Journalism club was formed for the first time this year with one goal in mind: make a magazine by kids for kids.

After much deliberation, we settled on “Lightbulb: A little book for curious kids.”

To all of us, the IGS community was essential both as our audience and inspiration. We hope everyone can find something for themselves in our little book, in true IGS fashion, our diverse articles capturing the truly magical talents, interests and passions of our journalists in waiting.

Run by the fabulous David Englebert, the club's program offers kids the chance to develop new interests, skills and most importantly, passion. With a diverse range of programs, you can find something for everyone.

Sarah’s BIG Adventure

Sheep can do impossible things and so can you.

When Sarah was at the barn she couldn't do many things but when Sarah left she could do anything.

Sarah stands up on hind legs and then she decides to walk to the forest and Sarah gets that feeling that she wanted to dance!

And so, she started dancing, and when she did all the animals danced with her! The bears, the bunnies, the foxes, the squirrels, the birds and especially the wombats.

She was sooooo tired from dancing that she decided to have a nap

Then when she woke up, she was in the city! The other animals had taken her there so she could visit the city. When she looked around she saw a sign that read “city”, she looked at it long and hard and then spoke “CITY”, she realised she could speak and everybody in the city looked at her.

She found a free car, it was a convertible and she started driving. She started to grow hungry, but not for grass. Now Sarah was hungry for Human food. She found the nearest drive through and got a burger.

When she was waiting for her food she thought, “sheep can do impossible things and so can you!”

And then Sarah got her burger and watched the sunset for the very first time.

Bella the Bunny

There was a bunny named Bella. She was a princess's pet. Her life was perfect until one day she got kicked out. She then got bitten, and she started to talk quietly after sleepless nights.

After long walks she finally found a city and begged them to adopt

She went to the sewer and cried. She made mouse friends. She told them she was hungry. Luckily the mice shared thir food, then a dirty little girl came down to the sewer. She sat down and said ohh are you lost little one? She nodded. Bella sat on her lap and fell asleep while the girl was sleeping.

But when Bella woke up the girl was gone, Bella started to fly, then she saw the girl surrounded by ghosts.

Bella flew and grabbed her and put her down safely you saved me she said but bella didn't do anything she just purred.

They lived happily ever after as best friends.

Q: What do you like about cooking?

A: Cooking for my family and felt a kind of satisfaction when they praised my food.

Her cooking is very nice because she cooks a lot.

Q: What do you like about Singapore ?

Q: What is your favourite thing to cook?

A: My family favourite is asam pedas, a Malay local specialty in Singapore that is super spicy and sour, but in a good way.

A: Singapore may be one of the smallest countries in the world but it has something that other countries don't, my family plus the other 3 in Sydney.

Q: What is your favourite thing abo being an Ibu?

A: Watching my kids grow blossom into kind and wonde souls, helping others in nee contributing to society an never forgetting family at end of the day.

Time to grow

Have you ever wanted to know what plants are good for growing indoors and outdoors or where to grow them? Well, this article will tell you everything you need to know!

Outdoor plants:

Hostas have beautiful green leaves that last all year long. They are tough plants that like the shade and cold weather. Trim off old leaves so that they grow big! they are a great decoration for your shady garden.

Grevilleas, sometimes known as spider flowers, are native Australian flowers that are very easy to grow in your dry Australian garden. Some of them will even flower all year around. When they get old they can get old woody branches with lots of dead twigs. Cut these away to make your Grevillia young again!

Indoor plants:

Peace lilies have arrow-shaped leaves and are usually green Plants like peace lilies clean the air making it easier to breathe. Having a peace lily in your house doesn’t just clear the air, it also is good for your mind and gives you better sleep! They are also really easy to care for, all you have to do is water them!

Arrowhead vines also have arrow-shaped leaves in lots of different colours including green, pink and white This plant likes humid air and moist soil, so you should leave the soil to dry out before you water it. If you don’t let it dry your plant can get root rot!

Clematis is known as the Queen of Climbers. It has heart shape leaves and star shaped flowers that can be white, pink, red, blue or purple. Water them weekly for the first season to help them grow up. They are happiest when they are in the shade at their roots, with their leaves in the sun.

Chinese evergreens are tropical houseplants with colorful leaves that are perfect for indoor spaces. They like to stay warm, and really like humid air so they are perfect for kitchens and bathrooms.

Why are plants so important? They produce food for nearly all animals on the planet, including humans. They also make the oxygen we need to breath, and clean the carbon dioxide from the air.

Who is Elizabeth I? Elizabeth I was queen of England and Ireland from 1558 to 1603. She was queen for 45 years. She was quite a tough lady, and I decided to write about her because although everyone knows about Elizabeth II, Elizabeth I is just as cool and interesting.

Family

Elizabeth was born the 7th September 1533 (I was born 8th september 2015, meaning she is 482 years plus one day older than me!). Her parents were Henry VIII and Anne Boylen, Henry’s second wife. However, Henry had Anne beheaded! And Elizabeth was sent away. Henry VIII's sixth wife, Catherine Parr, invited Elizabeth back to court and she could see her family again. When Henry VIII died, he left the throne to his nine year old son, King Edward VI, but after his early death, Elizabeth's older sister Mary I reigned until her death and was replaced by Elizabeth I.

She said no to many foreign princes when they asked to marry her, which was a problem because she needed heirs to the throne. She did not want to marry because she did not want to be at war with other countries. She also did not need a man by her side to rule the country because she was a strong lady. Many people thought a woman couldn’t rule, which was preposterous, but she proved them wrong

Fashion and Hygiene

Fashion was important because it showed what class you were in. And as Elizabeth was the queen, she had the rarest silk, she had the puffiest sleeves ever, large ruffles and tight corsets Her dresses were colourful with gold, silver and gems on them. How did she even walk!?

Now, I hate people who don’t shower!!!!!!!! Elizabeth the first only bathed ONCE A MONTH. She must have been stinky. She also wore large red curly wigs. She wore wigs because her hair was going grey and she wanted to hide that. Plus, there were head lice at court!

Elizabeth liked to have her face very pale, and used white lead to paint it white. This was because it was fashionable at the time Lead is very poisonous, and she puts it on her face everyday. She should have been smarter, however people back then did not know lead was poisonous

What to Eat Dinner:

You should go to Teppanyaki, it's a place where they throw food at you like Eggs, Pancakes, Fried Rice, Meat, Plates, Bowls, Sauces.

Another good food in Japan is Sushi. They are famous for Sushi. There's a place in Japan that is Sushi . The chef makes it for you and if you don't like it, they will make it again for you then they start to get your taste.

Another good place is Taste of Ramen in Japan. If you only have a little bit of money left, and if you don't like food, they will give the money back.

The Harry Potter Theme Park:

There is lots of candy and you get your own wand that actually works and it is so cool. There's drinks like butter-beer that kids can have, and you can get it hot or cold. There are types of candy that are Harry Potter themed, like rock candy, mentos, hi chew, and candy cane.

Super Mario World:

There is a ride that's like a rollercoaster that can show you around the place. There is also a jumpy thing that you have to jump on the block, pumping your head on it to get points, like in Mario’s world. There is also a really good cake that's Super Mario themed. It's a chocolate cake and vanilla. Theres a drink with Super Mario cotton candy on Princess Peach and it nice and sweet but sour.

Where to Eat Dessert:

You should try to eat Creme Brulee ice cream. It's very popular in the convenience store’s in Japan. It's like melted sugar on top of ice cream.

Also Daifuku is very popular. It's kinda like a Mochi.

There's Plushies and they are so soft! There are places in Japan you can make your own.

There's so much Sanrio Characters like My Melody, Pochacco, Cinnamoroll, Gudetama, keroppi, Kuromi, Little Twin Stars, Pompompurin, Mimi, tuxedosam (these are the most popular Sanrio Characters)

Passion for fashion

Don’t know what to wear? Have clothes that aren’t really it ? Well, we are here to help you! But remember, fashion is not just about wearing nice stuff. It’s about being yourself and knowing that what you ' re wearing is you and stylish and useful for the weather

The most important thing though is to always feel good in your clothes and make sure everyone else does too!

While having a variety of outfits is amazing it’s also a big waste so buy carefully. Fast fashion is terrible for the environment so buy second hand when you can!

An outfit won’t look complete unless you accessorise. Try matching accessories to your outfit.

What Plants Need

Water: Plants need different amounts of water. For example flowers are very thirsty, but succulents will drown if they drink too much!

Sunlight: Plants need different amounts of sunlight. Some plants like full sunlight, some plants like a little sunlight, and some plants prefer to stay in the shade.

Soil: Plants need a home to put their roots down in. If a plant does not have enough soil in a pot it could die, or try and escape the pot.

Fertiliser: It is basically plant’s food, with lots of the nutrients plants need to heat to grow up healthy and strong.

Carbon Dioxide: Air has oxygen and carbon dioxide in it. Plants breathe in the air and soak up the Carbon Dioxide, so we have cleaner oxygen to breathe! This is why it is important we look after our plants.

HOW TO GROW CHILLIES

You will need:

Chilli Seeds

Seed-raising pots

Seed-raising mix

Medium pots

Tomato Fertiliser

Step 1: Fill a seed-raising pot with seed-raising mix

Step 2: Sprinkle the seeds over the mix and cover them with a thin layer of soil. Keep them warm.

Step 3: When the leaves poke through the soil (7-10 days) water them every couple of days.

Step 4: Once the plants have six leaves, move them into a medium pot.

Step 5: Put your plants in a sunny spot and water them every few days.

Step 6: Once chillies start to appear, give them tomato fertiliser once a week

MAKE SURE TO WASH YOUR HANDS AFTER TOUCHING CHILLIES OR THEY COULD STING YOUR EYES.

Banana Slip

Once there lived a banana who was dreaming of exploring the world. He decided to go on an adventure to learn about the world. But he forgot that he could not float or walk. So he decided to wait until a scary human took him and tried to eat him and then he would escape. But, instead after a few minutes he found that people kept on slipping on him and landing on their own faces. He knew his dream was over. One day he was resting in the fruit bowl when a human dropped another banana in the fruit bowl. He immediately fell in love with that banana and they lived funnily ever after.

Screaming in horror

Once there was a girl who was snoozing in her bed fast asleep, not worried about anything in the world. But she did not know at all that there were demons, monsters and ghosts creeping out at night. So she was snoozing in her bed when a scary dark green demon came creeping out of her bed. She suddenly woke up and looked around, she only saw her normal old bedroom so she went back to bed and then, she heard a very mysterious noisy sound. She woke up again and saw the demon and then she screamed as loud as she could, then her mother came marching in angrily into her bedroom. She loudly shushed the girl and tiredly marched back into her bed. So the girl looked around again and couldn’t see the demon and slept in her bed and the demon never returned.

Bouncy Egg

Eggs break when you drop them, right?

Not a bouncy Egg!

Ingredients:

1 egg, white vinegar

glass or cup

Place the egg (still in its shell) inside the glass.

Fill the glass to the top with white vinegar.

Leave for 24 hours or until it becomes bouncy.

How does it work?

Vinegar is an acid so it starts breaking apart the eggshell which is made of a hard substance called calcium carbonate.

That's the same stuff that seashells and coral are made of! After a day, the vinegar has dissolved the entire shell, leaving just the bouncy membrane that holds together the egg, and the gooey insides.

Tips: don’t bounce it too hard! splat!

Ever been bored at home with nothing to do? Here are two fun, easy, and educational science experiments that are almost impossible to mess up, and will definitely impress your family.

Magic Balloon

You are about to make the first self blowing balloon! (well, sort of).

vinegar,Ingredients: baking soda

plastic water bottle(lid off), balloon   Pour the vinegar into the water bottle until it's about a quarter full

Put three tablespoons of baking soda into the balloon

Attach the balloon end to the neck of the water bottle so that it’s hanging down and none of the baking soda falls inside

When you're ready, tip over the balloon, making all the baking soda fall inside. Your balloon will magically inflate!

How does it work?

When the baking soda touches the vinegar, it causes a chemical reaction because baking soda is a base chemical and vinegar is an acid. When a base and a vinegar combine, they produce carbon dioxide, the gas that fills up the balloon.

Tips: always make sure that the balloon is securely attached or it might shoot off.

Millions and billions of bacteria, cells, antigens and antibodies fight inside your body. Even a paper cut sends your body's troops to war. This article will make you realise just how much is going on inside you without you ever realising!

There are lots of types of cells in your body such as blood cells, hair cells, skin cells and brain cells. White blood cells are like warriors defending you against viruses, bacteria and other antigens. Red blood cells carry nutrients and oxygen around your body so that you’re ready to fight!

There are four kinds of antigens that attack your body. Bacteria are considered the first living things on earth. There are two kinds: archaebacteria-anaerobes that survive harsh environments and eubacteriapathogens that live in normal environments. Viruses can only survive inside a host. Once they get into your body they inflirrate your cells and replace the cell’s DNA with their own genetic material, making the cell reproduce viruses. Prions are proteins that like viruses need a host. They can only infect animals so they often hang out in grass waiting for something to eat them. Lastly, Viroids are the smallest pathogens.

They are so intense they have to blow themselves up before they destroy you themselves. Inflammation is another line of defence, the body swelling up using tiny proteins called complements. Dendritic cells sweep the battlefield, ripping up bacteria and taking them as samples. Then it travels through your secret travel system, the lymph nodes. It takes the sample to the T-cells, which recognise the sample and learn how to attack the bacteria. B-cells design the perfect antibodies to defend against the bacteria. Some of these become memory cells that remember the perfect cure for certain bacteria, so that they are ready to defeat them if they ever return!

The Loch Ness Monster is a creature that is shrouded in mystery.The Loch Ness is a lake in Scotland that is 400m deep! So as you can see no one has ever explored the whole lake yet. But they have discovered that there are several caves under the water. Rumours say that the monster is actually a dinosaur that survived the asteroid that wiped out the dinos by hiding in the caves. I myself have been to Loch Ness… and saw several suspicious shadows as well as large objects on the radar.

Easter Island

The elusive and mysterious Easter Island’s are NOT related to the Easter Bunny in case you were wondering. The Easter Island is an island with absolutely massive statues of heads that were there when people first discovered it and there was no sign of any natives that could have put them there. So, the big question here is, how did they get there? Well according to oral tradition the Moai statues walked to their destination to immortalise the spirits of their kings.

You might be wondering “Who is Cleopatra?” Well, here's the answer. Cleopatra was the first female Pharaoh of Egypt [A Pharaoh was the ruler of Egypt, and usually a man].

After Cleopatra died, they would usually bury their fallen pharaohs in tombs inside the Pyramids or in the Valley of King’s. However, Cleopatra's sarcophagus [the thing they buried Mummies in] was mysteriously never found. Most archeologists assume her grave is in ancient Alexandria.

Get a glimpse of the other side of the story. Witness some of the most incredible and unique battles of Gladiator history.

Majority of Gladiators were slaves, prisoners of war or criminals condemned to fighting in the ring for public entertainment but some did fight willingly. Gladiators began their training at as young as 6 years old! The average Gladiator will train for a minimum of 5 years in different forms of combat depending on which type of Gladiator they are.

There were 4 types of main Gladiators:

The Retiarii - were fighters who were armed only with simple clothes, a net and a trident to defend themselves.

2. The Murmillo - wore an Italian style of armour and probably evolved from an early form of samnite.

3. The Thracian - were combatants who had simple armour a shield and a dagger to survive in the ring.

The Saminite - was a powerful warrior with heavy armoury and deadly weapons such as great swords (swords that were larger than most) and a shield called a rectus. They were truly formidable fighters.

What forms of combat did they use?

Now you might be thinking, aren't all gladiator fights pretty much the same, just two people who fight to the death?

Well you're right in a way. Most gladiatorial fights were two warriors fighting but not always! Sometimes in the great Colosseum they would have armoured animals fight each other. For example an armoured elephant might fight an armoured  rhino. Gladiators also fought creatures such as lions, wolves or panthers. But my favorite type of combat was the naval fights. Yes that's right, on rare occasions they would fill the Colosseum with water and put ships inside and make them fight on water! Man, the ingenuity of the Romans never cease to amaze!

What weapons did they use?

The gladiators used a multitude of weapons, armour and animals as well as their talent to fight. For example the Eques were a type of gladiator who fought from horseback. Some gladiators had battles while riding armoured elephants! They also used several types of weapons such as long swords, great swords, knives, axes and even tridents!

Did you know that the majority of gladiators were actually vegetarian Even gladiators need their energy most gladiators eat high carbohydrate foods like beans. I bet you also did not know that gladiators were only expected to fight 3-5 times a year. Did you know that not just men fought, female gladiators were a thing too. Spartacus was a gladiator too. And probably the most famous.

AN UNSEEN HERO

Lots of children were hurt because of cars being unaware that children were crossing that was until these guys came along! Here, we have interviewed one of our schools' very own lollipop person who helps kids everyday.

The first school safety patrols were formed in the 1920s. The first stop signs were posted in Michigan in 1915.

What kind of qualification do you need to be a crossing guard?

I needed to do an interview I did a course that taught us on TV how to be a crossing guard.

Do you ever feel unsafe?

Yes, I need to keep my eyes open to take care because there are people everywhere

What did you do before you were a lollipop lady?

I worked for my own business, a Chinese restaurant. My favourite food to make was curry pork rice.

Is this your neighbourhood? Yes, I live around Ultimo.

Do you guard other places? No, just IGS.

What inspired you to become a lollipop lady?

I chose it because I needed to look after my parents who are old age. It is only an hour and a half in the morning and afternoon and then I can go back home to care for my parents.

Do you drive a car? Yes, I have been driving for fifty five years.

What is your favourite part of your job and Why?

I like it very much because I like children and they are always excited to say hi and see me tomorrow.

Is the lollipop heavy? No, it is very light.

How long have you been a lollipop lady? Six to eight years.

This article is about the librarians at IGS I chose to interview the librarians because I go to the library EVERY SINGLE DAY POSSIBLE.

Q: Would you like to get more staff in the library?

A: Yes of course.

Q: On a scale of 1-8 how would you rate your job?

Q: Should you make a rule that if you ’ re browsing a book but don’t want to borrow it you have to put it back?

A: Yes because if don’t put it back where it was then its very confusing and difficult to find

Q: What do you do at the bookstore when you see a book that you want?

Mythology for beginners

What is mythology? Mythology is a collection of stories from a culture with shared beliefs. Here, I will add mythology from different places in the world. I used “The Mythology Book”from DK to help me tell these stories.

Greek mythology

Helios, the Titan sun god, drove westwards across the sky each day in a golden chariot drawn by flaming horses. His son Phaëton wanted to drive so much. One day, his dad finally agreed. But he drove the chariot off course and ended out in space So, as a punishment, Zeus sent a lightning bolt to strike him down and fall out of the sky

The lesson here is that you should never have too much pride.

Norse mythology

This myth is about the creation of the nine worlds in Norse mythology. At the beginning, fire and ice came together creating a frost giant called Ymir and a cow. Ymir became the father of the frost giants, and the cow freed a giant named Buri by licking the ice he was stuck in. Buri then had a son named Bor, who would become father to Odin, Vili and Ve - the first Norse Gods. A great battle came between the gods and the frost giants, the frost giants losing. Odin turned Ymir's body into the nine worlds. The gods then created the first man and woman, Ask and Embla.

This myth is about the gods of Egypt. Osiris, king of Egypt, gets murdered by his brother, Seth. His wife Isis finds his body parts and brings him back to life. And in the end, when they die, they become gods.

The lesson learned is that if you do good, you can do anything.

School lunches for big munches

Step into a world of endless possibilities for your lunch box that will make it wild, messy, wonderful, and amazing!

We surveyed 12 x primary school students about their school lunches and here’s what we found:

Unfinished lunch: 58.3% come home with some lunch unfinished, 33.3% sometimes do, and 8.3% never do.

Dislike bits: 41.7% don’t have specific parts of their lunch they dislike, 50% do, and 16.7% sometimes do.

Do you like your lunch? 58.3% of the students said they don't like their lunch, 16.7% said they do, and 25% sometimes like it.

Do you finish your lunch? 66.7% said they finish their lunch, 25% sometimes do, and 8.3% don’t.

Do you make your lunch: Half of the students don’t make their lunch, while the other half sometimes do.

Preheat the oven to 90°C. Line a baking sheet with parchment

In a large bowl or the bowl of your stand mixer, combine the egg whites, cream of tartar, and a dash of salt. Beat until peaks form, then gradually add the sugar, continuing to beat the mixture is stiff and glossy

Pipe meringues onto the sheet using a pastry bag and star tip or drop them by large teaspoonfuls onto the sheet

Bake the meringues for 1 ½ hours. Turn off the oven off with the meringues still inside and the door shut; leave them until they’re completely cool - about 3 hour or more

Method

Grab your strawberries and put them in a food processor

Pour the mixture into a saucepan and add lemon juice

Then add sugar if you like and cook it for 10 minutes until it's thick and Jammy Spread the jam out evenly onto a parchment paper-lined baking sheet. If you have an offset spatula, that is the best tool for this.

Let The strip bake/dehydrate for 3 hours in a 170-degree oven, then cool. Cut the rectangle into long strips using a pizza cutter.

Put the fire on and cut some potatoes in any shape you like

Start frying the potatoes for around 5-10 minutes

Add this as a garnish to any dish to knock the sock off of your guests. First, take a large cucumber and cut about 14 to create a line. Carefully roll the slices up, cut them in half, and then place them on your dish with the flat side down. You may have to adjust the “petals” a bit to make it pretty.

Sustainable life

Many of us are already doing our part to protect the planet through choices, like bringing a reusable water bottle to school, skipping plastic straws and putting paper scraps into the recycling bin, but we can still do more.

Reducing the amount of meat we eat.

You can eat less meat. Not eating meat decreases greenhouse gases because grazing animals require a lot of land, often creating deforestation. After all, trees capture and store massive amounts of CO2 from the air, which is important because CO2 is one of the most harmful greenhouse gases. When those trees are cut or burned down, that CO2 is released back into the atmosphere.

Taking something else rather than a car.

You can try to ride to school even if you ride a few days a week, it's better for the environment. If you can’t ride you can take a bus, train or car share with friends. The three most prominent benefits of using public transport over single- occupancy vehicles include the reduction of carbon emissions, air pollution (which results in better air quality), and congestion on roads—including traffic.

It depends on what the flower is, and the requirements that it likes For example, we have lots of ferns, so we give them a very acidic soil mix, so, chameleon like that and so do Russelia’s Roses like it more balanced, so you are going to keep the soil a little more balanced in terms of that acidity. Some bushes after they flower, they like to be cut back, others don’t So it really depends on the type of plants you need to do your research

What kind of flowers are indoor flowers and what kind of care do they need?

Indoor flowers, there are not too many plants that flower that you can keep inside for a long time So, generally the energy required for a plant to produce a flower means that it does need a lot of sun. So indoor flowers are going to be all kind of flower that tolerate the shade more, so things like orchids, your African violets, those things can tolerate shade a little bit more

What sort of nutrients do they need?

Lots of different ones. And each plant needs different ones. That’s a tough one

What kind of plants are good for terrariums and pots?

For terrariums, you would normally go for the succulent, or with an aloe, or like with an epiphyte Something that can be quite dry Pots, you can grow anything in a pot, just as long as you put the pot in the right situation so it gets the right exposure, and also continually feed it because plants in pots cannot use the soil from the ground to feed themselves, they can only use what you put in

Also, some hotels, like the one we stayed in, were joined to a shopping centre by a walkway. Story structure

Story structure helps guide your audience from the beginning to the end of your book by introducing characters and settings, setting up the conflict, developing the main plot points, and finally resolving that conflict. It also helps create tension, suspense, and surprise.

There are five main elements in a story structure: Exposition, rising action, climax, falling action and resolution.

Exposition

An exposition is like an introduction, it introduces the main idea or theory.It often introduces the main character/characters, where the story is set and any other crucial information that helps the reader get an idea of what the story is about.

Rising action

Rising action is the interplay of the conflict within the story. Obstacles, struggles, and conflicts push the story forward. Struggles may change and other conflicts may arise. All lead to the highest point of drama or tension in the plot, known as the climax.

Climax

The climax is the part of the story where all the action is happening. Following the rising action it could be where the villain has captured the hero or any tight situation your character could be in. The climax puts excitement in the story

Falling action

Falling action is the part of the story followed by the climax, leading up to the resolution things like the hero finding a way to beat the villain and other similar things.

Resolution

The resolution is when the problem has been solved and all the characters are safe and happy and it’s safe to say: The end

Great tip! When you start a story make sure to use sizzling starts make sure you don’t make it boring, BAN THE BORING!

A boring example would be

Once upon a time there was a girl who woke up in the morning and ate some cereal with soy milk, then she brushed her teeth and the- I think you get the point.

An exciting example would be:

Once upon a time, there was a girl named April dragonfire. She loved to fight monsters! This morning she ate her breakfast and went on her daily monster-fighting epic super duper really fun dangerous adventure!. Do you see the difference?

Pandesal fluffy bread rolls

Ingredients:

4 1/4 all purpose flour

1/2 sugar

2 1/4 instant yeast

1 1/2 Diamond crystal kosher salt

1 cup of milk

1/4 vegetable oil

2 large eggs

1 large egg yolk

1/2 cup of plain breadcrumbs

Fantastic Filipino Food

Steps:

Find a tall glass in your kitchen (or buy if needed)

Add all the ingredients in any order you wish.

Drizzle with your evaporated milk

Add your toppings (ice cream, jam, leche flan etc )

Use a long spoon to serve and enjoy your meal

Steps:

In the bowl of a stand mixer with a dough hook, mix your dry ingredients (flour, sugar, yeast and diamond kosher salt). Mix on low speed until well combined

Add your wet ingredients (milk, oil, eggs and egg yolk) Mix until a shaggy dough forms, or about 2 minutes. Pump up the speed to medium and let it mix until your dough is smooth and pulls off the sides of the bowl, but make sure that it still sticks to the bottom.

Using a bowl scraper, and place dough into a large, lightly oiled and loosely cover with plastic wrap. (eg. glad wrap)

Line a rimmed baking sheet with parchment paper Fill a wide shallow bowl with breadcrumbs Turn your dough on a clean lightly floured surface but do not let it deflate Split the dough into 16 separate, equal portions. Working with a portion at a time, cup the dough beneath your palm and work it in circular motions and form a smooth ball Place your dough in the bowl of breadcrumbs and roll it around until evenly coated Once done, transfer each portion onto the baking sheet and space them out about 2 5-3 cm apart. Cover loosely with plastic wrap and allow to rise for about an hour at room temperature (22-24º celsius).

Half an hour before baking, adjust your oven rack to middle position Preheat the oven to 180º Bake until puffed and golden brown for 20 mins Serve on small plates and enjoy!

Sapin

Glutinous rice and coconut dessert

Ingredients:

2 cups glutinous rice flour

4 cups of coconut milk

1 cup granulated white sugar

1/2 can of condensed milk

1/2 cup ripe jackfruit

¾ cup of mashed purple yam

1/2 a teaspoon of vanilla extract

1/4 teaspoon of ube extract

1 teaspoon of cooking oil or coconut oil

Violet food coloring

Yellow food coloring

1/4 of latik

Steps!

In a large bowl, combine the glutinous rice flour and sugar Mix together firmly and well.

Add your condensed milk, coconut milk, and vanilla extract into the dry ingredients until smooth Divide the mixture into 3 sections

Add your mashed ube (or purple yam) and ube extract to one part and then add the violet food coloring Mix well and set aside

Remove the seed from the jackfruit and place the jackfruit in a food processor. Once processed, add it to the second part of the mixture as well as the yellow food coloring (Remember to leave the 3rd bit as it is )

Arrange the steamer on the stovetop and pour about 1/4 cup of water Turn the stovetop on and allow the water to boil Brush a round baking pan with your coconut oil (or cooking oil).

Add your purple section to the pan first, and let it set. Remove the extra water with a cheesecloth and squeeze the mixture through Cover the pan with a cheesecloth, and steam for 1216 minutes.

Remove the pan from the steamer and add the white one , place it over section one (purple) and evenly spread Again, attempt to remove extra water with the cheesecloth and put it back in the pan. Steam for 15 - 20 minutes. (If you think it's a bit runny, leave it in for about 5 more minutes )

Take the pan off the heat and add the yellow mixture again, spread evenly over the white mixture and again, try to remove excess water from the mixture Put back into the pan and allow to steam for 15 to 20 mins

Arrange a large, clean banana leaf over a serving plate. Spread coconut oil (or cooking oil) over your clean banana leaf. Grab a spatula (coated with oil) and run gently on the sides of the baking pan Turn your pan over onto the banana leaf and make sure the sapin-sapin comes out onto the leaf. Add a bit of oil on top, sprinkle on your latik and ENJOY!!!!

METHOD:

Step 1: Preheat oven to 180C/350F (or fan forced 160C/320F).

Sift flour and baking powder together Grease a 20 cm x 30 cm / 8" x 12" cake pan Line with baking paper (parchment paper), leaving an overhang on all sides (to make it easy to remove)

Step 2: Beat butter, sugar and vanilla with an electric mixer on medium high speed until light and fluffy - about 1 1/2 to 2 minutes

Step 3: Add eggs 1 at a time, beating well after each addition so the batter is smooth, not curdled

Step 4: Add half the flour and gently fold to combine, then stir in half the milk. Repeat with remaining flour and milk.

Step 5: Pour the batter into the prepared pan and bake for 25 minutes until a skewer inserted into the centre comes out clean

Step 6: Stand for 5 minutes then use the overhang baking paper to lift the cake out onto a wire rack and cool completely Cut cake into 15 squares (5 x 3), or 18 rectangles Freeze for 1 to 1 5 hours

Icing:

Step 7: Combine the Icing ingredients in a heat proof bowl and mix until smooth Should be a syrup consistency, but not watery

Step 8: Place coconut in a shallow bowl or pan with a largish surface area Place a piece of cake in the icing and roll to coat using 2 forks. Transfer it into the coconut and quickly roll to coat all over in coconut. Transfer to tray. Repeat with remaining sponges. Stand for 1 to 2 hours, or until set.

Optional Jam and Cream:

Step 9: Beat cream and sugar until firm peaks form Cut coated Lamington in half horizontally Spread with jam then pipe or dollop on cream Top with lid, keep refrigerated

INGREDIENTS:

125 g / 4.5 oz unsalted butter , softened 220g caster sugar

1/2 tsp vanilla extract

3 eggs , room temperature

260g flour , plain/all purpose, sifted

3.5 tsp baking powder

125 ml milk (low or full fat)

Icing:

4 cups (480g) icing sugar (confectionary sugar), sifted

1/3 cup (22g) cocoa powder

1 tbsp (15g) unsalted butter

150ml (1/2 cup + 2 tbsp) boiling water

3 - 4 cups desiccated coconut

Optional strawberry jam: Strawberry jam

1 cup (250 ml) cream

1 tbsp white sugar

400g milk or dark chocolate

150g marshmallows

135g mixed gummies

25g mixed nuts

2 chocolate wafers

METHOD:

Step1:startbymeltingthechocolate,chopupthechocolateandputitintoa bowl,putsomewaterontheboilandputthebowlontoptomeltthe chocolate.

Step5:putthemixinthefridgeforabout3hoursortillset

METHOD:

Step 1: Separate the whites and yolks while eggs are cold. Measure 150 ml/5oz egg whites Set whites aside to come to room temperature

Step 2: Preheat oven to 170°C/340°F (180°C fan-forced)

Step 3: Place whites in a bowl Use a stand mixer (I use speed 7) or handheld beater (high) and beat until soft peaks form

Step 3: Add sugar 1 tbsp at a time, beating as you go

Step 4: After adding the sugar, beat for a further 3 minutes or until thick and glossy Rub a little of the fluff between your fingers, there should be no sugar grit – that means it is ready

Step 5: Add cornflour and vinegar, beat on low for 5 – 7 seconds (or fold through with spatula )

Step 6: Get the base of a springform cake pan (24cm/9 5″ or larger) and turn it upside down Dab meringue on the edge and place a piece of baking paper (parchment paper) on top

Step 7: Gently place half the fluff onto the paper Use the cake pan as a guide to make it round and coax it into a circle shape around 20cm / 8″ in diameter

Carefully scoop out the remaining fluff Now coax it into a dome shape (not a cake with straight smooth sides) with edges sloping in slightly Flatten top Make it 4-5cm / 2 ” high – not much higher Transfer to a baking tray CAREFULLY place in the oven, GENTLY close the door and turn oven DOWN to 115°C/240°F (100°C fan)

Step 8: Bake for 1 1/2 hours – no peeking, no thundering through kitchen! Turn oven off, leave the door closed and leave Pav in the oven overnight to cool (I’ve done 18 hours)

Step 9: Transfer Pav to serving platter then slide cake pan out from underneath Use a butter knife if required to loosen edges from paper, then slide paper out from underneath

Step 10: Just before serving, top with cream and fruit of choice Serve and be a rock star!
