Hey friends, some of you may know that I love to share my family’s recipes with you on the Pinkney Hill Meat Co Facebook page and I thought why not share this way, too! I hope to help you with meal planning plus share affordable meal ideas for you and your family. So, grab a cup of coffee or tea and let’s share recipes! Send them to the Pinkney Hill Meat Co., Facebook via Private Messenger or email at pinkneyhill1995@gmail.com.

Let’s get going with these two that I make frequently during the Fall months. Mr. loves him some acorn squash and I “kick” it up with the following:

BAKED ACORN SQUASH

1 Acorn Squash, split in half and all seeds scooped out.

1 lb. Pinkney Hill Bulk Breakfast Sausage

2 Tbls. Butter

1 Tbls. Pure Maple Syrup

Place cut side down on a foil lined baking dish that has been sprayed with a non-stick cooking spray of choice. Roast in a preheated 350 degree oven for approximately 30 – 45 minutes, until tender yet not fully cooked.

Remove from oven and carefully flip over and add the following per ½: 2 Tbls. butter (or margarine)

A scoop of Pinkney Hill Breakfast Sausage that has been browned and crumbled

1 Tlbs. Pure Maple syrup (I use our local Dusty Lane Farms maple syrup)

Cover with fork and place back in oven for additional 30-45 minutes or until the green outer shell is pierced easily with a fork. Serve with Pork Roast (recipe follows), and mashed potatoes for a hearty Fall meal.

ROAST PORK SHOULDER ROAST

Sprinkle all seasoning mixes over the roast and add 2 cups of water in bottom of the

Cover and bake at 350 degrees for 2 to 2.5 hours (depending on how hot your oven bakes).

Check after first hour, if it seems to be getting too thick
