Somehow, someway, September is here!
It seems like summer starts right when you need it most—when we’re all burnt out on alarm clocks, school and schedules, and longing for spontaneity, flexibility and childhood delight. We never know what each summer will bring, but we just know that we’re ready. And regardless of what it holds, we know that it doesn't disappoint.
After the novelty wears off, summer can start to feel a bit never-ending, and we all might find ourselves longing for a schedule and routine (hey! I said might). To all the parents—you did it! The long, hot days filled with strollers, diapers, floaties and gallons of sunscreen are almost past you. Regardless of what your summer held, I hope it slowed you down and you were able to soak it all in.
Summer seems to know when we need it most, and when it’s time to move on. So with this issue, we bid our sweet summer a sweet farewell. Until next year, when we’re anxiously waiting for its return!
Here’s to a summer filled with adventures, sunny Colorado days, good friends & lots of good food. Thank you for letting us fill these pages with all of the things we love about our Cherry Creek community and beyond.

But this was far from the beginning of the vision for this special stretch of land, which first began to be assembled in 1980. Now, over 40 years after the initial land acquisition, Canyon Pines has come to fruition.

A LESSON IN NATURAL WINE

That’s how we felt until we sat down with Mary Allison Wright and McLain Hedges of Yacht Club, owners of the up-and-coming wine-, cocktail- and dive-bar that pegs itself as an anti-club social club and is making big waves on the Denver bar scene. Founded in 2021, a mere two years ago, they’ve swept awards. Debuting on the 2023 50 Best Bars North America list at no. 42, they were also named most sustainable bar, as well as making it to the Top 4 finalists for ‘Best New US Cocktail Bar at the 2022 Tales of the Cocktail Spirited Awards’ and most recently one of the Top 4 finalists for Best U.S. Bar Team at the 2023 Spirited Awards. They have claimed their stake as a staple in the community, welcoming everyone with open arms, and best of all have one of Denver's hottest natural wine programs.

This team is clearly stellar, so ‘naturally’ we thought we would come to them with all of our natural wine questions.
So to start, what really is natural wine?
“You can’t put it in a neat little box,” says Mary. “The type of wine we work with is hugely important to what we do and it’s all the way from farming practices, to how people are treating their farmers and of course to whatever goes in the bottle.”
Natural wine may seem new, but in fact, it’s as old as wine itself. There are varying opinions in the industry on what it is and is not, but simply put it’s wine produced through low-intervention methods; that is to say minimal chemicals, additives, and technological intervention. The fast-trending wine style is here to stay and has grown a reputation for being different from what you might be used to at your white tablecloth haunts, without compromising production excellence.
Natural wine can be more susceptible to certain flaws since it doesn’t rely on herbicides, pesticides, chemicals, correctors, flavorings, etc., but in skilled hands (and nature/the vintage willing) we’re getting a more beautiful and pure bottle than we could possibly otherwise.
“I like to think of it like cheese,” says Mary. “For example, processed American cheese vs. a local product reflective of where it’s from/the season/etc. Cloudiness and funk are out there, but they’re not necessary and certainly not what has to be expected! On the same token, though, those definitely do not have to be negative attributes. Like anything in life, it’s about understanding and balance."
So what better home for a beverage that’s authentically itself, sometimes a little funky and misunderstood than the bar that reads "All are welcome."
“Yes!” says Mary. “You know, Yacht Club really is the club for all. And that's our number one. We want to make you feel like you've just stepped into a place that wants you to be there.”

GARDENING TIPS WITH ECHTER’S
LAYING THE FOUNDATION FOR A great GROWING SEASON
Whether you’re regularly harvesting veggies from your garden or simply enjoying the ever-changing sights and smells around your neighborhood, summer is a time of bloom. As the end draws closer, you might be looking at your green space and thinking…what now? I sat down with Julie Echter, store manager of Echter’s, to get her gardening tips for late summer and early fall, and there are plenty of planting options, even with our relatively short season here in Colorado.
In the short term, you can add some color to your outside planters and garden beds with mums and pansies. They prefer cooler temperatures and can even handle some of the early freezes. You can also plant lettuce, spinach and radishes if you’re hoping for one last harvest, as they’re relatively quick to pop up. Early fall is also a great time for planning, and she has a mantra to help guide you.
Julie says, “The right plant in the right place.”
In short, the better suited a plant is for its environment, especially in our high desert climate, the less work they end up being. She’s noticed an increase in xeriscaping, with customers moving towards low water need plants, and sees time savings as a major benefit, along with the positive environmental impact.
“I think people have busy lives and probably don’t have the time or energy to baby plants all the time,” Julie says.
She recommends using Plant Select as a resource for finding plants that thrive in the Rocky Mountain region. Julie also encourages mixing perennials, vegetables, annuals and evergreens to create spaces that bloom during different parts of the growing season, ensuring your garden is beautiful and colorful throughout.
As you create a plan for the next growing season, there are plenty of things you can and should plant in the early fall. For example, daffodils and tulips are actually fall bulbs, so plant them this year if you want that pop of color next spring. It’s also a great time to put perennials, trees, and shrubs in the ground. They just need to establish a root system before the ground freezes, and plenty can do that relatively quickly.
Fall is also an important time for maintenance. Julie recommends removing
dead plant material from garden beds, to avoid diseases remaining dormant there through the winter. Similarly, if you’re planning to bring potted plants, like hibiscus, inside for the winter, make sure to spray them for bugs and diseases first to help keep your houseplants safe.
Another pest Julie has seen entirely too much of this year is the Japanese Beetle, and the fall is an ideal time to treat your grass with grubGONE! to help stop them in their grub phase. You should also plan to winterize your lawn, to help it go dormant and give it some nutrients, and can even reseed in the fall.
If this is all sounding like Gardening 401 when you were hoping for a 101, worry not! Julie has several fall classes coming up and trains the staff to help gardeners of all skill levels.

HOW A LOCKDOWN-ERA EXPERIMENT TURNED INTO DENVER’S NEW FAVORITE SWEET TREAT
Like many, Michael Milton and his wife Gabrielle Henning got really into baking in 2020. But for the Denver couple, their home-kitchen experiments came with professional ambition. The two share a background in the food and beverage industry, and, following early lockdown layoffs, were looking for a creative way to work. Enter: Pandemic Donuts.
Gabrielle is a chef by training with a background in pastry and led the duo on the culinary front. “We tried cakes, we tried monkey breads, and none of that was really tickling our fancy at all,” explains Michael, who handled the business side. “But Gabrielle knew how to make donuts already. So, one day I woke up and made a Pandemic Donuts Instagram page. She already had pictures of her donuts, so I posted some of those, reached out to some of the food bloggers in town, and we kind of just started getting orders right away.”
Take a look at their Instagram today, and a collage of colorful, eye-catching donuts make it easy to see why. Each topped with a donut hole, the pastries come in creative flavors that change every two days. Pandemic Donuts offers two styles of donuts: a yeast and an old-fashioned cake, alongside special appearances by cronuts, crullers, and various types of rolls, from chocolate peanut butter to pistachio honey. Michael explains that generally half of the day’s offerings are classic flavors, like strawberry sprinkle or maple glaze, and half are a bit more out of the box, like key lime pie or lemon poppy seed.

In 2021, Pandemic Donuts partnered with the Denver coffee company and set up a full professional kitchen in the back half of their Five Points location.
“Early on, we kind of had to make a decision like, 'Are we gonna do this? Are we really gonna try to do this? You know…permanently,'” Michael recounts. “And we kind of just decided that we were going to ride it out and see how far we could take it—to see if we can make a career out of it.”
Today, Michael and Gabrielle have created not just a career for themselves, but an entire team that now contributes to making, transporting, and selling the donuts all over Denver. He attributes at least
some of the success to the simple fact that they like what they make.
“We both just really like donuts. I think creating something that we enjoy making and really enjoy eating, helps us sell them,” Michael says. “I think with any good art or good food, first of all, there has to be a passion for it. And secondly, you have to really enjoy it yourself. If that happens, then, you know, I think it's easier for other people to like it and enjoy it.”
Looking ahead, Michael says to keep an eye out for a Pandemic Donuts retail location. “We'll be bringing a much larger menu and a really nice coffee program—serving Queen City of course.”
