At 35 years of age, Victor Perea runs 50-60 miles per week in preparation for events like the NYC Marathon. However, three and a half years ago, he weighed close to 300lbs. He would use food as a means of soothing his emotions. For most of his childhood and adult life, Victor would gain weight, make strides to lose the weight, and then regain the weight, plus more. Victor never made the commitment to his long-term health and simply put off going for annual physicals to ignore identifying any potential medical problems. Ignorance was bliss, so he thought.

It was only until Victor and his wife were looking to have their second child did Victor start thinking about his health in the long term. He wanted to be there and active with his daughters for decades. That’s when Victor decided to schedule a doctor’s appointment and was told that he would have full-blown diabetes within 6 months if he continued living his current lifestyle. Hydration plays a huge role in weight management. It is the key to our metabolism and digestive system functioning at its peak performance. Many bariatric patients resort to doing a pouch reset. A pouch reset Is a tool to bring the stomach back to normal size by severely reducing your food intake. While you can do your own pouch reset, it is strongly recommended you do it with the support of a bariatric surgeon and Nutritionist. YOUR LVBWhat’s New At LVB 9SEPTEMBER 2022 VOL 1 Chicken Cauliflower Fried Rice • 2 tbsp. low-sodium soy sauce • 1 tsp. mustard • 1 tsp chili paste (add if you like spicy foods) • 1 tsp toasted sesame oil • 3 oz. boneless, skinless chicken breast cut into 1/2” cubes • Add salt and pepper to your liking • 1/4 cup chopped green onions • 1/4 cup chopped carrot • 1 clove garlic, minced • 1 cup chopped cauliflower • 1 large egg Ingredients: Mixing Directions: 1. Combine soy sauce, mustard, chili paste and sesame oil in one bowl. 2. Season cubed chicken with salt and pepper. 3. Spray skillet with olive oil or cooking spray and place over medium heat. Bring to temperature. 4. Sear chicken until browned and thoroughly cooked. 5. Add all vegetables to the chicken skillet and stir frequently for 2-3 min. 6. Create a space in the center of the skillet and scramble the egg. 7. Add the sauce and mix all the ingredients for an additional minute.

“Let’s talk about snacking! Many Americans will reach for a salty snack first, like potato chips, followed by a sweet treat like milk chocolate and wash it all down with an ice-cold carbonated beverage like a soda. A snack such as this (see option 1, empty-calories) contains about 500 calories, 6.5 g of saturated fat, 70 g of added sugar and nearly zero amounts of essential vitamins and minerals. The bariatric diet requires that patients follow a nutrient dense diet; that is, a diet containing the most vitamins and minerals possible.
