De Babilonia a Sotogrande ! No ha habido nunca un periodo en la historia de la humanidad, donde la propiedad no haya sido una parte esencial de la vida. El hombre era muy parecido a como somos hoy día, en sus actividades, su vida doméstica, sus ambiciones y todo el alcance de sus relaciones humanas. Como hoy, su casa era su castillo, el centro de sus aspiraciones, la realización de todo su empeño y, con la posesión, la culminación de su esfuerzo y la dignidad de haberlo conseguido. Investigaciones arqueológicas en Palestina, Babilonia y Persia han sacado a la luz la evidencia de la existencia del agente inmobiliario, y que era un hombre de gran importancia en el intercambio de propiedades. Aparece también que requería una formación y una enseñanza especial por profesores expertos. Sorprendentemente también, hay evidencia que las mujeres estaban involucradas en actividades comerciales y transacciones inmobiliarias. Aunque el mundo de la propiedad y la participación del agente inmobiliario es parte de nuestra historia y cultura milenaria, es a menudo difícil hoy día, definir cuales son las bases y normas que rigen este viejo negocio. Quizá por la facilidad con la que cualquiera puede acceder a esta profesión, o porque su ámbito es tan amplio y requiere tanto conocimiento que parece difícil de visualizar. No es la impresión que hemos tenido cuando hemos escuchado Araceli Gavira en su oficina “Soto Houses” en Galerías Paniagua de Sotogrande. Araceli, de profesión ingeniero de edificación y arquitecto técnico, tiene una visión muy personal de la profesión y un profundo sentido de la atención y dedicación hacia sus protagonistas, los compradores, los vendedores y los inquilinos, en alcanzar los objetivos con hechos sencillos, reglas básicas y criterios fundamentales, esenciales para facilitar la presentación, calificación y éxito de las operaciones. ¿Será descendiente de esa mujer de Babilonia, experta en transacciones comerciales e inmobiliarias? ¿Quién sabe?

From Babylon to Sotogrande ! There has never been a time in the history of the world, when property has not been an essential part of life. Man where very much like we are today, in his activities, his domestic life, his ambitions and in the entire scope of human relations. Like today, man’s home was his castle, the center of all his aspirations, the realization of all his endeavor; and with the ownership, the culmination of his effort and the dignity in attaining it. Archeological research in Palestine, Babylon and Persia has brought to light the evidence of the existence of the real estate agent, and that he was a man considerable importance in the transfer of properties. It also appeared that he required special training and tuition by expert teachers. Amazingly too, there’s also evidence that women were involved in commercial activities and real estate transactions. Although real estate and the involvement of the agent is part of our millenary history and culture, it is often difficult today to define what are the basis and norms that rule this ancient business. Perhaps because of the facility by which nearly anyone can access this profession, or because its scope is so wide and requires so much knowledge that it becomes difficult to visualize? We don’t have this feeling when we listen to Araceli Gavira in her office “Soto Houses” in Galerias Paniagua of Sotogrande. Araceli, a building engineer and technical architect by profession, has a very personal vision of the profession and a profound sense of attention and dedication given to her protagonists: the buyers, the vendors and rentors, on reaching objectives with simple facts, basic rules and fundamental criteria, essential to facilitate the presentation, qualification and success of the transactions. Would she be descendant of this Babylonian women, expert in commercial and real estate transactions? Who knows? 6

Una diva interpretando sobre el escenario y en el día a día, la misma chica de Tolosa de siempre. La soprano española charla con nosotros en un “día de maletas”, haciendo gala del equilibrio de una madurez bien llevada a todos los niveles. Sensibilidad, comunicación y pasión marcan la trayectoria de esta madre y cantante de ópera cuya voz le ha permitido lo impensable en la vida. ¿Cómo se forjó en la infancia el deseo de convertirse en cantante lírica? En mi infancia comenzó el deseo y el gusto de cantar, actuar y expresarme. Sentía mucha pasión por la actuación, pero nunca haría dicho que sería una cantante lírica. Mi padre, que era músico formado, lo veía y me regaló el disco de vinilo Carmen de Bizet, de María Callas. La primera vez que me lo puso me dejó hipnotizada y lo escuché tanto, que con seis años me la aprendí entera en francés y la cantaba y la bailaba. Mi padre fue el que se dio cuenta de que había algo que me apasionaba. Desde ese comienzo hasta ahora esa pasión ha seguido siempre vigente dentro de mi. ¿Qué le ha permitido su más valioso instrumento: la voz? Me ha permitido conocer mundo, diferentes culturas, gente maravillosa, conocerme a mi misma. La voz es el único instrumento vivo que existe. Funciona de una manera mecánica, pero hay una

On stage, she is a diva performing and in her daily life, she is the same girl from Tolosa. The Spanish soprano talks to us on a ‘luggage day’ making a show of her well-balanced maturity on every level. Sensitivity, communication and passion mark the journey of this mother and opera singer whose voice has allowed her to do the unthinkable in life. How did you get the desire to become an opera singer in your childhood? In my childhood, this desire started and I began to like singing, acting and expressing myself but I would have never said that I would become a lyric singer. My father, who was a trained musician, could see it and gave me a vinyl record of Carmen by Bizet performed by Maria Callas. The first time I played this, I became hypnotised and I heard it so many times that at the age of six, I learnt it completely in French and sang and danced it. My father noticed that I was passionate about something. Since then, that passion has always been within me. What has your most valuable instrument being your voice given to you? It has allowed me to get to know the world, different cultures, wonderful people and myself. The voice is the only living instrument that exists. It works in a mechanical way but that part which is to do with passion and passion comes from the soul. After 25 years in the business, I remember a stage when my voice was badly affected

parte que tiene que ver con la pasión y la pasión la mueve el alma. Tras 25 años de carrera recuerdo que tuve una etapa en la que me quedé muy mal vocalmente y el otorrino me dijo que no le pasaba nada. Y añadió: “¿tú has visto alguna vez un pájaro triste cantar?” La voz me ha enseñado a tenerla que observar continuamente, a observar mi cuerpo, mi mente, mis estados de ánimo. Me lo ha dado todo en la vida, mi universidad ha sido mi voz por el mundo. ¿Cómo definiría la relación entre intérprete y compositor? Quiero imaginar que los compositores que interpretamos que no son vigentes, siempre se han basado en una complicidad con el cantante o con los instrumentos con los que trabajaban en ese momento. El compositor que está haciendo obras que yo voy a interpretar, me llama muy a menudo, me pide opinión, yo también les doy consejos. Es una colaboración muy estrecha, muy importante y al final se vuelven amigos.

and an ENT specialist told me that there was nothing wrong with it. He added that “have you ever seen a sad bird sing?” I have had to keep an eye on my voice continually, my body, my mind and emotional state. It has given me everything in life. My university has been my voice around the world. How would you define the relationship between a performer and a composer? I reckon that the composers who perform do not prevail that much, it has always been based on a mutual understanding of the singer and instrumentalists with whom you are working at a given time. The composer who is working on the pieces which I am going to perform, often calls me, asks for my opinion and I also give advice. It is a very close, important relationship. In the end you become friends. If music unites men, why does it seem that in Spain it is sometimes so divided? There are more things that unite us than divide us. I think politicians have taken

Si la música une al hombre, ¿por qué parece estar España a veces tan dividida? Son más las cosas que nos unen que las que nos separan. Pienso que los políticos han tomado una decisión brutal contra la cultura. Teníamos una cultura sana y en buena forma y de repente la han metido en la UVI, le han metido un virus que se llama 21 por ciento de IVA. Y le están haciendo un daño tremendo al pueblo. Porque un pueblo sin cultura es un pueblo perdido, es necesaria para que crezca la civilización, para que la gente se una más. Un país que promueve la cultura es un país con futuro. ¿Cuál considera que debe ser una de las mejores virtudes en la música? Todo lo que es bueno para la música tiene que ver con el sentimiento. El público que va a una ópera o a escuchar algún concierto es muy variopinto, pero hay una cosa que les une a todos, que es el sentir. ¿Le gustaría que alguno de sus hijos siguiera sus pasos? Lo que me gustaría es que mis hijos siguieran los pasos que ellos quieran dar, donde les lleve la pasión. Que puedan tener la suerte de hacer algo en la vida que les apasione. Y sobre todo lo que yo quisiera es que fueran buenas personas.

A nation without culture is a lost culture. It is needed for civilisation to grow so that people come closer together. A country that promotes culture is a country with a future. What would you consider to be the best virtues of music? Everything good about music has to do with feelings. The audience that goes to an opera or a concert is very diverse but there is something that unites them. That is what they feel. Would you like one of your children to follow your footsteps? What I would like is for my children to follow their own footsteps where passion takes them and for them to be lucky enough to do something in life that they are passionate about. Above all, I want them to be good people.

Este es un año memorable para toda la familia que conforma grupo KE. Porque cumplir 25 años es un orgullo, aporta satisfacción y proporciona la energía necesaria para seguir creciendo. Para unos, KE es el centro neurálgico de Sotogrande, para otros su centro social donde disfrutar entre amigos, el lugar perfecto donde empezar el día desayunando, donde almorzar como en casa pudiendo elegir entre los mejores productos de nuestra tierra, merendar en la terraza viendo el atardecer o tomar una copa cuando ya se han ido los últimos rayos de sol. Dar una definición exacta resulta difícil hasta para quien es el alma de esta empresa, Antonio Sancho. Para asombro de muchos, la historia de KE se ha ido construyendo sin una estructura previamente definida. Lo que un día surgió casi de una manera fortuita en la feria de Algeciras, y se abrió como bar de copas el 13 de Julio de 1990, hoy se ha convertido en un exitoso establecimiento forjado a base de tesón personal y profesional de quien desde

This is a memorable year for the whole of the family which make up KE Group, because 25 years make you feel good, give you satisfaction, infect you with emotion and provide you with the right amount of energy to keep growing. For some people, Ke is the heart of Sotogrande, for others it is their social centre where they enjoy friends’ company, a perfect place to start the day having breakfast, the place to have lunch home from home and being able to choose between the best local produce, enjoy tea on the terrace watching the sunset or enjoying a drink when the last of the sun’s rays have gone. Coining an exact definition turns out to be difficult, even for someone like Antono Sancho, the soul of this company on the Mediterranean shoreline. The history of KE, to the astonishment of many people, is that it hadn’t been built with any real defined structure. It almost occurred by chance one day in the fair of Algeciras and it opened as a pub on 13th June 1990. Today, it has become a successful business based

el principio le imprimió su carácter y su saber hacer. Un hombre capaz de creer en las personas y sacar lo mejor de ellas, formando así un gran equipo, que con su cariño, esfuerzo y dedicación han logrado hacer de KE todo un referente. En el verano del 91, KE introduce en su servicio las famosas baguettes, y es entonces cuando comienza su andadura en el mundo de la restauración. Probablemente no habrá un sitio en Sotogrande por donde pase más gente al cabo del año, y no es casualidad. Influyen factores como la calidad, el buen servicio y la ubicación pero sobretodo, como dice Antonio “es un sitio mimado”. El resultado han sido 25 años en activo, creciendo en todos los aspectos. Y ahora, en 2015, estrena imagen renovada, con una de las reformas más significativas de su historia, el resorte

A man that was able to believe in people and get the best out of them, forming a great team with love, effort and dedication has enabled KE to be highly regarded. In the summer of ’91, KE introduced the famous baguettes and this is where the journey in the world of catering started. There is probably not a place in Sotogrande where more people flock to throughout the year. This is not a coincidence, factors such as quality, good service and location, but above all, as Antonio states, “it is a place of indulgence.” The end result after 25 years of work, business is growing in every sense. Now in 2015, a new, updated corporate image has been used in conjunction with one of the most significant refurbishments of the facilities. This is an ideal launch pad to keep on looking towards the future. Nono

ideal para seguir mirando al futuro. Antonio cuenta que la asignatura pendiente era convertir KE en “un sitio más acogedor para las cenas de invierno”. El objetivo se ha conseguido con creces. Sin embargo, sigue manteniendo parte de la esencia que conforma sus inicios; su particular barra, el tren que recorre el local y las características fotos que visten sus paredes, siguen dando a los clientes antiguos y nuevos pequeñas pinceladas de lo que ha sido y es KE. El destino de Antonio en la hostelería, estaba marcado. Sus abuelos crearon el Parador de Fuentebravía, en el Puerto Santa María. Más tarde, sus padres, a los que les debe gran parte de su experiencia, fundaron una cadena de hoteles en Tarifa, entre los que destaca el Mesón de Sancho, que aún forma parte del negocio familiar.

says that the pending issue was turning KE’s interior into “the warmest place for winter dinners” and this objective has been met beyond expectation. They still have maintained part of their essence, the unusual bar, the train that passes through the establishment and characteristic picture frames which decorate the walls and that have given old and new clients hints of what KE was and is. The destiny of Antonio in hospitality had been marked. His grandparents founded Fuentebravía Parador, in the port of Santa María. Later, his parents, whom he owes a great part of his experience, founded a chain of hotels in Tarifa. Mesón de Sancho, is one that stands out which is still part of the family business.

Un aniversario como este, bien merece hacer balance personal y profesional de su trayectoria, y como no, dar las gracias a los clientes por su fidelidad, al equipo KE y a su familia, en especial a Silvia y María por su apoyo incondicional durante estos 25 años. Todos ellos, constituyen la base fundamental de KE, un establecimiento que con los años, se ha convertido en el icono del Puerto y de la vida social de Sotogrande.

An anniversary such as this, deserves to take stock of the personal and professional journey and of course, to give thanks to the clients who have been loyal, the KE team and their families and particularly, to Silvia and María for their unconditional support for the past 25 years. Each and everyone constitute the fundamental basis of KE, an establishment that over the years has become an icon of the port and social life of Sotogrande.

Si hay alguien que no necesita presentación es él. Pero este es año de estreno, de gira y lo mejor es que ha querido compartirlo con nosotros. Las canciones de su último disco, ‘Sirope’, copan el universo musical de millones de fans incondicionales a lo largo y ancho de la tierra. Este verano lo tendremos cerca, el 1 de agosto lo podrán escuchar en directo en la Plaza de Toros de Algeciras y el 20, en el Festival Starlite de Marbella. Alejandro Sanz, el artista más internacional e influyente que ha dado este país, ha vuelto a endulzarnos la vida con sus letras y con su música. A día de hoy ha vendido más de 23 millones de discos, es el artista español con mayor número de premios Grammy (17 latinos y 3 americanos) y es además uno de los artistas latinos con mayor número de seguidores en las redes sociales. A lo largo de su carrera ha realizado colaboraciones con prestigiosos artistas y ha recibido los más importantes galardones.

Todo un privilegio contar con las impresiones del cantautor español que, con raíces algecireñas y un claro compromiso personal con el arte, la vida y la tierra lleva más de veinte años enriqueciendo el panorama cultural al son de su guitarra. ¿Cómo describirías ‘Sirope’? Sirope es un disco de música espontánea, acústico al mismo tiempo que sofisticado. Y es el hijo del tiempo que pasamos juntos. Sirope es almíbar y jarabe. Te endulza y te cura. ¿Qué tiene la nocturnidad a la hora de componer? Tiene la tranquilidad de que no te va a molestar nadie con cosas normalmente menos importantes que escribir una canción. ¿De qué modo cambia su rutina durante la creación de un nuevo trabajo? Cambia completamente porque cuando empiezo a escribir un nuevo trabajo todo gira alrededor de la música, mis horarios se trastocan totalmente para adaptarme a realizar mi trabajo de la mejor manera. Respiro música, como música, duermo música.

It is a privilege to gain insight about this Spanish singer-songwriter with roots in Algeciras and with a clear personal commitment to the arts, life and land. He has been enriching the cultural panorama with the rhythm of the guitar for over twenty years. How would you describe “Sirope”? “Sirope” is a spontaneous, acoustic and at the same time sophisticated album. It is the son of the time spent together. “Sirope” is syrup in Spanish. It sweetens and cures you. What does the night offer when it comes to composing? You have peace of mind that no one will bother you with things which are normally less important than song writing. How does your routine change when it comes to creating a new project? It completely changes because I start to write new material and everything revolves around my music, my timetable gets disrupted in order to carry out my work, in the best way. I breathe, eat and sleep music.

¿Cómo sienta volver a cantar a la tierra que le vio crecer? Me sienta como una cervecita fresquita en la orilla de la playa al atardecer escuchando a Paco y viendo correr a mis hijos.

How do you feel about singing about the land where you grew up? It feels like a cold beer on the shore of the beach at sunset listening to Paco and watching my children run around.

¿Cómo suena Algeciras? Algeciras suena romántica, cascabelera, suena el viento en las hojas de las palmeras, suena a sirena de barco, suena a brisa marinera.

What does Algeciras sound like? Algeciras sounds romantic, cheerful, it sounds like the leaves of palm trees, the boat sirens and the sea breeze.

¿Cómo se ve España desde el otro lado del charco? Yo nunca miro a España desde ningún lado de ningún charco. España viene conmigo a donde yo vaya.

What is Spain like on the other side of the Atlantic? I never look at Spain from any side of the Atlantic. Spain comes with me wherever I go.

Su labor de apoyo a artistas que están empezando es más que conocida. ¿Qué debe tener alguien para que usted le brinde su ayuda? Básicamente tiene que transmitir, llegar a la gente, lo demás todo se puede aprender, pero la transmisión es algo que no se enseña en ninguna escuela. Solo alguien que es capaz de llegar a la gente puede llamar mi atención artísticamente.

Your work helping up-and-coming artists is very well known. What does this person need to have for you to provide them with your help? They basically need to convey music, reach people and everything else can be learnt, but expressing this is something you cannot be taught at any school. Only someone who is able to reach people will get my attention artistically.

You are also well known for your involvement in charitable causes. Is there enough public involvement? It is never enough. While there is a person who needs help it is not enough. We should be aware of solidarity. It is everybody’s responsibility and we all need to solve it.

He is the Spanish chef who has achieved the most Michelin stars (seven). In 2015, he has ten restaurants together with a new one in Costa Rica as a result of a partnership with Paradisus Resorts. His fervour, rigour and of course, his strength continue to be his best qualities to be one of the best. Berasategui has brought Basque cuisine to the top of the podium, combined with the best he has found in his personal long-distance race.

Sus raíces vienen del Bodegón Alejandro, ¿se habría dedicado a otra cosa de no haber crecido entre sus fogones? Creo que no sabría hacer otra cosa, soy el único de mis hermanos que ha llevado la cocina en la sangre. Estoy seguro de que en mi vocación tiene mucho que ver la añoranza del Bodegón Alejandro. Me tiraba la cocina, pero también aquel ambiente. Mi madre y mi tía María, que eran quienes gobernaban realmente la nave, intentaban quitarme las ganas de ser cocinero, decían que era una profesión muy dura. Pero a cabezotas no nos gana nadie a ninguno de los cuatro hermanos. Así que un día me dijeron que si quería guisar, comenzara a trabajar a las ocho de la mañana como todo el mundo y sin parar hasta medianoche. Y así ha sido hasta hoy.

Your beginnings were at Bodegón Alejandro. Would you have worked in an another field if you had not been brought up in the kitchen? I do not think I would know how to do anything else, I am the only one of my siblings to have cooking in my veins. I am sure that my profession has very much to do with my nostalgia for Bodegón Alejandro. I was drawn to the kitchen and also that atmosphere. My mum and my aunt Maria, who were the ones that steered the ship, wanted to put me off being a chef as they said it was a very tough profession. But I was the most stubborn of a family of four siblings. So one day they said that if I wanted to cook I would I have to start at eight in the morning, like everyone else, non-stop until midnight. This is how it has been ever since.

¿Para qué tipo de paladares es su cocina? Siempre suelo decir que mi cocina está muy apegada a mi tierra y mis raíces, pero abierta al mundo. La mayor parte de mis productos son los mejores que encuentro en cada estación de mis proveedores más cercanos y de absoluta confianza, pero no cierro las puertas a alguna pincelada exótica. Por eso creo que es apta para cualquier paladar, lo importante es que sea lo más buena posible. Por eso creo que mi cocina es compleja y a la vez próxima. El producto y los proveedores son parte fundamental del engranaje que se necesita para hacer la cocina creativa que ofrecemos en mi restaurante de Lasarte.

What type of palate is your cuisine for? I always say that my cuisine is deep-rooted in my country and my roots, but open to the whole world. Most of my products are the best ones that I can find from the nearest and most trusted suppliers for every season but I do not object to some kind of exotic touch. That is why I believe it is suitable for any palate. The most important thing is that it tastes as good as possible. Therefore I think my cuisine is both complex and familiar. The product and the suppliers are a fundamental part of the process to be able to offer creative cuisine which is what we have on offer at my restaurant in Lasarte.

La improvisación no tiene mucha cabida en mis fogones, aunque es cierto que, a veces, la improvisación provoca accidentes agradables. ¿Cómo es el cocinero de su generación? Su pronóstico de la cocina del futuro… Es un cocinero con una pasión infinita, una ilusión diaria, un motivo de superación. Es un tipo de actitud: cuando nos piden dos, damos cuatro y en esas seguimos. Nos fijamos en la técnica, la cocción, el corte, las texturas, la selección y frescura de los productos, la armonía del menú que comes, la justa cantidad de razonamiento, la temperatura del servicio, el tempo, que es importantísimo. La cocina tiene que estar sustentada en bases reales, la falsa moda muere pronto. It is a sort of attitude: when they ask for two, we give them four and that is the line we take. We look for technique, cooking, cutting, textures, selection and freshness of products, the harmony of the menu you taste, the right amount of reasoning, the temperature of service, the tempo, which is very important. La principal manera de estar siempre a la altura en todos los restaurantes y revalidar las estrella cada año es mantener nuestro estilo, llevar nuestra impronta, nuestra manera de organizar y de funcionar lo mejor que sabemos tanto en la casa madre de Lasarte como en el resto de mis restaurantes asesorados. Soy muy metódico y perfeccionista, así que exijo entrega, lealtad y disciplina en el trabajo. Me rodeo de equipos de mi plena confianza que funcionan como si fueran mis brazos derecho e izquierdo y saben perfectamente cuál es mi disciplina y mi filosofía. Ahí radica la clave.

Seven Michelin stars are a great influence, where do you get the energy to always be ready? The main way to always be ready in all our restaurants and ratify the stars every year is to maintain our style, give our stamp, our way of organising and making it work, not only in Lasarte, at our original flagship restaurant but all the rest of the restaurants that I advise. I am very methodical and a perfectionist so I insist on dedication, loyalty and discipline at work. I surround myself with a team that I fully trust and they are extensions of my left and right arms and they know exactly what my discipline and my philosophy are. That is where the key lies.

¿Qué lugar ocupa la familia en su engranaje profesional y empresarial? Siempre digo que sin la familia que tengo, no habría podido llegar tan alto. Mi padre, sin ir más lejos, era súper popular, reunía un sinfín de virtudes que no tengo yo ni de lejos. Él, junto con mi tía, mi madre, mi mujer Oneka y por supuesto mi hija Ane, ocupan una plaza de honor en mi vida y en mi profesión. Siempre repito que el cincuenta por ciento de todo lo que he hecho es mi mujer y afortunadamente, además, tengo un equipazo del copón a derecha e izquierda.

How do your family fit into your professional and business life? I always say that without my family, I would not have been able to get as far as I have. My father as it happens was really popular and had a multitude of virtues which I do not even have. He, together with my aunt, my mother, my wife Oneka and of course, my daughter Ane, hold a very special place in my life and in my profession. I always say that fifty percent of everything I have done is due to my wife and fortunately, I also have a hell of a great team.

Receta / Recipe

Royal de gamba

roja e hinojo ROYAL DE GAMBAS PARA 14 POTOCOS DE ERIZO DE 250grs. Ingredientes: 150g de carne de gamba roja, 50 g de jugo de las cabezas de gambas pasados por la licuadora, 40g de yema de huevo, 55g de huevo entero, 100g de leche entera y 200g de nata fresca.

PRAWN ROYALE FOR 14 25-GRAM SEA URCHIN SHELLS Ingredients: 150g of red prawns, 50g of prawn head juice passed through the blender, 40g of egg yolk, 55g of whole egg, 100g of whole milk, 200g of fresh cream.

Elaboración: Triturar en túrmix o termomix todo el conjunto a velocidad fuerte 1 minuto. Colar por un fino y poner a punto de sal y pimienta. Rellenar un plato de erizos con 1c/s de las grandes con 4grs. de LENTEJA VERDE por cuenco y hornear a 85º vapor 3 min., cubiertos con papel de aluminio. Quitarle el papel y rellenar todo el conjunto con gamba cruda previamente horneada y cortada en tres, pondremos 9 piezas.

For the royale: Blend everything at a fast speed for a minute with a blender or Thermomix. Drain with a mesh and add salt and pepper. Place a dish of urchins with a big tablespoon WITH 4 GRAMS OF GREEN LENTILS IN A BOWL and bake at A 85º VAPOR 3 MIN, covered with aluminium foil. Remove the foil after baking and fill the the dish with raw prawns pre-baked and cut. (FOR EACH PRAWN CUT INTO THREE AND PLACE 9 PIECES)

COCCION DE LENTEJAS: Ingredientes: 200g de lenteja verde y 800g de caldo. Elaboración: Hervir el caldo, añadir las lentejas y cocer 15 minutos al 5 en la inducción. Colar y añadir a una Gastronorm fría y reservar.

COOKING THE LENTILS: Ingredients: 200g of green lentils and 800g of stock Elaborations: Boil the stock, add the lentils and cook for 15 minutes on heat 5 on the hob. Drain and place in a Gastronorm tray to cool.

Jugo espumoso de hinojo = ¾ partes de la receta da 1L acabado. Ingredientes: 300grs. hinojo, 450grs. nata doble, 240grs. cebolla, 900grs. jugo de mejillón, 120grs. mantequilla para pochado, 188grs. mantequilla para acabado, 3 anís estrellado, sal y pimienta, 9grs. lecitina.

Foamed fennel juice = ¾ part of the recipe 1 L finished. Ingredients: 300g fennel, 450g double cream, 240g onion, 900g mussel juice, 120g butter for poaching, 188g butter to finishing touches, 3 star anise, Salt and pepper, 9g lecithin.

Elaboración: Cortar en juliana la cebolla y el hinojo. Cocinar por 15 minutos c/ la mantequilla a fuego lento. Poner el caldo de mejillón y cocinar a fuego lento por 10 minutos. Poner la nata doble y el anís estrellado y a poner a hervir a fuego lento. Cuando empiece a hervir, sacar del fuego e infusionar 30 minutos. Pasar por un chino fino. De la cantidad de la receta, cuando lo pasamos por el fino, el restante que queda de hinojo y cebolla ya escurrida, lo pasamos por la maquina coreana 2 veces, saliendo aproximadamente 250 g más de jugo de hinojo. Lo mezclamos con el liquido anterior (1200g) + los 250g de ahora, nos saldrá 1450grs. Solo nos faltara añadir la mantequilla fuera del fuego y la lecitina. Triturar por la túrmix y colar. Emulsionar con la bamix.

Preparations: Cut the onion and fennel in julienne strips. Cook for 15 minutes with the butter at low heat. Add the mussel stock and cook for 10 minutes at low heat. When it starts to boil, take off heat and infuse for 30 minutes. Pass it through a chinois. When we pass it through the mesh, the rest of the fennel and onion that is left drained, we pass it through the chinois twice, which will leave approximately 250 of fennel juice. Aunque también realiza sesiones de coaching personal y ejecutivo sin caballos, Echevarría mantiene que el caballo puede ser un complemento perfecto para el coach a la hora de trabajar la comunicación eficaz, la cohesión, el lenguaje no verbal o un sentido del liderazgo innovador. Asegura que “sacar a la gente de su oficina y de su ‘zona de confort’ para interactuar con caballos, consigue crear situaciones nuevas con contextos favorables hacia cambios importantes para el desarrollo personal y profesional de cara a un futuro más prometedor”. Por ello, junto con Mercedes Martínez Piñeiro y Constanza González nació Confiantia, una serie de talleres con equinos para trabajar con equipos de empresas y particulares, interesados en procesos de aprendizaje transformadores e innovadores, donde se invita “a coger las riendas de la vida con firmeza y templanza”.

El trabajo que desarrolla Isabel está basado fundamentalmente en los descubrimientos de la neurociencia y en la importancia de la neurogénesis. As she explains, “Anyone can be the author of their own biography. The important issue is to know how you want to live your life and what you need to learn to reach the desired situation. Many people are underachievers and never discover their true talent or are incapable of managing their time well.” Coaching assisted by horses is a widely used technique in the United States and the UK. The dynamics of the use of horses which Isabel develops in her modus operandi help to put new energy into coaching sessions and help to avoid situations of mental block. By means of a series of exercises called “ground work”, (they do not in volving horse riding) tthe horses show us who we really are and enable a person or team to think. In this way, they can detect what learning areas need to be reached with a certain objective. After an intense and varied professional career in which she has been a journalist, Director of Communication and consultant for NGO’s, Isabel has drastically changed her professional career. En 1930, al Señor William Lyons, propietario de la compañía SS Cars Ltd., dejó de satisfacerle la construcción de carrocerías para los chasis de otros fabricantes, por lo que entre 1931 y 1933, “SS”, cuyas siglas proceden de la fabricación de los sidecars de las motos Swallow Sidecar Company (SS), produjo automóviles completos en lugar de carrocerías para coches deportivos, iniciándose la producción de los modelos SS1, SS2, SS90 y SS100, que obtuvieron un éxito rotundo por su belleza y por sus magníficas prestaciones, que quedaron patentes en el Alpine Trial de 1933 y en el RAC Rallye de 1936, ambos celebrados en el Reino Unido.

In 1930, Sir William Lyons, the owner of the company SS Cars Ltd., decided not to continue making the body work for the chassis of other manufacturers. SS is the acronym for Swallow Sidecar Company which comes from the production of the sidecars for motorbikes, but between 1931 and 1933, they built complete cars instead of making the bodywork for sport cars. They started manufacturing the SS1, SS2, SS90 and SS100 models and were extremely successful due to their beauty and wonderful performance which was patently obvious at the 1933 Alpine Trial and at the 1936 RAC Rally, both held in the United Kingdom.

La casa con su estilo moderno y racional, exenta de adornos superfluos, recuerda con sus cubiertas planas, muchas de las antiguas construcciones de nuestra tradicional arquitectura popular mediterránea. Para la zona exterior creamos una versión contemporánea del tradicional pastizal, que bien podría ser una alusión a las plantaciones de gramíneas en nuestros campos andaluces. Pero en este caso, esta especial hierba (Pennisetum rubrum) repite el color óxido de la puerta de acero cortén que sirve de entrada a la vivienda. Las plantas que nos guiaron en el diseño de el jardín, siguen en muchos aspectos el concepto de Xerojardín, propio de los espacios ajardinados californianos, donde es

The house with a modern and rational style is free of superfluous adornments, and has flat roofs that remind us of the old constructions of our traditional popular Mediterranean architecture. For the external space, we have created a traditional contemporary version of grassland which could be reminiscent of our fields in Andalusia. This special grass (Pennisetum rubrum) imitates the oxidised aspect of the weathering steel door that is the entrance to the house. The plants that have guided us with the design of the garden are very much present in the concept of Xerojardín and is characteristic of the landscaped areas of California where grasses and plants need little hydration and maintenance.

frecuente el uso de “grasses” y plantas con bajo consumo en agua y poco mantenimiento. Pero hay también en esta vivienda, una cierta atmósfera de las casas construidas en Los Angeles en la década de los años 6070. De hecho la entrada, bien podría ser un guiño con sus láminas de agua y el pasillo de acceso, a la que aparece en la película El Gran Guateque, protagonizada por Peter Sellers. Otro aspecto importante que tuvimos en cuenta fué el no ocultar el río al que mira, y que ya desde su entrada a la casa, podemos contemplar sin obstáculos. Con el fin de independizar la zona de parking, creamos un macizo de Chamaerops humilis, en alusión a los que crecen de forma natural en nuestros bosques mediterráneos.

This property also has a certain feel of houses built in the 60’s or 70’s in Los Angeles. At the entrance with its water features and access passageway could remind us of the film “The Party” starring Peter Sellers. Another important aspect that we considered, was not to obstruct the river it overlooks so that from the entrance of the house it can be admired without any obstructions. With the idea of separating the parking area, we created a hedge of Chamaerops since they grow naturally in our Mediterranean forests. Different terraces and porches were created overlooking the river Guadiaro, which has played a major role in the design of this space. In fact, hedges that obstructed the views were taken away and only those that didn’t, were kept.

Se crearon distintas terrazas y porches que miran al río Guadiaro, el cual ocupa un papel primordial en el diseño de este espacio. De hecho se eliminaron setos que lo ocultaban y mantuvimos solo aquella vegetación que NO obstaculizara sus vistas. Los sillones Adirondack, son del almacén del paisajista y se pintaron en blanco muy al estilo de las americans casas de Los Hamptons. Otra fuente importante de inspiración que nos guió tanto en el paisajismo como en la decoración, que corrió a cargo de la brillante María Lladó, fueron las pinturas de David Hockney. Sus cuadros, influyeron en el trazado de la piscina, en el mobiliario para porches, en zonas exteriores, y en que mantuviéramos un grupo de antiguas palmeras Washingtonia robusta, que en contraste con la arquitectura de esta casa, bien podría inspirar una pintura de este genial artista.

The Adirondack chairs are from the landscape warehouse and were painted white in the style of The Hamptons in America. Another source of inspiration that guided us, not just in landscaping but also in the decoration, were the paintings of David Hockney, a privilege which was organised by the brilliance of María Lladó. His paintings influenced the layout of the swimming pool, the furniture on the porches, the external areas, and the old Washingtonia robusta palm trees which contrasted with the architecture of the house and could well inspire a painting of this wonderful artist. Like with every project, we have come up with existing elements, objects or views that are eye-catching and get our attention and provide inspiration. In this case, it was the RIVER. We have tried to emphasise the views and make the garden look more spacious by leaving it bare with only a few flower beds. It is the slope that leads us to the river where we have created a mixed-border with trees,

KE paisajista | Jesús Gómez Como en cada proyecto nos suele ocurrir, existen elementos, objetos o vistas, que a modo de “eye-catching”, atrapan nuestra atención y nos conducen en como actuar. En este caso fue el RÍO, cuyas vistas hemos procurado enfatizar, con el fin de ampliar ópticamente el espacio de este jardín, así, hemos preferido mantener un jardín desnudo tan solo interrumpido por parterres en aquellos lugares que no limitaban estas . Y es en el talud que nos conduce al río, donde hemos generado un un “mixed-border” a base de arboles, arbustos y gramíneas propios de rivera (Populus alba,Tamarix gallica, Arundo donax) y otras vivaces y gramíneas de aspecto asalvajado.

KE pintor | Manuel Cano

‘Poética del retrato’ es la última muestra del gaditano Manuel Cano, que hasta el 5 de julio se exponía en la Galería Benot. Una colección de más de veinte personajes de distintos ámbitos y de su propia familia, llevados a la plástica a través de su personal juicio artístico mostrando su esencia más profunda. El realismo se deja ver a través del pincel del autor, cuya obra ha estado tematizada en la mayor parte de su carrera en el paisaje urbano (aljibes de patios gaditanos, calles…). Pero la satisfacción por la acogida y la crítica de esta exposición en la galería gaditana se palpa en este artista, convencido desde muy joven de su vocación. Reconoce que el retrato, a pesar de la dificultad de tener que “someterse a la rigurosa disciplina del dibujo hasta conseguir el parecido, amén de captar la esencia interior del modelo e interpretar todo la que el retratado evoque a través de sus gestos físicos y sus posturas”, también ofrece una faceta más que satisfactoria. Para Cano, esta llega “una vez solventados esos trámites y jugar con las composiciones y la libertad de trazos y manchas sugerentes y azarosas”. ‘Portrait poetry’ is the latest exhibition by the Cadiz-born artist Manuel Cano, who will be showing his artwork at the Benot Gallery. A collection of over 20 personalities from different fields and his own family, portrayed in paintings from his own artistic perspective, reflecting his deepest essence.

Realism is implied through the artist’s paint brush. His work has been themed on urban landscapes (cisterns in Cadiz courtyards, streets…) through most of his career. Satisfaction from the reception and reviews of this exhibition in the Cadiz gallery can be felt with this artist, who was convinced from a very early age of his vocation. He admits that portraits offer a more than satisfactory side, despite the difficulty of having to “submit to the rigorous discipline of drawing until something similar is achieved, as well as capturing the model’s interior essence and interpreting everything the portrait can evoke through physical gestures and posture.” For Cano this arises “once those procedures have been solved and playing with the compositions and the freedom of suggestive, fortuitous brush-strokes and blots.”

De su tierra, Cádiz, y del Campo de Gibraltar siempre le han atraído sus bahías y su luz. De ahí que captar esta y el paso del tiempo entre sus muros y paredes haya estado casi siempre entre sus principales propósitos. “Subirme a las azoteas de Cádiz y mirar desde sus torres vigías, esos que servían para avistar la llegada y salida de los barcos, descubrir ese mundo espectacular me hizo tomarlo como tema pictórico. Desde hace años pinto las azoteas de Marruecos sobre todo en la Medina de Tetuán” Su conciencia realista se aprecia también en sus palabras y reconoce que muchas veces ha llegado a sentir “fatiga” artística. Para evitarlo, dice Manuel, “hay que retirarse a tiempo poner en barbecho la mente, evitar la obsesión por el perfeccionismo y recuperar el acto de pintar como lo que debe ser, un juego lúdico sin muchas pretensiones”. Curiosamente y en relación con el entorno más cercano a Sotogrande, poca gente sabe su autoría del Cristo de la Misericordia. Obra que le encargó el padre Francisco Aragón y que realizó para la iglesia de Pueblo Nuevo de Guadiaro. Tras mostrar su faceta como retratista, Manuel Cano continúa con la rutina de pintar en su estudio. Al preguntarle por su horizonte nos dice “Carpe Diem que decían los antiguos”, porque prefiere no plantearse ninguna meta que vaya más allá del “lujo que supone pintar cada día”.

He has always been attracted by the bays and light in his homeland in Cadiz and the Gibraltar Area. Hence capturing the light and passing of time amongst its walls has almost always been one of his main intentions. “Go up onto the terraces of Cadiz and gaze from its watchtowers. The ones that were used to catch sight of the arrival and departure of ships, discovering the spectacular world made me select this as a painting theme. I have painted the terraces of Morocco, in particular the Medina of Tétouan. His realist conscience can also be appreciated in his words and he admits that many times he has ended up feeling artistic ‘fatigue.’ To avoid it, Manuel says that, “you have to get away for some time and keep a blank state of mind, avoid getting obsessed with perfectionism and recover the action of painting the way it should be, a playful game without many aspirations.” Oddly enough, in relation to the closest surroundings of Sotogrande, few people know that he was the artist who painted the Christ of Compassion, a work commissioned by Father Francisco Aragón and which was made for the church in Pueblo Nuevo de Guadiaro. After demonstrating his facet as a portrait painter, Manuel Cano continues with his routine of painting at his studio. When asked what his horizons are, he tells us that, “Carpa Diem as the Ancients used to say,” because I prefer not to contemplate any goal that goes beyond the “wealth of painting every day.”

Dicen que el arte une a los pueblos y está por encima de los desencuentros. Si alguien encarna mejor que nadie ese sentimiento es sin duda el pintor gibraltareño Don Gustavo Bacarisas y Podestá.

They say art brings people together and is beyond disagreements. If there is anyone that best fits this feeling is without a doubt the Gibraltarian painter Gustavo Bacarisas Podestá.

Gustavo Bacarisas nació en Gibraltar en el año 1.872 en el seno de una familia emigrada a la Roca desde Menorca. Fue el mayor de tres hermanos y su temprana vocación de pintor no sería ajena al hecho de que su padre también lo fuera.

Gustavo Bacarisas was born in Gibraltar in 1872 and raised in a family that emigrated to the Rock from Menorca. He was the eldest of his three siblings and his early vocation as a painter was attributed in part because his father was also one.

En 1878 llegan a Gibraltar los Hermanos Cristianos Irlandeses y nuestro personaje comienza sus estudios de primaria en tan prestigioso Centro. Inmediatamente manifiesta unas excepcionales cualidades para el dibujo y la pintura y su fama se divulga pronto por la Roca. Este Centro Educativo conserva todavía, como un pequeño tesoro, un cuadro impresionista realizado cuando apenas superaba los ocho años.

In 1878 the Irish Christian Brotherhood arrived in Gibraltar and he started studying primary school at this prestigious centre. He immediately showed exceptional talent as a drawer and painter, and soon became famous in Gibraltar. This educational centre still preserves a small treasure, a small impressionist painting made when he had only just turned eight.

A diferencia de otros jóvenes artistas europeos que eran becados por Gobiernos, Ayuntamientos u organismos de diversa índole, la beca o bolsa de estudios que se otorga a Gustavo Bacarisas fue satisfecha por un grupo de ciudadanos gibraltareños, que creyeron desde el principio en sus cualidades artísticas y en sus posibilidades como pintor. Comienza así sus estudios en la Escuela Libre de la Academia de Bellas Artes de Roma. En esta Ciudad coincide con gran numero de artistas españoles, como Rosales o Fortuny, en un ambiente cosmopolita y culto donde acuden críticos, marchantes y

In 1892, at the age of 20, he moved to Rome to start studying painting. Unlike other young European artists who got grants from government, councils or other organisations, the grant or scholarship was covered by a group of Gibraltarian citizens, who believed in his artistic talent from the beginning and his possibilities as a painter. He started his studies at the Spanish Fine Arts Academy in Rome. He coincided with a large number of Spanish artists in this city, such as Rosales or Fortuny, in a cosmopolitan and learned atmosphere where critics, merchants and collectors from all over the world would gather to discover young talent. coleccionistas de todo el mundo para descubrir a jóvenes talentos. En Roma permanece hasta 1906 para trasladarse luego a Londres y Paris, ciudades donde trabajó profusamente. De Paris a Argentina, donde fue profesor de la Academia de Bellas Artes y expuso con gran reconocimiento escenas rurales de la Pampa y Marruecos, para culminar su periplo americano con exposiciones de éxito en Nueva York y Philadelphia. Gustavo Bacarisas llega a Sevilla en 1.913, con la simple intención, como el mismo reconocería, de pasar una temporada pintando sus calles y los pueblos cercanos, pero las circunstancias hicieron que Sevilla pasara a ser su ciudad de adopción, donde fue querido, admirado y respetado. Al poco de llegar, don Gustavo conoce a la familia Laffite propietaria de la fabrica de cerámica “Los Remedios” quienes pronto valoraron sus cualidades artísticas y humanas y le proporcionaron los medios para que pudiera trabajar en sus instalaciones. En la parte alta de la empresa acondicionaron un precioso salón con espléndidas vidrieras y allí comenzó su trabajo como ceramista. Su trabajo empezó a dar fruto y pronto se colocaron un gran numero de rótulos con nombres de calles, establecimientos comerciales y plazas que llevaban la impronta de su arte. Pero sin duda alguna su consagración como ceramista fue con los trabajos realizados para la Exposición del 29 donde realizó la decoración del Pabellón de Argentina y del Salón Principal del Pabellón Real. A su fama como artista le acompaña su talla humana y sus cualidades de hombre esencialmente bueno. Sevilla le acogió y su integración en la Ciudad fue total. Ingresa en el Ateneo Sevillano, donde llego a ser presidente de la Sección de Bellas Artes. En 1917 realiza el cartel para las Fiestas de Primavera, honor reservado a pocos, y al año siguiente interviene como creador artístico de la Cabalgata de Reyes Magos. El Ayuntamiento Sevillano, por acuerdo unánime, le nombra Hijo Adoptivo de la Ciudad en 1.919.

He then moved from Paris to Argentina, where he became a professor of the Fine Arts Academy and exhibited rural scenes of La Pampa and Morocco with a great deal of recognition and completed his American tour with successful exhibits in New York and Philadelphia. Gustavo Bacarisas arrived in Seville in 1913, with a simple intention, as he would admit, to spend a time painting its streets and neighbouring towns, but circumstances made Seville his city of adoption, where he was loved, admired and respected. Shortly after arriving, Gustavo met the Laffite family, the owners of “Los Remedios” pottery factory who soon appreciated his artistic and human traits and gave him the means so he could work using their facilities. They set up a beautiful room with splendid stained-glass windows on the top floor of the building and this is where he started his work as a potter. His work started to give results and a large number of street signs, shop signs and square signs were installed which had his artistic mark. Although his recognition as a potter was achieved with the work he carried out at the IberoAmerican Exposition of 1929 where he carried out the decoration of Argentina’s pavilion and the main room in the Royal Pavilion. His recognition as an artist was accompanied with his human touch and his traits as an essentially good man. Seville accepted him as one of their own and his integration in the city was complete. In 1917 he made a poster for the Spring Festivities, a privilege granted to the very few, and a year later he took part in the Three Kings Parade as the artistic creator. Seville City Council, which by unanimous agreement, named him an ‘adopted son’ of the city in 1919.

Paradoxes of life, it was a Catalan and Basque who created the Fair of Seville and a Gibraltarian, Gustavo Bacarisas, who designed the marquees. The famous triangular-shaped neckerchief which is used as a ticket was designed by Bacarisas and has remained unchanged since 1919 until this day.

His restless spirit made him travel to Sweden to work on sets and designs for the opera “Carmen” at the Royal Swedish Opera in Stockholm. His success was impressive, the critics in that country recognised unanimously that his designs were of a sublime artistic quality.

Cuando el simple hecho de vivir el día a día a pleno rendimiento físico supone un reto importante, nos encontramos ante una circunstancia fuera de lo habitual. Especialmente si este hecho se da sobre todo en niños. ‘Energía es vida’ un lema tan evocador como real en numerosos afectados por la enfermedad Mitocondrial, cuya actividad en la vida depende de priorizar cada una de las habilidades cotidianas. Actualmente existen en el mundo más de 7.000 enfermedades raras y la conocida como Mitocondrial es una de ellas. La cual es el resultado del fracaso en el funcionamiento de las mitocondrias, productoras de las células del organismo, cuya función es generar la energía necesaria para mantener la vida y para el desarrollo y correcta función de los órganos y sistemas. Para generar conciencia, extender entre profesionales y el resto de ciudadanos su conocimiento, así como para el asesoramiento a afectados y familiares está AEPMI. Una entidad sin ánimo de lucro fundada en 1999. Actualmente esta asociación actúa a nivel de toda España y pone en marcha iniciativas cuya finalidad consiste en mejorar la calidad de vida de estas personas.

Their purpose is to generate the necessary energy to keep us alive and to develop and correct the working of organs and systems.

Chanalle Hamilton, actual vicepresidenta de AEPMI y madre de Thalia, una pequeña afectada por esta enfermedad, viene desarrollando hace años un trabajo de investigación a través de internet, con el fin de conseguir respuestas que ayuden a mejorar las circunstancias de los afectados. Con su constancia y la ayuda de otras entidades como Service in Satchidananda o la Asociación Cultural de Sotogrande, la pasada primavera se celebró en el Club de Golf de Alcaidesa una cena benéfica con el fin de recaudar fondos. “El amor sin condiciones”, en palabras de Shanalle, que desprenden niñas como Thalia ayuda a seguir adelante siendo “realista pero positiva”. Por ello y debido a que el tiempo es escaso para la mayoría de ellos, AEPMI enfoca y trabaja a contracorriente para conseguir hacer un registro oficial de afectados, llevar a cabo proyectos globales con Estados Unidos, formar a los médicos y hallar un diagnóstico.

When the simple fact of living from day to day in full physical condition is an important challenge, we come across unusual circumstances. This is especially the case if it happens with children. ‘Energy is life’ is the evocative, real-life slogan for those who are affected by Mitochondrial disease, whose activity in life depends on giving priority to every-day skills.

To increase awareness, to spread knowledge about it among professionals and the rest of society, there is AEPMI to give counselling to the people affected and their relatives. It is a charity organisation founded in 1999. At present this association is operating in the whole of Spain and is implementing initiatives with the aim of improving the quality of life of those who suffer from it.

Chanalle Hamilton, who is the current vice-chairman of AEPMI and the mother of Thalia, a little girl affected by this disease, has been developing research work through the Internet over the years, with the objective of getting answers to help improve the circumstances of those who are affected. With the perseverance of other organisations such as Service in Satchidananda or the Sotogrande Cultural Association, a charity dinner party was held to raise funds at Alcaidesa Golf Club last spring. “Unconditional love”, in the words of Shanalle, which gives girls like Thalia help to keep on fighting and being “realistic but positive.” Due to this and because time is scarce for most of them, AEPMI is focused on and works against all odds to achieve compiling a official register of those affected, carrying out global projects with the United States, training doctors and finding a diagnosis.

Ingredientes: • Algas marinadas • Algas agar agar • Aceite de sésamo • Tarantelo de atún rojo • Salsa teriyaki Elaboración: Mezclamos las algas marinadas con las algas agar agar y las salteamos con aceite de sésamo. Las dejamos enfriar. Troceamos en dados el tarantelo de atún rojo, salpimentamos y marcamos ligeramente sobre la plancha, dejándolo poco hecho. Mezclamos los dados de tarantelo de atún con la salsa teriyaki. Presentación: sobre una base de algas colocamos los dados de tarantelo con la salsa teriyaki.

Ingredients: • Marinated seaweed • Agar agar seaweed • Sesame oil • Tarantelo bluefin tuna • Teriyaki sauce Preparation: Mix the marinated seaweed with the agar agar seaweed and stir fry with sesame oil. Let it cool. Dice the Tarantello bluefin tuna, season and lightly grill on the griddle. Mix the diced Tarantello bluefin tuna with the teriyaki sauce. Presentation: Place the diced Tarantello with teriyaki sauce over the seaweed.

chocolate EQUIPO: Varillas manuales o eléctricas, Cazo, Espátula de goma y 6 tazas pequeñas o 4 ramekins.

UTENSILS: Manual or electronic mixer, Cooking pot, Rubber spatula and 6 small cups or 4 ramekins

INGREDIENTES: 415 ml de leche entera, 60 ml de nata, 66 g de azúcar, 28 g de cacao puro en polvo, 17 g de Maizena, una pizca de sal, 100 g de chocolate, 70% cacao cortado muy fino, una cucharadita de extracto puro de vainilla, una cucharada de Chocolate Vodka Pancracio (opcional), o tu licor favorito y 250 ml de nata para montar.

INGREDIENTS: 415 ml of whole milk, 60 ml of cream, 66 g of sugar, 28 g of pure cocoa powder, 17 g of flour with a pinch of salt, 100 g of chocolate, 70% finely cut cacao, a teaspoon of pure vanilla extract, a teaspoon of Pancracio Chocolate Vodka (optional) or your favourite liquor and 250 ml of whipping cream.

Para 4 o 6 personas MEZCLAR el azúcar, el cacao, la Maizena y la sal en un cazo de tamaño mediano. AÑADIR aproximadamente la mitad de la leche y remover hasta que quede suave y uniforme. AGREGAR la leche restante y la nata a la mezcla anterior. REMOVER durante cinco minutos con una espátula de goma constantemente a fuego medio insistiendo en las paredes y fondo del cazo hasta que el pudding espese y empiecen a salir burbujas en los bordes. COCER removiendo durante un minuto y medio más aproximadamente y añadir el chocolate con cuidado hasta que se derrita y la mezcla esté uniforme. RETIRAR del calor y mezclar la vainilla y el Chocolate Vodka (si se piensan usar). DIVIDIR el pudding entre las tazas o ramekins. SERVIR caliente, a temperatura ambiente o frío, según tu gusto. ACOMPAÑAR con nata ligeramente montada.

For 4 to 6 people MIX the sugar, cocoa, the flour and salt in a medium-sized cooking pot. ADD approximately half of the milk and stir until it is smooth and uniform. ADD the rest of the milk and cream to the mixture. STIR for five minutes with the rubber spatula continually at medium heat making sure you stir the sides and bottom of the pot until the pudding thickens and bubbles. BOIL and stir for a minute and a half approximately, add the chocolate carefully until it melts and the mixture is uniform. REMOVE from heat and add the vanilla and Chocolate Vodka (if you wish to use it). SHARE the pudding into the cups or ramekins. SERVE hot, cold or room temperature according to taste. ADD whipped cream.

Vargas Después de triunfar por los teatros de toda la geografía española en 2013, la bailaora y coreógrafa linense Cecilia Gómez ha vuelto a estrenar su espectáculo en Madrid. Desde el 2 y hasta el 21 de junio, Cupaima ha vuelto a estrenarse, en esta ocasión en el Teatro Victoria. Este homenaje flamenco a la legendaria cantante mexicana Chavela Vargas es una idea original de la gaditana, que ha dirigido el premiado coreógrafo Luis Olmos y que ha contado con la colaboración de Antonio Canales. Su protagonista lo pactó con Cecilia y autorizó antes de fallecer. Gracias a ello y a la calurosa acogida de crítica y público, los amantes de la danza flamenca y apasionados de la figura de la pionera de las rancheras, pueden volver a disfrutarlo. Y para los que no tuvieron ocasión de verlo, ahora podrán recorrer los principales pasajes de la vida de la cantante a través de nueve escenas, que comienzan con el encuentro entre Chavela y el chamanismo y transcurre a través de los momentos más destacados de su vida. Arte en estado puro en homenaje a una figura única en el mundo y que supo dejar su huella en el corazón de muchos.

After having success in the theatres across Spain in 2013, the dancer and choreographer from La Linea Cecilia Gómez has again launched her show in Madrid. From 2nd to 21st June, “Cupaima” has once again been launched, on this occasion at Victoria Theatre. This flamenco tribute is an innovative idea from this Cadiz-born artist, dedicated to the legendary Mexican singer Chavela Vargas and has been directed by the award-winning choreographer Luis Olmos and in collaboration with Antonio Canales. The protagonist authorised and agreed to it with Cecilia before passing away. Thanks to this and the warm welcome from the critics and audience, lovers of flamenco dancing and those who have a passion for the pioneering figure of ranchera, can enjoy it again. For those who did not get a chance of seeing it, can now relive some of the life passages of the singer through nine scenes which start with Chavela and her encounter with shamanism, and relives some of the most important parts of her life. This is art in the purest form - a tribute to this one-of-a-kind figure in the world, who knew how to leave her mark in the hearts of many people.

pasos de ti ‘A seis pasos de ti’, la última novela del periodista Fernando Olmeda sitúa a Sotogrande entre sus escenarios. Publicada esta primavera, la del director de documentales y escritor ha sido definida como una novela coral y llena de intriga, que permite al lector recorrer medio mundo. La obra está basada en la teoría propuesta en 1929 por el escritor húngaro Frigyes Karinthy, que sostenía que cualquier ser humano está conectado con otro de la Tierra a través de cinco personas. Con ello, el escritor madrileño asegura intriga, venganza y amor en un relato de vidas cruzadas cuyos protagonistas no cesan en su búsqueda del camino a la felicidad.

‘Six steps from you’ is the latest novel by journalist Fernando Olmeda and Sotogrande features among the places in it. It was published in spring by this director of documentaries and writer and has been defined as a novel with various stories and full of intrigue, which allow the reader to travel half-way around the world. This literary work is based on the theory put forward in 1929 by the Hungarian writer Frigyes Karinthy that any human being is connected by someone else on Earth by means of five people. With this, the writer from Madrid promises intrigue, vengeance and love in a narrative of interwoven lives whose protagonists never stop looking for happiness.
