UNM CHOOSES NEW LOBOS FOOTBALL COACH
Our publisher, a former high school head coach and college coach, sat down with Jason Eck, the new head coach for the University of New Mexico Lobos football program. Jason has 26 years’ experience in college football and is coming from the University of
Prior to becoming Idaho’s head coach, Eck spent six seasons with the South Dakota State Jackrabbits as offensive line coach and the final three as offensive coordinator. In 2019, he was named the American Football Coaches’ Association FCS Assistant
Idaho, where he led the Idaho Vandals to three straight playoff berths, including the quarterfinals. In the 22 years prior to his arrival, the Vandals totaled just two winning seasons.
Coach Eck is very enthusiastic about his family moving to New Mexico. He told us, “New Mexico has a great fan base. I’ve seen how the community rallied around their basketball team as they've had success and going to the tournament back-to-back years. I thought this was definitely a community that would rally around and wants to support a winning team...something they can be proud of. I thought a place like this needed someone who's excited to be here and could get the community excited, and transform the program. Also, I love the weather down here...being around sunshine after all those years of cold weather."
Coach of the Year. Before his time at SDSU, Eck was the offensive line coach and run-game coordinator at Montana State in 2015. The Bobcats were 18th in the FCS for rushing offense and 23rd in the FCS for sacks allowed. MSU was third in the FCS for scoring offense during his one season in Bozeman.
A 1999 graduate of the University of Wisconsin, Eck played on the Badgers’ 1998 Big Ten Championship team, which went on to win the Rose Bowl. He began his coaching career as a graduate assistant at Wisconsin under head coach Barry Alvarez and later moved on to Colorado.
Coach Eck said, “Having the experiences of working with many winning coaches, I know that having a vision for players and showing belief in them is important. If they feel that you believe in them as their coach, they'll raise
their level to get to your level of expectation. When I've moved to other teams during my career, I wrote down all those coaches that I've worked with before and what I thought their strengths were, and what I thought their blind spots or areas that they weren't strong in, and try to really add to my own philosophies.”
The coach talked to us about the changes in college football. “I really think that a lot of the transformations have really come probably in the last five or six years. I think there are two things that happened within a couple of years of each other that have really changed football. One is the advent of the transfer portal, where guys had immediate eligibility. They could transfer at the same level and play right away. Then, in 2021, the ‘name, image, and likeness’ provision allowed players to benefit financially from their playing. I do think it's a positive because players really just have the opportunities to do what coaches have always done.”
Coach Eck sees a lot of benefits that a winning Lobo team can have on the community. “I think something that excited

me about this opportunity is being at the biggest university in the state, and I think Lobo football can really have a positive impact...not just in the university but in the city of Albuquerque and the state of New Mexico. I think there's so many things that are special about this area that maybe the average person in America doesn't know anything about. I didn't know that we have such a vibrant scene for filmmaking here. I didn't know about the Balloon Fiesta. I didn't know how great the weather here is with all the sunshine we get. I think us having success in football can really open that door to people throughout the country to know more about New Mexico, and that's one of my goals. We can invigorate this fan base and invigorate this city and see them have a lot of pride for what we're doing and get them to fill the stadium on Saturdays and really have it be a positive message of what's going on in New Mexico to help the rest of the people throughout the country learn more about what a great state this is.”

Owner Doug Lanham owns three outstanding Asian restaurants to New Mexico

Doug Lanham, the founding partner of Jinja Bar & Bistro, has put a lot of thought into the food, ambience, and service of his three Asian restaurants (one in Santa Fe, two in Albuquerque). He told us, “We wanted to provide a memorable sensory experience that our guests can have, and we really worked on our layout. We worked on the acoustics, the music, and the lighting, so if you were sitting at a table having a conversation, you can still hear the music. You can make out the words but still have a nice, pleasant conversation with someone, and there’s no

bright lights shining in your face. We brought in a sound engineer and a lighting specialist to create a warm feeling in our restaurants.”
After graduating from UNC Chapel Hill, Doug spent 35 years in the restaurant industry, the majority of the years with Brinker International (Chili's Restaurants.) He says, “Norman Brinker was kind of the godfather of casual dining, so I learned a lot from him.”
Doug told us, “I was semi-retired in Santa Fe where I met some great folks. We threw some of our talents into the pot and came up with the Jinja concept that started in 2000, and we did quite a bit of research before we opened in Santa Fe in 2002.”
The research included hiring restaurant consultant Paul Liu from Denver, and then traveling to New York, Chicago, and San Francisco to sample Asian cooking. The menu was developed by tasting dozens of dishes and then including their favorites.
Doug says, “There are five different countries represented on our menu... Japan, China, Thailand, Vietnam, and Indonesia.” All three restaurants feature travel posters and paintings from Pacific locations that really give each place an authentic atmosphere.
Quite a few of the paintings were done by the late actor Gene Hackman. He and his wife, Betsy Arakawa were partners in the Jinja restaurants. Many of the paintings by Hackman were in the style of Paul Gauguin, in keeping with the Pacific theme of the restaurant’s decor.
Doug related a story about a particular mural that Hackman produced. “Many people didn’t know that Gene was an incredible artist. I mean off-the-charts good. When we remodeled the Santa Fe location, we had a fifteen-foot blank wall, and we asked Gene if he could paint a mural to fill the space. Initially, he balked at the idea of working in that scale, but we razzed and teased him into taking it on. Three weeks later, he called us to his studio and revealed this incredible mural that’s about thirteen by five feet. That’s the piece everyone comes in to see.”
When Hackman and Betsy passed away, Doug was inundated with reporters asking about the couple after they found out about their relationship with Jinja. He found much of it to be insensitive. Doug says, “These people were our close friends, and we found that some of the questions were distasteful about the circumstances of their passing.”
You’ll have to drive to Santa Fe to see the mural, but the food and atmosphere of the two restaurants in Albuquerque are consistent with the Santa Fe location. They are known for their creative bar offerings.

Ok ladies, for those of you that live with your man and are not too keen on his collection of deer heads or affinity for all things Chicago Blackhawks, then let me help you create his very own man cave, that you and he can be proud of.

With how a man cave is usually done in mind, there are plenty of ways to make this hideaway both agreeable and full of style. I always start with what is most important to your man and 9 out of 10 times it is comfortable seating. So, with that in mind, I start with smart seating. Do we need a sectional? Can we get away with a cool reclining chair? Do we need Barstools? Comfortable, durable, and stylish seating is my jumping-off point.
Next, of course, there will need to be a TV for gaming and/or sports watching. Try and get him the size he wants, if it can work in space and not be too obnoxious (ladies, you’ll thank me later) because this is all men truly care about. He gets his big TV, then you have more of an opportunity to get what you want in the rest of the house. It’s a win-win.
Lastly, without getting too “theme-y,” I organize what he loves and treasures into a gallery wall. I recently did one wall of really cool wallpaper for a husband that was a huge Star Wars fan. It was a black and white Star Wars print that gave this aficionado a fun way to bring his subject matter and style together.
No matter who you are or what you like, I believe every person needs a space where he or she can relax, breathe and be joyful in. Man Caves are no exception.

Both Nicole and Mark worked as executives for Enterprise Rent-a-Car. The couple experienced some of the "best training in the world" with the company but wanted to create a new chapter in their lives. Nicole was a corporate sales manager for Enterprise and was recognized as the number one national account manager worldwide. Mark was the vice president of New Mexico, part of Southern Colorado, and Northern Texas.
After 22 years with the company, Mark says, "I felt like doing something more entrepreneurial." Together with Nicole, he launched Action Coach in Albuquerque. Mark discovered his greatest ability was developing talent. Mark played high school and college basketball and coached basketball as an assistant varsity and C-team coach. His coach advised him to try coaching adults. Mark knew he had a gift he could share. "I was interested in coaching, and I was interested in business." It was a chance for him to develop talent off the court. He says, "I've really been doing this my whole life."
Mark has coached over 1000 businesses and consistently ranks among the top three coaches in North America. Mark says, "The most important element of growth is a person's personal growth. Victor La Cerva, MD, worked for many years as a pediatrician and eventually became the Medical Director of Family Health for the Department of Health in New Mexico. Through his work, he rec ognized the need for connection among men to improve their physical health. In the 1980s, he co-founded New Mexico Men’s Wellness with his co-workers.
The first conference was held in 1985 and focused on physical health, dietary recall, and exercise testing.
Over the years, the group’s focus became helping men become more emotionally fluent. “It was the emotional aspect of men’s awareness that seemed most important to develop,” says La Cerva.
La Cerva’s group recognized that some men struggled to improve due to their habits, life circumstances, or upbringing. Through the wellness group, even veterans have discovered healthier ways to express and release grief.
Today, New Mexico Men’s Wellness is a 501(c)(3) organization that helps men become more emotionally fluent, form safe connections with other men, and help others through service.
The all-volunteer organization helps men become better men. La Cerva says it’s a way for men to form safe connections with other men without competition.
“The goal is to have a positive connection with other men that isn’t based on competition,” says La Cerva. “It’s good to get around men who are caring, kind, and trying to be of service to others.”

“La Cerva says men learn to throw those heavy rocks at bad habits so we don’t have to carry them.”
“My belief is that if men can deal with the mad, sad, glad, and afraid, then they can deal with their emotions more skillfully,” says La Cerva.
For La Cerva, the connections he has made “have been an incredibly enriching part of the journey.”
He believes when men meet regularly in small groups, their “level of satisfaction in their personal lives really increases.”
Statewide, about 35 individual men’s groups are affiliated with New Mexico Men’s Wellness. The group offers four annual retreats each year, as well as events for families and couples.
La Cerva says women are grateful their husbands found men’s wellness and notice they have become more communicative.
For Dan Scaduto, joining a men’s group was just the experience he needed. Scaduto worked as an outdoor recreation therapist. He has also helped children on the autism spectrum and individuals with cerebral palsy. After he suffered a traumatic brain injury, he needed spiritual, emotional, and physical work to get his life back.
In 2003, he discovered an international men’s group called the Mankind Project. “It changed my life,” says Scaduto. His personal growth came from introspective work with the group, which focuses on conflict resolution, emotional intelligence, and goal achievement.
Scaduto says the group makes men ask, “What kind of person do you want to be?” Scaduto discovered authenticity was what he really wanted in
his life. He formed his own functional authenticity program for others to follow in his footsteps.
Scaduto has also participated in seasonal events with the New Mexico Men’s Group. He believes men’s groups offer unique ways for men to grow.
“Both organizations are wonderful! The groups are a great chance to connect with men and connect with what kinds of ways we are making an impact on the world,” says Scaduto.

THESE DELICIOUS RECIPES ARE LIGHT, BRIGHT AND FEEL LIKE SUMMER
The sun has returned, and grilling season is upon us. With the nice weather comes vegetable gardens and fresh produce, along with the overwhelming desire to be outside as much as possible. We’ve compiled some fresh and light dishes that you can shop for at your local farmers market and whether you’re looking for a quick mid-week meal or something to grill for a crowd on the weekend these dishes won’t disappoint. These pair well together or can stand on their own!
• 2lbs. Outside skirt steak*
• 2 Tablespoons lime*
• 2 Tablespoons finely, chopped cilantro
• ¼ Cup olive oil or avocado oil
• ¼ White onion, finely chopped
• 1 Tablespoon cumin
• Salt and pepper to taste
1. Place skirt steak into gallon freezer bag
2. Combine all other ingredients in bowl and mix. Pour over steak and marinate for 3-4 hours or overnight in the fridge.
3. Bring skirt steak to room temperature by letting it sit out for one hour.
4. Get your grill hot on one side and medium on the other.
5. Once the grill is ready, wipe excess marinade off steak. Starting on the hot side, place skirt steak on grill for 2 minutes per side, attaining a nice sear.
6. Transfer steak to the cooler side of grill and cook until the internal temp is 130°. Let rest for 10 minutes (temp will rise while resting).
7. Carve and serve. This dish pairs well with beans and rice or served as tacos. Following is a chimichurri sauce that compliments it nicely.
*Outside skirt steak is a more tender cut than inside skirt steak, for this recipe outside skirt is recommended. Do not use too much lime as the citrus can cook the meat before putting it on the grill, resulting in a tougher texture.
• ½ Cup parsley, finely chopped
• ½ Cup cilantro, finely chopped
• 2 Tablespoons red wine vinegar
• 3 Cloves garlic, minced
• 1 Red chili (whole or deseeded depending on desired level of heat)
• ½ Teaspoon dried oregano
• 1 Teaspoon salt
• 1 Tablespoon lime juice (optional)
Combine all ingredients in a bowl. You can make this in the late morning and let it sit for around 4-6 hours, or you can make it the day before and let the flavors meld overnight in the fridge. Just be sure to take it out and get it to room temp before you serve it, as olive oil hardens in the fridge. Serve over skirt steak or tacos.
• 2 Ears sweet corn
• 10oz. Cherry tomatoes
• ¼ Cup lime juice
• 1 Finely chopped jalapeno or serrano (whole or deseeded depending on desired level of heat)
• ¼ Cup cilantro, finely chopped
• ½ Cup white onion, chopped
• 2 Cloves garlic, minced
• Salt to taste
1. Grill corn, you do not need to soak the corn beforehand.
2. Place corn on the grill (inside their husks) over medium heat turning every few minutes.
3. After 10 to 12 minutes shuck the corn and put the cobs back on the grill for 2-4 minutes rotating frequently to achieve that charred look and flavor.
4. Cut the corn from the cob, place in bowl and add all other ingredients. Let the mixture meld for about an hour and serve with tortilla chips or as a taco garnish.
