Trips, Vacations, and Coming Home
When I was growing up, I was lucky that my family loved to travel. Every summer, we went somewhere. Some years, it was a road trip to see friends in Dallas or Oklahoma. Other years, it was a journey up the East Coast to Maine. Once, we took a three-week European adventure from Rome to Edinburgh, hitting all the famous cities and historic sites from Pompeii to Paris to Piccadilly Circus.
Each trip brought something new: an unforgettable bite, a stranger-turned-friend, a memory that I still hold on to like a cherished postcard. I’m incredibly grateful for it all. But can I be honest? Sometimes I came home more tired than when I left. At home, it was school and work and activities all the time. Then, while we were gone, it was, “Go! Go! Go! See! See! See! Do! Do! Do!” After some trips, I needed a vacation. And somewhere along the way, it hit me: there’s a difference between a trip and a vacation .
Trips are for exploring the world. Vacations are for restoring yourself.
These days, I try to do both. My wife is a trip-taker. I’m a vacation-seeker. We’re learning the dance—and hoping to teach our daughter the joy of curiosity and the gift of slowing down. That there’s so much value in exploration, for both discovery and rejuvenation.
Of course, exploration doesn’t always require a boarding pass. This month, we celebrate the beauty of near and far. We’ll meet two community fixtures: an artist encouraging presence through clay (“Hands in Clay, Heart in Boerne,” p. 34), and a chef whose vibrant personality is as bold as her Asian cuisine (“Love Thai Loves Boerne,” p. 42).
We’ll also scratch the travel itch with a roundup of towns that keep you cool by keeping you in the water (“Streams, Springs, and Summer Things,” p. 64). And what July issue would be complete without recipes for red, white, and blue desserts that wow as much as the fireworks? (“Tastes Like Freedom,” p. 48).
Whether you’re heading across the globe or around the corner, I hope this summer’s exploration brings you the change of pace you need and a few good stories to tell. May you do some different things and some things differently. Wherever you go—across the globe or just across town—may your summer adventures always bring you back home to yourself.

Serving those who serve has always been the core cause of the USO. In Boerne and San Antonio—cities deeply rooted in military tradition—it’s a cause that resonates. As we celebrate Independence Day, we spoke with Heather Krauss, Executive Director of the USO San Antonio, to talk about community, connection, and how all of us can support our heroes and their families.

WHAT IS THE MISSION OF THE USO?
The mission of the USO is to strengthen the well-being of the people serving in America’s military and their families. Due to the nature of the vast array of military missions required of service members, the USO offers critical support customized to the needs of service members in their local areas. Dedicated teams of staff and volunteers deliver the USO mission to meet the needs of service members and their families wherever they go.
WHY IS THE WORK OF THE USO ESSENTIAL?
The USO is the constant companion of service members and their families, because even the strongest among us need someone by their side. Since 1941, the USO has had a singular goal: to strengthen the well-being of America’s military service members and their families. For the past 84 years, the USO has accomplished its mission by delivering innovative programs, morale-boosting services, and engaging entertainment demonstrating America’s gratitude for their commitment and sacrifice.
Today’s service members need the care, comfort, connection, and support that can only be provided by an organization that is with them at every point of their military journey, wherever they serve. With more than 250 USO locations globally and via our innovative expeditionary programming, USO Mobile vehicle fleet, Military Virtual Programming, and our close coordination with U.S. military leadership, we can maintain a constant and significant presence in the lives of those who are serving our country and their families by providing a continuum of care at every step of the way.
HOW DOES THE USO SUPPORT MILITARY MEMBERS AND THEIR FAMILIES? ARE THERE LOCAL PROGRAMS THAT ARE PARTICULARLY IMPORTANT?

Force, as well as their spouses and children. We support them throughout their military journey.
USO programs include the well-known entertainment tours and USO centers around the world, but there’s a lot more to our work. The USO at San Antonio delivers programs and services through its six local centers across Joint Base San Antonio, each focused on the unique needs of the populations they serve.
Some of our local programs include:
• Warrior and Family Support Center. A cornerstone of resiliency for wounded, ill, and injured service members, caregivers, and families.
• Military Youth & Family Programs. Tailored for the unique needs of military families, these programs promote learning, creativity, and quality time together. From storytime and crafts to cultural outings and family events, the focus is on bonding and resilience.
• Holiday Programs. While many celebrate holidays with loved ones, military families often spend these times apart. The USO helps bring the joy of the season to them—through festive celebrations, gift programs, and events that create memories and foster connection.
• Canine Comfort Program. Because sometimes the best therapy has four legs. The USO’s Canine Program brings certified therapy dogs to centers, events, and Warrior and Family Centers, providing emotional support and companionship for service members and families.
• Care Package Program. For deployed troops or those training in austere environments, a thoughtfully packed USO Care Package can make all the difference. Filled with snacks, hygiene items, and messages of support, they’re a tangible reminder that someone back home cares.

Franklin Park Boerne is making meaningful enhancements to its Memory Care community, improving the environment and the quality of life for residents and their families. As someone whose own mother transitioned from Assisted Living to Memory Care at Franklin Park, I’ve seen firsthand how essential compassionate, quality care truly is.
The updates include aesthetic improvements to create a warmer, more comfortable space. Still, the heart of the changes lies in the addition of “life stations”—interactive areas that evoke familiar memories and encourage purposeful engagement. In the rolling hills just north of Boerne, inspiration comes easily. That’s where you’ll find Sunrise Pottery, a warm, welcoming studio where longtime potter and U.S. Navy veteran Doug Oian has set up shop and makes his home.
For over 50 years, Oian has shaped more than clay; he’s helped thousands of people tap into something creative, tactile, and honest. Whether it’s a solo visitor curious to try something new or a multi-generational family celebrating a birthday, Oian’s pottery classes offer a deeply grounding and surprisingly profound experience, a memorable way to step outside the norm and reconnect with the simple joy of making something by hand.
Oian’s journey to clay wasn’t exactly a straight line. “I had gotten out of the Navy and had a year left of my G.I. education,” he recalls. “I went to school to learn to operate heavy equipment, but that just wasn’t for me.” A wandering spirit led him to a one-year pottery program in the mountains of western North Carolina. “As soon as I got my hands on clay, I knew that was it. I was there at 6:30 every morning, and they had to throw me out at night.”
Originally from the Iowa-Minnesota border, Oian eventually made his way to Texas with his new bride, almost by accident. “We were headed to Arizona, but I ran out of money and gas in Texas,” he laughs. “And here I am.”
Oian ran a studio in San Antonio for 23 years before deciding he’d had enough of city rent
and traffic. 18 years ago, he built a studio on his property in Boerne and named it Sunrise Pottery, a nod to the subdivision where he first crafted in his garage decades earlier. “I opened a window in the house, passed pots out to my wife in the backyard, and she did all the glazing,” he says with a grin. “It just grew from there.”
The studio is a workspace and a sanctuary for Oian and the many students who walk through his doors. Thursday through Saturday, he offers walk-in classes that range from focused one-on-ones to lively groups of up to eight. “It could be nobody shows up, or I have to turn people away,” he says. “You never know. But it always works out.”
He also offers private lessons throughout the week—to families, couples, or groups of friends looking for a fun and creative way to spend time together. “I’ve had kids as young as seven and folks well into their 70s. Everyone has a blast,” Oian says. “I tell them I’m going to push a little, and if they get tired, let me know. But I want them to make as much as they can.”
Don’t worry if you’ve never touched clay. Oian welcomes absolute beginners with open arms. “I’ve taught thousands of people. Everyone learns differently, and I have my little routines. I read people quickly and adjust as needed,” he explains. “There are no failures in my class, just happy accidents and the joy of discovery.”

“The expression on their face, especially when they didn’t think they could do it, is priceless,” he says. “That’s what I love most about teaching.”
Oian’s own work continues to evolve, even after decades in the craft. He mixes his own glazes and experiments constantly with color combinations and forms.
Inspiration strikes in everyday places—a magazine photo, a countertop in a TV show, even a shadow on a wall. “You’re always changing as an artist. You may not be ready to try something the first time you see it, but later it clicks.”
Though his shop is no longer a part of art fairs or gallery circuits—“I just don’t have the stamina for shows anymore,” he admits—his work still finds its way into
people’s hands. Oian fulfills special orders, including ceramic cups for Central Texas and Louisiana church retreats. “I don’t do any advertising. It’s all word of mouth now.” His reputation has traveled far beyond Boerne thanks to his consistent craftsmanship and ability to create with artistry and heart.
Living in Boerne has only deepened Oian’s connection to his craft. “I overlook a valley from my studio— it’s peaceful, open. That kind of space changes the way you create,” he says. He’s also no stranger to civic life here, having served as president of the local Lions Club and forming deep ties with the business community over the years. “It was a great way to meet people, and they really helped me grow in confidence.”
When people see that final, glazed piece, it blows their mind.
While he’s pulled back from formal involvement in recent years, Oian still sees himself as part of the vibrant local arts ecosystem. “I’m doing my thing now, but I’ve done my part. I got to know so many wonderful people in this town. It’s a special place.”
Oian has one piece of advice for those curious but hesitant to try pottery: “Everybody can do it. And if you’re not learning, that’s on the teacher. I’ve had people come in and say they learned more in 15 minutes here than in an eight-week course elsewhere.”
At Sunrise Pottery, Oian works to offer something refreshingly hands-on in a digital world. His classes stand apart from other creative workshops in part because of the unique rhythm of pottery. “It’s not instant gratification,” Oian says. “What you make today, you won’t see finished for at least three weeks. You have to be patient. But when people see that final, glazed piece, it blows their mind.” He adds, “Everyone walks away with something they made—and often, something they never thought they could.”

LOVE THAI Loves BOERNE
Inside Love Thai just off S. Main St., every dish is crafted from start to finish by Sarika Tollett, a woman whose journey from rural Thailand to entrepreneurial success in the Hill Country is as rich and memorable as the food she serves. At the heart of her Boerne restaurant, Sarika brings both the bold, comforting flavors of her homeland and all the best parts of small-town Texas: warmth, hospitality, grit, and a slow way of life rooted in community. Born in upcountry Thailand, Sarika’s mother taught her to cook at age six, though she admits she didn’t enjoy it at the time. “I was upset that she made me cook, but I didn't know that she just didn’t want me to work in the fields,” Sarika recalls. “She'd tell me to cook rice, and then when I was about ten years old, she said I had to cook the other food to go with the rice.” Little did Sarika know that these childhood chores would spark a lifelong passion and successful career on the other side of the world.
This chef’s comfort food honors her Thai heritage and nourishes the town she now calls home.

In 1987, Sarika came to the United States after marrying her husband, Jeff, a laid-back Texan she met at a Thai barber shop when he came in for a haircut. Jeff and his new bride first settled in Sri Lanka, where he was working, and then in his hometown of Amarillo, a far cry from her dream of glamorous, exciting cities she had seen in American movies. “We were in north Texas, and there were tumbleweeds, and it was so dry!” she laughs.
Later, the couple moved to San Antonio, and Sarika, determined to build a new life for herself, learned to drive and connected with a temple community. It was there that she was invited to help out at a local Thai restaurant “just for a week.” That turned into eight years in the restaurant industry. “I learned everything from A to Z. I would waitress. I would cook. I would clean,” she says. “And then something came into my heart… I want to do it on my own. I can do this.”
And she did. Today, Sarika’s restaurant, Love Thai, is a true family-run business where she preps and cooks every dish herself while Jeff and two waitresses help manage the front of house. Open for just a few hours for lunch and dinner six days a week, the hours are short by design. “People ask, ‘Why do you close so early?’” she says with a smile. “‘Because I’m tired! I need to rest!’ But really, it’s because we’re just family working.”
Sarika’s food is made with care and intention—nothing rushed, nothing compromised. Her love for what she does shines through in each dish. “I just love to cook,” she says sincerely. “I cook all day for customers, and then when I come home, I want to make a cake or cook something for us.”
While Pad Thai is the most requested dish (she makes it 30 to 40 times a day), Sarika encourages guests to explore beyond the familiar and try something new, like green or yellow curry or drunken noodles. The people of Boerne, she says, have embraced her food wholeheartedly. “I love customers in Boerne. I mean it—of all ages. Families come in and they’re happy.”
It might not be anything like the image she had in her mind of the United States, but after 19 years in Boerne, Sarika has found her forever home and a deep sense of belonging. “I love this country. I love this place. And I always say, ‘Well, I'll be dying over here, but this is what I enjoy.’ I don't need any more. I’m content.”
Drunken Noodles (Pad Kee Mao)
INGREDIENTS
• Protein of choice
• 8 ounces extra-wide rice noodles
• 1 egg
• ½ white onion, sliced
• 1 tomato, sliced
• 1 green bell pepper, sliced
• 3 cloves garlic, minced
• ½ teaspoon fresh ginger, minced
• 1 cup fresh basil, roughly chopped
• 1/3 cup soy sauce
• 3 tablespoons oyster sauce
• 1 teaspoon sriracha sauce
DIRECTIONS
1. Soak the rice noodles in warm water for 30–40 minutes until pliable, or cook per package instructions. Drain and set aside.
2. Combine soy, oyster, and sriracha sauces in a bowl. Adjust sriracha to taste and desired spice level.
3. Prepare protein as desired and set aside.
4. Heat a large wok or skillet over medium-high heat. Add a bit of oil, then crack in the eggs. Scramble gently until just set. Remove and set aside.
5. Add a little more oil to the heated wok. Sauté garlic and ginger for 30 seconds. Add onion, bell pepper, and tomato. Stir-fry for 2–3 minutes until slightly tender but still crisp.
6. Add the drained noodles, protein, and scrambled eggs back to the pan. Pour in the sauce and toss everything together to coat. Stir-fry 2–3 minutes until the noodles soak up the sauce and caramelize slightly.
7. Remove from the heat and fold in the fresh basil, letting it wilt from the residual heat.
8. Serve hot with lime wedges and red chili or a side of Thai chili vinegar, if desired.

CAKE
• 2 ½ cups gluten-free all-purpose flour (with xanthan gum)
• 2 teaspoons baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¾ cup unsalted butter, softened
• 1 ¾ cups granulated sugar
• 4 large eggs
• 1 tablespoon vanilla extract
• 1 cup buttermilk
• Red and blue gel food coloring
• Fresh strawberries (sliced) and blueberries for garnish
CREAM CHEESE FROSTING
• 8 ounces cream cheese, softened
• ½ cup unsalted butter, softened
• 4 cups powdered sugar
• 1 teaspoon vanilla extract
INSTRUCTIONS
1. Preheat oven to 350°F. Grease and line three 8-inch round cake pans with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
4. Alternate adding dry ingredients and buttermilk to egg mixture, beginning and ending with flour. Mix until just combined.
5. Divide batter evenly into three bowls. Leave one bowl plain (white), while adding red food coloring to the second bowl, and blue to the third. Mix until the desired color is achieved.
6. Spoon the batter into the pan, rotating the colors. Bake for 22–25 minutes, or until a toothpick comes out clean. Cool completely.
7. To make the frosting, beat cream cheese and butter together, then add sugar and vanilla until smooth.
8. Decorate cooled cake with frosting, strawberries, and blueberries as desired. Serve and enjoy!
America’s Cupcakes
CUPCAKES
• 1 ½ cups all-purpose flour
• 1 ½ teaspoons baking powder
• ¼ teaspoon salt
• ½ cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 2 teaspoons vanilla extract
• ½ cup whole milk
• Fresh strawberries (sliced) and blueberries for garnish
DIRECTIONS
1. Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
3. In a large bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes). Add eggs one at a time, beating well after each. Stir in vanilla extract.
4. Add half the dry ingredients, mix, then add the milk. Mix in the rest of the dry ingredients until just combined.
6. Divide batter evenly among cupcake liners (about ¾-full each).
7. Bake for 18 to 22 minutes, or until a toothpick inserted comes out clean.
FROSTING
• ½ cup unsalted butter, softened
• 2 cups powdered sugar, sifted
• 1 ½ teaspoons vanilla extract
• 2 to 3 tablespoons milk or heavy cream
• Blue and red food coloring
8. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
9. To make the frosting, beat the butter until smooth. Gradually add powdered sugar, beating until fluffy.
10. Add vanilla and 2 tablespoons of milk or cream; beat until creamy. Add more milk if needed.
11. Separate icing into three bowls. Leave one bowl of icing white. Add 6-8 drops of blue food coloring to the second bowl, and add 6-8 drops of red food coloring to the third bowl. Stir until the color is even throughout the icing.
12. Frost cupcakes using a knife to keep it simple, or use a piping bag to create more festive decorations.
13. Place 3 blueberries and 1 slice of strawberry on each cupcake. Enjoy!
Patriotic Panna Cotta
INGREDIENTS
• 2 cups heavy cream
• ¾ cups milk
• 1 cup powdered sugar
• 14 grams gelatin leaves (size varies by brand)
• 1 teaspoon of clear vanilla extract
• 2 cups raspberries
• ½ cup sugar
• Blue food coloring
• Edible stars for garnish
DIRECTIONS
1. Soak 9 g and 5 g of gelatin leaves in cold water in two separate bowls for about 10 minutes.
2. In a saucepan, cook the raspberries with sugar and 2 tablespoons of water (just until tender). Then, blend, strain out seeds, and return to the saucepan. Stir in 5 g gelatin until completely dissolved.
3. Spoon a layer of raspberry sauce at the bottom of six 5-ounce glasses and refrigerate.
4. To make panna cotta, stir heavy cream, milk, and powdered sugar together in a saucepan. Over medium heat, bring just to a boil, dissolve the sugar, and add clear vanilla extract.
5. Add 9 g of gelatin and stir until completely dissolved. Let the mixture cool slightly.
6. Once the red layer is firm, carefully pour 3 to 4 spoons of white panna cotta over it and let it cool in the fridge until firm. Repeat with additional alternating layers of raspberry and panna cotta until approaching the top of the cup.
7. For the final blue layer, add 2 to 3 drops of navy blue food coloring to the remaining panna cotta, and spoon into the cup.
8. Refrigerate for at least three hours before serving.
9. Garnish with edible stars, serve, and enjoy!

WHY WOULD SOMEONE WANT TO UNDERTAKE A PROJECT LIKE THIS?
Our clients typically pursue restoration for two reasons:
1. They want to restore the investment potential of the land. Land increases in both monetary value and usability through our projects, making it more appealing to future buyers or for family legacy planning.

I believe three things should guide any ranch restoration effort, framed by three questions. First, I think about the return on investment. “Will this project increase the long-term value and function of the land?”

When I founded the company, I wanted to bring a thoughtful, customized approach to ranch restoration that honors both the client’s goals and the ecosystem's needs. My foundation in ranch restoration is built on more than just education—it’s a legacy. I spent 15 years working under a seasoned dirt contractor with over 65 years of hands-on experience in ranch restoration.
My formal education in Construction Science at Texas A&M University, combined with a childhood steeped in farming and ranching, shaped my understanding of land as more than just property—it's a living system that deserves care, respect, and intentional design. How Short-Term Mission Trips Move Us to Love Ourselves, God, and Our Neighbors Near and Far
According to Newton's First Law, an object in motion will stay in motion, and an object at rest will remain at rest. That is, until it is acted upon by an external force. At Oak Hills Church, we believe Jesus is that force that sets us into motion—an inertia of love for our neighbors, both here at home and around the world.
As described in the Gospels, we see Jesus’ life modeling this movement and inviting us to follow.
Jesus encouraged action in his disciples and sent them to share the good news. And we believe he also sends us to go today, empowering us to boldly serve others and spread his kingdom through love.

Best of all, this renewal doesn’t stop when you return home. Kara Wilson was put in motion when she traveled to El Salvador as a teen. But that trip was just the beginning. When she returned, she was inspired to start Project RED, an initiative dedicated to protecting children and healing families. And Kara’s movement has continued inspiring others. Just last year, the children’s ministry at Oak Hills Church helped raise funds for a new Child Advocacy Center car for Project RED, so that God’s message of hope and healing can reach new communities.

THE “HERBAL COCONUT” PIÑA COLADA
Ingredients:
• 2 oz. Coconut Rum
• 1 oz. Pineapple Juice
• .5 oz Coconut water
• 1 oz. Cream of Coconut.
• A few fresh mint leaves
• Optional: A few fresh basil leaves.
• Ice
• Garnish: Mint sprig, and a pineapple chunk.
Instructions:
Muddle the mint and basil leaves in the bottom of the blender. Add the remaining ingredients and ice. Blend until smooth and pour into a glass. Garnish with fresh fruit and herbs
This sangria emphasizes fresh garden herbs and the sweetness of seasonal berries.
Ingredients:
• 1 bottle wine (such as Sauvignon Blanc or Pinot Grigio or Garnacha)
• ½ cup brandy or rum
• ½ cup elderflower liqueur
• 1 cup sparkling water
• 1 cup fresh strawberries, sliced
• ½ cup fresh raspberries
• ½ cup fresh blueberries
• ¼ cup fresh mint leaves
• 2 sprigs of fresh rosemary
• 1 cucumber, thinly sliced (optional)
• 1 lime, thinly sliced
Instructions:
In a large pitcher, combine the white wine, brandy (or rum), and elderflower liqueur. Stir gently to mix. Add the sliced strawberries, raspberries, blueberries, mint leaves, rosemary sprigs, and cucumber slices to the pitcher. Gently muddle the berries and herbs slightly to release their flavors. Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. Just before serving, add the sliced lime and sparkling water or club soda. Stir gently. Serve the sangria over ice, ensuring each glass gets a mix of fruit and herbs.

This cocktail balances the tartness of grapefruit, the sweetness of pear, and the distinct notes of rosemary, all brought together with a bubbly finish.
Place the rosemary sprig in a cocktail shaker. Lightly muddle the rosemary to release its oils. Add the gin (or vodka), grapefruit juice, pear liqueur and lime juice to the shaker. Add ice. Shake well until thoroughly chilled. Strain the mixture into a chilled glass filled with ice. Top with sparkling water or Prosecco. Garnish with a rosemary sprig, a grapefruit slice, and a pear slice.
A Lime Mint Rose Mojito adds a floral twist to the classic mojito, creating a refreshing and elegant cocktail. Here’s a recipe that balances the traditional lime and mint with the delicate aroma of rose.
Ingredients:
• 10 fresh mint leaves
• 1 lime, cut into wedges
• 2 tablespoons white sugar (or simple syrup, to taste)
• 2 ounces white rum
• 1 ounce rose water (adjust to taste, as it can be potent)
• Club soda or sparkling water
• Garnish: Mint sprigs, lime wedges, edible rose petals (optional)
Instructions:

Place the mint leaves and lime wedges in a glass. Add sugar. Use a muddler to gently crush the mint and lime. Pour the white rum and rose water into the glass. Stir well. Fill the glass with ice.
