Savoring the Season

There’s something magical about the way food brings us together. Whether it’s an impromptu dinner with friends, a carefully planned holiday spread, or a spontaneous happy hour after work, food has a way of turning everyday moments into shared memories. This October, as the air turns crisp and autumn settles in, we’re celebrating all the delicious ways food connects us—from cozy gatherings to lively nights out.

Personally, I’ve always had a soft spot for a good happy hour. There’s nothing quite like catching up with friends on a perfect Texas patio at sunset, drink in hand, as laughter fills the air and the day winds down. It’s not just about the cocktails—it’s about the pause, the presence, and the people.

In this month’s Food & Drink Issue, we’re serving up a feast of inspiration. From our spotlight on local restaurants and must-try menus to the best karaoke spots where dinner turns into a show, you’ll find plenty of reasons to explore our city through your taste buds.

We’re also proud to highlight our Nonprofit of the Month: Community Garden Kitchen, a remarkable organization committed to providing freshly prepared meals to anyone in need—no questions asked. Their mission goes beyond filling plates; it’s about restoring dignity, building community, and ensuring that no one in our city goes hungry.

And with Halloween just around the corner, don’t miss our favorite spooky snacks and creative treats, perfect for parties, family nights, or simply embracing the playful spirit of the season.

Here’s to the meals that bring us closer, the stories shared around tables, and the flavors that linger long after the last bite.

Cheers,

NONPROFIT of the MONTH COMMUNITY Garden KITCHEN

Collin County, the third-wealthiest county in Texas, paradoxically faces a stark reality: 15 percent of its residents live below the poverty line.

Food insecurity profoundly affects the well-being of families. According to Community Garden Kitchen (CGK), without proper nutrition, children struggle to keep up academically, often falling behind their healthier peers and requiring additional support. Women are also at greater risk, facing higher rates of depression and mental health challenges.

Amidst these challenges, CGK was born—a ray of hope inspired by Angela Poen, its president and executive director. “In 2014, during a Bible study at my kitchen table with friends, we envisioned a kitchen to serve meals to anyone in need—no questions, no paperwork required,” she recalls.

In June 2022, CGK opened its doors as a people-focused facility dedicated to nourishing both body and soul. Central to its mission is the Globe Life Garden, a quarter-acre oasis where fresh fruits and vegetables are cultivated to supply ingredients for meals prepared in the CGK kitchen. A vast array of flowers are also grown to decorate each table in the dining hall.

A Compassionate Nonprofit Committed to Ending Hunger in Collin County

Since its opening, the organization has made a significant impact in Collin County, providing over 109,000 meals to people in need. Through its food redistribution program, more than 104 tons of food have been delivered to local pantries and charities contributing to decreasing hunger in our neighborhoods. The Sack Lunch program has distributed over 10,000 meals to day laborers, homeless individuals, and people in need of help.

CGK partners with local food pantries such as Community Food Pantry, Grace Place, Grateful Gratitude, and Allen Ministerial Alliance, working collectively to combat food insecurity. In 2025, the organization expanded its outreach by launching an eightweek paid culinary internship for youth aging out of foster care. This program not only provides practical culinary skills but also includes job placement assistance, offering young adults a great opportunity to build brighter futures.

What’s strikingly different about CGK is that no IDs or paperwork are needed to enjoy a warm, nutritious meal. Known as “Angela’s Table,” this space resembles a cozy restaurant, complete with a full-time chef and part-time kitchen assistant and director of operations.

“Our 180 weekly volunteers are the heart and soul of our operation, delivering kindness and comfort to people facing hardship, creating a welcoming dining experience, rooted in dignity,” states Angela. The kitchen opens its doors Monday through Thursday from 6 to 8 p.m., offering a place where people from all walks of life can come together to dine. Visitors, whether residents of Collin County or not, can enjoy a hearty meal here.

What truly makes this place special is its steadfast focus on nourishing the body. Every meal is prepared with precision and care, blending flavors and ingredients that are not only delicious but also promote healing. With these efforts, there is hope that no one in Collin County will go to bed hungry.

Sports Bar & Grill

Bringing a “Big Stadium Atmosphere” to the Community

At G.O.A.T’s Arena Sports Bar & Grill in Fairview, game day spills across two floors, onto dozens of TVs, and through three separate audio zones. Texas Rangers fans can cheer in one section, while Dallas Cowboys supporters listen to their game steps away.

“It’s one of the things that sets us apart,” says Bella Becerra, general manager. “We can play three audios at the same time, which means no one has to miss their game.”

Opened in late 2023, the Fairview location is the second for the locally owned sports bar, following its original Frisco site. The sports bar aims to take the energy and atmosphere felt inside a game day stadium and recreate it with all the comforts of a restaurant setting— meaning there’s no need to wait for a play to end to get another round.

The sports bar also routinely plays the highly coveted UFC fight nights for patrons looking for a place to watch the event and grab a bite to eat.

However, the draw goes beyond the screens and sports schedules.

G.O.A.T’s has carved out a place as a gathering spot for the Fairview and Allen communities. Regulars range from business leaders holding quiet weekday lunches to families with kids taking advantage of the nearby playground. Becerra says weekday mornings are often filled with networking groups, while weekends bring in alumni decked out in school colors, cheering side by side with neighbors.

That sense of connection extends to the local teams. High school playoff games, championship runs, and even student-athlete milestones have been streamed on the big screens, including Becerra’s own daughter’s wrestling match when she qualified for state.

“Texas teams are usually the ones that will bring the most crowd,” says Becerra. “We also support local sports, and we’re happy to play games for any parents or family members who are not able to be there.”

“We want people to feel comfortable and at home here,” Becerra adds. “This is a place for the community.” CONTINUED >

The food at G.O.A.T’s matches the high-energy atmosphere, with game-day staples like “dirty” nachos piled high with fresh jalapeños, cheese, and veggies. For those looking for something more elevated, lamb lollipops often surprise guests with their fine-dining quality. However, the undisputed star is the wings.

“Our wings are the best,” says Bacerra. “We put a lot of love and pride into our wings, and they are hands down the most popular item. The secret to our wings is the whole process…we marinate them for 10 hours before putting them in the fryer.”

Behind the bar, G.O.A.T’s boasts 64 beers on tap to cater to draft lovers, while cocktails like the hibiscus-infused “Tight Leggings” martini draw a loyal following. During the week, the sports bar has happy hours from 11 a.m. to 7 p.m., where patrons can score $2.99 domestic beers and $5 wells.

Recently, G.O.A.T’s has been expanding its playbook, offering patrons a chance to trade their game-day chants for music trivia and karaoke nights.

“Our main focus is sports, of course, but I’m trying to incorporate something new and fun for the community,” Bacerra says. “The community has been really good to us. I’m very blessed.”

A Taste of Europe

EXPERIENCE THE FLAVOR OF FRANCE AT ANDREAS PRIME STEAKS & SEAFOOD

ARTICLE BY DEBORAH DOVE | PHOTOGRAPHY BY ADELINE MERRICK: MERRICK MULTIMEDIA

Allen, Texas, may be thousands of miles from the sun-soaked tavernas of Greece, the bustling tapas bars of Barcelona, and the rustic trattorias of Italy, but international chef Andreas Kotsifos brings the same worldly flavors to the suburbs with Andreas Prime Steaks & Seafood.

A native of Greece, Andreas—the executive chef and owner of the upscale restaurant that opened in July 2023—traveled extensively throughout Europe, honing his palate before moving to New York. There, he opened his first restaurant, Café Inferno, which showcased Californian-Mediterranean cuisine. Since then, his forty-plus years of culinary experience have taken him across Athens, Barcelona, Rome, Paris, Manhattan, Pennsylvania, Florida, and Dallas, where he served as executive chef at the renowned The Palm before it closed.

At his namesake restaurant, Andreas focuses on the refinement of French cuisine, weaving those influences throughout both the menu and the space. Art Nouveau touches set the tone, with elegant peacock motifs appearing in stained glass and artwork. The dining room exudes French cosmopolitan style: a long banquette anchors the space, chandeliers sparkle overhead, and candlelight enhances the warm, romantic ambiance.

The bar and lounge carry a speakeasy charm, offering guests a full bar with signature cocktails such as the Andreas Old Fashioned, served in a smoked cloche, and the floral Lavender 75. Alongside, diners can enjoy an impressive, curated wine list and tableside martini cart service—an experience that elevates each evening into something memorable.

The menu is equally cosmopolitan. While Andreas Prime Steaks & Seafood honors the tradition of a classic steakhouse, Chef Andreas infuses each dish with European flair. Small shareable plates such as lamb meatballs, oysters Rockefeller, and roasted escargot burgundy recall the conviviality of Spanish tapas culture. Signature entrées highlight French sophistication, from Bouillabaisse (a seafood medley in saffron-fennel broth) and Lobster Thermidor to Beef Wellington wrapped in phyllo with mushroom duxelles and sauce périgourdine.

A raw bar, inspired by the aristocratic dining traditions of Europe, elevates the experience further with caviar service, steak tartare, tuna tartare, and freshly shucked oysters. Even quintessential steakhouse selections—prime filet mignon, dryaged tomahawk ribeye, and A5 Japanese Wagyu—carry Andreas’s unmistakable touch.

“It’s all in the touch,” Chef Kotsifos explains. His homemade breads, French onion soup, and lobster bisque are already house favorites. Dessert is no less spectacular, with flambe carts presenting tableside classics like bananas Foster and baked Alaska.

Whether for a romantic date, an anniversary, a milestone celebration, or simply the joy of experiencing fine cuisine inspired by the flavors of Europe, Andreas Prime Steaks & Seafood offers Allen an unparalleled dining destination.

Beyond nightly service, Andreas Prime Steaks & Seafood has become a hub for special occasions and culinary events. Over the past year, the restaurant has hosted exclusive tasting dinners paired with world-class wines from estates such as Caymus Vineyards and Duckhorn Vineyard. Seasonal celebrations—Easter and Mother’s Day brunch, Thanksgiving dinner, and themed events like Barcelona Nights featuring flamenco performances—draw guests from across North Texas. The restaurant also has a private dining room for private events, with customized or a la carte menus.

SMOKE

A STORY OF TRAUMA, HEALING, AND COMMUNITY

When Allen Fire Chief Jonathan Boyd teamed up with filmmaker Josh Gallas of Prelude.tv, they set out to tell a story bigger than firefighting. The result was Smoke , an award-winning short film that explores the hidden toll of trauma on first responders, their marriages, and their families.

The film follows a firefighter returning home after the worst shift of his career—forced to switch instantly from the weight of tragedy to the role of husband and father. For Gallas, the story was personal. His wife, an ICU nurse during COVID-19, often came home devastated from long, grueling shifts.

Chief Boyd immediately saw the importance of the project.
“Firefighters don’t always have healthy ways to deal with what they experience.”

“She didn’t know how to process what she was seeing every day,” Gallas said. “That put a huge weight on our marriage. We had to learn new ways to talk, listen, and heal together.”

Chief Boyd immediately saw the importance of the project. “Firefighters don’t always have healthy ways to deal with what they experience,” he noted. Grounding the film in everyday struggles of communication—rather than dramatic spectacle—Gallas and his team created something both relatable and deeply moving.

Smoke has been adopted by fire departments nationwide as part of their training curriculum to teach new recruits how not to bury their pain but to talk about it.. The film has been selected for more than 20 film festivals worldwide and has earned numerous awards, including Best in Show at the El Dorado Film Festival, the Special Jury Prize for Cinematography and Direction at the Dallas International Film Festival, and Best Texas Short at the Austin International Film Festival.

For Allen, Smoke is more than a film. It’s a reminder that trauma touches everyone, not just first responders. Whether in hospitals, homes, or businesses, the challenge of communication in the face of hardship is universal. We all benefit by increasing our ability to process trauma and hold space for difficult discussions.

Gallas and his team are now developing Smoke into a feature-length film, ensuring its message will reach even further.

EVERY CHILD DESERVES A HAPPY HALLOWEEN

GOBLINS, GOONS, AND GUMMY WORMS FOR ALL

Halloween is a widely anticipated holiday, but it can bring on anxiety and dread for those who suffer from food allergies, sensory overload, or certain diseases.

As a community, it’s important to educate ourselves on the physical and emotional impact these conditions have on our kids. For those children who feel excluded—and yet have to watch their costumed friends giggle as they devour Kit Kats and Snickers —we can make a difference.

Here are some simple alternatives that can help keep all our kids feel safe and included:

COLORED PUMPKINS

Colored pumpkins are a terrific visual cue for awareness. A blue pumpkin signals that a child has autism or sensory processing disorder. A teal pumpkin indicates that a house offers non-food treats (think pencils, bookmarks, and stickers!) for those with food allergies. A purple pumpkin represents epilepsy awareness.

NON-FOOD “FUN” ITEMS “INVISIBLE” DISABILITIES

Food allergens can impact a child’s quality of life in a major way—and are secretly disguised in non-food items too. For example, when choosing non-food “fun” items, be careful of things like moldable clay which may contain wheat. For those with celiac disease, this is a red flag. Similarly, provide non-sugary treats as an alternative choice for diabetic children (Rice Krispie treats made with stevia, anyone?).

02

SIDEWALK TREATS

03 04

Rarely do we speak of “invisible” disabilities, which can completely disrupt a child’s life. Kids with focus issues, anxious tendencies, or those with certain autoimmune conditions can also hide emotions behind their own masks. Thus, it’s best to refrain from asking things like “Why aren’t you wearing a costume?” Or, even worse, to push for an answer if you are met with silence to your question.  01

For children who may suffer from sensory overload, providing treats in a bowl closer to the sidewalk may be helpful. This option allows them to grab candy without having to walk up (on a sometimes darkly lit pathway), ring a doorbell, and face a person with a scary mask! Children with limited mobility (or in wheelchairs) may also appreciate this easier accessibility to goodies.

STUDENT of the MONTH

When some seniors see Advanced Physics on their schedule, they start negotiating with parents and school administrators to update their class list. But not Miles Lewis. Instead, Miles asked for robotics classes, leading to a transformative year full of competitions and volunteerism.

As a member of the Allen Eagles Robotics, Miles discovered his knack for understanding and fixing just about anything. As a result, he was invited to be a member of the four person Pit Crew as the Fixer. His hard work paid off for the team, which earned two CocoBest (Collin County Boosting Engineering, Science, and Technology program) first place medals, two gold UIL medals, and multiple trophies and plaques for the awards case at the STEAM Center.

In addition to taking part in competitions, Miles also enjoyed helping others discover their love of robotics. Last year, Miles clocked in a minimum of thirteen hours a week working at the STEAM center, mentoring younger teams and assisting at tournaments. This past summer, he also spent over 200 hours teaching robotics camps throughout Texas via Eaglets Camp Code. As he continues his senior year and looks forward to college, Miles can’t wait for his next adventure in robotics.

FAST FACTS ABOUT MILES

• The Lewis family has three dachshunds: Charley, Corby, and Kandace.

• Miles has the same birthday as his younger brother, Spencer: April 26.

• He enjoys reading fantasy novels, such as Harry Potter and the Lord of the Rings series.

• Miles has visited multiple state and national parks, including Big Bend National Park, Yellowstone National Park, and the Monterrey Bay National Marine Sanctuary.
