Summer's Here, and the Time is Right...

Greetings from Asbury Park City Lifestyle!

I want to warmly welcome all visitors to our beautiful seaside town of Asbury Park. Every spring, it blossoms into the most exciting little city, and in the summer, it becomes a musical paradise. Although all year long it is an amazing town with live music and great dining, summer at the Jersey Shore is truly, second to none! From the Stone Pony’s Summer Stage and the Wonder Bar’s amazing rock & roll shows to McLoone’s Supper Club and Robinson’s live music, and the comfortable vibe of Watermark, the venues are endless! Convention Hall has new restaurants and stores that will delight both visitors and locals. As the town evolves, my excitement grows, seeing so many new people and places popping up, as many people aspire to make Asbury Park their home, as I did.

Explore the local music scene along the Boardwalk, as well as downtown along Cookman Avenue and beyond. Visit Convention Hall for dining and shopping and enjoy the small-town feel while appreciating the vibrant growth just about everywhere you look.

Most visitors dream of living here at some point. For those of us who do live here, we know how fortunate we are to reside in such a wonderful place. Despite rapid changes and growth, a “small town” feeling still pervades, resonating with Asbury Park's overall vibe. The towns to our north and south are all wonderful in their own right. Each with unique gifts that are special, but Asbury Park holds an amazing spirit that we all feel living here.

To the readers of Asbury Park City Lifestyle magazine, thank you for stepping away from your smartphones and relaxing with our magazine. Asbury Park’s Veterinarian

Thomas Caltabilota doesn't horse around when it comes to providing veterinary care at the shore

“There’s something about the outside of a horse that is good for the inside of a man.”-Winston Churchill. An equine changed Thomas Caltabilota’s life. In 2001 Caltabilota started working at the Monmouth Park Race Track as a sophomore at Long Branch’s Shore Regional High School. The gig was just what Caltabilota needed. Calibilota’s brother Frank died tragically while attending Seton Hall University.

“I was dealing with awful trauma,” Calibilota recalled. “My brother had just died. That trauma led me to the race track. Someone offered me a job with the racing commission.”

Caltabilota did post-race blood and urine tests while checking for performance enhancing medication.

“It was a great summer job,” Caltabilota said. “It altered the direction of my life. I wasn’t the best student then and I started hanging out with the wrong crowd. I felt this rebelliousness and had a lot of anxiety running through me. But when you’re working around horses they can feel that in you. You’re forced to be calm, confident or you will be dragged or trampled. You have to be cool around a horse.”

The thoroughbreds at Monmouth Park Race Track enabled Caltabilota to relax. “The horses helped me to calm down and breathe,” Caltabilota said. “They forced me to be calm and I just loved being around them.”

The experience inspired Caltabilota to enter Rutgers’ Equine Sciences program. “I worked

in research and it was amazing,” Caltabilota said. “I developed such a passion working with horses. Beyond that I just loved working with animals.”

One good thing led to another as the West Long Branch native met his wife, Avery Kasten, who was pre-Veterinary at Rutgers.

Caltabilota, 40, graduated from Rutgers and enrolled in a masters program in Equine Sciences at LSU. “I did research,” Caltabilota said. “I studied diabetes in horses and just loved what I was doing.”

After graduating from LSU, it was time for Caltabilota to return home where he opened City By the Sea Veterinary in 2018 on Memorial Drive. Their mission is to provide compassionate care and quality medicine to all pets, even those that aren’t equines, who come for treatment.

City By the Sea Veterinary provides full-service veterinary medicine and surgery for pets.

What separates City By the Sea Veterinary is that it’s an independent facility. “Many of the veterinary practices are corporate owned and have investors looking over everyone’s shoulders,” Caltabilota said. “Some of these practices are floundering after COVID. They invested in a lot of older veterinarians, who have retired. We don’t look at the bottom line. We’re trying to provide the best service and with that we try to earn the trust of everyone. Working with animals is an emotional experience. Our team helps people understand what their options are when their pets are sick. Our team is doing our best to help the community here in Asbury Park.”

City By the Sea Veterinary has eight veterinarians on staff and two veterinarians in their urgent care facility. “The general practice is in a big building and has more space than what we need,” Caltabilota said. That will be our home for the next 30 or 40 years since we will do our best to serve the community.

“We're trying to provide the best service and with that we try to earn the trust... Working with animals is an emotional experience. It's tough when animals get sick."

Caltabilota handles the business side while his better half is City By the Sea’s medical director. “It’s a great situation for us,” Caltabilota said. “We love how it’s going.”

The couple, who reside in Ocean Township with their six-year old son, Marco, work with Catsbury Park, a cat rescue in Asbury Park. “We’re all about the community here,” Caltabilota said. “We started working with other rescues. We developed a program with the high school (Asbury Park High School) across the street so students can be exposed to animal treatment and medicine. We helped clean up that area around the school. We dealt with overgrown weeds and shattered windows and dealt with variance issues. But it’s been worth it. The kids coming out of high school can see that building as their future. The kids need hope. We wanted to turn that building into something wholesome for the

community. We just wanted to make it better. We’re not just a business in this community. We’re part of the change in Asbury Park.”

City By the Sea Veterinary takes part in beach clean up and sponsors little league baseball teams. “It’s fun to do those sorts of things and try to make a difference,” Caltabilota said. “We hope the community doesn’t just see us as the local veterinarian but also as a neighbor.”

When Caltabilota is not in the office he hangs out at the beach with his family. “We’re just a few blocks from the ocean,” Caltabilota said. “That’s where my wife, son and I go.”

There are two fortunate pets, who reside at the Caltabilota home. The veterinarians adopted a three-legged cat named Freddy, who resides with Rubble, a French bulldog, who has one ear and a myriad of allergies.

“What’s great is that these two animals found the right homes,” Caltabilota said. “Each of our pets have lifelong issues but the great thing is that they live in a house with two veterinarians. It’s perfect for them. We can provide all the care that our cat and dog needs.”

Caltabilota doesn’t own a horse. He’s not a horse doctor but he can still be found at Monmouth Park. “I still love it there,” Caltabilota said. “Going to the racetrack is something I still enjoy. It all started there. The horses had such a huge impact on me. Horses are so beautiful. I like being around them. It’s like therapy for me. I wouldn’t be where I am without that (initial) experience with them.”

GONE TO THE dogs AT PAWS

During a recent chat with comic Lewis Black, the former Daily Show correspondent revealed the secret to life. “Do what you love,” Black said. “I think that’s a huge part of being healthy. I think the people that work a job all week long that they don’t like aren’t too thrilled with life for a reason. I’m fortunate that I love what I do.”

Ruth Kiser can relate to Black’s rant. In 2008, after working in the mortgage industry for 27 years, Kiser lost her job during the financial crisis and was left wondering how she would pay her own mortgage.

“It was awful,” Kiser said. “I couldn’t find a job after I was laid off in 2008. There was nothing happening in the world of mortgages. I didn’t know what I was going to do.”

Kiser, 62, was unemployed until 2011. The Elmwood Park native landed a job working in titles. However, it failed to fulfill Kiser. “I decided in 2008, when I was 45, that I wasn’t going to be miserable until I retire,” Kiser said. “The key for me was doing what I love to do.”

Kiser bought a shop in Sea Girt in 2015 and launched Paws Pet Boutique. However, the location was less than ideal. A year after opening Kiser looked for another locale and Asbury Park was suggested.

RUTH KISER HAS WORKED A 9-5 JOB AND BEEN SELF-EMPLOYED. THE OWNER OF PAWS BARKERY AND BOUTIQUE PREFERS THE LATTER. “IT’S SO GRATIFYING RELYING TOTALLY ON YOURSELF,” KISER SAID. “I DON’T HAVE AS COZY A LIFESTYLE GETTING A PAYCHECK EVERY WEEK BUT I’M VERY MOTIVATED EVERY DAY.”

“I never thought I could afford Asbury Park but it was actually less than what I paid in Sea Girt,” Kiser said.

Paws Barkery and Boutique opened on Cookman Avenue in 2017. The shop became an instant destination courtesy of Kiser’s K9 confections, which are handmade dog and cat treats.

“I have two fabulous women bake for me every day,” Kiser said. “We use a big commercial mixer and we have a pizza dough like press. They flatten everything out and it gets dehydrated for 24 hours to remove all moisture.”

Pumpkin biscotti, barking for bacon, banana pawberry, bitchin beef and cheese, peanut butter, peanut butter bacon and salmon sweet potato are the options. “All of the treats are human grade,” Kiser said. “I’ve had people come in here and say, ‘It smells so good, can I eat what you’re making?’ They can eat them.”

However, Kiser can’t market the treats, which are all natural, to humans. “But I can’t stop you from eating them if that’s what you want to do,” Kiser said. “I have a customer who comes in here and she eats the peanut butter treats with her dog. That’s her choice.”

Paws Barkery and Boutique also carries a full line of other USA made chew treats and bakery items. There’s also a full line of pet accessories, such as bandanas, collars, leashes and toys, some of which are handmade.

“We have so many pet products but we also have a human section,” Kiser said. “We have hoodies for humans.”

It’s going so well for Paws Barkery and Boutique that a second shop opened in Convention Hall in April of 2024.

“It’s been amazing,” Kiser said. “We moved into the shops next to the arcade. It’s just been a lot of work.”

When the second Paws Barkery opened Kiser had no choice but to leave her fulltime job working titles. “There was no way I could manage two stores and work 35 hours a week,” Kiser said. “But it’s all worked out for the best.”

Within the next five years, Kiser hopes to cut her work load in half. “I would like to

be able to work 35 hours a week as opposed to 70 so I can enjoy things in life a little more,” Kiser said.

The avid traveler hopes to see more of the world. “I have a bucket list of places where I want to go,” Kiser said. “I work so hard and so I just want to go and travel.”

Kiser, who has enjoyed visiting the San Juan Islands, Alaska and Toronto, over recent years, will have limited time for excursions due to the demands of Paws Barkery and Boutique.

However, since her shop is a labor of love, Kiser is fine with her day to day responsibilities. “I get to do what I want,” Kiser said. “It’s great that I don’t have to report to anyone. The last person I worked with (in the mortgage world) was like Satan himself. I don’t have to deal with anyone like that. I get to work with people here in Asbury Park, which is amazing since I love that the people in this city are so free. You can be yourself in Asbury Park. That’s an absolute draw. And people who come here feel that it’s free and accepting. Asbury Park is a unique community and I’m so happy to have not just one but two shops. It’s so great to be part of such an incredible place.”

There's no place like Disney World

Little things mean a lot. If there is an issue, guest services deal with problems.

When Disney World is bandied about, the focus is typically on the latest attractions, such as the terrific "Guardians of the Galaxy: Cosmic Rewind," the exhilarating "Tron: Lightcycle Run," and the entertaining "Star Wars: Rise of the Resistance."

However, what stands out but is seldom touted is the exceptional attention to detail, which is one of the reasons why Disney World and Disneyland reside at the upper echelon of theme parks.

The little things really do mean a lot. If there's a customer service issue, a Disney representative responds typically within two-minutes from 7 a.m. to 11 p.m. daily. If there is an issue, guest services deal with problems effectively and efficiently.

No wonder smiles are ubiquitous at what has been dubbed "The Happiest Place on Earth." That's a heck of a feat considering that Central Florida is blazing during the summer. But folks, ranging from families to newlyweds to the long of tooth, have a wonderful time at Disney World regardless of the time of year.

One of the few drags at Disney World is that it's impossible to experience everything. If you're a completist, visit Disneyland, which is manageable and can be finished in two days.

However, Disney World is akin to the planet. You're not going to cover the entire theme park during a typical stay. The same goes for Earth. However, you can choose to experience what is appealing. And there is an array of new attractions and classic rides at Disney World.

"Tron" is a high-speed roller coaster in Tomorrowland. It's the most intense ride in the Magic Kingdom, with apologies to the beloved Space Mountain. The inspiration is the Disney film "Tron: Legacy." The motorbike-style ride vehicle, which opened in April of 2023, launches riders from 0-60. It's a brief experience but it's worth the wait due to the speed and twists.

Guardians of the Galaxy: Cosmic Rewind, which opened in May of 2022, is the featured attraction at Epcot. It features a reverse launch, which

is exhilarating. The ride is based on the Marvel "Guardians of the Galaxy" movies with spinning cars and a soundtrack with six song selections. Blondie's "One Way or Another," which fit the ride perfectly, was blasted throughout our run on the thrilling indoor roller coaster, which is located in the World Discovery area of Epcot.

It's easy to spend the day at Hollywood Studios. The marquee ride is "Star Wars: Rise of the Resistance," which is a smooth, trackless experience. It's an immersive treat with some fun drops and a great story. It's a repeat ride for certain as we returned for two additional experiences.

The Millennium Falcon: Smuggler's Run is an interactive simulator where guests operate the Millennium Falcon. It's a blast whether you're a pilot, a gunner or an engineer as you glide through the animated experience.

And then there's the classic, "Star Tours," which has aged remarkably well. I recall waiting 90 minutes to board the ride at Disneyland in 1987 just after it opened at Disneyland. It's a treat flying through various Star Wars scenes even if the experience is bumpy.

It's unfortunate that Disneyland closed "The Tower of Terror" but the exceptional Twilight Zone inspired ride is still a major attraction at Disney World.  The ride takes place at the fictional Hollywood Tower Hotel. A series of similar accelerated drops continues to lure me back. I can't stop laughing when the ride descends. There's no ride that pleases me more than Tower of Terror, which delivers unadulterated joy.

Aerosmith's final concert was in September of 2023 in Long Island. However, the rock icons live on courtesy of the entertaining "Rock and Roller Coaster." Guests are propelled from 0-57 mph in 2.8 seconds. Riders experience up to 5 Gs and travel through three inversions, which include a rollover and a corkscrew while zipping through the darkness to an Aerosmith soundtrack. It's living on the edge by Disney standards. Animal Kingdom is worth experiencing for the classic "Expedition Everest: Legend of the Forbidden

Mountain." The big drops and plummeting backwards in the dark makes for a memorable experience.

Magic Kingdom is still king. That's where my family spends most of its time when we return to Disney. We're compelled to revisit such charming classic rides as "The Haunted Mansion," "Pirates of the Caribbean," "Peter Pan," "It's a Small World" and "Winnie the Pooh."

We love the log flume and fortunately in June 2020, Disney announced that Splash Mountain would be rethemed as "Tiana's Bayou Adventure," which opened in June of 2024.

It's based on Walt Disney Animation Studios 2009 film, "The Princess and the Frog." The ride has been delightfully revamped with Louisiana flavor and a few drops, none better than the 52.5 foot plunge, which prompted our group to take two more runs on "Tiana's Bayou Adventure."

There are so many places to dine at Disney but treat yourself at Epcot. How can you choose chicken nuggets and fries when EPCOT's World Showcase offers a diverse and satisfying culinary journey with food and drinks from around the world? Each pavilion

features restaurants and kiosks serving dishes and beverages inspired by their respective cultures. Wash down Canadian poutine with a German beer. Have a sake with sushi at Epcot's Japan.

Or follow in our footsteps and visit France, which offers terrific fare at a reasonable price. Two toasted ham and cheese croissants, a quiche, a baguette with butter, two sodas and a pair of macarons can be had for less than $60.

Check out Epcot's culinary options and add the Lightning Lane pass to your ticket. Lightning Lane is a paid service that allows guests to bypass the regular standby line at select attractions and shows. The pass allows guests to book up to three attractions at a time and make additional selections after completing their initial selections.

It's best to make the most of your experience. If you want to maximize your time in Orlando, it's not a bad idea to stay on property since you'll be granted a "Magic Hour" each day at one of the parks Only those staying at DisneyWorld will be able to enjoy rides.

The pro tip is to stay at the inexpensive All Star resorts, Movies, Music or Sports. The latter has the newest rooms of the trio. If you're spending two or three

days at Disney World, you'll be in the park for most of the day. You'll return to All Star just to sleep and wake up to enjoy the magic hour. You won't be lounging at the pool so it makes plenty of sense to stay at the lower budgeted digs.

If you would like to splurge, enjoy the Polynesian Village Resort. The Polynesian combines retro Disney and the modern resort in a seamless manner. The amenities, grounds, dining and a revamped pool are exceptional.

If price is no object, stay at the Grand Floridian, which is opulent and luxurious.

Animal Kingdom Lodge is exceptional. You can literally wake up and step onto your balcony and witness a giraffe grazing just outside your room on one of the four savannas outside Animal Kingdom Lodge.

The Beach Club is one of the best places to relax mid-day with its terrific pool complex. There's a lazy river, a waterslide and a relaxed vibe perfect for kids to older adults.

There is still no theme park like Disney World which is unparalleled when it comes to attractions, customer care and nostalgia. It's awfully tough to top Mickey Mouse and the vision of Walt Disney, who was so far ahead of his time in so many ways.

RECIPES

THESE DELICIOUS RECIPES ARE LIGHT, BRIGHT AND FEEL LIKE SUMMER

The sun has returned, and grilling season is upon us. With the nice weather comes vegetable gardens and fresh produce, along with the overwhelming desire to be outside as much as possible. We’ve compiled some fresh and light dishes that you can shop for at your local farmers market and whether you’re looking for a quick mid-week meal or something to grill for a crowd on the weekend these dishes won’t disappoint. These pair well together or can stand on their own!

DIRECTIONS:

1. Place skirt steak into gallon freezer bag

2. Combine all other ingredients in bowl and mix. Pour over steak and marinate for 3-4 hours or overnight in the fridge.

3. Bring skirt steak to room temperature by letting it sit out for one hour.

4. Get your grill hot on one side and medium on the other.

5. Once the grill is ready, wipe excess marinade off steak. Starting on the hot side, place skirt steak on grill for 2 minutes per side, attaining a nice sear.

6. Transfer steak to the cooler side of grill and cook until the internal temp is 130°. Let rest for 10 minutes (temp will rise while resting).

7. Carve and serve. This dish pairs well with beans and rice or served as tacos. Following is a chimichurri sauce that compliments it nicely.

*Outside skirt steak is a more tender cut than inside skirt steak, for this recipe outside skirt is recommended. Do not use too much lime as the citrus can cook the meat before putting it on the grill, resulting in a tougher texture.

SIMPLE SKIRT STEAK

INGREDIENTS:

• 2lbs. Outside skirt steak*

• 2 Tablespoons lime*

• 2 Tablespoons finely,

chopped cilantro

• ¼ Cup olive oil or avocado oil

• ¼ White onion, finely chopped

• 1 Tablespoon cumin

• Salt and pepper to taste

CHIMICHURRI

INGREDIENTS:

• ½ Cup parsley, finely chopped

• ½ Cup cilantro, finely chopped

• 2 Tablespoons red wine vinegar

• 3 Cloves garlic, minced

• 1 Red chili (whole or deseeded depending on desired level of heat)

• ½ Teaspoon dried oregano

• 1 Teaspoon salt

• 1 Tablespoon lime juice (optional)

DIRECTIONS:

Combine all ingredients in a bowl. You can make this in the late morning and let it sit for around 4-6 hours, or you can make it the day before and let the flavors meld overnight in the fridge. Just be sure to take it out and get it to room temp before you serve it, as olive oil hardens in the fridge. Serve over skirt steak or tacos.

ROASTED CORN SALSA

INGREDIENTS:

• 2 Ears sweet corn

• 10oz. Cherry tomatoes

• ¼ Cup lime juice

• 1 Finely chopped jalapeno or serrano (whole or deseeded depending on desired level of heat)

• ¼ Cup cilantro, finely chopped

• ½ Cup white onion, chopped

• 2 Cloves garlic, minced

• Salt to taste

DIRECTIONS:

1. Grill corn, you do not need to soak the corn beforehand.

2. Place corn on the grill (inside their husks) over medium heat turning every few minutes.

3. After 10 to 12 minutes shuck the corn and put the cobs back on the grill for 2-4 minutes rotating frequently to achieve that charred look and flavor.

4. Cut the corn from the cob, place in bowl and add all other ingredients. Let the mixture meld for about an hour and serve with tortilla chips or as a taco garnish.

Dramarama will say anything at the Pony

It's hard to believe that Wayne's Dramarama never became a household name. "Anything Anything (I'll Give You)," was embraced by Los Angeles' KROQ-FM, arguably America's most influential alternative rock outlet, as the most requested song in the station's history. Dramarama never broke big but remain together more than 40-years after forming.

Dropkick Murphys and Bad Religion co-headline

The fiery Dropkick Murphys and potent and cerebral Bad Religion will share the Stone Pony Summer stage. Both bands were at their peak a generation ago but each still has plenty left in the tank.

Nick Lowe is one of the most unsung singer-songwriters. Lowe, who penned ("What's so Funny 'Bout) Peace Love & Understanding," is a terrific storyteller. Los Straightjackets delivers visceral surf music behind those Mexican wrestling masks.
