At the front of this new wave are producers showing just how far English wine has come. Nyetimber’s Blanc de Blancs 2016 is a masterclass in precision and patience, made entirely from Chardonnay and aged to perfection. Roebuck’s Blanc de Noirs brings richness and depth, crafted from Pinot Noir grapes grown on south-facing slopes. All Angels Classic Cuvée Long Lees Aged lives up to its name with layers of toast, orchard fruit and fine bubbles, while Pattingham Sparkling Rosé proves that even smaller producers are creating bottles full of finesse and local charm.

Let’s be honest. Sparkling wine labels love a bit of drama. Gold foil, cursive writing and a flurry of terms designed to impress and baffle. But behind the show, some of it’s actually useful, and some of it is just smoke and mirrors. If you want to serve better wine, understand what you’re pouring, and cut through the marketing spiel, here’s what you need to know
Traditional Method (aka Méthode Traditionnelle, Metodo Classico, or Classic Method)
Used in Champagne, English Sparkling, Cava, Franciacorta and some high-end South African fizz (MCC or Méthode Cap Classique) amongst others. Secondary fermentation takes place in the bottle, followed by lees ageing, which adds fine bubbles, creaminess and complexity. A gold standard for quality fizz..
Charmat Method (or Tank Method)
Used for Prosecco, some Lambrusco, and other fruitforward sparkling wines. Secondary fermentation happens in pressurised tanks, not in the bottle. The result is fresh, youthful fizz with juicy fruit and bigger bubbles. While often associated with cheaper styles, good Charmat wines (like top-tier Prosecco Superiore DOCG) can be excellent. The key is grape quality and time on lees.
Pétillant Naturel (aka Pét-Nat)
A natural sparkling style made using the ancestral method, where the wine is bottled before fermentation finishes. No added sugars, no second fermentation — just a single wild, rustic fizz bomb.
Unfiltered and often cloudy, with lower pressure, funkier flavours and no dosage. Proper ones are smallbatch, minimal intervention and packed with character. They’re not polished, but that’s the point.
Transfer Method
A hybrid between Traditional and Charmat. The second fermentation still happens in the bottle, but instead of riddling and disgorging each one individually, the wine is transferred to a tank, filtered, then rebottled under pressure.
Used for some Australian and New World fizz. Still capable of quality, especially when lees ageing is involved, though less nuanced than full Traditional Method.

This refers to dosage, the small amount of sugar added after ageing to balance the acidity.
Brut Nature – no sugar added at all, bone dry
Extra Brut – barely any sugar
Brut – the most common style, still dry, just a touch softer
The less sugar, the more the wine needs to stand on its own. So if you see Extra Brut or Brut Nature and it tastes brilliant, you’re drinking good stuff.
A Champagne that tells you how long it’s aged on the lees (dead yeast cells) or gives a disgorgement date (when it was finished and corked) is usually made by someone who cares.
Long lees ageing adds richness, creaminess and those lovely toasty, nutty notes.
This is how all proper Champagne is made. The second fermentation happens in the bottle, not in a tank. That’s what creates the fine bubbles, the yeasty richness and the long, elegant finish. If a sparkling wine isn’t made this way, it’s not Champagne.
A vintage Champagne is made from grapes harvested in a single year. It’s only done in the best years and usually means the wine has a bit more depth and ageing potential.
Non-vintage is a blend of multiple years, made to keep the house style consistent. Still great, just different.
Blanc de Blancs / Blanc de Noirs
Made entirely from white grapes (mainly Chardonnay), which usually makes it crisp, zesty and age-worthy.
Blanc de Noirs is made from black grapes (Pinot Noir or Pinot Meunier) but without skin contact, so it’s still white in the glass. These tend to be richer, rounder and a bit more food-friendly.
Grower Champagne (look for RM on the label)
Flip the bottle over and you might see letters like RM, NM or CM. RM stands for Récoltant-Manipulant, or grower Champagne. That means the same people who grew the grapes made the wine. More hands-on, more personality, often much better value. Well worth seeking out.
When it comes to Champagne and Sparkling wines of the world, knowledge beats branding every time. The labels might be dressed up, but if you know what to look for, and what to ignore, you can offer your customers real value, better flavour and bottles with genuine character.

A superb white wine from Spain. The label artistically represents the hailstorms that frequent the Almansa area of Castilla, giving the wine its name, “Lluvia” –Spanish for rain.
All those who adore Champagne´s classic fresh brown bread-scented yeasty flavours will love this classy Cava; rich, full complex and toasty. Pale yellow colour. Fresh aroma and fruity and fresh on the palate with fine, pleasant bubbles that perfectly complement the wine’s structure.

Glühwein literally translates to “glow-wine” because of how you feel after you’ve been drinking tiny mugs outside in December.
To many of us mulled wine is usually a warming winter drink based on a cheap and inferior red wine to which spices are added to mask the flavour, but you won’t find anything inferior about the ingredients in Hitzkopf “Classic” Glühwein, in fact you won’t find any red wine either. What makes
it so special is that it is a 100% fruit wine, based on the fermentation of fresh fruit and berries, setting it apart from its low grade alternatives, as well as containing far less sugar.

Take No Lemon No Melon, a white Merlot that flips expectations completely

In the UK, around six pints out of every ten sold are lager. It is the nation’s comfort blanket; the pint most people order without even glancing at the taps. But here is the rub: if your bar is pouring four or five lagers of the same style and strength, you are e ectively o ering the same pint with a di erent badge.

Or is it because of your sta , the service, the atmosphere and the food? The truth is, a missing lager does not drive customers away. It simply nudges them to pick another from the same family. Research shows that lager drinkers will happily switch between brands if their preferred option is not available, so reducing duplication does not reduce sales (Kingfisher Drinks, “Boring Beer Index 2025” via Morning Advertiser, 1 Oct 2025).
The bigger risk is looking too samey. The Boring Beer Index found that 71% of UK pubgoers are bored with the beer ranges they see, and 20% said they would even walk out of a venue if they did not like what was on o er (Morning Advertiser, 2025). Four lagers, Carling, Foster’s, Carlsberg and Stella Artois, topped the list of beers considered “most boring,” while premium lager Madri saw its “boring” score almost double in just a year (Morning Advertiser, 2025). The message is clear: variety matters more than duplication.
This is not about reducing sales. It is about consolidating your range. You will still pour the same volume of lager, but across fewer lines. That
means less stock tied up in near-identical kegs, freeing space and cash for something that makes your bar stand out. Consolidating the right lines could also increase the financial support you receive if you are on a volume-based retro, since the same sales would be focused into fewer brands.

But is it time for a change?
Guinness is the reigning the king of beer in the UK. It is easily the most iconic example of a drink defining a nation. It’s always a lovely sight watching a pint getting poured. The way the white, creamy head mixes with the dark stout beneath, watching the bubbles rise to the top. Ahh, perfect.
Stouts & porters are ultimately the same. They are top-fermented beers. The name porter was first used in 1721 to describe a dark brown beer that had been made with roasted malts. Because of the huge popularity of porters, brewers made them in a variety of strengths. The stronger beers, typically 7% or 8% alcohol by volume (ABV), were called “stout porters”, so the history & development of stout & porter are intertwined, & the term stout has become firmly associated with dark beer, rather than just strong beer.
But even with global dominance & all that theatre surrounding Guinness, the stout category is huge. There are some damn tasty & great value alternatives to this “king of stout”, or as the locals like to call it the “black stuff”. Not only will these alternative stand to make you more money but they give your customers a great tasting option.

What are milk stouts? The origin of the milk stout can be traced back to early 20th century England, an outgrowth of the increased popularity of dark ales like a porter, & later strong (or “stout”) porters. Milk, “sweet,” or “cream” stouts were generally beers with low amounts of alcohol but high amounts of residual sugar, Residual sugars are those left in a beer after the yeast has completed its fermentation. Because lactose is unfermentable by brewer’s yeast, lactose added to a beer makes the final product sweeter, fuller, & creamier.

In a quest to create the perfect FAQ section, we asked our team, “what is the most asked question when speaking with our customers?” The answer to this came without much thought or hesitation, and despite being pipped into first place by ‘we cant find you’ (one of the downsides of our depot being in rural Warwickshire), there was one clear winner by a country mile.*
I have a problem in my cellar, who do I call? “ “
This question is frequently delivered in a tone of panic and accompanied by gas hissing or (worse) beer flowing onto the cellar floor or (even more catastrophic) no beer coming out the taps. But the answer isn’t always that simple. So, when faced with this query, our team can only answer it effectively once we’ve asked a question.
“Who is your lead/domain brewer? “
This is usually followed by a pause and ponder from the caller, swiftly followed by, “What the
hell does that mean?” So in this article, we try to explain in more detail and offer some guidance you can share with your team when you need some assistance when that time comes.
For all cellar and drinks dispense problems, the brand owner of the products provides first-line technical services support. However, in most cases, one brewer/supplier/producer will cover all of your cellar equipment if they occupy a majority share of your draught lines. This is known as the ‘lead or domain brewer’
when this happens. Whoever this is, they will be the number you call when any cellar issues arise.
OK, how do i find out who mine is?
The ’lead brewer’ is known as a brewer that occupies the majority of the taps at your venue. They are responsible for servicing and
maintaining the remote beer cooler in the cellar, pythons, the primary gas-reducing valve, their branded fonts and underbar secondary cooling.
A brand owner who is not a lead brewer is only responsible for their font, underbar secondary cooling, backboard equipment in the cellar and secondary gas-reducing valves.
you’re singing ghostbusters right?
•If all beers are fobbing/not pouring and your remote cooler is not working correctly, you should contact your lead brewer.
•If you have one product down and everything else is pouring correctly, at the correct temperature, you should contact the brand owner of the product
•If you have issues with a cask handpull/beer engine for a permanent cask ale installation, you should contact the brand owner of the product.
•If you have a gas leak that isn’t isolated to a particular keg/container, contact your lead brewer.
•If you have issues with a handpull/keg line for an independent rotating keg or cask ale, you should contact the installers of this equipment.

It’s still the most-poured pint in the UK, but for years it’s been shrugged off as basic or boring. That’s down to how it was treated, rushed through fermentation, filtered until flavourless, and brewed to hit volume, not quality.
But that’s not the lager we are passionate about. And it’s not the lager being brewed across England today by some of our favourite producers.
Right now, we’re seeing a proper return to form. English brewers are reclaiming the style, brewing it slow, cold and with real care. They’re showing that when it’s done properly, lager can be as nuanced and characterful as anything on the bar.
The word lager comes from the German lagern - “to store.” That’s exactly what 15th-century Bavarian brewers did. They fermented their beer cold and stored it in caves to mature. That patience gave rise to a beer that was cleaner, crisper, and more stable than anything before it.
Unlike ale, which ferments warm with top-fermenting yeast, lager ferments cold with bottom-fermenting yeast. It takes more time, but rewards that effort with a smoother, more refined finish.
And within the category? Loads of variation and lot of myths (more on that later).
• German Pilsner: Crisp, bitter, grassy. All about hop bite and balance.
• Czech Pilsner: Fuller bodied, maltier and slightly softer.
• Helles: A malt-led lager, low bitterness, smooth and sessionable.
• Vienna Lager: Toasted malt, amber hue, and a touch of sweetness.
• Dunkel: Darker, caramel-forward, with a subtle roast edge.
All brewed using the same cold fermentation method, but with totally different results.
It only feels that way if all you’ve known is macro fizz. Proper lager is crisp, clean and layered with subtlety, but it doesn’t shout about it.
Take Verdant’s Helles. Soft malt body, delicate citrus lift and a dry noble hop finish. It’s unfiltered and gluten free,

yet still one of the best-executed lagers we’ve tasted.
Attic’s Forward, brewed in Birmingham, brings bready malt, floral hops and a dry finish. It’s complex in the background, but effortless to drink.
And Deya’s Tappy Pils? A modern classic. Snappy bitterness, lean body and that signature Deya balance. It’s also vegan and gluten free, ticking every box for modern drinkers.
Lagers like Orbit Nico, and Beak Dest Pilsner all prove you can have personality without over-complication. These aren’t one-note pours. They’re deliberate, confident beers built on precision.
Refreshing? Yes. But the best lagers go further. They bring depth, malt warmth and structure that stand up year-round, pairing just as well with roasts and rich dishes as they do with sunshine and bar snacks
Vocation Hilltop is a malt-forward, fuller-bodied lager with spicy hop character and a smooth, clean finish.
Braybrooke’s Keller Lager, unfiltered and naturally carbonated, delivers soft bready depth and a rustic mouthfeel. It’s brewed in Leicestershire with imported German ingredients and plenty of patience.
Lost & Grounded Helles plays it soft with delicate floral bitterness and rounded malt flavour. It’s endlessly
This one gets thrown around too easily. Lager is not a single style. It’s a method. What you do within that method is where the real variation lives.
Pillars Pilsner, brewed in East London, is a great example. Classic noble hop character, grassy freshness and a firm bitterness. Lager is all they brew, and it shows.
Polly’s Pilsner comes from a brewery known for hazy pale ales, but for this one they dial things right back. Crisp, balanced and clean, without losing interest after the first sip.
Then there’s Three Acre Hayloft Lager. Brewed with all-British malt and hops, it’s floral and smooth with a finish that gives you a reason to pour another. Exactly what modern English lager should be.
Let’s be honest. It used to be. For years, alcohol-free lagers tasted like beerflavoured water. They were brewed as an afterthought, slapped with a wellness badge, and parked in the fridge to tick a box.
That’s not what’s happening anymore. Today’s low and no brewers are building
these beers properly. They’re using real lager methods, better yeast, longer conditioning and smart techniques to recreate body, bitterness and bite. Some are even experimenting with flavour science. Take Mashgang’s Glug, for example. Born from countless trials, it uses Szechuan pepper to mimic alcohol’s warming finish. That level of thinking was unheard of in the low and no category just a few years ago.
Whether it’s Nirvana’s classic 0.5% lager, or the bright and dry Wiper & True’s Tomorrow, this category has grown up. These beers aren’t just a backup option. They belong on the bar. And more customers are asking for them every week.
And it’s not just in cans anymore. The rise of draught options from producers proves this isn’t a passing trend. It’s a response to genuine customer demand.
Low and no lagers are no longer an apology. They’re a serious choice. And they’re only getting better.
It would be easy to assume lager had lost its way, but thanks to some of the best brewers in the UK, that idea no longer holds. The truth is, it was never broken. Just overlooked. For years, it sat quietly on the bar while the spotlight moved elsewhere. But now, British brewers are giving it the respect it deserves. They’re slowing down the process, sharpening the recipes and putting quality first.

Lost and Grounded Brewers is an independent, award winning brewery based in Bristol. Established in July 2016, they operate from their state-of-the-art brewhouse to produce beers with balance, nuance and a depth of character. Renowned for their flagship lager KELLER PILS, which won Gold in the Kellerbier/Zwickelbier category at the 2023 World Beer Cup Awards®, their German-inspired range includes their HELLES - Unfiltered Lager and EXTRA NICE - Extra Dry Lager.

Lost and Grounded have a clear focus on sustainable brewing and operate from their state-of-the-art German brewhouse complete with energy recovery technology and CO2 recapture. Whilst the brewhouse is ultra-modern, their process echoes traditional German brewing techniques which produce beers with smooth and rounded finishes.

EXTRA NICE 4% Extra Dry Lager
Brewed as a ‘Beer with Purpose’, Extra Nice supports Stonewall Housing with £1 from each keg and 5p from each can sold going to the charity. Using a portion of rice in the grist to soften the palate, this is a light, crisp lager promoting diversity, creativity and inclusivity.

WHAT IS THE MEANING BEHIND THE LOST AND GROUNDED NAME?
The ‘Lost’ bit is not knowing your whereabouts. Annie and I have lived all over the world –Australia, Belgium, the UK – and I have a US/ Chilean background, but I spent half my life in Australia. Bristol was a long-term stop for us and we wanted to remember what was important. The ‘Grounded’ flows through how we work, how we engage with our community and how we treat our customers and team.
DID YOU HAVE BREWING BACKGROUNDS BEFORE FOUNDING LOST AND GROUNDED BREWERS?
Yes, I’ve been in the industry for more than 20 years, starting as a brewer and working up to senior roles. Annie worked in training and support roles alongside people with learning disabilities. Her love of creative writing, music, poetry, street art and fashion has transferred beautifully to her role as our creative lead. Our story is the book Annie never got to write.
WHY SPECIALISE IN BREWING LAGER?
We’re kind of an outlier in the fact that we focus on brewing lager. Lager is a style of beer that is incredibly difficult to master, but we love the challenges that brewing this type of beer brings. When we founded our brewery in 2016 we set out to make the best and most unique lager in the UK, starting with our flagship Keller Pils, and now we brew lager every week of the year!

We found a local illustrator whose style we loved and she and Annie hit it off. Between them, they visually translated our values, starting with the flying hippo, our humble mascot. As we see it, our hippo isn’t the rock star of the animal kingdom, he’s a quiet achiever who believes in himself and, who knows, if he works hard enough, he can carry the world.
It’s really about our entire brewing philosophy – the choice of ingredients such as malt and hops, the way the water treated, brewing techniques , as well as fermentation and lagering procedures… and of course time! In the end we are after a beer that is relatively subtle, but is full of character and personality.

Brewers everywhere are proving that sub 4.5% beers can be every bit as exciting as their stronger siblings. It is not just about pales and IPAs either. 1. STILLAGE - Position on stillage. If beer sits longer than 24 hours, gently roll cask and reposition before venting
2. CLEAN the shive and the keystone with warm water
3. VENT cask with hard peg, slowly release gas and remove peg
4. TAP cask with a clean, closed tap
5. CONDITION - Leave the shive hole empty for 24 hours. Insert soft peg, ideally replace every 12 hours (min. 24 hours) until conditioned
6. SAMPLE - Pour off some beer, check for Clarity, Aroma and Taste
7. SEAL THE CASK with hard peg until ready to go on sale
8. CONNECT the line (check hop filter in place) add soft peg for sale
9. CHECK quality at the handpull - Clarity, Aroma and Taste - and serve Morning & Close
AT CLOSE Close the cask taps/add a hard peg to the shive, putting the cask to bed.
MORNING Open the cask tap, replace hard peg with soft peg. Pull through at the handpull, test for Clarity, Aroma and Taste
1. ROLL - Gently roll the cask into final position.
If the beer sits for more than 24 hours, gently roll cask and reposition before venting
2. CLEAN and dry the keystone with warm water
3. TAP the cask (clean closed tap)
4. CONDITION - Leave the vent on the tap open fully for min. 48 hours
5. CLOSE THE VENT until ready to go on sale
6. CONNECT cask to line (hop filter in place) using rod or float
7. CHECK quality at the handpull - Clarity, Aroma and Taste - and serve Morning & Close
AT CLOSE Close the tap valve, putting the cask to bed
MORNING Open the tap valve, pull through at the handpull, test for Clarity, Aroma and Taste

We use it generously. Guided by nature, the fresh fermenting juice stays in tank for as long as it takes for it’s character to develop and tannins to round. That could be 12 months. But hey, this is the West Country, there’s no rush.

As well as working to reduce our own impact on the environment through minimising food miles, food waste and our carbon footprint, we spend time with our apple growers, pressers and bottlers in the UK, to ensure that they also continue to make substantial strides in making a positive impact on the environment.

We’ve gone out of our way to pick some 7.5 million traditional Russet apples (743 tonnes), that are rarely picked for the shops, and would otherwise be left to drop and decompose.
Russet apples are often used to help pollinate other apple trees, for example, Cox and Bramley apples. When these other apples are picked, the farmers don’t pick the pollinator Russets at the same time because the shops often don’t want them. So Folkington’s steps in, pays the farmers a bit extra, and gets these Russets picked & juiced. And saved.




That’s more than the weight of 140 UK ambulances!
The UK Committee on Climate Change calculates that an average of 1.6kg of Greenhouse Gases are emitted into the atmosphere for every 1kg of food waste.
So by doing this we’ve prevented over 1,185,000 kg of greenhouse gases
Juice is stored in re-usable containers (Octoboxes) instead of traditional steel or plastic drums which reduces the CO2e cost of packaging the juice by 92%. When our family’s barn burned to the ground in 2015, we didn’t just rebuild – we reinvented. Out of the ashes came a mission to make bold, uncompromising rums that stand apart from the ordinary. Every bottle carries that origin story and the spirit of reinvention.

At our rural distillery
we blend traditional rummaking with fearless experimentation. We import high-quality base rums from Guyana, then transform them the finest whole and local ingredients. The result is a range of distinctive rums with depth, character and a memorable back-story for bartenders to share.
Why Spiced and Flavoured Rums?
Rum production and
molasses distillation can be traced back to the Caribbean in the 17th–18th centuries; sailors, merchants and island communities blended whatever they had on hand to improve or preserve spirits. Adding spices—local and imported; was practical - to mask off-notes, stabilise flavours, or add perceived health benefits - and cultural - a reflection of recipes carried by people and ships across the Atlantic.
The British connection is strong: grog and rum were part of Royal Navy life, and UK trade routes carried spices from Asia and the Caribbean to ports across Britain. Over centuries the idea of “spiced” rum evolved from pragmatic to pleasurable; a category with room for wide experimentation, from gentle warm notes to full-on peppery heat.
Our take: why handroasting matters
Most spiced rums are made by steeping spices in rum, sometimes with extracts or oils. We do that, too, but we begin earlier: we hand-roast our spices in small batches.
Roasting transforms flavour; heat caramelises natural sugars, adds a beautiful, toasted note and unlocks essential oils.
The result is a spicier spiced rum; not just more pepper, but more warming, layered spice. One which can hold it’s own in a mixer, and subtly tweak the drinking experience of your favourite cocktails.
