Our

wine category managers share their thoughts on the challenges and opportunities facing the trade in 2025 and why now is the perfect time to elevate your wine list.

At Inn Express, we know that wine isn’t just a drink: it’s an experience.

It’s a story in a bottle, a liquid record of weather, site and skill. A moment to be shared. That’s why we’re on a mission to make our wine offering truly special.

Since Chris and I joined Inn Express, we set ourselves the challenge of elevating what was already an exciting range into something even more distinctive, something that gives independent venues like yours a real point of difference.

We’re well on our way. But this is just the beginning.

One challenge that can’t be ignored is the recent duty changes.

Many in the trade had hoped the new government would reverse the complex and impractical tax system introduced last year, but it remains in place.

best value, without compromising on quality or authenticity.

Another hurdle this year is EPR, or Extended Producer Responsibility.

The idea behind this government charge is to shift the cost of recycling packaging onto the importer or domestic producer. In true DEFRA style, they began charging for it in January, but won’t confirm what the actual cost is until September or October.

within that, we see opportunity. There’s growing demand for premium wines particularly organic, biodynamic and sustainable options. There’s more experimentation in lists: new regions, unfamiliar varieties, different styles.

And there’s a real appetite, especially among younger drinkers, to know the story behind the wine. The place. The people. The personality.

That’s something to celebrate.

“I t ’ s a story in a bottle, a li quid record of weather site and skill.”

With 31 duty brackets now based on a wine’s ABV, we’re seeing natural vintage variations lead to shifting costs. Unlike beer or spirits, winemakers don’t know the exact alcohol content at the start of the process.

That’s what makes it so special, but it’s also what creates challenges.

As new vintages arrive, pricing may shift based on ABV. Our promise is simple: to continue bringing you the best wines, at the

Some of our suppliers have taken DEFRA’s guidance and factored the estimated charge into their annual price increases. Others, particularly smaller producers, are holding off until the true cost is confirmed. This means we could see further price changes later in the year on certain products.

In all our years in wine we’ve never seen the trade face such tough conditions. Rising costs from all sides are putting pressure on us all. But

Now more than ever, your wine list matters. Wine invites emotion, opinion and exploration. And even a short, focused list can shine—if it’s thoughtfully built.

We can help you source stunning wines just off the beaten track. The kind that will excite drinkers, standout from your competitors, and add healthy profit to your bottom line.

Yes, it may be a step away from your current list. But we’ll guide you every step of the way.

Let’s embrace change together.

Let’s navigate the challenges— and make 2025 a year of discovery, quality and success.

We’re here to support you.

GIVE US YOUR TOP TIP THAT NOT ENOUGH VENUES USE TO MAXIMISE THEIR WINE SALES?

A simple tip would be when building a wine list, ensure that you have up-selling opportunities throughout your list for your customers to trade up to. An example would be having 2 x Sauvignon Blancs, one at an entry level price point and then an aspirational wine such as a Marlborough Sauvignon, to trade up to. The same would work with Malbec and within the rosé category, where wines from Provence are currently in vogue.

Aspirational wines always sell, and they deliver great margins. Cash-in on their popularity.

Check out page 55 for Chris’s top three wines from our portfolio.

Choosing and pricing the right wines for your venue can be a daunting task. Let us take that pressure away and gain those crucial extra sales and profits.

SUIT YOUR VENUE

One of the most influential and basic starting points when creating a great wine menu is ensuring that your list reflects the setting it is intended to be used in.

Whilst listing every on-trend and fashionable wines may seem like an obvious (and tempting) thing to do, it will not always be possible. You should pay the same attention to your wine list as you would do your food, cocktail list or decor. For example a craft beer and cocktail bar may choose to lean into lesser know varieties or producers to offer consumers a more diverse choice, whereas a quintessentially British pub in the country may opt for a list filled with classics but with some strategically placed English wines to offer intrigue and discovery.

FOOD FOR THOUGHT

If the venue serves food, the wine list needs to complement the menu. If you are a seafood restaurant, a list dominated by heavy reds isn’t the best way to go.

A well thought out list will work well with the food offering and elevate both the food and the drinks.

Consider adding food suggestions to help your customer make their choice and to drive upselling but also add drinks selections to your food menu

STRUCTURALLY SOUND

The layout of the list is important as it helps customers navigate their choices and it helps drive margins.

“ You should pay the same attention to your wine list as you would do your food, cocktail list or decor!

Divide the list into simple categories such as Sparkling & Champagne / White / Rose / Red / Dessert Wine – Port – Sherry.

This system is proven to increase sales as it enables customers to browse and choose based on their taste rather than by price.

Within this you can break this down into flavour profile:

White -Fresh & Crisp / Floral and Fruity / Rich and Full bodied

Red - Aromatic and Smooth / Soft and Fruity / Big and Bold

If you are a venue with a more modern approach then we advise to add in an experimental section to cover quirky or edgy wines such as Natural/ Orange/Biodynamic wines.

NO TIGHT MARGINS

To ensure the wine list is working commercially for you, it needs to be priced correctly.

Depending on the type of venue, wine bottle pricing is usually set between 60-70% GP%. The higher the price point, a cash margin approach is required to ensure wines are accessible.

By the glass pricing is usually set from 70-76% GP%, again, venue dependent.

125ml should carry the most profitable margin, then a sliding scale on 175ml & 250ml.

GET THE PRICES RIGHT

Gain balance across the range by steadily increasing the prices across the list so each step up isn’t too big.

Never list your cheapest wine at the top! Mix up the wines so that they are not in price order. Taking the customers’ decision away from price is always the best way to ensure they trade up.

If you feel you need a house wine then we suggest looking at a great value blended option.

This not only offers those price conscious customers a lower entry point but also ensures you are able to make the correct margin on this line.

The most popular wines on your list (Pinot Grigio/Sauvignon Blanc / Merlot/ Malbec) should be at price points where you make the best margins. Never have these wines as the cheapest on the list, you want to encourage customers to look though the list prior to making their choice.

SELL SELL SELL

Ensure your list encourages customers to trade up. A great way to do this is to have multiple examples of popular grape varieties throughout the list.

For example, have an entry level Sauvignon Blanc and then encourage an up-sell by listing a New Zealand Sauvignon Blanc at a higher price point.

The same can be done throughout the wine list on popular wines, think Malbec, Rioja- Crianza – Reserva, Rose- Pinot Grigio Blush to Provence, Prosecco to Crémant / English Sparkling.

OFFER GREAT VALUE

While the wine list needs to work commercially its important to consider Value. If a wine isn’t great value, the customer will not buy the 2nd glass or another bottle. A wines perceived value is directly related to quality and cost. Ensuring you get this balance correct will help drive repeat sales, volume and ultimately profits.

GRAND DESIGNS

Design plays a key role in making your wine list look appealing to the customer.

A well designed list will be simple to navigate, encourage experimentation, include ‘Feature’ wines or highlight ‘Favourites’ and help drive the consumer to the wines that commercially work for you.

ARGENTINA

Argentina’s wine story blends centuries of history with a dynamic present. Spanish colonisers planted the first vines in the 16th century, but it was European immigrants in the 19th century who truly shaped its identity. They introduced varieties like Malbec, along with modern

winemaking techniques. While bulk production dominated for decades, the 1990s sparked a quality revolution. High-altitude vineyards in the Andes now produce elegant, vibrant wines with freshness and depth. Malbec remains the star, but the country’s range includes Torrontés, Pinot Noir, Chardonnay,

Semillon, Criolla Chica plus many others. From crowd-pleasers to conversation-starters, Argentina delivers authenticity, value and flavour. We recommend trying Bodegas Manos Negras Malbec, which offers bold fruit and real finesse.

SOIL FIRST wine second

If organic wine is a step towards sustainability, biodynamic takes it even further – and then some. It’s one of the most misunderstood terms in the wine world, but also one of the most fascinating. For venues looking to offer something with real depth, story and soul, biodynamic wines are well worth shouting about.

Biodynamic viticulture treats the vineyard as a living, breathing ecosystem. It’s organic – no synthetic

BIODYNAMIC

chemicals – but also guided by lunar cycles and natural preparations to boost soil health and vine vitality. It might sound a bit mystical, but the results in the glass are anything but vague.

These wines often show incredible energy and balance. There’s vibrancy, purity and a sense of place that really stands out. Whether it’s the juicy charm of Gran Cerdo Tinto and Rosado, the zippy lift of Gran Cerdo Blanco or the wild freshness of Tattarrattat Carbonic Merlot,

AUSTRALIA

Australia’s wine journey began in the late 1700s. It was the 20th century, however, that secured its global reputation. With more than 60 wine regions, from Barossa to Margaret River, Australian wine is known for quality, consistency and innovation.

Climate change has brought new challenges, but winemakers are adapting through sustainability, soil care and smart vineyard practices. The results speak for themselves. Our range features sunshine-filled favourites like Corryton Burge and more adventurous picks such as

Stanton and Killeen’s Rutherglen Topaque. The Vagabond Grenache, made by Master of Wine Giles Cooke at Thistledown, is a highlight. It shows just how exciting modern Australian winemaking can be.

IT’S BAROSSAwith a twist

We’re all about offering wines with real character, provenance and drinkability. Corryton Burge is a brilliant example of what makes Australian wine so exciting right now. This familyrun winery is based in South Australia’s Barossa region and is run by the next generation of the Burge winemaking family. They bring a fresh, modern take to classic regional styles, with a clear focus on quality, elegance and a deep respect for the land.

We’re now listing five exceptional Corryton Burge wines, each carefully selected to offer

something different to your list. Here is our top three

Eden Valley Riesling – A dry, zesty white with vibrant citrus, green apple and lifted floral notes. It’s a textbook example of Eden Valley Riesling, with bright acidity and a clean, mineral finish. Perfect for pairing with seafood or spicy dishes, and excellent value at £14.09.

The Patroness Chardonnay – From the cooler Adelaide Hills, this is a refined and expressive Chardonnay with stone fruit, citrus and subtle oak. It’s textured, elegant and made for modern drinkers who want richness without heaviness. A

brilliant premium option at £25.53.

Shiraz – Deep ruby red with purple hues, this Shiraz presents aromas of strawberry, raspberry and vanilla. The palate is rich with fruit-forward characters of raspberry and plums, complemented by a soft toasty oak influence that gives a touch of vanilla and spice. Subtle tannins make it delightfully moreish. Priced at £9.96, it offers outstanding value. Whether you’re running a relaxed gastropub or a fine dining restaurant, Corryton Burge offers smart additions to any wine list. Stylish, story-led and well priced –these wines are ready to impress.

CHILE

Chile’s wine heritage dates back to the 1500s, when Spanish missionaries planted the first vines. Later, European immigrants brought expertise, equipment and international grape varieties. Chile’s geography is a winemaking gift: bordered

by the Andes and the Pacific, its diverse microclimates and natural pest barriers have helped organics thrive. This makes for consistent, expressive wines at excellent value. Our Chilean range includes great everyday options like Kintu from Viña del Pedregal

the Altitudes range. For something more premium, Casa Marin’s coastal Sauvignon Blanc is a revelation. Made just five kilometres from the ocean, it was once hailed by Robert Parker as the best white wine in South America.

The more you spend, the better the wine.

Here’s Why?

It’s no secret: spend a bit more on wine, and you’ll notice the difference. But when you break it down, it’s not just about splashing the cash – the numbers speak for themselves. Once you factor in packaging, logistics, VAT, margins, and excise duty, the true value of the wine in your bottle increases significantly when you invest in premium products.

With the recent budget announcement, Chancellor Rachel Reeves confirmed that, as of 1st February 2025, alcohol duty will rise in line with RPI, and the current wine

duty easement will come to an end. This means higher ABV wines will face greater duty charges but before you start reaching for the low ABV wines, have a think!

Our analysis shows that on a bottle of wine with an ABV of 14.5% priced at £15.65, £3.21 will go straight to duty (20.5%). Once packaging , VAT and logistics are removed that leave £4.16 (26.6%) is spent on the actual wine itself.

Compare that same ABV wine but at a cheaper price point of £8.65 and the duty equates to £3.21 (37.1%) and leaves only £1.56 (18%) for the wine.

This highlights how, in lowerpriced bottles, a significantly higher proportion of the cost is absorbed by duty, leaving less budget for the quality and production of the wine itself.

It’s clear that spending more doesn’t just mean better wine – the quality improves exponentially with price. So, when it comes to wine lists, investing in premium bottles is well worth it for both quality and customer satisfaction.

DESSERT

Dessert wines offer something truly special. More than just a sweet sip, these wines showcase craftsmanship, balance and regional character. Whether it’s the golden glow of a Sauternes or the rich intensity of an Australian Muscat, there’s a style for every menu.

Late harvest wines like Indomita Nostros from Chile offer ripe tropical fruit and honeyed notes, thanks to grapes picked at peak ripeness. For something with a

SPARKLING STILL

fresher, floral lift, Domaine des Baumard’s Carte d’Or from the Loire Valley delivers elegant sweetness balanced by vibrant acidity.

Sauternes remains the benchmark for botrytised wines. Maison Ginestet and Lions de Suduiraut bring classic Bordeaux richness, perfect for pairing with blue cheese or crème brûlée. These are made using grapes affected by noble rot, which concentrates flavour and adds unmistakable depth, complexity plus richness.

ALL ANGELS

All Angels multi-award winning, English sparkling wines are made exclusively from grapes grown in our three stunning, hand nurtured vineyards. Each one sustainably cultivated to ensure that the wines blend the essence of their historic location, the character of the grape varieties and, the spirit of the growing season, producing outstanding quality, single estate, unique expressions every year.

All Angels is at Church Farm, Enborne, just five minutes outside Newbury, West Berkshire. The farm and its surroundings have seen nine centuries of history that have influenced the story of England itself, from the C12th eponymous church of St. Michael & All Angels with either the oldest or second oldest church bell in the country, through the Crusades and the English Civil War to the US 101st Airborne during WW2. Church Farm itself was at one time

owned by Cromwell’s colonel who arrested King Charles I. The views from the vineyards take in Coombe Gibbet, Highclere Castle, Watership Down, Beacon Hill and the site of the first Battle of Newbury in 1643.

After purchasing Church Farm in 2009, the Darley family quickly dispensed with Mark’s initial idea of rearing Alpaca (!) and, after receiving an outstanding endorsement from the country’s leading viticultural consultants, chose to plant vineyards dedicated to producing only the very finest English Sparkling Wine. The first vineyard was planted in 2011. There are now three vineyards growing predominantly Chardonnay, Pinot Noir and Meunier but also some Pinot Gris, Pinot Blanc and Rondo.

The day to day running of All Angels is led by Mark & Christine Darley and Kay Smitham. Mark retired from the City in 2020 after 36 years of law, the last 20 of which were as a partner in a US law firm leading a group

that meant spending much of his time out of the country. As he says, he’s now swapped his commute from one hour on the Tube next to someone’s armpit (Mark is not tall) to three minutes with three Labrador dogs. Kay’s background is also City based, she too left the City in 2020 to complete her wine diploma and focus on a career in the wine industry (and to work with All Angels).

All Angels unique philosophy towards its multi-award winning wines can be summarised as “Quality over Volume, Patience before Revenue”, a combined approach that we believe makes All Angels unique. We are not interested in producing the most wine, just the very best.

Quality over volume, Patience before revenue “ “

Although we could produce 35k – 40k bottles a year, we aim for c. 25k bottles of the most premium sparkling wine: we carry out a vigorous green harvest and discard up to 1/3rd of healthy grapes to concentrate the nutrition in the remainder, help them ripen to their peak and reduce the stress on the vines to minimise disease. We will never, ever use grapes that we have not grown ourselves: our wine needs to be a reflection of our ecosystem and land and, as we say, it is important that we know exactly how each grape has been treated from the day the vine is planted to the day the bottle is opened.

longer gives a far more complex, evenly balanced wine with lots of autolytic flavours as well as primary fruit flavours). As Mark says, it may not make much economic sense to tie up capital for so long but it makes for a much better wine. We only produce single vintage wines as

Once harvested and blended, the patience starts: we will not release a Classic Cuvée or Blanc des blancs unless it has had at least six years lees ageing in bottle (most producers age for 2 – 3 years but ageing it for

we think it is far more interesting to produce wines that reflect the different growing seasons and blending decisions rather than have a uniform product all the time.

All Angels places an enormous

emphasis on sustainability in its broadest sense and we believe we have a responsibility not just to maintain the environment in which our nature lives but to enhance it so that we leave the land in a better condition than when we took over custodianship. At the end of the day, while vines and All Angels are important the land is the very place where nature – above and below ground – has its home. We have planted trees extensively, put in wildflower meadows and wetland ponds as well as wild bee houses. We are blessed with the nature we have: rabbit, hare, fox, badger, deer, otter, nightingale, cuckoo, so many other species of bird as well as seven different types of bat – two extremely rare and one of which roosts in the ground: take a pair of thermal binoculars out into the vineyard at night and it looks like the M25, Mark says.

wine with reverence, seeing it as culture, not just consumption. Despite strict regulations through the AOC system, innovation is thriving, especially in biodynamics and organics. Our list celebrates the classics, with brilliant bottles from Maison Brotte in Châteauneuf-

du-Pape and the biodynamic wines of Olivier Cazenave. For something more contemporary, try the wines of Eric Texier. And for value, explore Terres Fidèles in Roussillon, delivering quality and character well beyond their price.

WINES

ITALY

Italy offers unmatched diversity in grapes, wine styles and regional identity. With around 2,000 native varieties, no other country offers such a deep connection between wine, place and tradition. From the Alps to Sicily, every region has something

unique to offer. Italy’s wine heritage spans the Etruscans, Romans, monastic orders and modern innovators. Our range includes crowd-pleasers like Trevisana Pinot Grigio and characterful natural wines like Fabrizio Vella Rosso. For a white with real charm, try

Alice Verdeca from Produttori di Manduria. And for a bold red, the Lirica Primitivo is hard to beat. If you want something special, the Nittardi Ad Astra from Tuscany is a classic with serious pedigree.

THINK BEYOND the usual

Rediscovering Italian whites with a modern twist

Italian wine has long been loved for the classics – Pinot Grigio, Prosecco and the more traditional, rustic styles that dominate most wine lists. But Italy has so much more to offer, especially when it comes to whites that challenge expectations. Enter Alice and Zin, two standout wines from Produttori di Manduria that not only taste incredible but look the part too.

These aren’t your typical Italian whites. With bold, contemporary labels and a clean, fresh identity, Alice Verdeca and Zin Fiano are designed to turn heads and start

conversations. For venues looking to offer something distinctive by the glass or bottle, these wines tick all the boxes.

Alice Verdeca is crisp, floral and citrus-led with subtle tropical fruit and a gentle minerality. It’s perfect with lemony dishes, baked pastries or even just on its own as an aperitif. Verdeca is rarely seen outside of Puglia, making this a real point of difference for your list.

Zin Fiano is fuller and rounder, with notes of sweet apple, pear and a touch of orange blossom. It pairs brilliantly with shellfish, white meats and creamy pasta dishes. It’s

a serious crowd-pleaser, offering a more structured alternative to Pinot Grigio.

Both wines come from one of Puglia’s most respected cooperatives, who have been championing local varieties for over 90 years. Stocking these wines shows your customers that you’re thinking beyond the obvious and bringing something fresh, modern and still authentically Italian to the table.

Want to move your list on from the same old story? Alice and Zin are the ideal place to start.

LOW & NO A new era in wine

Low and no-alcohol wine has come a long way. This isn’t about compromising on taste or offering an afterthought – it’s about meeting modern drinking habits with quality, style and a bit of flair. Whether your guests are moderating, abstaining or just fancy a clear-headed option, a great non-alcoholic wine list says your venue is inclusive, thoughtful and bang up to date. There’s now genuine variety and

depth across styles. From McGuigan ZERO, a trusted Australian range that covers everything from crisp Sauvignon Blanc to a juicy, spicy Shiraz, to the aromatic lift of The Very Cautious One Gewürztraminer Riesling, these wines hold their own on taste and structure.

Italy’s Vita Libera offers a foodfriendly Pinot Grigio and a fullflavoured Primitivo, both ideal for pairing with casual dining. For something celebratory, there’s Vallformosa’s lively non-alcoholic

Cava, and the ultra-premium Wild Idol range – dry, complex and stylishly packaged. Available in both white and rosé, and in full or half bottles, they’re perfect for gifting, toasting or just a treat at the table. The demand is only growing. Stocking a few well-chosen options is no longer a nice-to-have – it’s a must. These wines let your team confidently upsell to guests looking for alcohol-free moments, without losing the experience or occasion.

NEW ZEALAND

Putangirua Pinnacles

New Zealand’s global wine journey began in earnest in the 1970s, when Marlborough Sauvignon Blanc took the world by storm. Crisp acidity, intense aromatics and lively fruit made it an instant hit.

While Sauvignon remains a staple, other regions like Hawke’s Bay, Nelson and Central Otago are now producing standout wines too. Cooler climates and a focus on sustainability shape much of New Zealand’s wine identity today. In our

range, Mayfly Sauvignon remains a top-seller, and Jackson Estate’s Green Lip is another staff favourite. For something different, try the Heaphy Riesling from Nelson. This is a small but growing part of our portfolio, and one we’re excited to expand.

WHAT ARE THEY?

At Inn Express, we’re always on the lookout for wines that challenge convention, spark conversation and, most importantly, taste fantastic. That’s why natural and orange wines are making more of an appearance in our portfolio. While they might not be new, their popularity is definitely growing – and for good reason.

Natural wine is all about minimal intervention. No additives, no heavy-handed winemaking – just fermented grape juice doing its

thing. It’s often unfiltered, unfined and can be a little wild around the edges, but when done well, it offers a pure expression of grape and place that’s impossible to replicate. Wines like Solara Natural Red from Romania strike the perfect balance between bright fruit, rustic charm and easy-drinking appeal.

Orange wine, despite the name, isn’t made from oranges. It’s white wine made like a red, with extended skin contact giving it that golden, amber hue. Expect texture, structure and a whole load of

character. A wine like Funkstille Skin Contact from Austria is a perfect introduction – expressive, aromatic and ideal with food.

These wines might divide opinion – but that’s half the fun. They bring a sense of authenticity, craft and story that today’s drinkers love. Whether you’re running a cosy pub or a cutting-edge restaurant, these bottles deserve a spot on your list and we’re here to help you pick the right ones.

PORTUGAL

Portugal’s wine story goes back over 2,000 years, with influences from the Phoenicians, Romans and British. The Douro Valley, with its steep slopes and poor soils, has long been known for powerful reds and,

of course, Port. Today, Portugal boasts a huge number of native varieties and is gaining momentum in the UK thanks to great value and increasing holiday tourism. From fresh Vinho Verde in the north to rich reds in the south, this is a

country full of discovery. Our range includes the bright and low-ABV Flic White from Lisbon, and the Vinha Maria Dão Reserva, a fullbodied red with real depth. Look out for Rola Tinto too, showing off a more elegant Douro style.

SPAIN

Barcelona

With nearly 3,000 years of winemaking history, Spain remains one of the most exciting and diverse wine countries in the world. From ancient Phoenician roots to global exports of Sherry and Rioja, Spain’s heritage is deep. Political turmoil in

the 20th century slowed progress, but since the 1970s the revival has been remarkable. Spain now blends old traditions with new innovation. Our range covers everyday favourites like Tinto de Lela del Mar and El Ninot de Paper, as well as showstoppers like Pazo de Señorans

Albariño Seleccion de Anada 2014, aged for 10 years before release. For something with energy and soul, try Camino de Navaherreros from the Gredos Mountains or Luis Cañas Reserva Rioja for a classic with power.

OF THE DROPS Top

Straight from the tasting table to the top of our charts – these three (it could have been 12!) wines are the ones our buyers are buzzing about. Big flavour, serious style, and plenty of personality… these bottles are certified showstoppers. Add them to your list before everyone else does.

Bord Elegance, Cotes Du RhÔne Villages

The Rhone Valley is a region that surprises and delights with its diversity. Laudun recently became the 18 Cru in the region and joins the likes of well-known appellations, such as Châteauneuf-du-Pape and Hermitage. Gems like the Bord Elegance CDRV Laudun Blanc from Maison Brotte are still around if you look in the right places.

A blend of predominantly Grenache Blanc, with a touch of Clairette, Viognier & Roussanne reveling a fresh nose of pear and apricots. Super elegant and silky, with a freshness typical of the region. Throw in green apples, mango & almonds and you have a vibrant wine with complexity.

Cami del Drac Carignan Noir

I've always been a fan of Carignan and this single varietal doesn’t disappoint, it’s a bit of a bargain!! Again, the key here is old vines, 50-60yrs old in this instance and this wine really delivers.

Medium weight, dark black fruits dominate, layered with herbs and a smoky/meatiness. Love this!

Wine Development Manager chris@inn-express.com 07736638609

Heaphy Riesling, New Zealand

This old vine Riesling is a treat to behold. Vines ranging from 30-50yrs old help give this wine the concentration of fruit that sets this wine apart from others. Lees ageing for 8 months gives it depth & body. Generous hints of ginger, lime & jasmine make this an aromatic beauty. Get the salty/spicy food out and give it a try!

SOUTH AFRICA

V&A Waterfront - Capetown

South African wine is a story of resilience and reinvention.

Vines arrived in the 1600s, but it was the French Huguenots who truly shaped the Cape’s wine culture. Despite wars, apartheid and economic setbacks, the last 20 years have seen a huge leap in

quality. The Cape’s Mediterranean climate, diverse soils and dynamic winemakers now produce wines with precision and personality. Our selection spans brilliant value from Waterkloof’s False Bay range to premium names like Iona in Elgin Vondeling Wines, led by winemaker

Matthew Copeland, is one to watch. For reds, try the mineralrich Dolomite Cabernet Franc from Bruwer Raats or the bold Barrel Selection Cabernet from Vondeling. This is a region with serious momentum.

THE THE THE ONE ONE STOCK

WATER KLOOF P r oducer P r ofile

Life is full of circumstance, both positive and negative. Some we are inextricably bound to and others we create. The story of Waterkloof and its wine, is one full of circumstance.

The grandfather of Waterkloof Custodian Paul Boutinot died in The Loire age 42 (it was the drink), so Paul’s dad had to leave school at 11 and work to provide for the family. He became a baker, then a promising chef-pâtissier, until one day in 1940, The Nazis arrived. The very next night he was a refugee at 18, choosing to escape France with friends in a fishing boat to England, where he became an SAS (Special Air Services) ‘Original’ during WWII.

After the war, Paul’s father and English mother saved and saved, eventually opening a small French restaurant in Manchester, England in the 1960s.

Not one to do as he was told, Paul was excluded from school and began working in the restaurant in the late 70s, becoming the sommelier, or more aptly, the waiter who knew a bit about wine.

Then in 1980, disillusioned with both the quality of wine available from local distributors up North and the prospect of taking over his parents’ restaurant, he set-up a one-man-band wine import and distribution business, unimaginatively named Boutinot. Over the next three decades it became the UKs largest wine specialist, which,

unlike its competitors, produced much of what it imported, firstly in France (Loire, Rhone and Languedoc), then latterly -once apartheid ended in the mid-90s- also in South Africa with the establishment of Waterkloof’s antecedent and sister-company False Bay Vineyards. Paul has always had an eye on the future, unearthing undiscovered gems and taking the less-trodden path. South Africa represented precisely that.

His winemaking method has always been simple: Naturally balanced grapes, hence no winemaking additions other than a little sulphur. He didn’t own a vineyard. Grapes were purchased from growers. Buying a site that produced better grapes

“ “ If great wine really is made in the vineyard as they say, then can that wine truly be yours, if you’re not responsible for the land from which the grapes are grown?

than those he could source was beyond Paul’s means, but by the late 90s he had accumulated the resources, as well as the itch to take the plunge. After all, if great wine really is made in the vineyard as they say, then can that wine truly be yours, if you’re not responsible for the land from which the grapes are grown?

And so, the journey began to find his ideal vineyard, which he finally did with Waterkloof in 2003: A stellar and much sought after site, just 3 miles from the windswept Atlantic Ocean. The most coastal, coolest and lowest yielding vineyard in Stellenbosch. Ideal circumstances to produce fine wine, further enhanced over the ensuing years by an awe-inspiring transformation into a certified WWF Conservation Champion, organic and fully fledged regenerative farm.

In 2013, with Waterkloof established for a decade,

Paul sold his wine import business and the production business in France to focus, along with his son Louis, solely on Waterkloof and False Bay Vineyards.

Through a happy combination of both fortuitous and created circumstances, Waterkloof continues its steady progress in farming, winemaking and renown. To date, they have somehow managed to notch up the largest number of features of any wine producer, not only in Decanter’s ‘Weekday Wine’ Section (value wines), but also in Jancis Robinson MW’s ‘Wine of The Week’ page.

WHY STOCK Von deling Wines

Here at Inn Express, we pride ourselves on championing wines that go beyond the bottle – and South Africa’s Vondeling is a perfect example. These wines aren’t just delicious – they’re grown, made, and bottled with care, craft and a strong sense of place. Whether you’re curating a classic list or looking to bring something fresh and story-led to your venue, the Vondeling range has real weight behind it.

Vondeling is based in the VoorPaardeberg – a lesser-known but hugely exciting wine-growing region just an hour outside Cape Town. The estate has deep roots, with vines dating back to the 1980s, but the modern Vondeling story really began 25 years ago when British founder Julian Johnsen started replanting the estate. Together with fellow Brit Anthony Ward, his son Max, and Senior Winemaker Matthew Copeland, the Vondeling team has built a portfolio of nearly 20 award-winning wines – 10 of which now sit above 90 points in the 2025 Platter’s Wine Guide. Their Bordeaux-style red blend recently won Best Red Wine in the country in the 2024 Platter’s, confirming

their place at the top of South Africa’s premium wine scene.

Of course, we’re not listing all twenty – but we’ve hand-picked some absolute standouts for our portfolio, including their Petit Blanc, a bright, zesty white blend that’s ideal for by-the-glass offerings and casual dining. The Petit Rosé is equally crowd-pleasing – dry, pale and effortlessly drinkable. Perfect for spring and summer menus.

For those looking to elevate their white range, the Vondeling Sauvignon Blanc is a smart pick – cool-climate freshness, citrussy and clean, but with more complexity than your average bottle. The Barrel Selection Chardonnay, meanwhile, is punching well above its weight, thanks to a unique mix of French oak and fermentation in concrete eggs. It brings energy, minerality and finesse – ideal for premium pours or food-led venues.

One of our personal favourites is Babiana – a signature Cape White Blend named after a rare flower found only on the estate. It’s a true reflection of Vondeling’s minimal-intervention winemaking and deep respect for the land. It also happens to be delicious – textured, aromatic and perfectly balanced.

On the red side, Petit Rouge is ripe, juicy and packed with character –perfect for pubs, wine bars and casual dining. For something richer, Baldrick Shiraz offers spice, dark fruit and soft tannins. It’s a wine that over delivers at every turn. And for those wanting to showcase South African elegance, the Barrel Selection Cabernet Sauvignon is a must – layered, structured and seriously classy.

Beyond the wines themselves, Vondeling is a champion of biodiversity and sustainable farming. They’re one of only 50 WWF Conservation Champion Wine Farms in South Africa and an active supporter of the Biodiversity and Wine Initiative. From hand-harvesting at dawn to basket pressing and wild ferments, everything is done with integrity and care.

Add in a sense of history, a modern design-forward tasting room at their new Vrymansfontein site, and a winemaking team who are hands-on from vine to bottle – and you’ve got something really special.

In short, this is a range that stands out for its quality, story and style and we’re proud to bring it to our customers. Ready to list Vondeling? Let’s chat.

Two key factors will influence the importance of lower abv wines in 2025. Firstly, moderation is increasingly a factor for consumers and there is a greater tendency to socialise without alcohol or seek no- and low-alcohol alternatives. Secondly, with the introduction of the new duty bands, higher abv products will incur a higher duty cost.

VILLAWOLF A Pfalz Gem Worth Stocking

In the ever-evolving world of wine, it’s the hidden gems that often leave the most lasting impressions. Villa Wolf, nestled in Germany’s Pfalz region, is one such treasure, offering a range of wines that seamlessly blend tradition with modern appeal.

A LEGACY OF EXCELLENCE

Established in 1756, Villa Wolf has a storied history spanning over two centuries. The estate experienced a renaissance in 1996 when Ernst Loosen, renowned for his work at Weingut Dr. Loosen, took the helm. His vision was clear: to craft wines that authentically express the unique terroir of the Pfalz. Under his guidance, Villa Wolf has embraced sustainable viticulture and minimalist winemaking, ensuring each bottle reflects the region’s character.

WHY VILLA WOLF DESERVES A PLACE ON YOUR LIST

Authentic Terroir Expression: Villa Wolf’s commitment to sustainable practices and traditional methods results in wines that are true ambassadors of the Pfalz region. Their Pinot Gris, for instance, is crafted in a full-bodied, dry style, showcasing fresh, unoaked fruit and a crisp texture.

Versatility in Pairing: The wines’ balanced acidity and rich flavour profiles make them exceptionally food-friendly. Whether it’s the creamy notes of their Pinot Gris complementing seafood dishes or the

vibrant freshness pairing with light salads, Villa Wolf wines enhance a variety of culinary experiences.

Sustainable and Ethical Production: With organic certification achieved in 2021, Villa Wolf demonstrates a dedication to environmental responsibility. This aligns with the growing consumer demand for sustainably produced wines, adding an ethical appeal to their offerings.

Heritage Meets Innovation: The fusion of centuries-old winemaking traditions with contemporary techniques ensures that Villa Wolf wines are both timeless and in tune with modern palates. This balance appeals to both traditional wine enthusiasts and a younger, adventurous demographic.

Incorporating Villa Wolf into your selection not only diversifies your wine list but also offers patrons a taste of German winemaking heritage, delivered with a modern twist. It’s an opportunity to provide an exceptional wine experience that resonates with quality, authenticity, and sustainability.

USA

The US wine industry has come a long way since Spanish settlers planted vines in the 1500s. California’s Napa and Sonoma regions began to flourish in the 1800s, but prohibition nearly destroyed the industry in the 20th century. Recovery was slow, but

a major turning point came with the 1976 Judgement of Paris, when Californian wines beat top French wines in a blind tasting. Today, the US is the fourth-largest wine producer, with high-quality wines across many styles and price points. Our American range includes the

juicy Man With The Ax Cabernet, the elegant Twill Cellars Pinot

, and the vibrant Scheid District 7 Pinot and Chardonnay. These wines show just how far American winemaking has come.

OF THE DROPS

Straight from the tasting table to the top of our charts – these three (it could have been 12!) wines are the ones our buyers are buzzing about. Big flavour, serious style, and plenty of personality… these bottles are certified showstoppers. Add them to your list before everyone else does.

Camino de Navaherreros Tinto

In the wild country to the west of Madrid sits Bodegas Bernabeleva. Four generations of the family have tended these vines in impossibly poor soils. Certified organic and practicing biodynamic, these wines exude character and a sense of place.

This hand picked Garnacha is beautifully perfumed showing wild red berries and hints of lavender. There is some lovely dark berry fruit on the palate and a cranberry-esque sweet but dry finish. My current favourite.

Corryton Burge Cabernet Sauvignon

I’m a huge Cabernet fan, and this wine screams all I love about Cabernet. Its unashamedly big and bold, full of sunshine. Velvety dark fruits, blackcurrant, black cherry, hints of herbs and spice too.

It's never overbearing though, and packs a great finish which punches way above its price point. Great BBQ wine for the summer…

Verdeca, Produttori di Manduria

A little known native Puglian variety that is starting to gain some traction internationally. And this is the best example I have tasted. Floral nose, apple blossom, lashings of pear and apple citrus, but the best part is the finish.

I'm a sucker for saline, minerally wines, and this one has that in spades! Perfect with Caprese salad, anchovies and lighter chicken dishes. This is going to be my summer white!

DEBUNKING SPARKLING WINE JARGON

FIZZ, FLUFF & fa n cy wor ds

Let’s be honest. Sparkling wine labels love a bit of drama. Gold foil, cursive writing and a flurry of terms designed to impress and baffle. But behind the show, some of it’s actually useful, and some of it is just smoke and mirrors. If you want to serve better wine, understand what you’re pouring, and cut through the marketing spiel, here’s what you need to know

SPARKLING WINE INDICATORS OF QUALITY

Traditional Method

(aka Méthode Traditionnelle, Metodo Classico, or Classic Method)

Used in Champagne, English Sparkling, Cava, Franciacorta and some high-end South African fizz (MCC or Méthode Cap Classique) amongst others. Secondary fermentation takes place in the bottle, followed by lees ageing, which adds fine bubbles, creaminess and complexity. A gold standard for quality fizz..

Charmat Method (or Tank Method)

Used for Prosecco, some Lambrusco, and other fruitforward sparkling wines. Secondary fermentation happens in pressurised tanks, not in the bottle. The result is fresh, youthful fizz with juicy fruit and bigger bubbles. While often associated with cheaper styles, good Charmat wines (like top-tier Prosecco Superiore DOCG) can be excellent. The key is grape quality and time on lees.

Pétillant Naturel (aka Pét-Nat)

A natural sparkling style made using the ancestral method, where the wine is bottled before fermentation finishes. No added sugars, no second fermentation — just a single wild, rustic fizz bomb.

Unfiltered and often cloudy, with lower pressure, funkier flavours and no dosage. Proper ones are smallbatch, minimal intervention and packed with character. They’re not polished, but that’s the point.

Transfer Method

A hybrid between Traditional and Charmat. The second fermentation still happens in the bottle, but instead of riddling and disgorging each one individually, the wine is transferred to a tank, filtered, then rebottled under pressure.

Used for some Australian and New World fizz. Still capable of quality, especially when lees ageing is involved, though less nuanced than full Traditional Method.

CHAMPAGNE INDICATORS OF QUALITY

Brut / Extra Brut / Brut Nature

This refers to dosage, the small amount of sugar added after ageing to balance the acidity.

Brut Nature – no sugar added at all, bone dry

Extra Brut – barely any sugar

Brut – the most common style, still dry, just a touch softer

The less sugar, the more the wine needs to stand on its own. So if you see Extra Brut or Brut Nature and it tastes brilliant, you’re drinking good stuff.

Disgorgement Date / Lees Ageing

A Champagne that tells you how long it’s aged on the lees (dead yeast cells) or gives a disgorgement date (when it was finished and corked) is usually made by someone who cares.

THE FINAL WORD

Long lees ageing adds richness, creaminess and those lovely toasty, nutty notes.

Méthode Traditionnelle

This is how all proper Champagne is made. The second fermentation happens in the bottle, not in a tank. That’s what creates the fine bubbles, the yeasty richness and the long, elegant finish. If a sparkling wine isn’t made this way, it’s not Champagne.

Vintage vs Non-Vintage (NV)

A vintage Champagne is made from grapes harvested in a single year. It’s only done in the best years and usually means the wine has a bit more depth and ageing potential.

Non-vintage is a blend of multiple years, made to keep the house style consistent. Still great, just different.

Blanc de Blancs / Blanc de Noirs

Made entirely from white grapes (mainly Chardonnay), which usually makes it crisp, zesty and age-worthy.

Blanc de Noirs is made from black grapes (Pinot Noir or Pinot Meunier) but without skin contact, so it’s still white in the glass. These tend to be richer, rounder and a bit more food-friendly.

Grower Champagne (look for RM on the label)

Flip the bottle over and you might see letters like RM, NM or CM. RM stands for Récoltant-Manipulant, or grower Champagne. That means the same people who grew the grapes made the wine. More hands-on, more personality, often much better value. Well worth seeking out.

When it comes to Champagne and Sparkling wines of the world, knowledge beats branding every time. The labels might be dressed up, but if you know what to look for, and what to ignore, you can offer your customers real value, better flavour and bottles with genuine character.

So if you’re looking for wines that drink well above their weight without costing the earth, we’ve got the good stuff.

BUBBLES beyon d pr osecco

We all know Prosecco sells. It’s easy-drinking, familiar and won’t scare off the fizz-shy. But there’s a bigger world out there when it comes to sparkling wine – and venues that want to stay ahead of the curve (and offer real value) should be looking at the likes of Cremant, English Sparkling and Cava. They bring more depth, more character and often better bang for your buck. Let’s break them down

Cre ma nt

FRANCE’S BEST-KEPT SPARKLING SECRET?

Crémant might not have the star power of Champagne, but trust us – it’s worth shouting about. Made using the Traditional Method (same as Champagne), it offers those lovely fine bubbles and bready notes you’d expect, just without the hefty price tag.

The beauty of Crémant is its variety. It’s produced across France in regions like Alsace, Burgundy and the Loire Valley. Each area brings its own twist, using different grape varieties that reflect local terroir. For instance, Crémant d’Alsace often features Pinot Blanc and Riesling, delivering a lean, floral fizz, while Crémant de Bourgogne leans on Chardonnay and Pinot Noir for richness and elegance.

Venturing into the Languedoc region, we find Limoux – believed to be the birthplace of French sparkling wine. Here, Maison Antech has been crafting exceptional sparklers for over five centuries. Their Blanquette de Limoux Brut, Cuvée Françoise is a testament to this legacy. Comprising 90% Mauzac, 5% Chardonnay and 5% Chenin Blanc, this wine showcases the unique character of the local Mauzac grape. Pale yellow with golden reflections and fine bubbles, it greets you with aromas of spring flowers, fresh apple and pear. The palate is lively, harmonious and round, making it a delightful aperitif option.

Featuring such distinctive Cremants on your list not only diversifies your offerings but also introduces your patrons to the rich tapestry of French sparkling wines beyond the well-trodden path of Champagne.

Cava

SPAIN’S UNDERRATED STAR

Cava often gets lumped in as ‘cheap fizz’, but that’s selling it short. Like Champagne and Crémant, it’s made using the Traditional Method, giving it those fine bubbles and toasty notes. But it’s crafted using local Spanish grapes like Macabeo, Xarel·lo and Parellada, which give it a fresh, savoury edge.

Good Cava has bright citrus, green apple, sometimes a touch of nuttiness – and a clean, refreshing finish. Go for Reserva or Gran Reserva if you want longer ageing and added complexity. And keep your eye out for producers pushing organic and biodynamic approaches, like Bodegas Sumarroca –they’re combining proper craftsmanship with sustainable practices.

A standout example from Bodegas Sumarroca is their Cava Núria Claverol Homenatge 2016. This exceptional cava is a tribute to the founder’s wife, Nuria, reflecting her deep connection to the land. Sourced from the Peretes plot in the Santa Creu sector of the Sumarroca estate, the 50-year-old Xarel·lo vines thrive in gravelly, fossil-rich soil, imparting unique mineral qualities to the wine. Hand-harvested and fermented in stainless steel at 16ºC for 20 days, it undergoes over 45 months of ageing, resulting in intense aromas with mineral and roasted notes. The palate is extremely flavoursome with fine bubbles that melt in the mouth, integrating with complex aromas of brioche, baking spices, white fruits, and floral notes. This cava pairs beautifully with dishes like risotto, paella, lamb, and pork, or can be enjoyed on its own.

Eng lish Fizz

HOMEGROWN & HITTING THE BIG LEAGUES

English fizz has gone from punchline to powerhouse. The soils in Kent, Sussex and beyond are chalky, just like Champagne. The grapes – Chardonnay, Pinot Noir and Pinot Meunier – are the same. And the wines? They’re now winning awards on the global stage.

What sets English sparkling apart is its zip. Crisp acidity, fresh orchard fruit, and a lean, elegant finish make it ideal with food. Plus, it’s made using the Traditional Method, which means time on the lees, fine bubbles and all that lovely complexity.

A prime example of English sparkling excellence is the All Angels Classic Cuvée Long Aged on Lees. This Berkshire-based producer has crafted a wine that reflects the potential of England’s terroir. Comprising 50% Chardonnay, 28% Pinot Noir, 11% Pinot Gris, and 11% Pinot Meunier, this cuvée has been aged on lees for over six years, resulting in a richly yeasty nose of creamy brioche, bruised red apple, and blood orange. The palate offers great depth, with ripe yellow fruits elevated by crisp citrus acidity and a touch of dried apricot on the long finish.

This wine’s complexity and balance make it a versatile partner for a range of dishes, from delicate seafood to richer poultry courses. Its extended lees ageing imparts a creamy texture and depth that can elevate any dining experience.
