Since Chris and I joined Inn Express, we set ourselves the challenge of elevating what was already an exciting range into something even more distinctive, something that gives independent venues like yours a real point of difference.
We’re well on our way. But this is just the beginning.
One challenge that can’t be ignored is the recent duty changes.
Many in the trade had hoped the new government would reverse the complex and impractical tax system introduced last year, but it remains in place.

GIVE US YOUR TOP TIP THAT NOT ENOUGH VENUES USE TO MAXIMISE THEIR WINE SALES?
A simple tip would be when building a wine list, ensure that you have up-selling opportunities throughout your list for your customers to trade up to. An example would be having 2 x Sauvignon Blancs, one at an entry level price point and then an aspirational wine such as a Marlborough Sauvignon, to trade up to. The same would work with Malbec and within the rosé category, where wines from Provence are currently in vogue.
Aspirational wines always sell, and they deliver great margins. Cash-in on their popularity.

Choosing and pricing the right wines for your venue can be a daunting task. Let us take that pressure away and gain those crucial extra sales and profits.
SUIT YOUR VENUE
One of the most influential and basic starting points when creating a great wine menu is ensuring that your list reflects the setting it is intended to be used in.
Whilst listing every on-trend and fashionable wines may seem like an obvious (and tempting) thing to do, it will not always be possible. You should pay the same attention to your wine list as you would do your food, cocktail list or decor. For example a craft beer and cocktail bar may choose to lean into lesser know varieties or producers to offer consumers a more diverse choice, whereas a quintessentially British pub in the country may opt for a list filled with classics but with some strategically placed English wines to offer intrigue and discovery.
FOOD FOR THOUGHT
If the venue serves food, the wine list needs to complement the menu. If you are a seafood restaurant, a list dominated by heavy reds isn’t the best way to go.
A well thought out list will work well with the food offering and elevate both the food and the drinks.
Consider adding food suggestions to help your customer make their choice and to drive upselling but also add drinks selections to your food menu

The layout of the list is important as it helps customers navigate their choices and it helps drive margins.

Divide the list into simple categories such as Sparkling & Champagne / White / Rose / Red / Dessert Wine – Port – Sherry.
This system is proven to increase sales as it enables customers to browse and choose based on their taste rather than by price.
Within this you can break this down into flavour profile:
White -Fresh & Crisp / Floral and Fruity / Rich and Full bodied

If you are a venue with a more modern approach then we advise to add in an experimental section to cover quirky or edgy wines such as Natural/ Orange/Biodynamic wines.
NO TIGHT MARGINS
To ensure the wine list is working commercially for you, it needs to be priced correctly.
Depending on the type of venue, wine bottle pricing is usually set between 60-70% GP%. The higher the price point, a cash margin approach is required to ensure wines are accessible.
By the glass pricing is usually set from 70-76% GP%, again, venue dependent.
125ml should carry the most profitable margin, then a sliding scale on 175ml & 250ml.
GET THE PRICES RIGHT
Gain balance across the range by steadily increasing the prices across the list so each step up isn’t too big.
Never list your cheapest wine at the top! Mix up the wines so that they are not in price order. Taking the customers’ decision away from price is always the best way to ensure they trade up.
If you feel you need a house wine then we suggest looking at a great value blended option.
This not only offers those price conscious customers a lower entry point but also ensures you are able to make the correct margin on this line.
The most popular wines on your list (Pinot Grigio/Sauvignon Blanc / Merlot/ Malbec) should be at price points where you make the best margins. Never have these wines as the cheapest on the list, you want to encourage customers to look though the list prior to making their choice.
SELL SELL SELL
Ensure your list encourages customers to trade up. A great way to do this is to have multiple examples of popular grape varieties throughout the list.
For example, have an entry level Sauvignon Blanc and then encourage an up-sell by listing a New Zealand Sauvignon Blanc at a higher price point.
The same can be done throughout the wine list on popular wines, think Malbec, Rioja- Crianza – Reserva, Rose- Pinot Grigio Blush to Provence, Prosecco to Crémant / English Sparkling.
OFFER GREAT VALUE
While the wine list needs to work commercially its important to consider Value. If a wine isn’t great value, the customer will not buy the 2nd glass or another bottle. A wines perceived value is directly related to quality and cost. Ensuring you get this balance correct will help drive repeat sales, volume and ultimately profits.

The more you spend, the better the wine.
Here’s Why?
It’s no secret: spend a bit more on wine, and you’ll notice the difference. But when you break it down, it’s not just about splashing the cash – the numbers speak for themselves. Once you factor in packaging, logistics, VAT, margins, and excise duty, the true value of the wine in your bottle increases significantly when you invest in premium products.
With the recent budget announcement, Chancellor Rachel Reeves confirmed that, as of 1st February 2025, alcohol duty will rise in line with RPI, and the current wine
duty easement will come to an end. This means higher ABV wines will face greater duty charges but before you start reaching for the low ABV wines, have a think!
Our analysis shows that on a bottle of wine with an ABV of 14.5% priced at £15.65, £3.21 will go straight to duty (20.5%). Once packaging , VAT and logistics are removed that leave £4.16 (26.6%) is spent on the actual wine itself.
Compare that same ABV wine but at a cheaper price point of £8.65 and the duty equates to £3.21 (37.1%) and leaves only £1.56 (18%) for the wine.
This highlights how, in lowerpriced bottles, a significantly higher proportion of the cost is absorbed by duty, leaving less budget for the quality and production of the wine itself.
It’s clear that spending more doesn’t just mean better wine – the quality improves exponentially with price. So, when it comes to wine lists, investing in premium bottles is well worth it for both quality and customer satisfaction.

Dessert wines offer something truly special. More than just a sweet sip, these wines showcase craftsmanship, balance and regional character. Whether it’s the golden glow of a Sauternes or the rich intensity of an Australian Muscat, there’s a style for every menu.
Late harvest wines like Indomita Nostros from Chile offer ripe tropical fruit and honeyed notes, thanks to grapes picked at peak ripeness. For something with a

ALL ANGELS
All Angels multi-award winning, English sparkling wines are made exclusively from grapes grown in our three stunning, hand nurtured vineyards. Each one sustainably cultivated to ensure that the wines blend the essence of their historic location, the character of the grape varieties and, the spirit of the growing season, producing outstanding quality, single estate, unique expressions every year.
All Angels is at Church Farm, Enborne, just five minutes outside Newbury, West Berkshire. The farm and its surroundings have seen nine centuries of history that have influenced the story of England itself, from the C12th eponymous church of St. Michael & All Angels with either the oldest or second oldest church bell in the country, through the Crusades and the English Civil War to the US 101st Airborne during WW2. Church Farm itself was at one time
owned by Cromwell’s colonel who arrested King Charles I. The views from the vineyards take in Coombe Gibbet, Highclere Castle, Watership Down, Beacon Hill and the site of the first Battle of Newbury in 1643.
After purchasing Church Farm in 2009, the Darley family quickly dispensed with Mark’s initial idea of rearing Alpaca (!) and, after receiving an outstanding endorsement from the country’s leading viticultural consultants, chose to plant vineyards dedicated to producing only the very finest English Sparkling Wine. The first vineyard was planted in 2011. There are now three vineyards growing predominantly Chardonnay, Pinot Noir and Meunier but also some Pinot Gris, Pinot Blanc and Rondo.
The day to day running of All Angels is led by Mark & Christine Darley and Kay Smitham. Mark retired from the City in 2020 after 36 years of law, the last 20 of which were as a partner in a US law firm leading a group
that meant spending much of his time out of the country. As he says, he’s now swapped his commute from one hour on the Tube next to someone’s armpit (Mark is not tall) to three minutes with three Labrador dogs. Kay’s background is also City based, she too left the City in 2020 to complete her wine diploma and focus on a career in the wine industry (and to work with All Angels).


All Angels unique philosophy towards its multi-award winning wines can be summarised as “Quality over Volume, Patience before Revenue”, a combined approach that we believe makes All Angels unique. We are not interested in producing the most wine, just the very best.

Although we could produce 35k – 40k bottles a year, we aim for c. 25k bottles of the most premium sparkling wine: we carry out a vigorous green harvest and discard up to 1/3rd of healthy grapes to concentrate the nutrition in the remainder, help them ripen to their peak and reduce the stress on the vines to minimise disease. We will never, ever use grapes that we have not grown ourselves: our wine needs to be a reflection of our ecosystem and land and, as we say, it is important that we know exactly how each grape has been treated from the day the vine is planted to the day the bottle is opened.

All Angels places an enormous
emphasis on sustainability in its broadest sense and we believe we have a responsibility not just to maintain the environment in which our nature lives but to enhance it so that we leave the land in a better condition than when we took over custodianship. At the end of the day, while vines and All Angels are important the land is the very place where nature – above and below ground – has its home. We have planted trees extensively, put in wildflower meadows and wetland ponds as well as wild bee houses. We are blessed with the nature we have: rabbit, hare, fox, badger, deer, otter, nightingale, cuckoo, so many other species of bird as well as seven different types of bat – two extremely rare and one of which roosts in the ground: take a pair of thermal binoculars out into the vineyard at night and it looks like the M25, Mark says.

Bord Elegance, Cotes Du RhÔne Villages
The Rhone Valley is a region that surprises and delights with its diversity. Laudun recently became the 18 Cru in the region and joins the likes of well-known appellations, such as Châteauneuf-du-Pape and Hermitage. Gems like the Bord Elegance CDRV Laudun Blanc from Maison Brotte are still around if you look in the right places.
A blend of predominantly Grenache Blanc, with a touch of Clairette, Viognier & Roussanne reveling a fresh nose of pear and apricots. Super elegant and silky, with a freshness typical of the region. Throw in green apples, mango & almonds and you have a vibrant wine with complexity.

I've always been a fan of Carignan and this single varietal doesn’t disappoint, it’s a bit of a bargain!! Again, the key here is old vines, 50-60yrs old in this instance and this wine really delivers.
Medium weight, dark black fruits dominate, layered with herbs and a smoky/meatiness. Love this!

WATER KLOOF P r oducer P r ofile

Life is full of circumstance, both positive and negative. Some we are inextricably bound to and others we create. The story of Waterkloof and its wine, is one full of circumstance.
The grandfather of Waterkloof Custodian Paul Boutinot died in The Loire age 42 (it was the drink), so Paul’s dad had to leave school at 11 and work to provide for the family. He became a baker, then a promising chef-pâtissier, until one day in 1940, The Nazis arrived. The very next night he was a refugee at 18, choosing to escape France with friends in a fishing boat to England, where he became an SAS (Special Air Services) ‘Original’ during WWII.
After the war, Paul’s father and English mother saved and saved, eventually opening a small French restaurant in Manchester, England in the 1960s.
Not one to do as he was told, Paul was excluded from school and began working in the restaurant in the late 70s, becoming the sommelier, or more aptly, the waiter who knew a bit about wine.
Then in 1980, disillusioned with both the quality of wine available from local distributors up North and the prospect of taking over his parents’ restaurant, he set-up a one-man-band wine import and distribution business, unimaginatively named Boutinot. Over the next three decades it became the UKs largest wine specialist, which,
unlike its competitors, produced much of what it imported, firstly in France (Loire, Rhone and Languedoc), then latterly -once apartheid ended in the mid-90s- also in South Africa with the establishment of Waterkloof’s antecedent and sister-company False Bay Vineyards. Paul has always had an eye on the future, unearthing undiscovered gems and taking the less-trodden path. South Africa represented precisely that.
His winemaking method has always been simple: Naturally balanced grapes, hence no winemaking additions other than a little sulphur. He didn’t own a vineyard. Grapes were purchased from growers. Buying a site that produced better grapes

than those he could source was beyond Paul’s means, but by the late 90s he had accumulated the resources, as well as the itch to take the plunge. And so, the journey began to find his ideal vineyard, which he finally did with Waterkloof in 2003: A stellar and much sought after site, just 3 miles from the windswept Atlantic Ocean. The most coastal, coolest and lowest yielding vineyard in Stellenbosch. Ideal circumstances to produce fine wine, further enhanced over the ensuing years by an awe-inspiring transformation into a certified WWF Conservation Champion, organic and fully fledged regenerative farm.
In 2013, with Waterkloof established for a decade,



Paul sold his wine import business and the production business in France to focus, along with his son Louis, solely on Waterkloof and False Bay Vineyards.
Through a happy combination of both fortuitous and created circumstances, Waterkloof continues its steady progress in farming, winemaking and renown. To date, they have somehow managed to notch up the largest number of features of any wine producer, not only in Decanter’s ‘Weekday Wine’ Section (value wines), but also in Jancis Robinson MW’s ‘Wine of The Week’ page.

Vondeling is based in the VoorPaardeberg – a lesser-known but hugely exciting wine-growing region just an hour outside Cape Town. The estate has deep roots, with vines dating back to the 1980s, but the modern Vondeling story really began 25 years ago when British founder Julian Johnsen started replanting the estate. Together with fellow Brit Anthony Ward, his son Max, and Senior Winemaker Matthew Copeland, the Vondeling team has built a portfolio of nearly 20 award-winning wines – 10 of which now sit above 90 points in the 2025 Platter’s Wine Guide. Their Bordeaux-style red blend recently won Best Red Wine in the country in the 2024 Platter’s, confirming

their place at the top of South Africa’s premium wine scene.
Of course, we’re not listing all twenty – but we’ve hand-picked some absolute standouts for our portfolio, including their Petit Blanc, a bright, zesty white blend that’s ideal for by-the-glass offerings and casual dining. The Petit Rosé is equally crowd-pleasing – dry, pale and effortlessly drinkable. Perfect for spring and summer menus.
For those looking to elevate their white range, the Vondeling Sauvignon Blanc is a smart pick – cool-climate freshness, citrussy and clean, but with more complexity than your average bottle. The Barrel Selection Chardonnay, meanwhile, is punching well above its weight, thanks to a unique mix of French oak and fermentation in concrete eggs. It brings energy, minerality and finesse – ideal for premium pours or food-led venues.
One of our personal favourites is Babiana – a signature Cape White Blend named after a rare flower found only on the estate. It’s a true reflection of Vondeling’s minimal-intervention winemaking and deep respect for the land. It also happens to be delicious – textured, aromatic and perfectly balanced.

Camino de Navaherreros Tinto
In the wild country to the west of Madrid sits Bodegas Bernabeleva. Four generations of the family have tended these vines in impossibly poor soils. Certified organic and practicing biodynamic, these wines exude character and a sense of place.
This hand picked Garnacha is beautifully perfumed showing wild red berries and hints of lavender. There is some lovely dark berry fruit on the palate and a cranberry-esque sweet but dry finish. My current favourite.

Corryton Burge Cabernet Sauvignon
I’m a huge Cabernet fan, and this wine screams all I love about Cabernet. Its unashamedly big and bold, full of sunshine. Velvety dark fruits, blackcurrant, black cherry, hints of herbs and spice too.
It's never overbearing though, and packs a great finish which punches way above its price point. Great BBQ wine for the summer…

A little known native Puglian variety that is starting to gain some traction internationally. And this is the best example I have tasted. Floral nose, apple blossom, lashings of pear and apple citrus, but the best part is the finish.
I'm a sucker for saline, minerally wines, and this one has that in spades! Perfect with Caprese salad, anchovies and lighter chicken dishes. This is going to be my summer white!

DEBUNKING SPARKLING WINE JARGON
FIZZ, FLUFF & fa n cy wor ds
Let’s be honest. Sparkling wine labels love a bit of drama. Gold foil, cursive writing and a flurry of terms designed to impress and baffle. But behind the show, some of it’s actually useful, and some of it is just smoke and mirrors. If you want to serve better wine, understand what you’re pouring, and cut through the marketing spiel, here’s what you need to know
SPARKLING WINE INDICATORS OF QUALITY
Traditional Method
(aka Méthode Traditionnelle, Metodo Classico, or Classic Method)
Used in Champagne, English Sparkling, Cava, Franciacorta and some high-end South African fizz (MCC or Méthode Cap Classique) amongst others. Secondary fermentation takes place in the bottle, followed by lees ageing, which adds fine bubbles, creaminess and complexity. A gold standard for quality fizz..
Charmat Method (or Tank Method)
Used for Prosecco, some Lambrusco, and other fruitforward sparkling wines. Secondary fermentation happens in pressurised tanks, not in the bottle. The result is fresh, youthful fizz with juicy fruit and bigger bubbles. While often associated with cheaper styles, good Charmat wines (like top-tier Prosecco Superiore DOCG) can be excellent. The key is grape quality and time on lees.
Pétillant Naturel (aka Pét-Nat)
A natural sparkling style made using the ancestral method, where the wine is bottled before fermentation finishes. No added sugars, no second fermentation — just a single wild, rustic fizz bomb.
Unfiltered and often cloudy, with lower pressure, funkier flavours and no dosage. Proper ones are smallbatch, minimal intervention and packed with character. They’re not polished, but that’s the point.
Transfer Method
A hybrid between Traditional and Charmat. The second fermentation still happens in the bottle, but instead of riddling and disgorging each one individually, the wine is transferred to a tank, filtered, then rebottled under pressure.
Used for some Australian and New World fizz. Still capable of quality, especially when lees ageing is involved, though less nuanced than full Traditional Method.

CHAMPAGNE INDICATORS OF QUALITY
Brut / Extra Brut / Brut Nature
This refers to dosage, the small amount of sugar added after ageing to balance the acidity.
Brut Nature – no sugar added at all, bone dry
Extra Brut – barely any sugar
Brut – the most common style, still dry, just a touch softer
The less sugar, the more the wine needs to stand on its own. So if you see Extra Brut or Brut Nature and it tastes brilliant, you’re drinking good stuff.
Disgorgement Date / Lees Ageing
A Champagne that tells you how long it’s aged on the lees (dead yeast cells) or gives a disgorgement date (when it was finished and corked) is usually made by someone who cares.
THE FINAL WORD
Long lees ageing adds richness, creaminess and those lovely toasty, nutty notes.
Méthode Traditionnelle
This is how all proper Champagne is made. The second fermentation happens in the bottle, not in a tank. That’s what creates the fine bubbles, the yeasty richness and the long, elegant finish. If a sparkling wine isn’t made this way, it’s not Champagne.
Vintage vs Non-Vintage (NV)
A vintage Champagne is made from grapes harvested in a single year. It’s only done in the best years and usually means the wine has a bit more depth and ageing potential.
Non-vintage is a blend of multiple years, made to keep the house style consistent. Still great, just different.
Blanc de Blancs / Blanc de Noirs
Made entirely from white grapes (mainly Chardonnay), which usually makes it crisp, zesty and age-worthy.
Blanc de Noirs is made from black grapes (Pinot Noir or Pinot Meunier) but without skin contact, so it’s still white in the glass. These tend to be richer, rounder and a bit more food-friendly.
Grower Champagne (look for RM on the label)
Flip the bottle over and you might see letters like RM, NM or CM. RM stands for Récoltant-Manipulant, or grower Champagne. That means the same people who grew the grapes made the wine. More hands-on, more personality, often much better value. Well worth seeking out.
When it comes to Champagne and Sparkling wines of the world, knowledge beats branding every time. The labels might be dressed up, but if you know what to look for, and what to ignore, you can offer your customers real value, better flavour and bottles with genuine character.

We all know Prosecco sells. It’s easy-drinking, familiar and won’t scare off the fizz-shy. But there’s a bigger world out there when it comes to sparkling wine – and venues that want to stay ahead of the curve (and offer real value) should be looking at the likes of Cremant, English Sparkling and Cava. They bring more depth, more character and often better bang for your buck. Let’s break them down

FRANCE’S BEST-KEPT SPARKLING SECRET?
Crémant might not have the star power of Champagne, but trust us – it’s worth shouting about. Made using the Traditional Method (same as Champagne), it offers those lovely fine bubbles and bready notes you’d expect, just without the hefty price tag.
The beauty of Crémant is its variety. It’s produced across France in regions like Alsace, Burgundy and the Loire Valley. Each area brings its own twist, using different grape varieties that reflect local terroir. For instance, Crémant d’Alsace often features Pinot Blanc and Riesling, delivering a lean, floral fizz, while Crémant de Bourgogne leans on Chardonnay and Pinot Noir for richness and elegance.
Venturing into the Languedoc region, we find Limoux – believed to be the birthplace of French sparkling wine. Here, Maison Antech has been crafting exceptional sparklers for over five centuries. Their Blanquette de Limoux Brut, Cuvée Françoise is a testament to this legacy. Comprising 90% Mauzac, 5% Chardonnay and 5% Chenin Blanc, this wine showcases the unique character of the local Mauzac grape. Pale yellow with golden reflections and fine bubbles, it greets you with aromas of spring flowers, fresh apple and pear. The palate is lively, harmonious and round, making it a delightful aperitif option.
Featuring such distinctive Cremants on your list not only diversifies your offerings but also introduces your patrons to the rich tapestry of French sparkling wines beyond the well-trodden path of Champagne.
Cava
SPAIN’S UNDERRATED STAR
Cava often gets lumped in as ‘cheap fizz’, but that’s selling it short. Like Champagne and Crémant, it’s made using the Traditional Method, giving it those fine bubbles and toasty notes. But it’s crafted using local Spanish grapes like Macabeo, Xarel·lo and Parellada, which give it a fresh, savoury edge.
Good Cava has bright citrus, green apple, sometimes a touch of nuttiness – and a clean, refreshing finish. Go for Reserva or Gran Reserva if you want longer ageing and added complexity. And keep your eye out for producers pushing organic and biodynamic approaches, like Bodegas Sumarroca –they’re combining proper craftsmanship with sustainable practices.
A standout example from Bodegas Sumarroca is their Cava Núria Claverol Homenatge 2016. This exceptional cava is a tribute to the founder’s wife, Nuria, reflecting her deep connection to the land. Sourced from the Peretes plot in the Santa Creu sector of the Sumarroca estate, the 50-year-old Xarel·lo vines thrive in gravelly, fossil-rich soil, imparting unique mineral qualities to the wine. Hand-harvested and fermented in stainless steel at 16ºC for 20 days, it undergoes over 45 months of ageing, resulting in intense aromas with mineral and roasted notes. The palate is extremely flavoursome with fine bubbles that melt in the mouth, integrating with complex aromas of brioche, baking spices, white fruits, and floral notes. This cava pairs beautifully with dishes like risotto, paella, lamb, and pork, or can be enjoyed on its own.

HOMEGROWN & HITTING THE BIG LEAGUES
English fizz has gone from punchline to powerhouse. The soils in Kent, Sussex and beyond are chalky, just like Champagne. The grapes – Chardonnay, Pinot Noir and Pinot Meunier – are the same. And the wines? They’re now winning awards on the global stage.
What sets English sparkling apart is its zip. Crisp acidity, fresh orchard fruit, and a lean, elegant finish make it ideal with food. Plus, it’s made using the Traditional Method, which means time on the lees, fine bubbles and all that lovely complexity.
A prime example of English sparkling excellence is the All Angels Classic Cuvée Long Aged on Lees. This Berkshire-based producer has crafted a wine that reflects the potential of England’s terroir. Comprising 50% Chardonnay, 28% Pinot Noir, 11% Pinot Gris, and 11% Pinot Meunier, this cuvée has been aged on lees for over six years, resulting in a richly yeasty nose of creamy brioche, bruised red apple, and blood orange. The palate offers great depth, with ripe yellow fruits elevated by crisp citrus acidity and a touch of dried apricot on the long finish.
This wine’s complexity and balance make it a versatile partner for a range of dishes, from delicate seafood to richer poultry courses. Its extended lees ageing imparts a creamy texture and depth that can elevate any dining experience.
