CLASSIC BANANA BREAD

ingredients
3 very ripe bananas (the uglier the better)
1/2 cup melted butter (unsalted)
3/4 cup sugar *1/2 cup white + 1/4 cup brown if you want
extra depth
1 large egg, room temperature
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups all-purposeflour
Optional add-ins:
1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips
Instrcutions
1.Preheat oven to 350°F (175°C). Grease a standard loaf pan or line with parchment.
2.In a large bowl, mash the bananas until mostly smooth. Afew small lumps are perfect.
3.Stir in the melted butter.
4.Mix in the sugar, egg, and vanilla until just combined.
5.Sprinkle the baking soda, salt, and cinnamon over the mixture and gently stir.
6.Add the flour and fold in gently. Stop as soon as you don’t see dryflour. Do not overmix.
7.Fold in any add-ins if using.
8.Pour into loaf pan and smooth the top.
9.Bake 55–65 minutes, until a toothpick comes out clean or with just a few moist crumbs.
10.Let cool in the pan for 10 minutes, then transfer to a rack.
Pro tips that make this “next level”
If your bananas aren’t super ripe, roast them in the oven at 350°F for 10–15 minutes until the skins turn black. Game changer.
Sprinkle a teaspoon of sugar on top before baking for a lightly crackled crust.
Wrap the cooled loaf tightly and wait until the next day. It’s better on day two.
