Bamboozled by an “as seen on TV” display and fueled by feeling flush on payday, my husband bought a 7” Ginsu chef’s knife many moons ago. Celebrating Christmas while living in Hong Kong, we used it to trim the trunk of a gorgeous Fraser fir. The tree was ridiculously expensive, since it had been shipped from Vermont in a refrigerated container, but we were homesick and desperate to create a memorable holiday for our 3-year-old daughter Jane.
We lugged it back to our apartment in the back of a taxi and made a base out of cinder blocks (readily available in our neighborhood of Fanling, in the New Territories, where apartment buildings were flying up at record speed). The Ginsu knife miraculously axed through the 4-inch trunk and then performed like a champ back in the kitchen slicing a tomato.
Today, I grab it when I’m dicing or slicing and remember those early days with fondness. I did nick my middle finger once with it, but only have myself to blame.

Andrea Montobbio believes that catered dinners should be as beautiful, engaging and delicious as those served in the finest restaurants. Corners need not be cut, and the quality of ingredients should be paramount. In expanding the repertoire at Enzo Steakhouse & Bar, the team behind the Fayetteville powerhouse restaurant is bringing finesse and flavor to the
BuckHaven catering landscape, serving house-made pasta dishes, perfect risotto and gorgeous fresh vegetables at dinner parties, wedding receptions, fundraisers and corporate functions. Because, why should fine dining be confined to just four restaurant walls?
Chef Montobbio grew up in the small town of Capriata d’Orba in Northern Italy, where his family raised their own vegetables and made their own wine. He spent 20 years learning how to make pasta in Italy, bringing his skills to Asellina at Gansevoort Park Hotel on Park Avenue, and later to Atlanta’s Fifth Group Restaurants and STK Atlanta. In 2021, he felt he was at a creative crossroads when his friend and fellow native Italian Carmine Noce opened a conversation about starting a restaurant dedicated to their childhood memories.
The catering menu is a direct reflection of what they create in the restaurant, inspired by Italy’s many regions, each with a flavor profile that will drive the seasonal dishes. “The beauty of the food in Italy’s regions is that it’s based on what the ground provides,” says Chef. “Every part of Italy has a different climate, and it’s exciting to create dishes based on the way the sun hits a certain place or what kind of mountain the water comes from. All of those factors play into the uniqueness of the cooking. That’s what we want to bring to our catering.”
ENZO currently offers catering for parties of all sizes and ‘ENZO at Home,’ delivers executive chef Montobbio’s vibrant Italian cuisine every Friday for parties of two to six within a certain radius. Private memberships will be available in the coming weeks.

The Miyabi Koh 8” chef’s knife is Chef Sosa’s go-to for all things on the line: breaking down a tenderloin, filleting fish, chopping herbs and more. “The Miyabi Koh is the Ferrari of knives to me. It has seen me through all of my days as a chef and will continue to be my faithful companion. When I was a young chef right out of culinary school, back in the early 2000s, I saved all of my money to finally buy myself my first professional knife. As soon as I had enough, I rushed to the store. It was actually the man working at the store who suggested the Miyabi. To this day, I’m so grateful that he did. I needed a tool that could be a jack-of-all-trades; durable and versatile for all things on the line, from breaking down fish to chopping herbs. It has since been my “go-to” knife. It is perfect for all things and never fails to perform,” says Chef Sosa.

Chef Giancarlo uses a Japanesestyle knife with a good, solid blade. He emphasizes the importance of taking care of a beloved knife and sharpening it frequently. He has his sharpened at least once a week. Born in Peru, he moved to Florence, Italy when he was just 11 years old. He spent his adolescence watching and learning from his mother in the kitchen, which ignited his passion for cooking. After culinary school, LaredoRuiz worked in the kitchens of various restaurants throughout Florence and gained experience in making fresh pasta, breads, and seafood and the importance of utilizing local, seasonal ingredients.
Michel’s favorite knives are the set of four steak knives that he gives to the members of Arnette’s Chop Shop Club. The presentation is beautiful. Each knife pouch is equipped with four special rosewood and stainless-handled knives with full serrated blades and each handle is engraved with your choice of name. These member knife pouches are displayed at the main entrance of Arnette’s on a spectacular knife library wall. Members check in for their reservation and the Chop Shop team will collect the knives, as they become part of the members’ table side dining experience.
It could be said that while pastry chef extraordinaire Ami Dand was born into a bakery dynasty, she was destined to make her own mark on the Atlanta pastry scene.
Ami’s culinary journey began at a family-owned business in Smyrna, McEntyre’s Bakery. She started off buying pastry supplies for the business, then became a baker, and never looked back. Since then, the trajectory of her career has been nothing short of celestial. With Sea Island, St. Regis, and Legendary Events all under her belt, she currently is the executive pastry chef at Capital City Club, overseeing the pastry departments at both the Brookhaven and downtown Atlanta locations.
Her childhood memories are deeply rooted in baking. “It’s silly, but my favorite memory of baking with my mom is making Rice Krispies treats and chocolate chip cookies,” says Ami. “It’s a tradition I hope to have with my daughter starting soon.” Growing up, Ami would help her mom cook for holidays and special occasions . “I would roll out roti and make puris for pani puri,” remembers Ami. “I think that is why rolling out fondant comes easily for me.” Building memories is very important to Ami. Her daughter is still a little too young to help, but she enjoys watching. For Diwali, the Festival of Lights, Ami’s mom would prepare a big Indian feast before lighting sparklers in the driveway. “I hope to share this experience with my daughter, husband, and parents beginning this year.”
Ami tends to gravitate toward warm spices such as cinnamon, nutmeg and cloves. One of her favorite things to bake in the fall is carrot cake.
“I started to perfect my carrot cake from an old recipe I found stashed in a drawer at Anthony’s Fine Dining Restaurant,” says Ami. Her secret ingredient that adds depth of flavor and the perfect amount of moisture is pineapple juice. “I always use cream cheese icing for my carrot cake. That is my preference for making and eating!”
