The alarm goes off the same time every morning and there’s the morning routine, then work, then the usual “what should we have for dinner?” discussion (for which you make one of the fam’s favorites or take in from your shortlist of go-tos). The Arizona Science Center Offers Free Admission to Military Members Through Labor Day

As a Blue Star Museum, the Arizona Science Center features a special benefit for all active-duty military personnel. Each year, beginning Armed Forces Day through Labor Day, general admission tickets to the center are free. Qualifying active duty personnel include U.S. Army, Navy, Air Force, Marine Corps, and Coast Guard. Chandler has a variety of aquatic centers and neighborhood pools with numerous amenities. Given the ever-expanding list of restaurants nearby, it is easy to stay in one’s little bubble when deciding where to dine. But why not branch out? Arizona offers a melting pot of diverse flavors and ingredients to explore around every turn.

PHOENIX

Phoenix is a foodie city on the rise thanks in great part to the influx of talented culinary teams opening restaurants in the area in recent years. Pyro, Anhelo, Christopher’s at Wrigley Mansion, and Ambrogio15 have especially elevated the scene.

Pyro (PyroPHX.com), located in Phoenix’s Arcadia suburb, is inspired by the supper clubs in 1930s Japan. Bold in its look—think audacious fixtures, rich velvets, and era-inspired art pieces—as much as its menu, dishes are crafted by manipulating fire with wood and charcoal to roast, sear, grill, and smoke, enhancing the natural flavors of ingredients before pairing them with eye-catching dishware and garnishment.

Anhelo (AnheloRestaurant.com) is tucked into a beautiful, custom-designed space on the ground floor of the iconic Orpheum Lofts in Downtown Phoenix and led by chef Ivan Jacobo, a maestro of flavor combination who takes exceptional pride in marrying ingredients from around the world with American classics, all in a fine-dining setting with white glove service.

Christopher’s at Wrigley Mansion (WrigleyMansion. com) is perched atop a 100-foot knoll in the Biltmore area and completely encased in glass to allow for nearly 360-degree views of the city below. The space is helmed by Christopher Gross, an icon in every sense of the word, who delights in shocking the senses with his whimsical-yet-nuanced tasting menu that will delight even the most discerning diner.

Ambrogio15 (Ambrogio15AZ.com), newly opened at Biltmore Fashion Park, is a soaring, two-story Italian eatery destined to be a local culinary classic. Visually, it seeks to evoke the style and modern aesthetic of Milan, and throughout the menu, there are fresh-made pastas and crudo, an impressive raw bar, pizzas crafted with flour imported from a 191-year-old mill in Italy, and a bevy of well-seasoned proteins, some flambéed tableside.

SCOTTSDALE

While Scottsdale also has a bevy of new musts, many of the longer-standing menus are very much worth the extra miles, especially Dominick’s Steakhouse, Bourbon Steak, Sel, and Café Monarch. North Scottsdale’s Dominick’s Steakhouse (DominicksSteakhouse. com) and Bourbon Steak at the Fairmont Scottsdale Princess (ScottsdalePrincess.com) are the epitome of ultra high-end dining destinations in Arizona. Both are worthy of setting the stage for a proposal or other special occasion. Dominick’s wet-ages its meat for 28 days before hand-cutting it in-house, and has some of the most impressive seafood in the Southwest. Bourbon Steak grills its fork-tender meats on mesquite, offering domestic and imported wagyu, as well as angus selections nightly, plus a nice array of shellfish and caviar.

In South Scottsdale, while Sel (SelRestaurant.com) and Café Monarch (CafeMonarch.com) also offer steak, they are a good bet if looking to indulge in an electric, eclectic prix fixe menu. Sel is the brainchild of Food Network favorite Branden Levine, and feels very much like a local version of the French Laundry, while Café Monarch is consistently ranked the most romantic restaurants in Arizona, and among the bucket list culinary experiences nationwide.

Of course, if you’re seeking something new, there are some freshly opened spaces turning heads, as well. Course (CourseRestaurantAZ.com) is an ultra-experiential fine-dining concept with an ever-changing multi-course menu that blends nostalgic flavors with avant-garde arrangement and plating, and Uchi (UchiRestaurants.com) is a seductive spot featuring a non-traditional menu of Japanese specialties with Pacific Rim influences and ingredients from across the globe.

FABULOUS, BUT FARTHER

Willing to venture even a little farther? Flagstaff offers copious ways to wine and dine in the cool summer pines, thanks to James Beard nominees Atria (AtriaRestaurant.com), a modern-American restaurant with both a la carte seasonal dishes and a mind-bending tasting menu; Forêt (ForetFlagstaff.com), a French-inspired café; and Shift Kitchen & Bar (ShiftFLG.com), which offers locally sourced shared plates.

If headed to Tucson, do not miss the crave-worthy curated collection of distinctive dishes at CORE Kitchen + Bar inside the Forbes Travel Guide Five Star Ritz-Carlton Dove Mountain (RitzCarlton.com) or picture-perfect Passaggio at the sprawling JW Marriott Starr Pass Resort & Spa ( JWStarrPass.com).

World Barbecue Champion Sterling Smith Shares His Advice on How to Perfectly Smoke Meats

Sterling Smith is a celebrity pitmaster with hundreds of national and global awards under his championship belt. In addition to being a world barbecue champion, Smith has led numerous teams in competitions to titles and taught countless classes in-person and virtually.

But this success didn’t come without some stumbles. Smith isn’t shy about admitting that his first attempt at smoking a pork shoulder 15 years ago was an epic fail.

“I over-smoked it. It was the worst piece of meat,” Smith confesses. “Smoke is an ingredient, like salt and pepper. If all you can taste is smoke, it’s too much. You want to taste the protein first. That’s the star of the show.”

While grilling involves cooking over direct high heat in a somewhat expedient fashion, smoking requires more nuance and patience, as meat gets happy in a very opposite low-and-slow hours-long process.

Smith has perfected the art of both. His accolades sparked Loot ’N Booty BBQ, Smith’s line of original rubs, sauces, and merchandise. He’s also authored two cookbooks and has a set of online how-to videos on BBQChamps.com

A Navy veteran, Smith served for four years as a sonar technician on the guided missile cruiser USS Chosin, based in Pearl Harbor, Hawaii. His international travels influence his recipes today.

Whether you’ve got an old-school smoker that needs babysitting and feeding throughout the process, or one of those new versions that take out the guesswork—Smith likes a wood pellet smoker from Green Mountain Grills—here are some tips straight from the expert to get you going.

BIG MEAT

Hit the grocery store for a large piece of protein in the form of brisket or pork, although chicken works, too. Smith prefers a good-sized pork shoulder, which is an economical cut and perfect for smoking.

“There’s a lot of fat, which is great for going low and slow,” he says.

When it comes to seasoning, Smith recommends starting with liberal use of salt, especially on big cuts of meat. His go-to starter combo is salt, pepper, and granulated garlic. From there, he recommends adding ingredients like brown sugar or paprika for color.

ADVANCE PREP

Seasoning your pork, beef, or chicken for hours before it hits the smoker is vital. Smith lets it sit overnight in the fridge, covered with foil or in a huge zip-top plastic bag.

“The seasoning needs time to be accepted into the protein, so give it time,” he says.

CRUST IS A MUST

When there’s a deep color resembling bark or a crust formed on the outside of the meat, take it off and wrap it tightly in foil or butcher paper. Put it back on the smoker until, as Smith says, “it probes like butter,” i.e., a thermometer slides in with little to no resistance. That’s when it’s ready to come off for good.

TIME TO REST

Put the meat in an oven or empty cooler and let science do its thing. An 8- to 10-pound pork shoulder or brisket can hold for 4 to 5 hours before it’s ready to shred and slice like a dream. Not letting the meat sit long enough is perhaps the most common error people make, but it’s crucial to getting moist and succulent barbecue, Smith says.

FOR NON-CARNIVORES

“Anything from the sea can be smoked,” Smith says. Rainbow trout, shrimp, and lobster tails will be done in about 15 to 20 minutes.

“I wasn’t afraid to burn something because I wanted to learn,” Smith says. “I had to burn a lot of meat, and a lot of my successes in barbecue came from failure.”

Directions:

1. Trim 12 to 14 pounds brisket of excess fat.

2. Apply slather of mustard and apply rub (equal parts coarse ground pepper and kosher salt).

3. Adjust smoker so it is burning clean smoke at 275 degrees.

4. Place brisket on smoker, fat side up.

5. Keep lid closed for the first 3 hours, then check every 30 minutes for dryness on the surface. If dry, spritz with apple cider vinegar.

6. The brisket should have a decent darkly colored bark at around 6 hours. At this point, remove, wrap in butcher paper, and return to smoker.

7. At about 10 hours, start feeling for tenderness. Internal temp will be anywhere from 190 to 205 degrees, but tenderness is the key. When tender, it’s done.

8. Remove from smoker and let rest fully wrapped (I place in a towel and put in a cooler) until temp comes down to 140 to 45 degrees (about 1 to 2 hours).

Back to School

For Our City-Chandler was founded in 2009 with one key mission in mind: Bringing the community together in the spirit of collaboration and compassion to best serve Chandler.

One way the nonprofit organization meets this goal is by organizing and hosting events like Operation Back to School, which will take place from 8 to 11 a.m. on Sat., July 13 at Compass Christian Church, 1825 S. Alma School Road.

As Board Chair Jane Andersen notes, the event, which is open to Chandler residents, Chandler Unified School District (CUSD) students and students who attend a school in Chandler, will feature a number of giveaways, including backpacks filled with supplies.

“We will also offer socks, underwear, shoes, and haircuts. All items are on a first-come, first-served basis, and students must be present to receive a backpack,” Andersen says.

Operation Back to School, which distributed over 2,500 backpacks, 676 pairs of shoes, and 4,800-plus pairs of socks and underwear at the 2023 event, is an outstanding example of For Our City-Chandler’s mission, Andersen says.

“Years ago, church groups, local businesses, and nonprofits were each doing individual backpack drives. These generous events were wonderful, but sometimes resulted in families receiving duplicate services,” Andersen says, adding that in an effort to reach more families in need and utilize the power of collective action, For Our City-Chandler created Operation Back to School.

“This truly community-driven event requires collaboration with community partners and a lot of dedicated volunteers. Last year we had 45 groups partner with us, and we anticipate a similar number this year.”

People or groups who would like to assist with Operation Back to School are welcome to help.

“We are seeking additional sponsors for Operation Back to School, as well as groups who would like to participate in a donation drive for school supplies, socks, underwear, and shoes,” she says, adding that they could also use more people to help out before and during the event.

“We will need volunteers to set up the event on July 12 and to serve at our July 13 event. Volunteers on event day must be 18 years and older.”

“It’s a great way to kick off the school year and come together as a community.”

Andersen says she is looking forward to Operation Back to School and helping Chandler students start the new school year with the supplies that they need.

“This event provides an opportunity for local groups to work together to benefit Chandler families. Not only are we able to lift families but we are able to provide community members the opportunity to serve,” she says. “It’s a great way to kick off the school year and come together as a community.”
