The Truth About Truffle Oil Did you know that there is no actual truffle in truffle oil? If pieces of truffle appear inside the bottle, know that it does not add anything aside from visual pleasure and the ability to list ‘truffle’ as an ingredient on the label. There is no way to squeeze a truffle to make truffle oil, as you would press olives to make olive oil. Truffle oil is made in one of two ways: as a ‘nature identical’ oil, or as a byproduct of petroleum. Petroleum-based products can bear an overpowering, unnatural aroma, and will even burn your throat upon tasting. A ‘nature identical’ oil is made by obtaining flavor molecules from fruits/vegetables that exist naturally in nature, such as carrots, apple or potato, that combined make up the flavor aroma of a truffle. One way to find out the type of oil you have is The Heat Test. Truffle oil that is not ‘nature identical’ will break down under heat. So, dab a little bit of truffle oil on your hand. Smell it, and take strong note of the aroma. Now, rub your finger on the patch of oil to heat it up for about 10 seconds. Smell the oil again. A ‘nature identical’ oil will have the same aroma after creating heat. An unnatural, petroleum-based oil will not and the oil will have noticea- 8 bly lost its aroma.
