Dayna Del Val Del Val is the executive director of The Arts Partnership, where she writes a monthly column on the arts for The Forum, manages 2 staff and an active board, and works to support the mission of cultivating the arts in our community through a variety of ways. In other words, she wears 27 hats! She is also a professional actor and writer. She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks.

Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

JoAnn Ohma Ohma has always had a passion for words and how they work together. She loves working behind the scenes at Inspired Home, honing and polishing each story into what you read on the page, all while making sure the author’s voice shines through.

Grace Estes Estes has always found writing compelling. Whether it is as simple as writing a card or writing for a local paper, words have great impact on others. She resides in Grand Forks with her husband and spends her free time cooking and hopes to start gardening at the local co-op this summer. Shauna Fellman A small town girl at heart, Fellman states, “My dream is to raise our kids in the country with days consumed by exploration.” Until then, Fellman lives in West Fargo with her husband John, and their two young boys. he way color impacts our lives can be rather subtle, or it can hit us like the proverbial ton of bricks. My daughter Ashley and her husband, Brett, recently built a new home, and a beautiful new home it is — including the finished, painted walls that “were” a pleasant, unobtrusive shade of “safe.” My daughter felt something was missing. She really could not define what that “something” was exactly, but she was determined to figure it out. This perilous situation meant one thing — a trip to her local paint store. She had made up her mind. She was going to paint her living room area walls a soft and muted robins-egg blue while her husband was away on a business trip — it was settled. The entire painting project, mingled with caring for their two young children, took nearly seven hours. I received her excited phone call with the news she had completed her project, tainted with the sickening realization she was already having doubts about the color she had chosen. The room was giving her a cooler feel that she had not anticipated — the shade of her dreams was definitely too blue. It did not “feel” right. After some emotional “regrouping,” a quick and determined trip back to the paint store resulted in expert advice, a new tint added with green undertones and a beautiful living room comfortably bathed in robins-egg blue. There you have it. Color affects us daily, whether it is a calming shade in a dentist’s office to vibrant and engaging colors in a kindergarten classroom. Color has the power to involve, relax, entice, motivate and to clearly remind us of its importance in our daily lives. Enjoy the Color Issue!

DIY advice for home projects A lesson for us all

he key to effective do-it-yourself projects is the appropriate ratio of self-confidence to self-awareness. Example: I have an unlimited well of creativity (self-confidence) along with a 2-year-old’s ability to follow detailed instructions (selfawareness.) This year, I realized that even though I’m now closer to 100 years old than I am to 2 years old, I could probably squeeze one more home exterior paint job out of this tired body—while I still have the ripped dad bod to do it. We have every possible power tool known to man. This exterior paint job was going to call for some serious power tool additions. Any job worth doing is worth doing right, and everyone

knows a paint job is only as good as the prep work and the quality of equipment and materials used to complete the project. Since we no longer drive cars that drip oil on the garage floor and the allure of washing the car in the driveway passed years ago, I’ve never felt the need to own a power washer—until now. If I was going to adequately prepare the cedar siding for a fresh coat of paint, I would need to remove every speck of grime and peeling paint. And that wasn’t going to happen with a bucket of sudsy water and a wire brush. It was going to require the most powerful pressure washer with the highest PSI rating known to man. A two-story colonial has major surface area and lots of big windows with tall, narrow shutters. To reach every nook and cranny to appropriately paint and seal this 20-year-old cedar siding requires a paint sprayer. And not just any paint sprayer—the most powerful paint sprayer available to man. A steep roofline and soaring peaks characterize two-story colonials. Painting peaks that high does not require a ladder; it requires a hydraulic lift. And not just any hydraulic lift—the most powerful hydraulic lift known to man. First stop: home improvement store. The only thing I knew about pressure washers was that I wanted the biggest and most powerful. There were most certainly specks of paint on our house just waiting to flake off in the next year or two, leaving exposed wood and mocking my ability to properly prepare the surface for paint. I wanted to blast those paint flecks into the neighbor’s yard. I decided the one with the highest PSI, red circles with slashes, yellow exclamation points and skull and crossbones would probably do. Same with paint sprayers. The one with the plastic jar on the bottom that screwed

onto the power unit would not be up to the task of painting this house. I needed a sprayer powered by an air compressor with a 50-foot hose that stretched back to a 5-gallon bucket of top-quality paint. I picked up a 5-gallon bucket of oil-based primer and a 5-gallon bucket of white satinfinish paint and was on my way. First thing on my list: pressure-wash every speck of grime and peeling paint off the house and shutters. I got everything hooked up, put a strong cleaning solution in the detergent intake and fired up the gasoline-powered engine. I thought PSI rating had something to do with the velocity of water flowing through the nozzle. It really stands for “peels shutters instantly,” as the moment the spray jet touched the edge of the shutter, it was ripped off the wall and sent flying into the street like a giant boomerang. Great—only 16 more windows to go. I’d never actually had the opportunity to operate a hydraulic lift. I thought a little practice operating the controls from the ground rather than on the platform might be a good idea. Self-awareness prevailed. I loaded the paint buckets, the sprayer head and power unit onto the platform and turned on the power to the lift. The cool thing about the most powerful hydraulic lift available to the nonprofessional public is that it has a variable-speed lift and can rise to the highest point really quickly. They can raise things so quickly that when you realize you’re about to hit the peak of the house and decide to stop, the stop is so quick that the paint bucket and all the equipment go skidding off under the platform rail and crash to the ground. Maybe a little less self-confidence and a little more self-awareness might have been in order. A week later, the house looked great, and daily mowing of the lawn had started to dissipate some of the white paint spatter. It would have been much more cost effective to bring in the pros to do the paint job, but the sense of accomplishment I received from squeezing one more paint job out of this tired old dad bod put a couple more check marks in the self-confidence column—maybe one or two in the selfawareness column. Here’s hoping you find your perfect balance in summer home improvement projects.

t long last, summer has arrived! As the warm breeze from the lake mixes with the scent of freshly mowed lawns, the glow of the July sun breathes life into everything it touches. Summer is a wonderful time to create an equally fresh and bright living space in your home, and there is no greater inspiration for such a space than Mother Nature herself. Color can transform a room instantly. Giving your living area a fresh coat of paint is a fast and easy way to revamp your home in a big way. Lake cottages and summer homes are the perfect places to get creative and play with different color schemes. I spoke with Andrea Magno, color and design expert for Benjamin Moore. Magno, who is well versed in the hues and shades of the ever-changing paint palette, encourages people to look outside their homes for their inspiration. “At the beach, a handful of shells or beach glass has colors that can form the color palette for an entire home,” she says. “Likewise, in the mountains, the lush foliage may inspire a palette of greens ranging from pale to deep, with room for accents that bring in personality.” That is what inspired Benjamin’s Moore’s color team to create stunning new colors with charming names such as Healing Aloe, Ocean Air, White Sand, Fog Mist and Chantilly Lace. These colors are not only easy on the eyes but render themselves timeless. The soft greens, breezy blues and neutrals often evoke a sense of calm and peace. Magno tells clients not to be too fearful of the colors they choose for their homes but rather to reflect on what it is that makes them happy and fits their spaces. She continues, “I encourage people to forget any of the color ‘rules’ they’ve heard and trust their instincts. There is more to be said for selecting colors that

iming is everything. For planet Earth, that was certainly true. Several billion years ago, the Milky Way galaxy was nothing but a swirling cloud of gas and dust. This material was disturbed, likely by a nearby exploding star, which caused the cloud of dust to collapse as gravity pulled everything together, forming a solar nebula that eventually formed our sun. Over time, the remaining molten gas and fire cooled, forming the planets as we know them, including Earth. Venus was too hot, Mars was too cold, but Earth was “just right.” The Goldilocks principle states that something must fall between certain margins, as opposed to reaching extremes. To support life, a planet must not be too far nor too close to a star. Being in the right place at the right time gave Earth water, habitat and beautiful granite. An igneous rock, granite is a major part of the continental crust, making it a signature rock of Earth. Whether buried under sedimentary rock or exposed due to weathering of softer rock that once lay above it, its color, veining and texture tell an important story. Donald P. Schwert, North Dakota State University professor emeritus of geology in the department of geosciences, understands what it takes to produce such a masterpiece. “Each rock has its own amazing story, and we see an amazing history of earth processes associated with each slab,” says Schwert. By definition, granite is made up of 25 percent quartz, 65 percent feldspar, and mica, resulting in a peppered coloring of pink, gray and white. Many other variations in natural stone occur, such as brilliant blues, merlot maroons and verdant greens. Some may be fossil laden while others evoke movement with fingering veins of color. 12,000 years ago exposed the top of a granite dome in Minnesota and South Dakota where Coldspring quarries are located. “The color of the granite varies from quarry to quarry. It even varies within the quarry. In our South Dakota quarry, we see a lot of variation, lots of red and brown with a wavelike motion. Or it can be entirely consistent color-wise,” adds Kron. When designing a kitchen or bathroom, Kron recommends starting by choosing natural stone. “We get a lot of people trying to find a perfect stone to match their home. But that is working backwards,” he says. “Start first by picking stone, and that can serve as a starting point and foundation

hat happens when a couple combines creative, social and visual with analytical, active and young at heart? An ingenious lake home design that’s perfect for them. When Chris and Linda Birmingham realized they were outgrowing their 735-square-foot cabin, they began hunting for a lake lot or larger cabin. “There was a small, lonely little shed on a lot,” Linda remembers. “For years, we drove by it and commented on what a great lot that would be to build on.” One Sunday morning, they saw an ad in the newspaper: “Lot for sale on Big Cormorant.” After talking to the owner, directions led them to the same lonely shed. “I guess it was meant to be,” Chris adds.

“Through my decorating business, I’ve worked in homes designed by Jay Pepple and fell in love with them all,” Linda says. “I’ve referred friends and clients to him and vowed that someday he’d design a home for us.” A lakeside setback and roadside right-ofway restriction on their shallow lot on Big Cormorant prompted realigning the south wing of the structure 15 degrees toward the lake. “This created great opportunities for Linda to emphasize this gentle bias with dramatic linear and directional tile and carpet applications throughout the interior of the house,” Pepple states. “With the exception of one interior powder room and the laundry-storeroom behind the garage, every room on both levels provides vivid lake views.” The three-bedroom, four-bath including the bonus room above the garage, rounds out at 3,548 square feet. The full two-story central structure is flanked by story-anda-half wings on each side. Large circular windows on both the east and west sides allow sunlight to travel through the interior. Building on the trapezoid-shaped lot began in June 2013 and was completed in February 2014. “Both the exterior entrance canopy supported by glulam columns and the cantilevered upper-level deck facing Big Linda and Chris love their whimsical sunroom, which features easy-care brown wicker furniture, bold lime green cushions and sunny orange and yellow splashes of color. Views from the second-floor mezzanine look down upon the living room fireplace with batten detailing. Calming blues and bold orange accents throughout the main level liven easy-maintenance beige slip-covered furniture.

Cormorant are clad underneath with clear cedar accents,” contractor Howard Lomsdal explains. “These complement maple handrails, vertical clear maple board-andbatten details above the fireplace and glulam collar ties. A west-side cantilevered deck also serves as a pleasant awning to block late afternoon sunshine.” Pepple notes that, the glulam collar ties and black steel kingposts mitigate the volume of this vaulted two-story space, as does the mezzanine above that connects the main floor to the upper-level bedrooms on each side. Nighttime ambient uplighting casts a magnificent lakeside exterior presence. An upper-level deck off the mezzanine and a lower-level patio off the living room complement peaked rooflines and architecturally interesting angles. Roadside views show a gray and dusty blue vertical corrugated steel two-story central structure flanked by story-and-a-half wings on each side. Varied window shapes and sizes and peaked roofs enhance the home’s inviting appearance. Unique garage eclipse lighting welcomes guests.

“The style of our home is what I would call contemporary with a splash of coastal,” Linda adds. “You won’t find whales, starfish or mermaids, but you’ll see waterskies and nautical touches.” “I chose a neutral beige palette that would allow me to incorporate calming blues and warm orange accents,” Linda recollects. “The dusty-blue vertical corrugated steel on the middle section of the house with the round white-trimmed windows was just what the structure needed to fit the lake setting.” Other favorite architectural details include the fireplace, interesting angles,

ambient uplighting, the upper deck, and great views from both sides of the home. When not enjoying their lake home, Linda is an interior decorator and one-fifth owner of DesigningWomen2 of Fargo, and Chris is an investment advisor and partner with Great Plains Financial in Fargo. Both grew up making memories at the lake. When their children, Paige and Grant, were young, they enjoyed camping at Rose Haven campground. “Our family enjoys barbecuing, skiing, wake boarding, pontoon rides and laughter with friends,” Linda concludes. “We love our home’s casual feel with its great flow INSPIREDHOMEMAGAZINE.COM

L

inda provided several of the core details that define this house. Without her requests and insights, this would be a different and much diminished structure. General contractor Howard Lomsdal came to this project with many years of experience building in Minneapolis. Builders face sophisticated daily challenges, and in our years of working together in Becker and Otter Tail counties, Howard has never met a design challenge he couldn’t master. His finely tuned sense of proportion, balance and design was invaluable in the planning and construction of this home. It takes a big group of people to make this work— enthusiastic homeowners, an architect or a designer, and an excellent builder with all the suppliers and subcontractors he brings that contribute their expertise. I

n 2002, Angie Kuznia designed a home for her family. From that point, she was hooked. She built another home two years later. Then in 2005, she founded Titan Homes, Inc., becoming the first area woman owner and president of a building company. “I have always had a strong interest in home design,” Angie admits. “Our initial model home sold immediately. We offered a different approach that included white trim and doors, mudrooms with lockers and a wonderfully functional design. When I started, the housing market was slowing down, but we were growing. There were also no women builders owning and managing their own construction company in the area, so I brought a woman’s perspective.”

She was often asked, “How will you compete in this industry?” Her answer was simple: “I will be open, honest and be myself, ask questions and continue learning and developing.” By 2013, her husband, Jayson, left an engineering career and came on board full time to keep up with the company’s growth. He coordinates each build from groundbreaking to the time of the final walk through and manages the subcontractors as well. They built 30 customized homes in 2014, which necessitated adding two designers to their staff to assist clients. “The key to our company’s success is largely referrals from previous clients,” Angie notes. “We’ve worked hard to build a great reputation for quality and trust within our community. Most of our homes are completed in 90 to 120 days.” In 2012, Angie received her real estate license to gain more market knowledge. The company moved into a new office space in 2014. Her role as a busy owner and president of a company requires a delicate balance between family, leisure time and career. “Jayson and I have always had a familyfirst philosophy,” Angie concludes. “Time management is the key factor. Our kids often help out as well. It is good to instill a good work ethic into their minds at a young age. I want to teach them that anything is possible if you set your mind to it. magine that one morning you wake up, and all your things are gone. Everything that is familiar to you has changed. Your surroundings are different, and you don’t even know where you are. This is essentially what it is like for your family pet when you move. We cannot explain to our furry family members that we will be moving into a new home. We can, however, do things during the move to bring comfort to our pets and make the moving process far less stressful. First and foremost, plan ahead. It seems obvious enough, but often pets get put on the back burner during a busy move. Dr. Amy Anderson of West Fargo Animal Hospital has some advice for those who are getting ready to pack up the U-Haul. Certain things need to be done in advance. She recommends having your pet microchipped prior to the move. If you’re moving to a new city, establish care with a local veterinarian so that if INSPIREDHOMEMAGAZINE.COM

a medical need arises, your pet gets care quickly. She also recommends doing a sweep of the new home, checking for any harmful substances left behind by the previous owners. Things like mouse poison or toxic plants should be removed prior to bringing your pet into the new space. It is also important to observe signs that your pet may be stressed or anxious. Anderson explains, “Stressed pets may not eat as well as they normally do or refuse to eat altogether. In cats, this can be a problem if it goes on for more than three to five days. They also might have urine or stool accidents in the house due to disruption in routine. Some pets may even shake or shiver and hide in unusual places. There are also a few pets that will experience vomiting or diarrhea due to stress.” If your pets display any of these behaviors, keep in mind that there are things you can do to alleviate their anxiety. Anderson suggests putting a few of their favorite toys or blankets in a portable kennel. The comforting smell of home combined with their small “safe place” will give them time to decompress. In addition, there are some natural remedies Anderson says are worth trying. “There are some over-the-counter pheromone products that can be used to help alleviate stress in dogs and cats,” she says. “A more holistic way to calm pets is to use pure therapeuticgrade lavender oil that does not contain any chemicals in a diffuser, or give your pet a massage with just a couple drops on your hands.” The day of the move, board your pet, or have your pet stay with a friend. Anderson warns that moving day is a common time for a pet to become lost. Between the distracted owners and the frequent opening and closing of doors, it can be easy for a dog or cat to run out amid the INSPIREDHOMEMAGAZINE.COM

Anderson explains, “It is important to keep their schedule the same—feeding, exercise, bedtime, etc. Work on training exercises that are familiar to them. Do things that your pet enjoys—going for long walks, playing ball or swimming.” When all is said and done, simply be there. Offer your pet love and attention, and be sensitive to the fact that this can be a stressful time for your furry friends. Allow them to explore and enjoy their surroundings, and in no time, it will be their home sweet home.

ur visit to Charleston, South Carolina, the first week in May was a beautiful time to experience gardens bursting with blooms of jasmine, roses and oleander and a perfect setting to celebrate our 10th wedding anniversary. Charleston in May is like an exquisite young bride that graciously presents to its guests a veil of polished beauty and embellished ornamentation. Charleston, founded in 1670 as Charles Towne in honor of King Charles II of England, has rich historical value, including its well-preserved architecture. The Middleton Place plantation, built in 1755 in Dorchester County, is a must-see when coming to Charleston. Considered America’s oldest landscaped gardens, the strong hanging live oak branches form a canopy over the pathways as you enter the stately grounds. The breath-taking gardens include azaleas, magnolias, roses and a reflection pool that is home to two stately swans. Every inch brings you farther into a landscape of symmetry and beauty. Located on the Ashley River just north of Charleston, the plantation was owned by

four generations of Middletons, who were among the founding fathers of Carolina. The plantation is a testimony to restoration, historic preservation and early landscape design in America. Historical preservation is prevalent everywhere. On my walking tour through the historic district of Charleston, the sidewalks of pristine neighborhoods and narrow streets offered a glimpse of the picturesque gardens of the 18th and 19th centuries. Set hidden behind the architectural beauty of ornamental ironwork, wrought-iron gates, fine doorways, elegant columns, old walls and distinctive piazzas were endless arrays of colorful and sweet-scented plant life. A member of Charleston’s aristocracy, Susan Pringle Frost, born in 1873, played a highly visible role in the preservation and refinement of Charleston’s peninsula. She quietly entered the real estate business by buying up significant sections of the southeastern peninsula and followed her instincts rooted deeply in preservation. Ultimately, Frost was the original force in preserving the old Charleston that she treasured and remembered as a child. Frost first embarked on her dream by restoring a severely deteriorated section of Tradd Street. Brick by brick, she renewed it to its original beauty. Our sightseeing outing began on Tradd Street, where we rode our bicycles through the narrow roadways, stopping every few seconds to admire the splendor and grandeur of the old brick dwellings adorned with wood shutters, gas lanterns and flower boxes. Another color-filled restored area is Rainbow Row. The quaint, colorful houses bring every kind of artist to draw, paint or photograph the amazing display of effulgence. In the early 1920s, the Charleston city council proposed to demolish this quarter to redevelop, but Frost’s keen eye for potential of property brought it back from extinction. Today, it is one of the most prominent, beautiful and identifiable landmarks of the city. To continue Frost’s dedication to preserving the city, the Charleston Preservation Society, located on King Street, has more than 1,000 members who meet monthly to safeguard and ensure that neighborhoods are maintained and protected. ocated on the quaint streets of north Fargo, this charming yard adorned with a medley of flowers, pots and cascading trees is a perfect garden setting. It might seem like a farmers market filled with grape vines, raspberries, blueberries, lemon thyme, cabbage, mint and more, but for the Jeffreys, it’s just their backyard. Greg and Stella Jeffrey moved into their home in 2001. The place was in good shape and had a great backyard. They were instantly inspired by the well-groomed landscaping and a winding grape vine wrapped around the trellis. Prior to owning this home, the Jeffreys had very little gardening experience, but they felt something that day, and the gardening seed got planted in their minds. The first few years were trial and error, learning what grows best, how much shade certain plants need and how to work with the soil. Stella quickly found that soil was key. “I was growing strawberries, but they were such babies, and I wanted to have nice big ones,” says Stella. She discovered that

the soil needed to be more acidic, so she started collecting pine leaves. “Sometimes I would offer to rake a neighbor’s yard just to get more pine leaves.” The Jeffreys began to understand how pine leaves, peat moss, old potting soil and compost affected the ground underneath, and the garden bloomed. Greg, who belongs to the North Dakota Grape and Wine Association, has taught himself how to grow and care for grape vines. “Not many people think of North Dakota when they hear about wine, but it’s beginning to take off,” says Greg. The most challenging aspect of grape growing is pruning, which takes place once a year to create new growth. The first time Greg pruned the grape vine, he thought he killed it. “Taking away 90 percent of the vine seemed wrong, but it worked out in the end.” The Jeffreys had the pleasure of showcasing their garden last summer during the Soroptimist Annual Garden Tour. They were amazed at the turnout and enjoyed the feedback and support from the attendees. Their garden is both beautiful and functional. The Jeffreys grow their own produce and take pride in their minimalist way of living. “To be able to eat and drink what your hands have planted and cared for is a beautiful way of living,” says Stella. “An added bonus is it saves money and limits our consumption of canned food.” When the Jeffreys are not gardening, they often travel for work and various organizations. Traveling so often has made both come to realize their desire for home. After seeing their garden, it is not hard to see where that desire was created. s Ken and Sherry Mickels kindly invited me into their home, I was immediately refreshed. Calm, blue walls and clean, white furnishings created a peaceful ambiance. As I made my way into the light-filled living room, I was greeted by large patio windows, their regal cat Chloe and a glimpse into their garden—a true work of art.

Ken and Sherry, of Fargo, have lived and breathed gardening nearly their entire lives. Both grew up with hard-working, selfsufficient families who relied heavily on gardening. While dad went to work, mom and the kids were responsible for helping with the garden. “Growing corn, tomatoes, canning vegetables—it was a way to feed the family,” says Ken. may have been more of a necessity than it is today, the Mickelses have fond memories and enjoyed being involved. When the Mickelses built their home in 1997, the backyard was a complete mess. With the recent flooding of the Red River and their yard located in the middle of the neighborhood, the soil needed some serious attention. Over the next five years, the Mickelses diligently worked and created a strong soil, composed of peat moss, fertilizer and top soil to make a solid foundation. With the foundation set, the garden took off. Flowers of all colors, shapes and sizes flourished, and trees grew tall. Off in the far corner of the yard stands the prized possession, the gazebo. Hand built and designed by Ken and Sherry themselves, this enclosed gazebo is one of a kind. Inside you’ll find a crystal chandelier, built-in cabinets, cushioned benches, surround sound and heating for those chilly winter months—a true backyard getaway. The Mickelses graciously showcased their garden in the 2014 Soroptimist Annual Garden Tour, a kind recognition for all of their efforts. “Last summer was the best our garden has ever looked. Everything seemed to open up just a few days before the tour. Someone was looking down on us,” says Sherry. Unfortunately, this past winter was hard on the garden, and they lost 75 percent of it due to low snow cover. One of the toughest losses was the peonies, which were handed down from family nearly 70 years ago. Amidst losing years of planting, maintenance and day-to-day dedication, the Mickelses have kept their heads high and aren’t giving up. “A gardener’s work is never done, and you can’t give up,” says Sherry. In the meantime, they are focusing their efforts this summer on the front yard while they collaborate on how to move forward from the winter loss. Though the Mickelses have experienced both triumphs and failures in gardening, their passion for the outdoors never ceases. Sherry still walks through the garden every day, checking to see what’s opening, while Ken stays busy finishing the garage he built. One thing is for sure: The Mickelses have a natural ability in gardening, and they aren’t stopping any time soon. INSPIREDHOMEMAGAZINE.COM

his isn’t the first time I have recommended a cheese board in these pages, but the repeat seems timely—if lazy. Summer entertaining should be easy to make and easy to eat, whether on a boat or the back porch. Why sweat it? My first stop for cheese is Luna. Not only is Peter Kelly a personal favorite cheesemonger, his cheese selection is topnotch, too. So with the understanding that this is a subjective review, let’s talk cheese. There are multiple benefits to visiting Luna’s cheese case: Cheese cut to order off a wheel or large brick is generally more carefully produced, will keep longer and age more evenly. As Kelly counsels, “If it’s nicer to begin with, it wears better, like china.” You only need a quarter pound? He can cut exactly that. Overwhelmed by the

options? Ask for a sample and expand your dairy vocabulary. With a few details about your event or guests, you will be sure to take home winners. Another advantage is the well-curated selection with regional beauties like Alemar’s Bent River Camembert, Widmer’s eight-year aged cheddar, and Prairie Breeze cheddar from Iowa’s Milton Cellars. Other artisanal standouts are available seasonally. As I write this, they have the lovely Harbison from Vermont—Peter calls it “nice and mushroomy”—or the washed rind Grayson from a small dairy in Virginia. If this all sounds too cheese-nerdy, they stock and sell classics like Stilton, OssauIraty (a Basque sheep’s milk cheese), Roomano Pradera (an extra-aged Dutch example), and always some version of the

buttery French triple creams, whether Saint André or Délice de Bourgogne. Their Spanish assortment is one of Kelly’s go-to samples. “I love exposing people to these cheeses. It’s a gateway to other milks, like sheep or goat. Once you try sheep- or goatmilk cheeses, it gets really interesting,” he says. Luna is the only local source of charcuterie from Minneapolis foodie favorite Red Table. Big Chet, a fennel-spiked round of salami, would pair with anything Italianate. The Royal is a seriously pretty ham just waiting for a baguette and wedge of creamy cheese. I would eat it with some Hope Creamery butter, available for purchase as well. Peter Kelly’s Cheese Board: Cheeses: Offer at least three different textures and taste profiles • Hard: Italian aged sheep’s milk Pecorino Pepato, cow’s milk Piave Vecchio, or Roomano Pradera, for example • Soft or blue: French triple creams, double creams like Brie and Camembert, Italian Taleggio; blues like St. Pete’s Blue from Faribault, Stilton, or Dolce Latte Gorgonzola ( a milder, very creamy blue) • Semi-hard to semi-soft: This encompasses the wide world of cheddars, many Alpine cheeses like Gruyère and Comte Saint Antoine, the Basque Ossau-Iraty, and many Spanish cheeses (Manchego, Idiazabal, San Simon and Mahon) • Conveyance: Fresh bread and any assortment of crackers: Kelly and I are partial to Dr. Bop’s Flaxseed Crackers—but we own the company.

French 75

INGREDIENTS French 75 a refreshing cocktail made from gin, Champagne, lemon juice, and sugar is also called a 75 Cocktail, or in French, Soixante Quinze. The drink originates from the New York Bar in Paris circa 1915. Ingredients: 2 oz. Champagne, 1/2 oz. Lemon juice, 1 oz. Gin, 2 Dashes Simple syrup Preparation: Combine gin, syrup, and lemon juice in a cocktail shaker filled with ice. Shake vigorously and strain into an iced champagne glass. Top up with Champagne. Stir gently. Drinkware: Champagne flute Basic Simple Syrup 1 c. sugar 1 c. water DIRECTIONS In a small saucepan, bring sugar and water to a boil; simmer until the sugar is dissolved, 3 minutes. Remove from the heat and let cool completely.

Sides: • Fresh seasonal fruit: For midsummer, stone fruit is a good pick. • Apples and pears can usually be relied upon year-round. • Melons, especially small ones from the farmers market or garden, can be heavenly with cheese and charcuterie. • Grapes, though not yet in season, are difficult to overlook because of the sculptural interest they add to a plate. • Dried fruit: Figs, apricots, and cherries are safe, cheese-friendly bets. • Olives and pickles: I would never deny myself something brined or pickled. Gilding the lily: Nuts, brittles and condiments • Luna roasts Marcona almonds in olive oil and sea salt to add to cheese plates in the restaurant. • Quince paste is a classic accompaniment to Spanish cheeses. • Other condiments—chutneys, mustards and jellies—are not on Kelly’s essential list but can be a nice addition.

Freezer Cheats By ANDREA BAUMGARDNER

I

learned to cook in the midst of the local and artisanal food movement in California, very near ground zero—San Francisco in the 1990s. Since then, my mantra has been simple, fresh ingredients, grown as near to the kitchen as possible. As of two years ago, I no longer work in a restaurant. While this has been odd enough and with many awkward moments, the transition to shopping in grocery stores and cooking on an electric stove—which alerts the smoke detector if a pan is hot enough to properly sear—has been another education. It is infinitely easier to cook in a restaurant than to come home from work and get food on the table within an hour. 78 | JULY/AUGUST 2015

Having previously underestimated home cooking—how hard can it be to cook for three if I am used to cooking for 40?—I am beginning to recognize a place for planning, prep lists and bulk food buying. I also am learning the importance of a freezer. One of my freezer cheats is frozen peas. They aren’t always a good move, but when they are, nothing is easier, and they taste almost like fresh. Also, frozen peas are available year-round, whereas fresh shell peas rarely make it to local grocery stores for more than a few weeks. Garden shell peas don’t enjoy much longer of a season. A package of frozen peas defrosts in less than five minutes in a colander. If I am

making pasta, risotto or fried rice—a great option for the last-minute cook, although my husband routinely advises me that not every leftover works in a wok—a handful of peas at the end adds color and mild flavor. Peas can be puréed with nuts and basil and made into a tasty hybrid of hummus and pesto. I have made pancake batters out of them; the green can be a little weird, but they pair wonderfully with smoked trout or bacon. I also like this adaptation of my 105-year-old grandma’s pea salad. She insists on canned peas, for which I am not yet prepared, and Velveeta. Mine lacks her verve, but it reminds me of spring and a garden, even if it comes out of the freezer section. Spring Pea Salad Serves 4–6 as a side dish INGREDIENTS: 1 package frozen peas (8–12 ounces) 1 bunch asparagus, woody ends broken or cut off 1 teaspoon kosher or sea salt 2 tablespoons buttermilk ½ lemon, juiced and zested ¼ cup plain Greek yogurt or sour cream 1 tablespoon green onions, thinly sliced Sea salt 2 turns freshly ground pepper 2 cups tender salad greens, washed and gently dried ½ cup crumbled goat cheese (feta works, too) DIRECTIONS To defrost the peas, pour into a colander and place under running cool water for a few minutes. Drain well and set aside. Cut the asparagus into 2-inch lengths on the diagonal. Blanch the asparagus: Have a bowl of ice water ready. Bring at least 2 quarts of water to a boil in a 4-quart pot. Add a teaspoon of salt and maintain a rolling boil. Add the asparagus to the pot and let boil for 30 seconds. With a slotted spoon or spider, remove the asparagus and place in the ice water. Once the asparagus is as cold as the water, drain in a colander and set aside. Whisk the buttermilk, lemon zest and juice and yogurt together. Season with salt and pepper. Before serving, assemble the salad: place the greens on a platter. Top with asparagus, peas and crumbled goat cheese. Drizzle with dressing. All of the components can be made up to two days in advance and kept in the refrigerator.

R

aised in a country setting, Claire and Carol Rauser appreciate historical beauty which defines the design and architecture of their family home. Rauser, while traveling in North Carolina, met a French provincial furniture enthusiast who educated him on period styles -particularly the 18th Century French Louis XV (1723-1774). O

ne of my favorite things about summer is the length of the days. I delight in getting into bed while it’s still light out and reading until I fall asleep. I have always loved this. In fact, I have distinct memories from when I was very young of climbing into bed, fresh from a bath, to crisp, cool sheets and late evening light filtering through my pale-pink Swiss polka-dot curtains. I love to know that I can be on my bike until nearly 10 o’clock in the evening and still get home before complete darkness sets in. I relish watching the lengthening shadows of our backyard wilderness grow as evening progresses. When I wake up to a fully lit bedroom at 5:30 in the morning, I rarely bemoan that I am up. Rather, I mostly embrace the sunlight, which still filters into my bedroom through those pale-pink Swiss polka-dot curtains, and I often find myself up, looking for the perfect place to read before my day really has to get going. The extended color that these long days of light provides is not wasted on me. Recently, I was on my bike at 6:30 in the morning, and I was stunned at how different everything looked through that

early morning lens. Sunlight reflected off car windows at a different angle. Tiny rainbows were reflected in little puddles from the previous night’s rain. Flowers were just waking up and showing off their best daytime color underneath the morning’s dew. It was a stunning bike ride, and I was so grateful that I was up and partaking in it. Weekends feel longer during the summer because there’s so much more daylight to work and play in. Working until 5 doesn’t seem as burdensome because there are many hours after dinner to enjoy the light. Possibility and promise abound when it gets light earlier and stays light longer. This summer, be sure to take some time to appreciate the extension of your days with all this light. I have often thought that if we could just extend the light longer into the fall and bring it earlier in the spring, winter wouldn’t be so difficult. Since we can’t control Mother Nature or Father Time, do take some control of how you are spending these glorious days and store those memories up for the short, dark days of winter. They aren’t that far away, but for today, bask in the long, sunlit days of summer. INSPIREDHOMEMAGAZINE.COM
