Hello dear readers! Welcome to our date. We are pleased that you have chosen us again, especially for this prominent time of year in Sotogrande. At last our well deserved holidays have arrived. A time of reunions, sport, warm days at the beach, get-togethers at the Marina in the evening and why not, exploring new routes and spots which make these days of rest with family and friends even more thrilling. That is why we have sought to convey a relaxing read in this new edition in the best possible way and for KE Magazine Sotogrande to become your best ally by the sea or having a refreshing drink in the shade. La privilegiada situación de este bello pueblo gaditano en la desembocadura del Río Guadalquivir, frente al parque Nacional de Doñana, ha marcado su importante historia e idiosincrasia.

The privileged location of this beautiful town in Cadiz at the mouth of the river Guadalquivir, opposite the Doñana National Park, has marked its important historical background and idiosyncrasy.

Sanlúcar fue cedida a Guzmán El Bueno como recompensa por su actuación en la defensa de la ciudad de Tarifa.

Sanlúcar was given to Guzmán El Bueno (“The Good”) as a reward for his actions in the defence of the town of Tarifa.

Desde el puerto de Sanlúcar salieron grandes expedicionarios: Magallanes y Juan Sebastián Elcano comenzaron la Primera Vuelta al Mundo, y también desde allí Colón inició su Tercer Viaje a las Américas, convirtiéndose en un puerto de referencia tras el descubrimiento del nuevo mundo.

Important expeditions departed from the port of Sanlúcar: Magallanes and Juan Sebastián Elcano began their first round-theworld journey and also Columbus started his third journey to the Americas, making this the port of reference after the discovery of the new world.

En el archivo del Palacio Ducal de Medina Sidonia se guardan importantísimos legados sobre la historia de España y América. Fue la llamada Duquesita, o “Duquesa roja”, la que comenzó a archivar personalmente este gran legado histórico.

animada, con su antiguo ayuntamiento, está rodeada de bares típicos. Empecemos nuestra ruta tomando en “Barbiana” la primera copita de “manzanilla en rama”, como suelen tomar los sanluqueños, con unas “papas aliñás “ y unos langostinos; de allí nos acercamos a “Casa Balbino”, donde resulta indispensable pedir unas tortillitas de camarones y algunas de las más de cien tapas con que cuenta este legendario establecimiento, sin olvidarnos de pedir una copa de una de la treintena de marcas de manzanilla que podemos encontrar en esta ciudad. Justo al lado se encuentra “La Gitana”, donde tomaremos unas galeras calentitas o cualquiera de sus guisos marineros. Ya para el postre, lo propio sería tomarnos un helado en la “Heladería La Ibense “ y comprar unos pastelitos artesanos en la “Confitería Pozo” o en “La Rondeña” para la merienda. Previamente al festín de tapas, si hemos llegado tempranito a Sanlúcar, les aconsejamos estacionar nuestro vehículo en el aparcamiento de “La Calzada”, singular paseo que lleva a la playa desde el centro y donde cada primavera donde tiene lugar la tradicional “Feria de la Manzanilla”. Es en la playa de Sanlúcar donde se celebran las famosas “Carreras de Caballos” todos los meses de agosto, consideradas de interés turístico nacional. Resulta un verdadero espectáculo ver la playa en bajamar convertida en un precioso hipódromo natural. Otro atractivo turístico de la ciudad es su plaza de abastos, con puestos de venta de diferentes productos de temporada cuya visita se hace indispensable para conocer y entender la gastronomía sanluqueña. Nuestro paseo nos lleva desde la Plaza de los Cisnes hasta la Calle Ancha, y al final de ésta, nos encontramos con la Iglesia de Santo

We start our route having our first drink of “manzanilla en rama” in “Barbiana”, it is what the people of Sanlúcar often drink with seasoned potatoes and some shrimps. From there we go to “Casa Balbino”, where it is imperative to order little shrimp omelettes and one of over a hundred different tapas that are on offer at this legendary establishment. And without forgetting a drink of one of the thirty or so brands of manzanilla that we can find in this town. Just next door is “La Gitana”, where we can have hot mantis shrimp or other seafood stews on offer. Then for dessert, the appropriate thing to do would be to have an ice cream at the “Heladería La Ibense” and buy some home-made cakes at teatime at the “Confitería Pozo” or “La Rondeña”. We arrived early in Sanlúcar prior to the tapas feast and we advise you to park your car at “La Calzada” car park, a unique boulevard from the centre to the beach and where each spring the traditional “Manzanilla Fair” takes place. The famous “Horse Races” take place each August on the beach of Sanlúcar which is considered of national tourist interest. It is a true spectacle seeing this beach at low tide converted into a natural racecourse. Another appealing tourist attraction in the town is the food market with stalls selling different seasonal products which makes this a must in order to get to know and understand the gastronomy of Sanlúcar. Our walk takes us to the Plaza de los Cisnes square as far as Calle Ancha and at the end of this street we get to the 16th century church of Santo Domingo. From here, we go up calle San Diego where the

Domingo (Siglo XVI) y, desde allí, subiendo por la calle San Diego, vemos como se alza el majestuoso Castillo de Santiago (Siglo XV) que podemos visitar ya completamente restaurado; cuentan que fue desde su torre donde la reina Isabel la Católica vio el mar por primera vez. Justo al lado, se encuentra la Bodega Barbadillo, y su Museo de la Manzanilla, muy interesante para aprender la elaboración de este singular vino. Si disponemos de más tiempo aconsejamos visitar otras bodegas sanluqueñas como Pedro Romero, Argueso, DelgadoZuleta, Hidalgo, la Cigarrera, etc…, igualmente interesantes tanto por su historia como por su belleza arquitectónica. Una vez conocido el proceso de la cría y elaboración de la manzanilla, paseamos por la Calle Caballeros, y llegamos a la Iglesia de Nuestra Señora de la 0 y al Palacio de la Duquesa de Medina Sidonia “Palacio de los Condes de Niebla”, que alberga el “Archivo de la Casa Ducal”. una preciosa hospedería que merece la pena visitar y disfrutar de sus bellísimos patios y jardines. Muy cerca, se encuentra el Palacio de los Infantes de Orleáns-Borbón (S.XIX), precioso edificio neomudéjar que perteneció a los Duques de Montpansier y que en la actualidad es sede del ayuntamiento de la ciudad. Siguiendo nuestro periplo y buscando la Plaza de San Roque, bajaremos por la Cuesta Belén, para contemplar el Auditorio de la Merced, antigua Iglesia del Palacio Ducal de Medina Sidonia, así como “las Covachas”, singular obra de filigrana en piedra que se encuentran ubicadas bajo los jardines ducales . Finalmente, terminaremos en la plaza de San Roque para tomar otra copita y, si todavía nos quedan fuerzas por la noche, nos daremos una vuelta por La Calzada y el Paseo Marítimo para llegar a Bajo de Guía, y cenar en “Casa Bigote”, uno de los mejores restaurantes de Andalucía, donde nos deleitarán con los mejores langostinos de Sanlúcar que hayan probado jamás. Ah!.., y no olvidar tomar acedías…, otra exquisitez sanluqueña!!!!

Following our tour and searching for the Plaza de San Roque square, we go down Cuesta Belén to admire the Auditorium of La Merced, the old church of the Ducal Palace of Medina Sidonia, and Las Covachas, a singular and intricate work of stone which is found beneath the Duke and Duchess Gardens. Finally, we end our journey in San Roque square to have another drink and if we still have some energy left, we can take a stroll along La Calzada and the Promenade to get to Bajo de Guía in the evening and have dinner at “Casa Bigote”, one of the best restaurants in Andalusia, and where we are spoilt with the best prawns in Sanlúcar. Ah!..., and do not forget to eat plaice…, another Sanlúcar delicacy!!!!

Quizás el refrán ‘es de bien nacido ser agradecido’ podría atribuírsele al diestro jerezano. Hombre de fe, de su familia, de sus amigos y, en cada segundo de su conversación, agradecido a todo el que le rodea. Exprime cada día como si fuera el primero y honestamente admite estar viviendo la cara más amable de su profesión.

Perhaps the saying ‘Gratitude is the sign of noble souls’ could be wholly attributed to the bullfighter from Jerez. He is a man of faith and of family and friends, and at every moment of the conversation is grateful to everything around him. He takes each day as if it were the first and acknowledges that is he is living the best part of his profession.

¿Cuántas veces ha pensado que ha vuelto a nacer? Ha habido un antes y un después desde mi último percance. He tenido una trayectoria muy reconocida, muy respetada, he tenido que luchar con corridas difíciles, pero me ha recompensado el cariño, el respeto y la admiración del público. Quizás el percance me haya dado una oportunidad nueva, para disfrutar la parte amable del toreo, con las grandes figuras del momento y las grandes ganaderías.

How many times have you thought that you have been reborn? There was a before and after my last incident. I have achieved a lot of recognition, a highly respected career. I have had difficult bullfights but have been rewarded with the warmth, respect and admiration from the public. Perhaps this incident has given me a new opportunity to enjoy the gracious part of bullfighting with the great figures of the moment and the great stockbreeders.

¿Qué es lo primero que piensa cuando entra al ruedo y lo último cuando termina la faena? Uno siempre tiene esa sensación de compromiso con la plaza, con la afición, con el público…Y en la mente, disfrutar y hacer feliz al público y la afición. Las sensaciones que se llevan a la plaza son positivas, de triunfar y ofrecer todo lo que llevas dentro, para que cuando llegues al hotel no te quede la sensación de no haberlo podido realizar y demostrar en la plaza.

What is the first thing you think about when you enter the bullring and last thing when you finish the bullfight? You always have that sense of commitment to the bullring, the supporters and the public… And in your head, you need to enjoy it and make the public and the supporters happy. The feelings you take away from the bullring are positive. You enjoy and offer everything that is within you so that when you get back to the hotel you are not left with the feeling of not being able to carry out and show your ability in the bullring.

¿Cómo se recupera una persona en cinco meses de una cornada como la que tuvo en Zaragoza? ¿Por qué no esperar más tiempo? Soy consciente de que la situación era dramática. He sentido por parte de los allegados y de mi familia posturas muy Verano / Summer 2013

How does a person recover in five months from a goring like the one that took place in Zaragoza? Why did you not wait longer? I am aware that the situation was dramatic. 21

divididas, porque tenía a mis padres en contra de que reapareciera. Pero yo era el principal conocedor de la situación. La preparación, el entrenamiento y la dedicación en mi profesión era lo que me había llevado hasta aquí. En este sentido, mi mujer y mis hijos me han apoyado en todo momento y tenía que tomar una decisión al respecto.

I had heard very diverse opinions from loved ones and family members because my parents were against my comeback. But I was the best person to know about my situation. Preparation, training and dedication to my profession were what brought me here. In this respect, my wife and my children have supported me at all times and I had to make a decision regarding this matter.

Qué diferencias reconoce haber experimentado profesional y personalmente tras el percance? En el tema personal, te sorprende mucho ir por la calle y ver a personas que sin ser aficionadas, te demuestran su humanidad y su cariño, agradezco esa atención. Luego, como torero, los empresarios también han demostrado esa sensibilidad para apoyarme.

What experiences have you had both professionally and personally after your setback? On a personal level, I have been surprised seeing people on the street that are not even fans, showing me compassion and warmth, and I appreciate this kind of attention. Then as a bullfighter, bullfight promoters have also shown that kind of support.

¿Reconforta haberse convertido en un ejemplo? Quisiera transmitir a toda la sociedad el ejemplo que me han demostrado a mí y reconocer ejemplos de muchas personas anónimas, a las que yo miro también. Sí me considero un ejemplo para mis hijos y para mi mujer, yo ahora mismo soy su guía, su ejemplo a seguir.

Do you feel comfort from being seen as a role model? I would like to express to society as a whole the example that has been shown to me and acknowledge examples of many anonymous people, whom I also admire. If I consider myself to be a role model to my wife and children, right now I am their guide and set an example to follow.

¿Qué momento de su vida le gustaría haber podido congelar? La grandeza de esta vida es que pasen los momentos y que se recuerden, tanto para bien como para mal. Y que de ellos nos alimentemos, por ello es importante aceptarlos tal y como vienen. Yo soy creyente, un hombre de Dios y todo se lo dedico a él. Me gusta vivir la vida cada día y buscar nuevos horizontes, nuevos destinos.

What moment of your life would you have liked to freeze? The greatness of life is when moments come and go, and are remembered, both the good or the bad. We feed off this, that is why it is important to take things as they come. I am a believer, a man of God and I dedicate my life to Him. I like living day by day and looking for new horizons and new destinations.

¿Cómo recuerda su alternativa el 18 de junio del 1994 en la Plaza de Toros de Algeciras? ¿Qué esperaba de ese día en adelante? Los sueños se me han ido cumpliendo poco a poco. Yo era consciente de que era un camino difícil. Pero fui luchando poco a poco y el momento de la alternativa es un sueño que se tiene desde muy pequeño. A mi se me cumplió con un gran torero como fue Pedro Castillo y de testigo El Niño de la Taurina. ¿Qué admira del toro? ¿Y del hombre? Del toro admiro y aprendo también. Admiro la belleza, la elegancia, la clase que transmite. Luego del comportamiento del toro en la plaza se aprenden cosas, hay toros que te van avisando, que te van marcando. Con lo cual, hay que ser conocedor e ir dándole lo que necesita. Y del hombre el respeto, las personas debemos respetarnos mutuamente y partir de esa base. Al contrario que otros toreros, los días de festejo le gusta estar rodeado de su

How do you remember your bullfighting ceremony in the Algeciras bullring in 1994? What did you aspire to from that day onwards? My dreams have been fulfilled bit by bit. I was aware of the difficult journey ahead of me. I was fighting bit by bit and the ceremony is a dream that you have from a very young age. It was fulfilled with a great bullfighter who was Pedro Castillo and “El Niño de la Taurina” as witnesses. What do you admire about the bull? And man? I admire and also learn from the bull. I admire the beauty, elegance and class that it instils. You learn things from the bull inside the ring. There are bulls which give you warnings, which guide you. Therefore, you have to be an expert and do what is necessary. As for man, people need to mutually respect each other and take it from there. Unlike other matadors, on bullfighting days you like to be surrounded by your family and friends in your hotel room.

gente y amigos en la habitación del hotel, ¿es así desde el principio? Siempre me ha gustado tener a mi familia cerca, disfrutar de ella y de mis amigos. He sido diferente en ese aspecto. Mi mentalización va más con la reunión familiar y la conversación con mis amigos, en el cariño demostrado de todas las personas que vienen a saludarme. Y cuando llega el momento de montarse en la furgoneta y hacer el paseíllo es cuando llega una concentración plena.

Aparte del toreo, ¿cuál es su otra pasión? Me gusta muchísimo el esquí acuático y ahora también me paso de dos a tres horas en bicicleta todos los días. El deporte me apasiona. Y el billar, que también juego en casa. ¿Cómo se plantea 2013? Viviendo día a día. Como podréis entender, veo la vida desde otro prisma. Mis planteamientos son siempre a corto plazo y, sobre todo, disfrutando mucho del día que me ha regalado Dios. ¿El ‘Ciclón de Jerez’ o ‘El Pirata’? Set in the heart of Los Alcornocales Nature Park, this Cadiz-based zoo, which is managed by a team of specialised professionals, started in its earliest stage in 1998 although it opened its doors to the public in 2002. The objectives were clear from the beginning and today, without a doubt, they are still nurturing the everyday activity of the animals at the centre. The idea is to develop environmental education through lectures, exhibitions and awareness campaigns, which reinforce the reason for being a Wild Species Rescue Centre. Due to this, as the centre’s biologist explained, the activities which take place are fully focused on environmental education, the elaboration of preservation plans and breeding in captivity.

Gracias a la labor que el equipo viene desarrollando durante años, actualmente en las instalaciones conviven en torno a los 500 animales, pertenecientes a especies de los cinco continentes, entre los que destaca un único ejemplar en el mundo de puercoespín gigante albino.

Thanks to the work that the team have been carrying out over the years, at present around 500 animals cohabit at the facilities. These belong to species from five continents, among which the one that stands out is the world’s only specimen of albino giant porcupine.

El personal del zoo trabaja con la máxima de conservar y estudiar las especies, divulgar el conocimiento de las mismas y hacer extensible la sensibilización ecológica. Para ello, el parque pone a disposición del público y a lo largo de todo el año exhibiciones de aves y reptiles y visitas guiadas por sus instalaciones, entre las que destacan: la estancia del murciélago y la de las aves, la red de túneles en alto apta para el desplazamiento de los simios, las estancias de determinados animales como las serpientes, los lémures, el pavo real o el kinkajou, la sala de quirófano o el lago de las aves acuáticas.

The zoo’s personnel works to the maximum to preserve and study the species, share the knowledge they acquire and increase ecological awareness. Due to this, the zoo makes bird and reptile exhibitions available, as well as guided tours around the facilities the whole year around, there is a bats enclosure and aviary, the network of elevated tunnels used for the movement of the apes, the enclosures of certain animals such as snakes, lemurs, the peacock and the kinkajou, the operating theatre and the water birds lake.

Pero me despierta una ternura inigualable el tesón de los becarios que se acercan a la profesión con entereza y voluntad a prueba de mini-sueldos.

From whom have you learnt the most in your life? I have had many teachers both on a personal and professional level. I always try to leave the door open to amazement because it is the best way to continue to stay alive and learn. What colleague in your profession do you hold the greatest respect for? ¿Qué le enseñó el periodo vivido en Estados Unidos? Que está bien eso de aprobar asignaturas pendientes. Descubrí a un pueblo joven hecho a sí mismo que, por encima de los arquetipos e imágenes tópicas que de ellos pudiéramos tener, tienen unos valores que ojalá importáramos en la vieja Europa. ¿Cuál es su especialidad culinaria? Los amigos que frecuentan mis cazuelas hablan muy bien de mis arroces y guisos de la vieja escuela. Se nota la mano de mi madre y titas de las que aprendí. Ya que comparte edición con el maestro Juan José Padilla y sabiendo su gran afición taurina, ¿qué destacaría del diestro gaditano? El valor. No ante el toro, que también. Especialmente, ante la vida. Nos ha dado una valiosa y enorme lección de tenacidad, voluntad y fortaleza y puede enorgullecerse de ser un ganador, con todo merecimiento.

What have you learnt from the time you lived in the United States? It is good to carry out outstanding tasks. I discovered a young self-made nation and above all the archetypes or clichéd images that they may have, they have values that I wish we could introduce in Old Europe. What is your culinary speciality? Friends who have tried my cooking speak very highly of my old school rice dishes and stews. You can see the touch of my mother and aunts in them. Since you are sharing this edition with the matador Juan José Padilla and knowing your great bullfighting passion, what would you highlight about this bullfighter from Cadiz? His courage. Not in front of the bull, that part too but especially towards life. He has given us a great, valuable lesson of tenacity, will and inner strength, and he can be proud of being a winner with all its merit. What is your greatest ability? I am clumsy at swimming but my past in the Railway Engineer Corps gave me the chance to do exercise on the steady rings, where I have been able to emulate Joaquin Blume performing the Iron Cross with one hand whilst I sing the choral part of Carmina Burana in three voices.

¿Cuál es su mayor habilidad? Soy torpe en la natación, pero mi pasado en el cuerpo de ferrocarriles me brindó la posibilidad de ejercitar en las anillas, donde he conseguido emular a Joaquín Blume realizando el Cristo con una mano mientras canto la parte coral del Carmina Burana a tres voces. ¿Qué rumbo está tomando el periodismo con el imparable crecimiento de las plataformas digitales? Antes, era analfabeto quien no sabía leer y escribir. Ahora es considerado analfabeto funcional quien no se haya iniciado en las redes. La evolución es vertiginosa. Pero el futuro ya está aquí y las tendencias imparables. No creo que desaparezcan los medios de papel, pero me temo que quedarán como una secuela más romántica que práctica. Es también la inmediatez en la producción y consumo de imágenes y sonidos. Una revolución voraz.

In what direction is journalism heading with the unstoppable increase of digital platforms? In the past, you were illiterate if you did not know how to read or write. Now you are considered to be a practical illiterate if you have not yet started using social media sites. It is a dramatic evolution. I do not think that print media will disappear but I am afraid that it will be left as a more romantic consequence rather than something practical. It is also the immediateness of production and consumption of images and sounds. It is a voracious revolution. From each of the following destinations, what are you left with? Almeria, Barcelona, Seville and Cadiz. For me, all these places are not mutually exclusive but rather complementary. In each of these places, there are landscapes, friends and experiences which continuously call me back.

De manera que padre e hija aprovechan el periodo estival para adentrarse en los entornos creados por el equipo de Sotojardín, vivir el día a día del servicio que ofrece la empresa, tratar con los clientes y convertirse en una verdadera especialista del paisajismo en Sotogrande.

Nevertheless, the most important effort and the support which Manuel can count on every year, especially this time of year, is that of his daughter Cristina Fernández. Without a doubt ever more valuable for the company and at the age of only 17, has studies in Fine Arts and continues developing to fully specialise in landscaping and commanding various languages. Cristina’s youthfulness has not dampened her eagerness at all, her enthusiasm or her ability for involvement. In this way, father and daughter make the most of this season by studying the surroundings carefully created by the Sotojardin team, living day by day from the service offered by the company, dealing with clients and truly becoming a landscape specialist in Sotogrande.

Torres Probablemente el arquitecto más mediático del momento, altamente activo, amante del arte en sus distintas vertientes, líder indiscutible y, sobre todo, padre de familia. Joaquín Torres no podía pasar de largo este verano por KE Magazine y por Sotogrande. A principios de año nos volvía a sorprender con “Detrás de la puerta”, el libro donde nos revela su faceta más íntima y personal. Mientras tanto, su actividad profesional junto a su socio, Javier Llamazares, al frente de A-cero continúa incesante y haciendo realidad los sueños de sus clientes.

He is probably the architect of the moment, extremely active, a true lover of art in its distinct aspects, a clear leader and above all, a father. Joaquín Torres could not miss out on KE Magazine or Sotogrande this summer. At the beginning of the year he surprised us again with “Detrás de la puerta” (Behind the door). It is a book where he reveals his most intimate and personal side. Meanwhile, his professional work with his partner Javier Llamazares at the forefront of A-cero continues to be incessant, making the dream of his clients come true.

¿Cuál ha sido el mayor reto que le ha planteado la vida? La educación de mis hijos.

What is the greatest challenge you have been faced with in your life? The upbringing of my children.

Según A-cero, “…en arquitectura tan importante es la función como la forma”. ¿Cuál podría ser el tercer elemento imprescindible en el éxito de un proyecto? La satisfacción del cliente. La actitud de servicio es sin duda otro elemento imprescindible.

According to A-cero, “…in architecture there is no less important function than form”. What could be considered the third essential element for the success of a project? Customer satisfaction. Service attitude is undoubtedly another essential element.

¿Qué ha influido en la evolución de sus estructuras arquitectónicas y en su interiorismo? Todo aquello que me emociona influye en mi obra: una escultura de Kapoor, un cuadro de Palazuelo, un poema de Neruda...

How do you view Sotogrande as an urbanisation? It is a magnificent urbanisation and has been a model of excellence. Unfortunately in the last few years there have been a few developments that have not strengthened its initial spirit.

¿Podría hablarnos de algún proyecto que haya realizado aquí? Hemos realizado varias viviendas unifamiliares y estamos muy orgullosos de esos trabajos.

Could tell us about a project that you have carried out here? We have worked on various single family homes and are very proud of them.

¿Por qué ‘Detrás de la puerta’ en este momento de su vida? Se me ofreció la oportunidad de escribir el libro y después de 17 años con mi estudio me pareció que había cosas que contar…

Why “Detrás de la puerta” at this moment of your life? I was given the opportunity to write the book and after 17 years with my firm, I believed that were some things to tell…

Es usted uno de los profesionales más mediáticos. ¿Qué papel juega esta presencia en los medios de comunicación en su trabajo y en su vida? Al final, salir en los medios requiere tiempo, y le dedico casi día y medio a la semana. Creo que los medios son esenciales para dar a conocer el trabajo y para crear marca, y yo así lo he entendido desde el principio de mi andadura profesional.

You are one of the most high profile professionals. What role does the presence of the media play in your work and life? In the end, being in the media requires time, and I dedicate a day and a half per week to it. I think the media is essential to showcase work and create branding, and that is how I understood it to be from the very beginning of my professional career. Did you always feel like a natural leader?

¿Sintió siempre tener madera de líder? He de reconocer que sí. Desde pequeñito en el colegio ya era bastante “líder”, o así lo pretendía con mayor o menor éxito. ¿Guarda rencor a alguien? Por el contrario, ¿quién merecería para usted el mayor de los reconocimientos y por qué? Evito guardar rencores porque al final el que sufre es uno mismo y no a quien “odias”. Reconocimientos a mucha gente pero admiro muy profundamente a mi socio Rafael Llamazares, por multitud de razones, pero sobre todo por su talento y su generosidad. ¿Qué le gustaría cambiar si volviera a nacer? No me hago esas preguntas. Me interesa el presente y el futuro, que es donde puedo actuar, y el pasado lo dejo y lo acepto con sus aciertos y sus errores. ¿Qué persona ha influido más a lo largo de su vida? Sin ninguna duda mi padre. ¿Qué es eso que, sí o sí, le gustaría hacer y, claro está, aún no ha hecho? Me gustaría hacer mil cosas que aún no he hecho, y espero hacer, pero disfrutar día a día es lo esencial. Una propuesta para contribuir en el camino que nos pueda hacer salir de la actual crisis global. Un cambio de actitud. Hay que ser más proactivos y no esperar que los “otros” te resuelvan el problema. Yes, I have to admit it. From a young age at school, I was quite a “leader”, or at least I tried with greater or lesser success. Do you have resentment of anyone? On the contrary, who do you hold the greatest respect for and why? I avoid holding grudges because in the end it is you that suffers and not the person you “hate”. I acknowledge many people but I very much admire my partner Rafael Llamazares for many reasons. Above all, his talent and generosity. What would you like to change if you were born again? I do not ask myself those sorts of questions. I am interested in the present and the future, which is where I can act, and the past I leave behind and accept the successes and mistakes. Who has influenced you most in your life? My father, without a doubt. What would you really like to do and of course, something you have yet to do? I would like to do many things that I have yet to do and hope to do, but enjoying day-to-day life is the most important thing. Do you have a suggestion which will help the road to recovery to overcome this current global crisis? A change of attitude. We have to be more proactive and not wait for “other” people to solve the problem.

Perfecta conviviencia de un jardín moderno con el espíritu antiguo del lugar The perfect coexistence of a modern garden with the old spirit of the place

Cuando nos propusieron intervenir en el proyecto paisajístico para este lugar, y tras varias vistas antes de decidirnos en nuestra propuesta, constatamos algo fundamental, que nos guiaría en nuestra intervención.

When we were asked to get involved in the landscape project for this area and after several viewings before deciding on our proposal, we saw something fundamental that would guide us in our project.

Esta casa, de arquitectura radicalmente moderna, venía a insertarse en una de las primeras fincas habitadas de Sotogrande. Su antiguo propietario había elegido este emblemático lugar por su inmediatez y sus vistas al golf, además un valor extra se añadía, y es que existía un manantial continuo de un agua exquisita que en el pasado remoto, mediante la conducción por una acequia, aún existente, pasaba por un viejo molino del que aún quedaba una humilde y bella demostración de arquitectura popular.

This house, which features radically modern architecture, was one of the first inhabited properties to be incorporated into Sotogrande. The previous owner had chosen this symbolic area for its proximity and views of the golf course. Also, in the distant past there was a continuous water spring that passed through a ditch and which still exists today. It went through an old mill which was a perfect example of a traditionally humble and beautiful architecture.

Me dejaba sentir y llevar por lo que observaba como restos del lugar, y podía sentir esa época (hablo de mediados de los años sesenta) en que este espacio era casi puro monte silvestre y todo resultaba profundamente evocador para esta mente de naturaleza imaginativa. De todas estas pesquisas y rastreos, y de lo que las reuniones con el arquitecto Mark Fenwick y sus propietarios fue brotando 80

I let myself feel and observe all that was left and I could sense that moment in time (the mid 60’s that is) in which this area was almost wild scrubland and this was profoundly evocative for my naturally imaginative mind. From all these investigations, searches and meetings with the architect Mark Fenwick and the owners this project came about. el proyecto, en el que había dos aspectos fundamentales que son los que nos guiaron desde el principio: De un lado, el interés de hacer un jardín súper moderno, minimal, ordenado y tremendamente racional-ortogonal, tal como lo era la casa en construcción. De otro, devolver el espíritu del lugar, manteniendo los vestigios de viejas construcciones como si de algo arqueológico se tratara, incluso conservando ciertas especies vegetales que no son de nuestro uso habitual, con la intención de ser respetuosos con la huella de los antiguos propietarios. ¿Pero cómo se hace ésto?, Cómo podríamos lograr hacer convivir en ese jardín moderno (racional, compartimentalizado, como lo es nuestra vida moderna) con ese otro viejo, con restos de antiguas construcciones más bucólico y romántico, más dulce y natural (como yo intuía debió de ser la vida en otros años en este lugar). La solución la encontramos en el desnivel. Convencimos a la propiedad para crear un muro como cinturón que contenía el terreno, anteriormente con una enorme pendiente; de esta forma, la casa, que se construyó en la zona más alta, se encontró en la zona frontal con una despejada y nivelada pradera que ahora la hacía más fácilmente disfrutable, lo cual antes era imposible. Además, el volumen de esta nueva construcción necesitaba de un marco verde para armonizar tanta arquitectura. En esta zona abundan los setos bien cortados, alineaciones de arboleda y especies muy particulares repetidas como módulos arquitectónicos para acentuar ese aire moderno. Sin embargo, en el cinturón o zona romántica que viene a situarse en el perímetro más bajo de la parcela todo es más natural, salvaje, incluso hemos provocado que algunas plantas crezcan en los huecos de las piedras que forman el muro, dándole un aire de abandono-mimadísimo, gracias a la colaboración de un maravilloso jardinero, que colabora siempre con nuestras sugerencias.

On the one hand, to have an interest in making a very modern, minimalistic, tidy and extremely rational- orthogonal garden as was the construction of the house. On the other hand, to bring back the spirit of the place keeping the old ruins as though it was an archaeological site and maintaining certain species of plants, which would not normally be used but would respect what was left by the former owners. How could this be done? How could we achieve a balance between a modern garden (rational, compartimentalised as our modern lives are) and the old, bucolic and romantic with old constructions? Sweeter and more natural (as I imagined it would have been in the past). The solution came with the inclination of the land. We convinced the owner to create a wall in the shape of a belt that contained the land and which was once a huge slope. In this way, the house, which was built at the top, at the front part of a cleared and levelled meadow, which made it more easily accessible. This was not possible before. Also, the scale of this new construction needed a green border to harmonise all the architecture. In this area, there is an abundance of hedges that are finely trimmed, grooves that are in rows and unique species that are found repeatedly and used as architectural pieces in order to give it a modern feel. The belt or romantic area, which is found at the lower perimeter of the land, is however, more natural and wild. Even between the edges of the rocks that form the wall, some plants have grown, giving it more of an abandoned-minimalistic feel thanks to the wonderful work of the gardener, who always collaborates with our ideas.

Chaves El actual director de Cadenas Musicales de PRISA es probablemente el mejor ejemplo de que una oportunidad bien aprovechada, unida a la formación, el tesón y las ganas de seguir evolucionando, pueden llegar a ser justamente recompensados. Juan Carlos ha vivido de cerca años cruciales de la evolución musical del país y con él hemos querido hablar para que nos hable del ayer, del hoy y del mañana. De cómo vive, siente y proyecta la música a través del mercado de la música, su vida. ¿Cómo fueron sus inicios en el sector de la comunicación y la música? Fue de la manera más natural y excitante que te puedes imaginar, sobre todo cuando tienes 17 años. Fue a esa edad cuando Carlos Vergara (cada día que pasa, sé que aunque no estés, tienes algo que ver) y Juan Carlos Narváez, actual director de Radio Algeciras, me dieron la oportunidad de hacer una prueba para poder presentar discos en una emisora de radio, en los 40 Principales de Radio Algeciras. Fue por el año 1989, 18 de octubre, 20:00 horas y la primera canción que presenté fue de Luz Casal, qué sensación, parece que fue ayer. A partir de ahí mi vida da un vuelco apasionante, que me llevó a aprender y a valorar todo lo que la música podría llegar hacer sentir a todo un universo. Lo que nunca llegué a pensar es que hoy estaría gestionando y tomando decisiones sobre todos los aspectos que abarca la música en las emisoras musicales de Prisa Radio en España. ¿Qué debe tener el Director de Cadenas Musicales de PRISA? Paciencia, intuición, política, administrar bien los egos que te rodean, un buen equipo a tu alrededor y unos superiores que confíen en ti ciegamente. Es fácil decirlo, pero hay algunos factores que he mencionado, solo

The current director of the PRISA Music Network is probably the best example of a person whom has seized a grand opportunity. Combining training, determination and appetite to continue evolving has been well rewarded. Juan Carlos has lived closely to the crucial evolution of music in our country and we have wanted to speak to him to discuss the past, the present and the future. How he lives, feels and projects music through the record industry, which is his life. How were your beginnings in the telecommunications sector and music industry? It occurred in the most natural way and more exciting than you can imagine, especially when you are 17 years old. It was at that age that Carlos Vergara (every day that passes by, and even though you are not there anymore, you have something to do with it) and Juan Carlos Narvaez, the current director of Radio Algeciras gave me the opportunity to present albums on a radio station, the “40 Principales” of Radio Algeciras. It was in 1989, 18th October at 8 pm and the first song that I played was by Luz Casal. What a feeling, it feels like yesterday. From there my life took an exciting turn which led me to learn and appreciate how music could make the whole universe feel. Which I had never imagined was that today I would be managing and making decisions about all aspects that music encompasses at the Prisa radio stations in Spain. What is required to be the Director of the PRISA Music Network? Patience, intuition, good manners, managing the ego of those whom surround you well, a good team working with you and superiors who have full confidence in you. It is easy to say this but there are certain factors I have mentioned before, which I have only learnt studying KE Magazine Sotogrande

se aprende estudiando y viviendo en una asignatura que se llama “mundología”. Esta es la única asignatura que nuca se acaba. ¿Con qué época se queda y por qué? Me quedo con los 80, viví en la inocencia de la diversión y obtuve el resultado de la formación sin saberlo. Fue una época en la que ganar un sueldo no era lo más importante, lo más importante era la experiencia y adquirir conocimiento. Viajar, conocer gente, moverte en ambientes más adultos al tuyo siempre tenía sus peligros, pero eras tú el que decías hacia dónde querías ir. En esa época la música era mucho. ¿Qué recuerdos guarda de su etapa profesional en Algeciras? Mis principios, mi familia, mis amigos, mi formación, amaneceres… muchos. Recuerdo un boom en la gente joven de la época con muchas ganas de vivir. Los jóvenes de la época conocían la música gracias a ti, que trabajabas en el medio. Les hacía llegar qué era lo que se iba a llevar en la próxima temporada. Cuando te conviertes en prescriptor musical para toda una generación la experiencia da para mucho.

and living a subject that I call “worldology”. This is a subject that never ends. What decade would you highlight and why? I would stick with the 80’s because I lived with that fun of innocence and I achieved my training without even knowing it. It was a decade where earning a wage was not the most important thing. The most important issue was gaining experience and knowledge. Travelling, meeting people, being in more adult-orientated environments to which one was accustomed to, which always had its dangers, but it is you that decides where you want to go. In that decade music was everything. What memories do you hold of the professional stage of your career in Algeciras? My beginnings, my family, my friends, my training, sunrises… many things. I remember a boom in the young people of that time with a desire to live life. Young people of that decade knew music thanks to me, working in that media. I reached them with what was going to be trendy the following year. When you become a person of influence in music for a whole generation, invaluable experience is gained. 87

A lo largo de su carrera habrá visto nacer y crecer a muchos artistas, ¿cuál ha impactado o sorprendido más? Durante nueve años tuve la suerte de codirigir y dirigir Cadena Dial. Este puesto me dio la oportunidad de conocer y ver a artistas noveles que empiezan a desarrollar sus carreras desde un ángulo muy muy próximo. Inseguridades, éxitos, fracasos, ganar dinero fácil, no gestionarlo bien, volver a empezar, etc. Sin duda el que más me ha impactado de todos ha sido Alejandro Sanz. Por suerte he podido conocer de cerca situaciones a las que te puede llevar el éxito en este país, donde esa frase que a veces decimos por el sur…. eso de “la vida del artistas es muy dura “, pues sí, lo es. La responsabilidad de querer ser un siempre número uno es muy muy grande. ¿Qué opinión le merecen formatos de programas televisivos como La Voz, Operación Triunfo, etc.? Yo siempre digo que OT no le hizo ningún favor a la música de este país. Convertimos algo tan importante como es la música en un reality show. Me parece perfecto que las televisiones apuesten por el entretenimiento. La televisión abrió la cortina de la magia y vimos cómo se hacía esto, a muchos sé que les desilusiono. El público vio cómo se hacía la música, dando la imagen de que esto es un negocio fácil, que las labores de componer y cantar lo podía hacer cualquiera. Que da audiencia, sí, pero la música es mucho más que eso. ¿Podría decirse que la música constituye una de las parcelas fundamentales de su vida? Sin duda, larga vida a música. Esto da para mucho.

During your career you will have seen many new and rising artists. Which one has made the greatest impact or surprised you the most? For nine years I have had the fortune of co-directing and directing “Cadena Dial”. This job gave me the opportunity to know and see new artists who begin to develop their careers from a very very new angle. Insecurities, success, failures, making easy money, not being managed properly, starting a fresh, etc. Without a doubt the person who has impressed me the most is Alejandro Sanz. Luckily, I have been able to get to know situations that can lead you to success in this country at close hand, where that phrase that we sometimes use in the south…that of “the life of the artist is very hard”, well, yes, it is. The responsibility of always wanting to be number one is tremendous. How would you rate TV programmes such as “La Voz”, “Operación Triunfo”, etc.? I always say that “Operación Triunfo” did not do any favours to music in this country. We turned something that is really important like music into a reality show. I think it is great that broadcasters are behind entertainment. Television opened the magic curtain and we see this is done. I know many people who were disappointed. The audience saw how music was made, giving an image that this is an easy business and the work of composing and singing can be done by anyone. This of course created a wide audience but music is much more than this. Would you say that music constitutes a fundamental part of your life? Undoubtedly. Long live music. This gives you such a lot.

El Jaguar Xk 120 fue presentado el 27 de octubre de 1948 en el “Earls Court Exhibition Centre” de Londres.

The Jaguar Xk 120 was launched on 27th October 1948 at Earls Court Exhibition Centre in London.

Jaguar pretendía exhibir el nuevo y potente motor que propulsaría a los nuevos sedanes del fabricante inglés (Mark VII). A toda prisa, los ingenieros de Jaguar diseñaron un modelo deportivo que utilizaría el chasis del sedan, y el nuevo motor longitudinal de seis cilindros en línea de 3442 cc, con doble árbol de levas en culata de aluminio, y dos carburadores SU acoplado a una caja de cambios manual de cuatro velocidades.

Jaguar planned to exhibit the new powerful engine which would power the British manufacturer’s new saloon cars (Mark VII). With great haste, the engineers at Jaguar designed a sports car which used the chassis of the saloon car, featuring a new aluminium dual overhead-cam 3.4 L straight-six XK engine with a new alloy cylinder head and twin side-draft SU carburettors coupled to a manual four-speed gearbox.

La carrocería fue fabricada a mano, utilizando aluminio con refuerzos y piso de madera de fresno. El proyecto fue terminado justo antes de la exhibición y, aunque no cabía duda de lo atractivo de su diseño, ni siquiera el propio William Lyons, fundador de la compañía Jaguar y gran visionario, pudo imaginar el rotundo éxito del bello automóvil, que se tradujo en la petición de trescientas unidades. La producción artesanal, con su carrocería de aluminio hecha a mano y sus refuerzos de madera, era costosa y lenta, hasta el punto que la empresa tuvo que recurrir a un diferencial de Aston Martin para poder cumplir con las peticiones.

The bodywork was hand-built, using aluminium with ash frames mounted on the chassis. The project was completed just before the exhibition started, although there was no doubt about the design’s appeal, not even William Lyons himself, the founder of the Jaguar Cars and a great visionary, could have imagined the resounding success of this beautiful car, which led to three hundred units being ordered. The hand-built production, with its hand-made aluminium bodywork with a wooden frame, was expensive and slow to make, to the point that the company had to recur to an Aston Martin differential to be able to meet demand.

La Fundación También es una entidad sin ánimo de lucro que trabaja desde 2001 en la integración social de las personas con discapacidad a través del deporte adaptado, pensando especialmente en los más pequeños para que puedan ocupar su tiempo libre de forma inclusiva y normalizada, proporcionando el material adaptado, la logística necesaria y las subvenciones posibles que cubran los gastos de cursos, viajes y actividades a las personas con “capacidades diferentes”. Una incesante actividad que se lleva a cabo a nivel nacional, y que alcanza a más de 6.000 beneficiarios y 200 asociaciones. Al frente de todo el proyecto de la Fundación También está Teresa Silva, su fundadora y directora, una deportista nata que siendo miembro de la Selección Española de Parapente, sufrió un accidente durante unos entrenamientos para el Campeonato del Mundo en Austria, provocándole una paraplejia que le obligó a utilizar silla de ruedas en sus desplazamientos y comprobar de primera mano las dificultades que supone para una persona con discapacidad la práctica deportiva. Yo conocí a Teresa mucho antes de su accidente, una joven deportista, marchosa, tenaz, disfrutona y valiente. Luego la perdí de vista unos años y un día me enteré de su accidente, pensé que su carrera deportiva estaba acabada y que su espíritu quedaría muy tocado. Un tiempo después me encontré de nuevo con ella, igual de luchadora y con 100

The También foundation is a non-profit organisation that has been working in favour of the social integration of people with disabilities through adapted sports since 2011. They focus on young children in particular so that they can spend their free time in a normal and inclusive way and to provide them with specially-adapted equipment, the necessary logistics and grant subsidies that cover the costs of the courses, travel and activities for people with “different abilities”. It is a relentless activity that is carried out nationwide and reaches more than 6,000 beneficiaries and 200 associations. At the forefront of the entire project of También Foundation is Teresa Silva, the founder and director, a naturalborn sportswoman and a member of the Spanish national team of paragliding. She suffered an accident whilst training for the World Championship in Austria leaving her paraplegic and forcing her to use a wheelchair to get around. She saw at first hand the difficulties people with this kind of disability to do sport. I met Teresa a long time before she had her accident and found her to be a young sportswoman, outgoing, tenacious, fun-loving and brave. I lost touch with her for a few years and then one day I found out about her accident. I thought to myself that her sports career had finished and her spirit would be greatly affected. Sometime later I met up with her again and she still had the same fight and energy, and she soon realised that she was meant for something bigger. In April 1998, Teresa Silva managed to start adapted alpine skiing and began to collaborate with the organisations in the disability-related world. In January 2000, she KE Magazine Sotogrande

la misma energía, y pronto comprendí que estaba llamada a hacer algo grande. En abril de 1998, Teresa Silva consigue iniciarse en el esquí alpino adaptado y comienza a colaborar con entidades relacionadas con el mundo de la discapacidad. En enero del 2000, logra crear un Equipo de Exhibición y Competición de Esquí Alpino Adaptado con el objetivo de institucionalizar la divulgación de este deporte. Dado el éxito de la experiencia, se plantea dar paso a una iniciativa más ambiciosa: crear la Fundación También, cuya constitución se firma en diciembre de 2000. En 2008 me propuso formar parte del patronato de su fundación y lo hice con mucho gusto e ilusión. Ya era una entidad galardonada y laureada con premios y logros, pero desde dentro entendí más su estupenda labor de día a día, y su tesón a la hora de conseguir patrocinadores para ir ampliando las actividades y los eventos deportivos, además de la compra de material adaptado, la formación de voluntarios y muchas otras tareas relacionadas con la discapacidad para que no haya barreras de ningún tipo. He vivido con la Fundación También aventuras estupendas como la bajada del Sella en Piragua o el Camino de Santiago en bicicleta, y he comprobado de primera mano la estupenda labor de organización que realiza su equipo, aunque lo más impresionante es ver cómo se implican en cada actividad sus beneficiarios y sus respectivas familias y cómo lo pasan de bien 102

created an Adapted Alpine Skiing Exhibition and Competitive Team with the aim of making official promotion of this sport. Given the success of her experience, the next step was to initiate something more ambitious: create the También Foundation, the approval being signed in December 2000. In 2008, I was invited to become a part of the foundation board and I gladly accepted with enthusiasm. It was already an acclaimed organisation with awards and achievements, but from within I understood further their wonderful daily work and tenacity in gaining sponsors in order to offer more activities and sporting events. Also the purchase of adapted equipment, volunteer training and many tasks related to disabilities to ensure that there are no barriers. I have had many wonderful adventures with the También Foundation such as the descent of the Sella river in canoe or cycling along the ‘Saint James’ Way and I have seen at first hand the marvellous work carried out by the organisation’s team. Nevertheless, the most impressive aspect is seeing how the beneficiaries and their families spend a pleasant time doing these activities together and every day is a gift of hope and enthusiasm of shared leisure time. I also recall other emotional moments trying to follow Teresa Silva and her competitive team down the slopes of Sierra Nevada, and other more relaxed times watching young children start this sport. haciendo estos planes juntos, cada día es un regalo de ilusión y ocio compartido. Recuerdo otros ratos emocionantes intentando seguir a Teresa Silva y a su equipo de competición por las pistas de Sierra Nevada, y otros más tranquilos viendo cómo se inician los más pequeños en este deporte. La carrera deportiva puede convertirse en un reto para todos, porque esta fundación suele participar en competiciones nacionales e internacionales con varios equipos de competición de distintas modalidades deportivas que en muchos casos son cantera del Comité Paralimpico Español, como el Equipo femenino de esquí alpino adaptado (único del mundo que compite en silla) y el Equipo de regatas de vela adaptada, del que dos atletas de la clase Skud 18 consiguieron un histórico Diploma Paralimpico para el deporte español en los Juegos de Londres 2012. Ahora corren tiempos difíciles a la hora de reunir recursos financieros, pero con el lema “Insolvencia Social. Nuestra única incapacidad”, Teresa Silva no se rinde a recortar actividades o su cupo de beneficiarios. Ellos y sus familiares se lo agradecen mucho pero todos debemos echarle una mano.

In many cases, they are a source of young talent for the Spanish Paralympics Committee, such as the female adapted alpine skiing team (the only one in the world that competes in wheelchairs) and the adapted sailing team. Two of its athletes won a historical Paralympics Diploma for Spain in the Skud 18 class in the 2012 London Games. Difficult times are now upon us in terms of gaining financial aid but the slogan of “Social insolvency. Our only disability”, Teresa Silva does not cut down on activities or capacity of beneficiaries. They and their families are extremely grateful and we should all give them a hand.

Casi por casualidad, Ramón Corrales descubrió la magia de la fotografía en su añorado modo analógico y, aunque su profesión tomara otros derroteros, la técnica de las instantáneas colma por completo su espíritu y da alas a su faceta más observadora y creativa. Este rondeño afincado en Sotogrande estrena exposición este verano en la galería de Nando Argüelles, en la Marina de Sotogrande. Del 1 al 7 de agosto una recopilación de más de 30 obras llenarán estas instalaciones bajo la exposición Compendium. Una muestra de obras en la que Ramón ha querido reunir una representación de las distintas series realizadas en escenarios de España y el extranjero. Además incluye un trabajo audiovisual, ‘El hombre es lo que más interesa al hombre’, precisamente porque en cada una de sus fotografías le gusta introducir el aspecto humano. Esto hace que en la obra de este enamorado del barroco español, prácticamente siempre podamos visualizar impactantes marcos naturales, perspectivas arquitectónicas o paisajes inimaginables bajo la mágica esfera que aporta el lado humano, que sabe inmortalizar en el momento preciso. Porque como él mismo reflexiona “al final es ver y captar el momento, ver un poco más que los demás, anticiparse a la jugada”. Desde los 15 años la cámara se convirtió en su amiga inseparable, aunque admite que ahora con los móviles también hace muchas de sus fotos. Y a pesar de que el salto a lo digital le costó aceptarlo, hoy ve que la evolución 106

Photography is a hobby which became rooted in the artist featured in this edition at the early age of 15 and is now an essential part of his life. Ramon Corrales discovered the magic of photography almost by chance in those nostalgic analogue days and even though his professional career took him down other paths, the technique of the snapshots completely fulfilled his spirit and unleashed his more observant and creative side. This man from Ronda who settled in Sotogrande launches an exhibition this summer at the Nando Argüelles gallery, in Sotogrande Marina. From 1st to 7th August a collection of more than 30 works will fill these facilities as part of the Compendium exhibition. A display of artwork in which Ramon has intended to bring together a representation of the distinct series made in settings in Spain and abroad. It also includes his audiovisual work, “Man is what interests man the most’. This is precisely why he likes to introduce the human aspect in each one of his photographs. Due to his love of Spanish baroque, it influences his work, he knows when to immortalise the precise moment and we can practically always visualise impressive natural landscapes, architectural perspectives and unimaginable scenery under the magical sphere that the human side provides. As he reflects, “in the end it is seeing and capturing the moment, seeing a bit more than the rest and anticipating what is to come”. Después está el trabajo de retoque, al que él también se resiste hasta cierto punto. De manera que prefiere ajustarse gustosamente a programas con los que básicamente realiza un trabajo similar al que se hacía antes.

took him time to accept, he can now see that evolution has been surpassed in terms of quality and materials and the advantages of immediateness is fundamental and has brought real progress. Retouching work is the next thing which he is also reluctant to do, to a certain degree. He therefore prefers to happily adjust programmes to do a similar job that he used to do before.

Sus comienzos se basaron fundamentalmente en temas sociales y poco a poco ha ido evolucionando hacia lo que este verano podremos ver en Compendium. Instantáneas de momentos y gestos humanos con mucho que decir, en el mejor de los encuadres y haciendo gala de una depurada técnica. Pero la nostalgia de lo analógico le lleva a recordarnos uno de sus últimos trabajos con esta técnica, ‘Cuarenta retratos íntimos’, una serie en blanco y negro de retratos ambientados hecha en Ronda, basada en personajes conocidos y no conocidos.

His beginnings were based fundamentally on social themes and little by little have evolved towards what we can see at Compendium. They are snapshots of moments and human gestures with a lot to say, using the best frame and displaying a refined technique. Nostalgia for analogue however leads him to remind us of one of his last works using this technique, “Forty intimate portraits”, a series of black and white portraits at settings in Ronda, based on well-known and unknown people.

Le gusta explorar nuevos escenarios acompañado de su familia, buena muestra de ello son las ocasionales apariciones de sus hijos en sus obras. Si le damos a elegir, prefiere hacer fotos en invierno “por el ambiente, la melancolía, la niebla, la lluvia...”, porque le encanta el invierno y los contrastes que ofrece.

He likes to explore new settings accompanied by his family and a good example of this is that occasionally his children appear in his works. If given the choice, he prefers to take photos in the winter “due to the atmosphere, melancholy, mist, rain…” He loves winter and the contrasts it offers.

En definitiva, la fotografía es para Ramón Corrales una afición convertida en una gran pasión, con la que nos obsequia y enriquece visualmente a través de inmortalizaciones dignas de las mejores estancias.

In short, photography for Ramon Corrales is a hobby turned into a great passion, in which he visually awards and enriches us by means of worthy immortalisations of his best visits.

Con una intensidad especial, exquisita e intensa estructura donde se aprecian secuencias de notas tropicales, como guayaba y mango y un suave toque de menta al final, intensificando esta refrescante experiencia. ¿Quién niega que el vino sea el acompañante perfecto de las comidas? Para un perfecto final de tarde, buscamos en Ronda el rosado natural de F. Schatz elaborado con la variedad Muskattrollinger, única en España.. Presenta un color espectacular, es goloso y ofrece aromas a grosellas, fresas y rosas. Está fermentado en barrica de roble 6 meses sobre sus lías con levaduras autóctonas, dejando esta sensación compleja y viva con sorprendentes toques minerales.

For a perfect end to the afternoon, we looked at the natural rosé by F. Schatz in Ronda elaborated with the Muskattrollinger variety, which is unique in Spain. It has a spectacular colour, it is sweet and offers aromas of redcurrants, strawberries and rose blossoms. It is fermented in an oak barrel for 6 months on its lees with indigenous yeasts, leaving a complex and lively sensation with surprising notes of minerals.

Ensalada

de Solomillo

Ingredientes de la vinagreta: • 5 cucharadas de vinagre japonés de cereales • 5 cucharadas de vinagre japonés de arroz • 5 cucharadas de jugo de limón exprimido • 15 cucharadas de salsa de soja • 15 cucharadas de aceite oliva • 1 cabeza de ajo

Vinaigrette ingredients: • 5 teaspoons of Japanese cereal vinegar • 5 teaspoons of Japanese rice vinegar • 5 teaspoons of freshly squeezed lemon juice • 15 teaspoons of soy sauce • 15 teaspoons of olive oil • 1 head of garlic

Filetear los ajos y refreírlos en el aceite de oliva. Una vez dorados, apartarlos. Mezclar todos los ingredientes y añadir por último el aceite en que se han refrito los ajos.

Slice, and fry the garlic in olive oil. Once golden, set them aside. Mix all the ingredients and last of all add the oil which was fried with the garlic.

Ingredientes de la ensalada: • 150 gr de solomillo de ternera • Canónigos o mezclum

Salad ingredients: • 150 grams of beef sirloin steak • Lamb’s lettuce or mesclun

Dorar el solomillo en la plancha por todas sus partes, dejando que el centro se quede rosado y jugoso. Dejar enfriar y filetear.

Grill the sirloin until golden on all sides, leaving the centre pink and juicy. Leave it to cool and fillet it. Serve: Take a bundle of corn salad or mesclun (for a person) and place the beef sirloin on top. On the sirloin place the garlic in strips and garnish with the vinaigrette.

Capuccino helado Cappuccino Ice Cream EQUIPO • varillas eléctricas • 2 boles grandes • 4 tazas de café capuccino ó 6 pequeñas de café espresso • papel de horno

EQUIPMENT • Electric blender • 2 large bowls • 4 cups of cappuccino coffee or 6 small cups of espresso coffee • Oven Paper

INGREDIENTES • 2 cucharadas soperas de café soluble o espresso muy cargado • 4 huevos • 130g de azúcar glas • 700 ml de nata para montar • 50g de chocolate negro rallado • 25g de cacao puro + 25g de azúcar glas Opcional: un par de cucharaditas de PANCRACIO Original Chocolate Vodka (o tu licor favorito)

INGREDIENTS • 2 teaspoons of soluble instant coffee or strong espresso coffee • 4 eggs • 130g of icing sugar • 700ml of whipped cream • 50g black chocolate shavings • 25g pure cocoa + 25 g of icing sugar Optional: a couple of teaspoons of PANCRACIO Original Chocolate Vodka (or your favourite liquor)

SEPARAR las claras de las yemas. BATIR las yemas con la mitad del azúcar hasta que la mezcla blanquee y quede homogénea. MONTAR las claras con el azúcar restante hasta picos suaves e incorporar poco a poco la mezcla anterior. AÑADIR la mitad de la nata montada, el café diluido en una cucharada sopera de agua templada y el chocolate rallado. Opcionalmente, puedes añadir las 2 cucharaditas de PANCRACIO Chocolate Vodka o tu licor favorito. DISPONER sobre una bandeja con 4 tazas de café o 6 tazas pequeñas de café espresso que servirán de molde. CORTAR papel de horno en bandas lo suficientemente altas como para forrar las paredes de la taza sobrepasando el borde en unos 2,5 cm formando un cuello alto. Fijarlo bien con un papel celo. VERTER la mezcla de café hasta el borde de la taza. CONGELAR toda la noche (la mezcla de café puede subir un poco sobre el nivel de la taza). AÑADIR la nata 1 hora antes de servir y volver a congelar para que endurezca un poco. RETIRAR con cuidado el papel de horno. MEZCLAR los 25 g de cacao y azúcar y servir espolvoreado con la ayuda de un tamiz o colador.

SEPARATE the whites from the egg yolks. WHISK the yolk with half of the sugar until the mixture whitens and stays uniform. BEAT the whites with the rest of the sugar until stiff peaks form and slowly add to the other mixture. ADD half of the whipped cream, the diluted coffee in a soup spoon of warm water and the chocolate shavings. Optional, is to add 2 teaspoons of PANCRACIO Original Chocolate Vodka or your favourite liquor. HAVE READY on a tray – 4 coffee cups or 6 small espresso coffee cups which will be used as moulds. CUT the oven paper big enough to cover the sides of the cup and passing over the top of the cup by about 2.5 cm. Stick together well with adhesive tape. POUR the coffee mixture up to the edge of the cup. FREEZE all night (the coffee mixture and will expand over the edge of the cup). ADD the cream 1 hour before serving and place again in freezer to harden a bit. REMOVE the oven paper carefully. MIX the 25 g of cocoa and sugar and sprinkle with the help of a strainer or sieve for serving.
