We all scream for ice cream

Few treats are more popular on a warm day than ice cream. With its rich flavor and cooling nature, ice cream is perfect in a cone, cup, cake, or even as a sidekick to a brownie or piece of pie. Summer may be the season when ice cream is enjoyed the most — and many people have fond memories of chasing down the neighborhood ice cream truck on summer afternoons — but ice cream is a favorite all year long.

The number of ice cream flavors is only limited by the imaginations of ice cream shop owners. New smallbatch offerings come out each week at privately owned shops. However, despite the infinite number of flavor combinations, certain ice cream flavors are more popular than others. According to the International Dairy Foods Association 2022 Ice Cream & Frozen Novelty Trends Survey, these flavors are tops in the eyes of Americans.

Ideal foods for a Summer barbecue

Summer backyard barbecues have become a popular way to celebrate summer weekends, and all eyes tend to be on the grill once a party kicks off.

Food is indeed a big component of summer barbecues. Hosts likely recognize that guests will expect to eat during a backyard barbecue, and the following are some ideal dishes to offer on a weekend barbecue.

• Salads: Some guests will be looking for lighter fare that won’t make them feel too sluggish in the summer sun. Salads can fit the bill for hungry guests who want to satisfy their cravings without feeling bloated. Tri-color pasta salad, antipasto and tossed salad make for great appetizers that pack a nutritional punch as well. Of course, don’t forget staples like macaroni and potato salad, which are often best served alongside grilled fare.

• Smoked foods: Smoking meats has become wildly popular in recent years. A 2024 report from Research and Markets indicated that the global markets for smoker grills is projected to increase from $6.8 billion in 2023 to $9.3 billion in 2030.

Barbecue hosts can consider the growing affinity for smoked foods and offer something up from their own smoker. There’s no shortage of foods that can be smoked, from whole chickens to brisket to desserts, and guests may appreciate a smoky taste of something different.

• Hot dogs and hamburgers: Though experimentation and unique offerings are sure to be appreciated, it’s also important to offer guests some traditional backyard barbecue staples. Perhaps nothing fits that bill better than hot dogs and hamburgers. Hosts and guests really favor these staples when

Adventure awaits, even close to home

It’s not uncommon for individuals to think that the ultimate vacation adventure requires venturing far and wide. But there are plenty of exciting ways to get your thrills even if you don’t stray too far from home. Here is how to plan a summer adventure right in your own neighborhood.

• Visit an amusement or theme park. Spending a day or two at a theme park or amusement park can expose travelers to different rides, sights, attractions, food, and people. Six Flags Entertainment Corporation operates 27 parks across the United States, Mexico and Canada. Water parks, summer carnivals and local theme parks also can make for fun excursions.

• Scale great heights. Figure out what is the highest peak where you live and then hike to the top of that lookout. Many of the tallest peaks in North America are along the border between the state of Alaska and Canada, but there are plenty of lofty elevations elsewhere on the continent.

• Try a new food. Experience a new culture by visiting a restaurant that serves food from a country that you’ve never visited. You can score even more brownie points if you opt for an ingredient that is new to you as well.

• Go rafting or tubing. The power of moving water is very impressive. Rafting and tubing enables people to get swept away by rapids and see the landscape as it goes rushing by. Choose a pace that suits you and build up rapid size and speed as you gain more experience.

• Try a new water sport. Stand-up paddleboarding or kayaking can be entertaining ways to enjoy the water. These are not only great adventurous activities, they’re also solid workouts for many parts of the body.

• Go fishing. Fishing may seem like a slowpaced sport, but your adrenaline soon will be pumping when a fish bites and you’re reeling in a monster catch. Some of the best times to fish are at dawn and dusk when fish are more likely to hit.

• Swim in the ocean. Head to the coast and dive through the waves. The summer months are the perfect times to take a dip as the ocean water becomes a more comfortable swimming temperature. Always swim in locations where lifeguards are present, and be sure to check red flag warnings for rip currents or rough surf. Keep an eye out for marine life as well.

• Catch a baseball game. Purchase tickets to

a game at a stadium near you and cheer on the team with thousands of other fans. In addition to watching Major League Baseball, there are many minor league teams with impressive stadiums. Tickets for minor league games may be

easier to come by and softer on the wallet. Summer adventures do not have to require traveling far. There are plenty of exciting ideas close to home.

Add a Personal Touch to a Classic Drink

(Family Features) A traditional drink that’s easy to make when entertaining, it can be easy to put your own personal twists on the Bloody Mary.

In this iteration, ditch the celery stick and complement your spicy beverage with cheese-filled perogies and bacon.

Bloody Mary

1 teaspoon red pepper sauce

1 bottle (64 ounces) tomato juice

2 cups vodka

2 tablespoons Worcestershire sauce

2 tablespoons lime juice ice wooden skewers

6 cheese-filled perogies, baked according to package directions

6 slices bacon, cooked until crispy

In large pitcher, combine red pepper sauce, tomato juice, vodka, Worcestershire sauce and lime juice; stir well.

In glasses, pour over ice.

Using wooden skewer, garnish each Bloody Mary with a cheese-filled perogy and bacon slice.

The grading system for maple syrup

Maple syrup is a sugary staple of breakfast foods and desserts made primarily from the sap of the sugar maple species of maple trees. Syrup production involves a process of tapping the trees, collecting the sap, evaporating the water, and filtering the syrup to the final product. Maple syrup production is dependent on nature and the weather during the sugaring season, which is why maple syrups vary in color and taste. Maple syrup made early in the season is generally light in color and more delicate in flavor. Maple syrup made towards the end of the season

is dark and rich. These disparities are why syrups are categorized into “grades.”

Before 2014, pure maple syrup was graded using three letters: A (light), B (dark) and C (very dark). Perhaps stemming from the grading system used in schools, people mistakenly thought A syrup was of better quality than C syrup. However, the only differences in maple syrup grades came down to color and taste — the quality and purity was identical across the grades. Therefore, Vermont, the state that produces the most maple syrup in the United States, adopted less confusing guidelines for maple syrup grading. All syrups would be lettered “A,” but more descriptive coloring names and flavors would be added. This system eventually was adopted by the USDA in 2015 and across Canada, and is as follows:

• Grade A Amber Color/Rich Taste Maple Syrup

• Grade A Dark Color/Robust Taste Maple Syrup

• Grade A Very Dark Color/Strong Taste Maple Syrup

The lighter the color and flavor the more ideal for pancakes, waffles and ice cream toppings. Grade A Dark Color lends itself to meat glazes, cookies and brewing. The darkest grade is usually reserved for commercial manufacturing purposes, such as in baked goods and sauces.

Alternatives help cooks avoid running ‘afowl’

A trip to the supermarket has become particularly expensive in recent months, especially for breakfast lovers and bakers. The rising cost of eggs garnered considerable attention as prices hit an alltime high in January 2025. By that time, prices reached $4.95 for one dozen large Grade A eggs, according to data from the U.S. Bureau of Labor Statistics. However, some shoppers have encountered prices as high as $8 or $9 per dozen, depending on location and demand. Some estimate that egg prices may even increase throughout 2025. A strain of highly pathogenic avian flu known as H5N1, which is decimated the country’s poultry flocks, is largely to blame for the sticker shock. These prices are ruffling the feathers of consumers who have spent years confronting rising food costs on many other items. High prices on eggs are also being coupled with egg limits and shortages. One of the ways to manage may be to temporarily reduce reliance on eggs by utilizing some alternatives. While there are no perfect substitutes, these ideas from the Culinary Institute of America and Healthline may help.

Flax

Mixing flaxseed meal with water can produce a flax gel that can add structure and bind ingredients in baked goods and sweets. Flax also contains fat, so this gel can add moisture and fat much like eggs. For each large egg, mix 1 tablespoon of flax meal with 3 tablespoons of water and let sit until it has thickened.

Applesauce

Applesauce can replace an egg in most recipes. Use 1⁄4 cup of unsweetened applesauce per egg. If you don’t have unsweetened applesauce, reduce the amount of sugar

or sweetener in the recipe.

Fruit purees

Applesauce isn’t the only fruit that can replace eggs in baked items. Mashed bananas will work (1⁄2 of a large banana per egg), but the finished product may have a mild banana flavor. Avocado or pumpkin puree also can suffice and won’t affect the taste as much as banana. Keep in mind that baked goods made with pureed fruits may not brown as deeply as if they had eggs in them, but they will be dense and moist.

Aquafaba

Egg whites can be whipped to make meringues or add a light and airy texture to various foods. Aquafaba can replicate this in recipes without a need for eggs. Aquafaba is the cloudy liquid that canned chickpeas (garbanzo beans) sit in. Drain and separate the chickpeas and use 1⁄4 cup of aquafaba for one egg and 2 tablespoons for an egg white. If the aquafaba seems too runny, simmer it to thicken.

Tofu

When seasoned with bold flavors and stirred well, firm tofu can mimic scrambled eggs. Silken tofu can be blended into a puree that is like the creaminess of eggs in sauces like hollandaise.

Potatoes or pumpkin

Eggs often are used as a binder in ground meat dishes like meatloaf or meatballs. Eggs also help hold breadcrumb coatings on chicken or veal cutlets. Mashed sweet or regular potatoes can be used in place to help coatings cling or to hold together meat mixtures.

Individuals may have to adjust ingredients to compensate for the high cost of eggs.

2 kiwis, peeled and halved

2 limes, juice only

Unique ways to volunteer

Individuals can give back to their communities in various ways. Some may sign up to work with a local fire company, while others may help to organize community-wide events that inspire people to get out, meet their neighbors and take pride in their towns and cities. Indeed, the opportunities to make a difference in one’s community abound, especially for those willing to consider unique ways to volunteer.

• Share your expertise. Established professionals with ample experience in a given arena can be particularly helpful with community initiatives. For example, experienced project managers can volunteer with local government offices and help to plan town-wide celebrations that bring locals and local retailers together. Experienced accounting professionals may volunteer with local senior centers to offer complementary or low-cost tax services to aging community members living on fixed incomes.

• Help to raise funds. Fundraising may not be the first activity individuals associate with volunteering, but charitable organizations must be able to continuously raise financial support to meet their missions. To make the syrup: In a large microwave-safe glass measuring cup with pour spout (one holding at least 3 cups) or a bowl, add the maple syrup, pineapple preserves, apple jelly, horseradish, pepper, and salt; whisk to combine.

Microwave the mixture on high for 35 seconds. (You also can heat it in a small saucepan on low until the mixture is warm.) Stir and taste, adjusting the flavor if desired. Set the syrup aside.

Place the toasted waffles on a large serving platter. Top each waffle with a piece of chicken. Drizzle the chicken-waffle bites with about 1 teaspoon of the syrup. Garnish with the parsley, if desired, and serve with the remaining syrup and hot sauce.
