Sweet Honey

Just as the COVID-19 crisis began to unfold, Kate and I visited the Pima County Animal Care Center (PACC) on the west side of Tucson— one of the finest animal rescue centers in the country. Built to host 400 dogs and cats, the center was overrun with more than 550 lost or abandoned animals. Mostly dogs. Mostly pitty-mix dogs.

Kate went in to see if there was some way to help with the overcrowding. About 30 minutes later, Kate emerged from the cacophony of lost and afraid dogs. She had great news! She found our newest family member! Honey!

We returned the next day to complete the adoption of this white and black-spotted new friend. That's when things started to get interesting. When we tried to lift her into the truck, her entire body froze like a granite sculpture. We put her on the ground, and she collapsed. We reviewed the veterinarian report, and it turns out she had been abused. Broken and fused pelvis, unable to walk normally, terrified by any unexpected movement or noise. She would not walk through a door if someone were standing nearby, obviously something that had caused her severe pain in the past.

Days turned to weeks, and weeks became months, and slowly her fears subsided. Slowly, she learned how to play, how to love, and how to trust. It was a miracle watching her run (awkwardly) with her new pack of Buster and Chip. Her joy gave us even more joy. We were thrilled to be able to help at least one of these lost and afraid spirits.

In March, around her fifth birthday, she was sleeping on the office floor while I worked, just as she did on any other day. Suddenly, she stood up, yelped, and collapsed. She was gone, most likely due to sudden cardiac failure. As anyone who has lost a pet knows, such a loss is devastating. We are still recovering, though Buster and Chip still sniff her dog bed, wondering where Honey went. She had come so far, and now Honey was gone.

The great poet Khalil Gibran knew the mystery of the heart and the language of love when he wrote, "The deeper that sorrow carves into your being, the more joy you can contain."

We are still not sure about that. Not today. Maybe tomorrow. We could drop by PACC and see if we can find a soul that we can welcome home. Maybe. Maybe you can, too.

WHAT YOUR VET WISHES

When Dr. Elizabeth Jobe decided to pull over on a South Carolina highway nearly two decades ago, she didn’t realize she was about to change the course of her life. She thought she had spotted a raccoon in a drain whilst driving by, but upon peering into that storm drain, she found a wide-eyed blackand-white puppy. She named her Bailey, and the two would go on to share 19 inseparable years together.

Bailey would become much more than a pet. She was a study partner through veterinary school, a companion on hiking trails across the country, and eventually, the inspiration for Dr. Jobe’s own practice: The Bailey Veterinary Medical Center in Oro Valley, Arizona. Bailey, Dr. Jobe says, was a model of lifelong wellness—the kind of thriving life she now strives to help all her patients achieve.

Behind every cheerful exam room greeting and tail-wagging patient, though, is a profession that demands both emotional endurance and unrelenting pace. On an average day, Dr. Jobe sees up to 20 patients, bouncing between routine checkups, acupuncture sessions, physical rehabilitation, and complex diagnostics. “People don’t always see the volume we manage,” she explains. “When I haven’t called someone back in a few hours, it’s probably because I’m in back-to-back appointments while reviewing 10 to 20 lab panels from the day before.”

That sheer pace is only one part of the challenge. There’s also the emotional whiplash. One moment she’s treating a snakebite emergency, the next she’s celebrating a puppy’s first visit. Moments later, she may be performing a euthanasia for a long-time patient. “It’s a rollercoaster,” she says, “but I do my best to make sure each client feels like they’re the only one in the building.”

It’s that empathy—quiet, enduring, and deeply human—that defines Dr. Jobe’s work. When asked what she wishes pet owners better understood about their vets, her list is heartfelt and practical. First, she says, understand that your pet may actually do better away from you during treatments. At her Fear Free certified clinic, she and her staff are trained to reduce stress and anxiety in pets. “Sometimes, owners unintentionally make their pets more nervous just by being in the room,” she notes. “Taking them out of the room

and into the treatment area isn’t about secrecy. It’s about giving your pet the best chance to relax and cooperate.”

Secondly, the cost of veterinary care involves much more than meets the eye. Behind each invoice are rising expenses for medications, equipment, and fair wages for skilled staff. “Just like groceries or gas, inflation is affecting our industry too,” Dr. Jobe explains. “It costs me more to buy anesthetic drugs than ever before. We need to move past the mindset of what care used to cost 10 or 15 years ago—medicine has massively evolved, and the costs have adjusted as well.”

She’s also passionate about the importance of preventative care—not just when pets are sick, but when they appear healthy. For pets between the ages of one and six, she recommends yearly wellness visits that include physical exams and lab work. For senior pets, those seven and older, she strongly advises biannual visits. “One in five young pets has abnormalities on their lab work. For older pets, it’s one out of three. These are pets that appear perfectly healthy on the outside. We can catch so much earlier this way, often before symptoms appear. That kind of early detection can dramatically improve outcomes.”

WHAT IS FEAR FREE CARE?

Fear Free Care is an approach that prioritizes your pet’s emotional well-being during veterinary visits. Certified teams use gentle handling, positive reinforcement, and calming techniques to reduce fear, anxiety, and stress. The result? A more comfortable experience for pets, more accurate exams, and a stronger bond between you, your vet, and your furry family member.

But wellness goes beyond routine checkups. Dr. Jobe emphasizes the importance of everyday health habits that make a big difference over a pet’s lifetime. Keeping pets at an ideal weight is one of the simplest and most powerful ways to extend and improve their quality of life. Obesity can exacerbate arthritis, reduce mobility, and increase the risk of chronic conditions like diabetes. “And it’s completely in our control as pet owners,” she notes. Nutrition, too, plays a critical role. Choosing high-quality, research-backed food can promote better long-term health, and Dr. Jobe recommends avoiding trendy grainfree diets unless specifically prescribed, citing links to heart disease in dogs. She also urges pet owners not to neglect dental health. “Dental conditions are the most common conditions I treat surgically,” she says. “Poor dental health doesn’t just affect the mouth—it can send bacteria through the bloodstream and impact the entire body.”

Despite the pressures of her profession, the joys outweigh the challenges. “There’s nothing better than hearing a client say, ‘You gave me my dog back,’” she says, smiling. “When you get that diagnosis right, when you help a pet feel like themselves again, that’s everything.”

That joy extends to her clinic’s rehabilitation services, where she’s helped paralyzed dogs walk again through underwater treadmill therapy, acupuncture, and physical exercises. “We’ve had dogs that couldn’t stand on their own start walking again in a matter of weeks,” she says. “Those cases are amazing. Seeing a dog regain its mobility and return to a happy, active life is just so rewarding.”

After 14 years in the field, Dr. Jobe continues to lead with compassion and quiet determination, carrying Bailey’s legacy in every patient she treats.

Serves 4

ingredients

For the Banana Butter:

• 3 tablespoons cream cheese

• 3 tablespoons peanut butter

• 1/2 banana, mashed

• 2 tablespoons honey

• 1/8 teaspoon salt

For the Sandwiches:

• 8 slices of bread

• 4 medium bananas

• Avocado oil spray, for sautéing

directions

In a small mixing bowl, combine the cream cheese, peanut butter, mashed banana, honey, and salt. Using an electric mixer on low speed, mix until just combined. Increase the speed and continue mixing until smooth, about 30 seconds. Spread 2 heaping tablespoons of the banana butter onto 4 slices of bread.

Lightly spray a large sauté pan with avocado oil and heat over medium-high. Slice each banana in half crosswise, then again lengthwise to create quarters. Add the bananas to the hot pan and sauté until golden and caramelized, about 3 to 4 minutes.

Evenly divide the caramelized bananas over the prepared bread slices. Top with the remaining bread slices to form sandwiches.

Wipe the sauté pan clean, return to medium heat, and cook the sandwiches until golden brown on both sides. Slice and serve warm.

GRILLED PEANUT BUTTER AND BANANA SANDWICHES

Take it to the next level. Use thin-sliced french toast!

Makes 8 spirals

ingredients

• 8 hot dog rolls

• 8 frankfurters

• 8 pieces American cheese (2-inch by 1/4-inch)

• 8 slices of bacon

• Toothpicks

directions

Preheat your oven and wrap the hot dog rolls in aluminum foil. Place them in the oven to warm while you prepare the frankfurters.

Cut a 2-inch slit lengthwise into each frankfurter and tuck in a piece of American cheese. Wrap a slice of bacon around each frankfurter in a spiral, securing the ends with toothpicks.

Place the prepared frankfurters on a rack set inside a broiler pan. Position the pan so the frankfurters are about 3 inches from the broiler element.

Broil for about 5 minutes on each side, or until the bacon is lightly browned and crispy. Carefully remove the toothpicks, then tuck the spirals into the warmed rolls and serve.

FRANKFURTER-BACON SPIRALS

For the Strawberry Mix:

• 12 ounces fresh strawberries, sliced

• 2 tablespoons sugar

• 1 tablespoon finely chopped mint

For the Waffles:

• 2 cups flour

• 4 teaspoons baking powder

• 4 tablespoons salted butter, melted

• 1 teaspoon vanilla

• 1/2 teaspoon cinnamon

• 1 1/2 cups whole milk

• 2 ounces agave syrup

• 2 eggs

For the Cream Cheese Topping:

• 8 ounces cream cheese, at room temperature

• 1/2 cup powdered sugar

• 1 teaspoon vanilla

• Mint leaves, for garnish

In a medium bowl, toss the strawberries with sugar and chopped mint. Let the mixture sit for about 30 minutes, allowing the berries to release their juices.

To make the waffles, whisk together the flour, baking powder, melted butter, vanilla, cinnamon, milk, agave syrup, and eggs in a large bowl until smooth.

Preheat a waffle maker and cook the batter according to the manufacturer’s instructions, until golden and fully set. You should have about 6 full waffles. Cut each waffle into quarters.

In another bowl, beat the cream cheese with powdered sugar and vanilla until smooth and spreadable.

To Assemble:

Place one waffle quarter on a plate and top with 2 tablespoons of the cream cheese mixture. Add a second waffle quarter on top, followed by 1 tablespoon of cream cheese, 1/4 cup of the strawberries, and a fresh mint leaf for garnish.

STRAWBERRYCREAM CHEESE WAFFLES

They look nervous. And they should be!

Makes 8 servings ingredients

• 3/4 cup semi-sweet chocolate chips

• 4 tablespoons unsalted butter

• 1/4 cup sour cream

• 3/4 cup light brown sugar

• 1 teaspoon vanilla

• 2 eggs

• 1/2 cup flour

• 1 tablespoon cocoa powder

• 1/4 teaspoon baking powder

• 1/4 teaspoon salt

• Butter, for greasing pan

directions

Preheat the oven to 375°F. Lightly butter an 8 x 8-inch baking pan and set it aside. In a medium saucepan over low heat, melt the chocolate chips, butter, and sour cream together, stirring until smooth. Remove from the heat. Stir in the brown sugar and vanilla, then add the eggs one at a time, mixing well after each addition.

Fold in the flour, cocoa powder, baking powder, and salt until fully incorporated. Pour the batter into the prepared pan and spread evenly.

Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the pan on a wire rack before cutting into 8 squares.

Those look like bricks of joy! Heavy bricks.

UNPLUG HAVE FUN! &

Summertime is the best time for kids to disconnect and enjoy being outdoors.

Long, long ago, in a time before technology, children entertained themselves and played endlessly with nothing more than ... wait for it ... their imagination. They played outdoors for hours with friends, balls, jump ropes, buckets, chalk, bicycles, you name it! The level of creativity saw no limits in the minds of these children. While some families have plans for getaway vacations, there are those planning to stay home and scrambling for things their children can do. We’d like to share some ideas that don’t include technology or cost a boat load of money for that matter. The benefits of spending time outdoors and unplugged outweigh complaints about temperature or those annoying creepy crawlers. The added bonus is that many outdoor games secretly teach life skills. Technology is used only to confirm game rules.

Ready or not, it’s time to play! A day - or two or three - full of outdoor games will invoke a trip down memory lane for some adults, or a “this is great” thought for others. In either case, playing these games has tremendous benefits - young people can fully embrace human connection, get a break from the instant gratification associated with technical devices and social media, and enjoy some good wholesome, age-appropriate fun. Many adults admit they played many of their favorite childhood games well into their teen years, and still others say they relish in a good game of dodgeball or tug of war today. This list is not all-inclusive, but it certainly gets the games started!

“READY OR NOT, IT’S TIME TO PLAY!”

CHILDHOOD GAMES

TUG OF WAR - contest between two teams at opposite ends of a rope; each team trying to drag the other across a center line.

SACK RACE - stand in your sack, hold on to the top of your sack and hop as fast as you can to the finish line!

FREEZE TAG - each player freezes when tagged and can be unfrozen only by a player who is not yet frozen. Game ends when all players are frozen.

RED LIGHT GREEN LIGHT - shout “green light” and all players run towards you, shout “yellow light” and they are allowed to walk, but when “red light” is shouted, they must stop and freeze. If player moves at “red light”, they go back to start line.

MUSICAL CHAIRS - walk to music around a group of chairs containing one chair fewer than number of players, and rush to sit down when music stops. The player left standing in each round is eliminated.

KICK THE CAN - find players in their hiding spots and put them in “jail”. Once a player is “jailed” the only way to be freed is for another player to beat the “IT” person to the can and kick it.

DODGEBALL - team sport in which players on two teams try to throw balls and hit opponents, while avoid being hit themselves. Consider water balloons instead of balls on a hot day.

There are more great outdoor games. Get unplugged and get outside!

Sure, teaching a young child how to crack an egg or measure flour can test your patience—but hang in there. With a little trial and a fair amount of error, they’ll start to develop the fine motor skills that allow them to prep a recipe all on their own one day. The best part? They’ll gain confidence along the way, one scoop, stir, and sprinkle at a time.

Why Cooking with Kids is More Than Just Making Meals

Cooking together also taps into something a little magical—memory. The smell of cookies baking or chili simmering on the stove can instantly transport us back to childhood. That’s not just nostalgia talking—science backs it up. Our sense of smell is closely tied to autobiographical memory, especially memories formed early in life. So those sweet, savory scents? They’re more powerful than you might think.

The key is to start simple. Let your toddler play with mixing bowls, spoons, and measuring cups. These little moments of pretend play actually help build the fine motor skills needed for real kitchen tasks. Begin with small jobs—scooping flour, flattening cookie dough with a rolling pin—and gradually add more steps as your child becomes more confident.

ANIMAL Crackers

Ingredients:

• 1 cup and 2 tablespoons white flour

• 1/4 teaspoon baking soda

• 1/2 cup oatmeal

• 4 tablespoons honey

• 1/2 teaspoon vanilla

Steps:

• 4 tablespoons buttermilk

• 1/2 teaspoon almond extract

• 1/4 teaspoon salt

• 1/4 cup whole wheat flour

• 1/4 cup unsalted butter, room temperature

• Optional: add 1/4 teaspoon nutmeg or cinnamon

1. Preheat the oven to 400 degrees.

2. Put the oatmeal in a blender or food processor and pulse for about a minute, until it’s reduced to a rough powder. Add the ground oatmeal to the whole wheat and 1/2 cup of the white flour, baking soda and salt to the bowl of an electric mixer affixed with a paddle attachment, and turn on to mix. Add butter and blend on medium speed until the butter has been incorporated and the mix looks a little like wet sand. Add the buttermilk, vanilla, honey and almond extract and blend. If the dough looks too wet to roll, add the remaining flour 1/4 cup at a time until the dough forms a ball and pulls away from the sides of the blender.

3. Turn the dough out onto a piece of plastic wrap and flatten into a disc. Cover completely and chill in the fridge for at least one hour, up to overnight.

4. When ready to bake, preheat the oven to 400 degrees and place dough on a lightly floured surface (using the remaining 2 tablespoons of flour). Roll out until 1/8 inch thick. Cut out with desired cookie cutters and bake for five to seven minutes, based on your preference. Five minutes will get you a softer cracker, while seven will get you a crisp cracker.

Sonoita Labor Day Rodeo

The "Best Little Rodeo in Arizona" will feature more than 700 entries, with cash and buckles awarded to the top contestants from the Southwest.
