French pastry chef and TV star living the American dream in Austin

French Chef Kévin D'Andréa came to America to pursue the American dream. He’s the owner and executive chef of Austin-based upscale pastry company Foliepop’s and has appeared on several TV shows, including Bravo’s “Top Chef.”

In August, D'Andréa returned to his home country of France to watch the Olympic games and shoot episodes of Peacock’s “Breaking Baguettes.” As host of the show, he interviews top U.S. Olympians — such as Regan Smith, a world record holder and Olympic medalist in swimming — and breaks the country’s most famous bread with them.

D'Andréa said the ambience in Paris was amazing. “Calling it the city of love was on point. Everybody was cheering with everyone.”

For the show, he also met retired decathlete Trey Hardee, a University of Texas graduate who won silver during the 2012 Olympics in London.

“In Paris, he was counting his croissants, so I ordered big croissants and we competed to finish them,” D'Andréa said, struck by the similarities he had with the athletes. “We’re here to be the best, and we’re living our dreams.”

Now back in Austin, D'Andréa is focused on expanding his business, which sells tartelettes that are available in more than 30 H-E-B stores and other pastries that can be found in more than two dozen hotels, including Hotel Van Zandt and various Marriott and Westin hotels.

“I’m here to feed people and feed them well,” he said, noting that his pastries are made with high-quality, natural ingredients.

Why Austin? “It’s very energetic,” he said, marveling at Lady Bird Lake being in the middle of the city. “The people are so nice. There’s so much activity.”

The food and bar scene is also incredible. Some of D'Andréa’s favorites are Nickel City, the Roosevelt Room, Olamaie and Garrison in the Fairmont Austin, where he also recommends the pastry shop’s croissant and pain au chocolat, which is similar to a croissant. For a low-key, affordable Sunday night, he recommends Soupleaf Hot Pot.

“What I’ve built in seven years, I’m so proud,” he said. “I know I’m lucky to be in the USA.”

How are Foliepop’s tartelettes?

I bought a pack of the six assorted Foliepop’s tartelettes at H-E-B and split them each four ways, so my husband, kids and I could try all the flavors. Our son was the toughest critic, not fond of a few of them, but the rest of us loved every one. They’re delicate, smooth and the perfect amount of sweet. No particular flavor is overpowering, allowing you to taste and savor every layer of the tartelette. What a treat!

Mems Davila, owner and the mastermind behind the new Black Gold in Austin, is ready to make waves in the local food scene. The restaurant represents a culmination of his Hispanic roots, a decade of Central Texas barbecue expertise and a commitment to blending culinary traditions in fresh, exciting ways.

Hailing from the Rio Grande Valley, Davila grew up surrounded by family barbecues every weekend, a tradition deeply rooted in his Mexican-American heritage.

“We didn’t wait until the Fourth of July to grill,” he laughs, recalling how his grandfather would cook for church fundraisers and how he was mesmerized by his father's skills at the BBQ pit.

The flavors and techniques of those gatherings have been woven into his approach at Black Gold, where the smokiness of Texas barbecue meets the spices and comfort foods of Hispanic cuisine.

After years of running a successful food truck, Davila knew it was time to take the next step.

“I always knew I wanted to integrate alcohol sales and create a more immersive dining experience,” he said.

This led to the decision to open a brick-andmortar restaurant in the Crestview neighborhood, an area Davila felt offered an “old Austin” vibe that resonated with his vision. For him, it’s

not just about the food but creating a community space that feels welcoming to everyone – from longtime locals to newcomers.

The experience at Black Gold starts as soon as you walk in. The restaurant features massive black-and-gold smokers, affectionately named Stevie Ray and Jimmie (Vaughan) after Austin’s own music legends.

“These smokers are top-of-the-line,” Davila said, noting that they're built by Luling-based Cen-Tex Smokers. “When people come in, they’re part of the show."

The setup allows guests to watch the entire cooking process, from brisket to ribs, making the experience as interactive as it is delicious.

In terms of what’s on the menu, Black Gold promises a unique fusion of flavors. Traditional Texas-style brisket is a given, but guests can also look forward to dishes like smoked duck with poblano cream sauce, Wagyu smash burgers and candied pork belly burnt ends. The menu even nods to Davila’s Hispanic background with items like “botana,” a platter loaded with tortilla chips, guacamole, and smoked fajitas. Desserts, too, get

an upgrade, with offerings like Big Red ice cream and churro-inspired sweets.

Beyond the food, Davila aims to offer a place where locals can hang out, enjoy craft cocktails and soak in the atmosphere. The restaurant’s three patios and a stage for live music will make it a go-to spot for everything from a casual meal to a lively night out.

“We’re really about creating a space that’s for everyone,” Davila said.

One could find plenty of reviews by a rad mom blogger, but if the kids aren’t happy, will mom and dad really get the break they deserve? For that reason, we let Enzo, 12, Theo, 8, and Tallulah, 6, be the judges.

THE SUITE

Nothing makes or breaks a stay like the entry door beeping open to present a glimpse into your quarters. Our suite had large windows overlooking the Fazio Foothills Golf Course and a pressurized rainfall shower head that dispenses unfettered joy (a shower beer in there is an absolute must).

POOL/BAR AND KIDS’ ENTERTAINMENT

Sure, swank rooms and panoramic views are cool, but kids count in milliseconds when it comes to resort pooltime.

The Omni Barton Creek features three year-round pools, including one for adults only. The other pools are full of cool dads launching small children into the air to giant splashes, moms haranguing from the deck to abide by safety protocol and frozen cocktails.

Nearby, there’s a splash pad for the very little ones and a turfed kids entertainment area with an inflatable water slide and yard games. The Travis Pool CONTINUED >

Bar assists all the commotion with a full bar and local tap handles like Zilker Brewing’s Icy Boys and Independence’s Native Texan Pilsner. Salads and burgers tie it all together by keeping the daytime munchies at bay.

The pool was a big hit and I loved the water slide. The movie at night in the pool was fun. – Tallulah It was a blow-up water slide, but it was way more fun than you’d think. And I like that they didn’t have real grass in the kids area because then it would get all watery and you’d end up with grass all over you. – Theo It was easy to get drinks (sodas, y’all!) at the pool bar and I liked having multiple pool options. – Enzo

DINNER TIME

Swimming all afternoon like mini-Phelpses and lil’ Ledeckys left the kids ravenous. Fortunately, the resort features six formal dining areas. The Blind Salamander offers an upscale menu of seafood, steak and interesting seasonal items that pair nicely with an inventive, garden-inspired cocktail menu.

TEE UP

For golf enthusiasts and wanna-be hackers like myself, four championship golf courses play uniquely to one another and cater to players of all skill levels.

Unfortunately, my play fell beneath even that very low standard, but Enzo and I had a great, mostly curse-free, dad-son bonding time! The resort also boasts a mini-golf course for more level-headed action.

THE VERDICT

We couldn’t get to some things during our stay, like the Mokara spa, hiking trails and biking paths that surround the property, but that only gives us a reason to return.
