Letter from the Editor

Summer gives us the perfect excuse to break from routine and follow a little curiosity — whether it’s through a new dish, a new view, or simply a new way of seeing the world around us.

In this issue, we’re bringing you a taste of all of that. First, we’re thrilled to share a tried-andtrue 4th of July favorite from Chef Bill Coxwell of Sweet Azalea Gourmet Shop & Catering. His Bourbon Baked Beans recipe is rich, flavorful, and easy to serve at any summertime gathering.

Then we’ll head outdoors — at night! Stargazing is one of the most peaceful ways to explore, and we’ve pulled together some tips for setting the perfect scene under the stars, plus a few celestial sights to catch this month.

And because no summer evening is complete without a cool sip in hand, we’re offering a roundup of refreshing summer cocktails that are as fun to make as they are to enjoy. (Or save your favorite for a future get-together!)

We’re also taking you on a dream escape to Switzerland, where natural beauty and culinary delights await. Whether you’re planning a future adventure or simply enjoying a bit of armchair travel, it’s a journey sure to inspire wonder.

Closer to home, we’re honored to share the story of Prepare for Babies, a local nonprofit opening its first maternity home this August. Their program, Metzudah, will offer refuge, resources, and encouragement to expectant mothers in crisis - a beautiful example of how love and support can transform lives.

Bourbon baked beans with a kick

BOURBON BAKED BEANS

Serves 10

There’s something deeply comforting about a pot of slowcooked baked beans, especially when Chef Bill Coxwell, Owner of Sweet Azalea Gourmet Shop & Catering, adds his signature Southern flair. This month at The Chef’s Table, Bill shares a warm, flavor-packed side dish perfect for your next cookout or family gathering. His Bourbon Baked Beans combine the sweetness of crushed pineapple, the boldness of brewed coffee and bourbon, and just the right kick of chili sauce and dry mustard— all simmered to rich, hearty perfection.

ingredients:

• 4 cans (16 ounces each) Boston Baked Beans

• 16 ounces crushed pineapple

• 12 ounce jar chili sauce

• ½ cup strong brewed coffee

• ½ cup bourbon

• ¼ cup firmly packed brown sugar

• 1 tablespoon molasses

• ¾ teaspoon Coleman’s Dry Mustard

directions:

Step 1. Place all ingredients in a crock pot or other slow cooker.

Step 2. Stir well to combine.

Step 3. Cook on high for 2 hours, stirring occasionally.

Step 4. Uncover and cook to desired consistency, stirring occasionally.

note:

Save leftover coffee from breakfast or use 1 teaspoon instant coffee granules and 1 teaspoon water. I keep coffee granules on hand for a punch I make, plus, I prefer using coffee in my brownies and chocolate cakes. It intensifies the chocolate flavor.

UNDER THE STARS

Your guide to the perfect summer stargazing night

Summer is full of things to do and places to see—but this season, we’re heading upward. Join us as we explore the night sky and all the wonder it holds. Stargazing is more than a glance at the stars; it’s an experience you can personalize to be peaceful, playful, or even a little romantic.

First things first: location matters. You’ll want to find the darkest spot available, whether it’s in your backyard, out in the country, or at a local park. Avoid streetlights and glowing windows—your eyes need the best view possible.

Next, set the scene. Grab a blanket, reclining chair, or anything cozy to lie on. A few soft pillows make it even better. If you’re staying out for a while, bring some snacks and maybe a Bluetooth speaker with soft background music. Add in citronella candles for ambiance and to help keep the bugs at bay.

Want to take things up a notch? Make it a picnic, bring sparkling water, or surprise someone with their favorite treats. And don’t forget to look up—sometimes, the best memories are made doing something as simple as watching the sky shift above you.

This July, take time to pause and look beyond the everyday. Your own stargazing escape might be just outside your door.

While the events on our list can be seen with the naked eye, using binoculars or a telescope can add a whole new level of clarity and detail. For best results, let your eyes adjust to the darkness for at least 15–20 minutes before you start looking. Be patient—the longer you wait, the more

you’ll see. Whether you’re spotting meteors, tracking the moon, or just admiring the stars, even a little preparation can turn a quiet evening into a sky full of wonder.

July’s full moon is known as the Buck Moon, named for the time of year when male deer begin growing new antlers. It’ll be big, bright, and beautiful—perfect for beginners!

Southern Delta Aquariids Meteor Shower —

Active July 18-Aug 21 (Peak July 29-30)

This low-key but steady meteor shower brings fast, faint streaks across the southern sky, especially visible after midnight.

Perseids Meteor Shower —

Active July 17–Aug 23 (Peak Aug 12–13)

One of the year’s most beloved meteor showers begins this month and peaks in August. Even in July, you might catch a few early shooting stars!

STARGAZING IS MORE THAN A GLANCE AT THE STARS; IT’S AN EXPERIENCE YOU CAN PERSONALIZE TO BE PEACEFUL, PLAYFUL, OR EVEN A LITTLE ROMANTIC.

Summer is here and what better way to quench your thirst than with drinks crafted from the season’s fresh produce? Embrace the natural sweetness of sun-ripened fruits and the invigorating zest of garden-fresh herbs. From crisp berry infusions to fragrant herbal blends, enjoy the art of crafting delicious and revitalizing beverages that celebrate the fresh flavors of summer.

THE “HERBAL COCONUT” PIÑA COLADA

Ingredients:

• 2 oz. Coconut Rum

• 1 oz. Pineapple Juice

• .5 oz Coconut water

• 1 oz. Cream of Coconut.

• A few fresh mint leaves

• Optional: A few fresh basil leaves.

• Ice

• Garnish: Mint sprig, and a pineapple chunk.

Instructions:

Muddle the mint and basil leaves in the bottom of the blender. Add the remaining ingredients and ice. Blend until smooth and pour into a glass. Garnish with fresh fruit and herbs

This sangria emphasizes fresh garden herbs and the sweetness of seasonal berries.

Ingredients:

• 1 bottle wine (such as Sauvignon Blanc or Pinot Grigio or Garnacha)

• ½ cup brandy or rum

• ½ cup elderflower liqueur

• 1 cup sparkling water

• 1 cup fresh strawberries, sliced

• ½ cup fresh raspberries

• ½ cup fresh blueberries

• ¼ cup fresh mint leaves

• 2 sprigs of fresh rosemary

• 1 cucumber, thinly sliced (optional)

• 1 lime, thinly sliced

Instructions:

In a large pitcher, combine the white wine, brandy (or rum), and elderflower liqueur. Stir gently to mix. Add the sliced strawberries, raspberries, blueberries, mint leaves, rosemary sprigs, and cucumber slices to the pitcher. Gently muddle the berries and herbs slightly to release their flavors. Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. Just before serving, add the sliced lime and sparkling water or club soda. Stir gently. Serve the sangria over ice, ensuring each glass gets a mix of fruit and herbs.

GARDEN HERB &BERRY SANGRIA

ROSEMARY GRAPEFRUIT PEAR FIZZ

LIME MINT

ROSE MOJITO

This cocktail balances the tartness of grapefruit, the sweetness of pear, and the distinct notes of rosemary, all brought together with a bubbly finish.

Ingredients:

• 2 oz Gin (or Vodka)

• 1.5 oz Fresh Grapefruit Juice

• 1 oz Pear Liqueur (or Pear Juice)

• 0.75 oz Fresh Lime Juice

• 1 sprig of Rosemary

• Sparkling water

• Garnish: Rosemary sprig, grapefruit slice, pear slice

Instructions:

Place the rosemary sprig in a cocktail shaker. Lightly muddle the rosemary to release its oils. Add the gin (or vodka), grapefruit juice, pear liqueur and lime juice to the shaker. Add ice. Shake well until thoroughly chilled. Strain the mixture into a chilled glass filled with ice. Top with sparkling water or Prosecco. Garnish with a rosemary sprig, a grapefruit slice, and a pear slice.

A Lime Mint Rose Mojito adds a floral twist to the classic mojito, creating a refreshing and elegant cocktail. Here’s a recipe that balances the traditional lime and mint with the delicate aroma of rose.

Ingredients:

• 10 fresh mint leaves

• 1 lime, cut into wedges

• 2 tablespoons white sugar (or simple syrup, to taste)

• 2 ounces white rum

• 1 ounce rose water (adjust to taste, as it can be potent)

• Club soda or sparkling water

• Garnish: Mint sprigs, lime wedges, edible rose petals (optional)

Instructions:

Muddle:

Place the mint leaves and lime wedges in a glass. Add sugar. Use a muddler to gently crush the mint and lime. Pour the white rum and rose water into the glass. Stir well. Fill the glass with ice. Top with club soda or sparkling water. Stir gently. Garnish with a mint sprig, a lime wedge, and, if desired, edible rose petals.

If Switzerland is not on your bucket list, put it on there now! Switzerland is awash in beautiful mountains, hiking trails, the alps, villages and lakes. It truly captures the heart the second the plane lands. The train system is easy and affordable and a great way to see the countryside, so be sure to plan some day trips using their easy transportation systems. Don’t be afraid to visit with the locals to hear where they would go to base some of your day trips on their recommendations. They are generally spot on every time.

WHERE TO EXPLORE:

• Appenzell and Lake Constance is surrounded by Switzerland, Austria and Germany. An easy and short train ride to Appenzell and a quick gondola ride up the mountain boasts a beautiful view of the lake and surrounding areas.

• Ticino is where the locals suggest to visit and holiday. It is known for its waterfront promenade, bridges, castles, historical buildings and stunning landscape.

• Take in the sights of Zurich and its magnificent lakeside views. This spectacular city boasts amazing views, food and locals.

• Take a short three hour train ride to Paris to explore the gorgeous city and delectable French food.

WHERE TO EAT:

• To indulge in the traditional treat that Switzerland is known for, visit Sprungli which serves the best chocolate in Switzerland.

• To treat yourself to a Michelin restaurant, head to Zurich and eat at Kronenhalle.

• Aperol spritz and local craft beer is readily served at almost every cafe to enjoy.

• When in doubt, ask the locals, as they are happy to suggest their favorite eateries.

A Place to Heal

Prepare for Babies Opens Maternity Home for Women in Crisis Pregnancies

Prepare for Babies, a local nonprofit supporting expectant mothers in crisis, has announced the upcoming opening of its first maternity home this August. Located in the CSRA, the home is named Metzudah—a Hebrew word meaning “God my refuge, God my fortress.” The name came to founder Mandy Metzler nearly two years ago. In a beautiful full-circle moment, she and her husband, Rushton, will serve as the home’s first house parents for one to two years. Metzudah will offer more than a safe place to stay. Each mother will receive mentorship, trauma-informed counseling, life-skills training, parenting education, and spiritual support. “We aim to provide a loving home where women are encouraged to persevere and are reminded of their incredible value,” Mandy says. “Many of them have never been told, ‘You can do it.’ We want them to know they are worthy and deeply loved by Jesus.”

Residents can stay up to 18 months after their baby is born—allowing time for healing and rebuilding. The program also connects women with local resources for continuing education, job training, childcare, and adoption assistance if requested.

Community involvement is essential. Supporters can help through monthly monetary donations or by providing essentials like diapers, wipes, cleaning supplies, and meals. Community members are also invited to speak or lead workshops. Volunteers are needed to help transport residents to appointments and jobs; those interested can contact Lindsey at metzudah@prepareforbabies.org.

Prepare for Babies will host a ribbon cutting this August and begin accepting applications then. “We want to equip mothers to build a stable life for themselves and their children,” Mandy shares. “We’ll be walking beside them every step of the way.”
