neighborhood

Very few people can afford to just hop on a jet and fly to Italy whenever they crave some authentic Italian food.
But you’ll find the next best thing—including great food and drink and a warm, friendly atmosphere—at Oliveto Italian Bistro (OlivetoBistro.com), conveniently located (no jet needed!) at 1301 S. I-35 Service Road in Moore.
Taking care of the tasty food part of the equation is Oliveto’s chef Yovani Boailla.
Although a native of Guatemala rather than Italy, Yovani’s love affair with food and cooking comes from his mother, who shared her culinary skills with her son from a young age.

Yovani’s family moved to the metro area 18 years ago, when he was 14. He has served as Oliveto’s chef since the Moore restaurant’s opening over 10 years ago.
Before joining the Oliveto team, Yovani worked as a sauté chef at Macaroni Grill in Oklahoma City. At Oliveto, he enjoys his larger role, which includes helping prepare the entire menu, from the wood-fired pizza to the pasta-based dishes, among them Asiago Spinach Chicken and Shrimp Scampi, to serving as team leader.
“I love the kitchen, handling the lunch and dinner rush and the people I work with,” Yovani declares. “I love doing it all.”
It’s a bonus when customers stop at the counter separating the seating area from the open kitchen, where people can watch their meals being prepared— and personally praise him for his culinary skills and the wonderful meal he prepared for him or her.
So anyway, part of being a good writer is verifying facts, right?
Accordingly, in the “line of duty,” I watched as Yovani prepared one of the restaurant’s favorite dishes, the Chicken Primavera, which I enjoyed later at home for dinner. It was fun observing him as he quickly and expertly sauteed the vegetables, Kalamata olives, garlic, red pepper flakes, fresh basil, Asiago cheese and lemon garlic butter and mixed them into a hot skillet with the bow tie pasta, then slid the delicious-smelling concoction into a dish prior to photographing it.
I loved the subtle garlic and buttery flavors and the mix of textures (the vegetables remained slightly crispy). It’s also an aesthetically pleasing dish, with yellow squash and red peppers offering a pop of color). I give it two thumbs up. (See accompanying recipe.)
Yovani gives his family credit for providing the support he needs to flourish in his job.
At home, he and his wife, Stephanie, enjoy preparing meals together—traditional Mexican fare as well as Italian dishes—for themselves and their three children.
“Yovani takes a ton of pride in what he does,” said Oliveto owner Mike Sikes. “He wants to make sure
every dish is perfect for every guest. It’s not uncommon for customers to stop and personally thank him. He is the glue that holds this place together during the day and makes sure everything in the kitchen is ready to go for the dinner shift.”

Oliveto offers a broad selection of dishes from which to choose.
These include appetizers, including their famous Bruschetta “Sundae,” Italian nachos, calamari and crab cakes, and salads and soups.
Several main course specialties are available, including Rigatoni Rustica, Chicken Parmesan, Chicken Marsala, and Roasted Rosemary Chicken. The menu also features several traditional pasta dishes, including Asiago Spinach Chicken, lasagna, spaghetti with meatballs and a “pasta your way” option that allows the dinner to select their own pasta type, sauce and meat. Seafood options include Crab Cake Italiano, Shrimp Alfredo and Shrimp Scampi, as well as two salmon dishes. Cauliflower rice is available as a substitute for pasta for a small upcharge.
Oliveto’s pizzas start with artisan dough made in-house daily, topped with a gourmet blend of mozzarella and provolone cheeses, then hearth-baked in a Woodstone® brick oven. Patrons may substitute gluten-free cauliflower crust for $2.50 more.
Dessert, anyone? You have options. Just to name a few: Dulce de Leche Bread Pudding, Cheesecake with Strawberry-Amaretto Coulis, Chocolate Flourless Cake and Chocolate Chip Cannoli.
Of course, great food alone does not a successful Italian restaurant make. The drink selection, ambiance (including comfortable surroundings and friendly, helpful staff) and affordability are also key components.

Ingredients
• 5 ozs. bowtie pasta
• 2 ozs. butter
• 2 Tbsp. diced yellow onion
• 2 Tbsp. chopped garlic
• 2 oz. sliced zucchini
• 2 oz. sliced yellow squash
• 2 oz. sliced mushrooms
• 3 oz. sliced grilled chicken
• 1 oz. diced tomatoes
• 1 Tbsp. Kalamata olives
• 2 oz chicken stock
• 2 Tbsp. shredded asiago cheese
• 1 Tbsp. julienne-cut basil
• 1 Tbsp. lemon juice
Directions
1. Heat garlic, butter and onions in a medium sauté pan until onions begin to soften. Add all the other ingredients except chicken stock, asiago cheese and basil.
2. When the mushrooms begin to soften, add the basil, chicken stock and asiago. After about a minute, add the bowtie pasta and toss all ingredients for another minute.
3. Portion into a large pasta bowl and garnish with an additional 1 oz. of asiago cheese.

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 cup chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice cream.
