I“When a baby is born, so is a mother.”

As the kids grow up, the mum chats start to become more aligned—embarrassing tantrums in the shops, new words spoken, starting kindy. The baby years pale, and those opposite chats become a shared experience.

was chatting with a friend who recently had her first baby. We covered the usual topics of sleepless nights, breastfeeding challenges, and what a shock the explosive code browns could be. The newborn coughs and snuffles and tiny but incredible milestones. The wonderful sisterhood of shared new-mama experiences fills our cup for a moment.

But then we shared one thing and suddenly found ourselves on different parenting planets.

“I found it hard and didn’t enjoy it at all.”

“I love it, and I now feel complete.”

How could two newborn experiences be so different? (I was the first one, btw).

When some mums cherished every dribbly smile, I struggled to get through the baby years in one piece.

Nobody’s parenting experience is the same. But the raw emotions and intensity involved in the baby years make it almost unimaginable that another’s experience could be so opposite.

Now, do I wish I could go back and do them again differently? No. But I do wish I’d sought help much earlier and not seen my struggle transitioning to motherhood as failing.

Why the story? Well, this issue, we have a Baby Special, and it’s been cathartic to look back and reflect on my experience and to chat with others about theirs, as well as explore the wonderful care programs and services available today. The adorable clothes and toys today are enough to make you consider going again (ha, only kidding, hubby!), so it’s made me excited for the new mums out there who will hopefully use this as a resource for their own journey.

We have tips on newborn photography tips, care options, advice from an expert on VBACs, and a huge feature on the upcoming Babe & Bump Market Co Expo. We find out who is there and what to expect and have a rundown of the must-see exhibitors. We’ll be there too, so swing by our marquee for a goody bag and a chat!

Sunshine Coast Grammar School is proud to announce that Principal Mrs Anna Owen has been invited to attend and present at the Global Inclusive Schools’ Forum in Paris from 1415 March 2024.

Organised by UNESCO and the International Forums of Inclusion Practitioners, the Forum is a prestigious event that brings together educational leaders, policymakers and experts from around the world to discuss and share insights on inclusive education.

The invitation is a significant acknowledgment of the combination of Mrs Owen’s work at Sunshine Coast Grammar School, founding the People, Planet and Progress purpose program and her work on behalf of Grammar as a member of the Biosphere Community Advisory Group to the Sunshine Coast Council.

Mrs Owen expressed excitement and immense gratitude for the opportunity.

“I am honoured to represent not

only our school but the Sunshine Coast region and share what we are doing at a local level with a worldwide audience. Students are excited that UNESCO is interested in what we are doing and how others can learn from our programs.”

Mrs Owen will share her experiences, best practices and successful strategies that have contributed to Sunshine Coast Grammar School’s success in delivering the 17 UN Sustainable Development Goals (SDGs).

Free Kindy for 4-year-olds

The Queensland government’s free kindergarten program is offering 15 hours of free kindergarten to 4-year-olds for the year before they start Prep. Leading early learning centre, Pelican’s Nest, in Pelican Waters, encourages parents to take advantage of this initiative.

For Amanda Ewing, owner of Phantasy Party Theming, creating magical moments for children isn’t just a business; it’s a passion. Launched in May 2022, her party planning venture has quickly gained recognition, winning the hearts of both children and their time-pressed parents.

Driven by a desire to help others, Amanda saw a need for stress-free party solutions. “I remember seeing a mum overwhelmed at a party,” she shares. “I thought, wouldn’t it be amazing if she could just turn up and everything was done?”

Phantasy Party Theming caters to that exact need. Local Olympians say ‘SWIMMING THROUGH WINTER IS CRUCIAL’

Continuing swimming lessons through winter is the critical message from Sunshine Coast local Olympians Christopher and Melanie Wright.

“Continuing swimming lessons in winter is crucial,” says Melanie, “as statistics reveal a concerning trend: drowning rates tend to increase during colder months, especially among children aged one to four.”

The duo, who now own and operate Flinders Aquatic Academy, are committed to raising awareness about the detrimental effects of pausing swimming lessons in the colder months.

“Some parents may not fully grasp the importance of year-round swimming for skill retention and water safety, says Melanie.

“Stopping lessons for six months limits progression, meaning kids stay at the same

level longer, and lessons cost more due to the need to repeat learning of previously obtained skills.”

Melanie says there are plenty of things parents can do to keep kids swimming regularly. “Emphasise the enjoyable aspects of swimming in a warm pool during winter, making it an exciting and engaging activity rather than a seasonal obligation. Also, establish achievable swimming goals for your child, creating a sense of accomplishment and motivation to continue their lessons through winter.”

Melanie also reminds us that consistency is critical. “Integrate swimming into a routine, making it a habit not influenced by the changing seasons.”

“And invest in comfortable and warm gear for after their lessons, ensuring they stay warm during winter sessions.”

A new model of PREGNANCY CARE

Private, public… is it possible to have the best of both worlds when it comes to antenatal care?

There is a huge range of pregnancy care and birthing options available to women today. Sadly, however, the decision around pregnancy care is often driven by cost. Even when families have private health cover, many are still opting for a public system care model, simply because the private gap fees can be so high.

Noticing this trend, Sunshine Obstetrics has created a modernised form of affordable private pregnancy care—ditching those nasty gap fees and allowing women to birth privately without any huge out-of-pocket expenses. We chat to Sunshine Obstetrics Practice Manager Suzanne Wall to find out more about this innovative approach to antenatal care.

WHAT IS GROUP CARE, HOW DOES IT WORK?

Our ‘group care’ model is where the three obstetricians at Sunshine Obstetrics—Dr. James Orford, Dr. Kirsten Morrow and Dr. George Bogiatzis—and the three midwives share the care between them.

All appointments are rotated between the care team throughout the pregnancy, so families get to know each of the three obstetricians during that time. Families seem to really like this model because it’s almost like getting a second opinion each time, it’s comforting to get another person’s input on any questions you may have because sometimes you might have something you want to run past someone else. But you also get to know and trust the three OBGYNs.

In particular, we are finding that a lot of second-time mums really like this care model. After trying the public or private system first time around, they realise that the group care approach fits them perfectly. It gives them the best of both worlds— private care, without the blow-out gap fees.

HOW MUCH DOES IT COST?

There are varying options and circumstances, but if you have private pregnancy health insurance and access to medicare rebates, you can have all of your obstetrics care for just $990. This includes all appointments with our private obstetricians and midwives. This way, you can save a couple of thousand dollars, because the out-of-pocket costs for a traditional private care pregnancy could be three or four thousand dollars.

DO I NEED A REFERRAL TO SUNSHINE OBSTETRICS?

Yes, you will need a referral from a GP before your pregnancy care appointments with our midwives or private obstetricians. However, if you would like to learn more about our private pregnancy care services, we offer a meet and greet with a midwife, and you do not need a referral for this appointment. All appointments are at our clinic in Buderim, Sunshine Coast.

WHERE CAN YOU BIRTH?

Our only hospital for births is Buderim Private Hospital, as we find the level of care there is exceptional. But you can also come to us for your pregnancy care if you are birthing through SCUH (Sunshine Coast University Hospital).

We have created a range of care models to ensure we can cater for the many different situations families may face today. You can come to us if you don't have a Medicare card, if you don't have health insurance. There's lots of different options. We know that having a baby is a very special time, but it doesn’t have to be expensive!

I AM ALREADY SEEING ANOTHER OBSTETRICIAN. CAN I STILL BE A PATIENT?

Yes, we will see all patients throughout their pregnancy. However, patients must have private health cover for pregnancy and be eligible for Medicare for the outof-pocket costs to be $990. If you transfer your care to Sunshine Obstetrics during your pregnancy, you will still be required to pay the costs associated with your care.

DO I GET TO CHOOSE MY OBSTETRICIAN?

Sunshine Obstetrics is a shared care model for private pregnancy care, and therefore, you may see different private obstetricians for each of your appointments and birth. However, you should feel confident in the care provided by all our specialists as they are very well respected and trusted on the Sunshine Coast.

ARE THERE ANY ADDITIONAL COSTS I NEED TO KNOW ABOUT?

We are 100% transparent with our costs at Sunshine Obstetrics. The total out-of-pocket costs, after medicare rebates, is $990 for our private pregnancy care. This includes all appointments with our private obstetricians and midwives. However, patients must have access to Medicare and have current private pregnancy healthcare cover. There may be additional out-of-pocket costs, but these are generally services not provided by Sunshine Obstetrics.

When did you begin the business, and what led you to take that step?

I had always had a passion for photography since school so when my parents surprised me with a new Nikon DSLR for my birthday, this sparked my love for taking people’s photos all over again.

What makes your style of photography unique/ special?

Over the years, I have created my own personal style of photography, which incorporates the more natural storytelling style with those beautiful, earthy, timeless colours.

What is it, and what do you need to know?

To me, a perfect photo is when you catch a child or family off-guard and capture their natural smiles or laughter.

Why do you feel it's essential for all families to carve out time/budget for a photoshoot - even if it seems hard? If life has taught me anything over the last few years, you never know when a split second can change your life forever. There will come a time when all your children will have is a picture of you. Make sure you’re in them!

What are your tips for new parents coming for a newborn photography session?

Approximately one in three babies are born by caesarean section in Australia—whether elective or necessary. But what if you hope for a natural delivery for subsequent babies? Obstetrician and Gynaecologist Dr Kylie Isaacs shares her expertise about a VBAC (Vaginal Birth After Caesarean).

VBAC refers to the birth of a baby through the vagina during a subsequent labour after Caesarean birth. With careful selection of patients and good obstetric care, VBAC can be successful and safe, and success rates for suitable women are high.

There are many benefits of having a VBAC, including quicker recovery and shorter hospital stay, avoidance of complications related to surgery, and lower risk of infection when compared to repeat caesarean section.

There is a small risk (1 in 200 VBAC attempts) of uterine rupture related to the force of the contractions during labour and the pressure on the scar.

Unsuitable conditions for VBAC include:

• A ‘Classical’ scar or inverted-T uterine scar, or the position of the uterine scar is unknown

• Previous rupture of the uterus

• Unusual shape of the pelvis

• A baby in a transverse position or appears too big to pass through the birth canal

• The presence of a medical condition that may complicate labour

Women who are attempting vaginal birth after caesarean section are monitored throughout the labour to ensure both the wellbeing of the mother and of the baby.

Though you might feel a little crazy talking to your baby bump, research now suggests babies begin to absorb language before birth. During the last ten weeks of pregnancy, babies are listening, learning and remembering the language they hear, tuning into the flow of language far earlier than initially thought.

Newborns can also tell the difference between their mother’s native tongue and foreign language just hours after birth. Simply talking in a calm and relaxing voice can do wonders for your baby’s emergent literacy.

WHAT IS EMERGENT LITERACY?

Emergent literacy refers to those skills children develop before formally learning to read and write. Babbling and experimenting with different sounds are the beginnings of oral language; scribbling and mark-making are early writing; pointing at signs and interacting with print are early reading.

Those children with plenty of opportunities to talk with engaged adults daily are less likely to experience difficulty with literacy when they reach school.

Describe your baby’s feelings each time they respond – “you are happy/hungry/ cold”. Even if a baby doesn’t understand the meaning, your tone and expression can make them feel understood.

Put their sounds into a sentence: “Ball? Yes, that is a red ball. Shall we play?”

Sing songs. Don’t worry if you can’t carry a tune –babies don’t care! If you aren’t confident, head to a community event like Rhyme Time at the library.

Read every day and carry books with you. Choose hardbacked or cloth books that babies can explore, chew, and develop a love and familiarity with reading. Again, events such as Storytime at the library can help.

THE STRUGGLE OF NEW MOTHERHOOD

Let’s get real. This motherhood gig is not an easy one. And to make things harder, sadly, in our society, pregnancy and motherhood are often represented in idealised ways. From glorious pregnancy photoshoots to Insta-ready newborns, the reality of being a new mum can be far removed from that initially imagined.

If a woman or her partner’s expectations are very different from reality, it can result in adjustment difficulties, and this can lead to depression and anxiety –both pre and postnatal.

1. Establish realistic ideas of pregnancy and life as a new mum. Re-evaluate what can be achieved with a new baby in the house.

2. Establish a relationship with a health professional. Talk to your GP and initiate a referral to see a social worker or psychologist to engage in talk therapy.

3. Avoid major upheavals. If possible, avoid

6. Gift substitute. Suggest to friends or family a service instream of a gift such as cleaner or pre-made meals.

7. Division of tasks. Work out who is doing what in your household. Looking after a baby and carrying the mental load for the family can cause significant overwhelm.

Wondering whether you really need to put your child through swimming lessons to learn to swim? We chat to Cameron Speechley, Director of Swim School at Rackley Swimming, to find out why learning to swim is such a critical part of childhood.

WHY ARE SWIM LESSONS SO IMPORTANT?

Young or old, Aussies share a love for the water. Despite this, developing swimming skills is something we all need to work on from a young age.

Swimming is about so much more than laps and solitary sessions. It is about social interaction, swim races, safety skills, leisure, pool parties, and even the odd bomb dive. And, yes, if you want to represent your school, club or country—a few intensive training sessions might be a good idea too!

We believe swimming is a rite of passage for all Australians and an activity anyone can do—even babies. That is why we offer free Baby Splash lessons to help introduce our youngest family members to the water.

AT WHAT AGE SHOULD KIDS START SWIMMING LESSONS?

The process of learning to swim can start from a baby’s very first bath. The bath helps

them to become accustomed to the feeling of water.

We believe children should begin swimming lessons from two months old, teaching them water confidence, which is the foundation for developing strong water safety skills. All kids learn at different rates, and progress often depends on the exposure a child has to various aquatic environments. Swim Australia recommends that children should be able to swim 400 metres continuously before ceasing swimming lessons. While we support Swim Australia’s recommendations, we also recommend that children should continue in swimming lessons until they can swim 1km, as this gives them the endurance they need to cope with a rip at the beach. Swimming is more than a pastime; it’s one of the few activities that can save a child’s life!

SWIM LESSONS THROUGH WINTER?

Year-round swimming is vital. Continuing lessons across the year helps children build confidence and improve upon their skill level. Children who stop swimming lessons during winter will often experience skill stagnation or ‘winter regression’, and their skills can take time to recover when they do return to the pool. Also, swimming lessons are an integral part of the weekly family routine. Children look forward to interacting with their classmates

and teachers each week. We have seen many families excited and eager to return to the pool after our recent closures to get their children back to a sense of normalcy and routine.

WHAT ARE THE ESSENTIAL WATER SAFETY SKILLS THAT EVERY CHILD SHOULD KNOW AND BY WHAT AGE?

A large part of our program focuses on educating kids about water safety in and around the water, as well as the mechanics of learning to swim. This includes teaching them to only go swimming with an adult and with their togs on. Parents have an active role to play, too, ensuring they continue to teach water safety at home. This is followed up with basic reach and throw rescues and encouraging people to ‘Yell and Tell’ rather than jumping in the water to help someone. Water safety in Australia also needs to acknowledge the many aquatic environments we have (such as oceans, pools, creeks and dams). Developing water safety skills and knowing what to do in a dangerous situation in and around water is key to preventing drowning. The older your kids become, the more important this water safety messaging is. As they grow up, they start to head into more dangerous situations, so they need to know how to keep themselves safe.

Glamping, splashing and luxe galore

With new deluxe cabins, glamping tents, an eco-sustainable playground, AND a dog-friendly environment, there are even more reasons to visit BIG4 Gold Coast in 2024.

BIG4 Gold Coast has long been a favourite destination for families due to its perfect blend of entertainment, affordability and comfort. The water park is next level, and the fact it is dog friendly and you can self-cater (or not!) means it ticks boxes for every family member. Yet, always looking for ways to improve even more, this inventive park has added some exciting features over recent months that families will love.

NEW CABINS

The deluxe cabins have been incredibly popular over recent years, so new for 2024 are eight new deluxe cabins in the Oasis area.

The Oasis cabins are all grouped near the water park, with a tranquil garden area in the centre to give it an added sense of zen.

“We've got eight new Oasis cabins, four of

which are three-bedroom deluxe retreats and four of which are two-bedroom family deluxe cabins, one of which is an accessible cabin,” says Candy Workman, Sales and Business Development Manager at Gold Coast Holiday Park.

“These are a bit more upmarket from our previous cabins, with more modern decor, brass fittings in the kitchen and bathroom areas and just a little more luxury.”

The new cabins are comfortable and spacious, with everything you need, including a washing machine and a full kitchen.

The three-bedroom cabins fit up to 10 people, and the family cabins fit up to six.

NEW SAFARI TENTS

The most exciting addition for 2024 is the opening of the two new Safari tents in

January. Fitting up to six people, each tent has a four-poster bed, a bunk bed, two single beds in a nook, a kitchenette, a bathroom and a living/dining space. There is also a gorgeous veranda with a sunken lounge and a clawfoot bathtub. Both tents overlook the saltwater creek.

“We are really excited about the safari tents, offering that camping experience with a lot of luxury and with the beautiful view of the water,” says Candy.

ECO-SUSTAINABLE PLAYGROUND

The eco-sustainable playground opened in 2023 and is rapidly becoming a hugely popular feature of the holiday park.

Made from recycled materials, such as ocean waste, plastics and textiles, with low carbon aluminium, which is produced by renewable energy such as water, wind and solar, it is designed to motivate children to play, learn how to move, improve balance, and socialise with other kids.

“It’s such a great place where the kids can go and have fun,” says Candy. “There are several seating areas, so the parents can relax and enjoy a coffee, and it's right next to the basketball courts where the older kids can go and play games. The dog park's right there as well, so the dogs can also have a run around, so the whole family can go down the back and enjoy themselves.”

DOG FRIENDLY SPACES

With 32 acres of space, two dedicated offleash dog parks, plenty of dog-friendly campsites and 20 dog-friendly cabins, Big4 Gold Coast Holiday Park is the perfect destination for families with fur babies.

Along with the dedicated off-leash areas within the park, there are several off-leash areas to enjoy locally, including Spit Beach (a 20-minute drive), Damian Leeding Memorial Park and Nerang’s riverside dog walk (a 10-minute drive).

Dogs are also welcome on the terrace at Nibbles, the park’s yummy cafe.

ACCESSIBILITY

Ensuring the park is accessible to all is a core focus at BIG4 Gold Coast. Therefore, this inclusive holiday park has plenty of accessible accommodation and facilities, including adding a three-bedroom accessible deluxe cabin to the Oasis area.

With a passion for adolescent wellbeing, Ms Michelle Carroll began her new role at the start of 2024 as the new principal at Matthew Flinders Anglican College. We grabbed five minutes with Ms Carroll to learn more about her likes, dislikes, and impressive golf skills.

Welcome to your new role at Flinders!

Can you tell us a little about the philosophy of Flinders and why you feel it’s a good fit for you?

I am passionate about creating a learning environment for students that celebrates inclusivity, respect and trust, so I’m delighted to be a part of Flinders with its vibrant school culture. Students from Prep to Year 12 are learning the importance of core values—compassion, courage, integrity and respect. I also firmly believe that behind every student’s successful journey through school must be the unwavering support of brilliant teachers and mentors who have guided, nurtured and cheered them on.

What do you hope to bring to Flinders?

I appreciate the African proverb ‘It takes a village to raise a child’ and look forward to building an even stronger College community at Flinders. Staff, students, families and the wider community can work together to inspire and challenge students to strive for academic achievement and

recognise the importance of character development, emotional wellbeing and support networks. Families are an integral part of the Flinders community, and their involvement through volunteering, particularly in supporting their child’s co-curricular pursuits, positively impacts the school’s sense of unity.

I am passionate about student wellbeing and look forward to working with the College community to deepen our focus on pastoral care. Research reveals that students’ health and wellbeing needs are everchanging, so we must tailor the support we provide students as they journey through year levels.

I used to hold a single-figure handicap on the golf course; not so at the moment.

In today’s world, what skills do you feel are essential for children to gain at school?

“I enjoy talking to students and simply checking in at the end of the day to ask what the best part of their day was.”

Design thinking is essential as it equips graduates with the diverse skills and strength of character to succeed in a future workforce. Seeing how Flinders weaves design thinking pedagogy throughout the curriculum is exciting. The College’s impressive new state-of-theart Infinity Centre supports design thinking pedagogy with dedicated maker spaces, studios and galleries for students to enquire, ideate, collaborate, prototype, test, pitch and review.

We chat with behavioural specialist and early childhood educator Kasia Palko to discover how this refreshing approach can support young children’s creative, social, emotional and physical development.

HOW DOES BEHAVIOURAL THERAPY WORK?

Behavioural therapists teach a child how to behave appropriately to get what they need through developing behaviour plans and education. They help restore a child's confidence, self-worth, independence and self-esteem.

A behavioural therapist will work with the child to analyse the function or reason behind the challenging behaviour.

From this, they will create a behaviour plan to manage that challenging behaviour in each environment. The behaviour plan will consist of techniques to reward and encourage further correct responses. For example, if a child is biting to attract attention, the therapist will work with the child to choose a more appropriate behaviour to fulfil the function, such as tapping an adult on the arm.

A behavioural therapist might also look for gaps in a child’s development and teach them skills to fill them. Having access to appropriate methods for achieving our wants and needs means that challenging behaviours no longer have any purpose.

FOR WHAT REASONS DO KIDS COME TO YOU NEEDING HELP?

Children come to me following any situations that might have created behavioural problems. Common circumstances include family breakdown and communication issues, grief and loss, trauma, parenting struggles, preschool and schoolassociated difficulties such as learning, structure, peer relationships, anxiety and emotional upset.

Following therapy, children can become less impulsive and defiant, have improved

problem-solving ability and coping mechanisms, and have fewer tantrums.

WHAT DOES A CHILD’S SESSION LOOK LIKE?

I offer a holistic and intuitive approach that encourages natural play in a creative and nurturing manner. I utilise observation and creative implementation to help your child face difficulties or challenges. This innovative and intuitive play-based approach aims to nurture a child’s imagination, creativity and inner will. Using my behavioural observations of children, I focus on developing a natural, creative behavioural management system to assist children in interacting with their environment, families and peer groups. This will help each child reach their highest potential.

Silks

Following on from the Aerial Variety class, in this Silks class, students learn how to climb, swing, wrap, drop, balance and more on the aerial silks. Silks classes specialise in one apparatus, allowing students to work on developing skills and building sequences. Silks classes are open to students ages 8+.

Lyra

Students work on an aerial hoop suspended from the ceiling to position their bodies in different tricks and poses. Students build the strength and stamina on the lyra required to perform skills in succession. Lyra classes are available to students ages 8+.

Does your child finds it hard to interact with their peers in play? Perhaps they are having bigger emotional outbursts? If so, play therapy could help.

When children experience challenges, they tend to display it as a means of change in behaviour. Every behaviour stems from something.

“Play is considered to be especially important for the healthy development of children who have experienced stressful events or past trauma,” explains Bridget McKeith, play therapist at leading Sunshine Coast therapy centre Chatter-Boxes.

Working with children between the ages of 3 and 12, play therapy at Chatter-Boxes helps children manage their worries, stress, and concerns. Not able to express their thoughts, feelings, and emotions verbally, play therapy utilises a child’s natural urge to explore, create and discover through play.

“Play therapy is a wonderful resource for families to tap into, providing the support and resources to successfully guide the exploration and understanding of emotions and behaviour in the early years,” says Jo Emery, Co-Director at Chatter-Boxes.

WHAT HAPPENS IN PLAY THERAPY?

The room is equipped with a selection of specifically chosen toys that are meant to encourage the child to express their feelings and develop healthier behaviours.

“The child’s interactions with these toys serve as the child’s symbolic words. This allows me to learn about specific thoughts and emotions that a child may find difficult or impossible to express verbally,” Bridget says.

A new cookbook, The Shared Apron, created and co-tested by a local mum-son duo, is empowering teenagers to develop their cooking skills, with a focus on healthy and delicious meals using simple ingredients.

FISH TACOS WITH CABBAGE SLAW

SERVES 4

• 2 tbsp plain flour

• 1 tsp cumin powder

• 1 tsp paprika

• 1 tsp dried oregano or mixed herbs

• 2 cloves garlic, crushed

• Finely grated zest of 1 lime

• Salt

• Fresh ground black pepper

• 500g boneless white fish fillets (i.e. snapper, flathead)

• 2 tbsp olive oil

• 12 small tortillas (corn or flour)

• Sriracha mayonnaise to serve

CABBAGE SLAW

• 3 cups packed shredded cabbage (white, purple or mix)

• 1/4 cup fresh coriander, roughly chopped

• 1/2 small red onion, thinly sliced

• Juice of 1 lime

• 1/4 tsp salt

• Place cabbage slaw ingredients in a large mixing bowl and toss well to combine. Refrigerate until ready to use.

• Combine flour, spices, herbs, garlic and lime zest in a large mixing bowl and season with salt and pepper.

• Cut fish into 2cm thick fingers and add to spiced flour, tossing well to coat.

• Heat oil in a large frying pan over mediumhigh heat (or hot plate if using a barbecue). Add fish and cook for 3-4 minutes or until golden and cooked through.

• Warm tortillas as per packet instructions.

• Serve fish on warm tortillas topped with cabbage slaw and sriracha mayo.

On the surface, EATS looks like many other bustling restaurants— delivering delicious, wholesome food for the local community. But this inspiring eatery also has something else cooking in the background: a visionary social enterprise changing lives for disadvantaged kids in Peru. We chat with Gustavo to find out more.

WHAT LED YOU TO SET UP EATS AS A SOCIAL ENTERPRISE?

My business partner and I, Katie Johnston, met salsa dancing; we connected over our shared values of business and wanting to make the world a better place. She has been struggling with making her social enterprise in Nepal work, and I have been frustrated with the cutthroat nature of the hospitality sector.

The name EATS (Empowering All Through Support) came from that desire to help and create change. Through EATS, we are training and mentoring youth in Peru, providing education resources and microfinancing small business projects - it is the full circle of support for people who are more than capable but just miss guidance, confidence and resources.

WHAT IS YOUR CONNECTION TO PERU?

I grew up in a really poor area with no hope of even getting a basic job. I had no education, no skills, and not even shoes to go to school. I had to share an outfit with my brother if we wanted to go play with friends, while the other one stayed at home in underwear.

My strongest memories as a child were meeting people who had walked my path and seeing them become successful. Having hope is everything because where there is hope, there are possibilities; where there are possibilities, there are actions that make dreams come true.

HOW DO YOU HELP GIVE KIDS A BETTER FUTURE?

We work with people in remote Peru who don't have access to anything. First, we are helping the kids with warm clothing and blankets, insulating homes and building greenhouses. Then, a lot of the work is bringing educational resources (pens, paper, books) and mentoring the young people. Introducing them to the modern world and training them in basic life and money skills right up to hospitality management is essential for them to access employment. We teach English, too, as we want to open up pathways for participants to come to Australia.

AND EATS IS GROWING!

Recently, we opened a store in Carindale, Westfield, that has really seen us expand - we are striking what is a really difficult balance between scaling up and helping as many people as we can, but with the help of Mirvac and Westfield, we are making it happen!
