In the past nine years, aspects of our lives were moving at a normal pace. Today our citizens and local businesses are struggling due to the limitations necessitated by the COVID-19 pandemic. Tuscan Chicken Pierogy Skillet Prep time: 10 minutes Total time: 45 minutes Servings: 4 1 box Mrs. T’s Pierogies 4 Cheese Medley 3 tablespoons olive oil, divided 2 boneless, skinless chicken breasts, pounded to even thickness kosher salt, to taste ground black pepper, to taste 4 cloves garlic, minced 1 bag (5 ounces) fresh baby spinach 2 cups diced tomatoes 1 teaspoon dried Italian seasoning 1/4 cup chicken broth 1/2 cup heavy cream 3/4 cup freshly grated Parmesan cheese, plus additional, for garnish 1 tablespoon cold water 1/2 tablespoon cornstarch fresh basil, for garnish crushed red pepper flakes, for garnish

CELEBRATE YOUR ALL-STAR 1. Boil pierogies according to package directions. Drain then toss pierogies with 1 tablespoon olive oil to keep from sticking. 2. In 12-inch skillet over medium-high heat, heat 1 tablespoon oil. Season chicken with salt and pepper, to taste, and cook 8-10 minutes per side, until golden brown and cooked through. Transfer to plate, cover and allow to rest 5-8 minutes. Slice thin.

3. While chicken rests, lower heat to medium-low and add remaining oil to same skillet. Add garlic, spinach and tomatoes; saute 1-2 minutes until garlic is fragrant. Season with Italian seasoning and salt and pepper, to taste. 4. Stir in chicken broth, heavy cream and 3/4 cup Parmesan. In small bowl, whisk cold water and cornstarch then stir into pan. Simmer 4-5 minutes until thickened and creamy.

5. Return chicken and pierogies to skillet and toss to combine. If desired, top with additional seasonings, to taste. Garnish with fresh basil, Parmesan, and red pepper flakes, if desired. (Family Features) l

MEMORY-MAKING MOUSSE

A

lot of these good memories are centered around laughs, great conversation, and irresistible, mouthwatering food. Family events such as wedding showers, or the first day of spring after a bitter winter, can be reasons to celebrate and indulge in something out of the ordinary.

Fold half of the soft whipped cream mixture into the cooled chocolate. Once combined, add the rest of the whipped cream. Spoon the mousse into serving bowls or ramekins and refrigerate at least 2 hours. Once chilled, add toppings or reserved whipped cream and shaved chocolate, if desired.

1. In large bowl, combine chopped chocolate, marshmallows and 1/2 cup heavy cream. Microwave 2 minutes on high, or until marshmallows are melted. Let mixture cool 1 hour. 2. Using mixer, whip 1 3/4 cups heavy cream until soft peaks form. Reserve and refrigerate 1/2 cup whipped cream for topping. 3. In cooled chocolate mixture, fold in 2 cups whipped cream until combined. Add remaining whipped cream and mix until combined. 4. Spoon mousse into ramekins. Refrigerate at least 2 hours. 5. DAD FISHING What are two things that dads all over America would love to do the most this coming summer? Spend time with their kids ... and catch fish.

S

o, if you’re looking for a unique way to celebrate your love for dear ol’ dad, how about inviting him to go fishing (instead of the other way around). What should you do to prepare to take dad fishing? Here are some tips from the fishing folks at Rapala, which according to the International Game Fish Association (IGFA) is responsible for more world records than any other fishing lure in the world.

Ask dad to go fishing. Dad may be unsure if you or the rest of the family wants to go fishing. That’s where you’ll surprise him - by you asking

Give dad a proven fish catcher. him to fish. Grab a fishing rod, make a small card, and go up to dad and invite him to go fishing this summer. Get dad to commit to a date, and a back-up date, in case it rains. It’s a great way to bring a smile to his face.

Do your homework. You can let dad suggest a favorite lake or river for your day out, or you can go online and find a nearby lake, pond, or river to fish. Two sources to try out: FishBrain or Fishidy. Remember, you don’t need a boat to go fishing. There are many places where you can fish from shore, rent a canoe or boat, or kayaks. Some parks even rent fishing rods and reels for those who don’t have them.

Go to where the fish are. All dads want to think that catching fish was their idea. So of course, to ensure that you have a great day on the water, you’ll want to go where the fish are biting. If you’re not sure, call up a local fishing tackle shop to find out where to go, or go online to a local fishing magazine website for their latest fishing reports.

Take a great picture.

You’re going to need fishing lures to catch fish, so make sure to give dad a proven fish catcher - either the Original Floating Rapala and the Shad Rap, or both, if you want to be really kind to dad. F

rom playing games and visiting museums to exploring cultural heritage sites virtually, there’s no shortage of ways to engage young people in fun history lessons.

Historical Literature From traditional bound books to digital formats, there’s a practically endless list of titles dedicated to historical people, places, and events. If your child has an interest in a particular topic, consider starting with an age-appropriate nonfiction book that gives a high-level perspective of the topic. Then delve deeper by looking into biographies about the people involved and even related fictional tales to build knowledge and a broader perspective.

Movies or Theater Like books, there are hundreds of options for historically themed movies and theatrical productions. All you need to do is pick a topic or era. It can also be fun to look at how different movies depict the same historical topic at different points in time. Watching different genres can help give a fuller picture of an event or topic. Informative documentaries and entertaining historical dramas are also options for looking into the past.

Another way to look at history is through visiting historical destinations with cultural significance. Travel isn’t always practical, but you can go nearly anywhere in the world with a virtual tour where you can move around sites and monuments to see the details up close. An option like Flyover Zone’s appbased tours even take you a step beyond seeing the monuments as they look today. You can see ruins as they are today and beautiful virtual reconstructions of how they originally looked.

Cultural Events Events that celebrate cultural heritage provide a unique look at history and the way it influences modern times. These celebrations often include a wellrounded sampling of everything from traditions to culinary and artistic styles. You can find lectures, demonstrations, performances, sampling and more as you explore the diverse aspects of almost any chosen culture.

Teen Steak Banh Mi Prep time: 2 hours Cook time: 15 minutes Servings: 2 10 ounces Silver Fern Farms New Zealand grass-fed beef flat iron steak 2 teaspoons hoisin sauce 2 teaspoons soy sauce 2 teaspoons honey 1 teaspoon fish sauce 1 clove garlic, minced 1 teaspoon, plus 1/2 cup, rice vinegar, 1/8 teaspoon five-spice powder 2 tablespoons sugar 1 pinch salt 1 small carrot, cut into matchsticks 1 tablespoon vegetable oil 1/4 cup water 2 Vietnamese baguettes or dinner rolls 1/4 cup mayonnaise 4 Batavia lettuce leaves 1/4 cup cilantro, chopped 1 Persian cucumber, sliced 1. Remove steak from packaging and set aside 10 minutes. Once steak reaches room temperature, place steak in deep plate or storage container. In small bowl, combine hoisin sauce, soy sauce, honey, fish sauce, garlic, 1 teaspoon rice vinegar, and five-spice powder; pour over steak. Cover and marinate in fridge at least 2 hours, or overnight. 2. In small pot over medium heat, heat remaining rice vinegar, sugar, and salt. Cook and stir until sugar and salt dissolve. Slice baguettes along middle without cutting through. 11. Slice steak into thin pieces.

Playing in or around water is one of the joys of summer, but this treasured seasonal pastime comes with some serious risks. Drowning is the second-leading cause of accidental death for children under the age of 14 in the United States, according to the Centers for Disease Control and Prevention.

s COVID-19 restrictions ease, many families will have more informal gatherings and take trips to the beach, increasing the potential for children to have unsupervised access to water sources. Because of this, it’s important for children to take swimming lessons to learn water safety skills and create safer habits in

Teen Designate a Water Watcher and Closely Monitor Children. Designate a water watcher when you are in, on or around water. Watch all children and adolescents swimming or playing in or around water, even if they know how to swim. Keeping young children or inexperienced swimmers within arm’s length at all times can help ensure you’re able to provide assistance if and when it’s needed.

Wear a Life Jacket. Anyone participating in any boating, paddling, or towed water sports, regardless of swimming ability in pool or open water situations, should wear a Coast Guardapproved life jacket. Preschool-aged children (5 years old and younger), who are not protected by touch supervision, in particular, should always wear a life jacket. Swimming aids and water toys – such as water wings, inflatable water wings and rings – are not intended to be life-saving devices. They may provide some buoyancy in the water but do not prevent drowning.

Swim with a Buddy. When possible, choose swimming locations where a trained lifeguard is watching for dangerous conditions and helping keep an eye on swimmers. Also make it a practice to always have at least two people swimming together. That way, if someone has a problem, the other can get help. Learn to Swim. Research has shown formal swimming lessons reduce the risk of childhood drowning by 88%. Through the annual Make a Splash Tour, the USA Swimming Foundation, with the support of Phillips 66, encourages children’s swim lessons. By equipping your child with the skill of swimming, you’ll open doors to

a lifetime of safety, fun, fitness and even employment opportunities. While lessons progressively teach a variety of swimming strokes, some of the most important things swimmers learn – even in beginner classes – are breath control and how to float. These basic skills are essential for staying above water should someone find himself or herself unable to touch or too tired to swim to safety. Children can participate in swimming lessons before they can walk, and parent-child swim lessons provide bonding opportunities along with water safety education.

Enter Water Feet First. Diving in a pool that is too shallow or into water where you’re not certain what’s below the surface, like a lake, can have dire consequences. Teach children to dive only in designated diving areas and to always enter water of unknown or nonvisible depth feet first.

Swim in Designated Areas and Obey Posted Signs and Flags. Ropes, buoys, and flags in larger bodies of water like lakes or oceans are commonly used to mark off safe swimming areas and provide visual cues about changes in depth, underwater surfaces and currents. Teach children what these signs and markers mean and that they’re in place as safety tools, not toys to play with or float on.

Learn CPR. If the unthinkable does happen, knowing how to perform CPR allows you to take immediate action, which has been shown to significantly better the outcome for children with submersion injuries. In the time it takes for paramedics

Finding a Swim Lesson Provider If you’re unsure where to take your child for swim lessons in your community, these tips can help:

The conservation of endangered plant species project, which is supported by the Museum and implemented by the National Botanical Conservatory of the Paris Basin (hereafter CBNBP), consists in the reintroduction of endangered plant species, supported by prior expeditions of seed collections and seed banking of endangered species within the geographical remits of the CBNBP (Center-Loire Valley, Ile-de-France, regions of Burgundy and ex-ChampagneArdenne). This project enables to reinforce or reintroduce the plant species into the natural environment, thanks to seeds collected and placed in seedbanks, to the multiplication of plants in experimental gardens, as well as manage and restore habitats that welcome them. The objective, which is part of the Global Strategy for Plant Conservation’s objective 8, will help compensate eventual collapses or disappearances of populations, and intervene in the natural environment by reinforcing or reintroducing populations.

Endangered plant species Lancôme will help preserve include the Rose of France (Rosa gallica). As a brand whose emblem is the rose since its creation over 85 years ago, it was only natural to contribute to protecting this precious and subtle flower of a unique variety and exceptional scent. In addition to the Rose of France, a wealth of other species of plant are included in this conservation project, such as: Arnica montana, campanula cervicaria, inula hirta, ranunculus hederaceus or viscaria vulgaris. Thanks to the program, we will collect an average of fifteen species per year in each territory, meaning 45 species over the entire 3-year program for each region, and 180 seed lots in total. This partnership with the national Museum of natural History is a fundamental component of Lancôme’s sustainability program Caring Together for a Happier Tomorrow, launched on March 22nd 2021, through which the brand is accelerating its global transformation in matters of sustainability and social inclusion. l

Young people in underserved communities in the United States have been especially hardhit by the ongoing coronavirus pandemic, with many support systems and activities unavailable.

H

owever, as the situation begins to improve, an up-and-coming organization seeks to support youth with a combination of skillbuilding and support. Jump Ahead L3C, a hybrid for-profit/ nonprofit organization, is the brainchild of Deandre Jones, an entrepreneur in Grand Rapids, Michigan who is

committed to keeping young people off the streets and helping them develop valuable skills. Jones founded Jump Ahead L3C in 2018 and won a $10,000 grant from the city of Grand Rapids SAFE Task Force Pitch Night to create a pilot program that would engage at-risk youth in the community. This pilot project involved giving each member of a group of ten youth participants a $450 stipend to complete service-learning projects and attend a variety of skill-building workshops, events, and activity days. After the completion of the pilot project in August 2018, Jones began developing plans for a community center that will offer programs including arts and crafts, screen printing, e-sports, workshops, construction classes, yoga, music, basketball, and other activities.

“One of my goals in this is to inspire young entrepreneurs and people from all walks of life that if you work extremely hard and you believe in yourself, you can achieve anything and do it in a positive way,” he says. Jones further describes his ultimate goal of establishing a community center to help improve local infrastructure, especially for underserved populations. The center is in progress, and once completed, will be open 7 days a week to provide a place for members of the community to gather.

In addition, “We will also hire youth and pay them for service learning or community-based work as we did previously with the $10,000 grant,” he says. Of course, raising money remains a challenge. Jump Ahead L3C is currently selling baseball hats and seeking interested investors. “Covid-19 has made it tougher for us to receive merchandise and to raise capital to purchase a building to operate our organization structure. We did apply for a PPP (Paycheck Protection Program) loan, but we were not approved,” he says in a recent interview in Forbes magazine. Teen (Google it!) A popular keynote speaker, Lenore has given talks everywhere from Microsoft to DreamWorks, as well as at K-12 schools and colleges across the country, including her alma mater, Yale. Prior to this, Lenore was a reporter and columnist at the New York Daily News and the New York Sun. She is also host of the reality TV show, “World’s Worst Mom.”

Free-Range Kids: After her newspaper column “Why I Let My 9-Year-Old Ride the Subway Alone” landed her on The Today Show, NPR, Fox News and everywhere in between, Lenore was inspired to write Free-Range Kids. Turning The Tide: In many states, neglect laws are so broad and open to interpretation that parents can be investigated for something as simple as letting their children play outside on their own.
