I love food and drinks. The first place we took my newborn baby was a new café in our neighborhood. I’ll give you a long list of brewery recommendations—complete with favorite pours—whether you ask for it or not. I definitely overused the hashtag “#foodtour” on Instagram. I know you’re thinking, “Tell me you’re a Millenial without telling me you’re a Millenial.” But as I said, I love food and drinks.
You can safely assume we had a lot of fun putting together this issue. Boerne and the Hill Country lack nothing when it comes to great places to dine out, grab a drink, or partake in other food-related fun, so there was no shortage of possibilities. Narrowing down our selection of stories turned out to be the most challenging part, but it all came together like a memorable meal—some familiar favorites with a few surprises thrown in.
We loved getting to know a few producers who take great pride in bringing us delicious, hyper-local food to enrich our meals and lives (“Cultivating Boerne’s Food & Life,” p. 40). We also got to know the genius taking cocktails to new heights at one of Boerne’s poshest spots (“Design & Wine,” p. 34).
Speaking of surprises: did you know you can find mushrooms in coffee (“Shroom Boom,” p. 26)? And that even your pets can get in on the gourmet experience? You’ll love to amuse Fido’s bouche at a new spa and boutique that’s so much more than bubbles (“Welcome to the Barkery,” p. 58).
Now that our appetites are sufficiently wet, let’s start the proverbial dinner. Whether you’re enjoying dishes this month at the finest restaurants or in the coziness of your own table, we hope you find yourself surrounded by friends and loved ones, savoring each bite and each moment together. Let’s live up to the culinary challenge set by chef and restauranteur Fernand Point: “If the Divine Creator has taken pains to give us delicious and exquisite things to eat, the least we can do is prepare them well and serve them with ceremony.”

The floors of the old Boerne Star office are newly sanded, and Andrew “Karate Kid” Missick is joyfully kicking up clouds of concrete dust with childish abandon. Mom and Dad Missick (a.k.a. Chris and Laure) work to corral their 7-year-old boy and little sister Audrey while simultaneously casting a vision for their future tasting room. It is a work in progress, and it is a family affair.
“We want to create a family-friendly space for people to experience high-end Texas wines,” Chris explains as we walk towards a stand of oak trees behind their future tasting room on N. School Street, just off Boerne’s Main Street.
The Missick’s new venture is a far cry from home. Chris grew up in California and fell in love with winemaking while attending law school near Napa Valley in Sacramento. Chris met Laure in her native Toulouse in southern France, where wine and winemaking are a way of life.
After an initial stint in bankruptcy law in California, Chris and Laure took their love of wine to the Finger Lakes region of upstate New York. They joined Chris’s parents and brother in the purchase in 2011 of a local winery, Villa Bellangelo, which they rebranded in 2021 as Missick Cellars.
Chris threw himself into the craft of winemaking in a region famous for producing some of the best Rieslings outside of Germany. He took on the role of chief winemaker in 2015, planting new grape varietals like Chenin Blanc and establishing a traditional sparkling wine program. The result was dozens of 90+ rated wines and a 2018 designation by Wine & Spirits magazine for producing one of the top 100 wines in the world.
Selling their New York winery and moving to Texas was a literal step of faith for the Missicks. Various challenges got them thinking about a move, but the disruption of the COVID-19 pandemic was a turning point.
“I no longer felt a cultural alignment with where we were living,” Chris says. “It happened in big ways and small.” The Missicks began researching and traveling to other American wine-growing regions, and that work included a visit to the Texas Winemakers Symposium in January of 2022. “That was the week I discovered Boerne.”
Moving to Texas was about more than just wine. It was a family decision, including what it would be like to come here with their children. “We prayed about it a lot,” Chris recalls. After six months, a couple of visits, and various “signs of confirmation,” Chris and Laure decided to relocate their family and Missick Cellars to Boerne in 2023.
The Missicks see tremendous opportunity in their new home state. They point to a long growing season and expansive array of grape varietals as part of the exciting canvas of Texas winemaking. “We are excited to focus on making Texas wines. There is so much potential here, so many varietals. We didn’t relocate to Texas to make New York wines.”
The Missicks are excited to bring their heritage and experience to the Texas Hill Country’s vibrant and growing viniculture, feeling like they fit in well. “Our emphasis is first on family and an approachability to wine,” Chris explains. “We want to be distinctive from larger, more commercial experiences that people often have.” Laure adds, “We are serious about wine but without the pretension.” Laure’s French heritage informs this ethic. “What we are as winemakers,” she says, “is really making a wine that complements what’s on the table.”
As a winemaking family, the Missicks also believe there is room to make the wine industry and winery experience more family-friendly. They point to local craft breweries as a model, where families gather and enjoy food and drink in a communal atmosphere.
They are also excited to introduce viniculture to the next generation and offer wine nerds opportunities to get their groove on. Chris and Laure plan to give presentations on sparkling wine production using a traditional method for those who want to explore a niche of wine that many folks aren’t familiar with. “We are an owner and winemaking family. We intend to be in the tasting room regularly to meet with people who want to come and learn.”
Missick Cellars plans to open its tasting room on N. School Street soon, sharing a dream of making and sharing ultra-premium wines without the pretense. “We are excited for our neighbors to come and taste authentic and delicious wines in a family-friendly atmosphere,” Chris says. “We want them to feel welcome, just like we have felt welcome in Boerne.”

Mushroom coffee might sound unusual at first, but it’s quickly gaining popularity among wellness buffs and coffee lovers alike. By combining the rich, bold flavor of traditional coffee with the health benefits of medicinal mushrooms, this unique brew offers a new way to start your day.
At its core, mushroom coffee is regular coffee blended with powdered medicinal mushrooms, like lion’s mane, chaga, reishi, or cordyceps. These mushrooms have been used in traditional medicine for centuries, particularly in Asia. Now, they’re in grocery and health-food stores everywhere.
So whether you’re looking for a healthier alternative or just curious about new trends, let’s get to know this new way to wake up.
One of the biggest appeals of mushroom coffee is its more balanced energy boost. While caffeine alone can sometimes lead to a crash later in the day, the adaptogenic properties of mushrooms help regulate your body’s response to stress, offering sustained energy and improved focus. The studies that have been done focus on mushroom supplements, not coffee. Plus, some mushrooms can have adverse effects, so make sure you talk with your healthcare provider before you add a new element to your morning routine.
It’s Dark Roasts and Sweet Rides at this Early Morning Meet-Up
On the second Saturday of every month, car lovers of all ages grab their Java starters and gather at Cars & Coffee. Over the years, the event held in the Six Flags Fiesta Texas parking lot has become a staple in the local automotive scene. What started as a small gathering has evolved into a major event— almost 3,000 cars pulled up for the April meet-up. You’ll find everything from classic American muscle to exotic import supercars and everything in between.
The event is a haven for car enthusiasts, offering a unique opportunity to showcase their prized vehicles, connect with fellow car lovers, and enjoy a cup of joe. The number of dedicated attendees truly showcases the strength of the automotive communities in the San Antonio metro area, whether you are into JDM or are working on rebuilding a vintage classic. Don’t have a flashy car to show off? That’s never a problem. Everyone is welcome to check out the rides and make friends.
Cars & Coffee is not just for show, though. Nonprofits are frequently featured. At previous events, they have worked with organizations like the Kristine Meza Foundation, the U.S. Marine Corps’ Toys for Tots, and Boerne’s Cars & Community, Inc.
When you head out to the show, the earlier, the better. Make sure to get there before 9:15 a.m.. Otherwise, you’ll have to pay the Six Flags parking fee. And if you do have a car you want to show off, keep it safe and family-friendly (i.e., no burnouts or loud music) so that everyone can have a good time.

Home design pairs well with cocktails and wine. So well, in fact, that Kelly and Pat Scully just had to bring it to Boerne.

Kelly and Pat Scully have always had an eye for things that look beautiful and a palette for things that taste delicious. Inspired by a trip to Chicago, they knew they would one day pair their love of interior design with their love for fine food and drinks. “I could do that and change the way we do design… to give people a wonderful experience,” Kelly reflects.
Indulge is the realization of that dream, a space that combines the elegance of a wine bar with the creative energy of a design studio, Finishing Touches. Since opening in February of 2021, their wine bar-design showroom concept has become a distinctive addition to the Boerne community.
Scully spent considerable time searching for the ideal location that could accommodate her hybrid vision—a space that was not only a wine bar but also a showroom, design center, color studio, office, and warehouse. “Fruition takes time,”
Kelly acknowledges.
Indulge has established itself as a unique destination with a “dark, moody, and high-end vibe” that appeals to both wine enthusiasts and design aficionados. The atmosphere reflects the Scullys’ attention to detail, from the carefully curated decor to the thoughtfully selected bar menu. Every element of Indulge is designed to create an immersive experience where guests can relax with a glass of wine while exploring the latest trends in interior design. Even the bathrooms are on-brand.
The community’s response has also been highly positive, with locals embracing Indulge and welcoming the Scullys wholeheartedly. “Boerne has the best people,” Kelly says. “I’ve honestly had people say, ‘We want to support you and make you successful.’”
Since the doors of Indulge first opened, Alan Matye has been blending drinks and creating memorable experiences for guests. Matye's path to Indulge came through a lucky discovery. "I have been a bartender for nearly 15 years, and along the way, I worked with our GM, Sara," Matye recalls. "I saw, scrolling through Facebook, that a mutual friend of ours had posted about how excited he was about an up-and-coming wine bar called Indulge. So I looked up Indulge on Instagram and saw that Sara had liked all the posts. I assumed she was the GM, so I reached out and asked if they were hiring! The rest is history."
Matye explains the appeal like this: "Indulge is unique because of the scale of what is offered. Not only are you in a beautiful and meticulously designed space, but we also offer a carefully curated international tapas menu, which lends itself very effortlessly to our wine and cocktail selections," he says. "It is rare to find a wine bar that also offers a full spirits menu as well as a small yet exciting cocktail menu!"
Matye's passion for Indulge and his work is evident in his approach to the craft. "I enjoy making all cocktails, to be honest," he shares. "I think the variety and spontaneous nature of what people look for is what keeps it exciting. It's not the same thing every day!"

Joshua Creek Ranch is known as a world-class hunting lodge and sporting resort with luxury resort amenities and warm Texas hospitality. But the five-star guest experiences over the last 35 years at this Texas Hill Country gem simply wouldn’t be as noteworthy without talking about the food.
No matter how you slice it (pun intended), great food is a big part of what makes Joshua Creek Ranch so special. Here are a few guest-favorite recipes from the Hunter’s Harvest cookbook.
ingredients
• 4 pheasant breasts, slightly pounded
• Cooking oil
• 1 cup flour, seasoned with salt and pepper
• ½ cup chardonnay
• ½ cup toasted pecans or sliced almonds
• ¼ cup each red, green, and black grapes, halved
• ¼ cup red bell pepper, chopped
• ¼ cup parsley, chopped
• ½ cup feta cheese, crumbled
directions
Heat oil in a saucepan. Dredge the pheasant in seasoned flour and fry in oil to brown. Place in a baking dish, add Chardonnay and cover. Bake in 325° oven for 10-15 minutes. Place breasts on plates. Top with the Chardonnay Sauce* and add a sprinkling of nuts, grapes, bell pepper, parsley, and feta.
ingredients
• 2 cups Chardonnay
• 4 cups heavy cream
• 2 tablespoons chicken base
• Roux, to thicken
• Salt and white pepper to taste
directions
In a saucepan over medium heat, reduce white wine to ½ cup. Add the cream and chicken base. Bring to a simmer and let reduce by about half. Add roux to thicken, if necessary. Season to taste.

• Cooking oil
• Buttermilk
• Eggs
• 2 pounds buttermilk pancake mix
• 2 tablespoon salt
• 1 ½ cups black pepper
• 3 tablespoons granulated garlic
directions
Cut the quail in half lengthwise, removing the backbone. Place halves in a bowl and cover with buttermilk, and let soak in the refrigerator for at least two hours. Mix the remaining buttermilk and eggs to make a wash. Combine pancake mix, salt, pepper, and granulated garlic, mixing well.
Heat the oil to 320°. Dip the quail in the buttermilk wash, and roll the quail in the seasoned flour mix. Fry until golden brown (about 5-7 minutes). Use a thermometer to ensure that the temperature remains at 320° as you cook, and fill the skillet only half full of quail to avoid a drop in the oil temperature. Serve immediately.

• 3 tablespoons green peppercorns
• ¼ cup cabernet sauvignon wine
• 1 cup veal demi-glace
• ½ cup heavy cream
• ¼ cup parsley, chopped
• 1 teaspoon green peppercorn juice
• 1 teaspoon cracked black pepper
• Salt to taste

Melt the butter in a large saucepan. Add the onions and cook until they are nearly tender. Add garlic and peppercorns and cook for one minute. Deglaze with wine and then add demi-glace and heavy cream. Let simmer until reduced by one-third. Then, add the remaining ingredients and simmer for about five more minutes. Season with salt. Heavy cream can be added to adjust consistency.
Drizzle sauce over seared venison medallions and serve.
During hunting season, the professional chefs at Joshua Creek Ranch are busy cooking three freshly prepared meals daily. The format is “lodge-style,” where all guests are served the same thing at the same time. Weather permitting, lunch is set up on the oak-canopied patio at Cypress Lodge. Breakfast and dinner are typically served fireside in the rustic, elegant, and cozy dining room inside Cypress Lodge or Branch Haus Lodge.
Specializing in wild game and regional favorites, the menu is a unique combination of southern comfort food and gourmet chef cuisine. One thing is for sure: you will never leave hungry. “Food is a big part of our end-to-end guest experience. It’s not uncommon for repeat visitors to arrive craving some of our
featured recipes from the last 35 years,” says Ann Kercheville, Vice Chairman and President.
In addition to the lodge dining program, Joshua Creek Ranch also features banquet dining for group events and private dining options for guests staying in multiple rental houses located around the property. In the summer season, the Ranch showcases a variety of dining options for resort guests, including a casual poolside menu at Shooters Cantina, Wednesday Steak Night, and gourmet 3-course dinners at Cypress Lodge on weekends.

This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.
INGREDIENTS:
• 8 cups chicken broth (add more if desired)
• Whole fryer chicken, cut in chunks or shredded
• 5 celery stalks, sliced
• 8 carrots, sliced
• ½ onion diced
• 4 tablespoons butter
• 1 teaspoon Italian seasoning
• ¼ cup half and half (optional)
• 1 package egg noodles
• Salt and pepper to taste
DIRECTIONS:
In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.
The temperatures are starting to drop, and there’s a crispness in the air once again. Pumpkin Spice lattes have returned to every coffee shop in town, and the sweaters in your closet are just begging to be worn. All of that can only mean one thing: fall has finally come back to the Texas Hill Country.

From the outside, you may feel like you’ve seen a pet spa like Bones & Bubbles before. Yes, Boerne’s newest pet pampering place offers top-of-the-line grooming services and even features self-wash stations where patrons can bring their pets in and do their own bathing. But Bones & Bubbles Dog Spa has another one-of-akind feature: the Barkery.
In addition to the full-service pet spa, this pet-centric kitchen whips up all-natural pet treats that are safe for pets and their humans, too. Owners Meagan and Eric Howard launched the concept with ready-to-eat treats and made-to-order birthday and adoption-day cakes made especially for your pup. “We have treats out front that you can just walk in and purchase. You can feel safe giving them to your dog because the ingredients are all natural.”
The couple focused on creating recipes that are chemical-free and all-natural. Organic tapioca, peanut butter, pumpkin, organic vegetable dyes, and even wholesome sprinkles are key elements the Howards bake into their treats. Eric says they use Greek yogurt to make their icings
and vegetable dyes for the color. “Our red dye is from beets, and our green dye is from vegetables,” Eric says. “You won’t see vibrant colors on our cookies.”
Bones & Bubbles itself was born out of necessity. “We have a 90-pound Bernedoodle,” says Meagan. “We like to give him a bath every two weeks.” When the Howards couldn’t find a local groomer for their dog that they felt connected with, they took matters into their own hands. The couple noticed their local community had also been looking for a place they could take to bathe their pets themselves. And with two shakes of a fluffy tail, Bones & Bubbles Pet Spa was born.
For both their treats and grooming services, the Howards focus on creating a safe and calm place for all furry friends. When a dog is groomed at Bones & Bubbles, it’s done in a private suite. Meagan says, “We want to make sure that each animal that comes to us is in a safe environment and is receiving 1-on-1 attention from our team. At the end of the day, they’re our customers’ best friends.”
