Make hydration a priority. Keeping the skin hydrated maintains its barrier integrity. When the skin becomes dry, it reduces the effectiveness of the skin barrier, making it less resilient against irritants and allergens.

What’s Better, Charcoal or Pellet?

What first drew you to charcoal grilling?

The aromas. They remind me of grilling and cooking with my grandfather. Cooking with coals just imparts such a deeper level of flavor than using something like propane or pellets. It also provides a much higher BTU (British thermal unit) output, making it perfect for grilling.

How does the flavor differ between wood pellet and charcoal grilling?

Pellets are compressed sawdust particles. Though it is technically wood, it loses so much of the flavor and cooking attributes that are found in cooking with an actual piece of wood.

What kinds of dishes does charcoal grilling excel at?

Everything. It may seem like the easy answer, yet it is true: Roasted/charred veggies, grilled chicken. There’s nothing like a steak grilled over coals with the fat rendering, hitting the coals and releasing smoke

elements back into the meat ... And no one has ever said, “Hmm, love that propane/pellet taste.”

When it comes to temperature control, is charcoal or pellet preferred, and why?

I prefer charcoal for several reasons, including the level of consistent burn and heat output. Charcoal also adds a true char and smoke flavor, whether it be briquettes or lump charcoal.

Besides flavor and temperature control, are there other benefits of one fuel source over the other?

The honest answer is rather simple: Damp or wet coal can still be lit and cooked with. I don’t know if you’ve ever seen a pellet get the slightest bit of moisture, but it immediately turns to sawdust.

Many people think charcoal is more complicated. What do you say to someone hesitant to make the switch?

Most things seem complicated or intimidating until you try them. It’s like riding a bike; once you do it you never forget it, and it’s never as scary after the first time. Charcoal allows you to impart amazing flavors, while giving you a consistent and even cooking experience.

Do you have tips for someone transitioning from a pellet grill to charcoal?

1. You don’t need nearly as much coal for a cook as you do pellets. Most cooks can be done with one-half to one full chimney of charcoal.

2. Experiment with flavors. Try adding fresh herbs to your bed of coals toward the end of the cook for additional flavor. Adding wood chunks also helps add additional depth of flavor.

3. Safety first: Make sure to have proper heat/fire handling equipment.

4. Lastly, have fun. Cooking should be an enjoyable experience, not one that you stress over.

3/4 cup extra-virgin olive oil

2 head-on whole branzini (about 1 pound each), cleaned and scaled

1. To make fresh herb sauce: In small bowl, combine dill, parsley, chives, garlic, salt, red pepper flakes, lemon zest, lemon juice and olive oil; set aside.

2. Set both sides of grill to 650 F (high) and close lid.

3. To prepare branzini: Season fish inside and out with kosher salt. Fill cavity of each fish with

4. Evenly coat skin of both fish with olive oil. Insert temperature probe into thickest part of flesh of each fish, parallel to dorsal fin, then place on grill with belly sides toward you. Close lid and cook 5 minutes.

5. Open lid and gently turn fish over with thin metal spatula or two forks. Close lid and cook 5 minutes, or until internal temperature reaches 145 F.

6. Transfer fish to platter and remove twine. Serve fish topped with fresh herb sauce.

Think rack by rack

Start at the top by loading smaller, lighter items like mugs, stemware and small plates and bowls in your second and/or third rack. Large utensils, spatulas and ladles should be laid flat on an upper rack, as putting them in the utensil holder could block the lower level spray arm. Smaller utensils can also be loaded on the upper rack - just make sure they’re placed so they won’t fall through open spaces in the rack. Plastic containers should be loaded on an upper rack away from the heating element to prevent warping or melting. Only wash plastic items that are marked “dishwasher safe.”

The lower rack is designed for large items like dinner plates and dishwasher-safe cookware. Alternating large and small items helps spray arms reach all surfaces. Place soiled pans, bowls and casserole dishes on their sides,

especially for older dishwashers that might only have a spray arm in the bottom that could be blocked by face-down dishes. Oversized items like cutting boards or pans are best laid down on their sides or placed around the perimeter so the spray arm isn’t impeded.

Finally, load the utensil holder with cutlery handles down, except for knives. They should be inserted blades down to protect fingers during emptying.

Joseph Denaburg: Absolutely. Every piece we restore has a past. I often wonder who wore it, what milestone it marked, and the hands it passed through before reaching us. Some pieces have love stories embedded in them, others have tales of war, resilience, or family legacies. It’s our job to respect and preserve those stories while making sure the piece is ready for its next chapter.

InFluential Magazine: Has there ever been a restoration that completely stopped you in your tracks because of its history or craftsmanship?

Joseph: There was one, an Edwardian engagement ring brought in by a woman who had just inherited it. It belonged to her great-grandmother, who had received it before her fiancé went off to war. The level of craftsmanship was mind-blowing, delicate filigree work, a rare old mine-cut diamond. The challenge was that time had not been kind to it, and it needed meticulous work. Restoring it felt like bringing history back to life.

InFluential Magazine: There’s a delicate balance between restoration and reinvention. How do you preserve the authenticity of an antique piece while ensuring it remains wearable and functional for modern clients?

Joseph: That’s the art of what we do. We must honor the original design while making subtle enhancements to ensure durability. If a setting is too fragile, we reinforce it without altering the aesthetic. If a gemstone is at risk, we secure it while keeping its antique character intact. It’s like restoring a historic building, you want to maintain the original charm while ensuring it stands strong for another century.

InFluential Magazine: Have you ever had a restoration challenge where you had to revive a nearly lost treasure?

Joseph: We once had a brooch from the Art Nouveau period that had been completely crushed in an accident. The enamel work was shattered, the goldwork twisted beyond recognition. The owner thought it was beyond saving. It took weeks of precise craftsmanship, hand-restoring the enamel, reshaping the gold frame, but when we finally presented it to her, she was in tears. That’s the kind of work that fuels my passion.

Joseph: Many times. One of the most memorable instances was a ring we sold in the 1950s. Decades later, the grandson of the original owner brought it back, wanting to restore it for his fiancée. It was a full-circle moment, seeing a piece we once sold, now ready to start a new love story.

Joseph: Absolutely. There was an Art Deco bracelet missing a custom-cut sapphire. Using 3D scanning, we recreated an exact match and had a new stone cut to fit seamlessly. A decade ago, that would have been nearly impossible.
