A timeless space for memories by Bernie Erickson

T

rying to come up with something for the Inspired Home kitchen issue has been kind of a challenge. Everyone has heard my favorite wisecracks: “I only have a kitchen because it came with the house,” and, “If it weren’t for friends and restaurants, I would have starved to death years ago.” Truth of the matter is, I really do like kitchens. I can sit at the counter and chat with the cook for hours on end. To orchestrate a fantastic meal on time and at the right temperature for a group of friends and family is a talent like no other. 22 | September/October 2015

It occurred to me the other day that almost every interesting memory of my entire lifetime has the phrase “It seemed like a good idea at the time” somewhere in the story line. Whether it’s painting the house, exploring some new gardening technique or testing a strategy to speed through an airport, I’m the first in line to try new things. So I began thinking back on some kitchen innovations that probably seemed like a really good idea at the time but ended up maybe not so much. Leading the list has got to be kitchen carpet. Back in the early 1970s, it was all the rage. Warm, soft and cushy level-loop carpet in deep earth tones like burnt orange and avocado green covered kitchen floors everywhere. Every home had a carpet sweeper or a sassy electric stick vacuum in the broom closet to whisk away the cookie crumbs and cereal. That’s about the same time the home carpet steam cleaner rental business took off. It was one thing to sweep up cereal— quite another to deal with the spilled milk. Before long, the carpet began emitting an unseemly odor, and mom would need to spend the afternoon steaming the carpet, and dad would take us out for supper because no one was allowed to set foot on the carpet until it dried. I think we had our kitchen carpet about two years before enough was enough and out it went. The only thing more disgusting than kitchen carpet was shag carpet in the bathroom. But that’s another article. The console TV in a warm pecan finish with a bowl of plastic grapes on top seemed to regularly have a 30-minute program hosted by a crazed guy with enormous teeth selling some kitchen product that ended in “o-matic.” Those marvels took the 90-second drudgery of slicing a potato and turned it into a 90-minute exercise in futility. The process involved going to the basement to bring up the box, trying to assemble the contraption in 27 easy steps, going back to the basement to try and find the missing cutting disc because you didn’t want the julienne cut, you wanted the wavy cut, and by the time you found the wavy cut disc, the potatoes had boiled dry, and the whole house reeked, and dad was going to be home any minute and have to take us out for supper because mom had just had it. But overall I think the labor-saving pièce de résistance of appliances must have been the portable dishwasher. I know there are people who still have and INSPIREDHOMEMAGAZINE.COM

use portable dishwashers, and I’m probably going to get as much grief over making fun of portable dishwashers as that time I made fun of the reminder to kiss your spouse good night painted on the wall above the bed. Seriously? Forgetting to kiss your spouse good night is a recurring problem? Again, I digress. Kitchens today are often the centerpiece of beautiful homes and frequently the first thing you see upon entering the front door. It’s not unusual to see a pair of crystal chandeliers over a gleaming slab of imported granite, a dual-fuel range worthy of any restaurant and commercial refrigeration all in local homes. When I was growing up in the 1970s, kitchens were still utilitarian and stuck in the back corner of the house. They were lit with a four-bulb, 4-foot fluorescent light that turned everything sallow beige. Instant everything was in vogue. Families would no more hang out in the kitchen than they would hang out in the furnace room. Get in, get out, and then go to the rec room and turn on The Brady Bunch or Love, American Style and settle in with a bowl of Jiffy Pop and a glass of Tang. The portable automatic dishwasher was a modern luxury that could expedite the get-inget-out process. Kitchens in the ’70s were all about efficiency, which meant there was room for exactly one person who would not have to move because every appliance and cabinet could be reached without taking a single step. So adding an appliance on wheels the size of a washing machine into the equation 24 | September/October 2015

made perfect sense. Picture Shirley Partridge trying to maneuver a small army tank past the Chrome Craft dinette set with copper-tone vinyl bucket seats—by the way, also on wheels—hooking up the hose to the kitchen faucet and then basically standing on her head to load the new Summer Sunflower Corelle dinnerware and Teflon II cookware into a machine that really wasn’t going to get the dishes clean anyway. And more often than not, the hose would vibrate loose and spray water all over the kitchen, but no one would notice it until they came upstairs to get more Tang and stepped on the squishy carpet. So what is today’s “seemed like a good idea at the time”? Today’s kitchens are all about glass and natural stone. They’re about reclaimed wood and repurposed heirlooms. They’re about high-quality, functional appliances in durable finishes. And they’re about a gathering space for the family to come together at the end of the day to download and create and connect and plan the next adventure. They’re about a place where the people we love the most join each other to nourish their bodies and souls. Overall, I think today’s kitchens are an example of what we will look back on and think, “It seemed like a good idea at the time,” and then smile recalling warm memories of some of the best days ever.

aomi Neilson Howard, founder and CEO of Native Trails, grew up in San Jose, California, a city now known as the capital of Silicon Valley. Howard’s passion and zest for life, however, has much earthier roots than that of her high-tech birthplace. sinks and bathtubs. All of their products are made using techniques that have been passed down from generation to generation. Each of the thousands of hammer dents is painstakingly hand pounded with great purpose. The furniture craftsmen use reclaimed wood as their medium and gather materials from old barns or forgotten wine barrels and staves from the central California coast. Their woodworking traditions date back hundreds of years. The deliberate selection of the raw, reused materials and the careful purpose with which these local men and women craft their products set Native Trails apart from any other bath or kitchen corporation. y family and I recently built a home in Oklahoma City. Designing my dream kitchen was by far the most thoughtprovoking and exciting part of the process. My kitchen design really began with one of my must-have items: a large hanging pot rack centered above an oversized island. I love to cook, and functionality was a crucial element. Pot racks not only serve a useful purpose but act as an accent piece, adding color, depth and interest in an otherwise empty overhead space. This attractive, space-saving kitchen tool comes in many different styles, such as hanging, freestanding and wall mounted. The type of mount you choose depends on

your kitchen space and the look you are hoping to achieve. While the hanging pot rack is probably the most popular, freestanding and wall mounts are wonderful alternatives when storage space is limited. Freestanding racks can double as a convenient workstation for food preparation in a smaller kitchen. The wallmounted pot rack is another good choice where counter space and storage are in short supply. Pot racks come in countless designs and finishes and free up coveted cabinet space. ends. Keep in mind that these racks are not only for your favorite sautĂŠ or frying pans. I use mine to hang measuring cups and frequently used kitchen utensils such as large ladles and heavy-duty spatulas, all while keeping the kitchen uncluttered and organized. When choosing your pot rack, consider the hardware finish and color palette in your kitchen. While many may want to match finishes, you can also choose a contrasting color to draw more attention to the piece. That is what I did. The hardware in my kitchen is a dark rubbed bronze set against antique white cabinetry, so I chose a bright copper rack to hang above my island. It has been treated with a sealant that protects its sheen, preventing it from oxidizing and changing the patina of the metal. Though in many instances the changing color of natural copper is part of the appeal, I wanted the rack to maintain its original color and luster. Aesthetics aside, pot racks need to be functional, and it is important to make sure they are installed properly. While building our house, we quickly learned that the ceiling studs would not support the weight of the pot rack I had chosen. It holds up to 20 pots, many of which are heavy cast iron. Additional support and reinforcements had to be secured to the existing overhead beams. Pot racks are easy to shop for and can be found at most major kitchen suppliers and online. No matter the kitchen size, pot racks are a fabulous way to organize and embellish the heart of your home. INSPIREDHOMEMAGAZINE.COM

W

hen it comes to custom-made wood products for the home, no one understands the importance of design and craftsmanship better than Paul and Denise Grothouse. Partners in life and in business, the married couple owns Grothouse Lumber Company, a Pennsylvania manufacturing company that crafts custom wooden countertops, butcher blocks and other home-related goods. At an early age, Paul learned to love woodworking with his father, an accomplished furniture restorer. To help pay for college, Paul purchased a small portable sawmill and did some woodworking on the side. He earned an engineering degree from Virginia Tech and quickly was promoted to Quality Manager at Lutron Electronics, a leader in

high-end lighting controls. He continued to enjoy his milling hobby on the weekends. Using scraps from a lumberyard, he began creating beautiful custom chopping blocks. Requests for these butcher blocks increased, leading to the demand for larger projects like bar tops, wood countertops and tables. Before long, his weekend hobby led him to a new career. The couple calls their 50 acres of farmland home, and it is also the location of their two manufacturing buildings. Denise speaks fondly of their Pennsylvania home, which was purchased from a local farming family. “We made a gentleman’s agreement to never cut down their mother’s beloved hickory tree,” she says. “The property is still farmed today, this year with soybeans. Deer, hawks and wildlife roam the property along with an occasional peacock from a 36 | September/October 2015

With Denise’s marketing know-how and Paul’s passion and unmatched knowledge of how to precisely care for, treat, and cut wood, it is not surprising that Grothouse Lumber Company has installations all over the world, including their largest project – a kitchen right here in Fargo, North Dakota. In collaboration with Stahl Architects and designer Beth Kemmer of Wood Specialists, Inc., Grothouse fabricated, delivered in its own semi trailer and installed their largest wood countertop to date- 16 feet long and four feet high. (See Design Thoughts section) Another Fargo company, JW Kitchens, enlisted the help of Grothouse when planning their new showroom. Owner Audrey Newman incorporated their wood countertops with seamless built-in “bowls” and adjacent butcher-block prep areas. n speaking with Denise Grothouse of Grothouse Lumber Company, Inspired Home learned that their largest wood countertop project was installed in the kitchen of a Fargo home designed in collaboration with Stahl Architects and designer Beth Kemmer of Wood Specialists Inc.

“I was looking for a wood countertop supplier in the U.S., as I knew the shipping for this large countertop might be an issue. I discovered Grothouse Lumber while watching a television episode of This Old House. The company has supplied wood tops for several televised projects. I also needed a detail-oriented company that I could work closely with on details such as the drawer fronts to be cut out of the wood top for a seamless waterfall effect and channels to be cut into the wood top for stainless steel rods for use as a trivet. Any customization is added to the project, like sink cutouts, laser engraving or hand planing.” Paul, taking notes from luxury yacht designers, has engineered Durata, a finish that renders some of their wood products food safe, waterproof and impervious to most household chemical items. This sealant has allowed the company to design beautiful wooden bathroom or kitchen sinks that are stunning conversation pieces as well as functional. If you are looking for a higher-performing surface for food prep, end grain blocks or butcher-block countertops are the way to go. In an end grain product, wood is cut into small pieces and placed on end so the cut portion of the wood is exposed. The wood top is then treated with Grothouse Original Oil, which creates a food-safe environment and nourishes the wood. The chopping block provides an exterior that can withstand years of chopping and cutting and helps keep chef knives sharp. ou can tell a lot about a tree by its trunk. Distinguished rings boldly display age, color variations show where the nutrient-rich sap ran, and the size of the trunk leads our minds to ponder the magnitude and greatness it once had. Wood is vulnerable and raw, and no two pieces are ever the same. That’s what makes wood Steve Revland’s medium of choice. Revland, a craftsman and owner of The Uptown Gallery in Fargo, has been working with wood for 40 years. A lifelong resident of Fargo, Revland never imagined his life would end up here. brain was full of creativity while his left brain seemed to have a void. At age 8, he started playing in a band that performed Norwegian folk songs on WDAY’s “Party Line.” When he finished school in 1974, Revland was thrilled and decided to take a year off to be a musician. During this time, he performed at coffee shops, local pubs and occasionally North Dakota State University. On the side, he dabbled with wood, and one of the first things he made was a birdhouse. That initial birdhouse gradually gave way to his now magnificent handcrafted tables. As Revland graciously showed me his art gallery, I stood in complete awe of his natural ability to work with wood. Each table—dining room, console or coffee—speaks for itself with its natural shape, color and texture. Revland has relationships with wood suppliers all over the world. His focus is on exotic woods such as mango, avocado, monkeypod, redwood, walnut and yellow box burl. Revland creates and designs his art in his wood shop, which he specially designed for functionality and purpose. With just a handful of tools, Revland gets down to business and self-sufficiently constructs a one-of-a kind piece. Each wood slab is unique, and it brings him great joy to watch the process. shaping and applying a simple stain, the table breathes new life. Watching the way his work speaks to him, it’s obvious that he and wood have a deep bond that cannot be replicated. This September will mark the 2-year anniversary of The Uptown Gallery, and Revland feels that he has come full circle. “I have been blessed and been at the right place at the right time,” he says. The Uptown Gallery will celebrate with special musical events open to the public. Revland will perform and is excited to share his past life of musicianship. Revland is having the time of his life. Repurposing a Beautiful Home A Fargo couple restores a historic home into a delightfully new, repurposed creation.

L

ife often unfolds in ways we don’t expect. When Donna and Todd Morse met, she lived in Colorado and worked as a corporate travel manager. Todd owned a mortgage company and resided in Moorhead. Both had experienced the death of a spouse and were raising families alone. They met online through a Christian website. After a year of flying back and forth, they married in the backyard of their Riverview south Moorhead home where they lived for eight years before the city purchased it through a flood buyout. Then Todd spotted a historic Fargo fixer-upper online. Initially seeing the home, Donna reasoned, “He is out of his mind!” That quickly changed when she entered the living room and knew, “I could live here!” “Our new home needed to be loved back to its original state,” claims Donna. “The walls could probably tell stories of love and laughter, but not for many years.” Built in 1926, the 2,400-square-foot historic home includes three bedrooms, INSPIREDHOMEMAGAZINE.COM

five bathrooms, a single attached garage and triple detached garage, complete with an upper “man cave” and office for Todd. The home was originally built for Alfred Arvold, a former director of the NDSU theatre department.

“We look forward to filling our home with happy memories, laughter and love.” ~Todd Morse The couple entrusted their kitchen to Bill Tweten of Western Products. “The challenge for the kitchen was to provide a traffic solution while creating adequate countertop space and appliance placement amidst many jogs and openings to deal with,” Tweten notes. Their kitchen is now functional, repurposed and welcoming. An

antique cupboard belonging to Donna’s grandmother is a focal piece. Original pale butter cabinetry was removed and utilized in the butler’s pantry. Custom rustic cherry cabinetry with upper doors displaying antique seedy glass adds to replicate an old architectural appearance. Shirebrook Cambria quartz countertops were a perfect complementing choice. Modern gourmet appliances were added, as was a bisque, vintage-looking apron front sink. Expansive windows above one sink create sweeping backyard garden views, while a side window has a handy bar area and wine refrigerator. A concealed radiator behind a metal grate inside the sink base allows heat to permeate the space. The cabinet interior above the refrigerator was notched to secure room for the stairway. Just off the entryway, their dining room displays Donna’s grandmother’s table and a Murano glass chandelier and coordinating sconces, which they purchased during their travels. The home’s era kitchen was totally modernized with updated stainless steel appliances, ample countertop space and prep areas, and a functional yet unique two-tier island. Donna’s grandmother’s antique hutch serves as a focal piece in the kitchen. In the same tradition as her mother’s kitchen, Donna added a cheery rooster to oversee the cooking and festivity. Above Donna’s grandmother’s dining table is a beautiful, sparkling chandelier, which was purchased during their travels. Three colorful Murano glass pendant lights suspend from the ceiling above the kitchen island. The original kitchen’s pale butter cabinetry was repurposed and used in the butler’s pantry. A handy sink and counter area create an ideal entertaining prep space. An east-facing bay window spills natural lighting into the dining room. The room is decorated with an antique curio cabinet, matching chandelier and sconce lighting and a green metal cart and side serving table.

A favorite place to retire in the evening is their cozy living room. Behind the fireplace is a cheery sunroom, and an additional television room is located behind the wall of built-in shelving.

DeLanghe-Jones, assisted with the selection of interior paint which were characteristic of the original home’s colors. Beautiful French doors open into several rooms, including the living room. Above the fireplace, a portrait of their blended seven children and six grandchildren spells out the word “FAMILY,” a surprise gift for their parents taken at their Riverview home on the day the couple first looked at the Broadway home. “I love our living room,” Todd explains. “We enjoy a fire every night during the winter.” The staircase, with its original runner, leads to a landing that splits in two directions. A master bedroom, private bath with claw-foot bathtub and steam shower, and a spacious walk-in closet are cleverly designed to maximize space and natural light from original windows. Two additional bedrooms and a bathroom complete the second floor. A stairway leads to grandma’s

attic, where grandkids enjoy toys, dress-up clothes and sleepovers. Todd designed much of the restoration work, including the garage spaces and bonus room, the outdoor gazebo and entertainment area, and the cheery arbors. The exterior porch addition, including architectural pillars and the master bedroom, were designed with the help of architect Craig Helenske. Holland’s nursery assisted with landscape planning, and new garages and a porch addition were built by Jason Strand of Strand Construction. Their basement features a fieldstone fireplace with iron hardware built by a blacksmith in the 1920s at NDSU to create a look of Old Main. The original antique boot scrapers were removed and added to new sidewalks. A new bathroom, wine cellar, storage/utility room and cozy sitting room are slated for the future. Todd designed a detached three-stall garage, complete with arbor detailing, cheerful window boxes, and an upper office area. 10. Aviator chairs from Restoration Hardware, aircraft accent design pieces, and surround-sound TV in a sunny space make this man cave a favorite destination. 11. A charming outdoor garden area utilizes a leftover wall from the remodel, repurposed as a protective divider. Arbors, fountains and garden boxes fulfill Donna’s love of gardening.

Design Thoughts…

T

he challenge for remodeling a home in this era is always the kitchen. Too many windows, too many doorways and a space that doesn’t function well. We removed the wall between the kitchen and back porch. An outside door was closed up to gain an uninterrupted wall for the cooktop and ovens. Cabinetry was extended to the ceiling, very characteristic of early 1900s homes. An eclectic mixture of items was selected including a hidden message board, pull-out trash, tray dividers above the ovens, a narrow pull-out cabinet by the dishwasher, a spice rack over the range top, and a super Lazy Susan. The island uniquely combines two areas. A lower food prep area is stained in Basil then glazed for aging. Bead board door styling and dish storage drawers use a peg system for organization. The second tier works as a dining table. Bun feet and corner legs create a furniture look while adding countertop support. The top is finished in Sandalus Leather, which is actually quartzite but appears like petrified wood. Colorful Murano pendant lights hang overhead. Todd and Donna were fun to work with! They had a vision that may have been difficult for some homeowners to see.

properties and enjoy shared interests and personal hobbies. Todd is working on his pilot’s license, while Donna loves gardening and entertaining. Both enjoy traveling and spending time with family. Todd adds, “I find all the good things on the Internet; a mobile home park, two hotels, this wonderful house, and my lovely wife!” “We believe that God had a hand in bringing us and our families together,” Todd concludes. “There’s a catchy advertisement that says, ‘It’s more than just a house; it’s a place for your life to happen.’ We look forward to filling this home with happy memories, laughter and love.” Four historic homes, including the Morse residence will be open to the public, Sept.1213, 2015. teve Knutson is not a mural artist. He is a traditional paint and canvas artist and art teacher at Discovery Middle School in Fargo. But that’s not what Jon Wanzek hired him to do. Wanzek, who purchased the KRJ building and adjacent apartment building in downtown Fargo in late 2014, wanted to bring some color to downtown and specifically to his buildings. Wanzek has been a fan of Knutson’s work for quite some time and owns a number of his meadowlark pieces. Wanzek says, “I was trying to reidentify the KRJ building and then with something

that had to do with North Dakota. And I started thinking about the state bird and the state flower. Steve’s painting was in my office, so we went from there.” Pretty soon, Knutson was thinking about his birds in a big way—in a massive, 16-footwide-by-60-plus-foot-tall way. “The challenge in the beginning was not knowing how or where to start,” says Knutson. “I’m a brush painter on canvas, so when Jon came to me with this project, I was kind of hesitant for a minute, but then I thought, ‘This is a legacy I get to leave behind.’ So why say no to that?” Knutson’s typical canvas style is often

Knutson admits that though the enormity of the project Wanzek asked him to do was “uncharted territory” as an artist, he was excited to accept the challenge.

very gestural. His birds are traditional but have a hint of pop art. He felt that he needed to rethink that a bit for the massive scale he was now dealing in. “I tried to make [the bird] look like my painting as much as possible, but some of my methods didn’t translate as well when it was 30 feet tall, so I had to pull myself back a bit and change the look of it while still making it look like my art,” notes Knutson. “My whole life I have been obsessed with pop art and abstract expressionism, and when I look at the bird, I see that. When I look at it, with the hard edges, I’m really pleased with it. It has that kind of Roy Lichtenstein appeal to it.” The logistics of creating art this size can be complicated. Many true muralists paint as they go, but Knutson didn’t take that approach. He reached out to a printing company in Arizona to create giant stencils of his drawings. What came back were huge sheets of paper with thousands of pinsized holes that paint could be dabbed into. That allowed Knutson and his assistants, Minnesota State University Moorhead art students Niva Parajuli and Samantha Nielsen, to have an outline to fill in. “It’s a different way to do a mural. It’s a perforated stencil. It’s a little more hightech and maybe not as cost effective to do it, but we had a good budget from Jon, so it has worked great,” Knutson says. For Wanzek, the finished product exceeded his expectations. “It turned out fantastically. It adds a real color and dynamic vibrancy, and the meadowlark really draws your eye to the building. It does something unique downtown and celebrates street art as well as North Dakota’s state bird and flower,” he says. Knutson painted the prairie rose on a nearby apartment building, which Wanzek purchased and renamed the Prairie Rose Lofts. “It’s really a final touch to the redevelopment of that whole block.” For Knutson, this massive project brought unexpected emotions. He says, “I will be honest; it was a very melancholy feeling when I put that last brushstroke on those birds. It was a kind of a high—exciting, something I’d never done before.”

uilt in 1928, the Meadowlark building originally housed Fargo Food Products Company. William F. Kurke served as the building’s original architect and also designed North Dakota’s Capitol building and several buildings on North Dakota State University’s campus. Located in the northwest corner of downtown Fargo, the Meadowlark serves as an anchor of the Cathedral District. Local entrepreneur and businessman Jon Wanzek purchased the building in late 2014. “I see the Cathedral District as an anchor to life in downtown Fargo. Purchasing the building made sense to continue downtown’s trend of creative places and spaces. We believe this mural is a great conversation piece and fits in well with downtown Fargo’s creative vibe,” said Wanzek. This project is one of several Wanzek and his family have helped facilitate in downtown Fargo. Improvements to the St. Mary’s Cathedral parking lot by the Wanzek Family Foundation were completed in the summer of 2014. et adoption is a subject near and dear to my heart for a very furry, loving, four-legged reason. According to www.humanesociety. org, 6 million to 8 million dogs and cats end up in shelters every calendar year, and of those, 75 percent are euthanized. That sobering percentage means that 4 million to 5 million dogs and cats are put down in shelters every single year. After the loss of our family boxer Rupert, my husband and I knew we wanted another dog in our home. We both were interested in adopting a pit bull because we see them as an underdog— wonderful with children, loyal, gentle and grossly misunderstood. INSPIREDHOMEMAGAZINE.COM


“It won’t be long after rescuing an animal that you begin to realize that they were the ones who rescued you.” One day on a rescue site, I saw a big, happy face that I couldn’t resist, so I contacted the agency to get more information. The 18-month-old pit bull was given the name Smiley, for obvious reasons, and he was absolutely beautiful. He had been found thin and alone with a broken tail, sitting on the edge of the highway about 30 miles outside of Oklahoma City, where we now live. Brought to a kill shelter, he was scheduled to be euthanized the next day because of the shelter’s high numbers of his breed. Upon meeting the dog, the shelter knew right away that he would make an excellent family pet and reached out to a rescue agency to place him in a forever home. We received a phone call the day after we contacted the agency. Smiley was ready to meet us. My husband and I brought our 5-year-old and 3-year-old to greet him at a dog park, and it was truly love at first site. His tail may have been broken, but his spirit was anything but. Smiley walked right up to the kids and flopped on his back as if to say, “Rub my belly, and I’m yours!” We brought him home that day, named him Francis Albert, Frank Sinatra’s birth name, and never looked back. He has filled our home with so much love and joy. He always has to be near us, maybe because he’s all too familiar with being alone. He lies at our feet when we read bedtime stories and sleeps in front of my daughter’s bedroom door when she naps. He licks my son’s face until he falls over in a fit of giggles and makes an excellent running partner for my husband and me. After having experienced the complete fulfillment and joy of saving the life of an animal, I can’t imagine not adopting. With literally millions out there just sitting and waiting for someone to love them, I humbly ask you to adopt your next pet. Support your local animal shelters; it really makes a difference. Nyborg was raised in Minot, North Dakota. She has fond memories of her mother, Annabelle, gardening but didn’t fully develop the green thumb until she moved to Fargo and her first apartment. Her neighbor, an elderly woman, was an avid gardener. After watching her neighbor garden day after day, Nyborg’s interests were piqued, and she started to cultivate her gardening knowledge. When Nyborg moved into her home in 1990, the backyard was completely grass. So she picked up a shovel and began to dig. Starting at the front of the backyard, Nyborg planted vegetables, herbs and a few flowers to keep it simple. But as her son grew older and the swing set and trampoline moved out, more gardening moved in. “The garden just kept getting larger. Moving farther back and out to the sides, it eventually became the entire backyard,” says Nyborg. Nyborg’s garden is wondrously creative and whimsical. Colorfully painted chairs from her childhood hang on the deck, wooden benches owned by her father sit throughout the yard, and shoes from her son have become makeshift flower pots. “I can walk through my garden and remember that chair was mom’s, and that bench was dad’s,” says Nyborg. Every piece has a story or memory. When Nyborg gets home from work, she can’t wait to kick off her heels and get in the backyard. “I’ll start reading a book for maybe four minutes, and then all of a sudden, I find myself gardening. I don’t know how to sit still,” she says. This summer, Nyborg showcased her spectacular garden in the Soroptimist Annual Garden Tour. Despite the pouring rain, visitors stayed dry and comfortable under Nyborg’s collection of rummagesale umbrellas. The event was a beautiful tribute to all the hard work she has accomplished. The compounding beauty of buying your squash here is that all funds go to support the renovation of the farmhouse and farm. Second, you will rarely have the chance to see so many beautiful varieties of squash—almost 20—in one place. The bumpy Marina di Chioggia, baking standout Red Kuri, and Uncle David’s Dessert Squash, grown from local Prairie Road Organic seed and one of Gold’s favorites, can be a still-life composition in your kitchen until you decide to cook them. Fourth, squash is easy to cook. “You don’t always need to use the exact variety,” says Gold. “If a recipe calls for a butternut, use acorn, delicata or buttercup.” Gold developed “Know your Veggies” cards through previous work at the North Dakota State University Extension Service—another good resource for gardening, cooking and recipes—to help people get past the initial fear of cooking something big and unwieldy. Abby Gold’s Heirloom Squash Lasagna Adapted from Kitchen Gardeners International. Serves 4–6 as a side dish INGREDIENTS: 12 pounds winter squash (be creative) 1 tablespoon olive oil ½ teaspoon kosher salt 2–3 grinds freshly ground pepper ¼ cup butter 1/3 cup all-purpose flour 4 cups milk, preferably whole (for a richer béchamel, use 1 cup cream to 3 cups milk) 1 pinch nutmeg ¼ teaspoon salt 1 grind freshly ground pepper 2 tablespoons fresh sage or rosemary leaves, thinly sliced 12 no-boil lasagna noodles 2½ cups shredded mozzarella cheese 1/3 cup grated Parmesan cheese (go for freshly grated from real Parmesan)

Stove-top cooking: Peel, seed and cut the squash into 1-inch cubes. Heat a large skillet or rondeau over medium heat. When hot, add oil. Add the squash and stir or toss to coat with oil. Season with salt and pepper. Add ½ cup of water to the skillet; cover and simmer until the squash is tender, about 15–20 minutes.

Wine Time

Oven roasting: Preheat the oven to 375. Wash the outside of the squash; cut in half through the stem end and remove seeds. Brush the cut side with olive oil and season with salt and pepper. Place squash cut-side down on baking pan and bake until soft, about 20 minutes. Transfer the squash to a mixing bowl or food processor and mash. Taste the squash to see if it needs additional seasoning. Melt the butter in a sauce pan over medium heat. Add flour and whisk for one minute; this is your roux to thicken the cream sauce. Gradually whisk in the milk. Bring to a simmer and continue simmering until the sauce starts to thicken, about 5 minutes. Add nutmeg, salt, pepper and fresh herbs and remove from heat. Lightly butter a 13-by-9-by-2 baking dish or casserole. Spread ¾ cup of the sauce over the bottom of the dish. Cover with one layer of lasagna noodles. Spread half of the squash puree over the noodles. Sprinkle with ½ cup of mozzarella.

Repeat the layer: sauce, noodles, squash and mozzarella. Finish by adding a third layer of noodles, cream sauce and Parmesan. Cover with foil and bake for 40 minutes. Remove cover, add remaining mozzarella and bake an additional 10–15 minutes, or until the top is golden. Let the lasagna stand at room temperature for 15 minutes before serving.

A

s the air cools, our appetites change. We go from craving summery gazpacho and anything grilled to wanting something more hearty and transitional. While summer slowly waned, so, too, did my garden’s bounty. When trips to my once teeming garden became less and less, I required more creativity. One of my final hauls was half an armful of carrots and the remaining thyme that had avoided any previous plucking. I knew what was for dinner instantly. The great common denominator throughout the changing seasons is pasta, and that was a night for roasted carrot and thyme ravioli. My fiancÊ and I began making our own fresh pasta six years ago. Because we both have science backgrounds, we began by experimenting with various types of flour, oil, eggs, water and herbs while thinking about application: tender pasta dough for tagliatelle or something more structural for lasagna or short pasta. The pasta dough we use most often requires six egg yolks to two cups of flour. We use it for ravioli and lasagna as it yields silky noodles that are substantial enough to support layers of tangy tomatoes, meat and cheese. The egg yolks give the dough a subtle egg flavor reminiscent of brioche and a dreamy rich-yellow hue. Pasta is the foundation on which many meals are built. Making your own fresh pasta elevates any meal. To complement its tender texture, fresh pasta requires little more than a drizzle of floral olive oil, a squeeze of lemon and a generous toss of fresh herbs. The extra effort you put in will result in tender satisfaction that will provide endless meals to span all seasons. In less than a few pulses in the food processor, you can have a flavorful ravioli filling.

Ravioli dough: INGREDIENTS: 2 cups all-purpose flour (more to dust) 1 teaspoon kosher salt 5–6 egg yolks plus 1 whole egg 2 tablespoons extra virgin olive oil DIRECTIONS: Combine flour and salt; make a well in mixture. Add the eggs and oil into the well and gradually incorporate the wet mixture into the flour with forks or fingers in a circular motion. Once combined, knead for about 6 minutes or until smooth and elastic. Let rest in fridge for 30 minutes. Using a pasta machine is easy. Roll out the dough into a rectangle, and begin by feeding it through the machine’s widest setting. As the dough is pressed out, use your free hand to hold the dough as it is coming through. Run it through the widest setting at least twice, if not three times. Continue this process for the remaining settings. Once you’ve finished, run it through your desired pasta style—fettuccine, spaghetti, etc.

Ravioli filling: INGREDIENTS: 2 pounds carrots, peeled, halved and roasted 3 cloves garlic, roughly chopped 3 tablespoons extra virgin olive oil ½ teaspoon salt ½ teaspoon freshly ground pepper 1 egg ¼ cup Swiss cheese, or whatever cheeses you may have 6-7 sprigs of fresh thyme If you, or someone you know, is in crisis, call 1-800-273-TALK (8255)

I purchased my pasta machine at Creative Kitchen in Fargo for an affordable $30, and it is easy to use! After laying out your bottom layer of dough, dollop about 1 tablespoon of filling.

Take the second half of the rolled-out dough and place on top. Seal edges and between each ravioli with an egg wash.

We like to cut the shapes free form, but you can use a ravioli cutter or small biscuit cutter for a more uniform shape.

DIRECTIONS: Preheat the oven to 425 degrees. Combine carrots, garlic, olive oil, salt and pepper on a sheet pan. Roast until fork tender, about 30 minutes. Once cooled, place in a food processor with egg, cheese and thyme. Pulse to combine. I added extra virgin olive oil to reach the consistency I like. You may also add whole milk or ricotta cheese. Dollop spoonfuls of filling onto prepared pasta dough and cover with remaining rolled-out dough. Seal with water and egg wash. Use a ravioli cutter or knife to make your desired ravioli shape. Boil in salted water for about 90 seconds or fry gently in butter. Drizzle with extra virgin olive oil and a shake of salt and pepper. Enjoy.

the grown-ups in our lives? What about our teenage children or our aging parents? All the studies show that touch is an integral piece of human development in babies, but why do we so often stop it as they begin to grow? What if we continued to occasionally reach out to those around us with a comforting back pat, hand hold or hug? What if we were intentional about eye contact with those we are in conversation with? Too often, we now have conversations with someone in front of us while we are both scrolling on our phones. Today, texting often takes the place of face-toface interaction. I am guilty of texting my son when we are both in the same house. Sometimes it’s just easier than getting up and finding him in another room, and I know I am not the only one doing this. Our ability to relate to other human beings is evolving quickly. It’s moving from a physical and verbal interaction to a written, jargon-filled communication style. Touch is being abandoned in favor of 140 characters. Eye contact is giving way to emojis. There’s no doubt that communication has been altered forever with the invention of the smartphone, and in many cases, it has been a fabulous thing, but don’t forget that the aspects of being human—talking in person, physical contact, intentional time spent with another—are still important. In fact, today, in our insulated world of technology, they may be more important than ever before. When I look into my dog’s eyes while I am petting her, I see absolute contentment. She understands that she is important to me, that I value her and that I want her to feel safe and secure. When was the last time you did that for a person you loved? We are heading back into the busy school time of year. Schedules, demands on time and too many activities can easily consume us. Let me remind you to take a moment every day with the people who matter most in your life.
