Lolli was scared and struggling when Ellie Laks and Jay Weiner welcomed her into their arms and home at The Gentle Barn. She was a baby goat who was born in the dead of winter and, due to the terribly cold environment, unfortunately lost her back two feet to frostbite. A neighbor expressed their concerns to Laks and Weiner, and so they adopted the tiny malnourished goat. Her healing began at The Gentle Barn. She was given prostheses for her feet and a wheelchair so she could run and play with the other goats. Together with the help of those at The Gentle Barn, Lolli healed and recovered. And now, along with many other animals, Lolli helps people of all backgrounds who need healing and recovery from their own trauma. People from all walks of life can benefit from the unconditional love and peace these animals give.
The Gentle Barn is home to rescued animals of all kinds: horses, cows, pigs, sheep, goats, alpacas, turkeys, chickens, and a guinea fowl. Hurting humans can seek comfort with horses in equine therapy, cows in cow hugging therapy, pigs for rubbing bellies, goats such as Lolli, chickens for holding, turkeys to cuddle, and sheep to pet. Some animals don’t work with humans, but are on their own recovery.
The nonprofit was started in 1999 by Ellie and has served thousands of animals since. There are two locations, one in Christiana, TN, and one in Santa Clarita, CA. This August will be the nonprofit’s 26th anniversary, and they have seen a million people walk through their doors.
Ellie, a true animal advocate, has written two books since beginning her adventure and legacy with The Gentle Barn. The books give a unique inside look at the power of animals to heal and create positive change in people’s lives, and Ellie’s in particular. The two books are My Gentle Barn: Creating a Sanctuary Where Animals Heal and Children Learn to Hope and Cow Hug Therapy: How the Animals at the Gentle Barn Taught Me about Life, Death, and Everything in Between. The books are available on Amazon, Audible, and signed copies on the Gentle Barn's website.
We all can make the world a better place if we “vow to help those directly in front of us. If someone is hungry, feed them,” and if someone is lonely, “give them a smile,” says Ellie. Kindness is what “makes this a better place.”
This summer, The Gentle Barn will be having a fundraiser to raise awareness and support. The campaign’s goal is to raise $300,000, and to accomplish this, The Gentle Barn is partnering with Nashville Hotels, The Union Station, and Noelle. Every Monday from July to August during Conductor’s Hour, 6:30 p.m. to 7:30 p.m. The Bar Car at the Union Station will donate 100% of its profits from its featured and rotating cocktail to the animal sanctuary. Noelle contributed by offering their “Gentle Stay” package to those staying at the hotel, and also the Rare Bird and Trade Room bars at the Noelle are donating $1 from every featured cocktail.

With nearly forty college football offers, star quarterback George MacIntyre has made a strong impact on the recruiting scene, helping put Brentwood on the map. The eighteen-year-old Brentwood Academy alumnus committed to The University of Tennessee, Knoxville in January of his junior year and has since embarked on his new journey to playing college football. Sitting down with Brentwood City Lifestyle, MacIntyre details his career thus far.
TELL US ABOUT THE EARLY DAYS OF YOUR FOOTBALL CAREER.
I started playing football when I was young, but basketball was actually my first love. I played that year-round, then played football in the fall. I started playing flag in first grade and tackle in fourth. My dad was my coach, and I actually started off as a receiver. Once I got to tackle football in fourth grade, I started playing quarterback. During my sophomore year at Brentwood Academy, I really fell in love with football and the intensity of the game. My grandfather was the head coach for Vanderbilt University back in the 1980’s — and my dad and uncle both spent time coaching — so the game has always been in my blood.
WHAT IS YOUR FAVORITE PART OF BEING A QUARTERBACK?
Every play, there is pressure on you to do something — whether you’re leading the team or leading the offense — and there’s a lot of power to get out there and perform.
HOW HAS THE COMMUNITY AT BRENTWOOD ACADEMY HELPED YOU PREPARE FOR THIS NEXT CHAPTER AS YOU ENTER INTO SEC COLLEGE FOOTBALL?
Growing up in Brentwood, I always knew I would attend high school at Brentwood Academy — it was my dream as a kid to play football and basketball there. Being able to play quarterback for three years has been a dream come true in itself. Brentwood Academy has such a well-respected program with college coaches coming through constantly, and I was able to play a couple of different offenses to get ready for the college level.
WHEN YOU LOOK BACK AT YOUR HIGH SCHOOL CAREER, IS THERE A SPECIFIC MOMENT THAT WILL ALWAYS STICK OUT TO YOU?
One of my favorite plays was against Ensworth in my sophomore year. I threw an 8-yard game-winning pass to the end zone to my tight end, Griffin Cropp, and that’s a moment I’ll remember forever.
CONGRATULATIONS ON COMMITTING TO THE UNIVERSITY OF TENNESSEE! WHAT MADE YOU DECIDE TO BE A VOL?
It all starts with Coach Huepel — he has an awesome quarterback support system. I grew up a Tennessee fan, so having the opportunity to play football — and play quarterback — is another dream come true. My mom’s whole side of the family went there, so I’ve always been a fan. It’s very familiar. Since I’ve been here, it’s been everything I was promised. It's proven to be a true family. Coach Huepel has created an exceptional culture here, and I’m excited to add on to it and be a part of it!

It was the day after my first varsity star — a Saturday after week one of my sophomore year season. It was Coach Huepel himself who called, and he offered it to me right there. It was a surreal moment because about a month or two earlier, I probably would have told you that I would likely
WHAT IS ONE PIECE OF ADVICE YOU WOULD GIVE TO ANY ASPIRING COLLEGE ATHLETES?
I would say to make sure to get out there and do it yourself, because no one is going to do it for you. You’ve got to put yourself out there, go to the right camps, and be working hard. Trust your gut, trust your system, and put it all on film.

Stroll over to Catio Cat Lounge in Nashville to play, foster, or adopt a cat or kitten. This 501(c)(3) nonprofit organization takes in cats of all ages and needs. The cats roam freely around the lounge, with spots for napping, toys for playing, and treats for those on good behavior. There are places to hide and places to get sky-high, allowing the cats to feel safe and engaged. They have a room for special needs cats, such as those who are older, have medical issues and disabilities, or ones who get overstimulated.
An adamant animal lover and loyal employee, Kaitlin Cashion, loves working and spending time with these cute kitties. She loves “Being able to see the impact we’re making every day.” And says, “I get to see lives being changed every day with these cats.”
Since 2019, the cat lounge has placed over 6,000 kitties in loving forever homes.
Currently, there are approximately 90 cats listed for adoption. Since it is ‘kitten season,’ the lounge has its hands full of cats perfect for adoption.
Why choose a cat as a pet? Cats are easy to love, low maintenance, and great with people and families of all shapes and sizes. Cats each have a unique personality, flair, and temperament. They are a great way to teach responsibility and care.

If you are considering adopting, feel free to stop by the lounge, as they love walk-ins and inquiries. With seven employees on staff, you can chat with a member of the team for any questions, as well as spend time with the cats to find the proper bond and match for you. Usually, you will spend 30 minutes to an hour visiting with the cats to find the right suit. They also encourage pair bonding adoptions, meaning adopting more than one cat, usually two together.
When you find the kitty, the adoption process is simple. First, apply in person at the Catio, where one of the employees will be happy to walk you through the process. The method includes completing the application, acknowledging the Catio’s Adoption Contract, Conducting Reference Checks, and submitting it to the adoption manager. Once the adoption manager approves, then you are all set to take the kitty home, and an employee will conduct a follow-up in two weeks to see how the cat is acclimating.
While all Catio cats are spayed and neutered, if you adopt a cat from an outside source, ensure that it is spayed and neutered. This helps keep the cat healthy and also protects against long-term issues associated with overpopulation.
This fall, the Catio has some up-and-coming events. Catio plans on hosting its biannual Vendor Fair. Additionally, every few months, the Catio hosts various events, ranging from beer tastings to family-friendly activities and other fun-filled events.

Chattanooga native Jordan Thomas is the heart behind The Jordan Thomas Foundation. Named a Top Ten CNN Hero of the Year in 2009 and Tennessee Ambassador of Goodwill in 2020, the Nashville resident is celebrating the 20th anniversary of the foundation. With his whole family building roots in Music City, Jordan decided to make the move to Nashville eight years ago. At only sixteen years old, he created The Jordan Thomas Foundation — a non-profit providing prosthetic limbs to children who otherwise couldn’t afford them — after a life-changing boating accident where he lost both of his legs below the knee. Not only did his accident remind him how precious life truly is, but it gave him a whole new perspective and gratitude for being alive. He knew it would take time, but was confident in his access to prosthetics to help lead him to things he enjoyed before the accident. Twenty years since its inception, he continues to use his voice to stand up for children who are in need and has served over 200 families in Middle Tennessee. Jordan had never been a stranger to philanthropics; Growing up, his parents always instilled the ideals of giving
back to others. After his accident, Jordan was aware that he was in a position where he would never have to worry about gaining access to prosthetics and saw firsthand the financial burden families face through the process. Therefore, it was a no-brainer that he would step in and add action to the process, resulting in The Jordan Thomas Foundation.
“It simply started with one kid,” Jordan shares, on the start of his foundation. “I learned he was sedentary and in a wheelchair because of financial limitations his family had. I knew we had to do something about it… then it just expanded beyond that. It’s grown into so much more than I’ve ever imagined.”

Fighting for change — even on the state level — Jordan has advocated for insurance companies to be required to cover prosthetic devices for those in need. Due to the low number of manufacturers that exist in the world, prosthetics are both expensive and scarce. It has been Jordan's goal to manufacture his own prosthetics one day, and he is confident this huge next step will be coming to fruition soon!
“Many people are unaware of this issue because it only happens to such a small portion of the population… but the amazing thing is once they learn about it, [they feel it’s only] common sense,” Jordan explains.
The Jordan Thomas Foundation actively facilitates community support and relatability in their process. Finding it best to introduce families to the community as early as possible in their journey, the team behind the foundation links families to a pre-existing family that has had a similar experience with limb loss so they can feel seen, feel heard, and have the opportunity to learn from one another. Excited to continue to put an emphasis on the community elements and mental health aspects of the foundation, Jordan is adamantly working to provide resources and support for families — and even earning his Masters Degree in Clinical Mental Health. Continuing his strong advocacy for children who suffer from limb loss all over the world, he is determined to help make a change.
“It’s a huge part of my healing journey,” Jordan shares, speaking on the lasting impact his foundation makes on so many people’s lives. “I spent a lot of time trying to make sense of such a tragic event — at such an important time of my life — so when I’m able to see the impact and see the two-hundred kids that we’ve served, it gives me complete confirmation as to why I exist on this planet.”
Apart from the foundation, Jordan has always had a passion for golf. Learning how to play at only six years old, he had to adjust his game after the accident, but he never let that stop him! With several awards and medals to his name, Jordan was just the first double-amputee to qualify for the Tennessee State Amateur and also competed for the third time in this year’s U.S. Adaptive Open. He thoroughly enjoys getting out on the course and sharing his story while educating others about The Jordan Thomas Foundation and their work behind it.

HOW ONE LOCAL FAMILY IS SHARING THEIR JOURNEY OF LOVE AND HOPE
Most people know Chuck Wicks as a country music artist and radio personality, but his roles as husband and father are his most cherished. Recently, he and his wife Kasi decided to share the joys and struggles of raising a child on the autism spectrum.
“Tucker was diagnosed just before his second birthday,” says Kasi. “My first reaction, honestly, was devastation. I was so fearful of the unknown.”

She had a feeling something wasn’t right when Tucker, now 4, wasn’t hitting certain milestones, such as pointing, clapping, or responding to his name.
Adds Chuck, “I was concerned like any parent would be, but I just looked at my boy and felt love - the kind of love that can’t be shaken. As his Dad, I’m here to love him regardless and give him every opportunity in life to excel the best way he can. I’m his father first, but he’s also my guy, my best friend.”
Since Tucker was classified as non-verbal, Kasi and Chuck wanted to find the best ways to help him communicate. They enrolled him in Applied Behavioral Analysis (ABA) therapy shortly after his diagnosis.
“It's a type of therapy that is used to really understand how behavior works and how it’s affected by the environment,” says Kasi. “It also helps give an understanding of how learning takes place with different individuals.”

Tucker attends ABA five days a week for six hours, and during that time, he also participates in speech therapy, occupational therapy, and feeding therapy. “We decided on this program after lots of research and talking to other parents and friends of ours who were going through similar situations,” she says.
During the two years of consistent therapies, the couple has seen an increase in Tucker’s verbalization of specific words, as well as a significant improvement in his social skills. “ABA has helped him find other ways to communicate through words, social interactions,
and his AAC device (a tablet that he can choose pictures and words to communicate with),” says Kasi.
One of the goals of sharing their experiences is to let other parents know they’re not alone. “We can help others by sharing different therapies we are doing or tactics that maybe someone else didn’t think of or hear about,” says Chuck. “We are also watching and learning from what others are doing and constantly researching how we can help our boy.”
Another goal is to let parents know that while it’s okay to be sad or fearful at times, an Autism diagnosis does not mean life
is over. “Tucker has changed who we are to the core,” says Kasi. “We look at life so much differently and are so appreciative of the many blessings that we do have in our lives. We celebrate so many more ‘little’ wins these days.” And in the end, she says, they feel like the biggest wins.
In many ways, Tucker is just like any other child. His favorite TV shows include Toy Story 2 and 3, CoComelon , and Monsters Inc. “More than anything, though, he loves being outside, playing with a water hose or playing chase with his cousins, Memphis and Navy,” says Chuck.
“One smile from our boy and our day is made. Luckily, he smiles and laughs a lot, and he absolutely loves his Mama, Daddy, and sister, Avery.”
The couple’s ultimate goal is to have healthy, happy, and successful kids. “We are a house full of love, faith, and family,” says Chuck. “Jesus is in our lives and in all of us. We give it all to Him.”

Hammers and High Heels Event Helps Build Home for Local Family
Founded in 1976 as a Christian organization, Habitat for Humanity has helped more than 62 million people in countries around the world gain access to decent housing by building modest-sized and affordable homes alongside the families who will live in them. Habitat for Humanity Williamson-Maury has been serving our area for over thirty years, and recently created a pathway to homeownership for a local family by offering them the opportunity to purchase a home with an affordable mortgage.
Brentwood Lifestyle was privileged to speak with Bree DeMoss, the marketing and events manager for Habitat for Humanity Williamson-Maury, to learn more about their mission and their 16th annual Hammers and High Heels celebration.
“Hammers and High Heels is our signature fundraiser,” Bree says. “It’s tied to our Women Build program, where we really empower women volunteers to come out and help build a single mother’s home. All of the money raised goes toward purchasing building
supplies and covering construction costs. This event has really grown and taken off, especially over the past couple of years.” This year’s celebration achieved a record-setting fundraising amount. “We just crossed the $200,000 mark, and that was a huge milestone for our organization. It was just truly elevated, and we hit a lot of our goals. We were very excited.”
Bree has been with Habitat for Humanity since 2021, and she’s also a past Habitat volunteer. “I started getting involved in college.
I’m originally from Pittsburgh, and I came down south and volunteered for two spring break trips. I fell in love with the mission, and as soon as I saw a job opening at this affiliate, I jumped in. I absolutely love it.”
When asked what compels people to become involved with Habitat, Bree says,
“It’s definitely the stories of the people we’re building the homes for. At our events, we share videos about where those people have been, what led them to Habitat, and some of the struggles that they've had. Home is something that resonates with people. It’s a necessity. It’s a basic human need. You want a safe place to come home to. The people who come to us don’t have that, and it makes life really difficult, especially with the rising cost of housing. Something so basic can eat up so much of a family’s monthly budget – they might have to choose between paying rent or putting food on the table for their kids. Housing touches so many issues that people care about. It contributes to health and safety, to child well-being, and to helping kids do better in school.”
Alarriona S. and her daughter are the beneficiaries of this year’s event, and she shared her appreciation for Habitat for Humanity in a video. “I'm so thankful and grateful for such an incredible opportunity. Not just about getting a new home, but knowing that there are people out there who are so supportive of my journey, I appreciate everybody,” says Alarriona. “I honestly don’t know what I’d be doing without this experience. I want to say thank you to everyone who has been a part, and will be a part of our journey. Thank you for your time, your effort, and your donations. I’m just glad that there are so many kind and selfless people out there rooting for my personal success.”
The theme of this year’s Hammers and High Heels event was Seasons of Hope, meant to emphasize how the generosity of volunteers and donors will reach beyond the present day and touch generations. “It’s not just a onetime transaction. This house will be with this family for decades, and that impact is going to be felt for years to come,” Bree says. “It is a lifetime legacy, and it’s unique to Habitat.”

When Dr. Timothy McNutt, Sr., became a dentist 37 years ago, he had no idea that he was laying the groundwork for his sons' careers. Today, Dr. David McNutt works alongside him at McNutt Pediatric Dentistry, and Dr. Tim McNutt, Jr., works with both adults and children at his own practice, Richland Creek Family Dentistry. Another son, Jeremy McNutt, is also involved. With his master's degree in IT, he has provided strategic technology guidance and support.
Watching their father practice dentistry allowed David and Tim Jr. to recognize the importance of “care” in healthcare. They emulate that in their own careers.

For the Dog Treats:
• 2½ cups whole wheat flour (300 grams)
• 1 large egg (50 grams)
• 1 cup peanut butter (270 grams)
• 1 cup water (227 grams)
• 2 tablespoons honey (43 grams)
For the Frosting:
• 2 tablespoons peanut butter (34 grams)
• 1 tablespoon honey (21 grams)
• 1/3 cup cornstarch (37 grams, can also use potato starch or arrowroot powder)
• 3-4 tablespoons hot water (43-57 grams)

instructions:
• Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
• In a large bowl, combine flour and the egg. Add the peanut butter, water, and honey, and stir until you have a stiff dough. The dough becomes very firm and sticky. You may need to use your hands or the paddle attachment on your mixer.
• (2½ cups whole wheat flour, 1 large egg,1 cup peanut butter,1 cup water, 2 tablespoons honey)
• • On a lightly floured surface, roll out the dough about ½-inch thick and use a cookie cutter to make fun shapes. The treats barely spread and rise, so get creative with your shapes.
• Bake for 18-20 minutes, until golden. Once done, set aside to cool. (If you have smaller cookies, use less time; otherwise, the bottom might burn.)
• To make the frosting, combine the peanut butter and honey in a microwavable bowl, and heat in the microwave in 15-second increments, stirring in between, until melted.
• Add the melted peanut butter mixture to the cornstarch and stir until just combined.
• (1/3 cup cornstarch)
• Slowly add in the water 1 tablespoon at a time until you have reached the consistency that you would like. For a thinner frosting, add more water.
• (3-4 tablespoons hot water)
• Add the frosting to a piping bag and pipe designs on top of each dog treat.
• Frost the treats with the peanut butter/honey mixture for an even more tempting cookie.

With new bars and restaurants opening across Middle Tennessee every day, it’s been harder than ever for any one bar to truly stand out. Many places blend together, offering the same ambience, menu, and specialty cocktails. However, the recently opened Play Playground breaks that mold. It’s not just another bar in downtown Nashville, it’s an interactive and lively experience that proves even in a city that’s known for its bars, originality turns heads.
The genius behind Play Playground is Jennifer Worthington, CEO and Co-Founder of Play Social. Prior to bringing Play Playground to Nashville, Jennifer spent several years of her career in film before transitioning into opening the infamous Coyote Ugly Saloon in Las Vegas. With this being her first bar in Nashville, she hopes to bring friends, family, and strangers together through the interactive nature of the bar.
“I was really intrigued by this notion of the loneliness epidemic and how people don't have friends anymore and people have lost community, and we really set out to design something that encouraged social interaction,” Jennifer explains. "We encourage people to simply interact with one another other by creating an environment that fosters human interaction."
This is actually the second location of Play Playground, with its first location being in Las Vegas. Located on 2nd Avenue, right off of Broadway, this bar is a multi-level immersive experience that offers over-the-top challenges and tactfully analog games that will push you out of your comfort zone, and one of the best rooftops in Nashville. A night out here transports you back to the carefree joy of childhood.
“The rooftop is so amazing,” Jennifer gushes. “It is unlike anything else in Nashville. People are coming for the game floor, the third floor, which is awesome, but we really are excited to get the word out about the roof. Obviously, the view is insane, but just from a design perspective, there's nothing like it in Nashville, and I think we have the best rooftop view in the whole city.”
Another aspect that sets Play Playground apart is that it is 13 and up before 7 p.m., allowing for the whole family to join in on the fun.
“When we launched the concept, we were 21 and up at all times,” Jennifer explains. “"Last summer in Vegas, we noticed a big trend. Tons of parents were coming in with their teenage kids. These teens weren’t interested in arcades or trampoline parks anymore. They were looking for something more elevated, more grown-up. At the same time, their parents were trying to find new ways to connect and bond with them. So a couple of months ago, we decided to test the idea in Vegas, and it turned out to be a huge success."
"What really stood out to us, and felt incredibly rewarding, was seeing the dynamic shift in real time. At first, the teens were a little standoffish, not totally engaged with their parents. But within just five or six minutes of playing the games together, everything changed. Suddenly, they were laughing, high-fiving, and totally immersed in the experience together.”
In the upcoming months, they plan to start hosting game nights, leagues, and a variety of themed events, adding even more excitement to the experience.
“It really is just about having good old-fashioned fun and laughing with the people that you're with,” Jennifer says. “And to me, that brings people together and creates memories. And we really are in the memory-making business.”

Summertime is the best time for kids to disconnect and enjoy being outdoors.
Long, long ago, in a time before technology, children entertained themselves and played endlessly with nothing more than ... wait for it ... their imagination. They played outdoors for hours with friends, balls, jump ropes, buckets, chalk, bicycles, you name it! The level of creativity saw no limits in the minds of these children. While some families have plans for getaway vacations, there are those planning to stay home and scrambling for things their children can do. We’d like to share some ideas that don’t include technology or cost a boatload of money for that matter. The benefits of spending time outdoors and unplugged outweigh complaints about temperature or those annoying creepy crawlers. The added bonus is that many outdoor games secretly teach life skills. Technology is used only to confirm game rules.
Ready or not, it’s time to play! A day - or two or three - full of outdoor games will invoke a trip down memory lane for some adults, or a “this is great” thought for others. In either case, playing these games has tremendous benefits - young people can fully embrace human connection, get a break from the instant gratification associated with technical devices and social media, and enjoy some good wholesome, age-appropriate fun. Many adults admit they played many of their favorite childhood games well into their teen years, and still others say they relish in a good game of dodgeball or tug of war today. This list is not all-inclusive, but it certainly gets the games started!
CHILDHOOD GAMES
TUG OF WAR - contest between two teams at opposite ends of a rope; each team trying to drag the other across a center line.
SACK RACE - stand in your sack, hold on to the top of your sack and hop as fast as you can to the finish line!
FREEZE TAG - each player freezes when tagged and can be unfrozen only by a player who is not yet frozen. Game ends when all players are frozen.
RED LIGHT GREEN LIGHT - shout “green light” and all players run towards you, shout “yellow light” and they are allowed to walk, but when “red light” is shouted, they must stop and freeze. If player moves at “red light”, they go back to start line.
MUSICAL CHAIRS - walk to music around a group of chairs containing one chair fewer than number of players, and rush to sit down when music stops. The player left standing in each round is eliminated.
KICK THE CAN - find players in their hiding spots and put them in “jail”. Once a player is “jailed” the only way to be freed is for another player to beat the “IT” person to the can and kick it.
DODGEBALL - team sport in which players on two teams try to throw balls and hit opponents, while avoid being hit themselves. Consider water balloons instead of balls on a hot day.

Why Cooking with Kids is More Than Just Making Meals

There’s something truly special about inviting your child into the kitchen—not just for the cookies or cupcakes, but for the confidence, creativity, and connection that come with it. Cooking with your children isn’t just a fun way to pass the time; it’s an opportunity to build lifelong skills and memories that stick.
Cooking together also taps into something a little magical—memory. The smell of cookies baking or chili simmering on the stove can instantly transport us back to childhood. That’s not just nostalgia talking—science backs it up. Our sense of smell is closely tied to autobiographical memory, especially memories formed early in life. So those sweet, savory scents? They’re more powerful than you might think.
The key is to start simple. Let your toddler play with mixing bowls, spoons, and measuring cups. Begin with small jobs—scooping flour, flattening cookie dough with a rolling pin—and gradually add more steps as your child becomes more confident.
It won’t be perfect. Embrace the mess, stay patient, and focus on the fun. A dash of encouragement and a sprinkle of praise go a long way in keeping your little chef engaged and excited.
Over time, you’ll see the magic unfold: a child who’s not only learning how to cook but also growing more independent, capable, and proud of what they’ve created. And who knows? Maybe one day, they’ll pass those same recipes—and memories—on to their own kids.
• 4 tbsp buttermilk
• 1/2 tsp almond extract
• 1/4 tsp salt
• 1/4 cup whole wheat flour
• 1/4 cup unsalted butter, room temperature
• Optional: add 1/4 tsp nutmeg or cinnamon
1. Preheat the oven to 400 degrees.
2. Put the oatmeal in a blender or food processor and pulse for about a minute, until it’s reduced to a rough powder. Add the ground oatmeal to the whole wheat and 1/2 cup of the white flour, baking soda and salt to the bowl of an electric mixer affixed with a paddle attachment, and turn on to mix. Add butter and blend on medium speed until the butter has been incorporated and the mix looks a little like wet sand. Add the buttermilk, vanilla, honey and almond extract and blend. If the dough looks too wet to roll, add the remaining flour 1/4 cup at a time until the dough forms a ball and pulls away from the sides of the blender.
3. Turn the dough out onto a piece of plastic wrap and flatten into a disc. Cover completely and chill in the fridge for at least one hour, up to overnight.
4. When ready to bake, preheat the oven to 400 degrees and place dough on a lightly floured surface (using the remaining 2 tbsp of flour). Roll out until 1/8 inch thick. Cut out with desired cookie cutters and bake for five to seven minutes, based on your preference. Five minutes will get you a softer cracker, while seven will get you a crisp cracker.
