fresh new year! We can hardly wait to get going on what we have in store for our readers for 2018. We appreciate all your positive feedback and kind words—we do this all for you! Winter is here and we all have a bit of time to cozy up, enjoy the new season and formulate new plans for the year ahead. Our homes are a place where we can tuck ourselves away and leave the responsibilities of the day at the threshold. This issue we explore an area of the home that is quickly earning its reputation as the 2nd most important space in your home—the bed and bath. We had great fun asking questions of local experts and researching 2018 innovative trends that will prove urban consumers are going beyond spas and gyms to distress—they want bathrooms as wellness zones. According to industry experts, shower enclosures, whirlpools and premium interiors are helping to create bathrooms as extended living areas. Consumers are spending more, seeking out higher-end products such as tiles, whirlpools and floating vanities. Electronics have quickly taken a front seat in our bed and baths creating a digital spa experience. From customized showers programmed from a wall pad to self-opening and closing toilets with warm seats to medicine cabinet mirrors with inset LCD TVs—there is no doubt, technology has changed the experience. The planning and design, whether you are building or remodeling, reflect our personalities and our lifestyles. Ultimately these living spaces become a place we retreat to, a tucked away area of quiet respite. The year 2018 will be a good one, so sit down or better yet—hop in your whirlpool tub. Toss in some therapeutic bath salts and read Inspired Home as you enjoy a long, relaxing soak. Enjoy the Winter issue!

alentine’s Day brings thoughts of the color red. From greeting cards to roses, it is a color of passion, warmth, romance, courage and powerful energy. Walk into a red room and your body immediately responds. Red is a stimulating color that grabs your focus upon its introduction much like a fire engine or a stop sign. On walls, it becomes the defining element of a space. Simply spoken, red is a statement color. It demands our attention. Emotionally intense, it has the ability to enhance human metabolism, increase our respiration rate and our appetites. Over the course of 12 months, the Benjamin INSPIREDHOMEMAGAZINE.COM

Moore team of seven color specialists traveled 97,220 miles to 30 cities in 12 countries to determine out of 3,500 colors which would be worthy of the 2018 Color of the Year recognition. From design fairs and art exhibits to cultural events across the globe, Benjamin Moore became inspired by this color. Red is radical. Red signifies change and strength. Red is dramatic. Red is happy. Red is smart. Red is desire. Red is primary. Red is symbolic. Red is confidence. Introducing Benjamin Moore’s Color of the Year, Caliente AF-290. Ellen O’Neill, creative director at Benjamin Moore, who surrounds herself with color every

day explains, "Caliente is the signature color of a modern architectural masterpiece; a lush carpet rolled out for a grand arrival; the assured backdrop for a book-lined library; a powerful first impression on a glossy front door. The eye can’t help but follow its bold strokes.” Caliente Red, with its slight brown undertones, is intimate in its appeal, charismatic, stately and soothing. A perfect backdrop for powerful art, it is also a coating that brings comfort, providing a secure space to retreat from the rigors of our day. Rooms that have a lot of natural light will give off a warm tone so balancing with cooler shades of white can be helpful. here's one room style that takes my breath away — an all-white interior room. While in theory, a bleached-out space could be stark and cold, the visual reality tells a very different design story. A milkyhued foundation is the perfect blank canvas for developing a timeless space that remains relevant regardless the country, design era or year. White is forever. When decorating a white interior, one thing to remember — texture is your friend, adding visual interest and warmth. pillows, art, bedding, molding, rugs — and the more the better! Art is an important creative tool in designing and completing a monochromatic space. All art will work in a white room. Much like a gallery, any size, color or style will become powerful focal points — so get out there and support our local artists! There is a plethora of white shades to select from so take your time in making your decision. The subtle differences in white can make a huge difference once it is on your walls. The undertones may not be readily apparent until paired with other colors or certain lighting so acquiring a paint sample is a good idea. A few favorites: :: Dover White by Sherwin Williams — fresh, clean with a slight vintage appeal that works beautifully with wood and brick. :: Decorator’s White by Benjamin Moore — a clean, happy look with a bit of warmth. :: Shoji White by Sherwin Williams — warm and natural, it brings a ceramic feel to the color. :: Ultra White by Behr — This is a perfect white, no tints and works well in flat or high-gloss projects. :: Simply White by Benjamin Moore — fresh as the first snowfall, this is a clean, warm and crisp multi-purpose favorite. It’s winter! Reflect the natural beauty of winter by a palette of white in your home year-round. Inherently a color that reflects positivity, protection and renewal, your family and guests will thank you.

Design Thoughts a stunning white room with warmth relies on the "Creating introduction of good supporting characters. White paint will give an expansive feel… keeping it from feeling pristine and sterile is the next step. Add light natural elements, such as wood floors with textured rugs, upholstery in woven tonal whites and leathers to create a great foundation. Mixing art and accessories with your favorite colors and patterns will add diversity and interest to this classic color scheme.

Kimberly says her dad taught them to work hard and play hard, but work hard first. Together, the Kruegers are making families’ dreams come true one home sweet home at a time. The Kruegers put love, precision and thoughtfulness into all of their homes. They are all built on a strong foundation … one of family values.

or nearly 40 years, Barry and Julien Batcheller resided in the same West Fargo neighborhood. The thought of building a new home in a different area became more appealing as they watched their aging parents face difficulties. “The time seemed right,” Julien recalls. “We knew what we wanted and what worked for us — an open concept with wider doorways, fewer rooms, a main-floor master bedroom and no steps or stairs.” Two years ago, their son and his family built a home in Edgewood Estates. The couple found themselves attracted to the neighborhood INSPIREDHOMEMAGAZINE.COM

with its wooded lots. After discussions with family, they chose a lot three houses down, just across the street from their son’s home. They spent a year planning their home, purging clutter, giving away furniture from a lifetime. During this process, they visited with Darrick Guthmiller of Kochmann Brothers Homes about which lot would work best. “This spacious, angled rambler sits perfectly on the irregular lot,” Guthmiller explains. “There are no steps going into the home, but it has a full unfinished basement. To ensure the basement was flood-proof, we worked with a structural engineer. INSPIRED HOME | 47

The 3,889-square-foot rambler, which includes an 824-square-foot bonus space above the garage, has three bedrooms and four baths. As an engineer, Barry appreciates the home’s interesting exterior roof lines. “The addition of a curved wall near the entrance complements arched windows and doorways,”

Barry shares. His personal office contains a restored 1800s drafting desk, copper-framed circuit board and tools from the past. A stunning knotty alder coffer ceiling in the great room is simply spectacular! How blessed we are to immediately feel right at home.”

Design Thoughts "It was our pleasure working with Julien and Barry creating the home of their

dreams that would be, cozy, easy for entertaining and most important, welcoming. They wanted friends and family to feel comfortable and at home. That is the feeling you get as you enter the front door, with the combination of woods, stone, fabrics and light fixtures chosen. Art work and other treasured pieces, were also inspirations throughout the home. This was accomplished by working with Bob and Darrick – Kochmann Brother’s Homes, Beth-Wood Specialists, Kathy – Valley Lights, other trade partners, and of course the Batchellers!

enewing your home interiors plays an important role in your mental health. Although that might sound a bit odd, it is true; the design of our homes affects our moods. Your home is your comfort zone where you get a chance to leave responsibilities of the day at your threshold, shutting the noises of the world out — an opportunity to garner rest and relaxation. In this issue, we take a look at beautiful trends for bedrooms and baths, which are fast becoming the second most important

area in our homes next to kitchens. The day spa feeling of “escape” is here to stay with the popularity of freestanding baths (in colors) remaining important elements. Gaining in demand are deluxe showers that incorporate a rain head shower, hand-held shower and side jets for a completely relaxing experience. From paint colors and a new take on wallpaper and tile to adding gorgeous metallics to your restful sanctuary, you will appreciate the eye-catching beauty of these design trends that 2018 has to offer.

t’s 20 below zero. You arrive home after creeping along on treacherous icy roads. You’re exhausted after a hectic schedule at work. The cold north wind blows forceful swirls of snow in your face as you rush to the front door. The visible soft glow of welcoming lights is in sight. The thought of a warm, luxurious and relaxing bath — a good soak — dominates your tired thoughts. Then it happens. Reality strikes and images of your old tub complete with cracked tiles and mildewblackened grout shatter your comforting delusions. Now what? I recently heard about a bath and shower remodel company that intrigued me. I contacted Bob Woosley, Minnesota franchise owner of Bath Fitter and immediately sensed his enthusiasm for what his business accomplishes for his clients. I asked Woosley, “Why are you so proud of Bath Fitters?” He quickly replied using this scenario, “In most companies, a contractor comes to your home to present a quote to remove your bathtub or shower. Most contractors do not break the quote down to the penny. If you accept the quote, you then expect to have various people in your home for about 3-4 days or more, completing the transformation. You’ll see a plumber, a tile setter and a carpenter. The work will involve a lot of dust and debris over the course of the project. By the time the job is completed, the cost is hopefully within

the quote you received. You’ll get a very limited warranty, if any. “Bath Fitter comes to your home, offers an exact price, which we honor. The client will see one ‘factory- trained’ installer at their home to transform the bathroom in eight hours. We hear ‘WOW’ from our customers about that. Our lifetime warranty is equally impressive. The referrals we receive are amazing — we’ve completed over 11,000 bathrooms in Minnesota and North Dakota.” I discovered the Bath Fitter options are endless from “Aging in Place” conversions for easy shower access to total luxury bathroom remodels that go way beyond ordinary bathtub resurfacing. The countless choices of quality hardware, shower doors and colors enable you to create the perfect bathroom for every individual taste. Remodeling your shower is just as easy and offers a myriad of beautiful ways to optimize your shower experience — in one day. The lifetime warranty seemed to me to be the lovely icing on this proverbial cake. The cold winds winter may often blow us around here in North Dakota and cause a frigid chill to our bones, but we in the Northland now have beautiful options to rejuvenate. With Bath Fitter around, that warm, relaxing soak in a sparkling new bathroom is just one day away from completion. To find out more about renewing your bathroom, visit bathfitter.com.

of things like cutting up a carrot or vacuuming the floors. This Christmas, I was deliriously thrilled to unwrap a Zoom-Boom automatic floor vacuum cleaner. Growing up watching the “Jetsons,” I was pretty sure by this point in time I’d be living in a glass condo in the sky, driving a hybrid spaceship and have a sassy robot maid named Rosie. If I couldn’t have a sassy housekeeper catering to my every whim, at least I could have a quiet, polite vacuum cleaner that would make my floors sparkle.

IMPORTANT! PLEASE READ ALL INSTRUCTIONS BEFORE USE! That’s for guys who can’t figure out how to operate a simple 39-cycle washing machine that includes steam stain release and ultraviolet color sensor that disburses the exact amount of detergent required to remove last night’s salsa stain from my favorite shirt after dining at the local Mexican/Norwegian lutefisk taco bar. The Zoom-Boom had two buttons, a digital display screen and a “Launch Dock” where it lived when not in use. Looks like the “Launch Dock” is the closest I’ll get to my “Jetsons” lifestyle any time soon.

INSPIREDHOMEMAGAZINE.COM

I plugged it in to charge Christmas Eve and went to bed, where visions of sugar smacks whisked from the floor danced in my head while waiting for Santa to arrive. Waiting for the grandkids to arrive, I wanted to give the Zoom-Boom a try. I was sitting at the breakfast table, enjoying my eggnog-flavored coffee, fiddling with the Zoom-Boom when it suddenly powered up, grabbed the belt from my robe into the roller brush, reeled it in and began smoking. Funny noises and a burnt smell ensued while howling and grinding against my chest. Maybe I should have waited until after the grandkids had come and gone. Grandson Brian asked if I needed help programming my Zoom-Boom in that kind of sad, Papa B-is-technologically-disadvantaged tone every 11-year-old knows and does all too well. I assured him I had the expertise to program a simple household appliance. When no one was looking, I found the owner’s manual and read it. Seems there was a pretty detailed sequence of events that had to occur before this technological marvel could do its job. Our dog, Rocco, is a 11-pound ball of white fluff that loves to hang out the side of the car at 60 mpg with the top down, turns into mouth-foaming Cujo when the door-bell rings and gets overwhelmed with romantic feelings at the sight of any dog 10 times his weight. When the Zoom-Boom launched from its dock, you would think a rabid Tasmanian Devil with a hankering for some fluffy white dog had been unleashed. Seemed wherever Rocco hid, the ZoomBoom would hunt him down. Under the bed, behind the sofa, perched on a dining room chair; wherever the dog was, the Zoom-Boom wasn’t far behind. Clearly, I had to make sure the Zoom-Boom went about its daily routine when the humans were gone, and Rocco was in his doggie bed behind a baby gate. I studied the owner’s manual one more time, pushed the appropriate sequence of buttons to coordinate start time, stop time, household square footage, indoor temperature and relative humidity. It didn’t ask anything about soil level. I set off to go about my workday. When I arrived home at 5, I immediately sensed something was wrong. There was

a low-level growling that I couldn’t quite determine if it was Rocco or the Zoom-Boom. The Zoom-Boom had knocked over the dog-dish, went hog wild sucking up the dry kibble, wandered toward the open basement door, fell down the stairs and landed on its back like a turtle. It then spent the afternoon wildly shooting kibbles throughout the family room. One hour clean up. The next day, I put the dog dish behind the baby gate with Rocco, made sure the basement door was closed and went to the office. When I got home the Zoom-Boom was quietly charging in its “Launch Dock.” That was a good sign. Bad sign — Zoom-Boom had found a couple of chocolate mint brownies that granddaughters Gabby and Chloe found too sophisticated for their palate, so they hid them behind a chair. Zoom-Boom hunted them down, wadded them up in the boom-brush and proceeded to add chocolate swirly stripes to the white, low-loop sunroom carpet. Two-hour clean up with my old-fashioned steam cleaner. After a few days, I determined the real benefit of the Zoom-Boom robot floor vacuum: It forces homeowners to make sure every hazard is picked up from the floor, doors closed, pets secured and secretly discarded hors d’oeuvres dealt with. So overall, kind of a win? I’d still rather have a wise-cracking Rosie the Robot housekeeper. Maybe next year … if I’m good. INSPIREDHOMEMAGAZINE.COM

Cats

The mysterious and intriguing life of a feline BY asHLeY FerragUT JOHnsOn

F

or this issue, animal lovers of Inspired Home Magazine decided it’s time to shine the spotlight on our more fickle furry friend … the feline. As both an owner of cats and dogs in the past, I can honestly say I have grown to love and appreciate both species as family pets, but an affinity for both has not blinded me to the fact that the mere mention of the word cat can be a polarizing topic of conversation. We spoke to our favorite veterinarian, Dr. Amy 72 | JANUARY/FEBRUARY 2018

Anderson of West Fargo Animal Hospital, to learn a little more about our feline friends and perhaps better understand this, sometimes, misunderstood friend. Some people may prefer a cat to a dog and vice versa, simply because of a familial upbringing with one or the other. Personality alone can have an impact on which species you tend to seek out. Dr. Anderson explains, “Often shy, introverted individuals prefer cats INSPIREDHOMEMAGAZINE.COM

“They are complex problem-solvers. Cats will observe a situation and formulate a plan accordingly.” Dr. Amy Anderson, West Fargo Animal Clinic

because they are low maintenance, and can enjoy their pet in the quiet comfort of their home. On the contrary, extroverts may thrive on the social aspect of dog ownership, such as meet-ups at dog parks.” For now, we will focus on the star of this topic of conversation, the kitty-cat. There are many misconceptions people tend to have when it comes to the domesticated house cat, and some truths as well. Some cast cats as being unintelligent because they are difficult to train, may not come when called or sometimes seem to ignore their humans all together. This, to me, is one of their more enticing qualities, and it is because they are so smart that they can ignore the pleas of their owners. Dr. Anderson says they are not fooled by our feeble attempts to train them; though it’s possible to train a cat, it takes a lot more diligence and patience on the owner’s part. “They are complex problem-solvers. Cats will observe a situation and formulate a plan accordingly. If you’ve ever watched a cat chase a mouse, you can see that very clearly!” In addition to being complex problem-solvers, cats make excellent companions for those who appreciate a quiet presence in their housemates. “While they like having someone around, they don’t seek constant attention and are more likely to be found napping in a sunny spot in a quiet area of the house. As long as you provide food, water and a litter box, most cats can take care of themselves,” generally speaking, she adds. One of the more puzzling yet enduring qualities of a cat is a seemingly lack-luster attitude toward their human counterparts. Granted, this display of indifference isn’t a constant but, more often than not, a call of your cat’s name results in the annoyed INSPIREDHOMEMAGAZINE.COM

“side-eye,” versus a dog’s jubilant and rushed scurry to see what it is you require. This is an attribute Dr. Anderson, like many others, wishes she understood better. She has heard it explained that humans domesticated dogs and cats domesticated humans, which applies quite nicely in regard to their day-to-day “I’ll do what I want” attitude. It’s a personality trait that makes them seem “regal,” as Dr. Anderson puts it. “They truly have a mind of their own.” For instance, pet a cat that doesn’t want to be petted and you’ll hear about it. Call them when they don’t want to come and you won’t see them. Feed them when they aren’t hungry and they won’t eat. Tell them no, as they eye the glass menagerie barely hanging on to the edge of the table and you know they will look you dead in the eye as they bat their little paw and you watch the glass shatter into a million pieces. They’re cats. They are playful, sarcastic, loving, cunning and mischievous at the same time. They are complicated beings deserving of a warm and devoted home of humans. Keep their world interesting, with exciting places to hide, and toys that keeps their next “hunt” unexpected and stimulating. And don’t forget, even if it doesn’t always seem like it, they love you back. Next time your kitten comes creeping out from wherever he or she was lurking, give them extra furry chin rubs … if they let you.

Spice it up Bring flavors New Orleans style to Super Sunday STorY aND PhoTograPhY BY granViLLe WOOd

T

he distractions of the holidays are over, football is nary but over save for the Super Bowl. That means we have weekends back again making time for long, lazy Sunday lunches. No more nachos or chips and dips, hot dogs and beer in front of the TV. I am talking a proper Sunday lunch, not to be confused with brunch. It’s winter, so bring on a nice meaty roast, a big chewy red wine, chocolate in any form and perhaps a brandy with coffee in front of the fire. Good friends and conversation will ensue. A lingering, comfortable afternoon, no pretenses and I cook. Everyone else cleans; house rules, simple. That’s how I embrace winter, along with long walks with my dog and inside projects. Winter is for warm meals and crackling fires. For a successful sit-down luncheon, invite no more than six people. Time tested, this is the perfect arrangement to have one conversation at a time plus the added benefit of really engaging with your guests. This winter we’re spicing up Super Sunday by bringing jazzy New Orleans food to our table for a Super Bowl meets Mardi Gras luncheon. Mardi Gras parades start in early January through February 13th with the Super Bowl on February 4th. According to the food world, January and February are both “R” months, an old adage claiming oysters should only be consumed during those months. Translation- oysters are at their finest then. They will be on my menu on the half shell with a mignonette sauce, baked crispy Parmesan bread crumble and garlic butter. Because nothing shakes the chill off like a hearty, big bowl of gumbo paired with steamed rice, it’s my main entree. To finish it off, we’ll enjoy decadent, warm bread pudding topped with a silky, bourbon sauce. Gumbo is a dish made with love and patience. For me it’s all about the roux, known in Louisiana as “Cajun Napalm”. This slow cooked mixture of flour and oil holds its heat (hence the term napalm) and is the flavor behind a good gumbo. Slowly cooked to a deep brown this roux thickens the gumbo and brings a distinct flavor to the dish. Crisscrossing Louisiana you will find there are numerous gumbos and many INSPIREDHOMEMAGAZINE.COM

ways to make them. Consequently, there are debates about what constitutes a gumbo. Is it the roux, the addition of okra or filé powder? Then there’s the tomato debate. I have been told, to my face, by an old coon-dog from the deep bayou, “Add tomatoes and it is a stew not gumbo”.

Regardless, passions run high, tomatoes or not. My version contains a dark roux; okra and filé, just to defy them all. I might even add a small amount of tomatoes to my seafood gumbo. Another debate about gumbo is that some resemble consommé, thin, clear and dark. Others are thick and meaty. With those

as “Cajun Napalm". two extremes, most fall in the middle like the one I make with andouille sausage and shrimp. It’s best made a day ahead of time and add the shrimp the day you serve it. Serve with rice and it becomes a satisfying meal, perfect for entertaining. If your group is oyster shy, serve a combination of boiled shrimp, chilled oysters on the half shell and roasted oysters. Local market Deep Blue Seafood carries shrimp and fresh oysters and they will shuck the oysters for you and leave them in the shell. Add mignonette, cocktail sauce, lemon wedges, saltine crackers, chilled Sauvignon Blanc and cold beer and you are on your way. Lay it out on your kitchen counter for pre-game and have gumbo at half-time along with crusty French bread. Those still standing get bread pudding at the end of the game. The game will be played right down the road in Minneapolis—what a perfect time to shake of the normal game day traditions! Hey, after all maybe my Saints will be playing.

METhoD: In a heavy 6-quart pot heat the oil. add the flour, whisking until smooth. Cook over medium heat, stirring frequently. The roux will start to brown and seize up. Continue to stir. as it browns further the roux will loosen up. Stir until it is a deep brown, but not burnt. at this point add the okra, while still stirring, followed by the onion, pepper and celery. This will cool the roux. add the garlic. Stir well, then whisk in the warm shrimp stock. add the bay leaves, cayenne, salt. Whisk in the filé. Lower heat and simmer for 30 minutes. add sausage and cook for another 30 minutes. adjust seasoning. If eating right away add the 2 pounds of shrimp and simmer until shrimp are firm. Dish into bowls, sprinkle with green onions and serve plain cooked white rice on the side.

Cooking Tips WHaT IS FIlÉ POWder? Filé powder is the dried, powdered leaves of the sassafras tree which grows wild in the eastern U.S. and Canada. (Commonly found in the lakes area.) Used in creole cooking to thicken and flavor the gumbo, it imparts an earthy flavor with a fruity aroma similar to coriander seeds.

The roux is now a nice rich color, moving towards the "napalm" stage. If roux starts smoking a bit don't panic, turn down heat and watch carefully.

Now chocolate brown in color with great aroma, it's time to add okra and remaining vegetables. The roux will seize (thicken) up, and is now ready for stock and seasonings to be added.

While filé from good sources can be perfectly acceptable, many store-bought versions can be off - color and loaded with "filler" ingredients, like oregano, thyme, and other garden variety herbs. Check the label for quality.

Culture Collision The best of Scandinavia attends opening night celebration

his fall, my husband and I celebrated our fourth year living in the Finger Lakes in Upstate New York. Our apartment overlooks Seneca Lake, which is the deepest and longest lake in the region. Here, the local cuisine is Italian, boasting a “Sons of Italy” rather than “Sons of Norway.” However, the region is not unlike the “lake country” to our neighboring Minnesota back home. The Finger Lakes region is full of long, deep lakes, forest and rolling hills. It is especially renowned for its wine country. When our friends Megan, Alex and Camilla opened their own winery, I knew I wanted to serve them a congratulatory gift on opening night. I decided easily on Danish medaljer, or “medals” — an apple cream filling sandwiched between a pair of lemony pastry rounds topped with rich chocolate ganache. Other fruit compotes will work well for the filling in this recipe, but I chose apple because it is the most traditional. My husband and I work at the New York State Agricultural Experimental Station at Cornell University in Geneva where we do ag research. With rolling hills filled with test plots of every fruit and vegetable imaginable, we had received a bushel of apples earlier that week — fresh from the first round of harvest. I now had what I needed to tackle this important assignment for the winery opening! Some medaljer recipes use a crème pâtisserie filling rather than whipped cream. While I do love crème pâtisserie, it is often overused with classic pastries. Here, the filling boasts a dollop of tart apple compote, encircled by a slightly sweetened whipped cream. It is distinctively and deliciously Scandinavian. Medaljer are simple to make. The pastry is similar to pate brisée or traditional pastry dough. The additional ingredients, lemon zest and ½ an egg, add brightness and depth. This recipe can also be made ahead of time. The apple compote is best the day of, but can be made a day ahead INSPIREDHOMEMAGAZINE.COM

and kept at room temperature (if using the next day). The whipped cream can also be made a day ahead, but I find it tends to weep moisture so you end up adding more cream and re-whipping. My advice is to whip the cream right before serving.

The combination of tart apple, rich chocolate and lemon is not common among the throngs of the basil-and-tomato-loving taste buds here in New York, but the patrons at our friend’s winery opening night welcomed them with gusto!

Make us a part of your day.

In Scandinavian countries, medaljer are commonly eaten with coffee (never tea) for afternoon ‘fika’, accompanied by pastries, cookies or pie. I knew it would a unique pastry in an area of the country dominated by the local calzones, franks (hots) and stromboli.

I used my favorite apple—the honeycrisp for the fruit compote. The variety, originally created at the University of Minnesota, is grown everywhere!

The pastry step can be done in advance and kept in the fridge or freezer until ready to roll out. The dough will be crumbly!

When making the ganache, remove saucepan from heat when there are a few small chunks of chocolate left. Let the residual heat finish the melting. ganache turns dull instead of shiny if it is overcooked.

METhoD: To make the pastry, sift the flour and powdered sugar into a mixing bowl. add the lemon zest. Cut the butter into the dry ingredients until the mixture resembles breadcrumbs. add the egg and stir until the pastry comes together in a ball. Chill for 30 minutes. Preheat the oven to 425°F and line a baking tray with parchment. roll out the pastry on a floured work surface to a thickness about 1/8 inch. Use a 2½inch diameter cookie cutter to cut the pastry into discs. Bake for 6-7 minutes, then transfer carefully (they are a bit fragile) to a wire rack to cool.

Cut vanilla pod lengthways and scrape the seeds out with the tip of a knife. Put the apples in a saucepan with the sugar and the vanilla seeds and bring to the boil, then reduce the heat and leave to simmer for 20 minutes. Stir the apple mixture together to give a thick sauce, then leave to cool. Melt the chocolate and butter together in a double boiler and stir until smooth. Be sure to use chocolate with at least 60 percent cocoa solids. Spread half the pastry discs (medals) with the chocolate mixture, leaving a small border. Put aside to let the chocolate set. These are the top medaljer. Whip the cream until it forms stiff peaks. Take the remaining medals and place one teaspoon of apple compote in the center of each disc. Fit a piping bag with 1 cm tip and fill with whipped cream. Pipe a ring of cream around the apple compote. These are the lower medaljers. Match a top with a bottom and serve immediately with coffee. appy 2018! Wait, what? 2018?!?! How did that happen? Everywhere I turn lately, pop culture icons from my early teenage years are having milestone birthdays. REM’s “Automatic for the People” turned 25 in November. “Adventures in Babysitting,” “Some Kind of Wonderful,” “Spaceballs” and “Dirty Dancing” all turned 30 in 2017 as well as Guns n’ Roses’ “Appetite for Destruction,” Whitney Houston’s “Whitney” and U2’s “The Joshua Tree.” Thirty years? Where has the time gone? Wasn’t I just babysitting, watching “The Golden Girls” and “Hunter” and making my way through “Night Tracks,” willing myself to stay awake? Wasn’t I just applying gobs of purple eye shadow and rolling my jeans and making sure my shoulder pads were straight? Short answer: I’m getting old. And it’s happening really fast. I’m definitely well into the years where people get demure about their age, where I am examining the new fine lines and wrinkles that seem to pop up every day, and where I can’t lose five pounds just by eating a grapefruit for breakfast one morning. I’m not saying I love watching these changes descend on me, but I have two friends who didn’t get to live nearly long enough,

and I know that Matthew and Amy would both be happy to watch their hair change slowly to salt and pepper, to see the laugh lines growing and maybe even to let go of the clothes we all hold on to hoping to “lose the five pounds and wear them again.” Long answer: While I can’t believe the movies and songs of my teenage years are this old, thereby making me pretty old, too, I haven’t been in stasis in the years in between. I’ve lived through some spectacular years, created some fabulous memories, had my fair share of disappointments and earned the wrinkles, the few extra pounds and all the rest. There are only two options in life, and aging isn’t the worst of the two. It brings with it some challenges, some adjustments and some recognition of time passing. But, on the whole, living is a glorious thing, and those of us who are privileged to “get older” need to appreciate it, lean in to it and celebrate it. So, don’t go into 2018 with dread at another year passing; embrace 2018 as the next year of life, the next year of memory-making and the next year of you! After all, to quote our good friend, Ferris: “Life moves pretty fast. If you don’t stop and look around once in a while, you could miss it.” — “Ferris Bueller,” 31½ years old. Happy 2018, indeed.
