W

HAT HAPPENS behind the closed doors of a magazine office used to be kept strictly secret, a mystery to all but the editors and photographers who worked to create those beautiful pages. Well, we don’t think that’s fair. Maybe it has something to do with turning 40, or maybe we’re just so excited about our yearlong celebration plans—but we’ve decided to share some of the very best stuff with you before our pages are even sent to the printing press.

That was the thinking behind our first-ever live cover shoot, featuring actor, blogger and health advocate Lisa Ray. The Toronto-born beauty has 250,000 followers on Twitter, and she burns up Instagram with scenes from her many travels. Plus, she’s uncommonly candid and comfortable on social media, which made her a perfect partner. You’ve probably heard of actors who retreat to the solitude of their trailers between scenes. That’s not Lisa. She laughed and chatted with the crew, answered your questions on Twitter and liberally shared pics from her own phone throughout the day. That’s the definition of being Canadian, for me: It’s having a choice about the kind of life I want to create and where I want to go. You’ve called yourself a “three-flag” citizen, dividing your time between Hong Kong, India and Canada. What do you appreciate about coming back home? The luxury of creating the kind

of life you want is really powerful, and most Canadians have that choice. We should be really proud of that! Toronto, I think, is one of the world’s greatest social experiments. You see couples of so many different mixed ethnic backgrounds, or same-sex couples, and it’s no big deal here. But let’s not forget that it’s a big deal in the context of the rest of the world. All the travelling you do must be stressful. How do you stay centred? Meditation is our greatest spiritual technology—and

there’s a great app I use when I’m travelling and shooting called Buddhify. It’ll give you a brief guided meditation that works with what you’re doing in your day. Yoga is huge for me, and there are great online classes at yogaglo.com. JUNE 2015 | CANADIANLIVING.COM

How do you prep for a photo shoot? Sleep! That’s about it. And

I would say sleep is one of my beauty secrets. I can’t say enough good things about it. Your body can only heal when you’re sleeping, and everything comes into balance. Eight hours for me is a bare minimum, and I could go even longer. I’ve been experimenting with power naps. You’re known for your great style. What’s your favourite thing to wear? I’m really moody about my clothes, so there are

times when I want to glam it up and I’m all over that! I have a lot of friends who are fashion designers in India, and Greta Constantine in Canada is one of my favourite designers, so I have a lot of choice. But, in general, on a daily basis, I like comfy pants—either jeans or this great pair of [eco-designer] Laura Siegel silk-crêpe pants that I love; I adore the drape on them.

lthough I’ve lived in this country my whole life, feeling the Canadian sun on my bare arms for the first time each spring is always an unexpected pleasure. No heavy coat or sleeves—I feel so light and free! Then, I look down and realize my skin has the texture of an alligator’s and, oh, yeah, I forgot to wear sunscreen. Sleevefree season is so short, and there’s so much bundling up that goes on between brief spurts of warm weather, it can take awhile to get back into those good habits. If, like me, you’re pathologically forgetful about such details as exactly how much sunscreen is needed per full-body application (it’s two tablespoons, by the way), you’ll want to read “Outsmart the Sun” on page 39. It’s a handy mini reference of sun-care best practices, including which you should apply first: sunscreen or insect repellent. Even before the coats come off, we Canadians eagerly embrace the return of alfresco dining. (I like to joke that any restaurateur with a patio large enough to fit a few tables and chairs is sitting on a gold mine.) Of course, you don’t have to leave home to enjoy a meal outdoors. If you’re looking to perk up your own patio, flip to page 78 for four different but equally gorgeous ways to dress a simple

teak dining table. Once your place settings are figured out, all you have to do is put together some of the recipes from our appetizer menu (page 101) and invite a few of your favourite people to partake. Instant party! Now, if guest editor Lisa Ray had her way, it would be summer every day. Though she’s a proud Canadian (turn to page 12 for her thoughts on coming home), she’s only half joking when she says, “We should’ve taken over Turks and Caicos when we had the chance!” The lovely Toronto native craves heat but was nonetheless game to model a series of sleeveless and decidedly summery outfits on the chilly day of her Canadian Living photo shoot. WHEN I SAW Andie MacDowell walking toward me at the Peninsula Beverly Hills hotel in California, her signature corkscrew curls bouncing, I felt faint. You’ve been a L’Oréal Paris spokesmodel for 30 years. How has the industry changed during that time? We’ve adjusted our ideas of what we see as beautiful. I’ve seen wonderful changes for women and the empowerment of women. We can still improve, but we’ve made great strides.

You live in Montana. What’s your style sense at home? I don’t think about style in Montana; I put conditioner on my hair and go hiking. When I go into town for a yoga class, people aren’t fashion-conscious; they buy used clothes and put them together in an artsy way. They’re not into money, either, which is why I like living there. There isn’t an attachment to things. It’s more about enjoying life. How have you adapted your beauty routine over the years? You lose your eyebrows as you get older. When I was young, I didn’t have to think about it because I had huge, thick eyebrows. Now, I don’t go anywhere without filling them in. You get a little bluer, a little thinner around your eyes, so I use concealer and a little blush. I do those few things, but I don’t have anxiety over it. How do you handle aging in an image-obsessed industry? I don’t like the word “accepting”; I think “embracing” is better. I love when a tree is teeny-tiny, and I love when a tree is big and strong. They’re both beautiful—just different.

BORN IN THE WRONG ERA: Never did a phrase ring more true for Lisa Ray, our guest editor, who has long fantasized about “a great, tragic artist life” set in early 20th-century Paris. When she moved to Europe (dividing her time between France and Milan) for three years to live with an Italian fashion photographer, her Parisian fantasy remained intact. “It’s the single most stunning, inspiring place on the planet,” she insists, gushing about traipsing through her favourite neighbourhood (Le Marais), noshing on galettes (a French pastry) and soaking up the architecture. “Parisians mix the old and the new,” she says. “There are beautiful 18th-century buildings side by side with the Centre Pompidou, which looks like the building’s guts have been turned inside out.” Ray says she can almost feel the ghosts of past decades roaming the cobblestone streets. The city’s joie de vivre is also a source of inspiration. “Live for the moment. That’s the kind of Parisian attitude I love,” she says, thinking of Frenchwomen who embrace individuality, strive to age gracefully and eschew trends. A true Parisian finds her best accessories in small boutiques, not big-box stores. “You can go into a shop where they’ve been making gloves for 200 years,” she says, smiling. “Wellmade pieces give your whole ensemble personality—that’s what you keep.” Ray treasures purchases from her time in Paris and still wears a fragrance she picked up while there. Hair Since Lyris covers her greys with at-home hair colour and prefers to airdry her natural waves, our hair team gave her a versatile cut and colour that are easy to maintain. Marilisa Sears, artistic director for Marc Anthony Hair Care, removed length and added layers to draw attention to Lyris’s cheekbones, leaving the strands long enough to pull back into a ponytail. Julie Coupland, senior master stylist for Marc Anthony Salons, applied a subtle ombré effect by adding vibrant red to the ends while keeping the roots a deep hue that Lyris can easily retouch at home. She wrapped a few sections around a clip-less curling iron to enhance the waves, then finished the ends with a nourishing oil. “The less you fuss, the prettier it is,” she says.

Skin This busy mother hadn’t had a facial in more than a decade and admits to being a longtime soap user and sometime moisturizer. The ingredients that hold a bar of soap together have a higher pH than products formulated specifically for cleansing the face, so soap often has a drying effect. Amanda Lindsay, skin therapist at Dermalogica’s International Dermal Institute, educated Lyris on the three basic steps to help achieve perfect skin: cleansing skin properly (no soap), exfoliating regularly (once or twice a week) and moisturizing every morning and night. With Lyris’s birthday looming, her main concerns are dryness and aging skin. “The sun is number one as far as accelerating aging,” says Lindsay. She recommends that everyone apply a sunscreen of at least SPF 30 daily under their makeup.

The Paleo Weigh In Is eating the way our prehistoric ancestors ate a good way to lose weight? Or is it just another fad diet? Get the facts. Perspective The Paleolithic or Paleo diet maintains that we’re genetically programmed to eat like our prehistoric ancestors supposedly did. It promotes hunter-gatherer foods like meat, fish, vegetables, fruit and nuts, while removing agriculture-dependent foods, including all grains, legumes, milk products, refined sugar and salt. Strengths: Encourages eating omega-3 rich fish, nuts, vegetables and fruit, and avoiding low-nutrient processed foods. Weaknesses: Excludes foods important to health and makes getting enough fibre, calcium and vitamin D among others challenging. It’s also difficult to stick to.

Food Restriction and Weight Eating a balanced diet that includes nutritious foods from all four food groups is the best advice for maintaining health and weight loss. People who restrict foods too much are more likely to struggle with weight in the long term, and cutting out favourite foods completely can leave us obsessively craving them. It’s more effective to make small, progressive dietary changes over time, and enjoy what we eat.

We’ve Evolved Genetically The Paleo diet is based on a flawed interpretation of anthropology rather than good science. For instance, archeological evidence from dental plaque analysis shows that humans did in fact consume grains such as barley quite some time before the dawn of agriculture. Our genetic makeup has also evolved since the Stone Age to adapt to the introduction of new foods. For example, many ancient European, African and Middle Eastern populations have evolved to tolerate milk’s lactose, past childhood.

Missing Out? While a higher protein diet like the Paleo diet can help with weight loss, it doesn’t have to exclude legumes, whole grains and milk products. In fact, doing so is counterproductive. For instance, legumes provide many health benefits, whole grains are associated with a reduced risk of being overweight, and milk products, as part of a calorie-reduced diet, can lead to more effective weight loss. Milk products also provide satiating, high-quality protein.

Navigating Menopause Are you ready for the unique journey to your last period? Hormone therapy can help ease the transition. Read on to learn more about what might be right for you. BY DILIA NARDUZZI

HE EXTREME NAUSEA. The headaches. I was sure I was pregnant. The timing was right: I expected my period in just a few days. One pregnancy test and a negative result confirmed I wasn’t, and sure enough, my period came. That was two years ago, but those symptoms and a few others have plagued me at the same time every month since. My new PMS symptoms include insomnia, increased moodiness and anxiety. About a year ago, I started to experience pain during ovulation that lasted up to five days a cycle. A battery of tests (Pap smear, swabs for yeast and other infections, urine sample, blood work, as well as an ultrasound) revealed a uterine fibroid in addition to low iron and B12 levels. But otherwise, everything seemed normal. So what was going on? Hormonal upheaval, that’s what. I had always thought I’d be fretting about “the change” in my 50s. But in my mid-30s? I have an upcoming gynecological appointment I’m hoping will shed more light on my health. In the meantime, I contacted hormonalhealth experts to help me understand what’s going on and what may lie ahead.

PMS

“HORMONAL CHANGES can start in the 30s and 40s,” says Dr. Jennifer Pearlman, attending staff physician at the Menopause Clinic at Mount Sinai Hospital in Toronto and medical director at PearlMD Rejuvenation. Symptoms, from sleep issues to mood swings, can be deceiving—it’s not all night sweats and hot flashes. No matter how young we feel in our 30s, hormonal changes through the menopause transition can be considered part of the reproductive aging process, she says. “Egg quality declines with aging,” says Dr. Pearlman. “Ultimately, it’s not the quantity of eggs that limits reproductive potential,” she explains. “At menopause, the ovaries lose their potential to ovulate rather than the ovaries running out of eggs.” We may also be creating less progesterone, a hormone produced by the ovaries at ovulation that’s intended to support an early pregnancy. Early in the menopause transition, progesterone levels fall, which can lead to symptoms for some women in their mid-30s. And in the case of increasing PMS symptoms, the decline in progesterone combined with a constant or increasing amount of estrogen creates a potent hormonal cocktail. Other health issues that become common during this early transition include uterine fibroids and cysts on the ovaries and breasts.

TREATMENT Reducing sugar and caf-

feine intake, getting adequate rest and exercising regularly can all help reduce symptoms of PMS, says Dr. Jennifer Blake, CEO of the Society of Obstetricians and Gynaecologists of Canada. Progesterone therapy is an option for treating uterine fibroids and cysts on the ovaries and breasts. Dr. Pearlman prefers to prescribe bioidentical progesterone, taken orally or applied vaginally in the second half of the menstrual cycle, when progesterone levels are falling. (Bioidentical hormones are identical in molecular structure and function to what the body once produced.) According to Health Canada, hormone replacement therapy has benefits and risks, regardless of origin. Hormone therapy must be carefully monitored for safety and efficacy, so be sure to keep your doctor apprised of your progress. Low-dose contraceptives may also be prescribed to level out the hormone fluctuations, says Dr. Blake.

PERIMENOPAUSE

MOST CANADIAN women experience menopause after the age of 45 (the average age is 51), so by the time a woman reaches her mid-40s, she’s usually entering the first stages of perimenopause—the time leading to a woman’s final menstrual period. How long a woman spends there varies, but it typically lasts two to three years, says Dr. Blake. Weight gain is more common now, sleep and mood disturbances worsen and the menstrual cycle may shorten. Symptoms such as insomnia, rather than the broader developments of perimenopause, are what lead some women to seek help. During late perimenopause, periods can become irregular and hot flashes can occur. CANADIANLIVING.COM | JUNE 2015

MENOPAUSE TREATMENT “In a younger woman who experiences premature ovarian loss or early menopause, birth control pills may be prescribed,” says Dr. Blake. “It’s a simple age-appropriate way to provide estrogen and progesterone.” She adds that, in a woman over 45, the treatment would depend on her general health and whether she’s still menstruating. Dr. Pearlman says an intrauterine device (IUD) that releases hormones—but not estrogen—may be prescribed to control irregular menstrual bleeding. (Bonus: It also provides protection from unwanted pregnancy.) “Oral synthetic estrogen, used in oral contraceptives, may increase the risk of blood clots and stroke in older women. For symptoms of perimenopause, when contraception is not needed, progesterone alone may be an option.” Research has also suggested that lowdose antidepressants can be effective in the reduction of hot flashes, even when the woman does not suffer from depression, says Dr. Pearlman. MENOPAUSE OCCURS with the final menstrual period and is confirmed when a woman has missed her period for 12 consecutive months without any medical cause. Estrogen levels, once erratic during perimenopause, now dip to lower levels typical of the postmenopausal stage. Hot flashes, night sweats, a waning libido and short-term memory issues are the norm. Symptoms can occur years before, during and for several years following menopause. TREATMENT Treating menopause is not as simple as loading up on missing estrogen. A widely published Women’s Health Initiative study reported in 2002 that menopausal women using a regimen of oral estrogen derived from pregnant horses and synthetic progestin therapy were at increased risk of breast cancer, clots and stroke. The use of menopause hormone therapy plummeted. By 2012, however, 15 of the top medical associations, including the Society

of Obstetricians and Gynaecologists of Canada, endorsed a statement observing the significant benefits of hormone therapies for menopausal and recently postmenopausal women, noting that hormone replacement therapy “is an acceptable option for the relatively young, up to age 59 or within 10 years of menopause, and healthy women who are bothered by moderate or severe menopausal symptoms.” How close to menopause a woman is when she takes estrogen (and, sometimes, progesterone, too) seems to be an important factor. If you’re a good candidate for the treatment, the closer, the better. If your symptoms are limited to “vaginal dryness or discomfort with intercourse, the preferred treatments are low doses of vaginal estrogen,” says the 2012 statement. Recent studies have shown that menopausal hormone therapies, when started early enough, have a preventive role in combating heart disease and osteoporosis. When can you expect to be finally symptom-free? It varies from woman to woman. Some can expect symptoms to end soon after menopause is official; others will have symptoms for years. The majority of studies point to the upper body (back, shoulders, face and ears) as the most common area for men and women. The Canadian Cancer Society recommends using a lip balm with SPF 15. And don’t forget that sunscreen is only one weapon in the sun-protection arsenal: seek shade and cover up with clothing, sunglasses and a broad-brimmed hat.

How much sunscreen do I need?

A An adult should apply two tablespoons of broad-spectrum sunscreen (which offers both UVA and UVB ray protection) with a minimum of SPF 30 onto exposed skin, says Dr. Anatoli Freiman, chair of the Canadian Dermatology Association’s Sun Protection Program and medical director at the Toronto Dermatology Centre. WHAT MAKES US SWEAT? Our skin has two types of sweat glands: Eccrine glands, found over most of the body, emit liquid made mainly of water and electrolytes; and apocrine glands, concentrated in areas abundant with hair follicles (underarms, genitals, scalp), produce liquid containing lipids, proteins and steroids. Eccrine glands help regulate temperature when the body is too warm (due to weather, exercise or fever), while apocrine glands contribute sweat stimulated by emotional stress, nervousness or arousal. There’s no correlation between overactive glands and smelliness; many people who perspire excessively emit very little odour.

“Stress sweat” from apocrine glands is broken down by the bacteria on our skin into compounds that are responsible for body odour, explains Hamilton dermatologist Dr. Peter Vignjevic. So why do some people smell more than others? George Preti, who studies human body odours at the Monell Chemical Senses Center in Philadelphia, says genes likely play a role. Diet may as well: One study indicates meat eaters give off a stronger odour.

NO SWEAT Deodorants fight odour using a combination of fragrance and antibacterial agents, while antiperspirants contain compounds (generally, aluminum salts, with clinical brands containing the highest concentrations) that temporarily block sweat glands. And no, sweating doesn’t get rid of toxins, says Dr. Kevin Smith, a Niagara Falls, Ont., dermatologist. (That work is carried out by your liver, intestines and kidneys.) Nor is there any evidence that the chemicals in antiperspirants, in the amounts used, pose any health risks, notes Dr. Vignjevic. And what’s behind your suspicion that your body “stopped” your deodorant from working? According to Dr. Smith, it’s likely that you’re not putting on your antiperspirant properly; these products perform best when applied to paper-dry skin before bed. If you’d also like to dab it on after your morning shower, he suggests gently blow-drying your armpits beforehand.

DIY DEODORANT? Yes, if you’re crafty, you can make your own deodorant, using coconut oil, cornstarch, baking soda and essential oil. Does it work? Possibly. The powder absorbs moisture and the essential oil may mask the smell. However, yeast

O YOU VAPE? Even if you don’t, chances are you know someone who does. The popularity of electronic cigarettes—battery-powered devices that turn liquid nicotine into smoke-free vapour that users inhale—has exploded. In the U.S., e-cigarettes are now an estimated $1.5billion market that has been projected to grow nearly 25 percent every year until 2018, according to Research and Markets, a firm that gauges global trends. North of the border, the situation is murkier. Though e-cigarettes haven’t been approved for sale by Health Canada, it’s fairly easy for consumers to find e-liquid cartridges, both nicotine and nicotinefree, online or at a corner store. “This isn’t a novelty product anymore,” says David Hammond, associate professor in the School of Public Health and Health Systems at the University of Waterloo. “No other product has become this popular, this prevalent this quickly in a very long time.” With all that puffing comes a cloud of controversy. First designed to help smokers kick their habit, e-cigarettes have lost some of their “health” halo. Levels of nicotine and other ingredients vary by brand, making blanket assessments difficult, and researchers aren’t certain that people who give up smokes for e-cigs will quit for good. Teens who have never tried tobacco cigarettes are also picking up vaping. A recent survey revealed that 8.5 percent of Grade 6 students and 22 percent of first-year high school students in Quebec have tried e-cigarettes. The study, conducted by the Quebec division of the Canadian Cancer Society, also found that 18 percent of high school students who have never smoked cigarettes have tried e-cigarettes.

IT’S A HABIT: E-cigs help some smokers quit by replicating not only the nicotine hit but also the feel of smoking.

the University of Michigan’s Institute for Social Research. Before we declare a state of emergency, some encouraging signs suggest that the vaping-to-smoking argument may not hold water. A study published last spring in the Canadian Journal of Public Health indicates that the vast majority of young people who have tried e-cigarettes are regular smokers: 16 percent reported vaping, and only five percent of those who had vaped were nonsmokers. That’s in line with what Hammond has seen. Few nonsmokers try vaping more than once or twice, he says. A big caveat: As the e-cigarette evolves, its nicotine-delivery system may become more efficient and could lead casual users to get hooked on nicotine—and that could open the door to regular cigarette use. Dr. Selby points out an interesting alternative for the future of both products: “If e-cigarettes become viable alternatives [to traditional cigarettes], combustible cigarettes will need to be banned outright because a potentially safer option would be available to those who wish to obtain nicotine recreationally.”

What about vaping and drugs? Last fall, federal Health Minister Rona Ambrose asked Parliament’s Standing Committee on Health to study the risks and benefits of e-cigarettes, possibly signalling change is afoot. Vancouver and Red Deer, Alta., have banned the use of e-cigarettes in public places and the sale of the devices to minors. Meanwhile, the Ontario government has introduced a bill extending tobacco-cigarette laws to e-cigarettes, prohibiting use by and distribution to anyone aged 18 or younger. As cities restrict sales and prohibit vaping in public spaces, questions continue to swirl around the issue of e-cigarettes.

Are e-cigarettes a lifesaver?

For some former smokers, the answer is a resounding yes. They say that using nicotine-containing e-cigarettes, which mimics the feel of smoking tobacco, is what helped them finally kick the habit. A recent Forum Research survey found that 24 percent of Canadian adults who had given up smoking did so by turning to e-cigarettes. Mounting evidence is backing up these anecdotal claims. The Cochrane Collaboration, a prestigious not-for-profit network of medical experts, published its review of two

But the high number of teens trying e-cigarettes is stoking fears that this trend could reverse. “It would be a tragedy if this product undid some of the great progress made to date in reducing cigarette smoking by teens,” says Lloyd Johnston, principal investigator in the study and senior research scientist at

Current understanding of addiction includes genetic predisposition, preexisting or developing mental health problems, social determinants and personality structures all interacting to determine if someone is going to get addicted or progress to hard drugs.” Nevertheless, groups such as the World Health Organization and the Heart and Stroke Foundation are calling for governments to restrict e-cigarette advertising aimed at youth and nonsmokers, and to ban the sale of e-cigarettes to minors. OWNING CHICKENS brings me more satisfaction than I ever imagined it could. My routine of letting the hens out of their coop in the morning, being rushed by them as they greet me, throwing handfuls of corn on the ground for them to peck at, then collecting their still-warm eggs alongside my toddler makes me happy in a really simple way. It’s hard to believe my life was so different just three years ago. I’d always been a big-city girl. After living in London, Sydney, Las Vegas, Vancouver and Halifax, I’d have laughed if you told me I’d be living in a village of 1,400 in rural Nova Scotia one day. But, as I got older and became a mother, I realized I wanted something different, something simpler.

his beautiful home was a bargain.

So it’s no surprise it’s a complete money pit, and though I often curse it when things go wrong, I never want to leave. is protected by government legislation (a paperwork nightmare we were illprepared for), meaning you can’t change certain features. But we managed to finalize the sale. The house was obviously meant to be ours. Set on nearly five hectares, our plantation-style home has eight fireplaces, a library and wood-panelled rooms. Considering the average price for a house in Halifax was $270,742 in 2012, this beautiful home was a bargain at $150,000. So it’s no surprise that it’s a complete money pit, and though I often curse it when things go wrong, I never want to leave.

THE GOAL (AND THE REALITY)

THE DREAM For five years, it was just my daughter, Perdy, and me, first in an apartment and later in a small house. My dating life was horrible, and after a brief disastrous relationship three years ago, I figured I’d be a single mom forever. Then, I reconnected with Ian, a friend from my university days back in England. Following an online courtship, Ian visited for two weeks in June 2011. Perdy and I fell in love with him, and he with us. I told him that, if the relationship were to go anywhere, he needed to move to Canada, marry me, want a baby soon and want to buy a farm. In answer, he did. Ian moved in January 2012, and I was pregnant by the end of the month. We married in April, left

the city in June and welcomed our son, Carmelo, in October. Now, our second child together is due in August.

THE FARM Our current house is one of the first we looked at. We adored it but didn’t have proper financing in place, and someone else snapped it up. Heartbroken, we toured other farms in our price range, but they were either too far from Halifax (I didn’t want to be isolated from restaurants and my urban friends) or total wrecks. When our dream house came back on the market a few months later, we jumped on it—and through hoops to secure property insurance. Being a registered heritage home, the property

My family and I would love to be selfsufficient. We thought that, by now, we’d have goats and I’d be making artisanal cheese; in reality, it’s a struggle to afford the wood to build raised garden beds, let alone a goat shed. We also need a tractor to clear our land, as much of it is overgrown scrub. Thankfully, our helpful neighbours share their time and equipment with us. We’ll get there eventually, but it’s easy to become frustrated when money pours into boring but important expenses such as repairing our well ($2,400) or replacing our oil furnace ($5,600) after discovering it had a fist-size hole (oh, so that smell in the bedrooms was burning fuel!). We didn’t consider how much we’d spend on gas and car maintenance. It takes 30 minutes to drive anywhere, including the supermarket and my daughter’s twice-weekly dance lessons. The wear and tear on my 2006 Honda CR-V means the “check engine” light is always on, indicating some kind of costly maintenance needs to happen. Ian’s job, an hour away, necessitated a second car— another added expense. And in the winter, we can get stuck at home until the snowplow clears the roads. That probably sounds depressing, but walking around my drafty home, I feel a deep sense of satisfaction and can’t believe that Ian and I get to live and raise our children here. up to our eyeballs, but in our hearts, we know we can make it work—and it isn’t like our city friends aren’t carrying tons of debt, too. Even with its challenges (and, believe me, there are many), most of the time, we’re happy that we made the move because of what it has given to our family:

We are connected more closely to our food. The pork we eat comes from

our neighbour Frank, who lives just across the road. We know how it’s raised (naturally) and believe it tastes better for that. Our 12 hens produce enough eggs that I have a few dozen left over to share with friends every week. I’ll preserve anything that I can forage or that neighbours share with us (crabapples made a delicious chutney last year, and green beans were pickled to perfection). I’ve frozen dozens of jars of kale-and-chard pesto. The blueberry bushes by our back door are heavy with fruit through late summer. We grew so many tomatoes last year that we’re still pulling them out of our freezer. Our broccoli and cabbage were destroyed by slugs, and rabbits ate all of our lettuce before I rabbit-proofed our gardens, but we embrace each setback as part of the learning process.

In the winter, we skate on our pond, which has been the community skating rink for as long as anyone can remember. I’ve never been much of a helicopter parent, but I really feel as though I can give my children the freedom to explore out here.

We were worried that it would be lonely out here, that it would be difficult to integrate into village life, but we were welcomed with open arms. There are other families who moved from the city for similar reasons, as well as plenty of born-and-bred locals whom we adore, too. My husband and I are now members of the volunteer fire department. We aren’t religious but have attended church events (Carmelo even played baby Jesus in the village’s live nativity). We’re always looking for ways to contribute to our community, despite our limited rural skill set. Moving here has made our lives more trying in many ways, but there’s such satisfaction in what we’re doing, it seems worth it. I am where I want to be, and this is how I want our kids to grow up.

Being on the receiving end of attitude from a moody tween can be tough. Here’s how to help make this emotional time less stressful for you and your child. BY YUKI HAYASHI

O

NE MOMENT your tween wants to cuddle with you on the couch and watch TV; the next, she’s giving you the hairy eyeball for asking who she’s texting. Who is this changeling that has replaced your sweet child?! Blame biology (in part, anyway).

BRAIN CHANGES As kids reach puberty, they experience a number of physiological changes. Besides the obvious physical developments, things are brewing on a hormonal level and their brains are still maturing. Production of the sex hormones, both male (androgens) and female (estrogens), increases during adolescence, triggering changes in the brain systems, including those associated with cognitive processing and emotion, says Cecilia Flores, associate professor in the department of psychiatry at McGill University in Montreal. “The prefrontal cortex is unique because it continues to develop until early adulthood and it undergoes dramatic changes in the organization of neural connectivity during adolescence,” says Flores. She adds

that, when you combine a developing brain with fluctuating hormone levels, short- and long-term behavioural effects, such as changes in mood and emotion, are likely outcomes. But hormones are only a piece of the puzzle. “There’s so much happening in the early adolescent years; we can’t give it an assignment like ‘This is 20 percent hormones and 80 percent cultural,’ ” says Alyson Schafer, parenting expert, author and psychotherapist in Toronto. What is certain is that the combination of hormonal shifts, neurological development, physical maturation and evolving social dynamics packs a wallop. “Early adolescence is a stressful time,” says Schafer, who notes that many children in this life stage are still developing the skills to recognize, manage and express their emotions. The result is often a surly or teary tween (and sometimes both in the span of a few minutes). SUNNY TO SULLEN “I was expecting moodiness from my son, but what surprised me was the age at which it started,” says Samantha*, Toronto

mom to a daughter, 17, and sons aged six and 14. At 11, her oldest son began lashing out and mouthing off at Samantha and her husband, the stepfather he’d always been close with. The transition from a well-behaved, happy boy to a sullen teen was upsetting, she says. She even had her son visit their family doctor to ensure that depression or another issue wasn’t at play. “We knew the teen years would involve our son becoming more independent-minded and peerfocused, and that he wouldn’t want to spend as much time with us, but we didn’t expect him to be so mean. He said some really cruel things. Even today, everything I do is ‘stupid,’ and his stepdad can’t do anything right, either. He thinks we know nothing, and he argues every little point.” NOT COOL Samantha suspects social expectations are part of the issue. “There’s such a big break between being a ‘little boy’ and a ‘big boy,’ ” she says. “My six-year-old sees his friend and runs to give him a big hug, but my older son can’t do that with his friends because that would not be cool.” CANADIANLIVING.COM | JUNE 2015

How to Help Your Kid Through This Challenging Time • Offer hugs. And try not to be offended if they’re occasionally shrugged off.

Samantha has a number of friends who are struggling with similar issues at home: sons who shrug away from hugs or are no longer interested in playing street hockey or shooting hoops with Dad. Family relationships can be strained by the rejection parents feel. Kim Rossos, another Toronto mom of three, uses the word “grumpy” to describe her two daughters, aged 13 and 15, at this stage. “They often put in their earbuds or hide away in their rooms or the basement to avoid us, or for privacy,” she says. “I try not to take it personally.” Schafer’s advice for parents of children who have hit adolescence? Establish some ground rules, then cut your tweens an appropriate level of slack. Remind them

that bad moods are legitimate, but rudeness is not. “It’s OK to say, ‘Take time to be angry, but come back when you can be more respectful of others,’ ” says Schafer. “You don’t have to tolerate being treated disrespectfully.” FROM TWEEN TO TEEN These tween years are a rite of passage for kids and parents alike and good prep for your child’s next stage. “Your relationship is going to change,” says Schafer. “When your kids are young, your main job is to be a disciplinarian, but as they enter their teen years, you become ‘sage counsel.’ If the relationship is healthy, they’ll continue to take your influence.” *Name has been changed.

WHEN IT MIGHT BE SOMETHING MORE Although tween moodiness is normal, be alert to signs of a deeper issue. If your child avoids friends, complains of stomachaches, misses school, oversleeps or battles insomnia, or neglects appearance to the point of unkemptness, he or she may be experiencing depression. If in doubt, see your family doctor. Start the conversation with the truth: “You deserve to feel better than you’ve been feeling, and I would like us to talk to a professional about it.”

• Listen without fixing. “Giving advice shuts down the conversation,” says Alyson Schafer, Toronto author and psychotherapist. Empathize instead: “Sounds like nothing went your way today!” or “Oh, no. That’s embarrassing” are good responses. “Here’s what you should do next time” isn’t. • Ask for a do-over if you tried the wrong tack the first time. If your kid is freezing you out because listening isn’t your forte, apologize and say you’re ready to lend an impartial ear. Don’t force a face-toface talk if your tween prefers another mode of communication; some tweens would rather text about a sticky situation. (Schafer once texted with her daughter for 20 minutes before being invited to talk in person.) • Provide options for a cooling-off period. It could be walking the dog to get fresh air or soaking in a warm tub to help relieve stress. • Accept that a relative or friend may be the preferred confidante.

EOPLE DIDN’T really have backyards in the olden days. They had a front porch, an outhouse and a lot of cough medicine that was, in fact, morphine. With no one else around for miles, you could do anything out front—even your laundry— because no one cared if you stood on your lawn, completely naked, hanging your wool bloomers on the clothesline. And if you happened to be treating that cough, chances are you didn’t care, either. Now, of course, if you have a house, it usually comes with a backyard; that’s where you destress, relax and entertain. Your front yard is for showing off aspects of your personality that you want the world to see. The backyard, however, is

where the real you lets loose. The modern home is the residential version of the mullet: business in the front, party in the back. The façade of my 1840s cottage looks a lot like it would have in the 19th century: a white painted porch, some rambling roses and a little vegetable garden. Up until recently, my backyard was similar; it matched the house but didn’t necessarily match me. Making it over was a chance to express another part of my personality; to show that, even though I love the past, I wasn’t stuck living in it. So, to provide balance, I paired my period-appropriate front porch with a decidedly contemporary urban backyard, one where I may or may not hang my bloomers out to dry… while nursing a cough.

How to get a lawn in an instant

If you want a container garden that makes an impact, forget typical generic nursery plants—I’m looking at you, geraniums—and embrace the plants of the disco era. Tropical greens that were popular houseplants in the 1970s not only look great in planters but also tolerate dry conditions. A solitary secondhand chair is put to work as a perch for removing shoes. To update a dining chair with an upholstered seat, unscrew and remove the seat from the chair frame, then freshen up the frame with a coat of high-gloss spray paint–and-primer-in-one. While waiting for the frame to dry, pull out the seat’s upholstery staples and remove the old fabric, reserving it as a template; trace the outline of the old upholstery onto the new piece of fabric. (Give yourself a few extra inches when cutting out your new seat cover—you can always trim it to size.) After ironing the new fabric, place it facedown on a flat surface and layer the salvaged foam and seat base over top. Fold the fabric over one side of the base and staple it to the underside of the seat; repeat on the opposite side, followed by the remaining two sides. What’s the biggest mistake people tend to make with DIY projects? They either run out of time or run out of steam. When painting a room, they’ll get so anxious to see the colour, they might skip the step of laying down drop cloths or priming—but they always regret it after. It’s important to take that deep cleansing breath before starting and to estimate the time it will take, the materials needed and the expected cost. If you’ve got those three things worked out, you’re golden. Is there a particular DIY you’d never attempt again? I really thought I would be awesome at drywalling. I was, like, “I can ice a cake. How hard can this be?” I was

literally two sheets in before I called for backup. I’ll never say “never again,” but it’s not something I’ll be doing on my own! What are the basics every tool kit needs? First off, you’ve got to invest in a damn good hammer. A lot of people think those compact little hammers are cute, but bigger is better: The larger the strike face, the more likely you’ll actually hit the nail. Next, instead of buying 25 different standard screwdrivers, get a ratcheting screwdriver that comes with multiple bits. It will save your wrists and a lot of space. A tape measure is also important, and again—size does matter. You’ll want a measure with a long “standout,” which means you can pull it out quite a ways before it collapses. A tape with a magnetic tip can be really helpful when you’re up on a ladder hanging pictures: If you drop a nail, you can just extend your tape measure to the floor, snag it with the magnet and reel it back in. Finally, a toolbox itself is a must. So many people dump their tools into drawers, but you want everything in one place so you’re not wasting time looking for a tool when you really need it.

IT WAS a desperate act of decoupage that kicked off Leigh-Ann Allaire Perrault’s career path. Aged seven and frustrated with her parents’ refusal to repaint her bedroom orange, she decided to take matters into her own hands. “I pulled an all-nighter and duct-taped scraps of orange paper from newspapers and magazines all over my bedroom wall,” she says. “When my parents made me pull it down the next morning, I ripped off most of the drywall, which led to patching the walls— and painting my room orange!” In the years since, Allaire Perrault has refined her skills to become one of Canada’s most recognizable renovators and a champion of homegrown home improvements. A double dose of chocolate gives this cake its rich flavour. Greasing your pan with butter and then dusting with flour is a foolproof way to ensure your cake comes out easily. Cake: 1 cup 1⅓ cups 3 ¾ cup ¾ cup 2½ cups 1 tbsp ¾ tsp ¾ cup

2½ cups grated zucchini (peel-on) 1 cup semisweet chocolate chips Chocolate Sauce: 170 g bittersweet chocolate (about 6 oz), chopped ⅓ cup whipping cream (35%) 2 tbsp corn syrup Cake: In large bowl, beat butter with brown

sugar until fluffy. Beat in eggs, 1 at a time, until combined. Beat in milk and oil. In separate bowl, whisk together flour, baking powder, baking soda and salt; sift in cocoa powder. Stir flour mixture into butter mixture just until combined. Fold in zucchini and chocolate chips. Scrape into greased and floured 10-cup (2.5 L) Bundt pan, smoothing top. Bake in 325°F (160°C) oven until cake tester inserted in centre comes out clean,

about 1¼ hours. Let cool in pan for 10 minutes. Invert onto rack set over sheet of parchment paper; remove pan. Let cool completely. (Make-ahead: Wrap in plastic wrap and store for up to 2 days or freeze in airtight container for up to 2 weeks.) Chocolate Sauce: While cake is cooling, in heatproof bowl set over saucepan of gently simmering (not boiling) water, heat together chocolate, cream and corn syrup, stirring, until melted and smooth, about 5 minutes.

A thick-cut T-bone or porterhouse works best for this Italian-style steak. Standing it up on the base of the T-bone heats up the bone, which helps cook this extra-thick cut through to the centre. The tenderloin piece cooks faster than the strip loin, so serve it to the people who prefer their steak a bit more done. 1 kg 2 tsp 1 tsp ¾ tsp ½ tsp

CHOOSE THE RIGHT THICKNESS

If cooking to mediumrare or rare, choose steaks that are at least ¾-inch (2 cm) thick to prevent overcooking. If cooking to mediumwell or well, go for steaks that are thinner than ¾ inch (2 cm).

TROUBLESHOOTING PROBLEM

SOLUTION

You want a thick steak but don’t want to pay for an entire rib eye or strip loin.

Ask the butcher for medallion cuts of your desired steak. These are sized perfectly for a single serving yet are just as thick and impressive as full-size steaks.

You don’t have a barbecue.

A grill pan, indoor grill or skillet on medium-high heat works just as well.

You like steak cooked mediumwell or well, but by the time it’s cooked in the centre, the outside is burned.

Start the steak on the grill or pan to develop a nice crust, then finish cooking in a 375°F (190°C) oven to your desired doneness. The gentle heat of your oven cooks the steak evenly throughout without overbrowning the crust. This is also a great method for cooking thick (1½ inches/4 cm) steaks.

Flank steak is a great option for serving a large crowd because you cook it whole, meaning there’s only one steak to turn on the grill, rather than several. Balsamic vinegar adds bold flavour to the marinade. For a subtler taste, opt for a light- to medium-bodied red wine, such as Pinot Noir or Merlot, instead. ½ cup 3 tbsp 3 tbsp 4 ½ tsp 1

balsamic vinegar or dry red wine Dijon mustard olive oil cloves garlic, finely grated or pressed each salt and pepper beef flank marinating steak (900 g)

In small bowl, whisk together vinegar, mustard, 2 tbsp of the oil, the garlic and half each of the salt and pepper. Using fork, prick steak all over on both sides. NOT ALL STEAKS ARE CREATED EQUAL There are three main types: grilling steaks, marinating steaks and simmering steaks. Grilling steaks are quick-cooking, naturally tender and can go straight from fridge to grill. Marinating and simmering steaks are generally less expensive, but they need a little TLC to become tender. Here’s what you need to know.

TENDERLOIN a.k.a. filet mignon, fillet steak, beef fillet, châteaubriand $$$$ THE 411: Tenderloin has a soft buttery texture and subtle flavour yet is leaner than most other tender cuts. Be wary of overcooking this steak; it’s best cooked to medium or under. This is the cut of choice for raw dishes, such as steak tartare and beef carpaccio.

Simply season and grill, broil or panfry—no marinating necessary. STRIP LOIN a.k.a. New York strip, strip steak $$$ THE 411: This steak is known for its outstanding flavour and good marbling. While not as tender as rib eye, it’s leaner and offers a beefier flavour.

RIB EYE a.k.a. entrecôte, rib steak, cowboy steak (if bone is attached) $$$$ THE 411: This cut is easily identified by the small pocket of fat (called the plug) that separates the two muscles. Extensive marbling (the white lines of fat) gives this cut its signature juiciness and flavour.

TOP SIRLOIN a.k.a. baseball steak (when thickly cut), culotte, centre-cut sirloin, cap steak $$ THE 411: Less expensive than strip loin, tenderloin or rib eye, this cut delivers on tenderness and is more flavourful than many of its pricier alternatives. It’s ideal for the budget gourmet. PRICE GUIDE $$$$ = Special-occasion splurge ($21 to $40 per pound) $$$ = Weekend splurge ($16 to $20 per pound) $$ = Weeknight-friendly ($11 to $15 per pound) $ = Great value ($7 to $10 per pound) Prices vary depending on season and popularity.

T-BONE a.k.a. club steak, porterhouse (when cut to include a large tenderloin section) $$$ THE 411: This cut gets its name from the T-shaped bone that separates the larger strip loin on one side of the steak from the smaller tenderloin on the other. Consider it a twofor-one that’s good for sharing or for those who can’t choose between the flavour of strip loin and the texture of tenderloin.

FLATIRON a.k.a. top blade flatiron $$$ THE 411: Considered a great substitute for tenderloin, this extremely tender steak is gaining popularity. Always check the label to ensure it’s a top blade flatiron cut, as there is also a top blade simmering steak.


FLANK

a.k.a. London broil $$ THE 411: This large oval steak has a delicious beefy flavour with little to no connective tissue, making it quite tender when sliced across the grain. Marinating greatly improves the texture, but you can get away without it in a pinch. Its tapered ends cook faster than the middle—great for feeding a group that prefers a variety of options for doneness.

ROUND

a.k.a. inside round, outside round, eye of round, rump, minute steak, fast-fry $ THE 411: This cut comes in three variations: eye of round, inside round and outside round. Eye of round is very lean and mild; it’s best prepared with strong marinades. Inside and outside rounds have a stronger flavour; inside round is the more tender of the two.

These cuts are big on flavour but benefit from being tenderized with a fork (see tip #4, page 114) and marinated for eight to 24 hours before cooking. Their lower price makes them a good weeknight option.

a.k.a. sandwich steak, knuckle steak $ THE 411: This is a very lean cut with good flavour. Because of its minimal marbling, this steak really needs to be pierced and marinated to tenderize the meat before cooking. Often sold as a roast, it can easily be cut into individual steaks.

SOMETHING NEW Insiders know these lesser-known cuts are some of the best. If you don’t see these steaks at the meat counter, ask your butcher—he or she may have them in the back. JUNE 2015 | CANADIANLIVING.COM

Outside round

$ Think of these as roasts that serve two to three people. They’re relatively tough yet flavourful and should be cooked using moist methods, such as braising or slow cooking. The most common simmering steaks are blade and cross rib. Blade is slightly more tender than cross rib, but both should be cooked low and slow to maximize tenderness.

OUTSIDE SKIRT AND INSIDE SKIRT These flavourful marinating steaks come from the underbelly of the cow. The outside skirt is thinner and more marbled than the inside skirt, but treat them both the same as you would flank steak. They’re great for fajitas and stir-fries. HANGER Also called hanging tender or onglet, this grilling steak comes

from the cow’s plate (front section of the belly) and is known for its incredibly rich flavour. Rumour has it that butchers loved the taste so much, they would keep the hanger for themselves, making it relatively unknown to consumers until recently. TRI TIP This lean grilling steak comes from the bottom sirloin and is easily recognized by its triangular shape. Praised for its beefy

flavour and tenderness, it’s an excellent substitute for top sirloin. BAVETTE This popular bistro grilling steak is also known as bottom sirloin flap. Taken from just above the flank, bavette is more tender than flank but not as tender as rib eye or strip loin. It’s great for grilling and best cooked quickly over high heat, then sliced across the grain.

In The Test Kitchen, we cook rib eyes to medium-rare—just enough to render some of the fat but not enough to toughen the meat. This béarnaise recipe yields a full cup; leftovers don’t keep well in the fridge, so if you’re serving a smaller crowd that won’t need all of the sauce, consider substituting with our Shallotand-Herb Compound Butter (see below). Béarnaise Sauce: 1 shallot, finely chopped 2 tbsp white wine vinegar pinch pepper 4 egg yolks ½ cup butter, melted 1 tbsp chopped fresh tarragon Steaks: 3 beef rib eye grilling steaks (each 340 g and 1 inch/2.5 cm thick) 2 tbsp olive oil ½ tsp each salt and pepper Béarnaise Sauce: In small saucepan,

bring shallot, vinegar, pepper and ¼ cup water to simmer over medium heat. Cook until reduced by half, about 3 minutes. In heatproof bowl, whisk egg yolks until pale; whisk in shallot mixture. PLAN OF REORGANIZATION The Debtors have filed for bankruptcy. Saucy Strawberry Cake Hands-on time: 15 minutes Total time: 1 hour Makes: 6 servings

Similar to pudding cake, this simple dessert consists of two delicious layers: a warm and saucy strawberry bottom and a tender orange-flavoured cake on top. Serve warm with a scoop of vanilla ice cream or whipped cream. 4 cups ¼ cup 2 tsp 1 cup ½ cup 1 tbsp 1½ tsp ½ tsp ½ tsp 1 cup 2 ⅓ cup 1 tsp 1 tsp

hulled strawberries, quartered granulated sugar cornstarch all-purpose flour packed brown sugar grated orange zest baking powder baking soda salt milk eggs butter, melted and cooled cider vinegar vanilla

In saucepan, bring strawberries, granulated sugar and 1 tbsp water to boil over medium-high heat. Cook, stirring occasionally, until berries begin to break down, about 5 minutes. Whisk cornstarch with 2 tsp water; stir into berry mixture. Cook, stirring, until thickened, about 20 seconds. Scrape into greased 8-inch (2 L) square baking dish. Set aside. While strawberries are cooking, in large bowl, whisk together flour, brown sugar, orange zest, baking powder, baking soda and salt. In separate bowl, whisk together milk, eggs, butter, vinegar and vanilla; stir into flour mixture just until combined. Scrape batter over strawberry mixture, spreading evenly. Bake in 375°F (190°C) oven until centre of cake appears dry and no longer jiggles, about 35 minutes. Let cool for 10 minutes before serving. Honey-Hoisin Chicken and Rib Glaze In small bowl, whisk together ⅓ cup each liquid honey and hoisin sauce, 1 tbsp each rice vinegar and sesame oil and ½ tsp chili garlic sauce until well combined.
