Fall is for great food, wine and pumpkin spice...

Welcome, fall! With the changing seasons comes a change in what we are craving, and with fall, that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of sitting down with Dan, the owner and chef at Vista Vino Modern Grill, and learned about what their fall menu will be boasting. Get your tastebuds ready, you are in for a treat! We also included a new cocktail recipe from Tyler, the genius mixologist behind the menu at Provision, for you to try at home.

The smells of fall brings memories to our minds of when our boys were small and wanting to help out in the kitchen. The aroma of cinnamon, apple,  pumpkin, chili and soups of any kind bring us right back to our table.

There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

The smell of freshly baked bread wafts through the air as you step into Vista Vino Modern Grill. It’s a small, intimate space with seating for just 50, but the restaurant’s warmth extends far beyond its walls.

The soft lighting, modern decor, and cheerful hum of conversation make it feel like a second home. For newcomers, it’s a welcoming spot; for return guests, it’s a beloved staple. Its upscale menu offers a unique dining experience with fresh, scratch-made dishes. At the heart of it is Dan Durkin, a Colorado native who’s passionate about bringing people together over good food.

Dan starts his day making the bread. He gets in early before the rest of his staff arrives.

“The best part of it for me is I really like the people that I work with,” he says.

Vista Vino, situated along Wilcox Street in downtown Castle Rock, has long been a favorite among locals. Its history is rich, having changed hands several times before Dan took over from the previous owner, who was retiring. Under Dan’s stewardship, the restaurant has become a place for community—a spot where neighbors gather, friendships are formed, and strangers are welcomed like family.

“It’s been really nice, meeting a lot of the people that come in, whether they’re regulars or it’s their first time,” Dan says. The kitchen is open behind the bar, allowing Dan to chat with those he serves dinner to.

Ready for a break from the snow, Dan left Colorado in the year 2000 to take a job in Singapore. What was meant to be a short stint turned into a 23-year adventure. There, he and his wife built a life and adopted their daughter.

When they decided to come back to Colorado, Dan recalls being amazed at how much the area had grown. “There’s a lot more

going on now,” he says. He continues saying that it’s been exciting to be a part of that growth, to watch this community flourish, and now to contribute to it in his own way.

Under Dan’s ownership, Vista Vino has taken on a new life. His focus is on scratchmade American bistro fare, with a menu that rotates seasonally to highlight the freshest ingredients available. Dan has built strong relationships with local growers, ensuring that every dish reflects the bounty of Colorado’s fresh produce.

“We’re on the edge of the biggest agricultural area in Colorado,” Dan says. He works closely with vegetable farmers, ranchers, and niche-scale produce like indigenous herbs, microgreens, and small-batch cheese makers.

There’s a joy for Dan in crafting a menu around what’s available seasonally. This month, specials include a braised lamb shank using Colorado lamb and infused with locally grown rosemary and a pumpkin mac and cheese.

As Dan looks ahead, he’s excited about what’s to come for Vista Vino. He envisions it as not just a restaurant but a cornerstone of the community—a place where people come to connect, to celebrate, and to savor good food and good company.

In the future, Vista Vino plans to host more special events and community gatherings. Exciting things are on the horizon as they work to expand and elevate their wine selection and pairing experience as well.

Vista Vino is a community hub where familiar faces and new friends come together over fresh, locally sourced dishes. With a focus on warmth and belonging, he aims to make every guest feel at home, turning each visit into a memorable experience.

INGREDIENTS

• 2 oz Coconut Washed Bourbon

• 1 oz Coconut Lemon Oleo

• .75 oz Acid Adjusted Pineapple Juice

• 2 oz Cabernet Sauvignon Float

• Garnish:

• Dried Coconut Flakes

INSTRUCTIONS

Coconut washed bourbon: Melt down 2 oz of unrefined organic coconut oil to liquid form and combine with 1 liter of Bardstown Origen Bourbon in a container. Stir every 15 minutes for 1 hour and rest in a refrigerator overnight. Strain through a coffee filter and bottle the mixture.

Coconut Lemon Oleo: Combine 125 grams of lemon peels with 125 grams of sugar into a vacuum sealed bag and rest overnight. Add lemon peel and sugar from bag, 250 grams coconut water (using the water to rinse the bag after emptying the vacuum seal bag lemon peel/sugar mixture to get any residual), and another 250 grams of sugar to a pot and bring to a simmer. Let cool and bottle.

Acid Adjusted Pineapple Juice: Combine 1 liter of pineapple juice, 32 grams citric acid powder and 20 grams malic acid powder. Whisk until the acids dissolve and bottle.

Method: Slice a lemon and use a slice to wet the rim of a rocks glass and coat with dried coconut flakes then add a large ice cube. Combine Coconut Washed Bourbon, Coconut Lemon Oleo and Acid Adjusted Pineapple Juice in a shaker tin. Add ice and shake to incorporate, chill, and dilute. Strain combined cocktail into the rocks glass. Top cocktail with a ¼ inch Cabernet Sauvignon float. Enjoy!

Chef Dennis Prescott Talks Falling in Love with Feeding People and the Connection Food Creates

Whether you know him from the Netflix hit Restaurants on the Edge or from his absolutely mouth-watering food photos as @ dennistheprescott on the ‘gram, this former-musician turned internationally-renowned Chef is an amazingly talented, thoughtful, and globe-trotting force to be reckoned with. When it comes to inspiration for creating experiences around food and your community, as well as creating travel bucket lists to some of the world’s most unique and delicious destinations off the beaten path, Chef ‘Dennis The Prescott’ is a culinary change maker whose feed you’ll want to feast on

Originally an aspiring musician, Canadian-born Dennis Prescott’s journey began while in university with a single invitation from another solo musician who asked him to tour with them around the US. This eventually took him to Nashville where they began making records and pursuing their musical dreams.

Yet, in the midst of all of this, Dennis was not taking care of himself — eating take out, dollar menus, etc, had become a way of life. A friend had a “come to Jesus” moment with him and stressed that he needed to start taking care of himself. Having no idea exactly what that meant or how to do so, the advice was simple: “You need to start eating better.”

The Start

“Go to the library and borrow some cookbooks,” his friend suggested. Dennis went to a nearby library and borrowed three books only to have his friend ask why he chose those in particular. Dennis remembers saying verbatim, “I don’t know? The guy on the cover looks kinda good looking, and I feel like I could probably pull these recipes off, and he seems really happy too!” As it turned out they were three books by Jamie Oliver; it’s just that he had no idea who Jamie Oliver was at the time.

Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment.

“I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment.

What eventually followed were 13 episodes over nine months where the Restaurants on the Edge team traveled to and filmed restaurant revivals that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland.

“When you get off the beaten path a little bit, you learn the difference between vacation and travel.

Travel Recommendations for Foodies

“Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.”

Dennis also highly recommends Costa Rica, Hawaii and Finland.

“Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.”

Restaurants on the Edge is important and meaningful to Chef Prescott because it tells stories of hope and joy and redemption around the kitchen. Oftentimes the food space can be very stressful, but he believes that at the end of the day, people just want to spend time with other people that they love.

One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’

Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there.

“Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.”
