FROM THE EDITOR - BERNIE CAWTE Welcome to the second on line, digital special. We had hoped to be able to resume our normal printed edition but that’s still not advisable at this moment in time. I hope you at least found our first attempt something worth while. Supporting our locals Thankfully the vast majority of pubs and clubs in Hull and East Yorkshire have made it through lockdown and most have reopened, but research has found that 42% of pub-goers are visiting the pub less than they did before.

So many pubs and clubs have supported their communities through lockdown, by running shops for essentials, delivering meals to vulnerable members of the community, moving the pub online to help fight loneliness and social isolation, or simply making sure that their regulars can still pick up fresh ale and cider.

ANOTHER NEW BRIDLINGTON PUB Open just over a month ago is the latest Bridligton pub called Bridbrewer & Taproom.

The Brewery consists of a 2 1/2 barrel capacity, (720 pints). from which they will produce their regular cask ales. Why not pop in and give this new brewery a try. Also near by to the Bridbrewer & Taproom is another bar that we need to feature. Although they have been open a little while longer then the Bridbrewer and Taproom, the Dog House also in King Street is worthy of a mention. HULL PUBS - JON MAJOR Well, here we are 7 months since the lockdown began and, although, pubs have managed to reopen in a fashion they are still being heavily restricted. Not only has the customer capacity been reduced and the total ban on live entertainment, (although this has been lifted slightly) but now the opening times are lowered to 10pm across the board for at least the next six months. These restrictions have had a major impact on the late night music venues around the city, some of these opened straight away and hoped they would get a customer base without music or entertainment but others just couldn’t see their venues surviving the running costs without the lure of the bands.

Standard at the end of 2019 have now taken a tenancy of the Lord Nelson a freehouse on Flemingate.

Dear friends and customers It is with great sadness that I write this note to tell you that the Fergie will close on October 4th. We’ve invested heavily in the Fergie over recent years but have been loss making for some time. Despite a huge effort from all staff, and great feedback and support from our customers in recent months, the current economic conditions mean we cannot sustain such losses any more. On behalf of everyone at the Fergie, I’d like to thank you wholeheartedly for your friendship, support and custom. Between now and October 4th, I will be focusing on my team, supporting them and helping them find new roles but please come in for a farewell drink – we’d all love to see you. Now serving 2/3 real ales and they are already of the same quality of the beers at the Royal Standard. The beers on offer when visited were Great Newsome Frothingham Best and Ossett Blond. We wish them well. Sutton The Ship in Sutton’s licensee has temporarily closed its doors through customers not abiding with C19 and pubs guidelines putting staff in danger. We are sorry to hear about this. Hopefully these matters will be resolved for all concerned, but at the end of the day people’s health matters most.

BEER BUILDS HULL BEERS CURE ALL FROM TONY PORTER Found in the Hull Advertiser and Exchange Gazette of 31st August 1799 was this method of curing a cold in Sweden. Dip a tallow candle into a tumbler of warm beer and then drink down the liquid in one go. It says it usually works! ANOTHER CURE FOR A COLD Spruce beer was known as sprossen bier in Northern Germany where it first came from. It was flavoured with the new leaf buds of Norway spruce trees, but the tree was not known in the UK until 170 years after the beer arrived. Our word spruce was what we called Prussia! It was also know as Danzig Black Beer as that was then the port that it was mainly exported from. It was often exported as a very thick, sweet dark brown liquid and could last as long as a year. It could later be added to UK brewed beers.

By 1969 it seems that only Hobson’s were making a Black Beer that they boasted had 2000 calories in every bottle! The suggested that it should be drunk as a lemonade shandy that they called Sheffield stout. The adverts stated that it was made chiefly from malt blended with spruce. After evaporation and fermentation the beer should be kept for twelve months. It will then have a very high gravity and this could have been the death of the beer in the UK as it WWI beer excise duty on high gravity beers went up nearly 5 times more than ‘normal’ beers. However several rebates were obtained over the years and in 1931 it was exempt from tax all together as it was thought of as more of a tonic. In fact despite having a gravity of 8.5% a licence wasn’t required to sell it, and in 1929 it was largely sold at chemists! Many brewers added wine or port to add to the potency. Even in 2011 30ml of black spruce beer was found to have 25% of the daily requirement of Vitamin C

Apples were growing wild here in Neolithic times and probably reached Britain via a long circuitous journey from their origins in central Asia, Tajikistan, Turkmenistan, and Uzbekistan. At its simplest the ingredients list is one item. Fruit. Apples are crushed in a press called a mill and the resulting juice fermented, traditionally from the autumn when the apples ripen till the following spring. Although, ageing and blending are key tools in the cider makers craft. Nothing else is added. Some back sweetening with juice or sugars is sometimes necessary. Historically cider is a wild fermented drink. Only the yeasts present in the atmosphere in the orchards, on the skins of the fruits are left to turn the sugars in the apple juice into alcohol. Like brewers cider makers have the ability to choose between a wild ferment or using specific cider or sparkling wine style yeasts. CAMRA’s definition of Real cider requires a cider to be made from the freshly pressed juice of apples, not syrup, and not to have been pasteurised or artificially carbonated. Whilst many mass produced ciders do not meet this definition there an increasingly greater choice of session and fine ciders available at pubs, taprooms and restaurants across the country. A glass of real cider or perry represents generations of traditional production dating back hundreds of years. The basics of cider production have remained the same the whole time – simply pick and press the fruit, allow to ferment and enjoy.

Definition of Real Draught Cider & Perry: Ingredients o The liquid content before fermentation must consist entirely of non-pasteurized apple (cider), or pear (perry) juice o No apple or pear juice concentrates to be used. o Normally, only the sugar naturally available in the fruit should be used to cause fermentation, but in years when the level of natural sugar in the fruit is low, the addition of extraneous sugar to aid fermentation is acceptable.

Process o No pasteurization to take place during the production process. o No added colourings to be used. o No added flavourings to be used, except pure fruits, vegetables, honey, hops, herbs and spices, yet no concentrates, cordials or essences. o There must be no artificial carbonation for draught products. o Sweetener may be added to fully fermented Cider/Perry to make it sweet or medium. o The addition of water is permitted to bring the alcoholic content of the Cider/Perry down to the level required by the producer. Ideally, however the minimum juice content should not be lower than 90% volume. o No micro filtration allowed (this takes all the yeast, leaving a “dead” product).
