Welcome fall! With the changing seasons comes a change in what we are craving, and, with fall, that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town.

We had the pleasure of sitting down with the craft cocktail bartenders at HEYDAY in downtown Celina and learned about what their fall drink menu will be boasting-so get your tastebuds ready,  you are in for a treat. Check out their featured drinks for October in this issue. Speaking of cocktails, Little Wooden Penguin rolled out a whole new drink menu and we highlight some of our favorites!

The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple,  pumpkin, chili and soups of any kind brings me right back to her table.  I always loved arriving home from school and smelling her chocolate cake baking in the oven. We stopped by The Wick, serving Swirls Bakery items, and sat down with owners Kim and Cleve Wickliffe to learn what sweet offerings they are serving this month.

There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

OUTSTANDING STUDENT ATHLETE OF THE MONTH

It is with great pleasure to announce the Outstanding Student Athlete of the Month as selected by the Celina Independent School District (CISD) Athletic Coaching Team. This month’s selection is Cash Hurst.

Cash is a senior at Celina High School (CHS) and tight end and h-back on the football team. Cash previously played basketball and ran for CHS, but tore his ACL in the third game of sophomore season playing varsity football. He had to stop participating in basketball and missed sophomore track season due to surgery and rehab. Cash has persevered through injuries to his knees and legs each season since 6th grade, but he has never given up and has goal of helping lead teammates to a UIL state championship to close out his high school career. He credits Coach Grayson for always providing encouragement and support during challenging times in the rehab process. His favorite moments have been earning a spot on the varsity roster after his freshman season and then catching a touchdown pass on his first target at the

beginning of the game in week one against Paris his junior season after missing most of his sophomore season with a torn ACL.

Cash began playing football in Kindergarten, and has coached youth 7 on 7 football teams for multiple years. For his work on the field, Cash has earned a spot on 1st Team All-District TE/H-Back (2023) and 1st Team Academic All-District (2023 & 2022). The varsity team has reached regional semifinals for the last two seasons.

Off the field, Cash stays busy as an entrepreneur. He started his own fitness and weight equipment trading business which occupies much of his free time. He is a member of the National Honor Society and Spanish club, and is competing for top academic honors for the Class of 2025. After high school, Cash plans to attend college and major in finance. Congratulations to Cash Hurst and his selection as the October Outstanding Student Athlete of the Month sponsored by Lamar National Bank!

A Local Family-Owned Nursery And Landscape Company

While all of North Texas feels relief as the calendar changes from September to October and hopes for cooler days ahead, our friends at Shades of Green in Celina are excited to ramp up for their favorite season. There is an annual cycle of business in the nursery business. Spring is planting and everything new, but fall is all about show and color.

Shades of Green in Celina is entering another season of sharing their garden with the community and offering a unique fall experience. It's not just another parking lot garden center; it's a living, breathing garden. The team at Celina’s Shades of Green invites you to come out, wander the paths, smell the flowers and herbs, feed the fish in the Koi Pond, and rest on benches to enjoy the natural elements and the view. The ten-acre property also includes three greenhouses, a tree farm, and a kid's play area that allows kids to play while you shop, walk the paths, and take advantage of the flower-cutting garden.  It's a rare gem for a small town in Texas to have a botanical garden at its disposal.

Celina’s Shades of Green is more than just a family-owned business. It's a community hub. If you've moved north to Celina for its country feel, you'll recognize Shades of Green as the place to get plants that thrive in our North Texas soil and climate. When Jarratt Calvert and his extended family opened the Celina Nursery in June 2022, they were ahead of the growth, but they had a vision that resonated with the community. They wanted to create a garden center that felt like a park where everyone could come together and share their love for gardening and nature.

Imagine getting inspiration to turn your yard into a landscape that thrives in our climate. How great would it be to talk with a professional who understands the dirt and clay surrounding your new home? How great would it be to speak with experts who provide insight and expertise while understanding that you might be on a tight budget?

Jarratt Calvert and his wife Rebecca are the second generation shepherding the growth and direction of Shades of Green. Rebecca’s father, Jeff McCauley, started the business with his friend by purchasing their first lawn mower with Jeff’s mom’s Sears credit card. From there, the business has seen growth, changes, and some struggles, but, ultimately, their vision of connecting with the community has stayed true.

Jarratt was born and raised in Celina, and he is part of the fourth generation of family members native to our community. He can share how he graduated from the “new” high school on the corner of Pecan and Preston Road. Rebecca and her family also have deep roots in Celina. To round out the all-local team, Celina store manager Julie Holland also grew up in the area and graduated from Prosper High School. At the same time, her mom is now an Assistant Principal at Celina High School.

While the pumpkins arrived in September, on October 5th, Shades of Green Celina will celebrate all things fall with Fall Fest. This will be a day of food, fun, fall festivities, and live music. Guest artist Trey Rose from season 16 of The Voice and upcoming country artist Jaxen Mannering will entertain the crowd with a sunset concert. Food and drink trucks include Taco Banditos Taco Truck, Little Wooden Penguin Beer Wagon, Mr. B's Shaved Ice, Limited Time Chef cooking up Asian, Mexican, and American fusion dishes, DonutNV Collin County selling donuts, lemonade and seasonal hot drinks, and Frios Gourmet Pops will all be on site.

Fall Fest will include family-friendly activities, such as a pumpkin patch, hay maze, pumpkin painting, face painting, a pet costume contest, and yard games. Greenologie will introduce Shades of Green's new flower shop, and Wilder Rose Creative will offer free family photos in the pumpkin patch.

In addition to Fall Fest, you can meet the team and shop for plants and seasonal items at the Celina Friday Night Markets. You will want to be on the lookout for master gardening classes taught by long-time employee Mary Ann Hardy. These classes will cover growing, picking, and canning from your garden. Also, this year, there will be BYOB Happy Hour classes for planting pumpkin succulents and making wreaths. Julie Holland recently launched Party Packages. These packages invite you to host birthday parties, girls' night out, and receptions at the nursery that can be tailored to your group and your interests.

As the calendar turns to November, Shades of Green will bring live Christmas trees, pine boughs, and live wreaths to the nursery to help you decorate for the coming Christmas Season. And new this year, Santa will be making regular visits to the nursery. Bring your littles to share their Christmas list with the big guy and take a few pictures.

In the coming year, the nursery will begin working on phase II of its plan. It will expand some of its existing garden areas, adding string lights and additional trails using historic brick from downtown Celina. Long-term, its plan includes building a permanent office and education space to provide more opportunities for classes and educational visits.

OKTOBERFEST

One of Celina’s favorite traditions, Oktoberfest, is back and better than ever. Organized by the Celina Chamber of Commerce, our beloved Town Square is transformed into a place for all things German heritage, including authentic music, food, and beverages. Fun for the entire family can be found from stein hoisting to costume contests with plenty of games and activities for all ages. The fun begins early on October 12th with the Tapping of the Keg and continues late into the evening.

CELINA ISD HOMECOMING PARADE

Another classic tradition held in and around our historic Town Square is Celina’s Homecoming Parade. Come see your favorite floats, enjoy the sound of our award-winning Bobcat Band, and cheer on the Bobcats as they prepare to take the field for their Friday night game. Festivities begin in the morning on October 25th so get there early to get a good spot and stay on after to enjoy a bite at your favorite lunch spot!

The Hands & Heart Behind Celina’s New Locally-Crafted Home For Delicious & Nutritious Dining

Since moving to Celina in 2021, Cleve and Kim Wickliffe have been down a long, winding road to opening Celina’s newest haven for blue-zone-initiative believers and lovers of all things delicious and nutritious: The Wick. The journey started with their original concept, Swirls Bakery. Swirls was slated to open on the other side of the square, but kept running into issues with the historic building, as many of the buildings in downtown Celina are. Eventually, the Wickliffes came to a point where their dreams for Swirls Bakery were losing momentum, but there was a silver lining.

“Right about the time that place was dissolving, this place became available, and we had a great relationship with the people who were starting the renovation,” Kim said.

From there, The Wick was born with a new vision but the same spark.

“We had always wanted to do a restaurant, but we thought it would come along later,” Kim said. “We thought we’d do a bakery first, then kind of feel it out and do the restaurant second, but that didn’t happen. So, we ended up jumping right in.”

The heart behind Swirls Bakery was not completely abandoned, though.

“We did talk about how to incorporate the Swirl into some of the dishes: that was a big deal for us,” Kim said. “He used to do that for me at home, and it was fantastic.”

About 10 years ago, Kim had breast cancer twice and when the chemotherapy gave her congestive heart failure, they were very careful about what they ate, how foods were prepared, and what type of ingredients were used.

“We felt like there was a void there, that when we went out to eat…we found delicious or natural, but not really delicious and natural at the same time,” Kim said. “That really was the catapult for a lot of these dishes: he made them for me, and then we were like, ‘Okay, well this would be a really good thing on a menu.’”

The menu was collaboratively designed by both Cleve and Kim, crafted to incorporate food items that are both nutritional and delicious, and Cleve has assumed the role as head chef, he says they like to call him. The Wickliffes pride themselves in their blue-zone-initiative business model: they don’t buy food; they buy ingredients. From the bread to the cinnamon rolls, to the pasta noodles, nothing is bought premade, and all of their food is made in-house. Maple syrup, syrups in the cocktails, and dressing for the salads are also made in-house. In fact, the only two items that are ever frozen are ice cream and the ice cubes for old fashioneds. Kim says everything is fresh and handcrafted.

Their commitment to handcrafted didn’t stop with their menu. Celina local Jill Parsons, owner of Media High Ground, created The Wick’s logo to include an homage to the original concept of Swirls Bakery. Also reflective of that handcrafted feel, renovations on the 1940s home began in the middle of 2022 and took about 18 months for both the inside and the outside. Building the inside, Kim said, was a long process.

“There were a lot of choices to be made for the interior, and a lot of permitting,” Kim said. “Because we had some time, we really focused on all the details.”

From the light fixtures and the bathroom details to the large wall of wallpaper, Kim says they were intentional to support locally whenever they could.

Swirls, the items that started the business, are baked fresh and available every day at The Wick.

Terramania designed the hostess stand and the décor in the restrooms. DC Endeavors, an off-duty fireman and Celina local, did both of The Wick’s exterior signs. Shades of Green and Junior Landscaping, both Celina landscaping companies, did all of the landscaping outside.

“Every time we could, if there was somebody available in Celina, we used them.”

The Wick’s tables were custom-made and branded with their logo by local Celina company Rustic & Modern. Pulling in another Celina local, Coleman Duckworth made their cornhole boards and champagne wall: home of the Mimosa Club.

“We have this fun Mimosa Club: you can purchase your glass, and have it etched with your name or your business name—and there’s a one-time fee—and then you get reduced mimosa pricing whenever you come in and use your glass,” Kim said. “So, that’s kind of fun.”

One of the things The Wick is starting this fall is their OldFashioned Club.

“There’ve been quite a few gentlemen who have said, ‘Well, I don’t drink mimosas; I’m an old-fashioned guy, and I want my own glass.’ So, we’re probably going to roll that out shortly.”

Since their opening in July, the Wickliffes have already seen the benefits of chasing after their dreams and rooting themselves in the Celina community.

“Particularly our opening weekend, I think it was really cool to see all of the faces that we have seen all over town when we’ve been catering, and we’ve been at events,” Kim said. “To see all of those faces come back to us, that was really rewarding. And I think one of the coolest things was the event that we recently had with Celina Lifestyle, Back to School Mimosas, because I saw so many faces that said, ‘I’ve

never been here before.’ ‘I haven’t had time to try it; we’ve been on vacation all summer, and we’re really excited to try things,’ and they sat down, and they had food. They loved it and wanted to come back.”

It’s still true.”

As part of the celebration, Celina’s branch will break ground on a new building in January 2025. The new building on Preston Road in the heart of Celina will be around 8,000 square feet including a community room available for public use. Even with the creation of a new building, Natasha remarks, “You call, and a person answers. You walk in, and you are greeted by someone ready to talk to you.”

We serve veterans, families, single-parent families, senior citizens, and people who live paycheck to paycheck and are being crushed by inflation.

The Community Garden Kitchen (CGK) began in 2014 and was born out of a group discussion on hunger and how food insecurity was affecting McKinney residents. Discovering there were no options in Collin County for free freshly prepared meals, the group Bible study members decided to create a place where people could experience restaurant-style dining at no charge and no questions asked.

After eight years of fundraising, the 4,800 square foot facility was built on land provided by the Episcopal Diocese of Dallas and includes a professional kitchen and dining room that can serve 118 people. Completely debt free, CGK also boasts a quarter-acre garden that supplies the restaurant with fruit, vegetables, herbs, and fresh flowers for the tabletops. The garden produced over 1,100 pounds of food in 2023 and greatly contributed to the fresh aspect of the menu.

The restaurant is open to anyone and upon entering, will be greeted by a volunteer hostess who escorts them to a table. Diners are offered menus and can experience the joy of selecting tasty desserts from the sweets cart that is wheeled through the dining room. Community Garden Kitchen is open Monday through Thursday from 6 to 8PM and is operated by a full-time professional chef and Director of Operations and a team of volunteers to provide the personal service and experience that every restaurant guest deserves. CGK President Angel Poen says that the success of the dining experience for 200 people per night is dependent on several teams of volunteers that begin early in the day preparing for the evening meal. Sorting donations provided by partners through North Texas Food Bank, prepping the food, setting the serving line, and preparing the dining room requires many hands. CGK coordinates 180 volunteers per week serving 3-hour shifts.

According to Mrs. Poen, the vision is to be a center of hope and compassion, ensuring that no one in our community need suffer the fear and distress of food insecurity. “We serve veterans, families, single-parent families, senior citizens, and people who live paycheck to paycheck and are being crushed by inflation”. While serving meals to those in 40 different zip codes, CGK also contributed 68 tons of food to local food banks, created a sack lunch program providing 100 sack lunches for day laborers, the homeless, and food pantries. For 2025, Community Garden Kitchen is establishing a trade program for students aging out of the foster care system to experience the hospitality industry as paid interns. Angela says, “We hope to pay them wages while they are working and learning and to make sure they know they have options”.

Outside of serving more than 44,000 meals per year, Community Garden Kitchen was awarded the 2024 Texas Restaurant Association Community Impact Award and the 2024 North Texas Food Bank Garden Partner Award. CGK efforts are supported by residents, community and business members, and corporations.  Fundraising events occur throughout the year and are open to the public.

Instructions:

1. Gather together the items.

2 .Arrange and style according to your party aesthetic.

3. Add extra items, such as crackers, chips and cheeses.

Melt the white chocolate in the microwave in 15-second increments. Stir between increments until the chocolate is fully melted.

Dip the top of each cookie into the melted chocolate and place the coated cookie on wax paper to dry.

Press the mini chocolate chip to make the eyes and mouth before the chocolate dries.

CHICKEN NOODLE SOUP

This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.

INGREDIENTS:

• 8 cups chicken broth (add more if desired)

• Whole fryer chicken, cut in chunks or shredded

• 5 celery stalks, sliced

• 8 carrots, sliced

• ½ onion diced

• 4 tablespoons butter

• 1 teaspoon italian seasoning

• ¼ cup half and half (optional)

• 1 package egg noodles

• Salt and pepper to taste

DIRECTIONS:

In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked.
