Forks up, friends!
Bamboozled by an “as seen on TV” display and fueled by feeling flush on pay day, my husband bought a 7” Ginsu chef’s knife many moons ago. Celebrating Christmas while living in Hong Kong, we used it to trim the trunk of a gorgeous Fraser fir. The tree was ridiculously expensive since it had been shipped from Vermont in a refrigerated container, but we were homesick and desperate to create a memorable holiday for our 3-year old daughter Jane.
We lugged it back to our apartment in the back of a taxi and made a base out of cinder blocks (readily available in our neighborhood of Fanling, in the New Territories where apartment buildings were flying up at record speed). The Ginsu knife miraculously cut through the 4-inch trunk, then performed like a champ back in the kitchen.
Today, I grab it when I’m dicing or slicing and remember those early days with fondness. I did nick my middle finger once with it, but only have myself to blame.

KRAIG TORRES IS HAVING AN ALE OF A GOOD TIME

As with most things in life, circumstance and opportunity often align to create greatness. This is certainly the case for Atlanta’s foremost leader in the world of craft beer. Kraig Torres, founder and CEO of Hop City, Barleygarden Kitchen & Craft Bar, and Boxcar has always romanticized about beer. In fact, he admits to it being a lifelong obsession. “Going back to my teens, I have always loved beer,” says Torres. “I never envisioned making a career out of my lifelong obsession.” Kraig traveled to the UK and Germany when he was in the Coast Guard and as a result of his service, he fell in love with European beer styles and pub culture as it exists overseas. He was certainly inspired to bring it home to Atlanta!
In his pre-beer days, Kraig owned and ran collision repair centers and body shops. Everything was good until the recession hit in 2008 and Kraig lost his job. He had visited Bruisin’ Ales in Asheville and loved the idea of a beer-centric retail store that focused on the niche segment of beer consumption - craft beer. At the time, craft beer sales only accounted for 6% of all beer sales across Georgia. His business plan was well thought out, but the banks passed on his idea of

a retail store that would capitalize on the small, but rapidly growing craft beer and gourmet wine following in Atlanta. Thirty-three bank rejections later, Hop City was born and Kraig was well on his way to creating not just another beer and wine retail business, but an atypical lifestyle store for those who like to drink outside the norm. “We are still that way,” says Torres. “Whether it’s natural wine or pastry stouts, we champion producers making interesting and delicious beer, wine, cider, seltzer, mead, and pretty much everything in between.”
With the Marietta Street, Birmingham, and Krog Street lifestyle pubs and retail spaces under his belt, Kraig was approached by the developer behind Avalon in Alpharetta about a Hop City location. At this time, Hop City was not only focused on the retail side of beer and wine, but also the craft bar experience. It seemed like Alpharetta would be the next step. It was perfect except for the fact that Alpharetta requires every on-premise location to have fifty percent of their overall sales as food – at a minimum. Kraig, having no real restaurant experience to speak of, reached out to his friend Kevin Outz from Spotted Trotter. The duo built a delicious restaurant program focused on locally-sourced ingredients. “Our labors in Alpharetta paved the way for the more refined dining experience at Boxcar in the West End. It also allowed our team to open a second Barleygarden in Fayetteville,” says Torres.
Kraig says that Hop City’s evolution has really been the product of having an amazing team. He is also quick to point out that he has the privilege to work alongside 190 food, beverage, and service professionals and that whatever successes they have enjoyed has truly been a group effort. For Kraig, finding and keeping passionate co-workers has been the key to success.

While Kraig doesn’t consider himself an industry leader and is generally more comfortable behind the scenes, he is certainly a driving force behind the love of beer across Atlanta. In fact, in 2022, when Princess Astrid of Belgium visited Atlanta, Kraig was invited to meet Her Highness. She appointed him as an ambassador of Belgian beer. “One thing led to another,” remembers Torres, “and the next thing I know I got a call from a friend congratulating me on knighthood!” The ceremony was held at the Belgian ambassador’s residence

in Washington, D.C. Robed dignitaries presented Kraig with The Knighthood of the Brewers’ Paddle (Belgian Brewers’ Guild). “A group of us were knighted,” says Kraig, “not with a sword but, you guessed it, a brewer’s paddle. It was a once-in-a-lifetime experience.”
Kraig is a kind and happy man with a great smile. He drinks a beer with his eyes and nose before ever taking a sip. “A beautiful pour of beer is a sight to behold,” says Torres. “I want to see little bubbles coming up from the bottom of the glass. I want to smell what I’m drinking.”
I simply would not expect anything less from a Knight.

Spanish cuisine and culture at Fogón and Lions
Dreaming of honoring his origins of cooking, Chef Julio Delgado wanted to get back to his family roots and open Fogón and Lions, a restaurant rooted in Spanish cuisine and culture. Chef Delgado grew up in a home where his family valued celebrating life through food and memories. His grandfather owned a butcher shop in Puerto Rico, which inspired Julio to go into the hospitality business. Chef Delgado’s resume is loaded with elevated experiences in hospitality.
After working at JP Atlanta and New Realm Brewery, Chef Julio opened Minnie Olivia Pizzeria, a neighborhood woodfired neo-Neapolitan-style pizzeria where Southern Italy and the South meet. Minnie Olivia was created in honor of Minnie Oliva Dodd, daughter of James Madison Dodd and Sara Ann Dodd who owned the Dodd Hotel and gardens where Minnie Olivia is now located.
Fogón and Lions was built right next to Minnie Olivia. Celebrating the traditions and flavors of Spanish cuisine, Fogón
and Lions has an open cooking space and namesake fogón - a traditional wood-burning kitchen where chefs create bold flavors over an open flame. Some of Fogón and Lions’ menu items include the 10-ounce grilled skirt steak “Churrasco” (chimichurri, papa criolla, fire roasted piquillos), wood-grilled branzino (cilantro rice, chorizo sauce, chayote slaw), Mexican-style Caesar (grilled corn, tomatoes, radish, avocado, crispy tortillas, cotija cheese, pickled onions, lime-cilantro caesar dressing) and pulpo “al fogón” (spanish style woodfired octopus with olive oil, pimentón, and fennel purée).

If you’ve visited the North Point Village lately, you may have noticed that PDI is working steadily to make way for an all-new dedicated lighting gallery in the Alpharetta neighborhood. The showroom will be the second PDI Lighting & Home location for the company (its Buckhead store launched earlier this year), and it will reside next door to the company’s existing Kohler Signature Store by PDI.
PDI has been offering lighting for more than 20 years; however, the company has recently seen an upward trend in its lighting business, with product sales increasing by 15 percent over the past five years. The decision to open a lighting-specific showroom also stems from PDI’s customer base, which consists of commercial and residential builders, interior designers, and homeowners.

Michelle has cherished memories from her youth that have helped to shape her path. Whether it was walking into the family garage where freshly picked apples were stored, or revisiting her collection of cooking magazines, Michelle’s culinary journey is well-rooted. “Before there were cellphones, I spent time with my family at my grandma’s house going through all of her Better Homes and Gardens magazines ripping out recipes and making them,” says Michelle.
“My husband Chris was going to do the project with me, but at some point, it became much more of my own little special passion project.” Michelle now partners with her daughter Peyton. “Food and all the fine details of the restaurant experience are sort of ingrained in her,” says Michelle. “She is authentic to the core and wanted to be a part of something that she could have some say in.”
For Michelle and Peyton, TBB 122 will become a special place for their guests, with cozy seating, nooks and crannies, and a place that is warm and makes you feel good.
Channeling a central California vibe, the brilliantly open-concept coffee café and grocery is full of all the scents to make the air as delicious as the food.
Originally from Middleton, Wisconsin, Michelle Sedgwick of The Sedgwick Restaurant Group has been defining food, service, and culinary excellence in the burgeoning Alpharetta restaurant scene for more than a quarter century. With iconic restaurants such as Pure Taqueria, Union, 7 Acre BarNgrill, Theo’s Brother’s Bakery, and Vinny’s on Windward, the restaurant group and Michelle have been rather busy.
